EDITOR’S NOTE

Sheridan Road welcomes 2023 with our Health & Wellness issue focusing on nutrition, fitness, and the North Shore’s top doctors. May these resources help you live well in the new year.

Gracing our first cover of the year is Glencoe’s Emily Groden, founder of Evergreen frozen waffles. This former Kirkland & Ellis lawyer is remaking breakfast one nutritious forkful at a time.

Celebrating another proponent of the fast, delicious, and nutritious meal, our second feature spotlights “Momma Chef” Karen Nochimowski, an author, blogger, and soup kitchen operator. Karen’s new cookbook 6-minute Dinners (and More!): 100 Super Simple Dishes with 6 Minutes of Prep and 6 Ingredients or Less is your go-to for quick and healthy winter meals.

Our third feature introduces Prescott Ellison, a Grammy Award-winning musician and the creator of SuperFood Friends. These colorful characters fight childhood obesity by educating kids about the benefits of nutrition and exercise.

Moving to sport courts, our fourth feature celebrates the multi-talented Janaé Meyer and her upcoming position as CEO of MetroSquash, a nonprofit serving youth by combining academic support, competitive squash, and enrichment opportunities. Janaé and I worked together with I Have a Dream–North Chicago where she made a dramatic impression on students and volunteers alike. When we reconnected at a Dreamer reunion this fall, I knew our readers would be equally impressed by her vision and commitment.

Swapping squash racquets for bike pedals, we meet John Nichols and Robbie Ventura. This duo is taking the biking craze to new heights with their virtual endurance training company,

Velocity. The start-up’s technology allows you to train with the sport’s best right from your own living room.

We round out the features with a compilation of the North Shore’s premier doctors and celebrate with socials galore. Our Living & Giving pages are full of party-going community members joyfully raising money and awareness for great causes.

Our Health & Wellness issue closes with Parting Words from Lake Bluff’s Coach Q, whose passion for personal fitness is as infectious as his smile.

Finally, as we enter Black History month I wanted to note my excitement about the amount of diversity that emerged in this issue.

Wishing you all a wonderful and healthy 2023.

WILD RICE RETREAT

Looking for paradise in nature? The WILD RICE RETREAT is your destination. The retreat’s founder, Heidi Zimmer, sought to create a nature-focused Wisconsin respite for travelers, creative instructors, and anyone seeking a peaceful escape. She resurrected the name of the former James Beard-nominated Wild Rice Restaurant, paying homage to Mary Rice, its memorable owner and the “Queen of Bayfield,” and developed a special year-round destination with wonderful food, an appreciation for natural surroundings, and a thoughtful role in the local Bayfield community. The retreat brings a new level of hospitality to the Midwest with its first-of-its-kind arts and wellness resort. The $10 million property features modern Scandinavian design and includes unique accommodations (Treehauses, RicePods, and Nests), studio spaces, wellness facilities, outdoor trails, and spa amenities. Guests can experiment with forest bathing, unwind in The Sanctuary’s Sauna Haus and Rain Room, explore scenic trails, savor peaceful meditation and yoga, and enjoy nourishing meals paired with artisanal cider and small-production natural wines. Condé Nast Traveler recently highlighted the all-seasons resort in their “Best Places To Go in 2023.” We are wild about this retreat. For more information, visit wildriceretreat.com.

CHILD SUPPORT

Strategic Divorce attorney Michone J. Riewer reviews the Illinois statutory equation governing child support.

Child support is an obligation of both parents to support their child until the child is 18 years old or has completed high school—whichever comes second. Typically, one parent will pay the other a set amount of money each month to help with living expenses for the child. This support cannot be waived by the parent receiving the money as the money isn’t intended to be used for themselves, but for their child’s well-being.

Discussions around child support begin once the custody agreement has been reached. The visitation schedule is a large driving factor in the amount of money one spouse will pay so it must be determined first. Once a custody agreement is made, the parties then move on to a martial settlement agreement. This agreement determines how the assets will be divided, whether and how much spousal support (also known as maintenance) will be paid each month, and the amount of child support the parties will be responsible for.

Many people believe the dollar amount of child support is negotiable, however, this is not the case. Child support is not calculated based on wrongdoing or perceived faults during the marriage or divorce—it’s not determined by the judge’s evaluation of which party is the best parent. Child support is calculated using a complicated math equation that is created by the legislature. This complicated equation takes approximately 30 variables into account. While some are obvious, such as the number of overnights and each parent’s income, others, like who pays health insurance, are not.

The first step in determining child support is knowing who will be receiving it. As mentioned above, the visitation schedule is the key factor in this determination. If one parent has over 60 percent of the overnights, the other parent will owe them child support— even if the parent with more visitation has a higher income.

Parents who have less than 40 percent of the overnight visits will pay significantly more child support, even if the difference is only a few days. For example, Parent A and Parent B split visitation evenly. Parent A has a higher income, and the equation determines that they owe $500 a month for each child. If Parent A reduces visitation to 41 percent a month, the child support will likely remain the same. However, if their visitation drops below 40 percent, the amount they are paying will double.

Who has greater visitation is also significant as this parent will likely get the tax benefit from each child. Tax benefits might seem like an insignificant consideration, but they can have a large effect on the parent’s net income—and net income, not gross income, is what child support is based on. Therefore, as state and government taxes reduce each parent’s gross income, the tax filing status of each parent is considered in the child support equation.

Spousal support payments can also affect the amount of child support. Although they are calculated separately, maintenance is considered income for the parent receiving it and reduces the paying parent’s income by the same amount, which will reduce the income gap between each parent and affect the child support calculation.

For example, if one parent makes a net income of $3,000 a month, but their spousal support is $4,000 a month, their income would be $7,000 a month. If their spouse makes $13,000 a month and pays $4,000 in maintenance and spousal support, their income would be $9,000 a month. The gap between their monthly income is now $2,000 rather than $10,000 for purposes of calculating child support.

In situations where the higher-earning parent has over 60 percent visitation, child support payments may offset the amount of spousal support they owe their spouse. Consider this example: Parent A has 65 percent of the parenting time, meaning Parent B has to pay child support, which has been determined at $1,000 each month. However, Parent B makes significantly less money than Parent A. Thus, Parent A owes $3,000 in spousal support each month. Rather than exchanging checks, the child support is deducted from the spousal support, meaning Parent A now pays $2,000 in spousal support, rather than the full $3,000 per month.

While the concept of child support is straightforward, the statutory equation is complex. Therefore, uninformed decision-making can easily and negatively impact your outcome. Contacting a qualified attorney will increase the chances of securing the best results for your children and yourself.

CONTEMPORARY ARTIST LINCOLN SCHATZ SEEKS TO FIND A PURITY AND BALANCE BETWEEN NATURE AND NURTURE IN HIS GROWING BODY OF WORK

ARTISTIC EVOLUTIONS

Contemporary artist Lincoln Schatz’s body of work evolves and flows with the times.

Nearly every day for the last seven years contemporary artist Lincoln Schatz has taken a photograph of Lake Michigan. The time and locations of the photos, captured while riding his bicycle to his studio, vary from dusk to dawn. “I think it’s about looking at something over and over again, perhaps obsessively. It is a trait that all my projects have in common,” says Schatz. What seems to set Schatz apart in his career, however, is less about the constant and more about the detours. His work has ranged from the movement of the water’s waves in his current Lake Series to documenting and digitizing political leaders through interviews and images in The Network, both the title of a book he authored and an exhibition now included in the permanent collection of the Smithsonian’s National Portrait Gallery (NPG).

“I’m a born and bred Chicagoan,” proclaims Schatz. “There was once a sense of feeling perhaps I had missed out on being an artist trying to make it in New York or Los Angeles, but the Midwest is truly home.” Growing up, his father was a part-owner of the popular Streeterville nightclub Chez Paree. It was a glamorous hotspot for dinner, drinks, and most of all, big-name headliners such as Lena Horne, Jimmy Durante, and Sammy Davis Jr. “Our house was a revolving door of these larger-than-life personalities whom my dad loved to invite over,” recalls Schatz. His mother was creative in her own right, working in painting, drawing, and calligraphy. On Saturdays, Schatz and his siblings went to art class in Old Town. “A friend of the family who was also an artist taught us about all different types of media and aesthetics. I have several of his pieces in my personal collection today that are reminders of that initial influence on me.” Schatz went on to attend Bennington College in Vermont, where he honed skills in sculpture,

primarily metal, and photography. After graduation, he earned a fellowship with the Museum of Fine Arts, Houston.

“I remember the artist Martin Puryear, saying to me ‘you need to find a way to live making art.’” Schatz took the advice and began to channel his passions into a profession. In exchange for an old coal room as studio space, he made a deal with his dad to take on janitorial duties at the Chez Paree building. Schatz immersed himself in the local sculpture community, receiving large-scale commissions, but as he began to experiment with software to build prototypes to scale, he felt pulled back to the camera. “In the virtual realm, I felt the static object didn’t captivate me the same way. But when I added real-world physics, set my conditions and parameters, and focused on capturing images from the environment, the inevitable moment of lack of control from such subjects created the space where my art emerged.”

ART & ARTIST

Schatz explored video and experimented with computational digital work in the early 2000s, just as the medium was becoming more prevalent in the market. When he heard about Manhattan’s bitforms Gallery and their representation of artists engaged in new technologies, he made a cold call and shortly after hopped on a plane for an in-person meeting that resulted in a decade of collaboration. “I traveled to art fairs around the world with them, showing my work, meeting collectors, curators, other dealers, and had a lot of fun being involved in that scene.”

