GABRIEL SANCHEZ

Dr. Martin Luther King Jr.’s vision of the future of our nation was one that embraced people from every race, religion, creed, and color. The good pastor worked alongside the bravest of his generation to bring equality for African Americans through the 1960s Civil Rights movement. His dream was one of unity and brotherhood in a nation that had long needed to heal from the ugly scars of a post-slavery world. On. Jan. 16, the world remembered his message of love and reflected on how far we’ve all come in helping make his dream a reality. The Weekly asked locals…

What do you believe was the most important thing Dr. King taught us?

“That we need to stick together; we’re all together in this,” said Christa Boilini of Doc’s Diner in Key Largo.

“To respect each other. This day itself should be a wonderful day for everyone to embrace each other and recognize its significance,” said Damascus Beaufort, of Kmart.

“To respect each other regardless of race, sex, creed, and orientation. Also, to protest peacefully for the things we believe in, like we recently saw with the protesters at Standing Rock,” said Jesus Landeros of Radio Shack.

“That we’re all different but also the same. He taught us to take all the differences and embrace them knowing that God made us different for a reason, and to find the good in everyone,” said Sheldon Jaggernauth, also of Kmart.

BOAT SHOW AT HAWKS CAY

The three-day event features test rides in the waters around Hawks Cay Resort on Duck Key, at MM 61. JASON STEMPLE/SE Multimedia LLC

Saturday, Jan. 21-22 • Boating Skills and Seamanship Program at 10 a.m. at History of Diving Museum, Islamorada.

Weekly Staff report

ocals have a chance to try out top-quality boats this weekend at Hawks Cay Resort. “It’s so popular with Keys residents compared to the Miami or Fort Lauderdale boat shows. You don’t have the hassle and the crowds and it’s less hectic, even for the boat dealers,” said Capt. Rich Tudor. Yes, that Capt. Rich Tudor — tournament winner and television producer of “Saltwater Experience.” The boat show runs from noon to 6 p.m. on Friday, Jan. 20, 10 a.m. to 6 p.m. on Saturday, Jan. 21 and 10 a.m. to 4 p.m. on Sunday, Jan. 22. There will be more than 80 boats on display — in the water and on the hardtop —

featuring more than 40 brands from all the top dealers in the Keys. Some boats will be available for test rides, as well, and there’s a raffle for a brand new Everglades boat. In addition, to the “eye candy” there will be fishing, freediving and spearfishing seminars running all day long in the Hawks Cay Resort ballroom, plus dozens of vendors selling everything from tackle to speargear to jewelry and art. Check out the silent auction inventory — Yeti coolers, charters and more are up for grabs from the highest bidder. The event will also feature seminars by top anglers and spearfisherman including Capt. Rich Tudor, Capt. Tony Melton and Hadrian Vega. The boat show is a benefit for Island Christian School and the suggested donation for admission is $10. Save the admission ticket for 10 percent off the bill at Angler & Ale right next door. Keeping it in the Family The Key Thai sticks to its roots GABRIEL SANCHEZ

gabriel@keysweekly.com

A

t The Key Thai and Sushi, five members of the Homchun family manage just about every aspect of the eatery. In 2006, the family moved from northeast Thailand to the United States. They had previously owned and operated restaurants, so it only made sense to bring their culinary knowledge to feed hungry Americans. Since relocating, the family has opened restaurants in Pennsylvania, Maryland, and now in Key Largo. “I grew up cooking with my mother and grandmother. They showed my cousin Orr and I how

Chef Man, left, and Chef Pinky proudly present their signature sushi and Thai fried rice.

to make the recipes,” said Thai Chef Pinky. “Having grown up around the kitchen, I know what authentic Thai is supposed to taste like.” Pinky has been cooking Thai food professionally for 10 years, and handles that portion of the menu. Her cousin, Chef Man, has diversified his culinary skills. Man has been mastering sushi for seven years, Thai for nine years, and recently mastered Chinese delicacies. When first arriving in New York City, Man worked for an astonishing 40 restaurants throughout the city in a mere nine months.

“I started off as a dishwasher at a Chinese restaurant at 18 and eventually started cooking. I would work somewhere, learn as much as I could, get bored, and then move on. I wanted to gather as much knowledge from places all around the city,” said Man. “I was even fortunate enough to work with a chef who starred on the television show ‘Iron Chef.’” Last year the family came to the Florida Keys to vacation. Like most do, they fell in love with the Keys because of its weather. “We escaped from the snow,”

laughed Pinky. “The people are really nice, too.” The Key Thai’s ingredients are attuned to the new surroundings. For instance, the papaya salad is made with locally grown papaya. Much of the vegetables and herbs, like basil, cilantro and scallions, are also purchased locally. To achieve that textbook Thai taste, some of their ingredients are, however, imported from their homeland. This includes their curry paste, spices, and noodles. “Customers rave that the food is authentic. We appreciate that because we always try to go above and beyond to have the most authentic taste,” said Man. Some of their most popular dishes are the “Drunken Noodles,” (Thai fried rice with pineapple), and Tom Yum, (a spicy lemon grass soup with mushroom, tomatoes, scallions, and cilantro). The Key Thai and Sushi is located oceanside at MM 99, in the same plaza as Divers Direct and Office Depot. The restaurant has a Facebook page — search The Key Thai & Sushi.

