Savour the Love

What better way to celebrate Mother’s Day than with a delicious, home-cooked meal shared with the women and loved ones who bring so much joy into our lives? This Roast Vegetable & Ricotta Tart is the perfect dish to make the day extra special. Just add some side dishes like a fresh salad or warming soup, set the table with your prettiest decor and blooms, then pop some bubbles, and you ’ re all set for a beautiful celebration!

INGREDIENTS:

1 sheet of puff pastry

1 medium sweet potato, peeled and diced

1 red onion, sliced

1 zucchini, sliced

1 red bell pepper, sliced

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

1 tbsp olive oil

1 tsp dried thyme

Salt and pepper, to taste

1 tbsp honey (for drizzling)

Fresh herbs (like basil or parsley) for garnish

METHOD:

Preheat your oven to 200°C (400°F).

1. Toss the diced sweet potato, onion, zucchini, and bell pepper in olive oil, thyme, salt, and pepper. Spread them out on a baking tray and roast for about 25-30 minutes, or until tender and slightly caramelised.

2. While the vegetables are roasting, unroll the puff pastry on a baking sheet and lightly score a border around the edge with a knife.

3. Spread a thin layer of ricotta cheese over the pastry, leaving the border free. Sprinkle the grated Parmesan over the ricotta.

4. Once the vegetables are done, remove them from the oven and arrange them on top of the ricotta cheese.

5. Bake the tart for another 20-25 minutes, or until the pastry is golden and crispy.

6. Drizzle the tart with a little honey for a touc sh of sweetness, and garnish with fresh herbs.

7. Serve warm with a glass of your favourite celebratory drink!

TELL US A LITTLE ABOUT YOUR RECENT 80TH BIRTHDAY CELEBRATION — HOW DID YOU CELEBRATE, AND WHAT MADE THE DAY SO SPECIAL?

My 80th birthday was on the 10th of April. My son and daughter-inlaw flew up from Sydney, and we checked into the QT Hotel on the Gold Coast a favourite along with my niece, great-niece, and her partner for three days.

On Saturday night, we celebrated with champagne before leaving for the Langham, to a private room for a beautiful set menu, and finished off with a beautiful cake made by my niece at her Home Alstonville shop.

YOU LOOKED ABSOLUTELY RADIANT IN YOUR LULASOUL SABRE TOP AND PANT FROM KABANA. WHAT DREW YOU TO THAT OUTFIT FOR YOUR BIRTHDAY, AND HOW DID IT MAKE YOU FEEL ON THE DAY?

Having returned to Australia some seven years ago after selling our home in Thailand we retired there for some 17 years I needed a new wardrobe. My niece has always had beautiful buys from Kabana, and I followed, knowing they had several labels, and were always colourful and different.

Knowing my birthday was coming up, I received an email bingo! with your latest, and there it was: the Sabre pants and top, which had the wow factor I love. I immediately ordered them both, and when I received them as usual, promptly it was such a beautiful material.

It’s a shame living alone when you first try it on, with nobody to comment (my husband is deceased, sadly). But, I pressed it and tried it on, deciding on boots, jewellery, and a leather clutch, and it was absolutely fab! I loved the look, and so did so many others.

HOW WOULD YOU DESCRIBE YOUR PERSONAL STYLE THESE DAYS? HAS IT EVOLVED OVER THE YEARS?

I love clothes and colourful clothes, and I like to follow through with suitable jewellery, shoes or boots, etc., and a clutch or handbags.

WHAT DO YOU LOVE MOST ABOUT WEARING KABANA?

Kabana styles suit young and old, big or small beautiful fabric, and always different with a wow factor.

I was amazed on a recent cruise ship holiday I took, wearing my Kabana pieces every day, how many compliments I received in lifts, walking into the restaurant, hallways. I felt proud.

WHAT’S ONE PIECE OF STYLE ADVICE YOU’D OFFER TO WOMEN OF ANY AGE? HOW DO YOU EMBRACE FEELING CONFIDENT AND FABULOUS?

If you have a favourite label, and know their size fits you well and they produce continual new ranges, stick to it and this is certainly what Kabana does so well.

I also think making a complete picture is important from outfit, jewellery, makeup, nails (same colour for 15 years and people love it winter or summer), shoes or boots, and clutch or handbags. Yes, I am a perfectionist.

AND FINALLY… ANY WORDS OF ADVICE FOR WOMEN WANTING TO EMBRACE STYLE AND CONFIDENCE AT EVERY AGE?

Clothes maketh the woman. You’re never too old to wear Kabana. And, keep at it as they keep you looking young at heart.
