With a Princeton undergraduate degree, a law degree from Georgetown, and legal experience ranging from corporate litigation in New York City to serving as Delaware’s Deputy Attorney General, Winnetka’s Stephanie Hochschild is uniquely qualified to take on any number of challenges. But what she chose to do, some eight years ago, is to devote her extraordinary talents to enhance the legacy of The Book Stall of Winnetka. “I’m passionate about books, about authors, about the play of ideas, and the sheer joy of reading. Through The Book Stall, I get to live that passion every day and share it with others. How many people get to do that?” asks Hochschild. Hillary Clinton, JK Rowling, Veronica Roth, David Ross, and Pat Conroy are just some of the bold names, luminaries, and newsmakers who made The Book Stall their signature stop on Chicago’s North Shore for in-person book signings, helping define The Book Stall’s status as a Winnetka mainstay. As the daughter and niece of librarians, Hochschild had a love of reading written into her DNA. Summers were spent reading
stacks of library books in the backyard and to this day she is never without a book or two in her purse. But well before Hochschild took the helm of The Book Stall, she first came to know it as a mother to three voracious readers who loved to stop at the store to pick out their next favorite book. As time went on, The Book Stall had an even larger place on the young family’s schedule, as
they joined neighbors and friends at events ranging from fun activities for young readers, special author evenings, and book-buying for friends and family, far and wide. Over 40 years ago, The Book Stall came into being, first on Chestnut Court and now at its current location on Elm Street. And the community’s connection to it. “Even in this challenging time, we remain hopeful and extremely grateful for the support we receive from the community,” says Hochschild. She has added her own mark to The Book Stall, building a vibrant social media presence and a robust online business. Surrounded by an excellent staff of booksellers and a manager, Hochschild’s primary role is selecting books for the store’s shelves. One of her main interests is introducing young readers to children’s authors. Although The Book Stall works with schools throughout Chicagoland, Hochschild has particularly enjoyed collaborating with the Learn Charter Schools, bringing well-known authors into classes and donating signed books. “The stories literally jump off the pages for these students. It is truly magical to watch an author interact with and personally sign a book for each child—it’s a life-changing moment,” she says. “I’m proud that The Book Stall works to bring this experience to hundreds of school children each year.”
Like many small business owners, these past few months have brought unprecedented challenges that called for innovative new ways to serve customers. Personal deliveries, including festive “elves” to deliver holiday items directly to area homes and the handsome gift wrap that’s The Book Stall standard, are just part of the reason customers look to the store as their preferred source. The Book Stall’s team reflects the deep commitment Hochschild has for authors and the industry overall. “Quite simply, our staff cares about each of our customers who walk in the door—and that’s because to us, they’re more than customers, in many cases, these are our neighbors and friends. So we go the extra mile to determine

A particular strength is the Children’s Department, staffed by dedicated booksellers, two of whom have worked as educators on the North Shore. With regular storytimes—now virtual—and an expansive array of titles, The Book Stall welcomes young readers with open arms,” explains Hochschild. The Hochschilds are “all in,” making The Book Stall a family affair, with husband Roger participating at author events, and even starring as guest host, interviewing C-suite and

other authors, while their now-adult children work with customers, unpack books, stage the window, and more. “That’s been a very rewarding part of owning The Book Stall, seeing how our children have learned first-hand what it takes to run a successful business and to contribute to the community in a meaningful way,” notes Hochschild. SEASON OF LIGHT CHABAD OF WILMETTE SHARES A MESSAGE OF HOPE THIS WEEKEND AT WILMETTE’S INAUGURAL DRIVE-IN CHANUKAH THEATER. BY KEMMIE RYAN THE NORTH SHORE WEEKEND
What do giant LED robots, a virtual concert, and a 6-foot menorah have in common? Chanukah 2020. Fraida-Cameron Chabad of Wilmette had plans to celebrate Chanukah with an in-person grand menorah lighting and mixing and mingling over holiday treats and music this winter, but as with most things this year, COVID-19 got in the way. “We realized after consultation with local authorities our original plan to do a lighting in the communities of Winnetka and Wilmette needed to change,” says Rabbi Moshe Teldon. “We took a few days to brainstorm and decided change the event to a drive-in theater experience. It’s going to be something very special.” What can guests expect this Sunday, December 13, at Chabad of Wilmette’s first socially distanced Chanukah celebration? “We have giant LED robots on 8-foot stilts that will move between cars and on stage. We also have a half-hour virtual concert with a holiday message, menorah lighting ceremony, and an interactive holiday trivia game show,” explains Rabbi Teldon. Rabbi Teldon assures that it will be a socially
distanced, pandemic-conscious event, “The audio of the concert is being broadcast through an FM transmitter and we won’t have any speakers outside, so guests can keep their windows up the whole time. Of course, what would a Chanukah celebration be without the lighting of the menorah—a 6-foot-tall menorah in this case. Chabad of Wilmette’s full-size menorah is especially different this year. “Children from the Hebrew school have been bringing in coins each week to fill our menorah— or ‘coin-orah’ as we are calling it,” says Rabbi Teldon. “The children have enjoyed seeing the PVC pipes of the menorah fill with their donated coins.” The collected change will be donated to a nonprofit chosen by Chabad of Wilmette after the event, further giving back to the community and Chanukah’s message of hope. Rabbi Teldon adds, “The theme of Chanukah is about finding light in the darkness. As a Rabbi, I speak with many people in the community and there is a real fear of going out in public with the current pandemic. This is a wonderful opportunity to stay safe but embrace our community and making the most out of the situation. I encourage everyone to be creative and lean into and focus on the things that truly matter—family, faith, and community.”

