INDUSTRY NEWS: NUTRITIONAL POWERHOUSE Vitamin B12 is an essential vitamin needed in everyone’s diet. However, individuals following a vegan or plant-based diet have one problem.... large doses are typically found in animal-derived products. Luckily, there are many options out there which provide alternative sources of this key vitamin. Ensuring someone consumes enough B12 in their diet is essential for optimum health. Although this vitamin is little talked about, it makes a big impact when we are lacking in it. Just a few of the health benefits include: providing the body with energy, protects the nervous system, formulates and divides red blood cells and synthesises DNA. So of course without

enough B12 a person may start to feel weak and fatigued, dizzy, loss of appetite, or get mouth ulcers with dry, cracked lips. Most commonly, those following a vegan diet will take B12 sublingually via a supplement, however it is still recommended to get some intake from a fortified food source. Among the health community, it is widely known that Nutritional Yeast is a great source of Vitamin B12. So what exactly is it? Nutritional Yeast is a unique strain of yeast and is not the same as baking yeast as it has been “deactivated” with heat during processing. The scientific name is Saccharomyces Cerevisiae which is grown on sugarrich mediums such as cane sugar and molasses. Why choose Nutritional Yeast as a B12 source? Not only is there fortified B12 added, but Nutritional Yeast is naturally higher in other B Vitamins like thiamine, folate, B6 and niacin which all help the body activate energy reserves, aiding in combating B12 deficiency and its symptoms. Another advantage behind this product, is the high protein content, containing 8-10g per two tablespoons (22g). As nutritional yeast is a complete protein, it also contains all 9 essential amino acids- which are commonly found in animal derived products, making it a great sub.

The distinctive cheesy, nutty flavors are a result of how this yeast is made. Firstly, a living strain of the saccharomyces cerevisiae is fed a glucose rich carbohydrate (such as molasses) in a fermentation chamber. The yeast will then begin cultivating. From there, the yeast is then heated, pasteurized and dried, making it inactive. The drying process also toasts the yeast, leaving it in thin flat flakes.

1 cup nutritional yeast flakes 1 cup almond flour 1-2 tsp salt Mix the ingredients together, adding salt to taste. Keep in a jar in the pantry or at the table. Sprinkle on pasta dishes, salads, soups and stews or as a topping on pizzas, roasts, vegetables or pasta bakes. It will colour nicely to a golden crust very quickly on baked dishes, so add it towards the end of cooking.

¼ cup nutritional yeast flakes 2 tbsp tapioca flour 2 cups plant based milk of choice Salt & pepper to taste

THE ANCIENT FOLK REMEDY By Tennille Giampiatro

ore than ever before, people are looking for the most effective, convenient and financially viable ways to improve their wellbeing while also enhancing the way they look and feel overall. Apple cider vinegar has been used medicinally for many centuries for its wide range of health benefits. The word vinegar comes from the Latin words ‘Vinum (wine) and acer (sour), which is what vinegar basically is – sour wine. Besides the diverse medicinal properties and other health benefits, what was originally used as a natural antibacterial and anti-fungal, is now used to assist with detoxification, antibiotic, a home remedy, disinfectant, natural preservative and house cleaner. Apple Cider Vinegar (ACV) is created by firstly crushing the apples to squeeze out the liquid (at this point, sometimes yeast is added). The alcoholic fermentation process can then begin while the sugar from the apples is turned into alcohol. This alcohol is then converted to vinegar and acetobacter is formed to create acetic acid. This is the by-product of the ACV – also known as “The Mother”. The Mother consists of protein, enzymes and good bacteria, hence, this is the most important ingredient and where most of the health benefits come from. ACV containing the Mother is usually unrefined, unpasteurized and unfiltered Apple Cider.

WAYS TO IMPROVE YOUR DAY Morning: 1. 20:20:20 routine. This includes waking up 1 hour earlier and spending 20 minutes of this dedicated to movement, 20 minutes dedicated to reflection and the last 20 dedicated to learning and growing. 2. Squeeze ½ lemon into 1 cup warm water or ACV diluted in water. Drink either on an empty stomach. 3. Decide on 3 achievable goals for the day, whether small or large.

