Bobotie Recipe

This classic dish from South Africa, Bobotie (pronounced bo-bo-tea), is made with beef, seasoned to perfection and, finished with a creamy, decadent, egg topping The fusion of the curry powder and raisins give it a distinct taste It is rich, spicy, aromatic, and zingy A hearty meal to be enjoyed with loved ones, full of the flavours of Africa!

Ingredients
1 large slice of bread (crusts removed)
1/2 pint of milk
1 finely chopped onion
1 chopped apple
1 1/2 tsp curry powder
1 tbsp mango chutney
10g flaked almonds
20g raisins
1 tbsp lemon juice
400g minced cooked lamb
2 beaten eggs
Instructions
Pre-heat oven to 180°C

In a medium frying pans, cook off the lamb mince until golden brown
Soak the bread in milk in a shallow dish
In a large pan, fry off the onions in the butter over a medium heat, and once translucent, add the chopped apple pieces Cook for 5 minutes, or until the apple has softened
Turn down the heat slightly, and add in the chutney, almonds, raisins, curry powder, turmeric, and lemon juice
Squeeze the milk from the bread, and add to the cooked lamb
, keeping the milk aside
Mix together well and season to taste with salt and pepper
Add the lamb mixture into the curried mixture, and place in an oven-proofdish
Cook in pre-heated oven for 15 minutes
Mix together leftover milk and whisked eggs and pourover cooked meat
Bake for 45 minutes until set on top
