It’s Girl Scout Cookie season, and while the magic of the internet gives us year-round access to cookie-themed swag (Samoa keychain, anyone?), those with a sweet tooth must rely on local councils to order their beloved Do-Si-Dos and Tagalongs. But siblings Katie and James Gildersleeve are spreading the love beyond the borders of their community. The Lake Forest High School students, 15 and 17, respectively, run Treats for Troops—a nonprofit organization that provides local military service members with care packages from local families. On Saturday, February 29 at Starbucks on Sheridan Road in Highwood, they will host a special event to collect and send Girl Scout Cookies to soldiers stationed overseas. The goal is to provide a reminder (and taste) of home at a time and place where they most need comfort. Treats for Troops was born as a personal exchange between the siblings and a single female service member. As a business entrepreneur who has launched numerous ventures in his career, Darin Daniels knows the importance of networking over shared interests. He also knows how hard it can be to find that simpatico in a room, or city, full of strangers. Moving to Winnetka from downtown Chicago with his wife Marcela, Daniels— a mortgage banker with Cherry Creek Mortgage, and a longtime foodie—figured an easy way to meet and connect with others on the North Shore would be to join a dinner club. “But we didn’t just want it to be going to a random restaurant now and then,” says Daniels. “Marcela and I were looking for a group of people who loved food from different cultures, and wanted to socialize, cook, and have fun exploring cuisines through meals cooked by the members. That search came up empty.” So Daniels decided to do something about it. He posted his idea for such a club on the popular social networking website Nextdoor to gauge interest; it garnered enthusiastic responses from dozens of people. “I was surprised,” he says. “First, that something like this didn’t already exist, and secondly, that so many people responded so quickly.” Based on the response, Daniels founded The North Shore Dinner Club. The fledgling club has met twice to hash out guidelines, shape a format, and plan for monthly gatherings. The group’s first official dinner, which will have an Italian theme, will take place on February 29; two more dinners are already planned for March and April. Gathering at Winnetka’s Avli restaurant in January to sip wine, share Greek mezze plates, and get to know each other better, club members were a diverse but like-minded group. “All of us love to talk about food, and love to socialize and entertain,” says Kathy Arthur, a lawyer who moved to Kenilworth from New York this past summer. “And for many of us, the idea of sharing recipes and knowledge around what we’ll be cooking for our gatherings is the added bonus.” “When I read Darin’s first post on Nextdoor,

But with their children heading out of the nest, they no longer have an appreciative group to cook for. “I’m a big foodie with a passion for cooking,” says Wert. “And I’ve always been a believer in family dinners. But my youngest just went to college and it hasn’t made sense since to make big meals. With this club, I’m looking forward to adventuring into different culinary ethnicities. And with such a diverse group, it’s clear
we don’t have to travel far to do that. We can sample world cuisine made by our members, right here on the North Shore.” Ignas, a middle school teacher who operated a short-term micro-business with her son called Pauline’s Tuesday Dinners, is thrilled with the North Shore Dinner Club premise. “Now that I’m the only person home, the idea of being in a dinner club where I can cook for a group of people who are adventurous about food, is really appealing,” she says. “Friendship, companionship, and a beautiful night out connecting with others in my community … I’m really excited about this.” Ruotsalainen, a native of Denmark who Continued on PG 10

(Multiple dinners will be coordinated if membership numbers require it.) “We also plan to do quarterly events, such as wine tastings, scotch tastings, and perhaps chef demos, as an added chance to meet and explore,” says Daniels. “The goal is really to unite the North Shore community in a fun, accessible way,” he concludes. “Everybody knows and has opinions about food. It ’s a common denominator that breaks down barriers and makes it easy to socialize. I’m thrilled that the North Shore Dinner Club fills a void for that here, and am looking forward to where this goes.”