There are decorative trees in front of a North Shore office building. The kind with little red berries. A bunch of birds found them and are chomping away. You happen to know they’re Cedar Waxwings, a shy species, gray, with crests and some yellow trim. You’re alone in the car, reluctant to go to an appointment. So the birds grab you. Then, bam! All take off, a cloud of flapping wings swirls upward. A flock! Whose idea was it to take off? To circle around, then come back? Why did the others

follow that first guy? Was there even a first guy? Maybe the flock itself is the guy. Flocks behave like they have one nervous system. Science has studied this and come away scratching its itchy scalp. You watch as the flock returns, resuming the berry-eating. Individuals again. But you know they’re capable of losing individuality and joining a mindless mystery: a flock. You leave your car with a sigh. The unsettling thought hits. TRADITIONAL CHRISTMAS PUDDING minutes. Strain peel out and discard water. Repeat one more time. Next, heat 1/2 cup sugar and 1/4 cup water, and bring to a boil. Simmer for three minutes. Add cooked citrus peel, reduce heat to low and continuing simmering, stirring occasionally until peels are translucent and liquid becomes a syrup. Scoop candied citrus into the bowl of marinating dried fruit. Cover with a clean kitchen towel and allow to marinate for 24 hours.
RECIPE AND PHOTOGRAPHY BY MONICA KASS ROGERS Makes one large pudding centerpiece (pudding will be about five-cups in size), and 6 mini puddings (each ½ cup)
Equipment needed: one 6-cup pudding mold with fitted lid OR 6-cup mixing bowl with greased parchment paper and aluminum foil to make a lid, and kitchen twine to tie around the wrapped mold; six 3/4-cup mini pudding molds or ramekins with greased parchment paper and aluminum foil to make lids, and kitchen twine to tie around the wrapped mold; two large stock pots to steam the puddings, one for the 6-cup mold and one for the six minis. For the marinated dried fruit: • 1 cup black Thompson seedless raisins • 1 cup dried apricots, finely chopped • 1 cup dried cranberries • 1 Granny Smith apple, peeled, cored, and cut into small dice • Juice of 1/2 orange to make 3 tablespoons (reserve orange peel to make candied peel, recipe below) • Juice of 1/2 lemon to make 2 tablespoons (reserve lemon peel to make candied peel, recipe below) • 2/3 cup cream sherry or ruby port

For the candied citrus peel: • Peel of 2 fresh oranges, with much of the white pith removed, diced small to make 2/3 cup • Peel of 1 fresh lemon, with much of the white pith removed, diced small to make 1/3 cup • 1/3 cup sugar For the batter: • 2/3 cup self-rising flour • 1/4 tsp ground clove • 1/4 tsp ground mace • 1/4 tsp ground coriander • 1/4 tsp ground Jamaican allspice • 1/4 tsp nutmeg • 1/4 tsp ground caraway seed • 1 1/2 tsp ground cinnamon • 1/2 tsp salt • 2/3 cup frozen unsalted butter, grated (substitute 1/3 cup of shredded beef suet for 1/3 of the butter if you like) • 3/4 cup light brown sugar • 3 slices of fresh brown bread, crusts removed and discarded, bread torn into tiny bits • 1/2 cup toasted, finely chopped pecans
• 2 large eggs • 1 Tbsp honey • 2/3 cup stout • 1/3 cup whole milk
For greasing the pudding molds: 4 tablespoons softened butter or 1/2 cup solid vegetable shortening For the brandy cream: • 4 tablespoons salted butter • 1/4 cup all-purpose flour, sifted • 2 cups whole milk • 1/4 cup superfine sugar • 5 tablespoons brandy Make fruit mixture: In a large, non-reactive bowl, combine raisins, cranberries, apricot, and apple with the orange and lemon juices and sherry. Mix, then set aside while making candied citrus peel. In a small saucepot over medium-high heat, cover the orange and lemon peel with 2 inches of water. Heat to boiling and simmer for 15 minutes. Strain peel out and discard water. Replace cooked peel in pot, cover with a second batch of fresh water, heat to boiling, and simmer for another 15

