LETTER FROM PRESIDENT Callie Miller 2018-2019

The Junior League of Greater Lakeland thrives on new beginnings each year. This year is no different. Volunteers have accepted new placements and committees have begun meeting to plan for the year. The enthusiasm to leverage the diverse skill sets and interests of our members to do good for and in our community is palpable.

The Board and Leadership Retreat held in early July was successful and thought provoking. Nearly every committee chair and Board member was present to discuss our strategic plan for 2018-2020, with initiatives outlined to meet our goals of: • Membership: Provide opportunities for women to develop personally and socially to be effective leaders in our community.

• Community: Leverage the skills of our membership to meet the critical needs of our community and make a meaningful community impact.

• Finance: Maintain and strengthen financial and organizational stability.

• Communications: Enhance the visibility of the League and our mission.

The collaboration and idea sharing between Committee Chairs enhanced our confidence that working together, we will meet our goals and fulfill our vision for the League and community.

Serving as the President allows me the privilege of attending dozens of committee meetings each month. During these meetings, I get to witness the beautiful passion for our community that drives women to take chances, to challenge themselves to do something that’s beyond their comfort

Volunteering in our community may be our platform and the thread that attracts new members, but our mission begins with training. This training occurs both through experience on and leading committees as well as through intentional skill-building. Within the pages of this issue of League Lines, you will read how we have organized our general membership meeting speakers, house parties, and special events, into categories of Skill Building, Wellness (mental, physical and social), and Family-Focused to add intentionality of how often we provide each type of opportunity for our members.

Excitement continues to grow as we are only a short time away from Thrift Sale. Fun fact! 2018 marks the 50th anniversary of the League’s very first sale in 1968. Shortly after Thrift Sale, we will walk the runway at Spotlight on Style, accept nominations for Woman of the Year, host the Christmas Parade, Light up Lakeland with luminaries, and pass out thousands of books to build the home libraries of children in the Greater Lakeland area. Tangible appreciation for the hard work of many is through your participation and attendance at this years events. We look forward to seeing you there!

A special ‘thank you’ to Lu Fitzwater and Alice O’Reilly for warmly opening your homes this Summer and providing the opportunity for me to meet so many of our Sustaining Members. For those of you that I have not met, I look forward to seeing you at the Sustainer Holiday Soiree and the State of the League gathering on November 15 and at our events this year.

This ‘new beginning’ has proven to be an exciting beginning for the year.

COMMUNITY OUTREACH UPDATE Listen. The League is welcoming back the Community Think Tank (also known as the Community Advisory Board), organized by the Community Outreach committee. The Think Tank will be made up of community leaders that provide a diverse representation of our community to advise the League on our plans to address the critical needs of our community. The League is also inviting the Think Tank to review nominations for Woman of the Year and serve as judges for the Christmas Parade.

Plan & Evaluate. The Community Research & Program Development (CRPD) committee is partnering with the Community Council and Funding event committees to identify objectives and measurable goals for each event prior to it occuring. These metrics will support the League’s desire to measure the meaningful impact we are making in our community and identify opportunities for change or enhancement. In addition, CRPD is partnering with Education & Training to plan ‘Done in a Meeting’ service projects, including creating health and wellness kits for women.

Impact. Ready to Read is responding to the needs of our community by revamping the way we make an impact. Ready to Read is shifting its focus from school-aged children to younger children age birth to 5 and their caregivers. We heard from community leaders that literacy programs are lacking for children during this developmentally critical stage. Thus, the League will be developing a curriculum that we can then train our members on how to deliver. This curriculum is dual

focused: it will inspire literacy in children, and teach caregivers how to interact with their child around a story.

Reading is Fundamental (RIF) is on the move too! While our traditional distribution will continue, we are offering schools the opportunity to participate in a One Book, One School program. All students in the school will receive the same book, regardless of grade level, and participate in age appropriate activities themed with the book to encourage learning and retention.

In perfect alignment with the League’s mission, this year’s Christmas Parade theme is A Storybook Christmas. We have invited all float participants to select a children’s story to inspire the decorations of their floats. The League, through the leadership of RIF, looks forward to distributing the children’s book that has inspired the League’s float at the parade on December 6, 2018.