In regards to general and overall health, it helps to restore the body back to equilibrium while also assisting to soothe and heal. It is known to be anti-inflammatory, alkalising, and detoxifying (especially helpful in the liver detoxification process). Some of the main conditions and illnesses ACV has been thought to assist with are: Diabetes Trials have shown that Apple cider vinegar may assist in the way the body absorbs blood sugar and also increase insulin sensitivity (reducing hyperglycemia). It is thought that consuming ACV before meals helps to slow the rate in which the stomach is emptied, therefore reducing large spikes in blood glucose. Studies have also shown that patients consuming ACV before bed have had a reduced fasting blood sugar level upon waking. Immune ACV contains an array of vitamins and minerals which assist with building up the immune system. Some of the key nutritional components in ACV are potassium, Vitamin C, Vitamin E, polyphenols (antioxidants) and of course, probiotics. The built in antibacterial properties assist with fighting off pathogens, therefore reducing the severity and duration of the common cold. ACV also has a slightly alkaline effect on the body. Because of its positive effect on the gut, it helps boosts the absorption of certain nutrients. Digestion Certain foods require assistance in breaking down before, during and after the digestion process. ACV has been shown to stimulate and aid in the digestion of fats and proteins by stimulating the production of a vital stomach

acid, hydrochloric acid. The pro and prebiotics support the growth of microflora in the gut. As a result of this, it is said ACV can assist with bloating, constipation, abdominal distension, gas and heartburn. Weight management Besides reducing blood sugar and insulin resistance, ACV has shown to help with weight management by increasing satiety – or helping you to feel full. Due it its thermogenic effect, it assists with energy expenditure and fat burning, therefore reducing fat storage. Due to its role in digestion, it is also able to reduce sugar cravings. Cholesterol Although there are few studies conducted on humans on the correlation between consuming ACV and cholesterol, from evidence we do have, we can see there is a positive effect of ACV in lowering triglycerides and total cholesterol, however, some results also showed significantly raised levels of highdensity lipoprotein (HDL) – good cholesterol. It is thought this is due to the Pectin in ACV. There are many variables as to the dosage of Apple Cider, when it should be taken and how. The general rule of thumb is 1-3 tablespoons in a cup of water each day. The most common time to take it is first thing in the morning as it is said that there are more health benefits taking it on an empty stomach. ACV can be an acquired taste, therefore honey is commonly added. Some other ways to introduce ACV into your diet including: using it cooking, baking, dressings, marinades and as a preservative.

Afternoon: 1. If you work in an office, step out and get fresh air throughout the day. This will help to re-focus and re-energize. 2. If you have been working at a computer for long periods of time, try looking into the distance. 3. Ensure your lunch will act as fuel for your brain. Try including good fats (avocado, oily fish) complex carbs (grains, beans/lentils, quinoa etc). Snack on foods that are low in sugar (include fruits, nuts/trail mix) Dinner: 1. Always include a source of protein (e.g chicken, tofu, fish & veg). 2. Avoid eating dinner too late and late night snacks. Go for a light walk or include some gentle movement after your meal. 3. ACV before your meal to assist with digestion. Incorporating Apple Cider vinegar into your diet is one of the best ways to increase your metabolism and start your journey to wellness. It is something that is easily added into your diet while still providing a range of health benefits and flavour to foods.

• ¼ cup ginger root • 3 cloves garlic (chopped) • 1 chopped pepper • ¼ chopped cabbage • 1 tsp raw honey • Small handful parsley Place all ingredients in a jar and fill the rest of the jar with ACV, ensure all ingredients are covered. This can be taken in the morning as a shot or diluted with water, used as a dressing or marinade.

PRECONCEPTION NUTRITION: STARTING FROM THE BEGINNING These evidenced based recommendations should be on every couple’s radar before trying conceive. By Lora Attia - Dietitian & Fitness For Mums 18

It is widely known that what we eat, drink and our lifestyle choices during pregnancy is important and impact a baby’s long term health. However what isn’t widely known is the impact begins prior to conception. Preconception nutrition, at least three months before an egg is fertilized, should be prioritized but the more time you can give yourself the better. This is because a women’s eggs follow a 90 day cycle and for men approximately 64 days for a full sperm reproduction. During this time, diet and lifestyle choices influence gene expression and therefore disease risk. From the moment an egg is fertilized, requirements for specific nutrients increase for fetal growth. Nutrient requirements continue to increase throughout pregnancy and breastfeeding. Therefore understanding where your nutrition stores lie prior to conception is important as it is not uncommon for women and men to need to correct deficiencies.

