It sure has tested the mettle of a lot of ranchers in the western states and High Plains hitting 17 states. Record low temps and high snow fall in December in our general area were followed in January by at least two rounds of blizzards including high wind and very deep snow. Helbling Brothers Continue Lifelong Dedication To Raising Line Ones

Conditions like these test the resilience and fortitude of ranchers and survivability of cattle. Loss of power in many areas, 6.3 million across the country, exacerbated the situation for people and livestock. Seems like if you live through a few of these you become resourceful in how to keep livestock water open. The humans can come second in ranch country but most people manage just fine.

Deep snow and drifting were incredible, making it difficult for people and livestock. When you talk about a deep-rooted passion for Line One Hereford cattle, the Helbling family should come to mind.

Herefords, horned Herefords specifically, have been the business of the Helblings since the 1940s. Today, the Helbling brothers and their families continue to run the ranch with the same passion with which it began.

the ranch in 1945, southwest of Mandan, ND, naming it Matt Helbling Herefords. At the time they had 10 cows and two little girls. The couple later added three boys, Fred, Jim and Wayne, who took over the family ranch in 1984. Starting with 145 head of cows, improvement and strategy over the years have led them to a current total of around 450 calved out this year.

Magnolia Meadow Farms: Unique

All three boys were involved in 4-H, FFA, and livestock judging growing up and learned the love of cattle from a young age. Fred Helbling attended North Dakota State University and earned his Bachelor’s of Science degree in Animal Science. He and his wife Pam have two daughters; Anne and Danielle, seven grandkids and a few great-grandchildren. Fred took time after high school

Venture, Unique Opportunities

When people wonder how Amber Seiss keeps up with managing multiple businesses, a farm and a family, she says, “I wake up and I do. Each day is started with intentionality.”

Amber and Brad Seiss own and operate Magnolia Meadow Farms near Thurmont, MD, where they raise registered Hereford cattle and run an agritourism venture. Brad also has his own construction business, building custom

homes and doing custom kitchens and bathrooms, and Amber manages their retail businesses. The couple met at the Junior National Hereford Show where Brad won Senior Showman and Amber was the Hereford Queen.

Jill’s Editorial...

(continued from page 1)

had big drifts, the high wind revealing open areas of grazing. Not everyone was that fortunate. It’s been awhile since we’ve had a hard winter like this and we have several months left of it. The after effects on cattle and sheep will be seen during calving and lambing and in bull fertility later in the spring.

Going through storms like this makes me think of how well Herefords and baldies are equipped to handle this kind of weather. With thicker hide and denser hair than most other breeds they are built to endure cold weather.

Attributes of Herefords and F-1 Baldies are many and I am glad to see the American Hereford Association’s current ad campaign promoting these.

Years ago we used to run small ads in our paper outlining the bottom line of the Hereford advantage in an F-1 Angus-Hereford cross. The information hasn’t changed and the AHA’s ads are quite good. Information is based on the Harris Ranch study from 2017. But as I’ve said before, there is nothing that beats personal experience for knowing what the attributes of Herefords and baldies are and what kind of a positive effect the F-1 cross has for a commerical producer. Free pounds from heterosis will equal more money in the end.

If room permits, I will run one or more of these ads. They are available free on the AHA’s website in the Marketing section, for any of you wanting to see them or use in your bull sale catalogs. Following are the high points in one of these ads:

“Hereford bulls increase net profit by $51 per cow per year.

That’s $20,000 in additional revenue for a typical 400-cow outfit, thanks to increased fertility and herd size.

Herefords are also the efficiency experts, proven to add value to calves in the feedyard.

• 7% higher pregnancy rate

• $51 more per cow, per year

• $20 value in feed efficiency

• $30 advantage in feedlot profitability

(continued from page 1) to travel around and fit cattle for shows and sales for Oxley Herefords. Fred decided to come back to the ranch after college due to his love of the industry and to keep the family business going.

