oral Restoration Foundation has been awarded $2.1 million in funding from the National Oceanic and Atmospheric Administration (NOAA) to restore eight reefs along the Florida Reef Tract to levels outlined in NOAA’s Acropora Recovery Plan. Out of 17 coastal habitat restoration organizations that were selected for funding through NOAA’s Community-based Restoration Program, Coral Restoration Foundation is the sole recipient for a coral reef restoration project. The $2.1 million grant will be distributed over three years and will be matched dollar for dollar by Coral Restoration Foundation.

Based out of Key Largo, Coral Restoration Foundation operates the world’s largest reef restoration program. With six offshore coral nurseries in South Florida housing over 50,000 corals at a time, the foundation uses innovative techniques to grow threatened coral species which are later outplanted on to reefs. Clusters of corals are

outplanted strategically to increase the amount of genetic diversity for these once dominant coral species.

The grant awarded by NOAA will allow Coral Restoration Foundation to take the next leap in restoration efforts and will contribute to advancing the organization’s overarching goal of saving our world’s oceans.

Spanning almost 150 miles along the coast of South Florida and the Florida Keys, the Florida Reef Tract is the third largest barrier reef in the world. Barrier reefs provide habitat for marine life, but are critically important for humans as well.

They provide storm and erosion protection for coastal communities, support the tourism industry, create thousands of jobs, and produce food for millions of individuals. Sadly, since the 1970’s, the populations of two key reef building species, staghorn (Acropora cervicornis) and elkhorn (A. palmata), have declined by 92-97 percent due to various factors. As a result, these species are now listed as threatened under the Endangered Species Act.

The project’s first year will begin with a Pilot Study involving close to 10,000 corals being outplanted across 20 reefs, including North Carysfort, Molasses, Sombrero, Coffins Patch, American Shoal, and Western Sambo.

This followed by monitoring throughout the year will identify eight best suitable reef sites for the remainder of the project and will span the entire Florida Reef Tract from Key West to north of Monroe County. The project will result in over 50,000 previously dominant coral species, elkhorn and staghorn, being outplanted to restoration standards in NOAA’s Acropora Recovery Plan.

The scale of this project is unprecedented and shines a light not only on the urgency of saving our reefs.

‘Tis better to give, than receive Toys for Tots & Holiday Helpers collecting gifts for local children JASON KOLER

E

very year, thousands of deserving children throughout Monroe County benefit from the charitable work of two leading organizations who work tirelessly to ensure that every boy and girl makes it onto Santa’s Nice List.

“A lot of the list comes off the school’s free and reduced lunch list – about 5,000 to 8,0000,” said Toys for Tots volunteer Kyle Burkel.

“We raise more toys per capita that any other Toys for Tots Drive in the country.”

The drive, part of the Marine Corps national Toys for Tots program, culminates with a Poker Run and Parade on Saturday, Dec. 17.

The ride leaves Gilbert’s Resort in Key Largo at 11:30 a.m. and concludes at the Oceanview Inn and Sports Bar in Islamorada.

“The Keys being what they are,

everyone helps everyone else. All the toys that are raised go to local kids,” Burkel added.

Toys for Tots drop-offs include any of the Islamorada Fire Stations, Capital Bank or Ocean Sotheby’s Real Estate.

In Key West, the major player is Wesley House Family Services which organizes the Holiday Helpers of the Florida Keys toy drive.

Spokesman Jeremy Wilkerson relies on a partnership of 10 agencies to collect toys for families who, for a number of reasons, may not have the resources to provide for their children during the holiday.

They accept new, unwrapped toys at any of their offices throughout the Keys plus any Centennial Bank or Keys Federal Credit Union branch, Royal Furniture and Womankind.

Both organizations are also accepting checks.

Grant writing Workshop is set

The Key Largo Chamber of Commerce will be the starting point for the Light Up Key Largo Trolley Tours staged on successive Tuesdays. Join the Coast Guard, attend college for emergency medicine, and become a helicopter rescue swimmer.

Do you think you will make the Keys your permanent home? Why or why not?

I just moved from Orlando and will be living here until I enlist in the U.S.C.G. then I’ll potentially live anywhere.

ariano Leone takes old wooden items and makes them new again, creating vibrant functional furniture. His craft is upcycling — breathing new life into discarded items. For example, he builds shelves out of pallets or tables from old fencing or benches out of old decking. Then Leone paints “Keysy” images as a focal point using bright colors.

For his commissioned pieces, Leone said he works in reverse; he doesn’t take any money upfront.

“People are good about having their own ideas. They usually tell me what they like — ibis, mahi mahi, flamingos — and we go from there,” he said.