Opportunities and acquisitions with corporations and museums developed for Schatz throughout this time period. In 2008, the Hearst Corporation, in honor of Esquire magazine’s 75th anniversary, commissioned Schatz to create portraits of the 75 most influential people of the 21st century. Schatz designed what he dubbed Cube Portraits, a 10’ x 10’ translucent box containing 24 cameras and computers that created “generative portraits”—an ever-changing series of video and still images expressing personality and movement. The subjects ranged from George Clooney and LeBron James to Samantha Powers and Jeff Bezos. “When we needed someone to dance with Clooney, my mother filled in!” Schatz fondly recalls.

Esquire’s Portrait of the 21st Century was acquired by the NPG for its permanent collection in 2010. During that period, while in Washington, D.C. for an appointment with Smithsonian curatorial staff, Schatz was struck with another idea. “I arrived early, wan-

dered through some of the museums on the National Mall, and was incredibly moved by a show of Richard Avedon’s seminal work The Family on view at The Corcoran Gallery. I thought, wouldn’t it be interesting to document historical figures with generative portraiture?” When Schatz met with the Smithsonian staff later that same day, he shared his thoughts to invite political, journalistic, and social thought leaders as participants in this kind of endeavor. This was the genesis of The Network, video portraits of the dynamic people who help shape Americans’ everyday lives. Schatz interviewed powerful players such as Nancy Pelosi, Karl Rove, Cokie Roberts, Vernon Jordan, and even art collector Mera Rubell.

The scope of Schatz’s projects extended far beyond the Beltway. A series developed for the United States State Department’s Art in Embassies program in partnership with the Department of Defense honors members of the foreign service and active military. This video piece is currently in the collection of the U.S. Embassy in Kabul. Another video project Cure Violence: Portrait of an Epidemic, created in partnership with the University of Illinois, catalogs messages of more than fifty Chicagoans committed to ending gun violence.

Schatz seems to have always had a finger on the pulse of popular culture, identifying ground-breaking ways to use his art to better display and understand the complexity of American society. His work in the early 2000s was a harbinger for the future montage of personal face-to-face social media interactions currently created on

Instagram and TikTok. More recently, Schatz has found himself turning to the outdoors. While water is easily accessible from his neighborhood landscape, redwood forests, aspen-covered mountains, the Great Plains, and even a Vermont dairy farm, also find prominence through Schatz’s lens. “My daughter will talk about the notion of ‘imposter syndrome,’ and I kind of think about that as I’m out there with my tripod. The camera has one set of demands that I prepare for, and then suddenly the trees, the sky, or the lake can reveal a completely different perspective right before my eyes. It can be a very humbling experience.”

He still occupies the same studio of his early days, reads voraciously, listens to lots of podcasts, and tests the science and engineering of new methods and mediums. “I have one assistant in the studio and right now we are exploring ways to alter large-scale photographs of trees into three-dimensional wall reliefs,” shares Schatz. “It’s really about changing our perspective. By creating the artwork as three-dimensional pieces we experience these artist-made fictional tree canopies in entirely new ways. When the work is at this larger scale, it becomes architectural. The impact is completely different from a framed artwork on paper.”

Schatz credits much of his success to family. His wife, Clare Pinkert, a lawyer, and their three children regularly practice patience when family trips are occasionally interrupted by frequent pauses for the perfect shot. Schatz’s late father, a veteran, would have been immensely proud of his son’s government-related collaborations

and was himself adept at shifting between the worlds of diplomacy and fame. Obviously, the apple doesn’t fall far from the tree. Schatz’s abilities as an artist to move from the studio into plein air and to comfortably interact with celebrities, national leaders, tech titans, and publishers are a rare combination and at the core of what good art intends to do: entertain, educate, and evolve.

FASHIONABLY FIT

Jenny Rosenstein has always expressed her creativity through fashion and beauty. Rather than checking the news every morning, the former boutique owner turns to her favorite sites to discover new trends in fitness, health, wellness, and beauty. After having three children, she started suffering from a debilitating chronic illness. She was so exhausted that the thought of getting dressed seemed oppressive—for a fashionista through and through, this was a red flag that something was wrong. The reality of “take care of yourself before you can take care of others” settled in. After five years of functional medicine, dietary, and lifestyle changes, Rosenstein feels healed. During her journey, she learned that what we put on our skin is just as important as what we put in our bodies. She is currently working as a Consultant with Beautycounter, a clean makeup and skincare line that advocates for a higher standard in the beauty industry. Through Beautycounter, Rosenstein is teaching others how wellness intersects with beauty and fashion.

ON HER NIGHTSTAND

“Atomic Habits: An Easy & Proven Way to Build Good Habits & Break Bad Ones by James Clear. This book resonated with me and it is how I like to live my life. Small things that I do every day have evolved into huge changes—I have lost 15 pounds over the last two years. This book taught me how to live with patience, enjoy moments, and create lasting habits that amount to great things.”

IN HER EARBUDS

“Vance Joy. My husband and I love going to concerts and are always looking to see who is coming to town so we have something to look forward to. Vance is from Australia, and he tells stories about his songs before he sings them. I love listening to the album after the show and understanding the backstory of his lyrics. I also love listening to The Doctor’s Farmacy with Dr. Mark Hyman. Using food as medicine is a practice that I have learned to live by. Often, what is appearing on the outside of our bodies is actually coming from the inside and what we put into our mouths. My family calls me ‘Shama Mama’ because I constantly scrutinize the food we eat as a source of our ailments.”

ON HER MOBILE

“I use my Oura App to track my sleep. I have learned so much about my body through my sleep cycles. I now know the optimal times for eating, resting, and working out. Everybody is different, which is why it’s so helpful to analyze your data and change your habits based on personal information. Knowledge is power.”

DECADES OF DRESS

The Collection of Fashion Designer Arthur McGee comes to the auction block at Hindman.

In the 1950s, McGee is believed to have been the first African American to run an apparel showroom’s design studio on Seventh Avenue, the garment district of Manhattan. He initially worked in the atelier of American couturier Charles James. That important connection led Hindman’s Couture & Luxury Accessories Director and Senior Specialist Timothy Long to feel an immediate bond with McGee. “When I was at the Chicago History Museum, I curated the exhibition Charles James: Genius Deconstructed, in 2011, so to know McGee’s link to James made the opportunity for research and scholarship here even more exciting,” shares Long. “For those of us in the fashion and costume history field, McGee is one of those names that is widely known yet not discussed or documented nearly enough—until now.”

Even while he was employed at other firms, McGee always maintained clothing creations that he sold independently. In the manner of high-end salons like that of his former boss Charles James, McGee soon courted a roster of celebrities and entertainers such as Sybil Burton and Cicely Tyson. In the 1960s, McGee opened his first store in New York City’s St. Mark’s Place, and a second followed in Miami, Florida. When he was honored by The Costume Institute at the Metropolitan Museum of Art, displaying many of his sophisticated silhouettes, they aptly referred to McGee as the “Dean of African-American Fashion Designers.”

The Collection of Fashion Designer Arthur McGee, to be auctioned at Hindman on March 14, 2023, brings a selection of 45 ensembles and documents, direct from private hands to a public audience. Born in Detroit, Michigan in 1933, McGee learned the art of dressmaking from his mother. Those skills were passed down to her son, who at 18 years old won a design competition and scholarship to attend the Traphagen School of Fashion in New York City. He would also pursue studies at the Fashion Institute of Technology before starting his career and establishing a namesake label. Then and now, McGee was not only celebrated for his talents but recognized as a trailblazer in the industry. The net proceeds of the sale of this 45-piece collection will benefit a scholarship for emerging fashion designers from Arthur McGee Legacy, LLC.

McGee passed in 2019, and it has been two of his longtime clients turned close friends who took on the roles of overseeing his estate. They are Maxine Gordon, an author, archivist, jazz historian, and currently a Radcliffe Fellow at The Radcliffe Institute for Advanced Study at Harvard University, and Johnetta Shearer, a realtor at Beachfront Realty in Hallandale Beach, Florida, and a Certified Mastectomy Fitter with MARJ Medical in Boca Raton. Together, they have spent the last few years organizing sketches, photographs, and clothing into a testament of McGee’s legacy.

“At Hindman, we have had experience with archival materials,” notes Long, “having sold that of Geoffrey Beene, for example, giving us a knowledge and understanding of what can be worn and what pieces might fill voids for museums and other institutions or private collectors seeking to acquire.” The total of 15 lots comprise

multiple pieces within each grouping, including some separates, and are primarily divided by decades spanning from the 1960s-1980s. “It’s fascinating to consider the glimpse we can now see at McGee’s practice such as origami, just like the type kids play with, that he used for exploring folds and pleats as a type of pattern,” remarks Long. Below, an interview with Gordon and Shearer provides additional insight into their interactions with McGee, and his contributions, past, present, and future.

Can you talk about how you both initially came to know McGee?

MG: I first met McGee when he had a boutique in New York City. It was a very lively period in the East Village in the late ‘60s. He began to make clothes for me and we became friends for the rest of his life.

JS: I met McGee in Miami, Florida in 1974 when I was the guest of my late friend, singer Phyllis Hyman, who was performing at a fashion show. Arthur McGee’s clothing was featured at the show. I saw his assistant wearing a dress that I learned later was called “The Shower Curtain Dress” and just by seeing that dress, I had to know more about him and the clothes. I became a client that year, 1974.

