COUNTRY VS. TOWN ALEX SANTAU was born in Romania and grew up in Munich, Germany, before moving to the United States in 1996. This mother of two daughters—Victoria (6) and Emilia (4)—works as a Director of Academic

Excellence at the Institute of Food Technologists, the professional association for everything food science. Along the way to her current position, Santau has built an impressive resume—from studying microbiology at University of Illinois Urbana-Champaign and molecular biology at Purdue University, to earning a PhD in science education from the University of Miami and working as a professor of science education at Duquesne University in Pittsburgh, Pennsylvania, for nine years. “In my work, I’m passionate about bringing science to all and making it about understanding the world around us rather than memorizing facts,” she says. When she isn’t working, Santau enjoys spending time outdoors with her husband, Chris, their daughters, and their dog, Ali Baba. “I’m passionate about inspiring our girls to be authentic, kind, and thoughtful. We are a multicultural family, and we place high value on education. I’d love to see more of the world and expose our kids to many cultures and languages.” Although Santau has had to put travel plans on the back burner during the pandemic, she has stayed busy taking classes on cooking and wine, and is working on that perfect pepper steak she learned to cook from Wolfgang Puck’s Master Class. riends of Prentice (FOP), a nonprofit organization working in partnership with Northwestern Medicine Prentice Women’s Hospital to fund innovative and leading-edge research benefitting the lives of women, raised nearly $600,000 at its annual fundraising benefit on Saturday, October 24. Themed Still Together, At Home, this is the first year that the gala was held virtually. Close to 1,000 guests tuned in from the comfort of their own homes. Mike Borders, Friends of Prentice Board President, along with Executive Director Kristen Field, co-hosted the event.

“To say this was a big undertaking would be stating it mildly,” says Field, who joined FOP a year ago and now leads its board of 50. “But in this time of COVID-19, there is this desire of people to want to feel more connected.

People don’t want to be standing on the sidelines if there is a way they can make a difference. We often surprise ourselves of what we’re capable of during challenging times.”

Since 1983, FOP has raised over $20 million and awarded grants to more than 100 researchers and clinical programs. FOP’s annual grants initiative has funded projects in the areas of COVID-19 research, gynecologic oncology, mental health, heart disease, disparities in access to care, diabetes, HIV, uterine and pelvic medicine, genetic biomarker research, home health care outreach, and more. Funds raised during the gala go directly to research, education, and patient care programs at Prentice.

This year’s gala featured one-of-a-kind online auctions, music from DJ Megan Taylor and The Dr. Bombay band, as well as a cocktail hour led by twotime James Beard award-winner and mixologist Belinda

I’ve been reflecting on this a lot lately and the sacrifices our health care providers make day in and day out. We may never be able to truly thank them for all they do, but we can sure try.

Emmyaward winning television host Val Warner served as emcee for the event that encouraged guests to “come together” virtually to honor the health care community while raising critical funds for medical research. In addition, the frontline health heroes, clinicians, and physicians who have received grants from Friends of Prentice shared highlights of their research and the positive impact the funding has had on the research conducted within their respective areas of women’s health.

“If there was a silver lining from us having to make our gala a virtual event, it’s that it made it accessible to anyone who wanted to be a part of it and see what we were up to,” says Field, who explains the board made the decision to make the virtual ticket price free. “The FOP reach is great—so many people have a story and feel connected to our mission of providing crucial funds to clinicians and researchers who are shaping the future of women’s health care.”

When planning for the gala began, Field put a stake in the ground and said the board would strive to raise what they had in past years. “Fundraising isn’t fixed—it’s always evolving,” Field says. “We knew with this being the first virtual gala, it was going to be the best one we ever had. At this dark time, we wanted this event to be a light and really bring our community together.”

While Field is new to FOP, her roots in nonprofits and health care are deep. “My father and grandfather were both doctors and my mother was a nurse,” she says.

“Although I didn’t go to medical school, I speak the language of ‘medicine’ and appreciate the importance for great health care and the need to celebrate our health care heroes. I’ve been reflecting on this a lot lately and the sacrifices our health care providers make day in and day out. We may never be able to truly thank them for all they do, but we can sure try.”