Over the summer, the League had the opportunity to distribute more than 500 books to support our community. Highlands Grove Elementary received 300 books to support a goal to reach low include students and parents through engagement classes. And, the Clerk of Courts received more than 200 books to comfort children during domestic violence cases at the courthouse. More info on this below!

JLGL DONATES BOOKS TO POLK COUNTY CLERK OF COURTS On August 24, 2018, President Callie Miller presented Stacy M. Butterfield, and the Polk County Clerk of Courts, with more than 200 books in English and Spanish for children affected by the Domestic Violence division of the Polk County Clerk of Courts.

Butterfield said, “It will have a huge impact on the children who come through the Clerk’s office and we are so grateful for your kind donation! Thank you for helping the community in all that you do!”

MEMBERSHIP COUNCIL UPDATE UPDATE FROM THE PROVISIONAL COMMITTEE Welcome Provisionals! The provisional course kicked off with our annual Welcome Party at the home of Tiffany Kilpatrick on Thursday, August 16. Thirty-five League Provisionals and numerous Actives and Sustainers enjoyed meeting and socializing with one another. A brief intermission to the party occurred for the introduction of the Provisional Committee and Board of Directors.

Following this, on Sunday, August 19, the Provisionals participated in half-day retreat at the Junior League Sorosis Building. New members were welcomed to our headquarters on Lake Morton, where, led by Callie Miller, they engaged in discussion on the Strategic Plan. Then they were inspired by a panel of sustainers consisting of Tiffany Kilpatrick, Alice O’Reilly and Kami Lawson, who highlighted their various League careers, favorite stories, and sage advice.

The first Provisional Meeting of the year was held Tuesday, September 11, at Lakeland Volunteers In Medicine. The class heard from League Historian Sheila Lotterhos, the Communications Council and others helped price items for the Thrift Sale.

The Education & Training Committee has big plans for the 2018-2019 General Membership Meetings, with inviting icebreakers and inspirational speakers.

Our members love the more intimate setting of house parties! Thus, the October meeting will take place on the 2nd floor of Stationery Loft where we will learn about holiday entertaining and the art of gift giving. The committee is also planning a number of new women’s wellness-focused education opportunities.

SPECIAL EVENTS The Special Events committee hosted the perfect end-of-summer Kickoff Party on August 25 for more than eighty League members and guests.

At the party, the Thrift Sale committee had multiple thrift apparel changes as they sold their garb throughout the night. Committee Chairs were given the opportunity to highlight their plans for the year, and Santa and Mrs. Claus read the children’s book that has inspired the League’s float in this year’s Christmas Parade. It was a family affair with children decorating cookies, coloring ‘thank-you’ pages for our Sponsors, watching a summer-themed movie, and best of all, talking with Santa! The Kickoff continued the theme of membership bonding that the Special Events Committee encouraged all summer with their fun events! The Summer socials included a bi-weekly walking club, a dog day at the park, dinner & a movie, Rafa Natural spa night and Red Door mixology class.

MEMBER SPOTLIGHT:

ASHLEY MADD This issues’ member spotlight features Ashley Madden, provisional class 2017-2018 and awarded Provisional of the Year. Ashley was born July 28, 1994 and is the daughter of Fred and Robin Lopez. She is a life-long Lakelander and the middle child of three daughters. Ashley played soccer in college at Troy University and finished her degree at Southeastern University.

After college, in December 2016, she married one of her oldest and dearest friends, John Michael Madden. They recently welcomed their first child, John Luke Madden. Her family attends Trinity Presbyterian Church, in Lakeland, and is passionate about giving back to the community. She is involved with the Florida Baptist Children’s Home and is currently preparing for her first year as a teacher at the Covenant Presbyterian Child Development Center.

“I am excited to pour into the lives of...young children,” Ashley said.

I am passionate about nurturing children, especially in their younger years, as they are so impressionable. Young ones are precious and I am excited to play a role in helping my students learn and develop well.”

In addition to her passion for developing children, Ashley loves the League because it offers women the ability, “to be a powerful beacon of light in, and throughout, the community.” She also admires the comradery the league provides women, and the chance to come alongside each other with love, support and grace. To her, there is nothing better than that.

