The chapter serves 7.7 million grateful people in five counties, alleviating human suffering in the face of emergencies by mobilizing the power of volunteers and the generosity of donors. Business owner Britt Carter is the focus of our cover story, who is filled with gratitude for the 25 years he has been in Lake Forest. Writer Bill McLean’s article, “Feeling the Churn,” shares Lake Forest’s Paige Newhouse journey with multiple sclerosis. Her footing of family and competitive swimming fill and sustain her, and will no doubt inspire readers. Our final feature “Foundation Building” informs how Lake Forest Scout Troop 48 is learning to live a life of purpose, with a set of skills that will undoubtedly help them face and lead through the world’s unknowns. Las Vegas police officer and former Troop 48 Scout shares, “My years in scouting through earning my eagle have contributed to these areas in my life today: leadership, morals, ethics, community service, survival skills, and learning to apply these in the real world. Scouting helped me to be prepared for life in many ways and it is a beneficial program for today’s youth that I hope continues for years to come.” That is, in a world filled with skepticism and uncertainty, something we can all be grateful for.
HEN WE renovated our family kitchen several years ago, our daughter Hannah commented that she was sad to see the light fixture over the island go. After expressing my surprise at her attachment, she explained it was not the actual fixture she cared about—it was the tiny splatter of pumpkin flan batter inside the shade that she would miss. As I peered underneath and spied the orange flecks, memories came rushing back from the final Thanksgiving feast we had prepared with my mother. Hannah and I then smiled through a few tears, remembering how the three of us had dissolved into fits of laughter as an over-filled bowl met too-fast beaters, covering us in a delicious, drippy mess. The beauty of Thanksgiving comes from how perfectly imperfect it is, even if you have not had a pumpkin flan debacle. Friends and family members with potentially opposing world views sit elbow-toelbow around a table filled with dishes steeped in nostalgia. This familial comfort food is served with pieces that have been passed down from generation to generation—the silver’s soft patina and the china’s tiny chips telling stories of those who have been there before. And even if this year’s celebration is reduced in size to keep loved ones safe and healthy, our relatives’ recipes and shared experiences will bind us together, perhaps now more than ever. The issue is filled with ideas for Thanksgiving, the month of November, and stories that touch on gratitude. Monica Kass Rogers’ Fesanjan is a feast for the eyes and the palate. This Persian Quail with Pomegranate-Walnut sauce is the perfect recipe for a small Thanksgiving gathering, as is Entertaining’s classic martini. In the Garden’s “Microgreens 101” is a primer on growing diminutive, nutrient-dense greens indoors that will add wholesome beauty to any meal. IMBERLY CARRIS, President of Spirit of 67 Foundation, heads a nonprofit that creates events to raise money for schools in Lake Forest. During the fall of 2019, things were running smoothly. The foundation raised the most money they had ever raised. “I remember getting a call from my predecessor,” says Carris. “‘You’re making me look bad’, she jokingly told me.” Shortly after, Carris was putting together the pieces for the Opening Doors for Education Home Tour, the foundation’s biggest and most popular event, where residents open homes for tours around Lake Forest. This event usually raises $80,000-$90,000 and draws around 600 people. Then came the shelter in place order and she had to cancel the event—and all the other foundations’ events.

“Two weeks later my predecessor calls again and tells me she now feels sorry for me,” Carris says. Nonprofits and event production companies have had their legs swept out from underneath them by the coronavirus and have had to scramble to find ways to survive under the weight of government protocols. They have had no choice but to be creative. The challenge across the industry is how to create events that people want, will attend in person or virtually, still make money, and entertain. “Our number one goal for an event was, previously, pack the house, because if you can pack the house, everybody gets to make a little money,” said Ashley Bertling, president and CEO of Pyrotechniq Productions, a special events company focused on providing fire entertainment. Currently, they are producing the annual Lightscape event at the Chicago Botanic Garden. “Now we can’t pack the house—we can only pack sections of the house.” Every production house and event planning committee experienced the same sea change. The struggle was how to pivot in the face of a pandemic. Cities canceled events, like the Lake Bluff and Lake Forest 4th of July parades, and organizers moved events online or redesigned them using the pandemic protocols as parameters. Carris and her fellow board members had to sit down and decide how to help District 67 families and at the same time find ways to make money for the Spirit of 67’s Grants Program. This fall the organization hosted a virtual talk with best-selling author Lisa Damour. The original event plan was to have Damour to come for a community day with the students—visiting the school, meeting with parents, and talking with teachers. “So we asked her, since times are crazy right now, if she would do a virtual event with our community in September,” Carris says. Damour gave an hour-long virtual Zoom call. It was a smashing success. The move from physical to virtual is not often seamless. It presents new challenges. Bertling tells the story of being hired for a DJ event. The hiring company wanted live dancers for DJs who were performing in California. Bertling had to put together an AV team and dancers in Illinois, figure out how to shoot live with a green screen background, navigate server issues—the server was recording live in Ohio—all while the DJ sets were performed with a 3-hour time zone difference. “We had to learn how to become our own little television show producers with zero experience,” Bertling says. For outdoor “physical” events, the pandemic protocols have realigned the contours of event design. For the Lightscape exhibition at the Chicago Botanic Garden, Bertling found ways to give the same experience as last year. “To accommodate the coronavirus’s new implications on how we gather,” Bertling explains, “we’ve extended hours so people can enter the event on more of a pulse system.”
This year, groups buy their tickets, wait until their allotted time, and then have 15 minutes to see the event before the next group enters. A unique celebration pivot occurred recently in Lake Forest. Residents held a “drive-through” birthday party, where guests followed the circle driveway and watched a Jo-Jo Siwa impersonator perform as they drove past. Food, gifts, and prizes were individualized as favors. Liz Campanella Breen, a wedding coordinator at Naturally Yours Events who coordinates weddings on the North Shore and in the Chicago area, has seen weddings come to a screeching halt. Last year, Naturally Yours planned 50 weddings. This year they have dwindled to almost none. This has forced them to be imaginative. “Our company did an amazing thing,” says Campanella Breen. “My boss came up with a whole new concept called ‘neighborhood nuptials’ to re-concept weddings.” The company teams up with various venues and creates blocks of time so the weddings are transformed into a neighborhood. Naturally Yours breaks up a wedding of 250 people into smaller groups, rotating venues throughout the night. While a group socializes at one building, another visits with the bride and groom in a different building. By breaking up, compartmentalizing, and making the weddings more modular, they have found a way to have the same large guest lists and keep people safe. Other weddings are restricted to 50 people or less. “We also have to take the temperature of every single person coming in and we take their photograph,” she says. “We’re involved in contact tracing.” “It’s a different story now,” says Campanella Breen. “You can’t have a buffet with a stack of plates anymore and everyone has to wear a mask.” Additional costs have also popped up. Part of Ashley Bertling’s business was renting out studio space. Because they rent out space for yoga classes, they have to add cleaning skills to their services. Supplies cost money. The big question is, with the reduced capacities, how will event producers and non-profits make and raise money now? The good news is that people are cooped up and willing to attend virtual events. Will this continue into the immediate future? “People are having to make a choice right now for next year’s events, whether or not to just cancel them,” says Campanella Breen. “People are hitting fatigue walls. They’re tired of being on their computers and rather than jeopardize the health of attendees, they’d rather just wait a year.” Kimberly Carris acknowledges the fatigue is real, but that a large population in Lake Forest is looking for things to do and ways to support her events. The Spirit of 67 Foundation recently planned a drive-in movie night fundraiser at Deerpath Middle School with concessions and a showing of Kung-Fu Panda, capping the limit of cars at 50. “People are still seeking a connection to community as we all adapt to this new normal,” says Carris.

