NO MATTER HOW OFTEN it has happened since last November, it still warms my heart. Every time a Club member stops me at The Boca Raton to ask about my daughter and her life updates after spending a week with her aboard last year’s inaugural Explora President’s Cruise, I feel grateful. One of the youngest travelers of our weeklong brand-new Explora cruise ship last fall, my daughter accompanied me and two dozen members as we shared experiences—from dinner conversations to excursions—that generated lasting memories. It was so enjoyable that we are doing it again this fall for the inaugeral journey of Explora II, setting sail from Barcelona and cruising throughout the Mediterranean.

It’s these intimate, unique opportunities to connect with fellow members and guests that make The Boca Raton so special. At the end of this year, we look to make another major difference in the lives of our members and guests with the unveiling of the reimagined Beach Club. Set to frame our golden beach as the renewed Florida Riviera, the reveal of Beach Club will feature a soothing coastal design filled with moments that will captivate the most discerning jet-setter. When it opens later this year, Beach Club will have three different dining options (including a new indoor-outdoor space for Marisol), three glistening pools, private cabanas, completely redesigned rooms and suites, a new event lawn and a bounty of programming, making it an all-encompassing experience set against our private beach. Read more about the hotel’s reimagination on page 28.

We couldn’t have begun this project without the support of our members and guests, who can continue to enjoy the pools and beach during the renovation. Because of them, we are able to improve upon perfection, allowing the already Forbes Five-Star Beach Club to reach a completely new status of oceanfront luxury.

This issue also features more of The Boca Raton difference in the way of our culinary team. Within the pages ahead, we speak with some of our talented pros who share insights on what makes our restaurant experiences so special. From specialty salts sourced from

Greece and Hawaii to perfectly measured bagels that showcase both artistry and science, our culinary masters bring much energy and devotion to each meal they prepare, allowing any dining experience on property to be an exceptional one.

Beach Club Anew, Caviar for Days & Alluring Art on the Intracoastal

BEACH CLUB REIMAGINED

A new Florida Riviera is on the horizon. In December 2024, The Boca Raton will unveil its newest chapter with a reimagination of Beach Club. The new soothing coastal design will present a tranquil atmosphere with immersive experiences at the intersection of fun and luxury.

The Forbes Five-Star property is set to undergo a more than $100 million investment that will reveal a coastal destination that seamlessly connects the interior spaces with the outdoors, complete with tailored experiences and eclectic flavors. Guests and Club members will discover an entirely redesigned arrival, new restaurants, a completely refreshed lobby featuring a new bar and café, a new fitness facility and oceanside event space, and a stunning renovation of the hotel’s 207 guest rooms and suites.

“When the new Beach Club is unveiled, you’ll experience the elevated service that you’ve come to expect, but with even more personalized touchpoints and playful amenities within a newly inspired setting,” says Daniel A. Hostettler, President & CEO of The Boca Raton. “This transformation is going to catapult the Forbes Five-Star destination to a completely new level of oceanfront luxury.”

The fully renovated hotel will showcase natural textures and open, light-filled spaces. Several new suites will flow into expansive poolside outdoor living spaces—as overseen by Urban Robot Associates, a full-service design collective in Miami Beach.

Marisol, the popular Mediterraneaninspired restaurant, will have a new indooroutdoor locale with an extended terrace and sweeping ocean views. In addition,

a new beachfront dining concept will be introduced, showcasing global culinary talents. Snacks and bites, as well as great social vibes, will be prominent in the redesigned Beach Club lounge with floorto-ceiling views of the private beach, ideal for an early morning coffee or an islandinspired aperitif.

With three entirely different dining options, three glistening pools, a golden beach, various water sports, and a bounty of programming, there will be no shortage of things to do at the new Beach Club.

“It will present members and guests with a new robust option to enjoy the day or many days,” says Hostettler. “Whether you want to stay busy and active, or lounge each day away in the sun, Beachside will have everything you need for a complete oceanside immersion.”

