Bring in the coolers! Summer is not all beaches and sun beds

Too hot to venture a walk? Bring in the coolers, then. As they say, there’s more to summer than beaches and sun beds. Chilled home-made drinks can hit the spot too, you know? Here is a list of all-time favourite coolers that you may want to try:

Cucumber Cooler Ingredients - 1 large tender cucumber, skinned and cubes - ½ lt cold buttermilk (diluted) - ¼ tsp grated ginger - big pinch black pepper powder - big pinch roasted jeera powder - 1 tbsp chopped coriander leaves - few ice cubes 1. Whip the above ingredients at low speed with short intervals. The cucumber should be crushed. 2. Serve in glassed topped with ice cubes and coriander leaves.

Master Chef Sanjeev Kapoor’s healthy and refreshing, Saeb 4

Panna, Lemon Soda with Mango Ice Cubes and Tender Coconut Shikanji. Ingredients: - 3 green apples - 1 bunch mint leaves - 1 packet black salt - 1 small bottle honey - 2 bottles drinking soda - 8 lemons - 3 ripe mangoes - 2 tender coconuts - 1 packet shikanji masala

Preparations before you begin: Make the mango ice cubes the night before. How to go about it: Start by roasting the green apples in the oven. In the meantime make the tender coconut shikanji and lemon soda with mango ice cubes and finally make the Saeb Panna. Serve chilled and enjoy.

Sunset Cooler Ingredients

- 6 cups crushed ice - 6 cups orange juice - 1/2 to 3/4 cup strawberry syrup Directions In a pitcher, combine all ingredients; mix well. Yield: 6 servings. Nutritional Facts 1 serving (1 cup) equals 183 calories, 0 fat (0 saturated fat), 0 cholesterol, 3 mg sodium, 43 g carbohydrate, 0 fiber, 1 g protein.

Spicy Tomato Cooler

Ingredients 1 can (12 ounces) V8 or tomato juice, chilled 1/4 cup beef broth 1/4 teaspoon pepper 1/8 teaspoon celery salt 1/8 teaspoon Worcestershire sauce Dash hot pepper sauce, optional Directions In a small pitcher, combine the first five ingredients. Add pepper sauce if desired. Serve over ice if desired. Yield: 2 servings. Nutritional Facts 1 serving (1 cup) equals 41 calories, trace fat (trace saturated fat), 0


cholesterol, 664 mg sodium, 8 g carbohydrate, 1 g fiber, 1 g protein.

Fruity Summer Cooler

Ingredients - 6 to 8 ice cubes - 1/2 cup cubed cantaloupe - 1/2 cup DOLE® Pineapple Chunks in - - 100% Pineapple Juice - 1/2 cup cranberry juice - 1/3 cup sliced banana - 1/4 cup pineapple juice - 1 tablespoon honey - 3/4 teaspoon lemon juice - 1/4 teaspoon grated lemon peel Directions In a blender, combine all the ingredients; cover and process until smooth. Pour into chilled glasses; serve immediately. Yield: 2-3 servings. Nutritional Facts 1 cup equals 102 calories, trace fat (trace saturated fat), 0 cholesterol, 4 mg sodium, 27 g carbohydrate, 1 g fiber, 1 g protein. Diabetic Exchange: 1-1/2 fruit.

Menthi Majjiga (Fenugreek flavored buttermilk) Ingredients - 4 cups thick buttermilk - ¼ tsp pepper pwd (adjust) - ½ tsp cumin pwd - salt to taste For seasoning: - ½ tsp mustard seeds - ½ tsp cumin seeds

- 2 green chillis, slit lengthwise - ½ tsp ajwain (carom seeds) - ¼ tsp methi seeds (fenugreek) - 1 dried red chilli (broken) - pinch of hing (asafetida) - pinch of turmeric powder - 7-8 curry leaves - 1 tsp oil or ghee Add salt, pepper and cumin powders to the buttermilk and combine well. Heat oil or ghee in a pan, and add mustard seeds and as they begin to pop add the cumin seeds, methi seeds and ajwain seeds. On low flame, toss them about till the spices release their flavors and change colour (take care not to burn spices). Next add turmeric, asafetida powders, dry red chilli, green chillis and curry leaves. Turn off heat immediately and pour this seasoning over the thick buttermilk. Note: Methi seeds can be substituted with methi powder and you can add fresh coriander leaves for added flavor

