I was overjoyed when our Ke Alaka‘i team decided to do a special food edition for Valentine’s Day this year. Working on it has been a wonderful mingling of some of my very favorite things: Exploring cultures through their cuisines, creating beauty through the medium of my camera and poetically expressing some of the abstract, silly, and all-encompassing feelings I have. It truly has been such a treat (pun absolutely intended). Inside you’ll find recipes, an Oahu food map, histories behind popular Valentine’s Day candies and even an ode to the one thing that keeps us all going: food. This issue has stretched my interests and talents, and it has added some fun constraints to my typical photographic style. All in all, I hope our work this month inspires you to share your love in new, gastronomic ways. Valentine’s Day is notorious for being kitschy at best, and lonely at worst. But this year it doesn’t have to be either. It is our wish that you feel emboldened in sharing your admiration and/or gratitude for others, whether that be through baking apple strudel or writing a note to them on our in-house designed Valentines. May all of your wildest foodie dreams come true. xoxo,

ABOUT The Ke Alaka‘i began publishing the same year the University, then called Church College of Hawaii, opened. It has continued printing for more than 60 years. The name means “the leader” in Hawaiian.What began as a monthly newsletter, evolved into a weekly newspaper, then a weekly magazine and is now a monthly news magazine with a website and a social media presence.Today, a staff of about 25 students work to provide information for BYU–Hawaii’s campus ohana and Laie’s community.

Red Velvet

Want to up the romance but have no baking skills? Buy a red velvet cake mix and make these delicious red velvet cookies.Whether you are celebrating with your significant other or doing Galentine’s day, these cookies are the perfect accent to the most romantic day of the year.

Ingredients 1 box red velvet cake mix 2 eggs 1/2 cup vegetable oil White chocolate chips

Directions Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside. In a large bowl, mix together cake mix, eggs, and oil until smooth. Mix in desired white chocolate chips Using a medium (2- tablespoon) cookie scoop, portion the dough onto the prepared cookie sheet 2- inches apart. Bake for 9-10 minutes Allow the cookies to cool on the baking sheet for 3-4 minutes before serving. Spaghetti DATE NIGHT

PREP TIME: 5 MINUTES

COOK TIME: 25 MINUTES

INGREDIENTS 1 package uncooked spaghetti noodles Parmesan cheese

SAUCE: 1 tbsp olive or avocado oil 1 lb lean ground turkey or beef, I use 93% lean ground turkey. 28 oz canned crushed tomatoes 1/4 cup water 3 tbsp tomato paste 1 tbsp garlic, minced 1 1/2 tsp dried oregano 1 1/2 tsp dried basil 1 tsp dried parsley 1 tsp salt 1 tsp onion powder 1/2 tsp garlic powder 1/2 tsp pepper

DIRECTIONS STEP I

Add oil to a skillet on the stove top. Heat to medium-high heat. Once pan is hot, add the ground meat. Saute the meat, stirring occasionally, until browned.

STEP II Reduce heat to medium low. Add canned crushed tomatoes, water, tomato paste, garlic, oregano, basil, parsley, salt, onion powder, garlic powder, and pepper to skillet with the meat. Stir to combine. Cover and gently simmer for 10 to 15 minutes or until everything is heated through and flavors have married.

STEP III PREPARE SPAGHETTI NOODLES AND serve sauce over them. Top with Parmesan cheese. ENJOY!

strawberry HOT CAKES Make your loved one some strawberry hotcakes and tell them, “I flipping love you.” Or “Nobody stacks up to you!” Or “I pancake a day without you!” 1 ½ cups all-purpose flour 3 ½ teaspoons baking powder ¼ teaspoon salt, or more to taste 1 tablespoon white sugar 1 ¼ cups milk 1 egg 3 tablespoons butter, melted Step 1: In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth. Step 2: Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot. Top with: Strawberries, whipped cream pecans, chocolate chips and any other toppings that fit your taste.