When it’s time for a lazy afternoon, guests and members can spend it at three upgraded pools and the beach, where curated new experiences will be debuted. Exclusive poolside cabanas are in partnership with St. Tropez swimwear brand Vilebrequin. Within a redesigned fitness facility with state-of-the-art equipment, floor-to-ceiling windows will brighten the space with natural light. Meeting spaces will be refreshed with the addition of an oceanside event lawn, making it a perfect setting for board meetings, smaller executive groups, beachside weddings, milestone events, and social celebrations.

“The design concept is inspired by the calming atmosphere of Beach Club’s setting, to immerse guests in the beauty of the surroundings and indulge in the luxury of coastal living,” says Giancarlo Pietri, Principal of Urban Robot Associates. “A rich and authentic material palette comprised of honed natural marble, limewash plaster walls, and cerused woods accented by a vibrant coral color will create a tranquil retreat.”

ART AT YACHT CLUB

Set along the marina at the adults-only all-suite Yacht Club hotel, find inspiration among the nearly 30 pieces of work within its halls. Most pieces feature the second generation of Abstract Expressionism, the next wave after Jackson Pollock and Helen Frankenthaler. Cristin Longo, registrar with Sponder Gallery, says, “Abstract Expressionist artists were influenced by the ideas of psychoanalysis and believed in the importance of tapping into the subconscious mind. They often worked spontaneously, allowing their inner thoughts and emotions to guide their creative process.”

Artwork includes pieces from Stanley Boxer and Dan Christensen, each emphasizing spontaneous, gestural expression, and the exploration of color and material. They often used bold brushwork, dynamic compositions, and non-representational forms. Both used unconventional materials and techniques to create texture and depth. “Gesture and movement were central to the aesthetic of Boxer and Christensen, whose spontaneous movements are trapped in bold swaths of color,” Longo says. “The resulting artworks are an artifact of their choreographed actions.”

At Top of the Tower, guests of the Tower Suite Collection can enjoy an exclusive caviar menu curated by Caviar Russe, whose New York City location has been honored with a Michelin star. The celebrated brand features a focused selection of the finest first-quality caviar, including osetra, beluga, sevruga, and others. We sat down with Caviar Russe Executive Chef and Owner Edward Panchernikov, who delved into just why the delicacy is so distinct.

What is the Caviar Russe difference?

Our number one differentiator is the source of our caviar. Unlike other caviar purveyors, all our caviar is single-sourced from our exclusive farm in Germany, with whom we have partnered for almost 20 years. In addition, the caviar is derived from pure Caspian Sea lineage, forming a direct line between wild caviar of old and today’s farmed alternative.

Why branch into hospitality? We believe that when you sell such a premium product as caviar or serve it in our restaurants, it needs to measure up to that old idea of caviar as a true luxury. This means providing amazing packaging as well as white-glove service for at-home enjoyment or in-person pairing with exceptional cuisine and equally grand service from the front-ofthe-house team, something that has been reflected in our award of a Michelin star for the past 10 years in a row.

What is a new way to enjoy caviar? Honestly, I think with caviar, what was once old is new again. For most people, the way they have enjoyed caviar, especially in recent years, is if it is presented as a garnish on a food or a topper—on, say, chips. But really, what we take great pride in is presenting caviar classically, where the caviar is the star, and that allows the consumer to really indulge in the product and enjoy it on its own, similar to a fine wine or spirit.

What are some must-have menu items at The Boca Raton? The caviar service at The Boca Raton is similar to how we present our caviar at our restaurants, with really playful garnishes and traditional accompaniments, like blinis and Yukon gold potatoes. This gives the guest a fun way to enjoy the caviars and mix and match what to put them on.

SWEET DELIGHTS

Discover new selections of delights at Maison Rose this season, including fudge boards. A fun play off charcuterie boards, these specialty treats feature a selection of house-made fudge, such as twolayered milk chocolate and hazelnut praline.