She and I partner together in serving our clients, and I would add she is the only administrator I’ve had in the branch,” Adams says. “We have a great relationship! IFE IS A SERIES OF opportunities—often challenging, never dull, and constantly evolving. Pim Alley and Kate Holland know this first-hand. Kate spent her middle and high school years living abroad in Tokyo, while Pim grew up in the wild west of Arizona. Following their schooling, Kate began her professional career as an intellectual property attorney in Houston, while Pim served on the political campaign staff for the Bush Administration. Each eventually settled in Lake Forest with their spouses and children. While both have experience in nonprofit fundraising, it was not until they teamed up to chair the 2019 Lake Forest Country Day School Auction that they had the opportunity to closely collaborate. The two spent countless hours in their “office”—a room at the school. The space quickly became a command center from which they ran their philanthropic endeavor along with the daily demands of their personal and professional obligations. The challenges faced in 2020 led Pim and Kate to closely re-evaluate the need for a dedicated workspace, something everyone has now realized is a necessity. In many families, husbands have moved into home offices and children zoom from throughout the home. Thus, the idea for a Suite Escape was born. Whether your work is a professional endeavor, a volunteer project, keeping current with events or literature, or coordinating your children’s school and activities, the Suite Escape is a welcome haven. We have sought to create a space where women can engage in adult conversation while connecting with and seeking inspiration from peers. It is also a place where one can book an appointment with themselves—time that is free from the interruption of the everyday hustle. The Suite Escape aims to create opportunities for women to connect, unwind, work, and be inspired. From serendipitous meetings to future events, classes, and workshops the space is designed to promote the growth and enrichment of its members. The Suite Escape is located on the Second Floor of the Gorton Center in Lake Forest. An annual $125 initiation fee allows members to attend special events as well as the opportunity to reserve work space at an hourly rate. American journalist and cultural critic H. L. Mencken famously once said, “Martinis are the only American invention as perfect as a sonnet.” In celebration of Thanksgiving—the most American of holidays— dives into the makings of a classic martini. words and photography by Wendy Franzen
T
HOSE WHO TAKE their cocktails seriously agree that James Bond was on the wrong side of the glass: martinis should be stirred, not shaken. When shaken, a martini can become over-diluted and foggy, marring the taste and its crystal-clear beauty. Serving guests an icy-cold martini is essential, and to achieve this without shaking, chill the vermouth (storing it in the fridge will also maintain freshness) and the glass. Stirring with a bar spoon until the shaker is frosty and hand-numbingly cold is another key to success. How one garnishes is personal preference, so having both olives and strips of freshly peeled lemon zest for a twist is thoughtful when entertaining. But the directives stop here. When the first martinis were mixed in the 19th century, they leaned toward a 50/50 split—vermouth and gin in equal balance—and a dash of orange bitters were added for good measure. It has been an evolution from wet to dry over a century and a half, and this recipe falls in the middle. Asking a guest, “how do you take it?” is appropriate. But let us be clear—gin is the only spirit one should offer. Let us raise a well-chilled glass to this holiday season, giving thanks for family, friends, and the classic All-American martini.

THE CLASSIC MARTINI Serves one Chill the glass for a perfectly cold cocktail by filling with ice and allowing to sit until cold, discarding all residual water and melting ice before making the cocktail. Glass may also be placed in the freezer until frosty. Ingredients • • • •
3 ounces chilled London dry gin 1 ounce chilled dry vermouth 1 lemon, peel cut into strips with a vegetable peeler or paring knife Queen or Manzanilla olives from the olive bar
Fill a cocktail shaker with ice. Add gin and vermouth, and stir constantly for 30 seconds, or until shaker is frosty and extremely cold. Strain into a chilled martini or coupe glass. Garnish with a lemon twist: twist a strip of peel over the glass to release oils, then run along the rim and add to the glass. Alternatively, garnish with three olives.