The first 1000 days From the moment of fertilization the baby’s genetic make-up is complete, they have all the genetic code required for embryo growth. Researchers have discovered that the first 1000 days are a crucial window of time to reduce the risk of obesity, type 2 diabetes, heart disease and allergies. We also now know that development and long term health is only moderately determined by genes and significantly influenced by nutrition and lifestyle factors throughout pre-conception, pregnancy, infancy and early childhood.

Why you should get a health check Optimizing general health before pregnancy is vital. There are many nutrient deficiencies and medical conditions that can affect fertility. Some are obvious whilst others are silent. For example, you may have low levels of vitamin D and not know unless this is specifically checked. Low levels of Vitamin D are associated with lower levels of fertility and ovulation. Pregnant women with insufficient Vitamin D levels had an increased incidence of Gestational Diabetes, pre-term delivery and loss of pregnancy. Similarly, optimal iron stores before pregnancy is of extreme importance. Iron deficiency during pregnancy is common due to the increased requirements. Optimum iron levels can be achieved through increased consumption of lean meat, legumes, whole grains and green, leafy vegetables. Iron supplements may also be effective if required but again; best started prior to conception than during pregnancy. This will also avoid symptoms of constipation which can be exacerbated during pregnancy making eating a balanced diet during pregnancy very challenging. You will also want your GP to investigate thyroid function, Iodine, Zinc, Folate, B12, blood sugar control, hormonal conditions and Insulin Resistance. These conditions are common in women who are overweight and therefore play havoc with hormones making it more challenging to conceive. Equally, Endometriosis and Coeliac disease can impact fertility, pregnancy and health outcomes in babies. A prenatal dietitian may help you reduce the effects of these medical conditions and optimize your diet accordingly. This is done by collating

all your medical and diet history, then tailoring a diet and supplementation plan. Prenatal supplementation should begin at least three months prior to conception to optimize nutrition stores, reduce risk of neural tube defects and improve quality of egg and sperm health

On my last visit to the Okinawan islands, off the southern end of Japan, I was talking with farmers who were so proud that their healthy crops were not exposed to the spraying of poisonous pesticide chemicals, which had become so common in the western world. The Okinawans are the longest living, healthiest people on our planet. In our ‘developed’ country we may be living longer- but the last precious 1020 years are not necessarily healthy. Many farmers are still respecting their forefathers‘ traditions of growing foods without added toxic pesticides, added hormones and antibiotics. Americans in Okinawa call this food “organic”. Okinawans call it “normal” !

A Century Ago

Humans began to create antipest formulations from poisonous chemicals which were spread on the crops to harm the pests and kill them. Medical Scientists realised that these toxic chemicals were also being absorbed by humans. DDT was one of the first popular toxic chemicals to be promoted as a Wonder Chemical, worldwide- causing cancers, infertility, nerve damages, miscarriages. This disaster pesticide was banned in the USA in 1972, by the newly formed EPA Environmental Protection Agency.

The quote continues, “Their widespread use has caused health problems and fatalities in many parts of the world”. The human dangers from pesticides also increase over time - it’s called “bio accumulation”. The acute effects researched include nausea, vomiting, fatigue, headaches, convulsions, coma. The chronic effects include nerve disorders, blood disorders, hormonal and endocrine changes, tumours and malignant cancers. Poisonous pesticides enter the human body through the skin, from topical products; the intestines from toxic food; and by breathing via our lungs. So please chose your food and skin and hair products wisely.