What was it like working with him? Do each of you have a favorite memory to share?

MG: McGee wanted his clients to wear beautiful garments made from the best fabrics and he wanted them to be comfortable and affordable. When there was a special occasion, we shopped for fabric together and all the people in the fabric showrooms knew him and loved spending time with him. He never seemed to be in a hurry. He made all my maternity clothes in 1978, and before that, in 1975, had begun to make garments for my late husband Dexter Gordon. In 1987, Arthur made all the outfits for Dexter and me for the Oscar ceremony (Dexter was nominated as lead actor in the film Round Midnight) and for the events for a week in Hollywood. McGee also attended the Oscars with us!

JS: It was wonderful to work with McGee—a pleasure to be in his company. He was funny, brutally honest, and just simply cool. His knowledge of fashion that he imparted not only to me but to all his clients is priceless. He really and truly cared about how his clients looked in his clothes. He taught us how to wear them, how to accessorize and how to care for them. We are still wearing pieces he made for us after all these years.

When did the idea to catalog McGee’s archives come to fruition?

MG: Before McGee’s death, he appointed

Johnetta and me as his Executors and talked about how he hoped his work would not be forgotten. We began to talk about collecting his designs and establishing a scholarship in his name for emerging young designers. We formed the Arthur McGee Legacy LLC and will continue searching for more of his classic designs.

JS: I had previously participated in Hindman auctions and purchased items. I mentioned this to Maxine, we talked about it, decided to pursue it and do the necessary work. I contacted Hindman and met with Timothy Long, and the rest is history. We are delighted to be working with Hindman on the auction and are making plans to use profits from the sale to establish a scholarship fund in Arthur McGee’s name that will support emerging young designers.

What is your great hope in seeing McGee’s name and work carry on?

MG: We would like to remind the public that McGee was the first Black designer on Seventh Avenue and was an inspiration to many Black designers who followed after him. He traveled widely and was inspired by clothing he saw in Asia and Africa and his legacy is surely an international inspiration to many.

JS: My desire with this auction is to help educate people about McGee and have them learn what an extraordinarily talented African American designer he was and to keep his legacy alive in museums around the world for the world to see and know his work. His clothes are practical, affordable, timeless designs in fabrics that were classic as well. I feel that he deserves the recognition this auction can give him and that museums will acknowledge his importance as well.

A favorite piece in the sale?

MG: I would say for me it is Lot 5. It has pieces made for me from African fabric he kept rolled up in the studio. He kept adding pieces over a long period and was very pleased with the outfits and the way they could easily be folded to pack for travel.

JS: Mine is the rhinestone black cashmere coat, Lot 9. This coat is a piece that McGee did for the Coty Awards. I always wanted to get that coat to Prince because he would have been the person to wear that coat, but I never got the opportunity. The rhinestones on it are set by hand which makes it even more special.

Bidding for the March 14 auction will begin at 10 a.m. and will be available via Hindman’s Digital Bid Room. Registration for the auction is available at hindmanauctions.com/auctions/1156-spring-fashion-accessories. For more information, visit hindmanauctions.com.

SWEET HEART OF A TART

Vegan Fresh Fruit and Custard Tart (Gluten, Dairy, and Egg Free).

WORDS AND PHOTOGRAPHY BY MONICA KASS ROGERS

SHERIDAN ROAD 52 RECIPE

Whenever I hear the words, “Valentine’s Day,” this rhyme always comes to mind:

The Queen of Hearts, She made some tarts, All on a summer’s day; The Knave of Hearts, He stole those tarts, And took them clean away.

These lines, written in the 1700s by an anonymous poet, were part of a poem inspired by a deck of playing cards with each suit represented by rather scandalous stanzas. From spades to diamonds to clubs, there’s drubbing, clubbing, seduction, and shenanigans, and a knave in each verse. Set to music in 1785, I can’t help but wonder if the song was popular at rowdier pubs of the era.

All that aside, this beautiful tart shares none of the poem’s wickedness. It is both worthy of a queen and healthy for your heart. Featuring a gluten and dairy-free crust, it’s filled with a delicate coconut-almond milk custard (dairy and egg free) and topped with fresh strawberries and raspberries. You can glaze the tart with a little melted jelly if you like, but it’s freshly sweet without it.

Serves 8

INGREDIENTS

For the crust:

• 2 cups almond flour

• 1 cup gluten-free flour

• 1 stick (1/2 cup) cold vegan butter (use solid sticks, not whipped), plus more to coat tart pan

• 2 tablespoons sugar

• Finely grated zest of one lemon

• 1/4 teaspoon salt

• 2 tablespoons ver y cold almond milk

For the custard:

• 1, 13.5 fl. oz. can coconut milk

• 2/3 cup almond milk

• 1/4 cup pure cane sugar

• 1/4 cup corn starch

• 1/2 teaspoon vanilla paste or 1/8 teaspoon seeds scraped from a vanilla bean (optional)

For fresh fruit topping:

• 1 cup fresh raspberries

• 1 pound container fresh strawberries, hulled and cut into thin slices to make heart shapes

METHOD

Make crust: Preheat oven to 350 degrees.

Generously coat the sides and bottom of a removable-bottom 11-inch tart pan with vegan butter. Set aside. In a wide, shallow bowl, stir dry crust ingredients together with a fork. Cut vegan butter in small pieces over the dry ingredients. Using a fork or fingertips, break butter into small pieces and work into the flour until mixture resembles wet sand. Add 2 tablespoons almond milk and work into the dough. Gather dough into a ball. Spread work surface with two overlapping pieces of plastic wrap to make a 13inch x 13-inch square. Flatten dough into a disc in the center of the wrap. Cover with two more overlapping pieces of plastic wrap to make a 13-inch x 13-inch square over the top. Roll dough out to a 12-inch circle. Remove and discard top sheets of plastic wrap. Lift and flip dough circle over into prepared tart pan. Press dough into pan, using the trim to patch any cracks. Prick bottom with tines of a fork. Cut parchment paper to fit bottom of tart; place into crust-lined tart pan. Fill with dry beans or pie weights. Bake for 15 minutes at 350. Remove parchment and beans; bake for 15 more minutes until crust is golden. Remove tart crust from oven. Cool on a rack.

Make custard:

Combine all ingredients in a heavy-bottomed saucepot, over medium heat. Break up the coconut solids. Whisk just until mixture begins to boil. Reduce heat to low and continue whisking until thickened. Remove from heat. Scoop custard into a wide bowl to cool to room temperature.

Assemble tart:

Once custard has cooled to room temperature, smooth custard into cooled tart crust. Push up on the removable tart pan bottom to carefully press tart out of tart pan; place on serving platter. Place tart in refrigerator for 30 minutes or a bit more until custard has set. Remove from refrigerator. Decoratively arrange raspberries and spiral fresh strawberry slices on top of the custard. Serve immediately.

BEST DAY EVER

Eleven’s Colorado properties shine as brightly as the Rocky Mountain stars.

FIRST CLASS

Ever wonder what the perfect outdoor vacation would feel like? One in which neither your skill level nor an unexpected turn in the weather could dampen the day’s greatness? Wonder no more. Adventure collective Eleven boasts a remarkable portfolio of intimate properties in remote corners of the world— each offering incredible lodging and delicious, seasonal food combined with private guided outdoor adventures for guests of all ages and skill levels. Eleven has perfected the art of curating finely tuned vacations tailored to each guest’s unique preferences at that moment in time.

After a short flight to Gunnison, Colorado, I was welcomed at Eleven Scarp Ridge Lodge in the charming town of Crested Butte, with a genuine warmth and excitement that contributes to making Eleven, well, an eleven (not a ten out of ten, but an eleven out of ten). Each property’s thoughtfully designed interiors are by No. 12 Interiors, and not a detail is missed as evidenced by each room’s “oxygen” button—should guests wish, they can select to pump oxygen into the room to offset the effects of altitude. Guests are greeted in the family room with an impressive brick fireplace radiating warmth next to dedicated guest lockers in which bulky

ski jackets, boots, and other items can be stored for the duration of your stay. Shiplap walls and wood beams throughout have updated this original Croatian Assembly Hall into an outdoor adventurer’s launch pad—also the perfect spot for multi-generational family trips due to the myriad of activities offered.

Waking the next morning to a chef-prepared breakfast of local eggs and vegetables, I was fueled for the five-mile hike ahead. Starting at 10,000 feet in elevation, we hiked the Scarp Ridge trail—gaining 2,500 feet in elevation to witness awe-inspiring views of the Colorado Rockies above the tree line. At the end of our hike, we were treated to lunch at their mountainside Movie Cabin, built in 1975 as the set for a film called The Adventures of the Wilderness Family. Beside a roaring fire, we enjoyed a lunch of the most delicious pork pozole I have ever tasted—to this day I’m trying to track down the recipe—paired with a fresh salad of julienned vegetables and a cilantro lime vinaigrette that sang with flavor.

In winter, this area becomes accessible only by snowcat— perfect for Eleven’s winter cat skiing experience. Looking over the side of the impressive mountains, I had trouble imagining the courage needed to ski down, but that is why many of the Scarp Ridge Lodge guests come to Eleven—the elite and private experience of cat skiing a terrain where you are the only one on the mountain carving fresh tracks. How exhilarating it must be to be picked up in front of Scarp Ridge Lodge by a giant, customized snowcat (outfitted with leather benches and a TV) and then driven up the mountain to begin a day of unforgettable winter adventure.