WEET, TART, EARTHY AND RICH, this beautiful celebratory Persian dish originated thousands of years ago in the Iranian province of Gilan on the Caspian Sea. Today you will often see it as a stew with chicken, but the sweet-sour sauce is exceptional with game birds. Here, we have elevated the dish by serving it with spice-glazed quail—a gorgeous presentation that will make an exotic addition to your autumn feasts. If you are part of a hunt club, you will have easy local access to fresh quail, but another reliable source for the birds is New Jersey-based D’Artagnan Foods (dartagnan.com), which ships fresh, free-range quail overnight.
A few notes on the recipe: pomegranate walnut sauce is the delicious star of this dish. It features pomegranate molasses, a tart, thick syrup that is easily sourced in the international foods aisle of many markets or at any of the Chicago area’s Middle Eastern groceries. There you will also find the pomegranates, pomegranate juice, and spices in the recipe. For the walnuts, removing the pellicle—the tannin-laden membrane covering the meat of each nut, yields a more mellow nut flavor. This is easily accomplished by rubbing the walnuts in clean kitchen towels after toasting. For the chicken stock, it is best to use a low-sodium version because the flavors will intensify during simmering, and you do not want the result to be over-salted.

THE DISH Persian Quail with Pomegranate Walnut Sauce (Fesenjan) Serves 4 Make the pomegranate walnut sauce: With the oven rack at center position, preheat oven to 350 degrees. Spread a large cookie sheet with parchment paper. Cover with the walnuts, evenly spread. Toast walnuts for about 7 minutes, until fragrant and golden brown. Lift parchment paper with walnuts from tray and pour onto a clean kitchen towel. Rub the walnuts with the towel to remove as much of the pellicle (skin membrane) of the walnuts For the pomegranate walnut sauce: as possible. Repeat again with a clean towel. Chop • 8 ounces shelled walnuts the cleaned toasted nuts to medium fine with a nut • 2 tablespoons olive oil grinder, food processor, or sharp kitchen knife. MICROGREENS 101 Midwest gardens have gone to bed for the winter, but nutrient dense microgreens grown indoors are a cook’s delight. words by Laura Duggan

EGETABLE GARDENING gained popularity this year as many people explored new hobbies during selfquarantine. But as we put our outdoor gardens to bed for the winter, opportunities to grow our own fresh produce and shop farmers’ markets dwindle. Growing microgreens indoors allows gardeners to extend the growing season and boost their nutritional intake. Microgreens are tiny, young seedlings grown from regular vegetable or herb seeds. Instead of letting the plants grow into mature vegetables, they are harvested within approximately two weeks of planting. Delicate and full of flavor, these wholesome plants are easy to grow and are packed full of nutrients. Unlike sprouts that are grown in water and dark environments, microgreens are grown in soil and sunshine. If you have ever started a vegetable plant from seed, then you have most likely grown microgreens. While not every plant produces a tasty microgreen, popular greens to grow are kale, arugula, beet, spinach, radish, basil, broccoli, cauliflower, mustard, and cabbage. The seedlings take on the flavor and nutritional profile of their fully grown equivalent and can be grown indoors year-round.

Microgreens are easy to grow on a lightfilled windowsill.
According to Elliot Hirsch, owner of local business Lake Forest Farms that produces organically grown microgreens, they were mainly used in fine dining establishments for their beautiful and flavorful additions to cuisine. But about five years ago, the USDA started paying attention to the health and wellness benefits. Studies revealed that microgreens have incredibly high nutritional value. “They found that microgreens contain about 40 times more nutrients by weight than their fully-grown counterparts, which is a decent average, but some nutrients can even be up to 500 times more,” Hirsch says. Before starting Lake Forest Farms, Hirsch began growing microgreens in his basement under lights with the simple goal of improving his own diet. He recommends that beginners start with easy-to-grow pea shoots or brassica plants like broccoli. “Microgreens are very forgiving,” he says, “a sunny spot or ambient light will work. Just be sure to avoid cold drafts from windows during the winter months or a place where your cat can get to them before you do.” He recommends using the snipped greens anywhere you would use a fresh vegetable. For example, he suggests that instead of using a large amount of kale in your smoothie—which will make it taste like kale no matter how many strawberries you put in it—a small handful of kale microgreens will deliver the same nutritional benefits. Ready to give microgreen gardening a try? Although there are many tricks and techniques, start simply. You really only need a few supplies: a container, soil, seeds, water, and sun.
Select a container at least two inches deep and fill with organic indoor potting mix. Pre-moisten the soil. Evenly scatter a layer of seeds on top of the soil. Because the plants will not grow very large, you do not need to worry about overcrowding. Top seeds with a thin layer of additional soil. Spray soil with a spray bottle filled with water until evenly wet. Place in a bright, sunny location and keep soil evenly damp by spritzing with water at least twice a day. Rotate planter toward the sunlight as needed for even growing. After about ten days to two weeks—growth will vary with seed type—you will see the true, small leaf of the plant begin to develop. The plants will be about two inches tall. Snip with scissors at base of stem just above soil level. Sprinkle a handful into your next salad, smoothie, soup, sandwich, or omelet for a boost of nutrition and flavor.