sweet Behind the famous candy BY KYLEE DENISON In a video from the Food Network titled “How Hershey’s Kisses Are Made” Jody Cook, the director of product publicity at the Hershey company said Hershey’s Kisses got the “kiss” name because of “the smooch sound the machine makes as the kiss is deposited onto the conveyor belt.” Annette Foglino writes in an article for The Smithsonian Magazine that the Sweetheart candy which feature’s printed messages such as “Marry Me” or “Love You” is still a popular traditional Valentine’s candy and can make a special day even cuter. Foglino shares the story of Mike Waltz proposing to his now-wife Chris. After opening several bags of Sweethearts only to find a few sweethearts with the phrase, “Marry Me,” he emailed the New England Confectionery Company, (Necco) asking for a few more. Necco employees then sent him a bag full of Sweethearts with “Marry Me” printed on them, which helped make Waltz’s special day possible.

my wristwatch ticks its hand taking sips consuming like a straw, slurping each second the seconds go by and i find my mind occupied with divine thought and by mind i mean belly because man, as we know, as the Good Book has shown will surrender, say, a birthright for the right bowl of stew will war for a morsel will fight for his food and who can blame him who can preclude his expensive appetite? and woman, in wisdom trades familiar for fruit she leverages agency in godly pursuit and perhaps in hunger for a forbidden, sweet sagacity so i, with voracity, find full-bodied permission from my fancy for flavor and human condition i find biblical reason to be feminine, shrewd to declare admiration for the sheer love of food.

apple

STRUDEL

Ingredients 1 Granny Smith apple – peeled and chopped 1 honey crisp apple – peeled and chopped 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 2 tablespoons sugar 2 tablespoons flour

2 sheets thawed puffed pastry 3 tablespoons brown sugar 2 tablespoons white sugar 2 tablespoons unseasoned bread crumbs 1 egg beaten 1 tablespoon water 1 pinch of salt

Directions 1. Heat oven to 350 degrees. 2. In a medium size bowl, add apples, cinnamon, nutmeg, sugar and salt. Toss together coating apples with dry ingredients. Set aside for 10 minutes. 3. Prepare a sheet pan with parchment paper. 4. On a floured surface, roll out each puffed pastry into a large rectangle. 5. Combine brown and white sugar with bread crumbs. Divide mixture in half and sprinkle down the center of each pastry. 6. Place half of apple mixture in the center of each pastry on top of sugar blend. 7. Gently fold long edge of pastry over apples then roll to close the bundle. Pinch edge and ends to seal. 8. Place apple bundles on lined sheet tray. Mix egg and water together then brush over pastry. With a sharp knife, cut slits in strudel to allow ventilation. 9. Place pan in oven and bake for 30 to 35 minutes until crust and golden brown. 10. Remove from oven and cool on a baking rack. Dust with powdered sugar and serve.

fruit punch

LEMONADE INGREDIENTS 2 lemons 2 12 oz cans frozen lemonade concentrates 2 liter Hawaiian Punch 2 liter Ginger ale or Sprite 46 oz of pineapple juice

DIRECTIONS Combine all ingredients in a punch bowl and mix. Slice lemons and top the punch. Serve & enjoy!

Matsumoto's - spice up your shave ice addiction with exotic flavors and Azuki beans. It is in Haleiwa. Seven Brothers - the Paniolo is one of the more popular burgers with two onion rings stacked on top. Located in Laie, Kahuku, and now Shark’s Cove! Da Bald Guy - local Hawaiian poke is a must-try for new students. Try it at the Kahuku food trucks. Ted's Bakery - Near Sunset Beach has the yummiest pie on the island. It makes a mean plate lunch too. Tita's Grill - the buttered Samoan bread and cocoa rice is always a staple, located at Hukilau Marketplace close to campus. Thyda's Tacos- if you’re missing street-style Mexican food, take a trip to Honolulu to satisfy your cravings with this authentic Mexican cuisine. Keep your eyes peeled because the taco trailer is small, but it packs a punch!

Island Vintage - serving all the social media favorites such as acai bowls and avocado toast, there are four locations, and the nearest is in Haleiwa. Cinnamon’s - if you’re looking for local dinner and dessert, try this restaurant’s loco moco and cinnamon rolls, located in Kailua and Honolulu. Da Spot - known for its local, healthy and affordable foods, and it is located near the University of Hawaii at Manoa in Honolulu.