Mango Lassi Mousse with Saffron-infused Whipped Cream

Ingredients (Serves 4) - 2 Teaspoons gelatin (See Note) - ½ Cup hung curd or plain Greek yoghurt, preferably full fat - 5 Tablespoons confectioners/icing sugar, or to taste - 2 Cups ripe fresh mango chunks - ½ Teaspoon powdered cardamom - ¼ Cup heavy/double cream - Mango chunks and toasted pistachios

for garnish 1. Sprinkle the gelatin over 2 tablespoons of cool water in a wide bowl and set aside to soak for 5 minutes. 2. Add 2 tablespoons hot water to the soaked gelatin and stir until it dissolves, warming the mixture slightly if needed, to do so. Set aside to cool. 3. Place the yogurt, sugar, mango and cardamom in a blender or food proces sor and process until smooth. Add the gelatin mixture and blend well. 4. Whip the cream to soft peaks in a large bowl and fold in the mango mixture. 5. Ladle the mousse into glasses or bowls, cover and refrigerate for about 4 hours or until set. 6. Dollop or pipe the saffron cream on top of the mousse. Finish with chunks or slices of fresh mango and the toasted pistachios.

Saffron-infused whipped cream Ingredients - 4-5 Saffron threads - 1 Teaspoon hot milk - 1/3 Cup heavy/double cream - 2 Tablespoons confectioners/icing sugar, or to taste. 1. Soak the saffron in the hot milk for a few minutes. 2. Whip the cream along with the icing sugar and saffron milk until stiff peaks form. Note: This recipe makes a very soft mousse. If you’d like a stiffer texture increase the gelatin to 3 teaspoons.

amadan, the ninth month of the Islamic calendar, is a time of spiritual reflection, improvement and increased devotion and worship. This annual observance is regarded as one of the Five Pillars of Islam. The month lasts 29–30 days based on the visual sightings of the crescent moon, according to numerous biographical accounts compiled in hadiths Muslims are expected to put more effort into following the teachings of Islam. In addition to fasting, Muslims are encouraged to read the entire Quran. Some Muslims perform the recitation of the entire Quran by means of special prayers, called Tarawih. These voluntary prayers are held in the mosques every night of the month, during which a whole section of the Quran (Juz’, which is 1/30 of the Quran) is recited. Therefore, the entire Quran would be completed at the end of the month. Although it is not required to read the whole Quran in the Salatul Tarawih prayers, it is common.

The fast (sawm) begins at dawn and ends at sunset. Each day before dawn, Muslims observe a pre-fast meal called suhoor. After stopping a short time before dawn, Muslims begin the first prayer of the day, the Fajr prayer. At sunset, families hasten for the fast-breaking meal known as iftar. In the evening, some dates are usually the first foods to break the fast; according to tradition, Muhammad broke fast with three dates. Following that, Muslims generally adjourn for the Maghrib prayer, the fourth of the five daily prayers, after which the main meal is served. Social gatherings, many times buffet style, at iftar are frequent, and traditional dishes are often highlighted, including traditional desserts, especially those made only during Ramadan. Water is usually the beverage of choice, but juice and milk are also consumed. Soft drinks and caffeinated beverages are consumed to a lesser extent As the holy month is a time of spiritual reflection, non-Muslims like expatriates living in the Gulf region are encourage to

adapt their lifestyle during the month as well. For one, eating and drinking in public is frowned upon and penalties are levied on those who break the rule. Because of this, most restaurants are closed in the day. At the workplace, non-Muslims are encouraged not to eat or drink in front of a someone on fast, and as well, not to get into arguments with them – these being a gesture of respect. Also to show respect, non-Muslims are asked to dress and behave appropriately and avoid lively idle talks as well as playing loud music because these may provoke offence. Non-Muslims are also encouraged to, in the spirit of Ramadan, get themselves involved by greeting Muslims, “Ramadan Kareem” and attending iftars—these are very much appreciated. Lastly, as Ramadan is a month of giving charity to the needy, launching community charity drives and collecting used clothes, toys or books also gets nods of approval. 9