EASY WEEKNIGHT FAVORITES The end of summer can mean busy weeknights, filled with activities. To help you figure out what to serve for dinner, we asked some of our sustaining members to share simple, go-to recipes to make it easier to gather your family during these hectic months.

Each of these can be combined with a bag of salad for a complete meal. We know you’ll find an uncomplicated favorite that will became a standby in your house too!

Easy Crock Pot Pulled Pork

By Meghan Garcia • 2 Pork tenderloins • Chicken broth • Sliced yellow onion • Everglades Rub • Buns • BBQ sauce Place pork tenderloins in crock pot.

Add sliced onion and add enough chicken broth to cover the bottom and come up the side about an inch.

Depending on how much time you have cook on the high or low setting for the recommended time stated on your crock pot. When the time is up, remove the pork and pour out all of the liquid and onions into a reserve bowl. Shred the pork using “Bear Claws” or forks.

Add the pork back to the crock pot and sprinkle liberally with the Everglades Rub. Mix well. Then add back some of the liquid to moisten the pork. Serve on buns with BBQ sauce. (Serves 6) Easy Chicken Tetrazzini

By Randy Blalock • 1 (16 ounce) package of vermicelli • ½ cup chicken broth • 4 cups chopped cooked chicken breast • 1 can of cream of mushroom soup • 1 can of cream of chicken soup • 1 can of cream of celery soup • 1 (8-ounce) container of sour cream • 1 (6-ounce) jar sliced mushrooms • ½ cup shredded Parmesan cheese • 1 teaspoon pepper

• 1 tsp red pepper flakes • 1 tsp all spice • 3 garlic cloves • 2 tsp fresh grated ginger • 1/2 cup olive oil or avocado oil • 1/2 tsp sea salt • 1 tsp coconut sugar or brown sugar • 2 tbsp tamari sauce or gluten free soy sauce

• ½ teaspoon salt • 2 cups shredded Cheddar cheese PREPARE vermicelli according to package directions; drain. Return to pot, and toss with chicken broth.

STIR together chopped cooked chicken and next 8 ingredients in a large bowl; add vermicelli, and toss well. Spoon mixture into 2 lightly greases 11- x 7- inch baking dishes. Sprinkle evenly with Cheddar cheese.

BAKE, covered at 350 degrees for 30 minutes; uncover and bake 5 more minutes or until cheese is melted and bubbly.

Easy Sheet Pan Jerk Salmon with Veggies

By Susan Rogers JERK MARINADE: • 1/2 packed fresh parsley • 1 tsp ground coriander • 1 tsp black pepper

For the sheet pan Jerk Salmon and Veggies: • 3 wild caught salmon fillets (4-6 oz) • 1 large ear of corn cut into 2 inch slices • 2 red peppers sliced • 2 small sweet potatoes slices 1/2 in thick • 2 shallots (quarter) • 1 tbsp olive oil • lemon juice • 1/4 tsp each salt/pepper/minced dried garlic or garlic powder • Optional fresh thyme First make sure you peel your garlic and then chop stems for parsley. Place everything in in a food processor and blend until smooth. You will have some parsley leaves still not blended.

Place clean salmon fillets in a ziplock bag or bowl and pour marinade on top.

Let it sit in fridge for 10 minutes or so.

SHEET PAN BAKE: While the salmon is marinating, preheat oven to 400F and make sure all your veggies are sliced according to ingredients listed. Toss with the olive oil and lay everything but the peppers and salmon flat on a sheet pan. Season with a bit of sea salt.

Bake those veggies for 20 minutes.

Remove from oven and then add the peppers and marinated salmon between the corn/potatoes, onion, etc.

Then place herbs around it. Sprinkle 17

with sea salt/pepper and garlic all over the whole sheet pan and salmon/veggie combo. Feel free to drizzle any leftover jerk marinade on top too.

and browned on the outside. (It doesn’t have to be cooked all the way through yet.) Set chicken on a plate and cover tightly with foil until step 5.

Place back in oven for 10-12 minutes or until salmon is cooked through.

Remove skillet from heat and add the broth, lime juice, onion, cilantro, and red pepper. Return to heat. Cook and stir to scrape up the browned bits from the bottom of the skillet. Bring to a boil.