We take a little time off from playing and remember to have some other kinds of fun, too,” said Pete Kennedy, “but this isn’t our first trip to the Keys!” Singer-songwriters Pete and Maura Kennedy have been performing together for 20 years. Their latest album is called “West.” Dave Simpson of Pure M Magazine wrote, “West is a collection of thirteen enchanting tracks whose heartfelt and passionate execution makes for a wonderful listening experience.” Their musical influences include the Beatles, Bob Dylan,

Buddy Holly, the Everly Brothers and the Byrds. Pete said they love music “with good lyrics and good melodies.” Expect a couple of originals, too. “We usually close with ‘Stand,’” said Pete, of their most-requested song. “It’s about community, which is fitting, I suppose. An audience turns into a little community, even if just for a few hours,” Pete said. The duo resides fulltime in Greenwich Village, an enclave of artists. “There’s a lot of inspiration there.” For more info about the Kennedys, check out kennedysmusic.com.

Corks & Curds: Wine, Cheese and Provisions

C

orks & Curds’ newest favorite red wine is fresh from Napa Valley. The Carne Humana is an easy drinking red blend of syrah, petite sirah, and petit verdot. “It’s perfect for this time of year, with good fruit, nice structure, and tannins that are going to come out after a glass or two,” said Ashley Kupke. “It’s very lush, fruit forward, smooth and easy drinking. At 14.8 percent it’ll warm you quickly, so it’s a good wine for a cool evening burning Christmas trees,” she laughed. When it comes to wine, she knows her stuff. Much of her initial wine education came under the guidance of an advanced sommelier while working at the Peabody Hotel’s Napa Restaurant in Orlando. “She would put different wines in front of me, have me taste them, then begin to ask me questions about the places the grapes were grown,” said Kupke. Kupke graduated from the Rosen College of Hospitality at the University of Central Florida, and has a business degree from the University of Florida. She takes a lot of joy in hosting friends and family and cooking for them. Visit Kupke at Corks & Curds and pick her brain on wine and cheeses. WEEKLY INTERVIEW GABRIEL SANCHEZ

A

gabriel@keysweekly.com

s an educator, purveyor of theater, small business owner, writer, and chairman of multiple boards for the arts, Dennis Caltagirone’s planner has never been devoid of activities. Six years ago, the Philadelphia native decided the Florida Keys would be the perfect locale to continue collecting shells with his lovely wife Elizabeth. After 42 years of working in several school systems as a teacher, education consultant, and theater guru, he decided to retire on April Fool’s Day. And he wasn’t joking. Now, he serves as vice president of the Key Largo Rotary and treasurer of the Key Largo Chamber of Commerce. His teaching style is renowned, but perhaps even more noticeable is his encouraging approach toward chasing dreams. Which style of music do you believe is the most inspiring? Classical. Which aspect of Keys culture do you identify with the most? The freedom to be yourself. Where are some of the destinations you’d like to visit this year: Jamaica, Grand Caymans, Cozumel, The Panama Canal, Alaska via a cruise. Growing up, which was your favorite television program? “Milton Berle” and “Howdy Doody” as a small child and “Perry Mason” as a teen. What’s your favorite Italian dish? Cheese ravioli. What innovative approach would you like to see locals take at revamping our arts and theater in the Keys: The "Friends" of the Cultural Center are working to bring more family entertainment to the Center and I would love to see the community give more support to our community theatre group. We also have the Purple Isles Art Guild, a number of art galleries, a local orchestra and the performance groups at our public and private schools.

UPPER KEYS WEEKLY / JANUARY 20, 2017

What advice would you give to young educators to maximize their abilities? You must know your "craft." You must take the time to know your students, their parents, and the community. You must set high standards and then work to ensure all students can attain those standards. Favorite experience while studying at the Globe theater in London? I had many wonderful experiences, but the one I enjoyed, after the fact, was my opportunity to perform on the Globe stage before the London theatre elite. Just when you think you have arrived and really know a great deal about a great deal of subjects and practices, you run into the "Five Masters" at the Globe Theatre in London. Which charitable effort are you most proud of? I remember one Christmas I was collecting food for a Catholic charity and had managed to collect more than 1,000 cans of food. When I walked into the office and asked, "Where can I unload more than 1,000 cans of food," they began to weep with joy as they had run out of food the day before. They had just finished praying for a miracle and I walked in on cue. Who inspired your fascination with theater: The man who influenced me the most was and is Frank Galatti, a brilliant Northwestern professor and Theatre Department Chair, and director on Broadway and for many Chicago theatres and now the State Theatre in Sarasota, The Asolor State Theatre.