One of my hopes with this is to explore a lot of different cultural cuisines with people who like to do the same thing.” That’s also the hope of Wilmette resident Ashley Palm, a financial analyst for Wolters Kluwer and mom to two young children. Palm, who is of Lebanese descent and will be hosting a dinner for the club with a Middle Eastern theme, says the club will give her an outlet for culinary explorations she can’t normally cook for the family. “I’m already eyeing a few Italian octopus recipes I’d love to make for the upcoming dinner,” she laughs. “Plus, the club is a nice way to meet local people from a wide variety of stages in life who share the same interests.” Members say they are also drawn to the idea of getting to know each other around a table at each other’s homes rather than participating in an informal, potluck sampling at a public venue or restaurant. “I enjoy going to restaurants to try new things, but cooking something allows you to understand a dish better,” says Palm. “I love eating Thai food North Shore Dinner Club: Meghan Richardson, Darin Daniels, Genny Wert. Socials Solti Foundation Awards Dinner Photography by Dan Rest The Solti Foundation U.S. presented its prestigious 2019 Sir Georg Solti Conducting Fellow Award to Yaniv Dinur at a private club in Chicago. With 150 in attendance, guests enjoyed cocktails, followed by a program featuring foundation members and exquisite music before dinner was served. Survival of the Grittiest NEW TRIER GIRLS GYMNASTICS TEAM ADVANCES TO STATE MEET —BRAVELY AND BARELY. BY BILL MCLEAN THE NORTH SHORE WEEKEND
Rachel Zun hunched over slowly and grabbed both of her knees. The New Trier senior gymnast then held that pose for a good 10 seconds. Zun—having fallen on her first vault attempt at the Mundelein Sectional on February 13—had just landed her Tsuk pike vault on her second try. Her knees were fine. Zun’s left ankle? It was barking. Loudly. The Trevian had sustained a pair of partially torn ligaments and a bone bruise while vaulting in a meet on January 9. But those lingering injuries failed to sideline Zun for the final sectional meet of her prep career, and they forced her to wear the world’s biggest and coldest ankle bracelet—a cumbersome bag of ice—after meets. Another agonizing issue concerned Zun moments later, this one having to do with the unknown rather than the I Know I Have a Ravaged Left Wheel. “Are we good? Are we good?” a worried Zun asked NT coach Jen Pistorius, the question referring to NT’s status in the battle to capture the final at-large berth for this weekend’s state meet at Palatine High School. Pistorius looked at her phone and scrolled, scrolled, scrolled. No new news. Her squad’s meet score had not been updated; it reflected only NT’s first three rotations (bars, beam, floor). “Where’s Bill Stone?” the Cornell Universitybound Zun, looking to her right and then to her left, asked somewhat frantically. Stone heads the invaluable website State Gymnastics Stats and is the go-to guy at postseason meets because he usually knows the cutoff-qualifying scores (team, events, all-around) before anybody else does. Where’s New Trier slated to be this weekend? At the state meet, as an at-large entrant by a thinner-than-a-sliver margin of 0.175. NT, with a third-place showing of 143.4 points at the Mundelein Sectional, edged reigning state champion and Glenbard South Sectional qualifier Glenbard West by that gap for the final (fourth) at-large ticket to state. Stone confirmed the good news. “Not our best meet,” Pistorius admitted nearly a year after her 2018-19 crew finished in a programbest-tying second place at state. “We were hoping for 144 points. There’s more pressure here than there is at the state meet. We’re … in. We made it. “The girls,” the coach added, “showed a lot of perseverance. They’ve been working hard all season.” New Trier earned only one automatic individual state berth: senior Maeve Murdock’s fourthplace 9.25 on the balance beam. The 2016-17 state beam champion had entered the sectional last week as the reigning Lake Forest Regional champion in the all-around (37.625). “We made it, barely,” said a relieved Murdock, one of three reliable seniors (with Zun and Avery Faulkner) on the Trevians’ state series team. “I like

this team; I like our up-and-coming gymnasts. “This sport, at times, can be so exhausting, mentally,” she continued. “But you have to zone in for each routine, do your best for the team.” Zun looks to Murdock when her mind is racing at an Indy 500 level or nearing the speed of a blender churning in smoothie mode. “She knows what to say to settle me down,” Zun said gratefully. “So supportive, and Maeve helps me focus and stay grounded. It’s her personality, in general, that makes her such a great teammate.” Freshman Ryann Segall, sophomores Maria Morabito and Sydney Holder, and junior Amelia Montgomery also executed routines for New Trier last week in Mundelein. Montgomery found out afterward that her 9.175 uneven-bars score ranked fifth among at-large state qualifiers in the event. Faulkner (35.95, all-around), Murdock (9.275, vault), and Zun (9.15, bars) also will vie for individual medals at state. The state meet at Palatine High School starts on February 21 and concludes the next day, with the championship finals session in individual events beginning at 2:15 p.m. New Trier’s appearance in the state team competition will be its seventh in the last nine seasons under 24th-year head coach Pistorius.
NOTABLE: New Trier graduate Zoey Spangler (Class of 2019), a member of last year’s state runner-up girls gymnastics team, is a freshman cheerleader at the University of Washington in Seattle. The number of years Spangler cheered at New Trier: 0 … Murdock, on Zun securing a spot on the women’s gymnastics team at Cornell University next year: “So happy for her. She deserved it.” … Carmel Catholic (145.975) and Mundelein High School (145.25) finished 1-2 at the Mundelein Sectional on February 13. Lake Forest High School: At last week’s Mundelein Sectional, injured Scouts junior co-captain Gianna Pasquesi earned a 10—in leadership. “She motivated us before the meet,” Lake Forest High School junior Kristin Fisch said after qualifying automatically for the state meet on vault (9.5, fourth place) and bars (9.275, fifth) and highlighting her squad’s fifth-place showing (140.55 points). “She reminded us to focus on one event at a time. “She made sure we were prepared.” Fisch also advanced with at-large state berths in the all-around (36.55) and on floor exercise (9.15). Sophomore teammates Taylor Cekay and Lindsay Fontana extended their seasons, too; Cekay made it to state as an all-arounder (35.975, at-large) and beam (9.1, at-large) competitor, and Fontana