The confectionery store will also offer its very own brand of gelatos and sorbets. Available in half-pint sizes, the fresh-churned cool treats (made in-house!) will include permanent flavors like chocolate, as well as rotating options that speak to the season. Chef Sebastien Feneyrol says they will be creative and nuanced enough to keep dessert lovers coming back for more: “The flavors will be exciting, like a rose lychee gelato with macaron chunks or a Key lime cheesecake gelato swirled with lemon macaron chunks.”

For adults looking to add a kick to their dessert, Maison Rose proudly serves Aubi & Ramsa alcohol-infused ice creams. The Miamibased brand features premium alcohol and ingredients produced in small batches, making for an extra-flavorful delight for those 21+.

CRUISE CONTROL

Set sail this fall in the Mediterranean on The Boca Raton’s second-annual President’s Cruise. The all-inclusive journey aboard a luxurious Explora cruise ship promises a memorable adventure at sea among fellow Club members, resplendent in fine dining and a cultured environment. Sailing from October 25 to November 5, the maiden voyage of the Explora II will stop in Barcelona, Malaga, Lisbon, Tangier, Gibraltar, Valencia, Mallorca, and back to Barcelona.

Building off the success of the inaugural Caribbean cruise in 2023, which saw Club members share curated experiences within the luxurious and intimate setting of Explora I, the second edition promises to create even more memories. “It was really fun to spend time with members in a non-Club environment,” says Daniel A. Hostettler, President & CEO of The Boca Raton. “I loved seeing the members get to know each other, and now I see them at The Club continuing the friendships that they created while on board.”

Muralist Jason Gaillard hones in on the coastal feel at Harborside Pool Club with the addition of his two vibrant art pieces. The California resident brings surf vibes with his pieces, visually directing viewers toward the FlowRider and upstairs at The Break. Gaillard breaks down his inspiration in an exclusive conversation with 1926

The inspiration: “I’ve always loved the way the human figure looks when carrying large surfboards, and this was a big inspiration for the murals. Although I have never surfed, I felt a strong connection to the ocean growing up in New England. We used to go to Cape Cod and Nantucket and go swimming, boogie boarding, and body surfing. We still try to visit Nantucket once a year. Other inspirations for the design of the murals were Japanese woodblock prints, vintage surf posters, and Harlem Renaissance artist Aaron Douglas.”

Your definition of “vacation”: “I like to be active on vacations. I usually start the morning with a run, followed by making a

small plein air painting. Then we head to the beach for the day and plan a great dinner. You can’t beat a clambake on the beach with good friends and family.”

That feeling when…: “There’s an incredible feeling we get after spending the day at the beach—of being relaxed but recharged. I think it’s because we are physically connected with the elements. When you’re in the sun and the water, have your feet in the sand and the wind on your face, it’s like a reboot. I wanted the mural to have this feeling.”

Team effort: “ The whole project was a collaboration. When speaking with Mr. Hostettler about the design of the mural, we felt that it was important to capture the attention of not only the guests and members, but also community members riding by on boats and in the cars going over the drawbridge. The murals look best when there are people walking in front of them, and the shadows from the palm leaves sway across the surface. Some people may notice that we depicted in the murals a couple of professional FlowRider instructors, Zach and Luke, and a professional surfer, Ana, who works in Harbor House.”

A tennis clinic makes this player a believer again. And here’s a welcome to The Boca Raton’s new Director of Golf.

BY THE TIME I HIT my 10th consecutive unforced error on Court 12, I realized I needed much longer than a one-hour tennis clinic to clean up my act. Alas, a 60-minute time frame was all I could space during my recent outing at Racquet Club, a storied locale that has, through its history, welcomed the likes of tennis greats Fred Perry, Jimmy Connors, and Madison Keys. And now, me.

“Relax before you hit the ball,” tennis pro Larry Gottfried advised me after I dumped the ball into the net once again. Easier said than done, I thought. But the bigger takeaway was that after a handful of strokes, Gottfried saw something that no one had been able to pinpoint before in my tennis game: a mental glitch that spilled over into my physical play. It was that type of trained eye, that level of experience, that I needed to rework how I contacted the ball.