Eleven’s staff members readily imbue your trip with local knowledge, and our guide was no exception. Explaining that we were in town during peak foliage season, a slight detour was made to an overlook of a valley awash in astonishing yellow leaves from miles of aspen trees. Returning from a full day of outdoor beauty and adventure, and after enjoying a quick après in the rooftop hot tub, we toured the town of Crested Butte. Its charming, brightly colored Victorian-era buildings house independent shops ranging from apothecaries to art galleries. The thriving restaurant scene includes Public House, Eleven’s in-town restaurant. This

modern-day saloon features a spectacular menu, including a goat cheese and pickled blueberry salad, and a pan-roasted whole trout paired with a red wine farro risotto. The top floor of Public House has three loft suites for lodging as well as a basement music venue that hosts public and private concerts alike.

True to Eleven’s mission, day two was also an eleven. Exiting my luxurious suite, I was greeted outside with a dual-suspension mountain bike. Biking alongside a river underneath a brilliant blue sky with the dreamiest of white puffy clouds, our novice selves were pushed slightly past our comfort zones, allowing us to feel the exhilaration of mountain biking the largest single-track biking system in the country.

That afternoon, we were transported 30 minutes to Almont to experience Eleven’s other Colorado property, Taylor River Lodge—home to eight log cabins including a single-family home that’s ideal for larger families. Here I was given my own log cabin, perched on the banks above the roaring Taylor River. When not in the perfectly outfitted cabin, stocked with Aesop bath products and cozy Pendleton blankets, I explored all the

property has to offer. After trying my hand at archery and ax throwing, I enjoyed a beer tasting from Irwin Brewing Company (Eleven’s Colorado-based brewing company). The Amber’s Lager and Mexican Lager were my favorites. The bonfires and hammocks scattered across the property were ideal spots from which to savor both a beer and the gorgeous mountain views.

I began the next morning with yoga and then moved on to fly fishing—one of the most meditative and calming activities I have ever experienced. Under the expert tutelage of my guide, I caught my first of two fish by 11 a.m. Standing knee-deep in full gear provided by Eleven, I had an overwhelming sense of calm while I methodically and repeatedly cast the fishing line; a scene made even more magical when it started to snow.

After my active morning, I was treated to an Ashiatsu massage. An expert in her field, the massage therapist’s unique treatment alleviates any stressors in your life. Holding on to ceiling bars, she walks on your back using her feet to massage. Sounds different but trust me when I say it is a must experience and one that I hope to have again. After the rejuvenating massage, I headed to the Bath House, an exquisite stone building set next to the river, beside an enormous rocky cliff, with a gigantic floor-to-ceiling glass door that opens upwards to the sky for a true indoor/outdoor experience as you alternate soaking in the hot tub, dipping into the saltwater pool, and enjoying the steam and sauna. Launching this winter, Taylor River Lodge will be hosting annual wellness retreats. Think snow bathing, meditating in a winter wonderland,

yoga, and healing foods. Its primary ethos is to connect you to the natural world, teaching guests to take learned tools—like simple breathwork—home.

Each night guests can select a different dining experience by choosing from the seasonal menu, creating a custom dish, or cooking alongside the in-house chef. On our last night, we indulged in a fireside dessert of s’mores under a canopy of brilliant, sparkling stars. Waking up the next morning to fresh coffee and a breakfast sandwich for the drive to the airport had me wondering how long it would be until my next Eleven experience.

Available by room or for full property private use buyouts, Eleven lodges are ideal venues to focus on outdoor adventure pursuits and escape from the hustle and bustle of daily life. For more information, and to book your Eleven experience, visit elevenexperience.com.

A PATH TO WELLNESS

Four Seasons Hotel Westlake Village offers relaxing and informative retreats teaching guests that micro-shifts in nutrition, mindfulness, and exercise can yield life-changing results.

After a bustling fall and my daughter’s November 1 deadline for college applications, we ventured to California for a much-needed retreat at the Four Seasons Hotel Westlake Village.

The resort offers four-day/three-night health retreats with a focus of your choice: Sustainable Weight Loss, Optimum Performance, and Spa & Beauty. Hoping to relax and recharge, we selected Spa & Beauty, a retreat designed for self-care and connection that immersed us in meditation, spa therapies, physical activity, and nutritious cuisine to feed body and soul.

Located at the foothills of the Santa Monica Mountains between Malibu’s sunny white beaches and Santa Barbara’s

wine country, the site seems purposefully curated for a tranquil experience. Our room boasted sumptuous accommodations with gorgeous mountain views and overlooked the property’s immense waterfall.

The hotel’s Center for Health & Wellbeing’s accredited experts provided a tailored approach to our individual needs. We encountered a bevy of one-on-one health consultations, group workshops, and daily classes. Each service is guided by The Wellwest Method ™. This philosophy is based on the guiding principle that well-being is rooted in the five tenets of health: nutrition, life balance, medically-sound data, fitness, and healing spa therapies. Following this method, the Center’s on-site registered dieticians, exercise physiologists, and licensed therapists worked with each of us to define, achieve, and maintain our health goals. We found the

breakfast. With busy schedules in mind, they offered tips on how to make meals ahead of time to ease the morning rush. Our final dining experience featured a table crowned by a cornucopia of vegetables from the hotel’s garden. Most meals would have been overshadowed by this elaborate tablescape but not Chef Andrew’s delectable repast. We feasted upon creamy, protein-rich farro with artichokes and tomatoes, scallops served with zucchini noodles, cauliflower, corn, and frisee, followed by the pièce de résistance— an Otta Cotta prepared with oat milk, apples, pears, pomegranate and topped by an oat crisp.

team members to be deeply passionate and incredibly knowledgeable. The atmosphere was entirely devoid of judgement and chastising remarks. Instead, heartfelt encouragement created a communal desire to live and feel better.

NUTRITION

As the path to a healthy mind and body starts with nutrition, it was no surprise that our first workshop tackled this subject. Held in the living room—a bright space with a horseshoe seating arrangement conducive to conversation—we heard from a registered dietician about how mindful eating habits can create sustainable improvements in overall health. She dispelled several nutrition myths (to my surprise, I learned that coconut oil is not a healthy addition to smoothies) while delivering the information in a very “digestible” manner. We departed each session with helpful handouts on a range of topics from healthy pantry options to proper plate portioning. Guests were also treated to a one-on-one consultation with the dietician and a personalized blood work evaluation.

To further our nutrition lessons, we participated in a cooking class with the Four Seasons chefs using recipes from The Wellness Kitchen: Fresh, Flavorful Recipes for a Healthier You. In a gleaming state-of-the-art kitchen, each of the retreat’s attendees created a dish resulting in a bountiful and delicious buffet. Of the ten gourmet dishes, the chicken with chimichurri sauce (my daughter and Chef Andrew made this dish where Redding learned to butterfly a whole chicken), roasted tomato soup, and berry crisp with dairyfree ice cream received my top marks.

All retreat meals, which feature seasonal and sustainable ingredients, are carefully designed and crafted by a registered dietitian and chef. One morning in the wellness kitchen, the chefs walked us through the preparation of easy flavorful options for

LIFE BALANCE

The retreat also emphasized that a balanced lifestyle is the key to well-being. One afternoon, a licensed family and marriage therapist taught us the importance of small habits that can create big differences in our relationships. One of her many helpful suggestions was that when you first see a family member after a long day, engage in pleasantries rather than a long list of to-dos. This small act can foster a needed connection.

FITNESS

Focusing on holistic wellness, we learned the importance of fitness not only for health purposes but also for improving mindset. Our first outdoor yoga class focused on setting intentions to increase mindfulness. As we stretched under a beautiful blue sky beneath

an undulating pine tree, the scent of lemon trees and herbs from the Four Seasons’ garden filled the air. Against the backdrop of a rose-covered trellis, our instructor guided our movements and asked us to thank our bodies for allowing movement and carrying us through life. This instruction has stayed with me, and I often find myself now thanking my body—an intention that had never occurred to me. Following this experience, we enjoyed three more yoga classes during our stay, each one focusing on different aspects of healing.

For a little more strenuous activity, we ventured on two guided hikes through the Santa Monica Mountains and along the sparkling Malibu coastline. Expressing passion for flora, fauna, and all things nature, our guide, a certified fitness expert, shared an

incredible amount of knowledge about the area. When I inquired about the blackened trees on the hillside, our guide explained that this area was in flames during the Woolsey Fire, which burned nearly 100,000 acres of land in 2018. The guide explained that fires are necessary for the ecosystem and have been happening for thousands of years. He also pointed out a shell fossil that revealed the mountains we were hiking had once been underwater. After our final hike, we headed to the beach for an elaborate meal on the sand—we dined on salmon and berries served on a nautical tablescape with the sun on our shoulders and the Pacific Ocean in our ears.

Heading indoors, we met with exercise physiologist Scott Silveira who is currently working on his Ph.D. and might be the

Picnic on the beach SHERIDAN ROAD 62 WELLNESS RETREAT

most knowledgeable man I have met in his field. In the fitness facility, he took us through a fast-paced (but fun) circuit training followed by a class revealing secrets of metabolism using fascinating medical data. He shared information about exercise, number of repetitions, and accurate form. Many of us confessed we had been approaching our workouts all wrong. One guest observed these lessons should be taught to teens so that they could create a life practice based on proper information.

HEALING SPA

Relaxation and self-care are at the forefront of the retreat. The resort’s 40,000-square-foot spa offers steam rooms, hot tubs, saunas, serene relaxation areas, and gorgeous outdoor and indoor pools.