OH, TANNENBAUM Forget everything you’ve heard about waiting until after Thanksgiving to put up that tree. Leslie Bowman and her interior design team at The Design Bar in Burr Ridge are reinventing the concept and extending it before and after the holiday season.

A

s early as the Roman winter solstice of Saturnalia, the darkest time of the year was celebrated with light, festivals, and boughs of evergreen. The Christmas tree, dating to 16th century Germany, has been a Christian tradition for centuries— one that has been adopted by the masses as the holiday evolved into the 21st century.

Along with that evolution came “rules” about when it was socially acceptable to put up the tree, how it should be decorated, and when you should take it down. But according to Leslie Bowman, owner and founder of The Design Bar in Burr Ridge, those mandates are about as outdated as the one that banned wearing white after Labor Day. “What we’ve been doing for the last two years with trees in the store is making them transition from fall to winter,” says

Bowman, explaining that people stopped following those tree rules a long time ago and that many put up their tree well before Thanksgiving. “A fall tree for Thanksgiving can morph into a tree for Christmas just by taking certain ornaments on and off and changing the décor.”

While a tree is not mandatory for holiday décor, it can be the centerpiece and the starting point to transform your home from dark winter blah to a dazzling wonderland.

“Thanksgiving is so late this year that if you wait until after Thanksgiving to put up your tree, it’s only going to be there for three weeks,” she says. “We’ve been giving demonstrations at the store since October for ways to give your tree a one-of-kind look.”

If you’ve seen the trees at The Design Bar, you may have noticed the secret to Bowman’s Christmas tree success—layering.

“You have to start in the middle with a tree,” she explains.

“They’re not traveling and not going out, so this is a time to make your house feel extra special.”

Tablescapes with elements of varying heights and textures decorated trees look a little bit different because we add the ornaments in layers from the center of the tree moving out.”

Bowman is also not afraid to defy the rules about what belongs on a tree.

“I try to think outside the box and put unusual items trees,” she says, adding that she will have at least two different themed trees in her own home this year. “I like things that are not your typical ornament. For example, we have some big wooden chains layered on a coffee table in the store … I put that on my tree.”

When decorating a tree in the store, she and her team take some of the largest ornaments, often as big as eight inches, and literally stuff them into the center of the tree that is most often neglected. From the center, elements are layered in, whether they be flowers or garland or ribbon or strings of lights.

Bowman says her most important word of advice when contemplating holiday décor is to remember that not everything has to match.

“That’s the magic of the holidays,” she adds. “We often have people who have Christmas trees that have sentimental value and oftentimes we have a pretty Christmas tree that’s all glammy, but we also want a family Christmas tree.”

The good news? You can have both and do them both well.

“Layering is key,” Bowman explains. “Not everything has to be over the top holiday. You can have anything you want as long as you’re doing it in a way that coordinates. The important thing is not to be stuck in a corner with one theme or another.”

One of Bowman’s favorite trees in the store right now has unusually long branches where ornaments can be hung and suspended as if in mid-air. There is even a tree in the store that stays up year-round. “We call it the dead tree and it’s literally just a twig tree that’s pretty to hang things on, regardless of what season it may be.”

Bowman says in addition to the two main trees in her home,

she will likely also have a series of smaller trees in her foyer or on a console table—just for the ambient lighting and atmosphere.

“Since it’s so dark this time of year, the lights of Christmas décor can make our homes really pretty,” she adds. “Given what we’ve been dealing with in 2020 with the pandemic, I think people are really looking forward to the holidays. They’re not traveling and not going out, so this is a time to make your house feel extra special.”

GLAM IT UP This may be a year we all want to forget but that’s even more reason to make Christmas 2020 one to remember. Leslie Bowman and her team at The Design Bar offer these five tips and trends to watch for.

LIGHT BRIGHT Bowman says many artificial trees this year might come pre-lit but that doesn’t mean you can’t layer in another type of light. “I’m seeing more trees with two different sized bulbs to create different looks,” she explains.