Sheikh Zayed Grand Mosque The mosque is almost the size of 5 football fields The majestic Sheikh Zayed Grand Mosque is probably the most imposing religious and national landmark in Abu Dhabi to date. It is also arguably one of the most important architectural treasures of contemporary UAE society—and one of the most beautiful in the world— initiated no less by the late president HH Sheikh Zayed bin Sultan Al Nahyan, who is fondly thought of as the father of the UAE. The Sheikh Zayed Grand Mosque, popularly called the Grand Mosque by local residents, is seen as a construction to “unite the world”, using artisans and materials from countries such as Italy, Germany, Morocco, India, Turkey, Iran, China, Greece and the UAE. More than 3,000 workers and 38 renowned contracting companies took part in the construc-

tion of the Mosque. The Mosque’s initial architectural design was Moroccan, but it evolved to include many global features, including exterior walls that are of traditional Turkish design. Natural materials were chosen for its design and construction due to their long-lasting qualities, including marble, stone, gold, semi-precious stones, crystals and ceramics. The 22,412 square metre mosque site is equivalent to around the size of five football fields, and can accommodate 40,960 worshippers – 7,126 in the main prayer hall; 1,960 in the open prayer hall; 980 female worshippers in the open prayer hall female section; 22, 729 in the open Sahan (courtyard); 682 in the main prayer hall entrance and 784 in the mosque’s main hall entrance.

The Sheikh Zayed Grand Mosque features 82 domes of Moroccan design and all decorated with white marble. The main dome’s outer shell measures 32.8 metres in diameter and stands at a height of 70 metres from the inside and 85 metres from the outside - the largest of its kind, according to the Turkey Research Centre for Islamic History and Culture. The Mosque has approximately 1,000 columns in its outer areas which are clad with more than 20,000 marble panels inlaid with semi-precious stones, including lapis lazuli, red agate, amethyst, abalone shell and mother of pearl. The 96 columns in the main prayer hall are round in shape and inlaid with mother of pearl. Additionally, the Mosque has four beautiful minarets standing at almost 107 metres each at the four corners of the mosque. Reflective pools, totaling 7,874 square metres and laden with dark tiles, surround the Mosque, whilst coloured floral marble and mosaics pave the 17,000 square metre courtyard which is decorated with white marble from Greece. The pools reflect the Mosque’s spectacular image, which becomes even more resplendent at night. An equally impressive interior design complements the Mosque’s awesome exterior. Italian white marble and inlaid floral designs adorn the prayer halls and the Mosque’s interior walls have decorative gold-glass mosaic features, particularly delicate on the western wall. The main glass door of the Mosque is 12.2 metres high, 7 metres wide and weighs approximately 2.2 tonnes. The main prayer hall features the world’s largest chandelier under the main dome – being 10 metres in diameter, 15 metres in height.

A dominant landmark of Dubai, the Jumeirah Mosque was built in the medieval Fatimid tradition. This stone structure is a tribute to modern Islamic architecture. While strolling through the mosque at sunset, shadows of this elegant formation dance around you. The Jumeirah Mosque has a Qibla wall, which faces Mecca, and has a Mihrab, prayer niche in the center indicating the exact praying direction. It is also the holiest place in the Jumeirah Mosque. The Jumeirah Mosque where Muslims gather especially for the Friday prayer is the masjid jum’a, meaning, the grand mosque. Here, as in any other mosques, it

is forbidden to take pictures of living beings except plants, which can also be worshipped. This explains why it is very rare to find pictures of mosques’ interiors at all. Jumeirah, now a high-end, bespoke community, was originally a village of fishermen, pearl divers and traders. In the 1960s, Jumeirah became a principal area for rich, western expatriates. The Sheikh Mohammed Centre for Cultural Understanding organizes visits to the Jumeirah Mosque for non-Muslims every Saturday, Sunday, Tuesday and Thursday at 10am, children must be over five years old. Visitors are asked to gather outside the mosque in the morning for a guided tour. Fee is 10 dirhams per person.

The Dubai Grand Mosque Originally a 1900 AD Quranic school, this mosque has 54 domes and a 70-meter-high minaret Counted among one of the largest mosques in the UAE with a capacity of up to 1,200 worshippers, the Dubai Grand Mosque was originally constructed in traditional Islamic architectural style, and opened in 1900 A.D as a kuttab (Quranic school) where children learnt to recite the Quran from memory. The Grand Mosque of Dubai was rebuilt, maintaining the style of the original structure, in 1998 and now boasts a 70-meter (231ft) high minaret—the tallest in the emirate. Situated on the Bur Dubai side of the creek, near the Ruler’s Court, the Grand Mosque consists of 45 small domes in addition to nine large ones boasting stained glass panels, sand-colored walls and wooden shutters. It is the main center of worship and, as well, an important monument of Dubai. The new Dubai Grand Mosque’s sandcolored walls and wooden shutters blend perfectly with the surrounding old quarter of Bur Dubai. The best time to see it is at night, when it is spectacularly lit up. Non- Muslims are not allowed entry. But they can visit the minaret and click picture of the mosque from therein. 11