Tapping into ultimate tranquility, we had the great pleasure of indulging in multiple massages, facials (using local brand OSEA), and mani/pedis. As a Four Seasons guest, one comes to expect excellent service. This fabled Four Seasons service was readily apparent in the numerous small but thoughtful touches like the toasty warm robes we received post-massage.

One evening, we experienced a “sound bath,” an ancient meditative practice with roots dating back two thousand years. All-encompassing sound creates a “bath” that you can feel in the deepest parts of your body and yields a meditative state where the brain emits healing brainwaves. This was my first sound bath experience and, despite my initial skepticism, I left feeling more at peace than I could have imagined. One of the many things that I loved about this mother/daughter retreat was the exposure to experiences that we would not have sought out on our own. There was such a beautiful connection in discovering and sharing these experiences together.

A recurrent theme throughout the program was that large life overhauls are not encouraged. Rather, the experts suggest pursuing small changes because such changes are sustainable and can have a big impact on overall health. We and our cohorts thought this philosophy made perfect sense and presented a much more manageable approach to the often difficult process of change.

Looking to heal the mind, body, and soul through a weekend of profound serenity? The Four Seasons Hotel Westlake Village Center for Health & Wellbeing’s retreats are for you. After all, feeling well and living fully are life’s ultimate luxuries.

HOME TOUR

When Illinois Bone & Joint Institute doctors—husband and wife—Christian Skjong and Brooke Vanderby decided to move from the city to the suburbs, they fell in love with a new construction planned for 1760 Washington in Wilmette. This property is being completely designed, built, and decorated by Emily Mackie, founder of Inspired Luxury Homes and Inspired Interiors.

“I call it a ‘modern California farmhouse,’’’ says Mackie. “I’m designing it using a new, emerging 3D-Virtual Tour technology where you can literally design every aspect of the home before breaking ground.”

Mackie’s new venture is revolutionizing the traditional design-build industry by empowering homeowners to create a truly one-of-a-kind residence before construction begins. The result is what every client could hope for money and time saved and quality ensured. Inspired Luxury Homes evolved from Mackie’s 19 years as an interior designer running her successful firm, Inspired Interiors. Her new endeavor captures her passion for

building a home from start to finish—from the architectural plans to the finishing touches of a perfectly designed room.

Yet, the doctors were a little short on time. They were tired of their reverse commute, had a toddler underfoot, and were hoping to expand their family. The home on Washington wasn’t expected to be complete until the spring of 2023. So instead, they bought an existing Wilmette home built in 2008 and put Mackie to work renovating the entire house.

“The inspiration for their new home was ‘modern Scandinavian farmhouse,’” says Mackie with a laugh, admitting to her not-sosubtle fondness for modern farmhouses. “We had a really solid starting point because this couple was so taken with the design elements they saw through the virtual tour technology of the home on Washington.”

Kitchen

Kitchen’s roomy elliptical banquette seating
Two North Shore doctors renovate their dream home from top to bottom with Inspired Luxury Homes and Inspired Interiors’ founder and lead designer Emily Mackie.

By leveraging much of what they loved about Mackie’s new construction project, there was very little guesswork on the part of the doctors or Mackie when it came to how the project would proceed.

“This allowed us to establish total trust from the very beginning,” says Mackie. “I liken a client-designer relationship to someone who commissions a painting from an artist. You get a much better result when you trust the artist than if you were to stand over their shoulder and tell them to add more red here or use a bigger canvas. You just let the artist work.”

The revitalization of the doctors’ new residence is evident the minute you walk through the front door. A striking foyer complete with mirrored backdrop sets a sophisticated tone. Continuing on, a stunning staircase that was once finished in light wood now boasts bold charcoal black lacquered railings with sleek metal spindles and an elegant runner, all complemented by a large eye-catching painting.

The fully redone kitchen features a walk-in pantry for maximum storage and convenience, while an a.m./p.m. bar (stocked with the couple’s favorite coffees, teas, and spirits), a custom-made range hood, and roomy banquette seating make this a well-loved (and much-used) space in the house.

“The kitchen is definitely a favorite of mine,” Mackie says. “I was so happy when Brooke and Christian decided to go for the elliptical banquette. It’s always a discussion about whether or not a client is going to like it. But we’ve installed at least eight or nine of them this year and they are always a hit. And I especially love this one because it’s upholstered in what looks and feels like white linen but it’s a vinyl that is receptive to basically any cleaner—obviously something that’s important to a family with small children.”

Mackie’s team had a vision for the dining and living room areas of the home, flipping the original design to tuck the dining room

into a cozy space by a fireplace and opening up the seating area along a wall of windows so that one day the couple could watch their children play outside in the backyard.

“We kept asking ourselves ‘who would want to sit way off where the living room was originally situated,’” Mackie recalls. “Sometimes we find ourselves working in homes where the builders didn’t quite understand how a family lives in a space. So, we really analyzed the rooms and knew that flipping them made the most sense for this family.”

And about that fireplace in the family room—it now flaunts a charred stone finish, offset by newly lacquered exposed beams, a daring design choice echoed in the home office, where black lacquered cabinets, beams, and trim work meet portrait lighting and a comfy window seat for meaningful moments spent at work or a much-needed retreat.

“Christian and Brooke fell in love with a house that they could see using our new technology and then we used this as inspiration for the home they ultimately bought. The information they gained from that technology allowed us to provide them with the details they needed to make well-informed decisions quickly,” Mackie explains. “To be able to complete a project as extensive as this one, where we’re gutting three floors over the course of a year, would be unheard of without this kind of information. Our process is collaboration at its best. It’s rewarding for the client and for us as the design team. It doesn’t get any better than this.”

In Spring 2023, Inspired Luxury Homes’ first house—the Art of Living Show Home at 1760 Washington in Wilmette—will be open to the public. RISE AND SHINE!

Attorney-turned-entrepreneur Emily Groden knows what’s for breakfast.

SHERIDAN ROAD 76
Emily Groden

Eggs or oatmeal? Tea and toast? Breakfast. Some skip it. But for many, getting fueled bright and early is the only way to start the day. That morning meal can really make an impact. And for Emily Groden, it’s opened the way to a whole new business.

Raised on the North Shore—the daughter of two attorneys—Groden knew early on what she wanted to do with her life. “When people asked what I wanted to be when I grew up, I’d say ‘corporate lawyer.’ Not just a lawyer, but a ‘corporate lawyer.’” And she meant it. As a competitive swimmer, she knew the physical and mental demands of nearly nonstop training and made the same commitment to her education. “Sometimes, I would finish my homework in my closet with a flashlight. My parents, very reasonably, wouldn’t let me go to swim practice at 5:30 a.m. if I wasn’t asleep by 10:30 p.m., so it was my way of ensuring I could get my training in without slacking on my studies.”

Not surprisingly, Groden reached her goal. After graduating from Yale and then Harvard Law School, she joined Kirkland & Ellis in Chicago as a corporate associate. But she soon realized the track she’d set herself on wasn’t one she wanted to run. “I had spent my whole life working for something and as soon as I got it, I felt lost.” But not for long.

A passionate home cook, Groden was relaxing one night by watching a Chef’s Table episode about Chicago’s Michelin-starred Alinea. Before she knew it, she sent an email and her resume to the restaurant’s owner Nick Kokonas. Although she had no experience in the restaurant industry, he responded almost immediately. “A few weeks later, I was hired as the General Counsel of The Alinea Group and Tock. One of my favorite quotes is Wayne Gretzky’s,

‘You miss 100 percent of the shots you don’t take.’ Had I not sent that cold email, my life would look wildly different today.”

One night while driving home from the Alinea offices, Groden was listening to a podcast about the frozen breakfast market, a section of the grocery store historically laden with sugar, artificial ingredients, and preservatives. “I was expecting my first daughter, and I knew I wasn’t going to have time to cook her breakfast from scratch before I left for work in the morning,” says Groden. “I knew I’d need to rely on something like a frozen waffle, but I didn’t want to feed her junk every day. When I got home, I parked my car, took out my phone, and ordered myself a mini waffle iron from Amazon.”

What for most of us would have been an impulsive purchase (and yet another gadget gathering dust) led Groden to launch

Evergreen frozen waffles. Made with 100 percent whole wheat flour and no refined sugar, dairy, or preservatives, the product is available in four flavors at a number of outlets, including Whole Foods.

“I’d already been obsessed with making everything from scratch,” shares Groden. “If I wanted almond milk, I’d soak almonds in water overnight, blend them with vanilla extract, maple syrup, and sea salt, and strain the mixture through a cheesecloth. When I decided to make a clean-label frozen waffle, I followed a similar process. I opened my refrigerator and pantry and pulled out the most nutritious, real ingredients I could find—fruits, vegetables, whole grain wheat flour, nuts, and honey. I’d make a few waffles at a time, put them in a Ziploc bag, and throw them in the freezer.”

Two-and-a-half years since launching in the retail sector,

Evergreen waffles are available in 600 stores nationwide and have found a place in many a home freezer. But getting them there took some doing. “When we landed the Whole Foods Midwest account, I knew we needed a manufacturing partner,” relates Groden. “So, I called all the major waffle manufacturers in the country and had the phone call equivalent of door after door slammed in my face. We were too small and our product was too different.”