When Susie Hultquist’s daughter Natalie was just a year old, she did what any naturally curious baby would, and took a lick of peanut butter from her mom’s spoon. Hultquist could have never predicted that the consequences of a seemingly innocent motherdaughter moment would lead her on a lifetime journey. Today, the Deerfield-raised Chicagoan is the founder and CEO of Spokin, a unique lifestyle app designed for people with food allergies. Natalie initially broke out in hives, warranting a trip to the pediatrician. But the doctor dismissed it as an allergy that would pass with age. At the age of three, it was recommended that she try a small taste of peanuts again—an ill-informed suggestion that led to an anaphylactic reaction. “It was late at night and we were scheduled to leave town in the next couple of days,” says Hultquist. “The doctor was asking questions about her breathing, and his advice was to put her in the shower. I later learned that not only was this incorrect —the correct response would be to call 911— but that it actually exacerbates anaphylaxis. As a first-time mother, Hultquist spent a sleepless night beside her child to make sure that she continued breathing. After waiting a nerve-wracking three months for an appointment with an allergist, the doctor confirmed the diagnosis, and the mother was prescribed an EpiPen to administer to her child in the event of a future reaction. “My husband and I learned we had to act quickly,” she said. “It’s imperative to administer as soon as possible, as it’s the only way to stop the reaction.” At the time, Hultquist—who has a bachelor’s in finance from University of Illinois Urbana-Champaign and MBA in accounting and finance from University of Chicago Booth School of Business— was committed to a successful career as a public equity investor. Suddenly she was tasked with additional responsibility of managing her daughter’s condition and ensuring her safety. Schools seemed to lack widespread policies to address food allergies, so Hultquist naturally assumed the role of a vigilant advocate. “It’s an emotionally taxing disease, and I was concerned about both Natalie’s physical and emotional well-being,” says Hultquist. “We were often the people establishing the guidelines and educating teachers. We tried to handle it with a really kind touch; you can do it in a way that’s balanced and reasonable.” Prioritizing the health of her child was a no-brainer, but that doesn’t mean it wasn’t a challenge. Hultquist recounts a story about the day a former coworker was selling Girl Scout Cookies in her office. Before she could agree to order, she spent 15 minutes studying everything about Thin Mints to make sure they were a safe choice. “The real-time issue was that there isn’t enough

info on the box and the ingredients,” she says. “Beyond that, it’s checking the facility information on the company website (since it’s often not listed on the package), and then the added step of checking if others had tried it, and if they had a good experience in real life or not.”
She realized that others were probably doing the same thing every day to research and accommodate their (or their family members’) conditions—and the cumulative sum of hours spent was an inefficient use of time. This became the catalyst for developing Spokin. The app streamlines the process by providing news, resources, and access to verified food brands, all tailored to your own specific dietary restrictions. There is also a social aspect that allows users to connect and share reviews and recommendations for restaurants, products, and places that cater to people with allergies. Between leaving her finance career in mid-2015 a n d Spokin’s official launch in 2018,

Hultquist studied dating apps in earnest (she is a happily married mother of three) to better understand “the art of matching and finding your people.” “The thing is, I felt it was invaluable to connect with other parents who’ve been there before me,” she says. “There are 32 million people with food allergies; let’s put them in one place. I wanted to create something where people could come together with the sheer purpose of wanting to help one another. “And there are different learning curves,” she adds. “When a child is first diagnosed, they are typically very young. I’d ask, ‘What foods are safe for my child? How can we eat in restaurants? How can I leave her in other people’s care?’ Now that Natalie is 16, it’s a whole new ball game. You think about all new situations to navigate, and all the things she has to do on her own: going to Cubs games or Lollapalooza with friends. You will exhaust yourself for your children, and then there is this critical moment when you realize that they eventually have to take care of themselves.” As it enters its second year, Spokin’s popularity continues to surge. The app saw 70 percent growth in registration in 2019, and there are currently 50,000 user generated reviews in 79 countries. (A search for North Shore restaurants that cater to food allergies turned up dozens of results.) Hultquist is aiming high, ramping up partnerships in 2020 and and keeping an eye on global expansion. But regardless of user numbers, she is satisfied knowing that her efforts have at least helped one person: Natalie. “An app doesn’t take away from the fact that she has to advocate for herself ” she says. But as a mother, it gives great comfort to know that her daughter has a tool to help make informed decisions. “In a situation that is otherwise a minefield, or can be socially isolating, I want her to feel empowered.” THE NORTH SHORE WEEKEND