SLEEP HYGIENE Practical habits to ensure a better night’s sleep By Tennille Giampetrio usually last the longest. Heart rate and body temperature will usually start to drop to prepare you for a deep sleep. Sleep hygiene is practical habits and guidelines that can be formed in order to assist with getting a good or ‘better’ night sleep. It is aimed at improving not only the amount of sleep you get, but also ensuring the sleep you do get is of quality and more restful. Some of these habits are quick and easy whilst some may take time to adapt. Many underestimate the importance of getting a good night sleep. The impact this can have both physically and mentally is far greater than perceived, creating disruption in lifestyle and overall wellness. Sleep is vital to ensuring both the brain and body can function at its optimum. Firstly, it is important to understand the difference stages of sleep and the sleep cycle. Each stage of sleep is equally important and has its own purpose. Most people will go through four stages of sleep – this involves nonREM (rapid eye movement) 1, 2, 3 and then REM. Going through each of these stages is called a ‘sleep cycle’. Each cycle will usually last around 90-120 minutes therefore we usually go through roughly four to five cycles. NREM: Stage 1: This is the period between wakefulness and sleep. The main purpose of this is stage is just to transition to stage two as it allows the body to start to relax. Breathing may start to soften and brain activity will begin to decrease. Stage 2: This is when light sleep begins. For most, this stage will 24

Stage 3: This is where the deepest sleep occurs – i.e. much harder to be woken up during this stage. This is when brain waves are the lowest (brain activity). The body is able to grow, repair, recharge and restore. The immune system is strengthened and memories are formed. REM: REM sleep, or Rapid Eye Movement, is defined by the eyes moving rapidly in random and various directions. During this stage, the most vivid dreams occur as this is when the brain is most active. Breathing, heart rate, oxygen consumption and brain activity are all increased during this time. Whilst many of us may have trouble falling asleep, many also have trouble staying asleep through the night and not able to follow through all stages of sleep. Below are small changes we can easily make in order to improve sleep duration and quality: Do’s: • Work with your body clock (or circadian rhythm). • Try going to bed and waking up around the same time each day to create routine • Having a bath before bed – increases body temp which will help you feel sleepy • Ensure you get adequate and regular exercise. Much better to work out in the morning or during the day than at night • Ensure your room is quiet and temperature is around 18 degrees • Try to wake up naturally if possible. Leaving the curtains slightly open means the sun can act as your alarm

• Before going to bed, write down your to do list for tomorrow or any concerns/ideas so you are not up thinking about them. Keep a note pad and pen by your bed • Relaxation exercises in bed – consciously try to relax each part of the body from toes to head whist also concentrating on the rhythm of your breathe • Try certain relaxation apps • Try aromatherapies and other relaxing oils /fragrances e.g. lavender • Go to the bathroom before bed to avoid being woken up • If you start to get frustrated about not being able to sleep, get up and do something relaxing for 20mins e.g. reading Don’t s: • Continuously look at the time when you can’t sleep, try to avoid clock watching • Eating late at night or at least large meals • Napping during the day • Stimulating activities before bed i.e. exercise, TV, phone • Using your bed for any other than sleep and sex When there is usually not enough hours in the day, along with the extra demands of a modern lifestyle, sleep is usually our last priority. However, it is important to remember getting enough sleep is vital to mental, physical and overall health. Making sleep hygiene a priority will ensure increased brain function, cognition, productivity and concentration. During periods of sleep deprivation, stress levels will also increase due to increased cortisol production. This in turn leads to increased risk of chronic disease and inflammation, putting more physical stress on the body. These tips, in conjunction with diet and exercise will have a major impact on overall health.

What is your number one selling Kadac product and why do you think it does so well? Our best-selling product at the moment without a doubt is the Saba Organic hand sanitiser. This was due to the unprecedented demand due to Covid-19. Kadac was able to supply us with high quality hand sanitiser. This enabled us to increase our customer base significantly on the back of this product alone. Being one of the first Certified Organic hand sanitisers on the market, the product sells itself!

What types of products excite you and what do you love offering customers? I absolutely love when there is a story behind a product. More recently however, customers want to listen and learn more about these stories and product history, especially if they are unfamiliar with the brand. Our business is very different from traditional retail in that we don’t need to physically bring in the product, but rather bring it to the attention of our customers. This is very cost effective for us as a business as our main focus is on getting the brand or product name out there. Our preference is to always source the highest quality products available in the market. This enables us to build trust and loyalty and ensure return & repeat customers.

What are the biggest trends and biggest growth you have seen in the past year?