In April of 2022, Fred was awarded an honorary member of the North Dakota Stockmen’s Association (NDSA). “I was humbled and honored beyond belief,” he said. He has been a board member from 2006-2016, on the brand board, sat on the purebred council for 19 years and a member of the NDSA since the early ’90s, going to conventions and spring roundup each year. “I knew a lot of people that were involved in the Stockmen’s Association and I’ve met a lot of great people through the association. Other associations Fred is

involved in are the NCBA, the American Hereford Association (AHA) and for the Beef Checkoff Council, where he is a federation director. Jim and Wayne are “lifelong” members of the American Hereford Association.

Jim is married to Sandy and they have three children, Wyatt, Annie and LaReah, along with two grandchildren (James and Lillian) who get to check cows with their grandma after they get home from rural school.

Wayne married Ann Matheny in 2021. She had been widowed and has 3 kids, Candice (Marc) Perea and her children Liz, Alex, Phin, and Evan, Alpharetta, GA; Matthew (Sarah) Matheny, his daughter Hannah, Garrison, ND, and Mark (Sean) Matheny, Atlanta, GA.

Both Jim and Wayne live within a mile of the ranch, so they are able to tend to the cattle and be there at the drop

of a hat if need be. As Fred lives around 15 miles from the ranch, he credits his brothers for feeding and tending to the cattle when roads may be blocked in the unpredictable North Dakota weather

when he cannot reach them. “When I’m gone at Stockmen’s Association conventions, they’re home doing the chores. It is really helpful and enables me to do (continued on page 28)

those things,” said Fred.

Living in central North Dakota, the Helblings have encountered severe weather on both ends of the spectrum: severe drought for years and bitter cold reaching into the -40s with feet of snow to accompany it. To keep the cattle protected during the cold North Dakota winters the importance of shelter is paramount. Another strategy that the family has changed is the time of calving to the middle of April to hopefully avoid the late winter storms and the sickness of the calves that come with them. Now the bulls are turned out

around July 15th; sometimes later on the shared ownership bulls they have with Jack Holden and Mark Cooper. Like many other ranchers during the drought, extra hay had to be purchased to supply enough feed over the winter. “We need to make sure we have plenty of feed and we definitely depend on those timely rains we happen to get,” said Jim.

Continuing with cattle nutrition, the Helbling family focuses on a nutrition plan that will maintain their cow herd. Both the steers and heifers are backgrounded on their ranch with the steers receiving a growing ration in order to be at peak weight when it comes time to sell. The animals all get supplemented with mineral as well.

On the farming side, the Helblings farm corn for silage, oats for combining as well as some for hay, and plant oats and wheat for cover crops. A TMR wagon is used to mix and distribute the ration of silage and chopped hay to the cattle on the ranch. One thing that is really important to the Helblings when it comes to nutrition for their bull calves is not needing to push them to a target weight by a certain sale date, which is one way that private treaty selling has benefited them. Fred explained that this has helped the bulls once they get onto pasture for their customers, as some will actually gain weight during the breeding season rather than lose, depending

on how hard the bulls are used. The yearling bulls that are sold stay in the feedyard until around the fourth of July, then are put into a grass pasture which helps develop soundness.

Since 1983, nothing except Line One Hereford bulls have been used. Some herd sires that started the business were bulls from Ron Baker, Oxley Hereford ranch, and Carlson Herefords. Currently, the herd has heavy influence from Cooper Herefords and Holden Herefords. When discussing sire selection, the Helblings look for balance among the traits and never focus too

among the traits and never focus too much on one; however, moderate birth with good growth EPDs are within the top two, especially when they market to ranchers with Angus cow herds looking to crossbreed. A few bulls who have had a big influence on the herd have been KB L1 Domino 311 bought from Bakers in 2004 and stayed in the herd until he was ten years old, 532, a 175E son of a Cooper bull, and 2215, another Cooper bull. Currently, a herd standout is the Cooper bull 995. “This bull is a great bull who can handle 45 cows in his own pasture and get them all bred with no problem,” said Fred.

Each year, the ranch offers around 25 two-year-old bulls and 50 yearling bulls on private treaty. “With private treaty sales, the most important characteristic to have is patience. Some years you’re looking down the bunk at 50 bulls and it’s the middle of April when nobody has called yet. At that point you’re wondering what you’re going to do. The next thing you know it’s three weeks later and half of your bulls are sold and off to the customer’s pasture,” said Jim. This also works in the central ND area due to the turn out time of the customers who aim for the later calving date.

