Chatting with North Shore residents Kristen Rajewski and Alex Delger is a breath of fresh air. The two friends, who recently launched a start-up health and fitness business, 2 Clean Chicks, share a passion for all things related to health and wellness and want to share their expertise with others. “2020 was, needless to say, a challenge for everyone and many found themselves having to take on more responsibilities—like remote learning,” says Rajewski, a Glencoe mom of two young children. “It’s OK that for many they had to let self-care slide, but the best way to ensure a successful 2021 is to prioritize our health and wellness. And 2 Clean Chicks is a road map to do just that—we hold your hand every step of the way.” What exactly is 2 Clean Chicks? It’s the equivalent of embarking on a new clean eating and fitness regime for a specified amount of time (usually four weeks) with two bubbly, knowledgeable and encouraging leaders and a whole community sharing the experience with you. and while not a new concept, what sets 2 Clean Chicks apart are the unique ways in which they are providing participants with the tools to ensure lasting success. After participating in, and leading, these types of challenges for the past six years, Rajewski and Delger launched 2 Clean Chicks last fall to much success. “A week before the challenge starts, we send a Challenge Guide to each participant which includes an enhanced meal plan with recipes and nutrition information,” says Delger. “It’s also important to identify what foods are causing inflammation in the body, so inflammatory foods like, soy, gluten, dairy, refined sugar, and processed foods are eliminated for the four-week challenge. After that, participants can reintroduce them slowly one at a time, noticing if they have an affect on how they feel.” Knowing how difficult it can be for participants to change their eating habits, 2 Clean Chicks is collaborating with local chef, Jamie Bisioulis. A specialist in cooking with dietary restrictions—including paleo, Bisioulis posts a weekly meal plan to the group’s private Facebook page (for breakfast, lunch and dinner items) that participants can choose to order in from for those days when they’re too busy to cook themselves. Ensuring success after the program ends, Bisioulis also hosts live cooking classes on Zoom, and has created video cooking tips for clean eating, which is also posted to the group’s private Facebook page. “Many participants tell us that not only are they feeling better than they have in years, with their skin clearing up, their sleep undisturbed, but they are also eating more than they have before,” says Rajewksi. “Many people start off the new year looking to lose weight, and that is the case with many of our participants, dropping over 10 pounds over the course of four weeks. We encourage eating real whole foods and balanced meals.” Rajewski and Delger started their fitness careers in boutique studios, guiding clients through specific exercises to achieve maximum results. As American Council on Exercise-certified fitness instructors, they know that healthy eating and exercise go hand in hand to achieve the healthiest version of yourself. Each week they post online a variety of types and lengths of fitness videos, from barre to HIIT to yoga, for participants to do on their own at home (for all ability levels). “We are making it easy, and enjoyable, for participants to carve out a time for themselves to work up a sweat, no matter how much time they have to dedicate to a workout that day,” explains Delger. The first thing you notice about both women is how warm and welcoming they are—unlike the intimidating kind of coaches that can stop one in their tracks from even attempting to start a new health routine. Their accessibility and knowledge is easily felt via the online community of participants that they have created on a private Facebook page. Which, in part, explains why they have participants from the North Shore to Colorado, California and Texas joining their challenges. The online community lends support and expertise to participants. Want to know how to get past that 3 p.m. chocolate craving? Need motivation for a workout? That’s where

Participants are encouraged to post daily to the group’s private Facebook page and share how they’ve moved that day and what they’ve eaten. “It’s an accountability check-in,” says Rajewski, “and also allows us to look at your meals and see what’s missing if you’re not

feeling great. For example, if a participant wasn’t feeling their best one day, we could look and see they only ate a salad and did a 60-minute HIIT class. We would then be able to suggest they add in a healthy carbohydrate, like a sweet potato.” While they will be running challenges multiple times throughout 2021, their first one is slated to kick off on January 11.