On a whim, I signed up for a Tuesday morning group session called “FUNdamentals Tennis Clinic.” Perhaps I leaned too much into the word “fun” in the title when I sauntered up to Court 12 on a sunny, nearcloudless morning. I quickly learned how this session was a challenging refresher for someone like me, who hadn’t picked up a racquet in four years, as well as the consistent player like Ellen, a Club member for nearly 15 years, whose crafty left-handed approach shots had my feet twisted in knots during certain rallies. Designed to accommodate up to five players, the clinic promised to work on groundstrokes, footwork, approach shots, overheads, and volleys alongside pros like Gottfried. I can attest with authority that it did all of the above—along with test Gottfried’s patience with my faltering forehand. The fast-paced clinic allowed for enough one-on-one instruction to correct even the hardest habits to break, like the way I tense my body before hitting the ball. And if I’m going to learn from anyone, let it be from the likes of Gottfried, a former ATP player who still possesses a wicked topspin stroke even in his sixties. “Look him up after you leave the courts,” Ellen’s husband, Ben, told me after the clinic ended. “He beat John McEnroe.” You cannot be serious, I thought. But it’s true. There’s even a grainy black-and-white photograph floating around the internet of a triumphant Gottfried walking off the court, left hand victoriously pointing toward the sky, ahead of a downtrodden McEnroe.

His pedigree unbeknownst to me during the clinic, it was easy to listen to Gottfried, who gave clear instructions and incorporated drills that made for a fun yet informative hour of tennis. I could have spent 45 more hours learning from him, soaking up his advice.

Conceived in 1930, Racquet Club has had its fair share of transformation over the years. A little more than a decade after opening in the late 1940s, the club welcomed the great Fred Perry, winner of eight Grand Slams, as its tennis pro. A young Chrissie Evert graced the courts, as well as Jimmy Connors. In the recent era, the courts have seen U.S. Open finalist Madison Keys play an exhibition match.

Home to 16 tennis HydroGrid clay courts, a full-service tennis concierge, expert instruction, and six pickleball courts, Racquet Club is a destination unto itself. Tucked away behind towering banyan trees and above the Fitness Club at Harborside, the location bustles with not just exciting play, but conversations among members and guests between points and sets. Although they may be opponents on the courts, a jovial atmosphere enlivens the scene.

Today, Racquet Club is helmed by Lauren Levine, a veteran in the sport who has left an impact on every court she has managed, including her prior appointment at Westchester Tennis Center and the USTA. Since her arrival last summer, Levine has filled the Racquet Club programming, which includes the ever-popular pickleball, with robust options. Added are more junior clinics and lessons, including for the pint-sized player ages 3 to 5, that feature low-compression balls that help younger players develop stroke technique. In addition, Levine has overseen dynamic evening events, such as the XGlosive events that brighten the nighttime courts with neon lights.

Back at my tennis clinic, I started relaxing before hitting my shots. And guess what? Fewer unforced errors. The ball actually even went in the general direction that I was aiming. At times. Thanks to Gottfried and the other forgiving fellow players in the clinic, I felt like my tennis game had new life. And, thanks to Racquet Club, I have a renewed love of the sport.

Meet Andrew Farrea, new Director of Golf at The Boca Raton

Andrew Farrea joins The Boca Raton’s historic Golf Club after serving as Head Golf Professional for 13-plus years at prestigious courses Ko Olina Golf Club in Hawaii, North Sound Golf Club in Grand Cayman, and Newport National Golf Club in Rhode Island. With more than 20 years of experience in the golf industry, Farrea brings his vast knowledge of the sport— including product trends, golf instruction techniques, and overall general management—to The Boca Raton. Players of all levels will improve their games through Farrea’s meticulous programming, which includes enhancing the golf experience for every type of player. As he puts it, “I’m looking forward to creating opportunities for every single member of The Boca Raton to enjoy this beautiful game.”