Ultimately, Groden found a small manufacturer willing to take her on, but a year later, her business had outgrown that relationship. Groden decided it was time to open her own facility. As usual, she’d done her homework. “I had attended every manufacturing run at our first manufacturer. I’d wake up at 3 a.m. to be there by 4 a.m. and wouldn’t leave until the last waffle was packed at 8 p.m.

Needless to say, I learned a lot about how to produce at scale.”

Groden set up her own shop with a team of four, but as demand grew, so did the need for a larger operation. “At that point, I turned to my old friend Google and was able to find a much larger manufacturer who wanted to partner with us. They’ve been making our waffles for about a year now, and we have the ability to scale almost infinitely with them.” That’s a good thing because Groden isn’t sitting still. “We just developed our second product, and it is out-of-this-world delicious. It should hit shelves in the second half of 2023—and hopefully, fly right off them!”

Groden is one to watch—she was named a Forbes Next 1000 for her entrepreneurial success, has been featured in the Wall Street Journal, Bon Appétit, Crain’s Chicago Business, Chicago Tribune, PopSugar, and was profiled on the TODAY Show and Good Morning America. It seems many agree that a healthy, delicious breakfast fuels success.

DON’T LET A BROKER HIDE YOUR HOME IN THEIR POCKET...

With low inventory levels, there has been a lot of talk about “pocket listings”- homes NOT in the multiple listing service that serves real estate brokers and the public facing sites. The Joanne Hudson Group believes in letting market forces work by facilitating maximum exposure. If all potential buyers have the opportunity to see your home, everyone benefits.

When it’s time to sell….consider the JHG difference and let a JHG broker - and the market - work for you.

Karen Nochimowski empowers busy moms and feeds Chicago’s hungry with easy and delicious recipes.

It happened for years. Home cook and mother of three Karen Nochimowski would whip up a dinner for family and friends only to be pinged the next day with multiple requests for the recipe. Nochimowski was happy to comply. But the response to her Honey Curry Chicken, (chicken thighs baked with honey, mustard, and curry powder) sent requests to new heights.

“Everyone wanted that recipe,” Nochimowski laughs. “It’s so easy to make and smells so good. So, I thought to myself ‘Instead of copying and pasting the recipes into emails, why don’t I just start a blog?’ Who knew that the blog would lead to a cookbook and put me on a philanthropic path to running a soup kitchen and food pantries?”

Launched in 2017, mommachef.com was designed to help busy moms get healthy food on the table without a lot of fuss. Within months, the number of followers pushed past 35,000, prompting Nochimowski to hire professional design and marketing help. Invitations to write recipe columns for print and online media quickly followed.

Nochimowski’s 6-minute Dinners (and More!): 100 Super Simple Dishes with 6 Minutes of Prep and 6 Ingredients or Less is fresh off the press from Page Street Publishing, with gorgeous food photography by Toni Zernik. The goal throughout? To help moms lacking kitchen experience develop the confidence to cook quick and delicious meals.

“I had so many frazzled moms tell me cooking was a nightmare,” she says. “With these recipes, I am showing them, ‘You can do it!’”

Nochimowski’s intuitive knack for quickly mixing flavors and ingredients to create something delicious is practical, not gourmet: “I want recipe prep to be stress-free and speedy, and the result to be both healthy and tasty, so you can move on to enjoying the people you prepared it for.”

As a result, she doesn’t shy away from using prepared ingredients to dress healthy proteins and vegetables. Her popular Old-Fashioned Braised Brisket works its magic with onion soup mix, ketchup, and a bottle of chili sauce. That said, Nochimowski’s use of spices and ingredients from a variety of cultures takes her recipes beyond Americana to include dishes such as Coconut Curry Mahi-Mahi, Miso-Glazed Cod, and Sriracha-Honey Wings.

With Momma Chef’s Soup Kitchen and Little Free Pantries, Nochimowski’s impact has extended beyond the home kitchen and into philanthropy. “As fulfilling as the blog and recipe development have been,” she says, “I feel like this philanthropic work is really where Momma Chef was always headed.”

The seed for this work was planted years ago, partly because Nochimowski’s boys had an unusual way of celebrating their birthdays. “They would ask for grocery store gift cards and buy ingredients to host a soup kitchen at Beth Emet Synagogue in Evanston,” she recalls.

Launching her own soup kitchen required much more preparation. “I dove into months of research and networking,” she says. “I created a business plan, held fundraisers, and designed menus to feed more than 100.” Finally, in 2018 Nochimowski launched Momma Chef’s Soup Kitchen at Congregation K.I.N.S. in Chicago. Every Tuesday, the kitchen provides a hot, five-course meal to-go for anyone who comes by and delivers 70 meals to two Chicago shelters.

This philanthropic endeavor is very much a family affair. One winter, Nochimowski’s 14-year-old, middle son Tal hosted a coat drive at his school so that he could hand out warm outerwear along with food at the kitchen. Her youngest son, Aiden, 11, now has his own set of knives and takes pride in using them to prepare the fruit salad alongside a cadre of volunteers.

Meanwhile, eldest son Oren, 18, is the director of Momma

Chef’s Little Free Pantry Movement, stocking Momma Chef pantries at Chicago’s West Ridge Community Church, Evanston’s Beth Emet Synagogue, and the South Side’s New Beginnings Church and Beth Shalom Ethiopian Hebrew Congregation. At each location, little kiosks, (inspired by the Little Free Libraries that offer free books to passersby) are filled with nonperishable goods free for the taking.

Monetary donations to Momma Chef and a percentage of cookbook sales help fund the work, along with provisions donated by local grocery stores and the Greater Chicago Food Depository. “But we also need volunteers,” Nochimowski explains. “I work with volunteer coordinator Karen Ecanow to gather help at the soup kitchen. It takes more than 600 volunteers per year to prepare and serve meals.”

Prior to the pandemic, there were waiting lists of volunteers ready to help but those lists have dwindled. “We’re trying to build them back up,” Nochimowski notes. “Everyone who has helped tells us it’s been a meaningful experience. I tell anyone who is interested the same thing I tell moms in my cookbook, ‘You can do it! Here’s how. Just give it a try.’”

GRAB-AND-GO BREAKFAST EGG MUFFINS (GF, LC, NF, SF, V)

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Makes 12 muffins

Ingredients

• 6 eggs

• 2 tablespoons (30 ml) whole milk

• 1/2 teaspoon kosher salt

• 1/2 cup chopped fresh vegetables, such as broccoli or spinach

• 1/4 cup shredded cheese, such as sharp Cheddar

Preheat the oven to 375 degrees. Coat a standard 12-cup muffin pan with cooking spray. In a medium bowl, lightly beat together the eggs, milk, salt, and set aside. Divide the vegetables and cheese among the muffin cups. Pour the egg mixture into each muffin cup over the vegetables and cheese, filling each one about three-quarters full. Bake uncovered until golden brown and cooked through, about 20 minutes. Whip up a batch of these savory muffins on Sunday night, and you’ll have a week of easy breakfasts for your kids as they scramble for the school bus.

Tips

The vegetables do not need to be cooked before adding them to the muffin pan. Try adding some fresh herbs, such as chopped basil or dill. If you have picky breakfast eaters, let them choose the veggies and cheese, and have them put the ingredients in the muffin cup. It’s an easy and fun way for kids to “cook.” Plus, kids are excited to try the foods that they cook themselves.

EASY-PEASY HUMMUS

(DF, EG, GF, NF, V)

Prep Time: 5 minutes

Total Time: 5 minutes

Serves 6

Ingredients

• 2 (15.5-ounce) cans chickpeas, drained (reserve liquid from 1 can)

• 1/2 cup extra-virgin olive oil

• Juice of 1 lemon

• 1/2 cup tahini

• 3 garlic cloves

• 1 teaspoon seasoning salt

In a food processor or blender, add the chickpeas and the liquid from 1 can of the chickpeas, the olive oil, lemon juice, tahini, garlic, and seasoning salt. Puree until smooth and well combined, about 2 minutes.

Tips

If serving this to guests, sprinkle the hummus with a dash of paprika. This can be stored in an airtight container in the refrigerator for up to 5 days. This recipe is nut free, but it is not sesame free as the tahini contains sesame.

Add the butternut squash, mix, and cook for 2 minutes more. Pour in the vegetable broth and 2 cups of water. Partially cover the pot and cook for 45 minutes until the butternut squash is very tender. Remove from heat, add in the cream cheese and brown sugar, and puree in batches in a blender, food processor, or with an immersion blender until smooth.

Tips

Before serving, sprinkle cinnamon and chopped pecans on top (first make sure there are no nut allergies). If you want to make the dish dairy free, use 1/2 cup of your favorite dairy-free milk.

LEMON-HERB SALMON

(DF, EF, GF, LC, NF, SF)

Want to cook a fabulous weeknight meal and make your family smarter? Choose salmon, the DHA darling of the sea. DHA is all kinds of good news for our brains—boosting memory, improving cognitive functioning, and staving off depression. This recipe tops the list with its sweet-and-spicy flavor profile. Here, a Mediterranean-style marinade with a strong lemon base balances the sweetness of the brown sugar and the bite of the chili powder. My number one tip here: use a timer. This salmon will be A+ perfect after baking for precisely 20 minutes.

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes Serves 4 to 6

Ingredients

• 1 1/2- to 2-pound salmon fillet

• 1 tablespoon packed light brown sugar

• 1 teaspoon kosher salt

• 1/2 teaspoon chili powder

• 1/4 cup Mediterranean-style herb marinade, such as Lawry’s Mediterranean Herb and White Wine marinade

Preheat the oven to 375 degrees. Coat a 9 x 13-inch baking dish with cooking spray, and place the salmon fillet skin side down in the dish. In a small bowl, whisk together the brown sugar, salt, and

chili powder. Rub the spice mixture all over the top of the salmon. Pour the marinade evenly over the salmon. Bake uncovered until the salmon is cooked through, 20 minutes. Serve warm.