The calves who are not selected as bulls are backgrounded on the place and sold as steers.

Helblings get together with other local Hereford breeders and sell the steers at the Mandan sale barn in a feeder calf special. Marketing is done by ads as well as word of mouth to get buyers to the sale barn.

Helbling Herefords also utilizes the opportunity of crossbreeding to broaden

the market for their ranch. Each year, the top end heifers that are not chosen as replacements to stay on the ranch are bred to black Angus bulls and sold as bred heifers. “This really gets customers perked up about buying Line One Hereford genetics. The F-1 cross calf they will get out of these girls will be very nice and do really well for them,” said Fred. This Spring was the first time that the ranch retained black baldy heifers to keep as replacements to raise feeder cattle.

have for their ranch is to maintain the breed character and the attributes of the Hereford breed. “We want to make sure our customers are satisfied with the soundness, fertility, and longevity of the cattle we sell them,” Jim said.

This family is deeply rooted to Herefords. When posed with the question, “Why stay with Herefords?” The brothers answered, “We have an appreciation for the breed, what I saw my dad doing with them growing up and how they do for us now. Herefords have always been good to us. The disposition of the breed is second to none.”

“Ranching and raising these cattle is in our blood. We’ve always been around it and always looked forward to making it our own,” the brothers agreed. Bulls

his banner for the photo,” Amber said. “If it wouldn’t have been for Herefords, I wouldn’t be here.”

Amber grew up near Pipestone, MN, where her family had a small grain and livestock operation. August marked 15 years since she and Brad began their life together in Maryland.

“My family always had Herefords,” Amber said. “I got into showing cattle as a kid, and we were always running around to shows. My mom would always try to talk us into going on a summer vacation, but my sister and I always chose the Junior National. That became our thing. I was also active in 4H and FFA. When I was older I became Hereford Queen, and that was how I met my husband.”

Amber’s parents, John and Joyce Schmidt, still raise registered Herefords on their farm. They started out with horned Herefords, which caused a bit of a scuttle when Amber was chosen to be the National Polled Hereford Queen.

“We did have some of both by then,” Amber laughed. “Brad and I have some of both in our herd as well.”

Brad grew up in the Thurmont area. He comes from a long line of home builders; his grandfather, his father and his uncle were all in the construction business. His mother was a florist, owned a flower shop and helped with the bookkeeping for her husband’s business. Brad was the first person in his family

to have cattle.

“When he started showing cattle his mom and dad had no experience with livestock,” Amber said. “He started clipping and fitting cattle and loved it. He traveled around quite a bit. He worked for Star Lake Cattle Company in Oklahoma, and we both worked for Cherry Knoll Farm in Pennsylvania for a time. We both made a lot of connections in the cattle industry.”

Brad and Amber have owned cattle since before they were married, but their cattle were scattered out to different places until 2021 when an opportunity came up to purchase a farm near their home, and Magnolia Meadow Farms became a reality. The farm was a mixture of cropland, farmland and hay ground, but Brad and Amber chose to transition most of the cropland into grassland.

“We live on red dirt here,” Amber said. “It’s not ideal for cropping. We had a field that we tried to plant to soybeans, but it was such poor soil and so rocky that it would literally throw the planter out of the ground. It’s in grass now and it’s going to stay that way! Conservation is important to us, and we have worked hand in hand with the soil conservation

service through this transition process. We did leave some of it in cropland but ninety percent of the farm has been planted to grassland and that is truthfully what it needs to be. It’s all being fenced so that we can keep all of our cattle on our home farm.”

Small fields have been kept for planting corn for their corn maze, a wildflower field, a sunflower field and a pumpkin field, which they maintain for their fall agritourism events on the farm, but most of the farm is in grass for haying and grazing. Cover crops are planted on fields not in direct production using No-Till practices.

“We’re slowly embracing the fact that we don’t all have to do the same thing, that farming doesn’t have to look the same for everyone,” Amber said. “There’s something very beautiful about Herefords on fresh grass.”