Food breaks cultural barriers

A person can learn about different cultures through food, says Media Rotana Executive Chef Francesco “Franco” Napoletano, because it gives insight into a particular cultural group’s way of life thereby breaking barriers that would have otherwise kept people apart. And if it’s breaking barriers you have in mind, then come and dine at Media Rotana, says the chef who, hailing from Italy, has over 20 years of experience in the culinary world, having worked in top hotels like Renaissance Hotel in Hong Kong; Berjaya Time Square Hotel in Kuala Lumpur; Grand Intercontinental Seoul; and One &

Only Kanuhura and Kurumba Resort and Spa in the Maldives. “Food is an important part of different cultures. It allows people to gain insight into a particular cultural group’s way of life,” says Chef Franco whose favourite cuisine next to Italian is Japanese. Having worked lately mostly in the Far

East, the chef says he’d like to introduce flavours of Malaysia, Korea, Japan and Thailand in his menus. Moreover, he says, Media Rotana’s Prego Italian Restaurant will be having Sardinian and Sicilian promotions during the summer, as well as themed buffet nights at Channels Restaurant like Pacific Night, English, Mediterranean, Mexican, Asian and Asian and Sushi Nights. On Fridays, Media Rotana has a large brunch buffet at Nelson Pub and Prego. For Ramadan, Chef Franco says Media Rotana will be having a large variety of local and international favourites.

250 ml EVO oil 4 cloves of Garlic chopped 500 gr Cherrystone Clams shelled and chopped with juices reserved 500 gr fresh Linguini 15 gr chopped parsley 300 gr. Broccolini 150 gr Cherry Tomato

Heat olive oil in large sauté pan over medium heat. Add garlic, cook until lightly browned. Add Clams with their juices, bring to a boil then lower heat to a simmer and cook for 5 more minutes. While the sauce is cooking, bring a large pot of water to a boil. Add 1 tablespoon of salt and the linguini and add the broccoli 2 minute before

the pasta is ready 5. Cook uncovered over high heat until Al dente. 6. Drain pasta and broccoli, put back in pot then add some of the sauce to the pot and toss. Add in cherry tomatoes and adjust seasoning. 7. Serve the pasta spooning remaining sauce over top. Garnish with chopped parsley and a line of Extra Virgin Olive Oil

With a few weeks to the holy month of Ramadan, Auris Plaza Hotel is putting final touches to a one-of-a-kind Iftar celebration, the Turkish Food Festival, which will run throughout the month. I look forward to working with Chef Dewet, the Executive Chef of Auris Plaza and his team to bring this experience to the guests.” From Gaziantep, Turkey’s southeastern region, the chefs will prepare Yuvalama, a festive dish made of rice and meat rolled into small-sized balls with chick peas and a yoghurt sauce. The Aegean region will feature Enginar, an artichoke confit, while the Black Sea region will showcase Muhlama, a traditional polenta and also Yaprak Sarma which is vine leaves filled with rice, meat and spices. The chefs will also be preparing tradi-

tional turkish Ramadan specialties such as Ramadan Pie (a traditional bread); Gullac, a dessert of layered pastry, pomegranate and walnuts; Tursu Kavurmasi, sautéed pickled green beans with caramelized onions and an aromatic spicy oil and and Petek Bal and Kaymak, a traditional fast breaking dish of honey and thick cream. Additionally, a Turkish tradition of breaking the fast would not be complete without the famous Cay (tea) from the city of Rize. ‘Emotional experience’

Chef Andreas Mensch, Pullman Dubai Deira City Centre’s executive chef always knew he wanted to become an executive chef. He started his practical training at a two-star Michelin restaurant in Vienna, Austria. He then took his culinary journey to Norway, Latvia, USA, Russia, Budapest and now, Pullman Dubai Deira City Centre. “In the end, a great meal is not about the

food and beverage. A great meal is an emotional experience,” says Chef Andreas.

Chef Andreas is looking forward to welcoming patrons and groups at the hotel’s Medley Restaurant this Ramadan. And if his guests can’t make it to the hotel on a specific night, he and his team will cater anywhere in Dubai. As part of Chef Andreas’ belief in the “emotional experience,” he shares his favourite recipe, “Raspberry and Mascarpone Tart.”