Everyday, Leone cranks the oldies station and goes to work where his woodpile is mountainous. His children often hum the “Sanford and Sons” theme song when he arrives. But this “hyper Italian from New York” doesn’t mind. It keeps him busy, and five years ago when he participated in his first craft fair and sold everything, it only fueled his passion to create.

newbie to the Keys, Winona Richardson has worked at Snook’s Bayside Restaurant and Grand Tiki Bar since June this year. She and her husband sold everything, packed their cars, and aside from a four-hour nap she took in Nashville, drove 30 hours straight to get here with their three dogs and cat on board seeking “a different pace.”

Manager Anthony Frisone said, “She’s tops, doesn’t get better than her.”

Her favorite drink to serve is the Blue Kokomo. It takes coconut

rum, blue curacao, Coco Lopez and pineapple juice. (Richardson loves this libation; she drinks them herself.) “It’s really sweet and they go down easy.

It pairs well with the coconut shrimp appetizer.”

When she’s not working, she drinks coin style margaritas, which means no sour mix, just straight lime juice.

When not behind the bar, Richardson kayaks everyday on the bay. She went to college for nursing, pre-med, and pre-veterinarian science, “just about everything.” She doesn’t know what her future holds, but she loves the view at Snook’s.

Richardson works full-time, almost everyday, but sometimes takes a day off on Wednesdays. Visit her at the bar and ask for the Blue Kokomo. Snook’s is located at 99470 Overseas Highway in Key Largo.

orty years ago, Maria Hopwood received the ultimate gift —a second chance at life. Given six months to live, Hopwood says her recovery would not have been possible if not for the compassion of others. She said it was a summons to serve those who are not as fortunate.

“After I recovered, I made a promise to God to help American families because I felt that this country gave me my life and health back,” said Hopwood.

And so began her work.

She started by simply helping single parents, bringing comfort to troubled families around the Upper Keys by buying food and clothes, and devoting time to motivating their children.

Now she delivers beautiful flower arrangements to Upper Keys families as a way to continue the promise she once made. Her kids and grandchildren, some of them in England, pitch in too.

Her nonprofit, Maria’s Hope and Prosperity, was officially founded in 2011. Her larger mission is to assist under-privileged students go on to college.

Through flowers sales, Hopwood has gathered the funding needed to support her initiatives in Monroe County. Her flowers are available at the nonprofit’s show room near Lazy Days Restaurant, or by delivery.

(Hopwood hopes locals will consider her flowers for their next ceremony or special event,

as all proceeds help children.)

Her store has various types of orchids, roses, tulips, daisies, and many other tropical flowers for sale.

Through flower sales, primarily, plus donations and sponsorship, Maria’s Hope and Prosperity has expanded the outreach.

“We realized there was a growing need, and that we had to grow ourselves. Every year we give out more than $100,000 in donations, scholarships, supplies, and materials,” said Hopwood.

Hopwood’s influence has trickled down the Keys to Marathon and Marathon High School’s Dr. Christina Belotti. Belotti is the teacher sponsor for Keys to Be the Change at Marathon High School. In Marathon, students focus on homelessness and poverty with a strong focus on students in special circumstances.

“That’s how we tied in with Maria, we partnered with her last month and had her speak at our meeting,” said Belotti. “She came to us last year because she wanted do something for graduating seniors. For class night, she donated five lap tops and two scholarships to students.”

But her outreach goes beyond the Keys. Every Tuesday, Hopwood sends supplies to orphaned Haitian and Dominican children. Every year she also coordinates a supply shipment to Cuba, as well.

here’s a new head chef at Pilot House, Luigi Maestri.

Compared to most stereotypical restaurant chefs, he’s a little different —soft-spoken, unassuming and seemingly relaxed.

Maestri joined Mark Charles at the Pilot House two months ago bringing his 15 years experience and skill to the kitchen.

Originally from Colombia, Maestri is Latino and Italian. (His Italian accent intensifies when speaking of that food.) As for recreating the menu, he said … not yet. He’s Chef Luigi implemented small changes for now and wants to hone in on consistency and presentation, and integrate more local flavors and foods.

“It is stone crab season, and we have the freshest seafood available here in the Keys,” he said. Fresh herbs and spices keep the flavors simple, while kicking up the quality.

Maestri, who will be turning 46 years old next week, believes in healthy foods. He said the hogfish snapper available at Pilot House is extremely fresh and good for you.

He said a great option on the menu is the macadamia crusted hogfish, prepared by first pan sautéing, finishing in the broiler with citrus maca-

damia panko crust then topped with mango pineapple salsa. The fish is served with coconut rice and fresh vegetables and has gained notoriety — it was featured on “Diners, DriveIns and Dives” on the Food Network.

In the future, he may add snapper livornese to the menu.

It’s a simple recipe, baking the fish in garlic, tomatoes, capers, black olives and lots of fresh parsley then finished with a fresh beurre blanc sauce. Maestri also spoke of adding a house-made pesto sauce to the menu and how much he loves tiramisu.

