Grace's Bacon Fried Rice 3 Cups White Rice (Preferably Left Out or Day Old) 2 Eggs (Beaten) One Standard Package of Bacon Green Onions Soy Sauce White Rice Vinegar Sesame Oil Salt + Pepper

1. Cook white rice and leave out so it can be a little dry.

2. Chop bacon cook in pan over medium heat 3. Drain most of the bacon fat 4. Chop green onions into smaller pieces 5. Beat eggs until runny-ish 6. Combine all ingredients into big pan, making sure not to scramble the eggs too much.

7. Add soy sauce until white rice has more of a light brown color.

8. Add a dash of sesame oil (not too much) and some white rice vinegar 9. Add salt and pepper to taste 10. ENJOY :)

Thit Kho 2 lbs of Pork 6 fl oz Coconut Soda 3 Tablespoons Fish Sauce 2 Teaspoons Salt 4 Tablespoons Caramel Color 8 eggs Enough Tap Water For Initial Boil Enough Filtered Water to Cover Pork

1. First, you cut the pork into little bite-sized cubes and start boiling a large pot of tap water.

2. After the water is boiling, add the pork cubes and boil for 1-2 minutes to clean. After, rinse the pork until the water is clear.

3. After dumping out the tap water, add the coconut soda, fish sauce, and salt to the pot along with filtered water so that the pork is covered. Turn the heat to high until a boil occurs, then reduce to 25% heat. Simmer for around 1.5-2 hours, leaving the pot covered for the first 40 minutes and stirring occasionally.

4. Put the caramel color in a separate pot and then add it to the pot of Thit kho.

5. Hard boil the eggs in a separate pot, peel, and add to the main pot during the last 30-40 minutes of cooking.

6. Reduce the liquid to about ⅓ of starting amount, depending on how concentrated you want the sauce to be. Serve with warm white rice!

Seolleongtang 3 - 4 Pounds Ox Bones (사골) 1 - 2 Pounds Beef Brisket (Can Be Substituted) Cooked White Rice Cooked Rice Noodles/Glass Noodles Chopped Green Onions (Probably A Full Bunch) Salt And Pepper

1. Soak the ox bones in cold water for at least about 1 hour. Rinse well and drain. At the same time soak the beef brisket separately for at least an hour. Rinse and drain.

2. Throw the bones into a large pot and pour in just enough cold water to cover all the bones. The bring the pot to a boil. When the water boils, lower the heat and continue cooking for a couple more minutes. This is the pre-boiling process.

3. Next, drain and rinse the bones, then add them back to a clean pot. Fill up the pot with cold water once more and bring it to a boil.

4. Cover and boil (at a medium boil) for about 5 hours. The broth should develop a milky color.

During that time, add a cup or so of more water to keep the bones covered.

5. Add the beef brisket into the simmering pot and let cook for up to 2 hours until it is soft and tender. Then, remove the meat and let it cool until we're ready to serve.

6. Thinly slice the brisket and add it to your serving bowl. Then, strain the broth and pour into the serving bowl. Add salt, pepper, and green onions to taste.

7. Serve with cooked rice and/or noodles and kkakdugi. Enjoy!

Ozoni * 4 cups Water 1 Piece Dried Kombu (3” x 3”) 1 Cup Katsubushi 1 Chicken Thigh 1 Tbsp Sake 1 Tbsp Soy Sauce 4 Pieces Mochi (Either Round or Rectangular Shapes) 1 large Carrot (Thick if Wanting to Make Decorative Garnish) Daikon (Only Approximately 3-inches are needed) 4 Fresh Shiitake Mushrooms (If Dried, Soak Overnight to Rehydrate) 2 Stalks of Komatsuna or Spinach (3-4 Leaves if Using Napa) ¼ tsp Salt (for marinating chicken) 1 tsp Salt (for soup base) Kamaboko (White and Pink colors brighten the dish) OPTIONAL GARNISHES: 4 Sprigs of Mitsuba (Japanese Parsley) Yuzu Zest (Japanese Citrus) Finely Diced Green Onion 1. Soak kombu in water overnight in a large pot (this will be kombu dashi).

2. The following morning, cut chicken into bite size pieces. Sprinkle ¼ tsp salt and sake over it, mix together, and let it sit to marinade.

3. Peel and cut carrots into rounds. OPTIONAL: For decoration/garnish, cut some of the carrot rounds into a flower shapes. To achieve carrot flowers, some people use a small flower shaped cookie cutter, others just use a knife to create floral shapes. Separate the rounds and flower shapes pieces. You will be cooking the carrots rounds and the carrot flowers separately.

4. Peel and cut daikon first into rounds then cut rounds into quarter pieces.

5. Cut stems off of the shiitake mushrooms. OPTIONAL: Make an “x” or “asterisk” pattern on the top of the shiitake mushrooms.

6. Slice kamaboko (approximately 1/8” thick) for garnish later.

7. Pour kombu dashi into a large pot. Turn on heat to medium. When pot begins to boil, remove and discard the kombu.

8. Turn off heat and add the katsuobushi. Leave for approximately 10-15 minutes for flavors to come out of the flakes.

9. Strain the katsuobushi from the dashi (there should be no flakes in the broth).

10.Place chicken, shiitake mushrooms, daikon, and carrot rounds into the dashi pot. Start cooking over medium high heat. *OPTIONAL NOTE: Do not add the decorative carrot flower slices into this pot.

11.As the pot begins to simmer, skim the foam from the surface of the broth.

12.Add 1 Tbsp sake, 1 Tbsp soy sauce, 1 tsp salt. Gently stir, lower the heat to medium-low, and cover with a lid. Simmer until the vegetables are tender and chicken is cooked. If too much liquid evaporated from the pot (and/or if you find it too salty), add some water.

13.As the ozoni soup broth is simmering, fill a separate saucepan with water. *If you cut carrot flowers, place them into the water. Turn the heat to medium. When the water begins to boil, add the veggie greens (komatsuna, spinach, or napa). Cook the vegetables until tender.

14.Take vegetables (greens and carrot flowers) out of the boiling water. Squeeze water out from the greens and cut the greens into smaller pieces (approximately 1 ½ -inch in length).

Put the greens (and carrot flowers) aside to be used as garnish for later.

15.Toast the mochi in a toaster oven on a rack until it becomes puffy. *You can also grill or cook the mochi in a pan over the stove. If you use this method, make sure to coat the bottom of the pan with cooking spray so the mochi will not stick to the pan.

16.Place the toasted mochi into a bowl, ladle the hot ozoni soup on top of it, and add garnish (Veggie greens, 1 or 2 slices of kamaboko, and flower shaped carrots). You can also add other embellishments such as one sprig of mituba, sprinkle of green onion, and/or a small piece of yuzu for extra color and flavor.