Brad and Amber are thrilled to finally have their herd of registered cattle on their own farm.

“We are growing our recip herd for our own embryos, and we also do custom embryo work and grow and raise those calves for other breeders,” Amber said. “Last spring we were able to bring 30 cow calf pairs from my dad’s farm here, as well as bringing our other cattle home.”

Amber started her career as a special education teacher.

“I loved every day of it; I loved the kids, I loved my job,” she said. “It did require a lot of commute time and time for other work related engagements. It took a little bit of a toll on family time. I realized quickly when our daughter was young that I needed to think about something else. What I love about life now, even though I probably work more, is that I get to spend every day with my family. I get to spend every day with my children and Brad and I get to work on the farm together.”

In 2018, the right opportunity came; Brad and Amber purchased Gateway Candyland and Gateway Liquors, and Amber started The Farmhouse Exchange. All three businesses are under one roof but they are separate entities. Amber’s goal is that they will all give back to each other, that each makes the others stronger. Through the Farmhouse Exchange, she sells local beef, pork and poultry, as well as offering other locally grown produce in season.

“It’s a huge asset to the farm to be able to further market products we have in a variety of ways,” she said. “We’re not a farmers’ market, we’re a retail store. We partner with other local farmers and growers to bring anything seasonal to our customers. We purchase corn, tomatoes, strawberries and other produce to sell at the store. Our focus is on putting locally grown food in people’s hands and on their tables.”

The Farmhouse Exchange offers

specialty sandwiches in the deli and offers frozen meat to customers to prepare for meals at home. They also provide delicious meals from the deli at the concessions area during fall open house days at the farm.

“It’s the same home raised product either way,” Amber said. “We utilize recipes from our kitchen. One popular item is our beef-cheddar bratwurst with a Maryland twist, crab dip. Families who come to enjoy a day in the corn maze or pumpkin patch who enjoy a

meal can purchase frozen products to take home. Often, they come back as long term customers to buy meat for their families.”

Educating customers is part of the process of building their businesses.

“Around here the huge push is to shop local, the farm to table movement is strong,” Amber said. “To people who live in a largely rural area where nearly everybody raises their own beef, there may only be a small market for a producer who wants to sell meat directly to consumers. Here our market is the majority of the population. Family farms, if

still around, are very small, and we have so many mouths to feed. When you get into the city, most people have no direct connection to people who raise food.”

Amber offers weekly bundles that include a combination of frozen beef, pork and poultry. One new customer called her with a question. He had never seen ground beef that was red before. Other beef he had purchased elsewhere on previous occasions had always been grey from sitting in a meat case for several days.

“He had no idea that was how beef should look,” Amber said.

Magnolia Meadow Farms offers U-Pick pumpkins, wildflowers, and sunflowers in the fall, as well as a corn maze and evenings of entertainment by area musicians. Amber also sells some of the flowers and pumpkins in her retail store. She creates one of a kind items for marketing at the farm, including custom chocolates. When the season is over, the corn maze gets combined and the cows get turned out in the pumpkin patch.

“Cows love pumpkins and it’s a natural food source for them, so we can kill two birds with one stone,” Amber said. “In the fall we utilized a helicopter to

broadcast cover crop seed in our corn maze, pumpkin and flower fields. By the time our fall season was done and the corn was combined off the cover crop was pretty decently established.”

Amber tries to be creative about unique ways to market their products.

“It keeps my brain churning, figuring out ways to tap into markets that wouldn’t otherwise be obvious,” she said. “We grow pumpkins, so a U-Pick pumpkin patch is a pretty obvious way to market them. Last fall we partnered with Idiom brewery, another local busi(continued on page 40 )

ness, to create pumpkin beer. Pumpkin beer is not so obvious! We have some people who come to the farm for an evening to relax, have a couple of beers, eat and listen to music. It’s very low key, a lot different than going downtown.”

Depending on the season, there can be more challenges than others, but Amber sees the difficulties as opportunities to learn, and as a chance to utilize her creativity.

“There’s something new every day, every day brings new challenges,” she said. “I get to utilize the creative part of my brain, balancing new things with the daily routine of life. There are definitely benefits to working for yourself.”