Early on there were significant increases in sales of eco-friendly products. Customers are taking more active roles in reducing their own consumption of plastics. It is an easy way to communicate with our customers so that they do not miss any deals, new products and other communications. The other loyalty program is also easy and very cost-effective. We find the loyalty program is the best reward for the effort, whilst customers are still being financially rewarded.

What kind of promotions do you and your consumers want to see more of from Kadac?

Why can’t I stop worrying? Even though this reaction may have seemed a little dramatic, stress is irrational a lot of the time. This is because there are actually three minds involved which rarely cooperate with one another. As a result, this incongruence between the minds manifests into physical, mental and behavioural problems.

The THREE Minds CONSCIOUS MIND: THE TIP OF THE ICEBERG

The conscious mind is where rationalisation comes from, it is our thinking mind. It is the part of the mind that helps us find reason and logic, especially during high pressure or stressful situations. However, unfortunately the conscious mind only occupies about 10% of the mind... which explains why it lacks control over how we behave or feel, making it difficult to listen to that voice of reasoning.

SUBCONSCIOUS MIND: SUBMERGED UNDERWATER

The subconscious, on the other hand, makes up 50-60% of the mind. The subconscious is like a storage room that keeps all your memories based on your experiences, what you’ve learnt and like an overtired child that’s had too much red cordial...it is EMOTIONAL, therefore lacking rationalisation. During certain stressful situations or events, we may feel we are incapable of being good enough. It may trigger an unpleasant memory or situation you have previously been in.

UNCONSCIOUS MIND: WHAT LIES DEEP BELOW Lastly, the remaining 30-40% consists of the unconscious mind, which has an important role in our survival and causes a physiological change in our bodies when it is activated by a perceived threat.

In many cases, these type of situations are enough to trigger the fight or flight responsesweaty hands, the knot in your stomach, increased heart rate and muscle tension.

A Scientifically-Validated Way to Reduce Stress

Sometimes these overwhelming feelings and body tension are so strong, you think they will never pass. 1 cup raw whole-nut almond flour

Preheat waffle iron.

2 cups grated mozzarella cheese

Combine all the chaffle ingredients in a bowl and mix well.

Mash the banana in a large bowl. Pour in the wet ingredients and mix well. Add all the dry ingredients into the same bowl and mix to a smooth batter. Cook ¼ cup batter on a non-stick pan over a medium heat. Serve with fresh seasonal fruit and yogurt.

SCRAMBLED TOFU SERVES 2

250g firm tofu 1-2 tbsp olive oil ½ brown onion, diced ½ red capsicum, chopped ½ cup mushrooms, sliced 100g kale 1 bunch spring onions ½ tsp each salt, garlic powder, paprika ¼ tsp each chilli powder, turmeric

Drain and press tofu to remove any excess liquid. In a small bowl, mix all of the spices, add enough water to make a pourable sauce. In a large pan over a medium heat, add the oil and sauté the onion, mushrooms and capsicum for around 5 minutes. Add the kale and cook for a further 2 minutes. Crumble the tofu into bite-sized pieces. Use a spatula to move all the veggies in the pan to the side and add the tofu. Sauté for 2 minutes then pour the sauce mix over the tofu. Stir immediately, evenly distributing the sauce. Cook for around 5 minutes until the tofu is slightly browned. Sprinkle over sliced spring onion and serve immediately on toast with your favourite big brekkie sides.

KFC TVP KETO FRIED CHUNKS SERVES 4-6

You’ve heard of Kentucky Fried Chicken

and its plant based cousin Southern Fried

Cauliflower, well we’d like to introduce you to the best of both worlds. Lotus organic TVP is used to make low carb and plant-based,

protein rich mini nuggets. Serve with a blue cheese dip or toss in Tabasco for a spicy buffalo style nugget.

100g course TVP

¼ cup savoury yeast flakes ¼ tsp salt

1 tsp mixed herbs ½ cup lupin flour

1 cup coconut cream

1 tsp apple cider vinegar

1 cup super-fine almond flour

Pour the course TVP into a bowl (it must be course TVP not regular as it’s chunkier like mini nuggets). Add the yeast flakes, salt and mixed herbs. Pour over 1 ½ to 2 cups of boiling water to just cover. Leave for ten minutes to soak up flavour and moisture. Set up a crumbing station with the lupin flour in a bowl, the coconut cream in a bowl and the almond flour in a bowl. Dip in the lupin, then coconut cream then coat in almond flour.

