Es uno de los mejores restaurante del mundo, ganador de tres estrellas Michelin. La innovación y la creatividad son algunos de sus valores distinguidos. Sin embargo, Joan Roca, el chef y creador del Celler de Can Roca con sus hermanos Josep y Jordi, siempre recuerda a sus orígenes, y subraya la misión básica de cualquier cocina: hacer feliz a la gente.

However, Joan Roca, the head chef and creator of El Celler de Can Roca with his brothers Josep and Jordi, always remembers his origins, and emphasizes the basic mission of any kitchen: to make people happy.

uando Joan Roca evoca un recuerdo, mira hacia algún punto indeterminado y sonríe. Y recuerda cuando su madre, Montse Fontané, le había mandado a confeccionar una chaqueta de cocinero a los 9 años. “Todos mis recuerdos están asociados a la cocina, pero sobre todo a los aromas, y con la sensación olfativa que queda en la memoria de las tardes que llegaba de la escuela, y echaba una mano en los fogones. Son los aromas a la crema catalana, o de la escudella”, rememora.

Joan, Josep y Jordi Roca, los tres hermanos creadores del Celler de Can Roca, crecieron aprendiendo y jugando en el restaurante Can Roca, el local de comidas que sus padres edificaron en un barrio obrero de las afueras de Girona. Y sigue funcionando, y sirve como centro de reunión de los tres hermanos y sus empleados cada mediodía, en una mezcla de comida de empresa y brainstorming creativo.

Las raíces siguen ligadas al Celler de Can Roca. Y su diseño arquitectónico está lleno de metáforas: el nuevo restaurante, ampliado hace 6 años, se construyó en torno a una

hen Joan Roca evokes a memory, he looks off into the distance and smiles. And he remembers when his mother, Montse Fontané, had a chef’s jacket made for him at the tender age of 9. “All my memories are associated with the kitchen, but most of all the fragrances, and with the olfactory sensation of the memory of those afternoons when I would get home from school and lend a hand at the stove. These are the aromas of crema catalana, or of escudella,” he recalls.

Joan, Josep and Jordi Roca, the three brothers and creators of El Celler de Can Roca, grew up learning and playing in the Can Roca restaurant, the eating place that his parents built up in a working class neighbourhood on the outskirts of Girona. It continues to operate, and serves as the meeting point for the three brothers and their employees every day at noon, in a mixture of a business lunch and creative brainstorming.

The roots are still linked to El Celler de Can Roca. And its architectural design is full of metaphors: the new restaurant, extended lo m+s Baix Llobregat Nº 52 · 79

bility in this unusual business,” says Joan Roca.

The chef stresses “when I speak of El Celler de Can Roca’s cuisine, or when I talk about the business, I always speak in the plural. Even that triangular concept also comes into the creativity of the dishes”.

Joan opens up with generosity when he describes his brothers: he says that Jordi, who is responsible for the desserts at El Celler de Can Roca, “brings a degree of irreverence, and is the one who makes

chispas creativas interesantes”. De Josep, encargado de la sala y los vinos (visitar su bodega de 200 m2, con capillas temáticas, es toda una experiencia), dice que brinda “un análisis sensorial muy interesante, y tiene actitudes poéticas muy importantes, que pueden dar a nuestro proceso matices que extralimitan la parte gastronómica”.

En cambio, si se trata de describirse a sí mismo, Joan es más bien huidizo: “sólo soy un cocinero que ha tenido la suerte de trabajar con dos grandes profesionales, que son mis hermanos. Para un cocinero, trabajar con uno de los mejores sommeliers del mundo y uno de los mejores pasteleros del mundo es un lujo. Y que además sean tus hermanos, hacen que El Celler de Can Roca sea un restaurante especial”.

He says that Josep, the restaurant manager and head sommelier (visiting their 200 m2 cellar, with themed rooms, is an incredible experience), provides “a very interesting sensory analysis, and has a strongly poetic disposition, which may add nuances to our process that go far beyond the gastronomic side”.

On the other hand, when he has to describe himself, Joan is rather more elusive: “I am just a chef who has been lucky enough to work with two great professionals, who are my brothers. For a chef, working with one of the best sommeliers in the world and one of the best pastry chefs in the world is a luxury.

And the fact that they are also your brothers, makes El Celler de Can Roca a very special restaurant indeed”.

They have three Michelin stars, the prestigious British magazine Restaurant Magazine has named it the second best restaurant in the world two years in a row, and the waiting

Las distinciones de ámbitos especializados y generalistas se acumulan y la fama crece.

Inclusive, en breve se estrenará la ópera El Somni, donde los platos de los hermanos Roca se mezclarán con música, vídeos y una amalgama de sensaciones en una puesta en escena vanguardista.

Pero ante esta vorágine, Joan Roca, haciendo honor a su apellido, mantiene los ideales con voluntad pétrea. “No hemos tenido una estrategia previa para llegar donde llegamos, todo fue fluyendo a partir de nuestros orígenes, en un barrio obrero, y que es donde queremos quedarnos. Cuando hicimos la ampliación podríamos habernos ido al centro de Girona o a Barcelona, pero hemos querido ser fieles a nuestros orígenes”.

Joan Roca analiza que, pese a la crisis, se vive un gran momento creativo en el sector gastronómico. “Es bonito poder trabajar a este nivel, donde la gastronomía ha tenido una valoración social mayor de la que podría haber tenido antes. Estamos en un momen84 · lo m+s Baix Llobregat Nº 52

But in the face of this whirlwind of activity, Joan Roca, honouring his surname, maintains their ideals with stony will. “We didn’t have a planned strategy to get to where we are now, everything flowed from our origins, in a working class neighbourhood, and that is where we want to stay. When we did the extension we could have gone to the centre of Girona or to Barcelona, but we wanted to be faithful to our origins.”

Joan Roca believes that, despite the crisis, this is a great moment for creativity in the gastronomic sector. “It is great to be able to work at this level, where food is more highly valued socially that it could have been before. This is

En el Celler se ofrecen dos menús: el más demandado es el Festival, un despliegue de 10 tapas, 12 platos y 3 postres, para degustar durante tres o cuatro horas con un maridaje de vinos especialmente elegidos. Son porciones de un tamaño minimalista, pero que brindan una explosión de sabores, aromas y recuerdos al momento de probarlos.

“La gente que viene al Celler de Can Roca llega para sentir una experiencia, a un ritual de sensaciones ligadas a la hospitalidad, al trato con la comida y la bebida”, describe Joan Roca. “Aunque sea un tópico, la clave es que todo se haga con cariño. Todo lo demás son estilos, estructuras que uno tiene, pero lo importante es cocinar con ganas y hacer feliz a la gente”, piensa, mientras sonríe y vuelve a mirar a algún punto indeterminado.

Two menus are offered at the Celler: the most popular one is the Festival, an array of 10 tapas, 12 dishes and 3 desserts, to be relished over three or four hours and paired with specially chosen wines. The portions are of a minimalist size, but provide an explosion of flavours, aromas and memories when they are consumed.

“The people who come to El Celler de Can Roca come to feel an experience, a ritual of sensations linked to hospitality, to the treatment of food and drink,” describes Joan Roca. “Although it is a cliché, the key is that all things are done with love. Everything else is styles, structures that one has, but the important thing is to cook with desire and make people happy,” he says, while smiling and looking off into the distance again.