Raspberry and Mascarpone Tart

Ingredients (serves 4) Ingredients Tart shell 250g Butter 125g Icing Sugar 50g Egg 290g Flour 10g Almond powder Vanilla Method Tart shell Combine the flour, sugar and salt on a large cutting board. Cut the butter into the dry ingredients using two knives, a pastry cutter, or your fingers ”it’s okay to really get in there with your hands”. Once you’ve got a crumbly mixture, make a hole in the center and pour in the beaten egg and vanilla. Slowly start moving the crumbles to the middle of the hole and mixing until it starts to come together like cookie dough. Sprinkle the dough over the bottom of a 10 cm tart pan with a removable bottom. Evenly

press the dough into the bottom and up the sides of the pan Cover the tart shell with plastic wrap and let it rest in the refrigerator for 30 minutes. Once chilled, prick it all over with a fork and bake until golden brown, about 12 to 15 minutes at 180*C Remove from the oven and cool completely on a wire rack before filling and removing from the pan. Ingredients Raspberry Jam 250g raspberry 100g sugar 05g kg pectin Method Raspberry Jam Cook all ingredients together, at slow temperature. Stir continuously. The Jam is ready when the color becomes shinny and thick like honey. Cool and use. Ingreedients Mascarpone Mousse

2pc egg yolk 80g icing sugar 100g mascarpone 100g cream 3g Galantine Method Mascarpone Jam Over a water bath whip the icing sugar with the egg yolk until it becomes a creamy consistence. Be carefully that the heat is not too much or you will have scrambled egg After you reach the creamy consistency, whip until the mixture is getting cold. Stir the mascarpone in the icing sugar-egg yolk mixture, then add the cream which should be whipped before. The Tart: Fill the Tart shells with Raspberry jam with help of an piping bag place small dots on the tart and decorate with Fresh Raspberries. Decorate with a Mint leaf.



New Zealand treat

Hilary joined Jumeirah in April 2007. She started at Madinat Jumeirah at the award-winning restaurant Pisces before moving to start the “Gastro Pub” concept in the Wharf as Chef de cuisine. She was then appointed Chef de Cuisine in the main kitchen in charge of room service and all-day dinning, the Quay Café, Bahari bar, Banqueting, Al Muna and the Mina A’Salam brunch. Hilary joined the Creekside team in No-

vember of 2012 as Executive Sous Chef, overseeing the culinary performance of the restaurants and bars within the hotel.

Before moving to Dubai and joining Jumeirah, Hilary worked for restaurants in New Zealand and Australia, including the Cin Cin on Quay and Euro restaurants in Auckland and many years working on the stunning Hayman Island resort in Queensland. Hilary is from New Zealand and holds a Diploma in Culinary Arts from the University of Technology in Auckland.

For the garlic mayonnaise 10 cloves peeled garlic ¼ tsp salt 2 TBS mayonnaise 50 mls olive oil ½ TBS lemon juice Method: For the Arayes 1) In a medium bowl combine the mince lamb, salt pepper, onion, tomato, mint, chili paste, sumac, parsley and pine seeds 2) Marinate mixture in the fridge for 1 hour. 3) Separate the mixture into 8 even balls 4) ½ open the Arabic bread by slicing around the outside and place 1 ball in the

center of each. Flatten the mixture to form a flat “sandwich”. 5) In a medium hot non-stick pan cook each “sandwich” for 2-3 minutes on each side. Until fully cooked and golden brown. For the garlic mayonnaise 1) Combine garlic, salt in a small blender or food processer. 2) Add the mayonnaise. 3) With the blender running slowly add olive oil then the lemon juice 4) Check seasoning and add more salt if required. To serve Serve the lamb Arayes hot with the garlic mayonnaise and selection Arabic pickles.

Yellow capsicum 15gms or ¼ of capsicum Olive oil 1tbl spoon or 15 ml Fish stock-50 ml Fresh dill-1gm Method of preparation: One: Wash potato properly and put it into the pot with cold water, potato should be cover with water, bring for boil. Boil potato for 10-15 min until soft. Remove from gas and strain all water. Allow to cool for 5 min. Two: For Salmon marinating mix all ingredients and apply for salmon filet, keep into chiller for 15 min until fish will be completely marinated. Three: Now chop sundried tomato and keep on small bowl, Remove all skin from potato and crash it with fork, add sundried tomato, olive oil, salt and white pepper. Keep crush potato in warm place.