“There are the larger, round, more old-fashioned bulbs as well as little LED light-up bulbs.” Something that is simplifying the art of holiday lighting are the abundance of battery-operated options. “So many things we have in the store now run on batteries and are operated on timers,” Bowman adds. “That’s kind of nice because you don’t have to run around and turn them off. We also have these beautiful snow globes that light up so it’s nice to be able to put them in places where you don’t have light or an outlet.” Another trend to watch for are lightup garlands and the use of non-traditional lighting to bring the Christmas tree to life.

COLOR UP When it comes to colored lighting, Bowman says all trend reports point to a white Christmas. “I don’t see colored tree lights much anymore,” she says. “Colored lights are not as in as the white lights.” But that doesn’t mean color can’t be a part of your décor. One thing she’s noticing is that the traditional Christmas green is being updated by younger generations into something more organic and modern. “I’m seeing a lot of this really pretty green that’s more chartreuse.” Browns and bronzes are also back in a big way. At The Design Bar in Burr Ridge, she even has a tree that is decorated in hues of blush pink and burgundy. One new tool for adding color to a tree or any holiday vignette is the pick that is used in floral arrangements. It can be used for holding ornaments or even a simple spray of holly leaves. Giant flowers are another way to add a pop of color, but her favorite discovery of the season are Chinese lantern flowers in velvet and gold—the perfect complement to any tree or tablescape.

DECK THE ORNAMENTS Everyone has at least one container of tried and true holiday ornaments. Some were inherited with beloved family memories; others made by children. To make a tree more cohesive, Bowman says the key with ornaments is to mix and match. She recommends layering ornaments of various sizes, textures, and materials. “The teardrop shape is very in right now,” she says. “If you like a more glammy tree look, be sure to layer the crystal in with more organic pieces like wood and organize it so it’s

TABLESCAPES & MANTELS (OH MY) The tree is an essential piece of the holiday décor but it’s not everything. Equally important are mantels (if you have them) or the tablescapes you create throughout your home. “When it comes to tablescapes and mantels, you have to make sure you have varying heights of items, along with different textures as well,” says Bowman.

“You want to use layers with texture and then mix in some smooth ornaments.” When it comes to tablescapes, the sky’s the limit. One fun thing Bowman and her team have been doing is using wallpaper as the base for tablescapes and other holiday arrangements. “Instead of using an actual table runner, this creates a different feel.

You then lay items on top of that; just make sure they don’t get too high.”

HOLIDAY SCENT-SATIONS Nothing sets the mood like the smell of a Christmas tree, campfire, or even freshly baked cookies warming the kitchen on a cold winter’s day. Bowman says holiday scents are an essential finishing touch to your home décor, whether it’s a beautiful holiday candle or one of the new diffusers available at her boutique. “Some of the diffusers have porcelain flowers,” she explains. “It’s not like a candle where you have to burn it. It’s just a really pretty décor item that accents your coffee table.” Another way to bring fresh scents into your home during this time of year is a natural wreath or evergreen boughs for the mantel. It gives you the smell of a real tree without the mess.

THE ADIRONDACKS ON ANALOG

When the whole world was first forced to social distance, it ironically resulted in more connection than ever—digital connection, that is. So in an effort to shed light on the true meaning of social distancing, we visited the far-flung fringes of the Adirondacks in Upstate New York to unplug during a weekend retreat in the middle of nowhere.

e were just under an hour away from our destination when our phone service officially cut out. Not like “oh, I have only two bars available” but like calls-can-no-longer-be-completed, Google-Maps-app- won’t-load kind of cut out (luckily, thanks to being told that this would happen, we came prepared with printed directions). We were on Route 28, the east-to-west state highway that cuts through New York’s North County—and, in our case, the section that slices through the Adirondack Mountains’ Sargent Pond Wild Forest past lake after lake, then south toward Little Moose Mountain Wilderness en route to our final destination: A resort housed in a historic multi-building Great Camp property set in Long Lake, New York.