T
WO YEARS AGO, Erich Loacker’s knee-jerk reaction to his wife’s seemingly audacious goal came from his mouth. He laughed. The exchange took place in their Lake Forest kitchen. “My husband thought I was kidding,” Courtney Loacker says. She was not. Loacker—a 1996 Lake Forest High School graduate and mother of son Corbet, 11, and daughter Mikaela, 7—had announced to Erich her intention to run a 50-mile ultramarathon in downstate Vienna in late 2018. Imagine tying the sneakers tightly near a welcome mat in Lake Forest and then pounding pavement all the way to Naperville. The same goal-setter, remarkably, had never attempted to race in a regular marathon (26.2 miles) at the time of her startling in-house proclamation, and Loacker chose to play defense for LFHS lacrosse teams decades ago “because I had no desire to run up and down the field for an entire game.”

And in 2017, months before Erich’s chortle near the fridge, she lined up for her very first 5K run—a Down Syndrome Awareness event in Milwaukee—to support a relative with the chromosomal condition. “Hated every minute of it,” admits the 42-year-old Loacker, vice president and senior relationship manager at Bank of America. “I was out of breath, practically the whole time. But I wanted to do it for my family member and because I was incredibly out of shape. I remember returning home and running around the block the next day, determined to stick with my goal. I ended up getting the running bug. “Goal-setting,” she adds, “is extremely important to me. I don’t just set goals in athletics. Last year I wanted to live more in the present moment; I didn’t want to think so much about work when I wasn’t working. That was tough, too.” But back to November 2018 and Loacker’s 50-mile Labor of Ugh. She did it, clocking the grueling test in 11 hours, 11 minutes, and 21 seconds, not all of it in daylight, and finishing in the top quarter among female entrants. Erich witnessed the feet feat in Johnson County. So did their children and her parents, Bud and Judi. One of her kids held up and flapped a poster board with the message YOU’RE RUNNING BETTER THAN THE GOVERNMENT (It was an election year). A bursting-with-pride Bud, a former U.S. Navy Corpsman attached to the Marines, hugged his spent daughter afterward and told her about servicemen who had to tackle 50-mile training hikes. Some had not made it. Each of Erich’s eyes afterward? Home to a puddle of happy teardrops. You are not going to believe what Loacker plans to do in mid-November, in her return to the Tunnel Hill State Trail in Vienna. Then again, given her reservoir of
resolve, you probably will. A ski instructor at Highland Park-based Snowflake Club, Loacker plans to ditch her poles and goggles and plow even terrain in a 100-mile run. Yes, 100 miles this time, or the approximate distance between Chicago and Benton Harbor, Michigan. A finishing time between 26-28 hours would please her. Any result faster than 24 hours would give her an excuse to take at least two victory laps around the Land of Lincoln. “I’m cross-training more this year than I did while training for the 50-mile two years ago,” says Loacker, who, in addition to playing lax at LFHS, collected two varsity letters in volleyball and another in cheerleading. “I’m running, walking, biking. You’re asking for a broken body if you run only, though running, for me, is a meditative experience. But those first five miles, training or in a race, are brutal. After five miles, the runner’s high kicks in and I feel I could run forever.” Courtney and Erich, a Highland Park native and Deerfield High School graduate, first met on a sand volleyball court in Highland Park as teammates in a 3-on-3 pick-up match. Love at first … spike. It was the summer before her senior year in high school and his freshman year at the University of Illinois at UrbanaChampaign. They bowled in Vernon Hills on their first official date and later wore significantly nicer clothes and shoes on the night of Courtney’s senior prom. Courtney rolled to a degree in business administration at Marquette University and got married in 2003. Bank of America hired her in 2004. She works with mid-sized companies in all aspects of commercial banking and achieved VP senior relationship manager status in 2012. “Seeing companies transform and pivot during the pandemic has been extremely rewarding,” she says. “We’re working closely with companies, helping them in these challenging times. We’ve seen growth, in addition to changes in their thought process.” Being in a work from home environment has not disrupted Loacker’s strict ultramarathon training regimen in the least. Before tapering in October ahead of the Tunnel Hill 100, Loacker would run five miles on most weekday mornings and follow that up with 10 more in the afternoon. Weekends in September? Eighteen miles on Saturday, followed by five more on Sunday. “My husband has been great,” she says. “When I run in the morning, Erich runs the circus—taking care of the kids—at home. “I’m a lot tougher than I had given myself credit for before I started running seriously. There’s more grit in me than I had imagined.”

N NOVEMBER 11th we celebrate Veterans Day, but oftentimes those that serve our country battle mental illness long after their days of battle are over. I just didn’t have that awful feeling hanging in the background that had been in my life for so long. And, I’ve been able to