Allow to boil gently, uncovered, for 10 minutes or until the liquid is reduced to around 1/4 cup. (During this time you can steam some veggies to have on the side, like asparagus.) Reduce heat to medium-low, then add the cream and butter. Stir until butter has melted.

Add chicken to the sauce and place the skillet in the preheated oven.

Remove squeeze fresh lemon juice on top over sheet pan but mostly on salmon.erve and enjoy.

Skillet Chicken with Creamy Cilantro Lime Sauce

By Susan Rogers • 4 skinless boneless chicken breasts • 1/4 teaspoon salt • 1/4 teaspoon freshly ground black pepper • 1 Tablespoon olive oil • 1 cup chicken broth (I recommend reduced sodium) • 1 Tablespoon fresh lime juice (I use closer to 1.5 Tbsp) • 1/4 cup finely chopped onion • 1 Tablespoon chopped cilantro • 1/2 teaspoon red pepper flakes1 • 3 Tablespoons heavy cream2 • 2 Tablespoons unsalted butter, cubed • optional: lime wedges and more cilantro for garnish, steamed asparagus for serving Preheat oven to 375°F If the chicken breasts are uneven in thickness, pound them down so they’re all even. This way all the breasts will cook through simultaneously. Sprinkle each with salt and pepper.

In a large ovenproof skillet, heat the oil over medium-high heat. Add the chicken and cook for 6-7 minutes, turning once. You want the chicken nice 18

Bake uncovered until the chicken is completely cooked through, about 5-10 minutes.

Serve chicken with sauce spooned on top and any of the listed optional garnishes. Leftovers keep well in the refrigerator for a few days. Reheat to your liking.

Spaghetti Squash Pizza Casserole (serves 6) By Gina Wegman • 1 large spaghetti squash, halved and cleaned • 3Tb olive oil • 1 lb. bulk Italian sausage (turkey or pork) • 1 bag frozen pepper and onion mix (Pict Sweet), defrosted and drained • 8 oz. sliced mushrooms • 2T oregano (use more or less to taste) • 2T minced garlic • 1 cup pizza sauce (or any red sauce on hand) • salt and red pepper flakes (to taste) • grated parmesan cheese Preheat oven to 425*.

Lay squash halves on a cookie sheet and bake until tender, about 20-25 minutes. While squash is baking, heat oil in frying pan and add the next 5 ingredients. Cook at medium high until sausage is cooked thoroughly. Add salt and pepper to taste. Set aside.

Shred squash with fork in a baking dish and pour sausage mixture on top. Add sauce and gently fold all ingredients

together. Spread evenly and add parmesan on top. Enjoy!

Fish Tacos

By Gina Wegman • 12 corn tortillas • 2 Cups defrosted frozen corn kernels • 1/2 cup diced red onion • 1 cup diced jicama • 1 bunch cilantro leaves, chopped • 1 lime, juiced and zested (or 1/4 c bottled lime juice) • Blackening or cajun spice (I use Tony Chacheres) • 6 tilapia fillets • 2T olive oil • Sour cream and/or Hidden Valley Ranch Chipotle dressing Wrap 12 tortillas in foil and place into a 275* oven for warming and softening.

Combine first 5 ingredients in a bowl and set aside.

Brush tilapia with oil and sprinkle both sides with your spice to taste. Either grill or pan sear the fillets, about 3 minutes on each side. To assemble tacos, top a tortilla with fish pieces, corn salsa, and cream topping.

REMINISCENCES OF TRISH DEAL

by Sheila Lotterhos, League Historian Years ago I was asked to write a “League Lines” spotlight on my best friend, Trish Deal. The article was entitled “Miss Congeniality”, and from the number of mourners at Trish’s recent funeral, that title proved apt not only for the League but for the community at large. From the young to the old, from whole families to lone individuals, from old friends to new, from the well known to strangers to all but Trish, they came and mourned the death of someone who showed kindness into the lives of everyone she encountered, and they packed St. Joseph’s to the rafters.

Trish was my first friend in Lakeland, having met her some 39 years ago. In all of that time, I don’t ever remember having a cross word with her, nor do I recall her ever being anything but gracious to everyone. She was my prayer partner and handholder, the sister I chose for myself.