Make batter Sift flour, sugar, salt, and spices into a large bowl. Add crumbled bread. Stir in the fat (butter, and suet, if using) and chopped pecans. Whisk egg and honey with stout and milk. Stir into dry ingredients (this is traditionally where each family member gives the bowl a stir). Spoon all of the fruit mixture into the batter and stir to incorporate. Prepare and fill pudding molds: Using softened butter or solid vegetable shortening, copiously grease the inside of each mold. Starting with the mini pudding molds, fill each with about ½ cup of the mixture, making sure each mold or ramekin is no more than ¾ full. Smooth tops to level. Spoon the rest of the pudding mixture into the large mold. Remaining batter should fill the mold about twothirds of the way. Smooth top to level. Cut and grease rounds of parchment paper to place on the top of each mold. Cover with lid (if using a pudding mold that comes with a lid) or cover each mold tightly with two layers of foil. Using kitchen twine, encircle each pudding, wrapping from top around bottom and up again. Tie to create a handle. Fill each of two large pots with enough water to come half the way up the sides of the molds you are steaming. Cover pots, heat water to slow boil, and steam the puddings for four to five hours, replenishing water if the level gets low. Remove finished puddings from steamers and cool. Remove wrappers. Prick surface of puddings with a toothpick and drizzle with a little brandy or sherry. Cover and store in a cool, dry spot. Unwrap occasionally to drizzle with a little more brandy, until Christmas day. Make brandy cream: In a heavy saucepan over medium-low heat, melt thebutter. Add flour and whisk constantly to create a thick, smooth paste. Continue whisking for 1 minute. Add milk and continue whisking for three minutes to form a smooth sauce. Add sugar, whisking until sugar dissolves. Reduce heat to low and whisk for another five minutes. Whisk in brandy. Pour over pudding. Note: brandy cream can be made ahead, kept in the fridge, and reheated at service. To serve: Remove puddings to serving plates. Prepare brandy cream to pour over or serve on the side. Garnish with holly sprigs, being careful not to let any holly berries touch the puddings—the berries are inedible.
If you do not have a steamed pudding mold on the shelf, you can use a 6-cup mixing bowl. For the minis, little metal pudding molds are available online, but you can also use porcelain ramekins in a 3/4-cup size. Note: There is a little leeway in how much you fill the molds. If you use smaller molds for the minis, be sure not to fill beyond 3/4 full. Homemade Marshmallows 3 packets gelatin powder 1/2 C cold water 2 C granulated sugar 1 C agave or light corn syrup 1/4 tsp salt 1 tsp peppermint extract 1/2 tsp vanilla
until it reaches 240 degrees F, or for approximately 5 minutes.
05 Slowly pour the hot sugar syrup into the bloomed gelatin and mix on medium speed. 06 Once combined turn up the speed to high and mix for 10-12 minutes until foamy and glossy.

01 Assemble and measure all of your ingredients. 02 Prepare a 1/4 sheet pan or 9x9 baking dish with plastic wrap or parchment paper, making sure to line the sides as well. Dust with a layer of powdered sugar and set aside until the end. 03 In the bowl of a stand mixer fitted with a whisk attachment, combine gelatin and 1/2 cup cold water and let bloom or dissolve. 04 In a small pot combine sugar, agave and 1/2 C water over medium heat until sugar is dissolved. Bring it to a boil being careful to not let it boil over

07 With one or two minutes left add the flavorings and salt. 08 Using a greased spatula pour the whipped marshmallow batter into your prepared pan. 09 Decorate if you like or dust with powdered sugar and let sit for 2-12 hours. I prefer to let them sit longer. 10 Once they are set fill a container with powdered sugar. Grease a sharp knife and cut your marshmallows into any shape you like then toss in the powdered sugar to keep them from sticking. ENJOY!!