INGREDIENTS 1.5 pounds chicken thighs boneless, skinless, cut into 1 inch pieces 1 tbsp canola oil 2 tsp sesame seeds yellow bell peppers green beans SAUCE: ¼ cup low sodium soy sauce 1/3 cup brown sugar 1 tbsp rice vinegar 1 tablespoon toasted sesame oil 1 tablespoon grated ginger root 4 garlic cloves minced 1 teaspoon chili garlic sauce 1 tbsp cornstarch COOKING: 1. Whisk together ingredients for sauce, set aside. 2. Grill bell peppers and green beans, set aside 3. Heat a oil in a large sauté pan over medium high heat. 4. When oil is hot, add the chicken. Sear until browned on one side, then flip and repeat on the second side, until chicken is cooked through, about 5 minutes per side. 5.Add sauce, cook for 1-2 minutes, or until sauce has started. to thicken and the chicken is coated in sauce. 6.Garnish with sesame seeds and green onion, serve.

chow mein INGREDIENTS 4 cups green cabbage , finely shredded 1 1/2 tbsp peanut oil (or other cooking oil) 2 cloves garlic , finely chopped 200g /6 oz chow mein noodles 1 carrot , julienned 1 1/2 cups bean sprouts 3 green onions , cut into 5cm/2-inch pieces 1/4 cup (65 ml) water SAUCE: 2 tsp cornflour / cornstarch 1 1/2 tbsp soy sauce, all purpose or light 1 1/2 tbsp oyster sauce (can substitute hoisin) 1 1/2 tbsp Chinese cooking wine OR mirin 2 tsp sugar (reduce to 1 tsp if using mirin) 1/2 tsp sesame oil White pepper (can substitute black pepper) Mix together cornflour and soy sauce, then mix in remaining ingredients. NOODLES: Prepare the noodles according to the packet instructions (my packet says soak in boiled water for 1 minute), then drain. COOKING: Heat oil in wok or large fry pan over high heat. Add garlic and stir fry for 10 seconds or until it starts to turn golden Add chicken and stir fry until the surface gets a tinge of browning but inside is still raw - about 1 minute. Add the cabbage, carrot, and the white pieces of shallots (i.e. from the base of the stalk). Stir fry for 1 1/2 minutes until the cabbage is mostly wilted. Add the noodles, Sauce and water. Stir fry for 1 minute, tossing constantly. Add bean sprouts and remaining shallots/scallions. Toss through for 30 seconds or until the bean sprouts just start to wilt.

Homemade pizza dough Get that special someone a PIZZA your heart and maybe they will give you a PIZZA of their heart. Or give yourself a PIZZA your heart by indulging this Valentine’s Day in some self-love by eating pizza with this pizza dough recipe

Ingredients 1 1/2 cups warm water (110 degrees F) 2 teaspoons sugar 2 1/4 teaspoons (1 package) active dry yeast 3 1/2 to 4 cups bread flour 2 tablespoons olive oil 2 1⁄2 teaspoons salt

directions 1. Place a pizza stone in the oven if you have one. Preheat oven to 500 degrees F (or 475 if that’s as high as your oven will go) while preparing the pizza dough so it can be completely hot when you are ready to bake the pizzas. 2. Combine warm water, sugar, and yeast in a large bowl. If using active dry yeast, let it proof for 5 minutes until foamy. If using instant yeast, there is no need to wait for the yeast to proof. 3. Add flour, olive oil, and salt and stir well with a wooden spoon or mix in a stand mixer with a dough hook until combined. 4. Knead for 5 minutes using a stand mixer fitted with a dough-hook attachment or 6-7 minutes by hand until smooth and elastic. The dough will be tacky and slightly sticky, but it should still be manageable to work with. 5. Drizzle a clean bowl with a little olive oil, then place the ball of dough in the bowl and turn it to coat in the oil. Cover with plastic wrap or a clean cloth and let rise for at least 30 minutes (or up to 1 1/2 hours) until doubled in size. 6. Divide the dough into 2 or 3 balls (or more if you want to make personal-size pizzas). 7. Roll, pat, or stretch the dough out until it is roughly 1/4” thick, then top with 1/4-1/2 cup of pizza sauce, freshly grated mozzarella cheese, and other toppings. 8. Bake for 10-15 minutes or until the cheese is melted and the crust is golden brown and crispy around the edges. 9. Cool slightly before cutting and serving.
