My Little Slice of Paradise By Kathy Brock It’s a bit different in the ‘Glades

Ingredients:

3 eggs 1/2 cup milk 1 tbs sugar 1/4 cup oil 1 diced tomato 8 cooked meatballs (use leftovers!), chopped up finely 2 large mushrooms, chopped 2 green onions, chopped Add a pinch of chives, parsley, Italian seasoning, garlic, and thyme 3 cups of flour

Great Way to use Leftovers!

Directions: In a large bowl mix eggs, milk, sugar, oil. Mix in the flour and then the rest of the ingredients.

Pour into a greased and floured loaf pan and bake at 350° for 45 minutes or until a knife comes our clean when you test it. If you like cheese, you can sprinkle a bit of shredded cheddar or parmesan over bread when serving.

Pair this with angel hair pasta and your favorite sauce or gravy. You could substitute leftover meatloaf for the meatballs in this recipe.

Women" How nice it is to live in a place where virtually the entire town collects to celebrate Independence Day...two days early!

I love that we hold our celebration on the Saturday before the 4th. Many working families have Sunday off...so holding our “blowout” on a Saturday makes it much easier on working families.

Many years ago when we bought our first home here we came down for a weekend in October. It happened to be the weekend before Halloween.

We were sitting down to dinner when we heard a knock at the door and then “Trick or Treat”! Being newbies, we had no idea (or candy) that the town would be celebrating Halloween that Saturday. Embarrassed, we grabbed quarters and started giving them out to the children thinking that there would only be a few of them…but there were a few hundred as they came down the streets in a caravan!

Halloween on a Saturday makes so much more sense than a mid-week celebration. Moms in other places must attempt to put sugar-high kids to bed for school the next day. But not in the Everglades...we are one step ahead of them all. Been there. Done that on Saturday.

There are other things that are so much different from “city” living. The darkness.

Growing up in Broward County, I really never saw a truly “dark sky” at nighttime. On one of our first nights sleeping here it was so dark in our room I could not see my own hand in front of my face. I literally asked Tim to turn the lights back on to make sure I was seeing OK!

Then, on our first clear night, I saw the Milky Way for the first time. Wow.

Bigger city living does offer some conveniences that we may not have here. In a large city you have many eateries, theaters, and night spots to visit. Hospitals and doctors are closer and shopping options are greater. However, traffic and congestion often cancel the time you would save if things were closer.

Old friends have asked me how I can tolerate driving so far to go to a Publix or Lowes? Well, it is quite easy.

On the east coast a trip to the dentist that was only 8 miles from our home - took me 45 minutes to get there by car!

Even shorter trips to the grocery store take a minimum of 30 minutes in the city factoring in the stops and traffic….not to mention the road rage we hear about everyday.

Here we can drive 30 miles in 30 minutes and reach anywhere we need to go in under one hour...without the stress and hassle of gridlock.

Yes. The ‘Glades sure are different. It is not for everyone. What some see as “backwards” I see as “ahead” of them all. We have either already done it or we get to do it twice. Having lived both options, I will choose door # 2.