Despite the lack of cell service, the level of remoteness still

didn’t really hit me until our car took its final turn off Route 28 and ambled south, down the long, winding dirt road for our final five miles. The closest “major” city was more than an hour’s drive away in Tupper Lake, which is actually more of a village with a population of 3,600 and likely more miles of snowmobile trails than actual roads. Later, I learned that the tagline for the 1,000-acre retreat where we were staying— which was formerly owned by Teddy Roosevelt’s Lieutenant Governor of New York, Timothy Woodruff, from 1898 into the early 1900s—is “Stay Where the World Can’t Find You.” Indeed, there really is no better place to disconnect from tech than in the Adirondacks, a six-million-acre forested wilderness packed with pristine waterways, boreal forests, and the Northeast’s 46 famous 4,000-foot peaks. My basecamp for the weekend: Lake Kora, Woodruff’s historic Great Camp shrouded in pines and set on the northeastern edge of

a private 500-acre lake of the same name, roughly 70 miles south of the Adirondack Regional Airport in Saranac Lake (one of the communities that Cape Air serves). My fellow tech-free travel companions: My partner, Trent, and our 2-year-old Australian Shepherd, Rocko (yes, Cape Air offers dog-friendly flights).

Despite it being late, close to 10 p.m. when we arrived on Friday night, we were immediately greeted by the sound of a golf-cart pulling up behind us at the Main Lodge, piloted by the manager of Lake Kora, the sneaker- and smile-clad Cameron Karger. After a quick check-in inside the incredibly maintained stone structure, once the blacksmith’s workshop and today a welcoming main lobby, we hopped back into our car to follow Karger in his cart about 30 seconds down the pebble road to two waterfront cottages with sprawling grass fields on either side. Simply known as Cottage 1 and 2 (and the special dog-friendly accommodations), Cottage 1 was to be our home for the weekend. There are six additional stone and timber cottages dotted along the waterfront, which in totality offer 12 authentic guest rooms, all with original furnishings and fixtures carved more than a century ago by Lake Kora’s own on-site craftsmen. Think majestic stone hearths laid with firewood, spacious wood-walled bathrooms with vintage soaking tubs, soft fluffy robes, and bed linens along with various seating and dining areas. In our cottage, we even had a full kitchen and living room where classic, well-

loved board games were stacked atop the dated television that looked, very purposely, unused.

And at this time in late June, it wasn’t just this two-story cottage that was all ours, but the storied Great Camp in its entirety. The property, which is only available to book entirely for groups of up to 25 guests, wasn’t to reopen for its July-through-October season for another week, so it really exclusively was “our home away from home for the weekend,” as Karger put it while helping us with our bags and showing us around the cottage. Our dog seemed to understand it, too: Before we could even open a single suitcase, a big splash

echoed from the shore. He was already neck-deep in the lake, relishing a nighttime dip.

As for us, we were treated to a three-course meal handdelivered from the property’s farm-to-table kitchen, including a salad that had the freshest mozzarella I had ever tasted and a dish of deliciously seasoned, seared chicken breast over a creamy, flavorful risotto. Dessert came in the form of a candied basil-adorned chocolate tart and a bottle of pinot noir hand-selected by Karger from the stone cellar. After dining, what would have usually been a night spent scrolling through our social media while Netflix rotated through shows in the background instead evolved into a wine-fueled game of Yahtzee. And once we did head to bed around midnight, I swear, I’ve never fallen asleep faster ... and I didn’t even pack my trusty white-noise machine. The artificial nature sounds I usually play on loop were, to my delight, performing live just outside our wide-open windows.

That’s exactly how we woke up on Saturday morning, too.

Birds chirping, water splish-splashing, and one very eager dog crying at the door. After a breakfast of coffee, thick-cut French toast, and fresh-picked blueberries in the Great Room, the main dining room home to a family-style 20-foot dining table, we were ready to have ourselves a day. But where to begin? We had no agenda, no schedule, nowhere to be, or people to see. It felt strangely freeing—but that was precisely the goal.