Favorite pro golfer: I began playing golf as a part of the Tiger Woods golf boom, and followed him regularly throughout my earlier years, but I have always been more of a fan of the game than any single player. I will say that after joining The Boca Raton team and learning more about our past golf director and legend Sam Snead, he has quickly become one of my favorite individuals, and I wish that I had the opportunity to watch him play in live events.

Favorite non-golf sport: Ice hockey. I grew up the son of a college hockey coach, and my brother and I both learned to skate when we were just 2 years old.

Favorite non-sport activity: I grew up just a mile from the ocean and had the chance to live in some of the best beach hotspots in the world, including Grand Cayman and Hawaii, so going to the beach and being around the ocean will always be something I am eager to do when I am taking a break from sports.

Individuals who would make your ideal golf foursome: Tiger Woods, Mario Lemieux, and my dad. Woods is a huge reason why I got into playing golf. I highly doubt we will ever see such dominance in the game ever again, nor will we see such a significant growth of the game as we did when Tiger Woods became a sensation. NHL legend Lemieux was my all-time favorite player as a youth and forged my ties to a game that I still play to this day. I believe Lemieux was the best allaround player that the game has ever seen and was an even better role model. While Woods tied me to golf and Lemieux tied me to hockey, my father introduced me and gave me the opportunity to do both.

Amy Kazma Member since 2005

MIKE AND AMY KAZMA came to Boca Raton in 1996 on a “temporary” move from Chicago to capitalize on its proximity to the Caribbean and Latin American markets, where the family business was building TV cable systems.

But that was before the couple met Boca.

Amy says it was a “successful move on all fronts,” and the couple has become a force in the philanthropic community, from their involvement with the Junior League, Florence Fuller Child Development Centers, Boca Raton Historical Society, Boca Raton Regional Hospital, George Snow Scholarship Fund, Place of Hope and more.

When Amy Kazma completed her second year co-chairing The Boca Raton Regional Hospital Ball in January 2024, she held one important factor at the forefront of her philanthropic endeavors: The patients. Kazma and her husband, Mike, have been working for decades to raise funds to expand and enhance patient care services for the hospital, which holds its annual signature ball at The Boca Raton. “It’s truly a gift for me to have these opportunities,” Kazma says of volunteering. “I feel I have gained more out of them than they have of me.”

As to why giving is important to her, she says, “Neither Mike nor I grew up very affluent. We grew up very middle-class and had hard-working parents. My mother always volunteered her time and her talents but never had the treasure. Now that I’m fortunate enough to have all three, I can’t imagine not giving back to a community that has brought so much to our lives.”

ROBIN AND CHARLES DEYO moved to Boca Raton in 1997 after stints everywhere from Chicago to Hawaii and Miami working in the hospitality business, and starting their own blockbuster company Cendyn, which Robin describes as offering “a suite of web-based software products for hotels and the travel industry to sell themselves and to drive revenue.” In addition to building a successful company, the Deyos became involved in Boca philanthropic and civic circles, including the Junior League, Boca Helping Hands, Boca Raton Historical Society, Boca Raton Regional Hospital Foundation, the Fuller Center, George Snow Scholarship Fund, Impact 100, the YMCA of South Palm Beach County, the Center for Arts & Innovation, AVDA, Best Foot Forward, Place of Hope and many more.

But one of her major focal points is education. “With education,” she says, “you can reach for the stars and go for your dreams.” When it

comes to the George Snow Scholarship Fund, where she is Chairman of the Board this year, Deyo believes it can provide the educational foundation to help deserving young students achieve and flourish.

In terms of giving back, Deyo says simply, “It’s twofold. It’s the right thing to do; my parents taught me that. My parents were always involved in various nonprofits in their church. That was an example growing up.

“Beyond that, I’m a big believer in karma. What goes around comes around. If you put out positivity and you’re a go-getter and you’re going to make a difference, it’s going to come back to you. I am very fortunate that it has. And it makes me feel good. I feel productive, I’ve added value, I’m contributing, I’m making a difference. These are the personal things that make me feel good. I like the camaraderie of working with other people and accomplishing a goal. I love that connection.”