“I pay very much attention to the details. I like colorful dishes,” said Maestri.

Maestri has been a professional chef since 2001. He also trained as a commercial pilot. When Maestri isn’t in the kitchen, he voraciously reads new recipes, and cookbooks.

He likes watching the TV shows “Chopped” and “Hell’s Kitchen.” He said he leads a “boring life” with his wife, who he’s been with for 25 years, but admits he once sampled snake on a camping trip.

“Luigi is a great fit for our operations here. He’s got the proven talent to take us to the next level. We are still offering our great menu and fresh seafood, but he’s going to do what he does and make it better,” said general manager Mark Charles.

r. Joanne Mahoney has been practicing Internal Medicine for 30 years now. She took the slow route through medical school; first starting out as a medical technician, then went on to become a physician’s assistant, and then decided to become a medical doctor.

She’s the medical director with Hospice VNA, the Rural Health Network in Key West, the Plantation Key Nursing Center and Key West Health and Rehabilitation. Mahoney said that nurses are her “best friends,” and without them and other support staff, she couldn’t do what she does.

“We live in a very giving community,” Dr. Mahoney said.

Dr. Mahoney spends a weekend a month in Key West to accommodate her many jobs. And she’s also an avid angler and has had the same fishing mate and friend since Coral Shores High School. Yes, she is a true Conch.

12. Best vacation? Cat Island with my friends who live there.

13. What scares you? Being helpless to change an outcome for a patient. I wouldn’t say scared really, but sad.

14. What always makes you happy?

I love my pets. My animals they are always there for me.

1. What inspired you to become a doctor? My family doctor as a child and my father as a teen. Bonus that it’s a recession-proof profession!

5. Top three favorite albums? Moody Blues’ “Question of Balance” definitely, “Stairway to Heaven,” and any Kenny G album.

2. What’s the biggest fish you have caught? I’ve caught a 50-pound sailfish but I lost a 100-pounder on the line.

6. What is your favorite car aside from an Accord? I’d take a Jaquar, XJE. They’re really sleek looking.

3. Are you squeamish when having your blood drawn? No, but I hate shots — at least it’s over quickly.

4. What’s the last play you saw? “Naked Boys Singing.”

It was hysterical!

7. Favorite movie? “Gone With The Wind” or “Shawshank Redemption,” that’s a good one. It’s about being good to people and having it come back to you later in life.

Late prosecutor touched many lives in the Keys

I

would receive a text reading “HH,” which was Manny’s code for happy hour. It was typically a Monday or Tuesday and it was understood we would meet at the Brewery. And it was equally understood I would have to endure relentless taunts ranging from his superior billiards abilities to how the Miami Hurricanes were the greatest program in college football history (and Manny could win any argument — especially those pertaining to Canes football).

But these weekly sessions are what I will miss the most about Manny Madruga. If you knew Manny, he had sheepish grin that accompanied his jabs, but it was that same endearing trademark that made Manny, a tenacious prosecutor, one of the most approachable figures in the room.

And perhaps that was Manny, a paradox. Inside the courtroom, he was a fierce prosecutor with an unrivaled passion for the law. Just after graduating from the University of Miami Law School, Manny joined the Monroe County State Attorney’s Office and shortly after prosecuted his first murder trial at the age of 26. Manny went on to prosecute some of the highest profile cases in the history of the county and in

He and Madruga first met in 1995 as prosecutors with the State Attorney’s Office. As trial partners, they became fishing buddies and eventually best friends while working together on a number of cases including the high-profile murder case of Jeffery Wallace.

“I just can’t get my head around it,” he said. “I spoke with him the night before and we were actively talking about a job search. I just wish he would have given me or someone else a chance to talk to him.”

2009 he was honored with the Gene Berry Memorial Award from the Florida Prosecuting Attorney’s Association — its highest honor.

Yet Manny’s legacy outside of work was equally impressive.

Madruga served on dozens of boards and devoted his time to countless non-profits, including the Boys and Girls Club, MARC House, Masonic Lodge, Key West Ambassador Program, Sunset Rotary and countless others.

Today, a recent picture with members of Manny’s Leadership Monroe County Class serves as his profile picture on Facebook. He took great pride in staying connected with that particular group, which is where I met Manny in 2007. Just recently, he told me, “After all of these years, it makes me proud that our class still has the most representation at Leadership functions.” Sure, Manny was always competitive, but he also cared about preserving relationships.

Manny had many friends, but one of his closest friends was his ex-wife, Ani. Manny would often remark that one of his proudest, and most thankful, achievements was that he and Ani remained close after their divorce. It was during one his stories about Ani that he once choked up. He was remarking on the early days and how she was incredible mother. It was the only time I ever saw him cry.