If you could have dinner with any one historical figure, who would it be? Without question, George Washington, a true leader and a brilliant man! Favorite production; why? “Little Shop of Horrors.” I loved creating the plants and sets for this show.

Dennis Caltagirone 20 Questions

Dennis Caltagirone insisted on being photographed with his lovely wife, Elizabeth. GABRIEL SANCHEZ/ Keys Weekly

Any hidden abilities? I am a terrific cook! I also have a very heightened sixth sense. Chocolate or vanilla? Vanilla with chocolate sauce. Do you have a motto you live by? "Do unto others ..." If you hadn’t been an educator what do you see yourself doing? I would enjoy working in the Parks, Recreation and Cultural Arts areas of a town or community. What was the last book you read? “The Carpetbagger Project.” This referenced the secret arm of another secret organization of WWII, the OSS. My father was involved in both from the outset. Which character from literature do you most identify with? I tend to admire the male character who exemplifies strong convictions and is honest and trustworthy. How do you stay motivated? I stay motivated by things that interest me and the list is endless. Every day affords me the opportunity to go forth and explore. If you could wake up tomorrow with a special ability, what would it be? I would love to be a healer that could vanquish all diseases that affect humanity at every age.

n. Jan. 15, the fifth installment of the Baygrass Bluegrass festival filled the stands of the Founders Park amphitheater. Fifteen unique bluegrass acts kept those in attendance tapping their feet and clapping their hands for the better part of the day. Along with great music, there was an abundance of local food and drink. Local crafters and painters exhibited their work, while others, like glass artists Gloverian Arts, fashioned their creations onsite. COMMUNITY NEWS

UPPER KEYS WEEKLY / JANUARY 20, 2017

17

The Upper Keys Weekly is proud to partner with Coral Shores High School faculty and students in choosing “The Student of the Week.” Recipients are chosen on a myriad of qualifications ranging from academic standing, athletics, outstanding achievements, community involvement, individuality and moral fortitude. We thank our future leaders and CSHS for allowing us to share in a weekly dose of “Cane Pride.”

JUAN PABLO-ABORREZCO SOPHOMORE

What organizations and activities are you involved with at CSHS and why are they important to you? Varsity football. It is important to me because it’s the game that I truly love to play. Who has been your biggest inspiration at CSHS and why? My football coaches, such as Coach James and Bryant. Also my teachers, for pushing me to do better. What class do you think has best prepared you for life after high school and why? Chemistry and math will both help me with my future goals. What are the biggest challenges facing the Keys? What would you do to meet these challenges? There isn’t much to do in such a really small place. I go to the park or the pool to help pass the time. What are your plans after high school? I plan on attending college. Do you think you will make the Keys your permanent home? Why or why not? Probably not. I would like to move out to somewhere more populated; it’s too small here. Finish this sentence: Living in the Keys has taught me… …about the importance of community.

Anniversary bash The Garden Club of the Upper Keys will celebrate its 65th anniversary on Saturday, Feb. 18 from 10 a.m. to 4 p.m. at the Francis Tracy Garden Center, MM 94. Admission is free. The event will include entertainment; a flower arranging demonstration; a bake sale, a raffle and artisans’ booths; and a birthday-table design contest. Peter Pan, Tinker Bell and Captain Hook will appear; children are encouraged to dress as their favorite ‘Peter Pan’ character and compete for a prize. More information is available at www.gardenclubupperkeys.org.

BRIEFLY Beach luau benefits Good Health Clinic The sixth annual Beach Luau is set for Saturday, Feb. 18 at Angler House Marina in Islamorada. The party features a Hawaiian feast, live entertainment, open bar and, finally, the Big Kahuna announcement. The event supports the collective bid of Adriana Cuomo, John Gallant, Bob Foley and Retz Reeves to be crowned Big Kahuna. The campaign benefits The Good Health Clinic. Tickets are $100 each. For more information, call 305-619-0154. THE END of ‘Wet Foot,

UPPER KEYS WEEKLY / JANUARY 20, 2017

SOCIAL SERVICES Wesley House Family Service CEO Beth Barrett “I don’t think that it would have a big effect on Wesley House. Now, any families that are picked up are going to be returned to Cuba. Second, we don’t see a lot of children crossing the straits on a boat. We occasionally get families that are undocumented, and those we help as much as we can. I don’t want people to die coming over from Cuba, but at the same time I don’t know what would happen to those would-be refugees that can’t leave Cuba.”