Tips

If you can’t find the Mediterranean marinade, you can make your own using 1⁄4 cup extra-virgin olive oil, 1 teaspoon dried basil, and 1 tablespoon lemon juice.

HEARTY BEEF AND VEGGIE STEW (DF, EF, GF, NF, SF)

This is a delicious beef stew without all the fuss.

Prep Time: 5 minutes

Cook Time: 2 hours

Total Time: 2 hours 5 minutes

Serves 6

Ingredients

• 2 1/2 pounds beef stew meat, cubed

• 2 tablespoons extra-virgin olive oil

• 2 large carrots, peeled and diced

• 3 medium-sized potatoes, diced

• 2 cups tomato juice

• 2 cups beef broth

Preheat the oven to 300 degrees and set a rack in the lower-middle position. In a large Dutch oven, heat the olive oil over medium-high heat. Add the cubed stew meat, and sear for about 3 minutes per side. Remove the pot from the heat, and add the carrots, potatoes, tomato juice, and beef broth. Stir everything together, and cover the pot. Carefully put the pot in the oven, and cook for 2 hours or until the meat is very tender. Remove from the oven, and season with salt to taste.

Alternatively, you can make this in the slow cooker: First, sear the meat in a pan with the olive oil per the instructions above. Then add the meat, carrots, potatoes, tomato juice, and beef broth to the slow cooker, and cook on low for 6 hours or high for 3 hours, until the meat is very tender.

CAN’T STOP THE FEELING

Grammy Award-winning musician and entrepreneur Prescott Ellison has always known he had something big to share with the world. Today, he is helping combat childhood obesity with superheroes born from his imagination.

Have you ever met someone who just knew they were born to leave the world a better place than they found it? Chicago native and Grammy Award-winning drummer, composer, best-selling author, inventor-turned-entrepreneur, and educator Prescott Ellison is just such a person.

“I hope you don’t take this the wrong way,” Ellison says. “But I’ve always known I had lots of ideas. I’ve always known I was special.”

It could be Ellison’s 88-year-old father, Wilbert Ellison, who instilled this belief in his son when he opened his own restaurant in Chicago—Wilby’s. “My dad taught me all the things—the infrastructure of a business, what it’s like to have a dream and turn that into something, and the importance of hard work,” Ellison says.

Such lessons in his formative years took shape when Ellison began drumming. A self-taught musician with unwavering determination, Ellison caught the attention of musical greats. For more than 20 years, he toured the world and recorded with Christina Aguilera, Earth, Wind & Fire, Stevie Wonder, and Brian McKnight to name just a few. He is featured on 25 albums and won a Grammy Award for his performance on Justin Timberlake’s album Justified.

For some, this level of success would have been enough. Yet, Ellison knew he was called to do more.

“I made a conscious decision to pursue a more purpose-driven life that would allow me to pur-

sue my other passions that included nutrition, fitness, and education,” he says.

Being on the road and traveling constantly made it difficult for Ellison to maintain his healthy lifestyle—one that his mother, Hattie, had always stressed the importance of when he was a child.

“Sometimes, I couldn’t find a gym or maybe I didn’t have enough time to go down and use the hotel’s fitness center, so I would create my own using the chairs in the hotel room,” Ellison adds.

Inspired by Leonardo Di Vinci, one of the world’s greatest inventors, Ellison came up with the idea to design and create “The Body Bench”—a portable bench that could be used for a full body workout, including calisthenics, isometrics, stretching, yoga, and cardio.

“During COVID when gyms were closed, we sold out of The Body Bench,” he says. “Everyone wanted one because they could achieve a complete workout with this simple, portable piece of equipment.”

Building off his success with The Body Bench, Ellison wanted to expand on his message of better health to the masses.

“I always say that we should act our energy, not our age,” he explains. “People want to know where my energy comes from, and I want to educate others on what I know to be true.”

So, Ellison decided to take his teaching to schools. Drawing from another childhood hero— Walt Disney—Ellison created a nutrition and fitness curriculum for grades kindergarten through fifth based on a series of illustrated characters he drew at the age of 7.

With the support of his business partner Andrew Belmonti, a Highland Park native, Prescott

launched The SuperFood Friends, a team of super-powered fruit and vegetable characters who engage, inspire, and educate children about nutrition, fitness, and environmental awareness. The curriculum is currently taught in schools in Las Vegas where Prescott lived before moving to his current home in California.

“Youngsters these days have access to so much information, but often they’re bombarded with misinformation that can lead to counterproductive nutritional choices that can affect them for the rest of their lives,” Ellison says. “The SuperFood Friends program helps teach children to be nutritionally literate, to make informed choices about their lifestyles, and encourages them to stay active.”

Ellison’s grassroots efforts have been recognized by leaders across the country. In addition to receiving the Barack Obama Presidential Lifetime Achievement Award, Ellison has received the 2017 Childhood Obesity Prevention Award, secured endorsement from the Nevada Department of Agriculture, and was granted the 2016

Field to Fork Award.

This year, Ellison will welcome the arrival of The SuperFood Friends live production TV show that will carry on in the tradition of Sesame Street. It will feature live characters and puppets that will interact with children on the show who will participate in fun and engaging activities with The SuperFood Friends.

The SuperFood Friends is an extension of Ellison’s belief that everyone has unlimited potential.

“Instead of telling people they have a purpose, I’m going to show them that they do,” Ellison explains. “We’re going to empower youth through wisdom and knowledge—show them where they want to go and make them believe they can do it. For me, it’s always been about outcome over income. This is how I’ve separated myself from the pack.”

To learn more about the SuperFood Friends and an upcoming exhibit with them at The Art Center Highland Park, follow Prescott Ellison on Instagram @prescottellison.

PLAYING FOR KEEPS

SHERIDAN ROAD 90
Janaé Meyer wearing double breasted Balmain jacket, Nanushka vegan leather pants, AS by DF silk cami, Neiman Marcus. Jewelry by J.Crew

Lacrosse, fencing, crew. All fine sports. But for most fans, they don’t hold a candle to baseball, football, and basketball. Yet, in what you could only call a counterintuitive move, another elite athletic recreation— squash—was envisioned as a portal to empower young people back in 1996, by Williams College and Harvard graduate, Greg Zaff. A former pro player himself, Zaff devised a program—SquashBusters—that combined the sport with academic tutoring to enhance the lives and minds of middle schoolers and high school students. The concept caught on here in Chicago as MetroSquash. And it has had quite an impact.

Established by outgoing CEO David Kay—who’d coached the men’s squash team at the University of Rochester and was a topranked player on the professional doubles tour—MetroSquash began operating on the South Side in 2005 and in Evanston in 2018. The organization has reported a 100 percent college acceptance rate among participants, 98 percent enrollment rate, 88 percent persistence rate, and 85 percent of its alumni have landed full-time employment. “The best part of the program is that there are caring adults committed to supporting you from age 10 to 22,” says Janaé Meyer, who will be transitioning from Chief Program Officer into the role of CEO in September 2023. “You don’t have to be an amazing athlete or have your academic career figured out. We provide a safe and supportive environment, we help make learning fun, and we are with students every step of the way.”

MetroSquash helps young people increase their confidence, clarify their ambitions, and strategize how to achieve their goals both in and beyond the classroom. When they’re not on the court perfecting their drop shot, program participants get an assist in keeping on top of their studies with personalized plans geared toward improving their academic performance. Meanwhile, the MetroSquash College & Careers Program supports students in realizing their postsecondary goals.

The program creates a nurturing environment that provides participants with insight into how to become their best selves in a challenging world. “If you open an article, scroll through your social media feed, or tune in to your favorite news station, there

“I have seen the transformative difference this program has made for not only our students but for families, mentors, and the community.”

is no shortage of discouraging news,” notes Meyer. “Food deserts, gun violence, and unemployment are all too common. When you walk through our doors, nourishment, safety, and a caring and supportive environment are bottom-line nonnegotiable. I have seen the transformative difference this program has made for not only our students but for families, mentors, and the community. Many of our parents introduce new families to the program because they have witnessed the difference. We help build confidence during a time when self-doubt can be debilitating and when our young people are at their most vulnerable.”

Raised in Chicago’s Washington Heights area, Meyer knows firsthand the effect thoughtful mentoring can make. “I was fortunate enough to have adult role models in my life who helped me dream big and who believed that I could do anything. My mom is a constant inspiration, sacrificing and pushing me to always shoot for the stars. My grandmother was also a great source of strength and unconditional love. I carry her wisdom with me wherever I go,” says Meyer. In graduate school, Meyer met a nonfamily member who made a huge impression. “My professor Melissa Roderick helped me make sense of the world in such a way that I knew I would never look back. She helped me take pride in who I was, where I came from, and the story I was destined to tell.”

Meyer holds a Master’s in Social Service Administration from the University of Chicago and a Bachelor’s in Applied Psychology from the University of Illinois at Chicago. Before joining MetroSquash, she worked with I Have a Dream–North Chicago, a nonprofit organization aimed at helping students from under-resourced communities realize their true potential.