Herefords have always been a part of Amber’s life and she feels they are the perfect breed for getting their children involved with cattle.

“I was born and raised with Herefords,” she said. “I can’t think of a better cattle breed to introduce kids to. Piper’s first couple of show heifers were so calm. They made it a good experience for a shy, timid girl. We will always have them.”

Brad and Amber’s seven year old daughter, Piper has been showing calves since she was five.

“We attend several Jackpot shows locally, this year will be her first Junior National Show,” Amber said. “She loves everything about working on her cows. She enjoys that time when mom and dad are captured with no distractions. She also liked coming out in our fall season and was willing to do whatever was needed to help. We’re finding more things for her to do so she does feel involved. She got to help Brad pull out the posts we used for maze checkpoints before the corn was combined and was happy as a clam out there in her muckboots.”

The couple’s son Brooks is four and Amber said that he loves anything that involves a tractor.

“He’s happy to be out there with us doing most anything,” she said. “He helped drill in a lot of the grass; when we bale hay, he’s in the truck watching everything. We have a bottle baby that he can feed. He’s a ball of energy, ready to do anything, and he’s slowly growing into it.”

NWSS Stockyards Beef Festival is ‘crazy good idea’

Jan 20, 2023

First printed in The Fence Post Reprinted with permission

First annual event buzzes with sell-out crowd

The first annual Stockyards Beef Festival took place during the 2023 National Western Stock Show on Thursday evening, Jan. 12. Inviting legacy stock show beef producers to showcase their private label product in the form of sample plates, along with bringing a few open yearling heifers with impeccable genetics to stand at auction in the middle of the event, was a one-of-akind way to present a variety of good beef from hoof to plate. Given current consumer demand to know where their beef comes from and how it was raised, the NWSS event aimed to connect that demographic with producers in its own yards. Pairing the private label beef with boutique wine producers served to widen its appeal.

Chef Adam Siegfried, who runs the culinary portion of a pair of Coppermill Steakhouses in Nebraska, holds up just one of the many 45-day dry-aged, bone-in Angus ribeyes from Connealy Angus that were being sampled out to the big crowd attending the NWSS’ first annual Stockyards Beef Festival on Jan. 12, 2023. Siegfried uses Connealy Beef at his steakhouses, so came with them to chef it up at the event. He stated the Connealy Beef table sampled out every bit of the 40 pounds of the high-end ribeye they brought with them.

“I think this is just a crazy good idea,” said NWSS President and CEO Paul Andrews. “I got a call a year ago about this concept from Brent Lonker (of Lonker Ranch in south central Kansas). He said I’ve got this idea to bring some legacy producers here with four or five animals that we can auction off and pair it with dinner and wine for around $50. What do you think? And I said, Brent, I think you’re a genius,” finished Andrews with a laugh.

“The market is exploding,” explained Brent Lonker about why he organized the event. “People are almost begging to get their beef from where it is raised and not from the store. And they want to know how it is raised. We are all about that, so we decided let’s also bring our beef (to the NWSS). We spend so much money bringing our cattle here, but the most important thing we do is sell our product to the consumer.”

Sharon Connealy, back to camera, and Hannah Connealy, standing right of Sharon, talk to potential customers

and serve samples of their Connealy Angus private label beef to attendees of the first annual NWSS Stockyards Beef Festival. “It exceeded our expectations,” said Hannah Connealy at the completion of the event. “We

NWSS Stockyards Beef Festival is ‘crazy good idea’

are so honored to be a part of it and we can’t until next year.”

(continued from page 51) Beef in Gilroy, Calif. Figone was helping owner Robert Bianchi and crew serve up angus influenced Charolais New York strip steak at the first table. “There are a lot of people here from the Denver area that are not too sure what is going on in the real, behind the scenes of the beef industry, so it is nice to be able to talk with them and bust a lot of myths.”

Their instincts were correct, as the Witwer Memorial Show Arena in the yards hosted a sold-out throng excited to sample beef and wine from five different tables. A thoughtful feature included the beef samples representing not only different cuts but different breeds of cattle. Visitors savored “angus influenced” Charolais, purebred Angus, purebred Hereford, a combination of those breeds and even some Gyulais (Wagyu/Charolais).