Four: Preheat the oven to 200C/400F/Gas 6. Heat olive oil on non stick frying pan for 1 min. Put marinated salmon as skin down on the pan and reduce fire. Pan fried fish for 2 min from both side. Then remove salmon from the pan and put it on cooking tray, bring the fish into the oven for 4-5 min. Five: To make mussels sauce: Wash mussels with cold water, and keep a side. Cut capsicum into the dice and keep into the bowl. Heat olive oil on frying pan adds chopped garlic, mussels and capsicum dice, stirring all ingredients and adds fish stoke. Cover and cook for 2-3 min until mussels open. To serve: Use round mould to arrange potato on center of serving plate, put fish on top of it, add mussels and drizzle remaining sauce from mussels, Garnish your dish with fresh dill and serve.

Recipe for Four Ingredients Fish Hammour : one fille Tahina : 200gms Water : 150ml Chopped Garlic : 1 tsp Olive oil : 100ml Sliced mix capsicum : 1pcs each Salt : 1tsp Red chili paste : 1tbsp Fresh coriander : 1tbsp Cumin powder : 1tbsp Sliced onion : 1no White pepper : 1tsp Lemon : 1no Cashew nut : for the garnish Fish Mint : for the garnish Method Sauté the onion, garlic, mixed capsicum and coriander. While sautéing, mix water, tahina and chili paste. Put the sauce on the vegetables and mix it well and put it for slow fire for 10 to 15 minute. Marinate the fish with salt, lemon, white pepper and olive oil. Place in the pre heated oven for 8 minutes for 165o c. cool the tajine and fish. Once it coo,l it down serve the tajine toped with the fish, and put the garnish before serving.

Preparation: Stir bulgur, 1 1/2 cups water, 1/2 cup lemon juice, and 1/3 cup oil Ingredients: in large bowl. Let stand until - 2 cups medium or coarsely cracked bulgur is tender and most liquid is bulgur* absorbed, about 2 hours. - 1 1/2 cups water Meanwhile, whisk together - 1/2 cup plus 2 tablespoons fresh remaining 2 tablespoons lemon lemon juice juice, 2 tablespoons oil, 3 table- 1/3 cup plus 2 tablespoons olive oil spoons mint, and 1/2 teaspoon salt - 6 tablespoons chopped fresh mint, in medium bowl. Helwat el Jibn Amount Ingredients 3 cups Sliced fresh mozzarella soaked in water ½ cup Semolina ½ cup Farina ½ Stick Sweet cream butter 2 cups Sugar 1 cup Water 1 tbs Rose water 1 tbs Orange blossom water 1 tbs Lemon juice ¼ cup Ground pistachios 2 cups Ashta pudding 1 cup Simple syrup Method: In a large pot, on medium heat, combine water and sugar and stir until dissolved. Add lemon juice, rose water and orange blossom water and let boil until thick like syrup. In a saucepan, melt butter on medium heat and then add farina and semolina and cook for 2 minutes, then add to syrup and pot and let cook for 2 minutes. Next, add mozzarella to the pot and stir vigorously with a wooden spoon until cheese is melted and well combined with the farina/syrup mix, about 3-5 minutes. Immediately pour cheese onto a flat surface or baking sheet that is coated with simple syrup, thin the cheese out with a spoon or with a marble rolling pin until it is 1/8 inch thick and then let cool completely. Cut the cheese into 3 or 4 inch squares, fill with custard and roll up, place on a plate and refrigerate for at least 2 hours. When ready to serve, top with ground pistachio and simple syrup.

Chocolate muffin cake with Balsamic and caramel marinated strawberry Ingredients 1 1/2 -2 cups all purpose flour 1 cup sugar 1/2 cup unsweetened cocoa powder 2 teaspoons baking powder 1/4 teaspoon baking soda 1/4 teaspoon salt 2 large eggs lightly beaten 1 cup milk 1 cup (1 stick) butter melted 1/2 cup chocolate chips Suggested toppings: chocolate chips, icing, butter, strawberries Preheat oven to (190.5 degree Celsius). Grease or line with paper cupcake liners, a 12 cup muffin pan. Combine the flour, sugar, cocoa, baking powder, soda and salt in a medium bowl. Whisk to blend. Add the eggs, milk, and melted butter. Stir until just blended. Stir in the chocolate chips. Spoon into the prepared pan. Bake until puffed and a toothpick inserted in centre comes clean; this should take about 18 to 20 minutes. Invert and cool completely. Makes 12 muffins.
