In 2016, Ally Page, a student at Lake Forest High School (LFHS), was on vacation with her family in Mexico when she was exposed to dangerous E. coli bacteria from the drinking water. While tourists are often warned about the risks of tap water exposure, the repercussions for the now 17-year-old senior were worse than expected. “I was in the hospital for two weeks with kidney failure,” says Page. “I realized how much we take clean drinking water for granted every day.” The experience is one that influenced her as she joined forces with three other LFHS students—fellow 17-year-old seniors Chase Rupprecht, Dylan Cofer, and Jeremy Hughes—to invent SOLIS, a lightweight, portable water purification bottle. Born out of the Business Incubator program at LFHS, the invention will be introduced to a broader audience on March 11 at the South by Southwest (SXSW) EDU Student Start-Up Pitch Competition in Austin, Texas.

In other respects, establishing the school was a lifetime in the making. Brugioni began her career at the tender age of 3, after her mother and grandmother took her to a live performance of Riverdance—the wildly popular show that introduced Irish dance to American mainstream audiences. “I was immediately hooked,” says Brugioni. “My mom would drive me from Lake Bluff to Des Plaines three days a week. When I was growing up, this was the only place to train, so it was hard for friends to understand. They were playing soccer or ballet or basketball; meanwhile I was going to Irish dance competitions.” Brugioni attended her first competition at age 4; by 10, she qualified for her first World Irish Dancing Championships. She spent the next 8 years competing in the event, taking annual trips to Ireland and Scotland in pursuit of medals (she won two). “I don’t think my mom or family realized how competitive it was,” she says. “When you watch Lord of the Dance, you are watching the performance side. But in the competitive world, it’s individually based. It’s very intense; it’s not a participation trophy sport. Even at age 4, you have to learn very quickly that if you go out on stage and forget your steps, you’re not going to get a medal.” The person who helped her understand the requisite commitment was Tim O’Hare, her lifelong teacher for whom her school is named after. A regional, national, and world champion, O’Hare was a pioneer in bringing Irish dance to the Midwest before its mid-90s explosion in pop culture. “Back then, classes would run out of basements in churches or at gyms in schools,” explains Brugioni. “Tim was a legend in the Irish dance world,

him at her wedding as if it was yesterday. “It was so unexpected,” she says. “I am so thankful that he was there for our opening. He was definitely a tough teacher, but he was kind. We always knew we had to work our butts off in class, but at the end of the day he was a friend to us.” It’s a teaching style that she has adopted and applies tirelessly. O’Hare Irish Dance operates six days a week and has an enrollment of about 100 students. Brugioni currently teaches every class herself—at least for now. She is currently five months pregnant and expecting a daughter. And whether or not her own child shows an interest in Irish dance, she can also expect to grow up learning the same lessons that her mother did in church basements almost two decades ago. “I think the biggest thing Tim taught me, and that I try to teach my students, is that you always have to strive improve yourself,” says Brugioni. “But you can gain confidence in the process. If you are always picking yourself apart and trying to become better, it’s easy to get down on yourself, but he had a way to make you more confident. ROCKIN’ RAMEN FURIOUS SPOON, A TOKYO-STYLE NOODLE FRANCHISE, IS SET UP FOR SUCCESS IN THE NEW YEAR AHEAD BY SHERRY THOMAS THE NORTH SHORE WEEKEND

While Evanston has no shortage of fabulous restaurants, few are more convenient for a “date night” than Furious Spoon, a popular Tokyo-style, “hip-hop ramen” joint. A 2015 Kickstarter campaign famously helped Michelin Star Chef Shin Thompson open the first incarnation of his ramen shop in a Wicker Park storefront nearly five years ago.The Japanese fast casual concept—with counter service and limited seating— was one of several trendy “from-scratch” ramen enterprises that year. Inspired by his grandfather’s ramen business in the port town of Hokkaido, Japan, Thompson’s take on the concept came with a ’90s underground hip-hop music vibe and an eclectic cocktail menu. The name was meant to educate guests on the “culturally proper” way to eat ramen, and that is furiously (slurping so fast that the noodles don’t overcook in the hot broth). And furiously they did consume in those early years, as the Wicker Park location would often sell out of those homemade noodles and have to close early. With guidance from Managing Partner Anshul Mangal, Furious Spoon grew and added several more