JUST OFFSHORE OF THE BOCA RATON is a whole magical world of shipwrecks and reefs, tropical fish and sea turtles. Boca Raton photographer Ben Hicks has made a life chronicling that world, publishing an image in National Geographic, “Loggerhead Sea Turtle, Florida”, in 2012. In the photograph, taken just below the shallow, aquamarine waters off our shoreline, the tiny hatchling swims toward the surface of a gently breaking wave. The image went viral, and Hicks was established.

These days Hicks is also an environmentalist, spurred by his passion for documenting sea turtles. He won an Emmy for his cinematography on the PBS documentary “Troubled Waters: A Turtle’s Tale,” and was part of the Emmy-winning team behind “We Are All Plastic People Now,” a PBS doc from 2023.

“We live in an area very close to the Gulf Stream,” he says. “It is so close to our coast that it keeps a lot of nutrients running through our waters. That is what brings up our sea life, especially from Palm Beach and Singer Island down to Boca. You have all different kinds of species that visit our coast. Obviously sea turtles are very prevalent; a lot of nesting happens. But other stuff too; last summer I shot manta rays. There are also areas where there are seahorses and octopi—like nowhere else in North America. The clarity of the water is the most important thing. The Gulf Stream keeps very deep blues and greens. That’s what keeps me here.”

SOME SAY THAT ATTENTION TO DETAIL IS THE HALLMARK OF QUALITY. If that’s the case, then The Boca Raton’s distinct culinary details make all the difference to a dining experience. Take, for example, the fresh-caught fish served throughout The Boca Raton. The just-caught seafood is hauled in mere hours before it’s served to diners. Chefs like Peter Annewanter, head of Flybridge at Yacht Club, have been known to receive text messages from local fisherman Eric Finn as he docks his boat, the Finn-Atic Fish, at The Boca Raton’s marina. Oftentimes, Annewanter walks downstairs to the dock to select from that day’s haul. “I only buy fish from Eric because I’m 100% sure that the fish has been pulled out of the water only a few hours before,” Annewanter says. “Sometimes they are still moving when I get to them.”

The sight of Annewanter walking through Palm Court with a load of fresh fish has been known to spark conversations. “Sometimes I get stopped to ask about what I have,” he says. “I tell them they can experience it in a few hours.”

The never-frozen fish isn’t the only special part of Annewanter’s menu at Flybridge. The fine-dining restaurant that highlights seafood and vegetable-forward cuisine is partly inspired by Annewanter’s European background and partly by his new Florida setting. During meals, a unique dark sourdough and rye bread is offered to guests. With a recipe that hails from Europe, Annewanter considers the bread “our baby.”

Born in Austria, Annewanter says the bread is “very Austrian,” nodding to his native country’s affinity for countryside farms with baking houses. The dough is made the day before it’s served so it can rest and rise, and then the team folds the dough four times before it’s kneaded. Served with either whipped brown butter or vegan-based

olive oil butter, the bread is one of Annewanter’s cultural imports to Flybridge. “We consider it a farmer’s bread,” Annewanter says. “It’s very rustic with a dark crust, and as you chew it, the crust turns slightly sweet.”

Flybridge’s other difference makers include sourcing its salts from various parts of the world, as well as personalizing each dining experience in a subtle yet impactful way. The salts used in Flybridge’s kitchen come from as close as St. Petersburg, Florida, and from as far as Australia. Other salts include those from Greece, Hawaii, and even bamboo salt, each of which gives the dish a distinct flavor that is hard to replicate outside of Flybridge. And the best part? Guests are given a small vial of salt as a gift upon their departure. “It’s just so you’re reminded of your time at Flybridge,” Annewanter says of the gesture.

In addition to the take-home salt, guests receive a personalized menu with their names and dates printed on it, plus well wishes if the dinner is for a special occasion, like a birthday or anniversary. The effect can elicit a “wow” response from diners, as was the recent case with a couple, Annewanter says. “They were so impressed by the work that we did for their dinner,” he recalls. “A few days later, this couple came back and gave us a bottle of wine, telling us how grateful they were that we made their dinner so special.”

