From his mother’s kitchen in New Zealand, Jonathan’s love for cooking has taken him on a worldwide journey before settling in Brisbane and Manly at the delightful Sea Vibes
Jonathan started his apprenticeship at just 15 working at the Gold Coast’s Sea World Nara Resort, but his real apprenticeship began long before at home in New Zealand. He was literally born over a hotplate with his mother, Julie, cooking while pregnant whilst running a Gold Plate awarded restaurant. His Nana was also a huge influence on Jonathan from an early age, spending happy time in the family kitchen. This instilled both a love, and a work ethic, for hospitably that took him to ChaCha-Cha in Brisbane and then the Summit Restaurant Mount Coo-tha
where he qualified and worked for 7 years. Around the world tasting trip exposed Jonathan to cultural changes in foods across Europe, South America, and Asia before a spell at a Five Star hotel kitchen in PNG.
Jonathan returned to Australia to be part of a team opening a seafood restaurant in Bulimba before taking family ownership of the former Fish Café in Manly Harbour Village in November 2018. Manly was viewed as an exciting suburb with a mix of visitors along with a local family and dining community.
The Sea Vibes philosophy is “To provide good affordable food for everyone.” He is proud to be able to source from local suppliers who have a similar sustainable food ethos. Mentoring staff is also important as well as seeing his staff through their apprenticeships, with one team member recently qualifying as a Sous Chef after 3 years.
COVID proved a trying time. However looking outside the box to meet the market sustained them through the pandemic. It meant they were able to keep the doors open and
staff employed by providing both takeaway and delivery service. Seafood naturally features at Sea Vibes with a seasonal menu that can include tasty local Moreton Bay Bugs. For the Spring/Summer 2022 season there are fresh honey soy prawns, picked cucumber and rice crisps, the ever-changing market fish, and the very popular Atlantic Salmon.
Jonathan has seen food trends change with Vegan and Gluten Free featuring more on the menu, and he is happy to assist with any specific dietary requests. He even happily
caters for non-seafood lovers with a delicious, Roast Pumpkin Gnocchi and the 300-gram grass fed Sirloin.
Jonathan is looking forward to an exciting time in Manly Harbour Village with new dining outlets and the refurbishment of the Manly Hotel creating a Food Hub focus. The Brisbane 2022 Olympics will see teams arriving for training at least 4 years prior. The future is bright for Sea Vibes and Manly as is their outstanding views over Manly Boat Harbour. www.seavibesmanly.co

Jack Reacher Loves 3 Elements Coffee
Million best-selling author Lee Child has a special relationship with Wynnum endorsing a series of special Jack Reacher themed blends coffee. Wynnum based coffee roaster, 3 Elements Coffee, struck up a connection with Lee through a visit to Brisbane.
3 Elements founders Terry and Eleanor McNally are big fans of Jack Reacher and heard he was doing a book tour in 2018 including a stop at City Hall.
Knowing Jack Reacher’s regular cafe visits and Lee’s love of coffee they made a visit to the book signing and got to chat with Lee. Terry recalls “He said he hadn’t an Australian supplier and doesn’t just drink anyone’s coffee. It has to be full of flavour and allow him to drink at least 17 coffees a day when he writes. He suggested sending samples to ‘his people’ in the US which we quickly did.”
With Lee’s busy schedule and postal delays, it took
6 months to get the blends to suit him and his team to perfection. They certainly taste tested it. One employee stating that coffee gives her heartburn, so with this: we created a blend that doesn’t burn like many other coffees on the market.”
The initial blend of ‘One Shot’ was chosen by Lee himself, and ‘Worth Dying For’ was chosen by Lee’s team. All of the Jack Reacher blends are named after the books. The latest ‘Better off Dead’ blend was inspired by his most recent book in the series.
3 Elements Coffee is an Australian and veteran owned company based in Wynnum with a national reach. Founder, Terry, a Navy veteran, set up 3 Elements Coffee in 2016, with the concept and mission of supporting the transition of ex-military personnel into the commercial workspace. “In order to achieve this mission,” Terry says “we needed a product to create funds and help with raising awareness of these issues.” From donating to veteran charities to providing coffee for appeals, 3 Elements Coffee is dedicated to making this world a better place for
veterans, first responders, and their families.
3 Elements Coffee is distributed across Australia with FREE shipping. You can buy their beans locally at several outlets in Wynnum, or you may even get a special delivery from Eleanor. Check out their details online at www.3elementscoffee.com
If you love your coffee don’t delay as the blends are absolutely mouth-watering and, as Jack Reacher would say, ‘Worth Dying For’.

FLINDERS BUILDING, BAY TERRACE, WYNNUM
Oh - how we celebrated the recent opening of the Majestic Cinema in Wynnum. Against a backdrop of fireworks and flame throwers, everyone and anyone partied at the Waterloo Bay with music and champagne.
What a contrast then to 1977 when The Flinders Building (formerly Oxley House) was celebrated as Wynnum’s first high rise with 6 stories allowing stunning views across the bay. Such was the occasion; the public were invited to attend the official opening in 1978 with a day of festivities. There were stalls and displays
along with raffles.
Entry to inspect the building and ride the lift to the top floor was 20 cents for adults, 10 cents for children and 50 cents for the family. For those who truly wanted to join in the merriment, helium balloons with a tag displaying your name and competition details were available to buy. The balloons were released from the top floor with the winner being the balloon which travelled the furthest and had the tag returned by the finder. First prize was two Ansett Pioneer coach tickets to Sydney, Melbourne, Adelaide or Cairns. And the lucky individual who returned the tag was prized a transistor radio. Fun times.
Over the years it has been occupied by many budding businesses and undergone a number of renovations. The lifts are still a feature along with the windows affording views over the bay to the islands and the Port of Brisbane.
In 2006, a Wynnum CBD Renewal Planning Charrette claimed the structure “shoots straight up into the sky with featureless brick walls - to the community it is ugly”. Major design changes were recommend including extending it out towards Chestnut St with added verandas and awnings. The building escaped this fate and as recent as 2018 it was given a coat of paint to transform the dated yellow and grey exterior to a modern white, black
and green. At this time, it was noted to be built to a very high standard with no major repairs required.
That is good news to locals who have come to appreciate Flinders as a part of Wynnum history at a time when many iconic landmarks are being lost to progress