BANANA PUDDING WITH HOMEMADE VANILLA WAFERS METHOD Make cookies: Place the oven rack in the center position. Preheat to 350 degrees. Set eggs on your clean kitchen work surface for 30 minutes to come to room temperature. Separate the yolks from the egg whites into two small bowls. Set the bowl of egg whites aside. Cover bowl of yolks and refrigerate until you are ready to make the pudding. In the bowl of a stand mixer, with the whisk attachment, whip the butter with the powdered sugar. You’ll have to scrape the sides of the bowl several times—it takes a while for the sugar to blend with the butter. Once sugar and butter mixture is very smooth, gradually add the egg whites, scraping the sides of the bowl as needed. Continue whisking until smooth again. Add the remaining whole egg; whisk to incorporate. Whisk in vanilla. Sift flour and salt into the mixer bowl and on low speed, whisk again until just combined. Dough will be quite soft. Spoon into a pastry piping bag or into a large plastic bag. Spread a baking sheet with parchment paper. If using a large plastic bag, snip off a tiny corner of the bag to create a piping opening. Dot nickle-sized drops of the batter (each “dot” will stand about ½ inch tall) onto the parchment, leaving at least an inch and a half between each to allow them to spread. It’s OK if there’s a little peak on the top of the raw cookies from the piping—it’ll smooth out as they flatten and bake. Bake in oven for 13 to 15 minutes until golden brown. Note: Any undetected bits of unwhipped butter or egg white in the batter will bubble up and mess up the cookie. It’s impossible to avoid having a few of these. Since the recipe makes so many cookies, I just chalk the ones that bubble up to loss.

RECIPE AND PHOTOGRAPHY BY MONICA KASS ROGERS This is comfort, pure and simple. Smooth and creamy vanilla pudding, fresh sliced bananas, crisp little vanilla wafers, and a dollop of whipped cream. Perfection. When I was little, we used to put store-bought vanilla wafers into the warm pudding, letting them soften as the pudding chilled. But making the cute little cookies from scratch is easy, and I like the crunch they add served whole as a garnish, and, crushed into crumbs to sprinkle on top. This recipe makes four individual servings of the banana pudding—but 80 or more of the quarter-sized vanilla wafers. They’re great for dunking in coffee or tea—you’ll be happy to have them on hand.

INGREDIENTS For the Vanilla Wafers (Recipe makes 80 quarter-sized wafers) 1 stick (1/4 cup) softened, unsalted butter 1 2/3 cups confectioners sugar 3 large eggs, separated ( You will use the whites of the eggs for the vanilla wafers, and save the yolks to make the vanilla pudding) 1 large egg, whole 3 tsp vanilla extract 1 1/3 cups all-purpose flour, sifted ½ tsp salt

For the Vanilla Pudding (Recipe makes four servings) 2 ¾ cups whole milk ½ cup pure cane sugar Pinch of salt ¼ cup cornstarch 3 large egg yolks (Use those you reserved from making the vanilla wafers) 2 Tbsp ice-cold salted butter 2 Tbsp pure vanilla extract To finish: 2 whole bananas, ½ sliced banana per person 1 cup whipped cream

Make Vanilla Pudding: In a heavy saucepan over medium-low heat, warm 2 ½ cups of the milk with the sugar and salt until bubbles form around the edge of the pot. Continue heating, stirring to ensure the sugar has dissolved. Place the remaining ¼ cup of milk in a medium-sized bowl and add the cornstarch, stirring until smooth. Whisk the three reserved egg yolks into the milk-cornstarch mixture until smooth. Using a ¼ cup measure, dip and slowly pour some of the hot sugar-milk into the egg-cornstarch mixture, stirring to incorporate. Repeat with another ¼ cup of the hot milk. Now, pour all of the egg-cornstarch-milk mixture into the hot-milk pot and whisk constantly, cooking over medium-low heat until the pudding thickens well and begins to bubble up. Remove from heat. Stir in the butter and vanilla. Pour pudding into a bowl; press a sheet of plastic wrap down into the pudding and refrigerate until cold—about three hours. Assemble: Slice half of a banana into each of four glass bowls or parfait cups. Layer cold vanilla pudding over each. Top each pudding with a dollop of whipped cream. With a rolling pin, crush a handful of vanilla wafers into crumbs. Sprinkle cookie crumbs over each serving; garnish with a few vanilla wafers inserted into the top of each pudding. Serve immediately.