“I am really upset with Manny,” Smith told the Weekly days after his friends passing as he worked through a range of emotions. “He was just such a great guy.”

An investigator with the Public Defender’s Office, Smith worked alongside Madruga as a police officer with the Key West Police Department since 1990.

“This was a straight up guy who was never vindictive,” Smith said.

“I am still trying to wrap my head around it. I am still trying to believe that Manny Madruga did this.”

Monroe County Sheriff Rick Ramsay met Madruga back in 1990 when he was a patrol sergeant and Madruga was a junior prosecutor. Together they served on many boards and volunteered countless hours at community events too numerous to list. Ramsay had recently offered Madruga a job with the Sheriff’s Office.

“His passion was to make our community cleaner and safer and get the bad guys off the street,” Ramsay said.

“Manny was a great guy; a friend to the Sheriff’s Office and to me personally. This is a devastating loss.”

Family was sacred to Manny. In his last months, he spent weekends in Miami tending to his mother as she rehabbed from an illness. I would often invite him out to watch a game or shoot some pool, but Manny would text back that he was heading to his mom’s. He never once treated it as a duty. Instead, he would return to “HH” with updates on his mother’s progress and how proud he was of her determination. I don’t think he ever stopped to realize it, but his descriptions about his mother were reflections of his own fortitude and character.

Above Hurricane football and deer hunting in South Georgia, Manny cherished trips to see his daughter Natalie in college. Some of Manny’s favorite stories involved something simple, such as some dinner in Orlando with Natalie, but those were their stories and not mine to tell. I can simply tell you that Manny loved his daughter as much as any father could.

My stories are like so many others who knew Manny. He touched countless lives in a myriad of social and professional circles. The themes of these memories will all share a common denominator about a man whose artistry was words … yet he led by example in life. I don’t know how much love a person can give, but Manny gave every day — to so many people. And while we may never know exactly why our friend took his own life, I will always believe that Manny gave until he could give no more. And like all of us, I simply wish I could have one more text reading “HH.”

Doug and Sue Harrison served on the MARC Board of Directors with Madruga for a number of years.

Doug recalls a particular Christmas party where the board could not get Madruga off the serving line.

“Finally after several attempts Manny poured sauce on my shoe and said, ‘Health Department only lets clean shoes on the line,’” Doug said with a faint laugh.

“Like everyone else, this caught us totally flat-footed,” Sue added.

“We all feel like something has been taken away from us.

I keep thinking it is about me, but it not about me.”

Seasoned chef follows new business model

C

hef Andrew Tsang is bringing big-city culinary ideas to the Keys.

As proprietor of Chef Drew’s Island Catering, or CDIC, Tsang is the proverbial new kid on the block, in a truck, set to celebrate his one-year anniversary in January.

The start-up mobile catering has had a successful first year. This past week has been busy for Tsang. He’s been filling orders by stuffing chicken into ducks and fitting them both into turkeys to make “turduckens.”

And somewhere in there, there is Cajun sausage stuffing. “It’s a lot of work, but they’re so good, it’s worth it,” Tsang said.

“It’s labor-intensive, it’s a two-man job,” said Emilio Molina, sous chef. Tsang said he filled about two-dozen orders for Thanksgiving and he hopes to double that for Christmas. A stuffed turducken feeds 10-15 people easily.

Tsang’s CDIC offers all the traditional holiday sides as well as some of the newer trendier items like Peruvian blue whipped potatoes, sweet potato gratin, succotash and white chocolate bread pudding. He also offers colossal stone crab claw platters.

The mobile catering venture started out as a bet over drinks with former Snapper’s Waterfront Restaurant owner, Howard Kolbenheyer. Tsang bet that if they offered mobile catering, it would become wildly successful. So, they did. Then, Kolbenheyer sold the restaurant and Tsang went on independently with the catering.

The start-up mobile catering has had a successful first year.

This past week has been busy for Tsang.

Tsang may be a new business owner, but he’s a well-seasoned chef. He’s been executive chef at Snapper’s, Green Turtle, Marker 88 and Pierre’s. And he’s had screen time on cooking shows like “Cutthroat Kitchen” and “Man vs. Child.”

Aside from taking on a new business, Tsang teaches culinary classes at Corks and Curds in Key Largo the second Tuesday of every month from 6 to 8 p.m.

The meal prepared is paired with wine or champagne for students.

The next class is scheduled for Dec. 13.

What else? Tsang, along with Molina, creates pop-up restaurants. The duo is set to create a five-beer pairing menu at Florida Keys Brewing Company in December. “It’s basically where we can plan an elaborate menu that isn’t at a restaurant. It can be anywhere,” Tsang said. The only thing that changes is the location and the menu. The pop-ups offer ramen noodle bars, sushi bars, Kosher meals, “anything and everything.”