Shallow fry in olive oil, turning until crunchy. Alternatively, lay them on a non-stick tray drizzle with oil and bake at 220°C for 10 minutes or until golden and crispy.

PESTO BEAN SALAD SERVES 4

1 can Cannellini Beans

Drain the beans and place into a medium bowl.

1 jar Pesto Rosso

Pour in the pesto and mayonnaise and roughly mix until the beans are completely coated.

3-4 tbsp Egg-Free Mayonnaise Spinach or rocket leaves

Fold through the spinach or rocket, serve immediately. This pesto salad is perfect as a side with a BBQ. You can even toss with pasta for a hearty hot meal or cold pasta salad.

MUSTARD CHICKEN SERVES 4

4 free-range skinless chicken breasts 4 tbsp olive oil 3 tablespoons organic honey 2 tbsp wholegrain mustard 1 tbsp Dijon mustard 4 cloves garlic, crushed 1 tbsp lemon juice 1 tsp paprika ½ tsp chili flakes 2 sprigs fresh rosemary

Preheat oven to 200°C. Grease a baking dish. In a small bowl, combine the oil, honey, mustard, garlic and lemon juice and mix well. Place the chicken in the baking dish and generously rub in the salt, pepper, paprika and chili. Evenly divide 3/4 of the honey mustard mixture and pour over each chicken breast. Place the rosemary between each piece. Cover with foil and bake for 15 minutes. After 15 minutes, remove the foil and spoon over the remaining honey mustard mixture. Bake uncovered for a further 10 minutes or until cooked through. Remove from the oven and cover with foil. Let the chicken rest for 5 minutes to absorbs the juices. Enjoy with your favourite roast veggies.

EASY TVP BOLOGNESE SERVES 4

1 cup TVP (Textured Vegetable Protein) 600g tomato passata with basil

Place the TVP into a bowl, pour over 250ml of boiling water then set aside.

¼ cup savoury yeast flakes 1 brown onion

Bring a large pot of water with a pinch of salt to the boil and cook pasta according to packet instructions.

1 tbsp each thyme, garlic, basil, oregano 250g spaghetti

In a large pan over a medium heat, sauté the onion. Add the passata, herbs and hydrated TVP to the pan and heat through. Once the pasta is cooked, drain into a colander or sieve. Serve up the pasta on a plate and top with the TVP mix. Sprinkle over the savoury yeast flakes, a pitch of salt and basil leaves.

200g TVP (Textured Vegetable Protein) 1 brown onion, diced 2 cloves garlic, crushed 1 can chopped tomatoes 1 can black beans 1 can kidney beans

¼ cup savoury yeast flakes 1 tsp Mexican spice mix Salt, to taste

Place the TVP into a bowl, pour over 250ml of boiling water then set aside. In large pan over a medium heat, sauté the onion and garlic until translucent. Add the TVP, tomato, beans, yeast flakes, Mexican spice mix and salt. Heat for 5 minutes, bringing to a slight simmer. Taste and adjust the seasoning to your preference. If too thick, add water. Enjoy over rice, in burritos, in tacos, or on top of nachos and loaded fries.

CHICK-CHOC TORTE SERVES 6-8

1 can chickpeas ½ cup choc chips 200g vegan butter or coconut oil 1 cup superfine almond flour 1⁄3 cup rapadura sugar ¼ cup cacao powder 2 tsp baking powder

Preheat the oven to 180°C and grease and line a 23cm spring form tin with baking paper. Drain the chickpeas but keep the liquid, known as Aquafaba. Melt the butter and choc drops together and blend with the drained chickpeas until smooth and creamy. Add the dry ingredients and blend to combine. Meanwhile in a clean bowl wiped with vinegar, using an electric beater, whip the chickpea liquid until thick and stiff (similar to egg whites). Fold the beaten aquafaba into the chocolate mix and pour into the tin. Bake for 30-45 minutes or until the centre is just cooked. Cool completely before removing from the tin. Set in the fridge.