ROAST OF THE TOWN DESPITE THE PANDEMIC, BLAIR COOKE AND HIS WIFE, JULIE, ARE THRIVING AS CO-OWNERS OF ALCHEMY COFFEEHOUSE AND ROASTERY IN WILMETTE. BY BILL MCLEAN ILLUSTRATION BY BARRY BLITT
Before he became a first-time coffeehouse owner in Wilmette 15 years ago, Blair Cooke was a writer. He served a publication as its classical music critic, and his story about Chicago Bears great Walter Payton’s diagnosis of a rare liver disease ran on the front page of the River North News. Cooke also tackled assignments for the late City News Bureau of Chicago, a cooperative news agency founded in 1890 and also known as the City Press. One assignment involved a shooting on the West Side. It also was his final report for a bureau that had hired Kurt Vonnegut in the 1940s. “You’re not going to believe who the nurse tending to the shooting victim was,” Cooke says. “Julie. It was Julie.” Cooke had first met Julie along a Lake Michigan beach, where she’d been collecting shards of washed-ashore glass for a jeweler when Blair and Julie were Rogers Park residents. “The night after I covered the shooting and she took care of the victim, we went on our first date,” Cooke says. Partners—in an ancillary way—in crime. And then Blair and Julie got married in 2002. They’re also wedded as co-owner to Alchemy Coffeehouse & Roastery in Wilmette. Housed on Linden Avenue in a space previously used by a nail salon, the business—known for its whole bean or ground-to-order coffee, as well as its otherworldly scone wheels (dough)—had to pivot from a cashonly, mom-and-pop venture to an online store offering contactless delivery of coffee beans and take ‘n’ bake scone wheels because of the pandemic. Alchemy, the cozy, friendly venue, remains open Friday through Sunday. Alchemy Coffeehouse and Roastery recently teamed with Schaefer’s Wines, Foods & Spirits to provide coffee beans and scone wheels at the beverage landmark in Skokie. The enhanced version of Alchemy now offers coffee bean and scone wheel subscriptions and holiday gift bags. It sold nearly 200 scone wheels during Thanksgiving week. How’s business? Rollin’, apparently. Its top scone flavors are chocolate and cranberry. Alchemy’s most popular coffee choices are Costa Rican and Ethiopian Harrar. “We shut Alchemy down completely for two weeks at the beginning of COVID-19,” Blair Cooke says. “For two weeks I slept 12 to 13 hours every day. It was awesome. But it got to the point where I said,

‘OK, now what should we do?’ I can’t tell you how grateful we’ve been for the support we’ve received from the people in Wilmette throughout this tough time. They’re the coolest people on earth. There’s a lot of love here. Nobody’s greedy; nobody’s pretentious. How can you be preten-
tious when you grow food in your back yard like so many in Wilmette do? “It’s like Mayberry around here, with lots of Opie Taylors running around,” adds the Glenview resident. “The kids in Wilmette are so well-mannered and polite.” As the son of Bennett and Bernice Cooke, Blair grew up in Northbrook and listened to classical music more than any other genre from ages 9 to 13. His father, a native of Glencoe, attended New Trier High School, later traded commodities, and had a knack for transforming ho-hum parties into raucous gatherings with his inimitable joke telling and storytelling. Blair’s mother was into theater and jewelry-making, played the piano and ukulele, danced, and performed as a figure skater. “I ate it up … ate up anything that had to do with the arts, thanks to my mother,” recalls Cooke, a 1984 Glenbrook North High School graduate who majored in theater at Southern Illinois University-Carbondale before transferring to DePaul University and earning a degree in business. “My plan in ’86, after having saved up enough money, was to become an actor in Los Angeles, but I lasted only six months in California; I didn’t enjoy my time there. I discovered that a bunch of lost people live there. I met the wrong people. “You know what I am? I’m a Midwest guy.” W hile running highly

successful painting and gutter companies on the North Shore, Cooke jotted down his personal expenses one day and found out he was spending $60 per month on coffee. The figure jolted him. Shrinking that number became a quest. He then

headed to a used bookstore and purchased a How to Roast Coffee book that was considerably smaller than a coffee-table book. Cooke’s first pot of coffee at home more than met his standards. His mind started to race from there, producing idea “light bulbs” above his head. He was 38. “I was looking for something else to do, careerwise, when I saw that a space had opened in Wilmette,” Cooke says. “I looked at it and immediately thought, ‘Perfect.’ The available space on Linden Avenue looked like an ideal location for a coffeehouse and a bakery.” Cooke was 39 when he and Julie welcomed their first Alchemy Coffeehouse and Roastery customer on June 13, 2005. “Our first 10 years were incredibly difficult, including all the steps we had to take—like the numerous hearings and inspections—before opening,” says Cooke, the father of two sons. “Long hours. It took a lot of energy. But it was all worth it. There’s nothing better than seeing the chance meeting of old friends, smiling and hugging, just outside our store’s door. I also enjoy seeing a line of customers outside our door, especially on a beautiful fall day.” There’s a fun story behind how an Alchemy scone wheel reached you-have-to-taste-this status every winter, spring, summer, and fall.