city locations—standing out above the rest by evolving with customers’ changing needs and requests. That evolution resulted in some notable upgrades and innovations at its Maple Avenue restaurant in Evanston, as well as the other outposts in the Chicago area. In a clear departure from its modest, counter-style roots, the restaurant has introduced a more traditional, full-service format. However, the new configuration of dining furniture doesn’t take away from the authenticity of the cuisine. The star of the show at Furious Spoon has always been the ramen, using noodles that are house-made with an antique noodle-maker imported from Japan. With creations such as The Mother Clucker Ramen (chicken shio broth, honey-ginger chicken breast, crispy shallots, Thai basil, and lime) and the Shrimp Dynamo Ramen (veggie shoyu broth filled with chili-infused noodles, sweet-chili shrimp, miso, fried green beans, and Fresno chili), it’s hard to know which to choose. We opted for the “classic,” and the most popular ramen dish on the menu—The Furious, with an accent on The. It was easy to see why this has become the go-to. A spicy miso pork broth is loaded with housemade chashu (pork belly), steamed chicken and pork dumplings, crispy shallots, garlic relish, marinated mushrooms, “fury sauce”, and a poached egg. We also indulged in an ambitious tasting of some

appetizers and small bites. How could you not start with the togarashi spiced edamame, a lively take on the Japanese staple with the addition of salt, lime, and a burst of flavor? The second course of apps included the panko-crusted Crab Bomb (lump crab served with scallion aioli); spicy marinated cucumbers; and chicken and pork dumplings, served with a chili ponzu sauce.

While the cocktail menu often shares double billing with those slurp-worthy bowls, we opted for something simpler to wash down such a diverse explosion of flavors—Furious Spoon’s own brew. Given Evanston’s unofficial reputation as the microbrewery capital of the North Shore (we count Temperance, Sketchbook, Smylie Brothers, just to name a few…), the Furious Spoon lager was a refresh-

ing and tasty surprise. It’s made by Empirical Brewery in a Japanese style, which is to say it’s unfiltered for extra body. If this latest evolution is any indication of what Thompson has in store for the next decade, we think Furious Spoon is here to stay. What does confidence look like? Jack Malloy, shooting a basketball while sporting a blank expression. The Lake Forest High School junior guardforward isn’t arrogant, isn’t disinterested, isn’t passionless atop hardwood. The 6-foot-3 Malloy is good, very good, at his craft. Assertive and certain and coolheaded, too. If miens could talk, Malloy’s—while elevating swiftly and assuredly for a shot—would announce, “The ball you see in my hands will hit nothing but twine.” “Jack,” Scouts boys basketball coach Phil LaScala says, “is playing with a lot of confidence. He had struggled with his shot at the beginning of the season, but that was due mostly to his injured ankle. He started to find his rhythm right after Christmas, right about the time all of our guys started to defend well. “I like everything about Jack’s game,” added LaScala, whose club improved to 18-11 with a 2-1 record in five days last week. “He takes the ball to the hole, he’s ready—always ready to shoot—and he’s aggressive. I also like his nose for the ball, the way he goes after rebounds with both hands.” Both hands. Funny he’d mentioned those. And fitting. Malloy deserved rounds of deafening applause for his effort in a tough 56-54 loss to visiting Zion-Benton High School on February 18, in addition to his significant contributions in the Scouts’ pulsating 54-53 overtime defeat of host Libertyville High School three days later. Malloy poured in a game-high 20 points to go with his nine rebounds against the Zee-Bees and followed that up with a 16-point night versus the Wildcats, who had received the No. 4 seed in the Class 4A Prospect Sectional earlier in the week. Lake Forest’s seed, in the same sectional? No. 8. No. 23—Malloy’s jersey number—struck for 11 of LF’s 15 points in the third quarter of the Z-B game, with nine of them coming from three-point real estate. He would finish with four treys. “I worked on my three-point shot a lot in the offseason,” says Malloy, who also tallied 20 against North Suburban Conference leader Stevenson High School in the Scouts’ biggest win to date in the 2019-20 season; that loss was the Patriots’ lone NSC setback through February 24. Fifth-seeded LFHS (26-8) was scheduled to face third-seeded Fremd High School (26-7) in the sectional final February 27. The Scouts defeated Fremd’s Vikings 49-43 in a sectional final at Libertyville High School last winter, en route to their first supersectional berth (Elite Eight) in program history. Former Hoopster LaFasto Shoots for Success at Beacon Place BY BILL MCLEAN ILLUSTRATION BY BARRY BLITT