Early in their courtship, nearly 30 years ago, Carrie and Tom Buchwald took a Chicago Architecture River Cruise. While traversing all three branches of the Chicago River, they passed more than 40 notable structures. And learned a thing or 40. Carrie looked up often during the date. The city’s striking, awe-inspiring skyline features towering buildings, some standing even taller than Tom’s 6-foot-6 frame. Carrie Buchwald has been focusing straight ahead—and from terra firma—these days, steering the Waukegan-based neighborhood community center Beacon Place as its board chair and serving as senior vice president of the Lake Forest Center for Leadership at Lake Forest Graduate School of Management (LFGSM). “Two special organizations,” says the 58-year-old Buchwald, a Lincolnshire resident and mother of two (Ben, 24, and Emily, 18) with husband Tom. “It’s been a ball for me, working with the corporate education team at the graduate school and providing solutions and leadership development for businesses. I was so lucky to have received the opportunity, and then, a year in, to be able to start my pursuit of an MBA degree at the school. As for a place like Beacon Place, it’s more vital than ever today, given its commitment to support families in need and the educational and economic challenges associated with the pandemic. So much about Beacon Place is about getting kids to believe in the possibilities of tomorrow. “Both organizations,” she adds, “are making the world a better place.” In early December, Beacon Place made southeast Waukegan a brighter place—at night. Under the direction of new Beacon Place Executive Director Joshua Fulcher, a festive force of 200 volunteers lined sidewalks with 7,500 luminarias. The blinding message of the “Sharing Light, Sharing Hope” event: Count on Beacon Place to maintain its presence, warmth, and optimism. Established in 2012 by a group of inspired, bighearted folks in Lake County, Beacon Place offers programs for children and families that focus on academic growth, improved health, and building the skills that allow individuals and families to see their own path to brighter days. “Beacon Place has been a life-changer for many,” Buchwald says. “It has helped people reach their full potential. The education component drew me to the support agency; I’ve always been into education. But what really impressed me about the organization is how Beacon Place gets families involved. It’s not a drop-off place. The parents’ commitment motivates their children, with every family member learning and growing from each experience.” Beacon Place’s three-pronged response to COVID-19 for families in need last year began with its food support, as it provided grocery bags of food and essentials. Since March, 100,000 pounds of fresh meat/poultry, milk products, and vegetables have been distributed. Its stay-at-home survival kits included games, crafts, and parenting guides and resources to help families mitigate the

harmful effects of isolation. And Beacon Place produced between 80 to 100 academic packets, ensuring students wouldn’t fall behind while learning remotely and that their minds would be stimulated regularly. “Joshua and his team put a lot of thought into customizing and creating a packet for each child, knowing our physical building in Waukegan had to be off-limits to the children we were serving,” Buchwald says. “You had targeted lesson plans in each packet, along with fun things. It’s been documented that losses in grade-schoollevel learning during the pandemic is more amplified in communities with economic challenges. That’s one of the reasons Beacon Place has an intense focus on gap-filling in education. Doing so builds a student’s confidence. Joshua hopes, as do all of us, that we’ll be able to introduce business leaders to students on-site as part of our new mentorship program in 2021. “One more arrow in the quiver for our students,” she adds. Among the aims, meanwhile, of the Lake Forest Center for Leadership at LFGSM is to develop real-world leadership through fully customized, end-to-end, blended solutions. It relies on proven business leaders, not professors, to “give the outside perspective from the inside.” An integral component of the center’s mission advises business leaders to liberate their employees rather than empower them. “Our team at the school, it’s the best, and it’s one that cares about service and clients,” says Buchwald, who worked as a regional vice president for the human resource consulting firm Robert Half International and was a board member and engagement director for the Healthcare Businesswomen’s Association. “It has such an entrepreneurial spirit.” While attending the Academy of the Holy Names in Tampa, Florida, Buchwald—a Girl Scout who achieved First Class status in

the youth organization—worked as a switchboard operator for the nuns at the college preparatory high school for young women. Opportunities to camp or to canoe or to hike or to engage in any outdoor activity thrilled the daughter of Richard and Lela. The adventurous Buchwald can’t wait to watch the pandemic fade in the rearview mirror and resume her cherished pastime of traveling. “I liked to try new things when I was young,” recalls Buchwald,

a self-described “leadership junkie” who volunteered for nearly 10 years at CauseHealth in Waukegan. “I still like to try new things. I’m never bored, and I never will be, as long as I’m surrounded by wonderful people at Beacon Place and the Lake Forest Center for Leadership. It’s a privilege to be affiliated with both organizations.” She earned a degree in business, with a concentration in finance, at the University of Notre Dame. Her late father, an architect who enjoyed painting in retirement, was a huge fan of the Irish. Nobody, not even the school’s Leprechaun mascot, wanted Notre Dame teams to win more than Richard did. Daughter Carrie continues to appreciate the sense of community she saw and felt each semester at the South Bend college. “It was life-changing for me, studying there and experiencing the many aspects of campus life,” Buchwald says. “Once you’re in that type of community, where you’re connecting with people whose values you share, it’ll be a part of you forever.” A hungry boy consumes a nourishing Beacon Place meal, allowing him to concentrate and devour the details in a book he has to read for a school assignment. Boy later aces a test. Boy’s interest in the subject grows. Boy’s confidence soars. Hope lifts the boy higher. Beacon Place becomes a part of the boy. Forever.