At Japanese Bocce Club, the modern and playful restaurant that serves its own very traditional Japanese fare, the difference is felt the moment a guest walks into the space. “When you’re in an Asian restaurant, there’s a strong culture that gets passed on to our guests,” says Belle Chalitwan Kongplee, Japanese Bocce Club’s General Manager. “When we say ‘Welcome’ to you as you arrive, it’s not just a greeting, but it’s more like ‘Welcome to our home.’ We are hosting you this evening, and when you host somebody, it’s a special event.”

at the signature restaurant created in partnership with Major Food Group. Kongplee says that it’s the Japaneseborn Soejima’s lead that the entire team follows. “Every single one of the diners is considered a guest coming into our home,” Kongplee says. “You are not customers; you are our house guests. You’re coming into our home, and we are excited to show you our expertise.”

Kongplee recalls a recent occasion at Japanese Bocce Club where a multigenerational family, including a grandmother, sat down for dinner. A member of the front-of-the-house team instinctively pulled out a chair and guided the grandmother to her seat. “At that moment, we all imagined that she was our grandmother, and we wanted to make sure she sat down comfortably,” Kongplee says.

In addition to the familial touch, Kongplee says the Japanese Bocce Club difference includes regularly flying in fresh seafood from Japan to the restaurant, as well as taking extreme care with its sushi rice. In fact, sushi rice is not served without meeting Soejima’s strict approval. After the rice is cooked, Soejima ensures that a team member mixes the rice by hand for precision and a tender touch.

The Boca Raton difference is also found in an item as common as a bagel. But upon closer inspection, these bagels are not your average baked good. The culinary team estimates that it produces between 400 and 600 bagels a day. During high-frequency months, like this past December, an estimated 10,000 to 14,000 bagels were made.

“I love when people ask for bagels in the morning,” says Vanessa Burton, a culinary cook II who has produced tens of thousands of the world-famous bagels that are served at Sadelle’s. “It makes me feel good knowing that they are eating something our team puts a lot of effort into making.”

That effort begins with the all-important sourdough starter that has been alive for between five and six years and is fed every day. The science of the bagel includes allowing the dough to proof overnight in a refrigerator, resulting in an outer skin.

In the morning, the dough is mixed for 5 minutes and 30 seconds, adding ice to the mixer to ensure it doesn’t overheat the dough. The dough is then shaped before boiling in a mixture of water and malt for 10-20 seconds, and then baked in a 400-degree oven for 16 minutes. The result? Bagels that are large, but not too thin, not too big, and fit perfectly in your hand.

“I love when they come out of the oven,” Burton says.

“Since bagel dough is a science, I feel like it’s magic when it comes out. It’s a love for baking; everything that I touch has the potential to make people happy, and that makes me happy.”

BY 1925, ADDISON MIZNER (1872-1933) personified the idea of “Society Architect.” His Palm Beach mansions for the wealthy and socially prominent created both a new architectural style and a new lifestyle for America’s preeminent winter resort. Born in Benicia, California to one of the state’s pioneer families, Mizner had traveled extensively in his early years. Although without formal university training in architecture, he had studied design his entire life. Like most members of his profession in these years, he received his formal training as an apprentice to a practicing architect. In Mizner’s case, it was a three-year apprenticeship in the office of Willis Polk, later a prominent San Francisco architect.

After a decade as a country house architect on Long Island, Mizner came to Palm Beach with sewing machine heir Paris Singer during the winter of 1918. It was his design for Singer’s Everglades Club that introduced Mediterranean-style architecture to the destination. The success of the club led to commissions for resort mansions for the leaders of Palm Beach society. In order to fill these commissions, Mizner found it necessary to establish workshops in West Palm Beach to make the tiles, wrought iron fixtures, and cast-stone trim and columns to decorate the exterior of these houses—and later the furniture for the interiors.