FAIR TRADE Fair trade is an institutional arrangement designed to help producers in developing countries achieve better trading conditions. It includes stable prices, decent working conditions and the empowerment of farmers and workers around the world. Members of the fair trade movement advocate the payment of higher prices to exporters, as well as improved social and environmental standards.

FAT FREE Food labelled as fat-free does not mean that it literally has no animal or vegetable fats. This claim refers to products with less than 0.5g of fat per serving.

GLUTEN AND WHEAT FREE Gluten is a protein found in many grains, including wheat, while wheat is simply a grain that contains gluten. A gluten-free diet will be free from all grains, wheat and processed foods that contain gluten, but a wheat-free diet will not necessarily be free of gluten.

GLUTEN FREE This refers to products that strictly exclude gluten, which is a mixture of proteins found in wheat as well as barley, rye, and oats among other products. Gluten may cause both gastrointestinal and systemic symptoms for those with gluten-related disorders, including coeliac disease.

WHEAT FREE A food labelled as "wheat-free" means the products do not contain wheat – note that gluten may still be present.

NON GMO GMOs (genetically modified organisms) are organisms created in a laboratory using genetic modification/engineering techniques. It has been cited that there may be health and environmental risks with foods containing GMOs. Non GMO means these products do not contain genetically modified organisms.

LOW GI Meaning Glycaemic Index (GI). This is a relative ranking of carbohydrate in foods according to how they affect blood glucose levels. Carbohydrates with a low GI value (55 or less) are more slowly digested, absorbed and metabolised and cause a lower and slower rise in blood glucose and, therefore usually, insulin levels.

LOW IN SATURATED FATS This is a type of fat containing a high proportion of fatty acid molecules without double bonds, considered to be less healthy in the diet than unsaturated fat. Too much unhealthy saturated and trans fat increases your risk of heart disease.

LOW IN SUGAR Sugars are a class of carbohydrate and energy source for the body. It occurs naturally in fruits, vegetables and dairy and is widely used in food products. Low in sugar is no more than 5g/100g. There are at least 61 different names for sugar listed on food labels. These include common names, such as sucrose and highfructose corn syrup, as well as barley malt, dextrose, maltose and rice syrup, among others.

. These products do not contain any dairy in any form, including but not limited to popular items like cow’s milk, butter, ice cream, cheese, yogurt and cream.

NO ADDED SUGAR Products labelled "no added sugar" have not had additional sugar added however, there may be naturally occurring sugar in the food. No added sugar products can also contain artificial sweeteners.

LOW IN SALT Salt is essential for life, however, Australians are consuming far too much. The terms salt and sodium are often used interchangeably but they refer to different things. Salt is made up of sodium and chloride and it’s the sodium in salt that can be bad for your health. Low salt foods contain less than 140mg of sodium per 100g while reduced salt foods generally contain 25 percent less salt than their regular alternatives.

NO ADDED SALT Salt is found in almost every food we eat, but the levels within each will vary. Products labelled "no added salt" have not had additional salt or sodium added however, there may be naturally occurring sodium in the food.

NUT FREE Refers to products that do not contain nuts. Nut allergies are usually defined as peanut allergy and tree nut allergy. Tree nuts include almonds, Brazil nuts, cashews, chestnuts, hazelnuts, macadamia nuts, pecans, pistachio nuts and walnuts, however tree nuts are a different plant group to peanuts so having a peanut allergy does not mean an allergy to all nut varieties.

VEGAN Products with this claim indicate that no part of the product has been derived from animal or animal by-products.

VEGETARIAN Products do not include meat, poultry, game, fish, shellfish or byproducts of animal butchery.

PETROCHEMICAL FREE Petrochemical free means that the products are free of a long list of chemicals, including the 'Dirty Dozen' cosmetic chemicals to avoid. These chemicals are all derived from petroleum and are known to be harmful.

PARABEN FREE Parabens refer to a group of chemicals, mostly synthetic, that are commonly found in health, beauty and personal care products. They act as a form of preservative, preventing the growth of potentially harmful microbes such as bacteria or fungus, thereby increasing shelf-life.