maintain the balance since.” Mains is now at the stage of booster treatments, having gone three weeks between doses seven and eight, and four weeks between doses nine and ten. His ketamine treatments supplement his psychotherapy appointments that he now maintains every other week. Mains notes that from October 2019 to January 2020 he was in therapy five days a week, and February to August (pre-ketamine) he was in therapy once a week. Dr. Bal Nandra emphasizes that all plans are customizable. “Everyone with mental health struggles is on their own journey. We recognize this and tailor plans according to each patient. Whether they are a veteran, first responder, trauma survivor, or battling severe depression, anxiety, migraines, or chronic pain, we are here to serve everyone.” Mains adds, “Since my ketamine treatments, I’ve felt better than I have in months. I’ve been telling everyone who will listen about how ketamine has changed me. My wife told me ‘it’s good to have you back,’ and I’m happy to be here.” Mains is the founder of the non-profit Run For Our Lives and he completed 130 kilometers or just over 77 miles in May, raising more than $18,000 to support Illinois Firefighter Peer Support. S FALL SLOWLY FADES into winter, adding layers of warmth to our bodies is not the only change we need—an update to our skincare is imperative. Transitioning to a nourishing, restorative cold-weather routine should be top of mind. “It’s so important to practice self-care,” says Melanie Hart Narbutis, director of beauty at neapolitan collection, “and get back to basics.” Specifically, Narbutis recommends that one should “exfoliate once a week, always cleanse, always tone, and always hydrate. Hydrate a lot,” she emphasizes. “Do not let your skin get dry, especially during these harsh winter months. Moursi was immediately taken with neapolitan collection. “I’m from France, so we’re used to this type of high-end boutique, but in the U.S., you don’t see too many of these,” Moursi says. “At neapolitan I was so impressed by the concept and the choice of material and the choice of brands and the fact that they are not saturated.” “We cater to the same clientele,” continues Moursi. “We have Chicago clients that love our product, love going to neapolitan. We actually started doing some facials there, and then COVID-19 happened, and we had to stop. The energy in that store is out of this world—and the quality and the layout and the staff. And the owner, Kelly is just wonderful. I was very happy when I when I first met with them. I said, ‘this is what I would like to do. I want to be only in this kind of boutique because of my clientele, and because my brand is a precision brand. I don’t want to be all over the place. I want to be very selective. And neapolitan is really the store for us.” “Melanie is so knowledgeable and caring and so into customer service. It’s something you don’t find in the big stores. She knows what she’s doing. I have confidence having my brand in her hands.” Narbutis loves the Mila Moursi products for this transitional time. “Mila Moursi is exceptional for the winter months because of the many self-care options. There’s a soothing mask that you can use overnight. Just put it on before you go to bed. Nothing else. You wake up, you have hydrated skin. So that is great for anybody with normal skin, of course, but also if you have rosacea or acne or anything like that. If you get
yourself in trouble where you’re breaking out or dehydrated, the soothing mask is very, very helpful.” Narbutis also stresses that although summer may be over, the time for sunscreen never ends. “People sometimes forget about driving or walking or skiing. I love the Mila Moursi sunscreen—it’s by far our bestselling product. It feels like a matte-finish primer, and when I put it on the back of a client’s hand, I get a lot of oohs and aahs. I actually use it when I apply makeup because the finish is so special.” Several years ago, neapolitan collection also began offering its own makeup line. “It started with a line of lipsticks all named after streets in Winnetka,” Golden says. “When we sold out of those within the first few weeks of selling them, Melanie told me ‘it’s time to do our next product.’ We now offer a full line of makeup and brushes. Melanie introduces new shades of eyeshadow, lipsticks, and other products to complement the clothing we have in store each season. We are able to truly give our clients a head to toe makeover.” Caroline Burns is a devoted neapolitan collection customer. “I love everybody that works there,” Burns says. “It is always fun to just pop in and say hi— it has that neighborhood feel.” Over time, Burns has gotten to know Narbutis quite well. “I adore her. I got to know her and started using her make-up line, and I think now I have all of the lipsticks. I just love how they feel.” “There’s just this thing about Melanie. I’ll walk in and she’ll say ‘Caroline, I was working on something and I was thinking about you. What do you think about this?’ She’s thinking about her clients all the time and ways to personalize things. I love how she makes me feel like she’s creating makeup specifically for me. She now knows my style and the things I like.” With winter’s chill on the way, it is comforting to know there is a warm place waiting to welcome you in and take care of the whole you.

A Season of Gratitude Lake Forest’s Britt Carter & Company builds interiors with fine furmniture and an expert eye.

F YOU ASK BRITT CARTER, founder of and senior interior designer at Britt Carter & Company, to describe his feelings about 2020 in one word, you might be surprised by his answer. “Grateful. I’m thankful every day that I come to work,” he says. “This has been such a hard year for so many people. But the blessing for us has been that people are spending more family time at home and are interested in improving their living spaces. We’re happy to help them make their dreams come true.” Carter grew up in the “mom and pop” furniture business. His stepfather owned a number of “Happy Days-era” stores in the northern suburbs that sold everything from sofas to air conditioning units. “As a teenager, I used to help out at the stores a lot,” he remembers. “And I’ll never forget the first time someone actually asked my opinion about a design question they had for some furniture they were buying. I was encouraged that they wanted my opinion and really trusted it.” Fast forward into Carter’s adulthood when he was early into his 45+ year marriage to Vicki and decided to open his own showroom. “In 1980 when I was 26 years old, we borrowed $50,000 from Vicki’s parents to open our small shop in Libertyville,” explains Carter. “Prior to that when I worked with my stepfather, I realized there was a need for high-end furniture offerings that wasn’t being met. This would be—and always has been—our focus.”

Soothing tones of cream, blue, and taupe in a Carter interior
In 1987, Carter moved his showroom to Vernon Hills, tripling the size of his retail space. One day, a young contractor walked into Carter’s showroom and asked him what he was paying in rent. He then told Carter he could build him his own stand-alone retail space for the cost of his rent. “I believe people come into your life at certain times for specific reasons, and that day this young man came into our showroom and gave me the nudge I needed to build the showroom I had always dreamed of.” That was 1994. Today, the 24,000-square-foot Britt Carter & Company showroom still stands in Lake Forest. “I sketched out every square foot on my kitchen table and I’m still in awe of how it all came together,” Carter explains of his showroom located right on Rte. 41 that now showcases more than 30 vignettes of high-end home furnishings. “New customers and clients often come in for the first time and say they’ve driven past our showroom a thousand times never realizing how distinctive the showroom is. Furniture industry leaders that I’ve met in High Point, North Carolina who have visited us have said there’s nothing else quite like it. We’re really blessed to have what we have here.” When asked the secret to his long-term success, Carter confidently espouses that he and his family love meeting and helping new people and creating interiors they love coming home to. “I started this company because I knew if I spent time investing in our customers, there would be a ‘win’ for everyone,” Carter says. “Our years of experience merchandising, laying out the showroom, and our keen focus on every aspect of the home furnishings industry has honed our passion for interior design. Our clients and customers appreciate the fact that they can experience the home furnishings first-hand, instead of ordering product sight unseen as if the case for many design firms.” In addition to offering high-end home furnishing, décor, and accessories—Britt Carter & Company offers full interior design services. They’re the only leading professional interior design firm in Chicago with a large showroom. So often guests will arrive looking for a specific item like a sofa, dining table, cocktail table etc., but after walking the showroom they become inspired, and often ask if the store offer interiors design services. Many times, at this point, a