Barb LaFasto played competitive basketball from eighth grade until the age of 31. Defense was her specialty, her strength. Shutting down, and utterly frustrating, the opposition’s top scorer thrilled her. Shooting? Her teammates jumped and aimed and fired. “I was not an all-around basketball player,” LaFasto, now 60 and a 25-year resident of Lake Forest, recalls. “That’s why I found myself sitting on the bench my freshman year at Western Illinois University. Two weeks in, I left the team and played intramurals.” LaFasto battled and collected countless steals in women’s basketball leagues for many years after college. Defense was still her thing in the fourth quarter of her basketball career. But, on a night in 2012, she resorted to an aggressive, inspired brand of offense off the court at The Silo in Lake Bluff. A table at the restaurant served as the spot where a squad of six selfless folks ordered a pitcher of Blue Moon beer and came up with the blueprint for Beacon Place, a neighborhood community center in Waukegan, with programs for children’s families that focus on academic growth, improved health, and building the skills that allow individuals and families to see their own path to a brighter tomorrow. LaFasto spoke at The Silo. LaFasto listened at The Silo. Perhaps she jotted notes on pizza-stained napkins. LaFasto had become a sitting, full-blown “point guard”—with a scorer’s mentality and dynamic leadership skills. “I’d been helping at a food pantry in Waukegan, and I’d see the same families visit every month,” says LaFasto, one of eight co-founders of Beacon Place. “I, in no way, thought we could end poverty. But my thinking was, ‘We have to do what we can to at least break the cycle of poverty for many in Waukegan.’ An education component had to be a part of Beacon Place’s mission, because I was able to break the cycle of my poverty, through education, when I was young.” LaFasto attended school in Chicago for a few years before moving and enrolling at Irving Crown High School (now Dundee-Crown HS) in Carpentersville. Whip-smart and feisty, she aced class after class without having to do much homework and ended up graduating 10th in her class of 365. Male basketball players, struggling with math at Crown, were able to graduate on time, thanks, in part, to assists from a hoopster/tutor named Barb. “I remember a meeting I had with my guidance counselor, Mr. Finnegan, a funny and easygoing man,” LaFasto says. “He looked at my class rank and knew I belonged in college. We talked about colleges. He helped me apply to colleges. When I got home that day, I told my parents about what Mr. Finnegan and I had discussed in his office. My

mom [the late Evelyn] laughed. Later, my dad [the late Jim] asked me, ‘How do you intend to pay for college?’ ” Jim’s determined daughter paid for college, working the 11 p.m.-7 a.m. weekend shifts at a plastics factory. That same daughter earned a Master of Science in Industrial Relations at Loyola University. LaFasto mentions the name Elizabeth, a Waukegan High School graduate (ranked No. 3 in her class of 1,000) and one of Beacon P lace’s many success stories. She’s a sophomore with a full-ride scholarship at Lake Forest College, majoring in psychology. Beacon Place helped Elizabeth and her parents navigate the oftchoppy waters of the college-application process. LaFasto mentions others from the other end of the academic spectrum, but not by name. Too many, sadly. An alarming 74 percent of high school students in Waukegan are not considered ready for c o l l e ge. Beacon Place vies to shrink that statistic, persistentl y and resolutely. Important components of Beacon Place’s “Grow/ Discover/Succeed” programs—opportunities that have served some 4,000 children and their families since 2012—are food, nutrition, and fitness. A total of 570 children and

adults registered for Beacon Place programs in 2019. Nearly 700 volunteers delivered a combined 10,600 hours of service last year. You can’t dream a brighter future if you don’t begin to change your path today, Beacon Place firmly believes. Another tenet: You can’t learn and change if you’re hungry.

Parental engagement is our secret sauce.

Beacon Place’s executive director from 2016 -2019 and board president (2015-16, 2019), LaFasto teaches a range of subjects at the center these days, including social and emotional classes for sixth- and seventh-graders, and wears more hats at the place than most milliners handle in a fiscal year. She’s helping a boy tackle and appreciate To Kill a Mockingbird—LaFasto’s favorite book and movie. “I treat all kids at Beacon Place as if they were mine,” says LaFasto, the mother of five and a former human resources and compensation management professional at Rust-Oleum, Baxter Healthcare, and Hewitt Associates (she met her future husband, Frank, at Baxter). “But we’re an organization that helps more than children. We’re there to help the family unit, to help parents set the path for their children. We let the parents know the options for their children. The parents and the children have to do the hard work; we’re there to guide them and support them along the way. “Parental engagement,” she adds, “is our secret sauce.” And the fee paid by Beacon Place parents isn’t a fee at all. Twelve mothers, LaFasto reports, gathered recently on a Saturday to clean Beacon Place’s blue house, top to bottom.