So we just started exploring. A short walk from our cottage, the sprawling building known as “The Playhouse” houses an all-wooden bowling alley, a squash court, ping pong tables, and a full commercial kitchen. Elsewhere on the walkable property, there’s a tennis court, a two-story spa (in what was formerly the Ice and Meat House), an outdoor roller rink, and a boathouse right on the water where you can take your pick of sailboats, canoes, motorboats, and various other pleasure crafts to enjoy on the water. In the middle of the lake, a whimsical, two-bedroom house sits on a small island, what I imagined

to be the perfect retreat for honeymooners or perhaps a writer looking to knock out a few pages.

It was all very reminiscent of the days when the camp was owned by Woodruff, where gondolas imported from Venice plied the lake, semi-tamed bears resided near the cabins and posed in group photos, and telephone service was installed as early as 1903.

After a morning spent exploring the various buildings, we were eager to get out in the natural setting that inspired these Adirondack-style structures themselves. While the Adirondacks are known for some of the most breathtaking mountains and ribbons upon ribbons of hiking trails, because Lake Kora is already so deep in the wilds, you don’t need to stray far to find a hiking trail and scenic overlook. In fact, miles of wellmaintained walking paths traverse the grounds, including one that encircles the main lake and one that leads past winding brooks, towering pines, and across a wide meadow up to Green Top Hill, the highest point on the property. Our afternoon was spent hiking around the property, in which we allowed our dog to navigate and select our every twist and turn.

Getting “lost” here was easy and enjoyable, not only because it all somehow feels as safe as home, but because ultimately, the trail always leads back to the water. This was confirmed each time our fearless and furry leader circled back to his pack, soaking wet from a fresh dip in the lake just ahead. As we strolled, we marveled not just at the panoramic lake views but at the 3,750-foot Blue Mountain that, from where we stood at the peak of Green Top Hill, rose above the other surrounding ranges about 25 miles away to our northeast. But we also slowed our walk to coo at the many bunnies that crossed our path or take in the various scattered hollowed-out logs filled with succulent gardens that looked like something out of a fairy tale.

“How epic would a family reunion here be?” Trent stated more than a few times as we walked. And when we came across the breathtaking chapel on-site, the brick exterior decorated in colorful climbing vines, we thought, “Destination wedding? Our whole family is from New York, after all ... ” We woke up to a rainy last day, which was somehow an entirely different kind of beautiful to experience: The lake rippled in dark shades of navy, making me take even more notice of the towering evergreens lining the lake’s edge. “Did you get that on video?” he yelled. “With what phone?”

I replied.

We both laughed. It would only be a few more hours until we were back home and able to—albeit reluctantly—turn our phones back on, at which point we would assess their battery life and have to comb the corners of our condo for the appropriate charger. But as for our “mental” batteries, I wasn’t worried about those in the least. I knew they were already fully recharged.

I

t was five years ago when Kerry Aiyash’s life changed forever.

A longtime entrepreneur in the Western Suburbs, Aiyash found herself dealing with severe jaw issues that not only left her in an incredible amount of pain, but also with an unexpected increase in prescription medications. In desperation, the successful retailer and restaurant owner started researching alternatives for easing her medical symptoms. tress and anxiety are common among our senior population.

Although they have been through a lot in their lives, sometimes this causes worry and angst. There are also thoughts of their own mortality and the impact on who they might be leaving behind.

We all experience stress and occasional anxiety. Having intense, excessive, and persistent worry and fear about everyday situations is considered an anxiety disorder. Panic attacks are when intense anxiety occurs within minutes. Examples of anxiety disorders include generalized anxiety disorder, social anxiety disorder (social phobia), specific phobias, and separation anxiety disorder.

In seniors, depression often goes along with anxiety. Both can affect memory, worsening conditions like dementia or cognitive decline. Many seniors have anxiety related to their declining health, stress of obtaining medical care, and loss of independence and relying on family members.

Guilt of burdening their family can lead to withholding health issues or even ignoring serious conditions like cancer, delaying diagnosis, and leading to worsened prognosis.

Common signs of anxiety to watch for include excessive worry or fear, refusing to do routine activities or being overly preoccupied with routine, avoiding social situations, overly concerned about safety, racing heart, shallow breathing, trembling, nausea, sweating, insomnia, muscle tension, feeling weak and shaky, hoarding/collecting, depression, selfmedication with alcohol or other central nervous system depressants.