client relationship begins. “I can be a client’s eyes and also their heart,” he explains. “The relationships we build with our clients are truly at the core of what we do. My heart is in every project as if I were designing it for my family.” To that end, Carter launched the Britt Carter Signature line of furniture that he has developed in response to client custom needs. “There are times when I can’t find the perfect piece of furniture for a particular space, so I dream of what it should be, then draw it, then have it made to the highest standards,” Carter says. “My clients love it. This is the kind of thing you can do when you’ve been in the business for as long as I have and know as many people in the industry as I do.” Carter also adds that he and his team love collaborating with other designers. “I hope designers know they can send their clients to our showroom to review products, just as if they would send them down to the Merchandise Mart. We never step on the toes of another colleague,” Carter says. “We’re here to help them do what’s best for their clients. And we’re a lot closer than downtown Chicago.” One of Carter’s greatest sources of pride is having two of his five children working with him in the family business. His son Shaun is his right-hand in the showroom, while his son Jeremy oversees the “business side” of things. “Shaun was our son who would come down on Sunday for church dressed to impress,” he says with a smile. “We should have known back then that he would be a natural in our business.” Being in the furniture business for more than 40 years has taught Carter and his team the importance of creating a rewarding experience for clients and customers. “That said, we can always improve,” says Carter. “We really don’t know what tomorrow brings—but we believe it will be exciting because it’s another day to work with someone new.” Britt Carter & Company is located at 1350 S. ALTER WILDMAN drove an American Red Cross ambulance in France during World War I. He was a Quaker. Quakers are to wars what trees are to loggers. They stand in opposition. “But he wanted to serve his country,” says Walter’s grandson Jamie Wildman. “So that’s what he did.” Grandpa Walter died in 1974. Jamie Wildman, of Lake Forest, began serving his two-year term as board chair of the American Red Cross of Greater Chicago in late June. The chapter serves 7.7 million people in five counties. The 45-year-old—a partner and managing director at William Blair & Co., and father of two daughters, with wife Kristin—had been a board member of the largest American Red Cross of Illinois chapter for eight years before succeeding Theodore Dysart as chair. “Former board member Jim Farrell [also of Lake Forest] invited me to the Red Cross’s biggest fundraiser, Heroes Breakfast, years ago,” Wildman recalls. “Afterward he said to me, ‘How could you not get behind an organization like this? It comes to the aid of people in times of their greatest need.’ ” Ninety percent of the American Red Cross workforce is made up of volunteers, and 90 cents of every dollar it spends is invested in delivering care and comfort directly to those in need. “I’m proudest of that, of only 10 percent of our funds designated to cover administrative costs,” Wildman says. “Not many organizations can make such a claim. Our funds provide clothing and shelter after fires and other disasters. Our ‘Sound the Alarm. Save a Life’ program installs free home smoke detectors. Donating blood is a great way to get involved with the Red Cross. It’s also the simplest.” An Ohio native, like his wife, Wildman attended North High School in Springfield and worked summers at a local factory from the ages 16-18. He toiled with a man who pressed two buttons eight hours a day, five days a week, securing sponge mops to handles. “I then boxed the sponge mops,” says Wildman, who also served tennis balls to deuce- and advantage-side boxes on courts for North High’s varsity squads. “That was an eye-opening experience, spending all those hours in a warehouse. The man in charge of pressing buttons and I had great chats every day. He was making minimum wage, not looking for a promotion. He seemed content. “Some of the happiest people I met back then were assembly-line workers.” Wildman, armed with a potent work ethic, graduated with a degree in economics at Vanderbilt University and earned his MBA at the University of Chicago Booth School of Business. He has been living in the Chicago area since 1999, except for a year in New York. He started his tenure with William Blair, the global investment banking
asset management firm, 16 years ago. “What I’ve always loved about Chicago is how its civic and business communities are intertwined,” Wildman says. “People here really care about organizations. People are truly passionate and want to make a difference.” Nurse Clara Barton formed the American Red Cross in 1881. Its mission is to prevent and alleviate human suffering in the face of emergencies by mobilizing the power of volunteers and the generosity of donors. September 2020 was a particularly busy month for Red Cross volunteers nationwide, with wildfires and hurricanes raging. The pandemic exacerbated the disasters. Wildman co-chaired the Greater Chicago chapter’s 2019 Heroes Breakfast Leadership Committee. The annual fundraiser honors local community members for their extraordinary acts of courage, kindness, dedication, and service to the community. A sampling of recent honorees: a youngster who had jumped onto L tracks to rescue an adult who had fallen; a trained paramedic/ phone operator who had fielded a call from a panic-stricken woman and instructed her to administer life-saving CPR to her sister; and Lake Bluff-based Bernie’s Book Bank Founder and Chief Advancement Officer Brian Floriani, the 2017 Community Impact Award recipient. “It’s a moving event every year, our Heroes Breakfast,” Wildman says. “It’s wonderful. Unfortunately this year’s Breakfast had to be a virtual one because of the pandemic. You can’t help but get inspired while listening to what each Red Cross hero did the previous year, no matter the format. Our Youth Award one year went to a kid who arranged the deliveries of stuffed animals to kids.” Philanthropically driven throughout his life, Wildman is the immediate past Chair of Bernie’s Book Bank’s Board of Directors. He serves on the Northwestern Medicine Lake Forest Hospital philanthropic advisory council and the men’s golf pro-am committee for the Ann & Robert H. Lurie Children’s Memorial Hospital. And he is a former treasurer and board member of the Gorton Community Center in Lake Forest. In his precious free time, Wildman golfs, skis, and bikes, and never turns down an opportunity to play a racket sport. If he could change one thing about his tennis game, it would be his serve. “It’s terrible,” he says, probably too hard on himself. “I like doubles. I like to volley. I like it up there at the net.” He is also enjoying the challenges and rewards of his new position at American Red Cross-Greater Chicago. “I’m a big believer that people who feel blessed have a responsibility to serve others,” Wildman says. “I hope to do just that, to leverage the skills I have to make a positive impact.”