Dry Foot’

WHAT IT MEANS FOR THE KEYS The repeal of the “Wet Foot, Dry Foot” policy on Jan. 12 by outgoing President Barack Obama met with mixed reactions in the Florida Keys. This strip of islands, closest to Cuba, is where the vast majority of migrants land first. And yet, most disappear in the mainland’s maw just hours after arrival. The Wet Foot, Dry Foot policy allowed Cuban migrants who reached land to receive political refugee status and a path to citizenship. Those interdicted at sea were sent back. Now, all Cuban refugees without a visa will be returned to Cuba, except for some extreme cases of political persecution, according to the White House. The policy, which had been in place since 1995, was part of the fabric of life in the Keys. A group of men sitting on the side of the road with a deputy was a common sight, instantly understood by locals. Sightings of chugs were repeated from vessel to vessel over channel 16 on the VHF radio. It’s too soon to understand the repeal’s impact completely, but here are thoughts from different sectors of the Keys community on the new law of the land.

LAW ENFORCEMENT Monroe County Sheriff Rick Ramsay “I expect to see a major decrease in migrant landings. The biggest change for our agency is that before, migrants would look for a deputy so they could start the asylum process — they would be high-fiving and giving thumbs up to the deputy. Any migrant who comes now is more likely to run from a deputy. The message to deputies on how to handle immigrants is this: We don’t want to be chasing illegal immigrants that hit shore, because they haven’t committed a crime according to the state law of Florida. Our job is checking their medical status, giving them water, and contacting our partners in federal law enforcement. Migrants would have to voluntarily comply with the process. “However, if they break a law — trespass on private property, steal a car — then it’s a different story. And if our fellow officers in federal law enforcement need our help, of course we will give it. If it’s a lawful and reasonable request, then we are going to do it.” TOURISM INDUSTRY IN THE KEYS Lodging Association of the Florida Keys and Key West CEO Jodi Weinhofer “I am not sure it does affect the lodging industry in the Keys. This is really not a policy or a group of workers that is on our radar in the Keys. Perhaps due to language barriers or family connections, there are other areas like Miami in South Florida that are a better fit for these new residents.”

CUBAN COMMUNITY IN THE KEYS Former Key West City Commissioner Tony “Fats” Yaniz “Cubans saw this coming, that’s why there was an increase in crossings. They knew that if the U.S. normalized relations with Cuba, then the citizens were going to be treated like any other citizen of a Caribbean country. As the honorary Key West ambassador to Cuba, I’ve had a lot of calls. People were telling me, ‘My brother or my mother or my sister was ready to come.’ So on an individual basis, that hits home. As far as the repeal of the policy … the 50-year embargo didn’t work. In order for capitalism to move forward in Cuba, you have to end the Wet Foot, Dry Foot policy. As my friend said, ‘The best cure for communism is a well-marketed cheeseburger.’ The majority of Cubans crossing recently came here for the economic advantage, and who can blame them? In the long run, this will benefit the Cuban people as well as everyone else.” MONROE COUNTY SCHOOLS Superintendent Mark Porter “Previously when Cuban refugees made it successfully to dry-land U.S. soil they were taken to Miami for processing. I really don't have an accurate measure as to how many of them may have returned to Monroe County to reside and possibly enroll students in our schools. I don't think there will be a noticeable or appreciable difference in the number of students entering the Monroe County Schools. That said, regardless of this policy change the Monroe County Schools do continue to see significant increases in the number of ELL (English Language Learner) students. For the past couple of years we have made, and will continue to make, adjustments in our staffing models to meet the needs of this ever-growing segment of our student population.”

A

tour including rare World War II aircraft will soon land in Marathon. The Collings Foundation’s 110-city Wings of Freedom tour will bring a vintage Boeing B-17 Flying Fortress, Consolidated B-24 Liberator, North American B-25 Mitchell and P-51 Mustang to the Florida Keys Marathon International Airport from Monday to Thursday, Jan. 30 - Feb. 2. The B-17 is one of only eight in flying condition in the United States. The B-24J Liberator is the sole remaining example of its type flying in the world. The B-25 is best known for being used in the daring Doolittle raid and the P-51 "Toulouse Nuts" fighter received the 2016 Oshkosh Grand Champion Award for restoration. The B-17, B-25 & B-24 were the backbone of the American effort during the war from 1942 to 1945 and were famous for their ability to sustain damage and still accomplish the mission. The P-51 Mustang was affectionately known as the bombers’ “Little Friend” – saving countless crews from attacking Axis fighters. After the war, many aircraft were scrapped for their raw aluminum. The tour is scheduled to arrive at noon on Monday, Jan. 30, departing after noon exercises on Thursday, Feb. 2.