There are treatments for anxiety disorders. Biofeedback, therapy,

counseling, exercise, yoga, interacting with others all are everyday conservative measures that can be implemented right away for mild to moderate types of anxiety. Medications are also helpful, including antidepressants like selective serotonin reuptake inhibitors and anti-anxiety ones like Benzodiazepines.

These are all available by prescription only from a licensed professional. I often advise against any over-the-counter medication as dosing is not always known, side effects can worsen the situation, and active ingredients are often not known, which can lead to interactions with other medication being taken.

Our stress level and anxiety as a society have been at an all-time high, mainly related to the pandemic and all the changes we have had to endure. For seniors that has meant separation from family, loneliness, reduced appetite, and heightened hopelessness. On a bright side, our medical team has helped many of our seniors through this time, with frequent on-site visits and wellness checks, FaceTiming family during appointments, and giving back some of that hope that was lost.

My medical group continues to help seniors as the pandemic forges ahead, by teaming up with nurses, family members, other facility staff, and various ancillary service providers to help the mental health of all our seniors.

SON OF HINSDALE, AND THE SOUTH Hinsdale native Kurt Beecken applies what he learned growing up in Hinsdale, and during his travels throughout the American South, to his Chicago custom clothing shop, Henry David.

couple of years ago, Kurt Beecken found himself back in Hinsdale early on a Saturday morning and stopped into Page’s Restaurant for a bite to eat. Though he hadn’t been to Page’s in more than 15 years, it took no time for the waitress to recognize him and ask him if he was having his usual—a grilled cheese sandwich, fries, and root beer.

While Beecken was growing up in Hinsdale in the ’90s, he would often have breakfast at Page’s with his father, Dave Beecken. Dave, wearing a finely tailored Hart Schaffner Marx suit, would then catch the train to his private equity firm downtown.

On that Saturday a few years ago, a rush of memories came flooding back which reminded Kurt of what made Hinsdale such a special place to grow up.

“I remember as a kid we could just hop on our bikes and ride around town for hours and not have to worry about a thing,” Kurt says. “We knew all of our neighbors and the owners of the shops downtown. I don’t think there’s a better place to grow up.”

“Hinsdale has always been a caring community where neighbors looked after each other, especially kids,” adds Dave. “Kids could walk to or from the village center without fear.”

It was in high school that Beecken’s love affair with the American South was kindled. He attended boarding school at St. Andrew’s-Sewanee School in Sewanee, Tennessee, or “The Mountain” as it’s referred to in local parlance, and became enamored with the values and tastes of the classic southern gentleman.

“Kurt has always loved clothes. We bought him a blue blazer for church when he was about 7 and he posed for us in front of the

fireplace,” Dave says, “At an early age he was giving me advice on which tie went with which suit and shirt.”

After high school and some time in college in Wisconsin, Kurt traveled extensively throughout the south, and developed a fondness for cities like Charleston and Atlanta, and his appreciation of classic southern tastes grew.

“I just liked the classic styles of clothing and accessories, and the hospitality that I saw when I traveled throughout the South,” he says. “It reminded me of my roots in Hinsdale, the respect for each other and the spirit of friendship that people had.”

In his mid-20s, Kurt landed a job working in a custom clothing shop, where he met master tailor George Moya. He was immediately impressed with Moya’s ability to create custom clothing that didn’t just look good and fit well, but that reflected a client’s individual style.

Two years later, Kurt founded Henry David Clothiers, and brought in Moya to allow the shop to offer bespoke clothing and tailoring. He runs the shop with a mashup of the values instilled in him when he was young, and the spirit of the American South that he came to admire during his travels.

“Many custom clothiers can make you a suit, but for me the relationship is more important than the sale,” he says. “Just like my upbringing was rooted in strong relationships, I’m interested in getting to know my clients, their personalities, and what makes them tick. When I can do that, their clothes won’t just look good and fit right, their clothes will be a reflection of who they are.”