Though petite in stature, Trish stood tall in the face of adversity and was always a lady in the best sense of that word.

She was everything that was good about the South and none of the bad. Well-mannered and welcoming, Trish never knew a stranger, and my biggest regret is that future League members won’t have the chance to know her and experience the genuine warmth of her personality. To that end, I’d like to introduce Trish to our newest members and to reminisce with those members who were blessed to know her.

From line-dancing in Follies to having theme sweaters for every holiday to remembering everyone she’d ever met and being able to recount their stories, Trish was as unique as the handmade lace on an Irish curtain. And speaking of Ireland, it was said that for centuries a stranger could walk across Ireland and be fed and housed by complete strangers who treated them as family. That inclusive quality was ingrained in Trish whose home was always a haven of hospitality for family and friends, Charity Ball attendees, meetings of League members, participants at her mother-daughter teas, and more — just ask the hundreds of trick-or-treaters on Halloween. Trish learned this art from her parents and practiced it throughout her entire life.

A multi-generational Floridian who was born in Pensacola, Trish loved the beautiful beaches of the Emerald Coast and everything about Florida living. The second daughter of David and Mary Johnson, Trish was a vivacious child, sometimes receiving detention for her talkative personality. In 1961, she was queen of the Pensacola Fiesta of Five Flags, a festival celebrating the founding of the city.

After graduating high school, Trish earned both a Bachelor and Master’s of Education from the University of Florida where she was a proud member of Chi Omega Sorority and an ATO Little Sister. She later became active both professionally and as a volunteer in the Lakeland community. Her professional life included being the media specialist at Lime Street Elementary, St. Joseph Academy (where she helped establish the media center), and Santa Fe High School. Many lives were forever touched by her warm and beautiful heart, with her often referring to grown men and women as “my kids”. Trish also worked as a school substitute teacher at various public and private schools in the county and quickly became a popular figure on each campus.

A faithful member of St. Joseph Catholic Church, Trish demonstrated her love for the Lord in everything she did. In addition to years spent as a member of JLGL and as one of our first “working actives”, Trish was a member of various professional organizations, a past president of the Lawyers Wives Association of the Tenth Judicial Circuit, a past president of Lakeland Assemblies Cotillion Club, a past president of the Polk County Media Association, a board member of the Friends of the Polk Museum of Art, a past president of the Chi Omega alumnae chapter, and a member of Lakeland Panhellenic, writing numerous Chi Omega recs and taking pride in each new baby owl.

Everyone who knew Trish understood that her real pride and joy was her daughter Mary Anne. Trish did such an outstanding job as a single mom that she received spontaneous applause as she exited the church on her daughter’s wedding day with the late Monsignor Caufield declaring to me that he had “never seen the like” in his 50 years of ministry. Trish was a living, breathing example of what it is to be a great mother, a wonderful daughter, a loving sister, a loyal friend, and a faithful servant of Christ. People might find it hard to believe that the talkative, happy-golucky Trish claimed she was really a shy person. But as an encourager by nature, Trish never failed to leave everyone she encountered feeling happy that she had crossed their path.

Having been preceded in death by her beloved parents and brother, those left to cherish Trish’s memory are her daughter, Mary Anne Deal Olinsky (Mitch), sister Cathy Johnson Thompson (Jim), nephew Nick Thompson (Chené), great nephew Nicholas Thompson, other family members including the Comforter family of Port St. Joe, and many friends. Godspeed, Trish, till we meet again. Heaven has just gained a new resident of extraordinary quality for whose 75-year life and love we are forever grateful and of whom we’ve “never seen the like”.

Honor a fellow League member through the Commemorative Fund The Commemorative Fund is a way to recognize a significant event in a Junior League member’s life. It is a way to let a fellow League member know that you are joining in their celebration or thinking of them in a time of sorrow. A commemorate fund donation can celebrate anything you like.

The holiday season is drawing near! Join us for the firstever Luminary Night, Light Up Lakeland for Literacy, Sunday, December 9 at 6:00pm. We hope you’ll join us in making this part of your holiday tradition! Luminary kits (15 bags, 15 candles, sand and assembly instructions) are available for $20 each, or two kits for $30.