HEY HAD WAITED for what seemed forever and a day for that trip. After a number of grueling months in which the plans of Lake Forest Troop 48 were completely altered due to the ongoing pandemic, the active scouting group was finally getting the chance to travel to Door County, Wisconsin for an all-day kayaking trip. Keeping all safety protocols in mind, the young men and women were eagerly looked forward to a day of fun and adventure and time with their dear friends. But then, it rained … all day … for 18 hours straight. So, they were left with another decision to make—do they pack up and drive home, wallowing in the unfortunate circumstances? Or do they stand tall, figure out what to do next, and proceed with a fun-filled day? In case you are wondering, they picked the latter. “Bravery, courage, perseverance, and grit are all things we are trying to teach our youth, and they not only lived it that day, but they are living it everyday in this troop,” explains Mike Borkowski, who took on the role of scoutmaster of Troop 48 earlier this year. “There was no complaining. There was no

Plan A didn’t work, so they came up with plan B.” Indeed, in a world and during a year in which nothing goes according to plan, the boys and girls that make up this phenomenal troop not only learn how to live a life of fun with a purpose, but also learn a set of skills that will undoubtedly help them face and lead through the unknown of the real world. “Scouting, in my mind, is the best leadership development program that exists anywhere, that I have ever seen,” explains Borkowski, who arranged for Chicago Bears Head Coach Matt Nagy to speak virtually to his troop about leadership and perseverance during the recent COVID-19 shutdown. “I have watched these boys, many who I have known since the first grade, develop into young men prepared for leading into the future. It’s a special and wonderful thing to see.” Scouting in itself has had a long tradition of preparing young men, and now women, with a foundation built on an oath, the law and a shared mission. Since scouting’s inception in England in 1910, more than 130 million young men and women have participated in scout programs, with over 35 million adults guiding them throughout the process. In fact, Troop 48 was chartered in 1928, and then rechar-

tered in 1988, and through its history, has helped over 130 young people reach the prestigious Eagle Scout rank. Just last year, the troop also founded one of the first female Scouts BSA units. “I remember, in the beginning, looking up to the older scouts who took up the leadership positions and ran the meetings and organized the campouts, and I knew that I wanted to do that someday,” explains Isaac Vander Velde, the current Senior Patrol Leader for Troop 48. “It was the best thing I could have done for myself.” “During a campout for example, the scouts do everything from plan the meal to cooking their own food to pitching the tents,” adds Borkowski. “If they do those well, fantastic. If they do those poorly, they learn.” Recent projects completed by members of Troop 48 include everything from collecting personal care items like soap, toothpaste, and masks for families in Waukegan, to installing plant beds at a local park, and 20 scouts working to completely renovate the Lake Forest High School Robotics Room with new work tables and additional shelves. “Our troop really tries to be completely Scout-led, but we couldn’t do that without the support of not only our adult leaders, but also the community in which we serve,” explains Vander Velde, whose troop offers 20 different leadership positions to its members. “It’s through those community projects that we truly live the ideals of scouting.” And yes, even years after one steps out of Troop 48 and into