Ben Justman, owner/winemaker at Peony Lane Wines located in Paonia, Colo., offered samples of his natural wines and talked to attendees at the inaugural Stockyards Beef Festival at the 2023 National Western Stock Show on Thursday Jan. 12, 2023. Justman’s Peony Lane Wine’s Estate Pinot Noir is harvested from his family’s “highest elevation AVA in the country.”

MEETING CONSUMERS

“I think it is a great event and it helps give us a very large exposure,” said Juli Figone, the marketing partner for BR

Another table feverishly keeping up with demand for its 45-day dry aged, registered Angus ribeye was Connealy Angus from the Nebraska sandhills. With a reputation honed by Jerry and Sharon Connealy into a pinnacle producer of purebred Angus genetics, the Connealy family had daughter Hannah develop their Connealy Angus Meat Market private label brand, which they brought to the NWSS’ beef festival. Between serving up their entire 40 pounds of ribeye and hustling throughout the arena taking payment and filling orders for their aged beef, the Connealy’s thought the inaugural NWSS event exceeded expectations.

“Oh my gosh, yes,” said Sharon during a pause in filling plates. “We can connect with folks who don’t under-

stand what we do and this helps those folks feel comfortable with who we are. We are not corporate. We are families.”

“We are thrilled with how it is going,” agreed Hannah between delivering cooler bags of their beef to new customers. “We are excited to meet the people we are feeding and for them to be able to talk to us. People are becom-

ing more concerned with the environmental piece of it and they can feel really good about how we have sustainably and ecologically raised that steak. The people I sold to were transplants from Brooklyn and Manhattan and the east coast and Denver. They were the folks we wanted to connect with. I had great conversations with people that know nothing about ranching and that

The Certified Hereford Beef table at the inaugural Stockyards Beef Festival sampled flavorful Tri-Tip to the sold-out crowd filling the Witwer Show Arena at the 2023 National Western Stock Show. (January 12, 2023)” In a unique aspect of the Stockyards Beef Festival, attendees were able to eat samples of delicious beef and have the chance to purchase the beef on the hoof that helped produce what they were tasting. As part of the inaugural NWSS event that showcased the entire product from hoof to plate, four open yearling heifers from excellent producers were auctioned among the gathered attendees. In a unique aspect of the Stockyards Beef Festival, attendees were able to eat samples of delicious beef and have the chance to purchase the beef on the hoof that helped produce what they were tasting. As part of the inaugural NWSS event that showcased the entire product from hoof to plate, four open yearling heifers from excellent producers were auctioned among the gathered attendees.

“We knew this event had the opportunity to reach a lot of people, but you can only hope an event has a start like this,” said Jenn Boka, NWSS director

of livestock operations, while working the enthusiastic crowd. “Nothing feels better than getting these kinds of people together. This is phenomenal.”

PERFECT PAIRING

Helping to make it phenomenal was a Colorado winemaker named Ben Justman. His Peony Lane Vineyards western slope winery was invited to sample out his natural wines from sourced grapes that are fermented using his own yeast and then aged onsite, along with marketing his Estate Pinot Noir from a high elevation vineyard that his father planted in the early 2000s. Typically selling in ski-town farmers markets, he appreciated working an event with private label beef producers.

“It is a perfect pairing here,” said Justman about the event’s boutique wine seller/private label beef combo. “I mostly do sales through farmers markets to people that want to connect with their farmer. These are great people here that are producing great stuff.”

“That is why I thought it was such a cool idea,” said Andrews about the high-quality beef producers Justman noticed. “The ranches that have brought stock here are legacy stock show exhibitors. I just think this will take off and become as big as we possibly can get it, in here.”

“It wasn’t easy, but it was sure worth it,” said Lonker as the large crowd departed for home. “There were some (cattle producing) leaders that stepped up. The Connealy family stepped up immediately. They share the vision of connecting the cattle and the beef together, but there were just a lot of folks stepping up. All the credit to the NWSS,” Lonker added. “They saw the vision from the top on down.”

Looking ahead, that vision sees this new Stockyards Beef Festival growing larger and getting even better.