Meyer knew early on that she wanted to work with young people and families, and MetroSquash has provided her with the

kind of professional and personal satisfaction we all hope for. “As a little girl, I could never have dreamed of a better place to be and I sincerely mean that. What David Kay has created is nothing short of spectacular. Over the years, I have witnessed students overcome incredible odds to be the first. The first in their family to graduate college, pursue graduate studies, or land the dream job that will help change the life trajectory of future generations. I have witnessed students dare to attend college across the country, study abroad, and shatter glass ceilings. This program is a gift to many and we get to see it and feel it each and every day.”

SHIFTING TO A HIGHER GEAR

Winnetkan John Nichols and former professional cyclist

Robbie Ventura are the formidable tandem behind the start-up Velocity, a virtual endurance-training company.

a class SHERIDAN ROAD 94
Robbie Ventura leading

John Nichols’ first sprint triathlon in 2005 didn’t go so swimmingly.

“Horrible experience,” the Winnetkan recalls. “Rough. I was heavy, grossly out of shape ... kind of an idiot. But I wanted to race again. I wanted to train properly for my next race.”

Two years later, the former collegiate lacrosse and hockey player entered an Olympic triathlon in Chicago. Nichols, who attended New Trier East High School for two years before graduating from Loomis Chaffee School in Connecticut, eventually took on nine grueling Ironman Triathlons.

“I got into endurance sports, more and more each year,” Nichols, 47, says. “I remember arriving in Pleasant Prairie (Wisconsin) for a triathlon in 2013 and marveling at the community of competitors and the energy of the event. Support was everywhere. Racers were willing to share their knowledge and tips on swimming, biking, and running.”

He became a USA Triathlon and Ironman certified coach and kind of fell in love with helping people reach their goals.

After a 20-year career in marketing, innovation, and product development with Miller Brewing, Constellation, and Beam Suntory, Nichols—the husband of Brenna and the father of sons Fisher (12) and Bauer (9)— has been a busy entrepreneur joining or founding start-ups in the alcohol, fitness, and technology fields.

In his most recent venture, Nichols—who had returned to Winnetka 10 years ago—teamed up with former U.S. Postal Service Pro Cycling Team member Robbie Ventura in 2020 to launch the software company Velocity, a virtual endurance-training company. Nichols serves as its chief marketing officer and vice

president of product development.

A technology company by coaches and for coaches, Velocity is like Peloton, but it’s geared toward cyclists and triathletes who train using their real bikes on a device called a smart-trainer. Velocity leverages two-way video and real-time data metrics (power, speed, cadence) to connect coaches and athletes with each other for live, replay, and video-on-demand workouts.

“World-class athletes, like Robbie Ventura and Meredith Kessler (a professional triathlete, Ironman champion), lead classes,” says Nichols, who coached his former Harvard University roommate, Scott Johnson, ahead of an Arizona Ironman race this past November. “Velocity makes all styles of coaches accessible to athletes with an easy-to-use interface.”

Robbie Ventura and John Nichols
SHERIDAN ROAD 95
Cycling expert Robbie Ventura at Tour de France

“Athletes,” Nichols observes, “are no longer limited to their local coaches, and local coaches aren’t limited to their local athletes.”

Nichols first met Ventura in 2013 at Vision Quest Coaching (VQ) in Highland Park. Ventura—winner of more than 70 pro races—had created VQ in 2000. VQ offers expert training programs for more than 500 endurance athletes of all levels from beginner to elite, including cyclists and triathletes ranging from 8 to 80 years old. Not surprisingly, Velocity has become an integral part of VQ’s training regimen.

“Velocity has allowed VQ to stay connected to our athletes, as facility training has not returned to normal,” says the 51-yearold Ventura, a Lake Forest College graduate and Hall of Famer (cycling and hockey) who lives in Libertyville with his wife, Lori, and their children Luna, Enzo, Luciana, and Raquel. “It has also allowed us to leverage our proven coaching methodology outside our facilities (Highland Park and Chicago) and made building our brand much easier outside the Chicago area.”

“We have given our remote athletes a place to feel connected to our coaches and other VQ athletes,” explains Ventura.

“Robbie,” Nichols says, “is insanely knowledgeable about all things cycling and naturally curious about training methodologies. He knows he’s not the strongest, most powerful cyclist, but he more than makes up for that by being super smart about training and formulating strategies. He’ll drop back during a bike race to find his VQ racers and see how they’re feeling or to talk strategy with them. Robbie gets more joy out of helping others than he does out of racing,” he adds.

In addition to mainstream coaching, Velocity makes specific coaching available to adaptive athletes and youth athletes anywhere. Another market is those bikers who reintroduced

themselves to their cobwebbed bikes in the garage or churned relentlessly atop a Peloton during the long days of the COVID pandemic.

“Velocity is not just for the serious athlete,” says Nichols, who espouses the maxim “Train Hard, Race Easy.” “A lot of people fell in love with riding their bikes again, and now they want to see what they can achieve while training on Velocity.”

Like its customers’ race times, Velocity is constantly improving. One development in the works is the creation of unique experiences, like riding with your favorite world tour teams and cyclists.

“We give people the ability to improve and grow in both their fitness and mindset,” Ventura says. “We understand the power of exercise and create events and options for people to explore new adventures on their bikes. We can help people live longer, gain confidence, and exceed what they thought was possible.”

A HAPPENING AUCTION PARTY

The School of the Art Institute of Chicago (SAIC), a global leader in art and design education, celebrated its online November art auction by hosting an exciting and whimsical “A Happening Auction Party.” The event recognized more than 80 generous artists and designers whose work, in both the online auction and live auction held at the benefit, generated $641,625 for student scholarships. The impressive list of artists included Nick Cave, Sanford Biggers, Candida Alvarez, and many more. The event attracted nearly 300 artists, designers, and art enthusiasts. The evening’s entertainment consisted of “Happening” performances directed by SAIC Professor Mark Jeffery and dispersed throughout the galleries. These performances were inspired by the boisterous “Happenings” of pioneering performance artist Allan Kaprow, who, along with his contemporaries, performed small tasks that encompassed art, performance, and spontaneity during the 1950s and ‘60s. saic.edu

Q IS FOR QUEST

Quone Edmonds—“Coach Q”—flexes his relentless positivity to help others reach their fitness goals.

Clients at Quest Performance Training (Quest) in Lake Bluff have no choice but to exercise mere seconds after entering the facility. But only if you believe that receiving a high five is a form of exercise.

Quest owner Quone “Coach Q” Edmonds delivers the emphatic greeting to one and all. The elevated slap usually triggers a barbell-wide smile—a facial workout, essentially—from the recipient.

“I have a deep passion for what I do, and there’s nothing like an immediate high five to set the best tone for a group or individual session,” says the 31-year-old Gurnee resident.

The 6-foot-2, 245-pound Coach Q—a former standout football player and track athlete at Waukegan High School and a record-setting wide receiver at the University of Indianapolis—started Quest in January 2019 with a goal to produce a challenging workout that leads to life-changing results through encouragement, energy, and excitement.

His clients are as young as 14 and as seasoned as 75. Training at Quest fits all fitness levels. Coach Q and his staff (head coach Courtney Johnson and boxing coach Danny Gomez) oversee high-intensity workouts designed to improve mobility and strength.

“Every single thing we do at Quest gets the heart rate up, and our No. 1 priority is tending to the health of each client in a tight-knit, family-like atmosphere,” says Coach Q, who’s as quick to help someone with their form as he is to ask, “How’s your day going?”

“But,” he continues, “there’s more to this than striving to achieve desired results; there’s also the feeling of accomplishment after each session. You’re going to be challenged physically when you’re here, but you’re also going to leave feeling relieved and satisfied, mentally and emotionally.”

Coach Q got his start in the fitness industry as a college intern at Body-N-Motion in Indianapolis. Owner Michael White ordered his eager charge to work with three clients for 12 weeks.

“I remember thinking, throughout the process, ‘This is fun,’” says Coach Q, who worked as head coach at Orangetheory Fitness in Lake Forest from 2015-2018. “I truly enjoyed the opportunities

to help and motivate clients, all while building relationships with them.”

Q’s dream in high school was to catch touchdown passes on Sundays in the National Football League. He played American football in Stuttgart, Germany, for a couple of seasons and got a Canadian Football League contract offer from the Saskatchewan Roughriders when he was 26.

“The contract thrilled me, but I chose not to play,” says Q, who, with wife Abbey, celebrated the birth of their daughter, Bee, in July 2022. “I’d fallen in love with the fitness industry at that point in my life and decided that would be the best route for me.”

His parents, Mark and Debra, guided him to a spiritual path, for which he is forever grateful. Mark, chief of engineering at Courtyard Marriott in Waukegan, is a deacon, and Debra sings in a church choir and volunteers her time for a food pantry.

“It was nerve-racking, preparing to open Quest Performance Training,” admits Q, who has trained a former Chicago Cub and a pair of former Chicago Bears at his facility. “But what helped me overcome that was my mother, who told me, ‘God gave you a talent. Use it to help others.’ And Quest members, all of them, have been great, providing support and having faith in me from the beginning. This gym has been a blessing.”

So has Abbey.

And Bee.

“After the birth of my daughter, my drive to succeed has grown tremendously, and though there is stress that comes with being a business owner, it’s always great to go home to someone who encourages me,” he says.

A Quest visitor, gripping a pen and toting a notepad, stands and prepares to leave.

“Hey, you have the best day ever!” the owner/perpetual high-five giver hollers.

It’s not just a line. It’s a vigorous, heartfelt order, delivered with a blinding smile.