the real world, the foundation that scouting establishes in one’s youth continues to have a number of lasting affects. Take, for example, former Troop 48 member Michael Rohrs. While he currently works as a metro police officer in Las Vegas, it wasn’t too long ago that he was just a shy, quiet kid looking for a place to fit in. “Scouting provides training in areas that youth aren’t exposed to in other areas of their life, and that is learning the basics of survival skills,” explains Rohrs, who became an Eagle Scout with Troop 48 back in 2014 and whose mother Wendy now serves as one of the many Assistant Scoutmasters of Troop 48—American Legion Post 264. “We learned everything from learning to tie knots to safely utilizing knives to how to start a fire to keep warm, and implemented all of these things during our monthly campouts.” But that is just the beginning. “My years in scouting through earning my Eagle have contributed to these areas in my life today: leadership, morals, ethics, community service, survival skills, and learning to apply these in the real world,” says Rohrs. Scouting helped me to be prepared for life in many ways and it is a beneficial program for today’s youth that I hope continues for years to come.” Troop 48 invites boys and girls who are interested in scouting, along with a parent, to its Annual City of Lake Forest Holiday Wreath Hanging Event on Thanksgiving Day, November 27, 7 a.m. to 10 a.m., at the downtown Lake Forest train station. AIGE NEWHOUSE WAS CONFUSED. She also felt tired after sleeping for 16 to 17 hours, when she should have felt wide awake. Ten years ago, after returning home to Lake Forest from a trip to the East Coast, she realized she had left her phone and luggage at the airport. “My husband ( Jack) said to me, ‘Something is wrong, really wrong,’” Newhouse recalls. Something was. Newhouse, now 40, underwent a brain scan. The initial diagnosis was frightening: an inoperable brain tumor. Six weeks later she learned she had Tumefactive Multiple Sclerosis. All kinds of complications ensued, from 2010 to 2012. “I had to learn how to walk again, talk again, find my words again,” Newhouse says, in a new environment, being transplanted from Chicago. Some eight years later, thanks largely to another lifelong ability—swimming—that resurfaced, Newhouse is stronger than ever. Lately it has been Newhouse in a rout, MS a lonesome crumb to Newhouse’s industrial vacuum cleaner. “Got an MRI in early August,” says Newhouse, the mother of daughter Madison, 10, and son J.D., 7. “It was good. It was fine. And I’m receiving wonderful care from my doctor at Northwestern in the city.” Competitive swimming netted Newhouse a boatload of state medals during her Greenwich High School years in Connecticut. It also nudged her to marriage. Paige and Jack, one year older than the former GHS butterflyer/individual medley racer, were NCAA Division I swimmers at Duke University. She captained the Blue Devils’ squad her senior year. “Jack and I had the same head coach, an old-school coach, at Duke, and sometimes he made us swim 9,000 yards two times a day,” says Paige, who majored in Sociology with a Markets & Management certificate, collected a Graduate School of Education degree at Pace University in New York, and earned her J.D. at DePaul University’s College of Law. “We swam all the time in college, it seemed. Our first date was dinner at a Macaroni Grill. So much bread … we ate so much bread together.” She was chosen to be a part of Teach for America in the South Bronx. While she completed three years at P.S. 6x, she ultimately decided that she would be most helpful to the families if she had a law degree. So she moved to Chicago and, after completing her law classes, volunteered for Equip for Equality, a Chicago nonprofit that changes its priorities every three years—but while she was there, its

focus was defending children. Madison was born in 2010, J.D. three years later. The family’s six-month-old Goldendoodle answers to “Nugget” a.k.a. Chicken Nugget. Madison came up with that name, and she was not holding a medium Coke and small fries while doing so—her babysitter for many years had called Madison Chicken Nugget. “Our children adore that dog,” Newhouse says. “I absolutely love watching our children run with our dog. Nugget races them all the time.” Paige Newhouse zips in swim lanes. All. The. Time. She hit the pool water at Deerfield High School as a first-year COHO Masters swimmer in 2018. Newhouse was churning in a warm-up session when she met lane mate AJ Block for the first time. Block, a record-setting U.S. Masters butterflyer, had served for many years as Highland Park High School’s girls swimming coach before assuming the same helm at Vernon Hills High School in 2018. “It was a competitive environment, with the two of us going about our business in the lane,” Block says. “I remember stopping and asking her, ‘Hey, got a name?’ Paige was friendly right away. She was nice and easy to like. Her personality, it’s a sunny one, a constant rahrah one. Paige likes to be a part of a team; she cheers for you and likes to hear cheers for her.” She is drenched in perspective, too. Block noticed that immediately. “It’s amazing,” Block says of Newhouse’s hearty approach to life with MS, in and out of the water. “I love the way she’s handling the cards she was dealt. Who wouldn’t think differently after that? But Paige has stayed positive. My guess is that she no longer sweats the small stuff like too many of us do.” Newhouse now swims with Phil Dodson’s Northwestern University-based Masters swim club. Dodson

is a North Shore CPA. The man runs taxing workouts, sometimes making his adult fish swim 5,000 yards a day. “I couldn’t find the campus pool on my first day,” Newhouse says. “I had to ask for help. Somebody took me through all these twists and turns, all these ups and downs. I got there, finally. I was late. I was nervous.” Dodson told Newhouse to enter the pool and complete five 100s. Newhouse got in. Dodson barked, “Go!” At one point in the 500-yard exercise, Newhouse heard a swimmer state, “Okay, she knows what she’s doing.” For months, Newhouse had been training diligently to compete in a national Masters meet scheduled for March of this year. But the pandemic scrubbed that gathering, spoiling Newhouse’s opportunity to Evinrude her frame as a young threat in the 40-45 age group. What are you going to do? If you are Paige Newhouse, you move on from that tough news and make time to stroke and kick like you are a collegiate swimmer again. Five times a week, Newhouse’s comfy home away home is a lane in the pool at Exmoor Country Club in Highland Park. “Swimming calms my mind,” Newhouse says. “I’m in better shape because of it, and it has introduced me to friendly people, to dedicated people. When I do laps I’m happy. But what keeps me going? My family.” “Swimming at this stage of my life has been a godsend.”

any women have undergone BEFORE some type of breast surgery, either for cosmetic or reconstructive purposes. Most of these surgeries are very successful, but unfortunately for some, either the initial outcome fell short of their AFTER desire or over time the breast becomes distorted or hard. In the case of breast augmentation, the body forms scar tissue around the implants, which is normal. But sometimes the scar tissue contracts making the implant feel firmer. This is referred to as a capsule. The appearance also becomes distorted. Other complications include bottoming out, fold malposition, wrinkling and rippling, and symmastia. With time, sagging of the overlying breast tissue is not uncommon, creating a disconnect with the underlying implant. And of course, a woman’s breast naturally changes shape and contour as the body ages. Natural conditions such as lax skin elasticity, thin tissue, and multiple corrective procedures often pose technical and special challenges. If you are unhappy with the outcome of a prior surgery, a revision surgery may be in order. Patients need to understand that revision surgery is complex and technically demanding. There are limitations based on one’s anatomy and what can be achieved. Technologies have evolved over the years to help correct the described complications and deformities that can occur. The use of STRATTICE is a soft, natural product that is designed to reinforce weak tissue and to support growth of your own tissue. Derived from porcine dermis, it is a strong and sterile product.