Early in 1925, Mizner decided to join what had become Florida’s favorite pastime: the great land boom. In March the Palm Beach Post reported that Rodman Wanamaker II had purchased threequarters of a mile of oceanfront land in Boca Raton for a syndicate headed by Addison Mizner. The group continued to buy property, and acquired about two miles of oceanfront real estate and as much as 1,600 acres overall. With land in hand, Mizner then announced the creation of the Mizner Development Corporation with plans to build the Castillo del Rey, a gigantic oceanfront hotel.

His dream for Boca Raton called for creating “the world’s most architecturally beautiful playground” with miles of paved and landscaped streets, golf courses, polo fields, elegant shopping vias, and luxurious mansions for the crème de la crème of world society. The architect’s reputation; the social, financial, and political cachet of his backers, such as T. Coleman du Pont, Elizabeth Arden, William K. and Harold Vanderbilt, Clarence H. Geist, Irving Berlin, the Duchess of Sutherland, and Paris Singer; and his publicity machine, which immediately began the promotion of the resort; overnight made Boca Raton Florida’s “hottest” property.

The company took in more than $2 million on the first day of sales and an additional $2 million at the second offering of lots. Moreover,

the Ritz-Carlton hotel chain decided to take over Mizner’s Castillo del Rey. To meet the Ritz-Carlton’s exacting standards, it planned to have Mizner’s hotel redesigned, delaying the start of construction. He also started construction of the many amenities he had promised for the new city, including the miles of streets, the administration buildings, and a number of houses.

With the money pouring in from lot sales, Mizner decided to immediately build a smaller hotel on the west bank of Lake Boca Raton; this would later someday be known as The Boca Raton Cloister. At one point, the demand for speed in construction prompted his engineer to remind the architect that before he could dig footers for the foundation, he needed plans.

Although the Mizner Development Company had suffered serious financial problems by the autumn of 1925, Mizner pressed for the completion of the Cloister Inn. To cut costs, Mizner Industries made most of the furnishings, and the architect used pieces from his own collection in the public rooms. The building proved his abilities as an architect and designer. According to one writer, “The Cloister was simple to severity in its whole, yet rich in delights.” Another critic asked: “What . . . could make forms of wood, or stone, or stucco so beautiful that they trouble the imagination?”

Mizner invited his Palm Beach friends and backers to a dinner party to informally open the small inn on Christmas Eve 1925, before completion. On February 6, 1926, the Ritz-Carlton Cloister Inn opened to much fanfare and with all of the right people in attendance. His friends agreed with the critics; according to famed architect Stanford White’s widow, “This building is superb.”

Mizner Development Company’s New Hotel Overlooking Lake Boca Raton Completed in Six Months From Beginning of Work

Boca Raton, Fla., Feb. 8—The Mizner Development Company, Saturday, opened the Ritz-Carlton Cloister Inn. The building was designed by Addison Mizner along Spanish lines, the architectural theme going back to the Moorish occupation, adapted to more recent ornamentation and modern appliances and furnishings. A feature of the inn is the rapidity with which it was built. About 22 weeks ago the site of the structure was tropical wilderness. The Dwight P. Robinson Company built the Cloister. The Cloister faces to the east expanse of Lake Boca Raton, to which yachts and other craft will come from the ocean through Boca Raton Inlet. To the north, in the lake, is the island on which Mr. Mizner is to build his Florida home.

South of the Cloister runs the Camino Real, which is to be the main boulevard of Boca Raton. To the west, a short distance away, is the golf course. ... One may look in all directions and see a profuse growth of tropical verdure, royal palms, the Australian pine, poinsettia and hibiscus trees. Many obstacles were met in building the Cloister; its setting was an expanse of palms and vegetation almost impassable, demanding the placing of an elaborate foundation. The first step of the contractors was to install their own plant, apparatus, engineers and working crews on the ground. The spot one day was untroubled wilderness; the next day it was a place of activity for hundreds of workers, some of them waist deep in water. What had previously been morass and jungle growth was replaced by solid concrete. As rapidly as possible the working crews were increased in numbers and the construction increased in speed. When six months had passed the designer of the Cloister could view the completed work.

The tower that is the central feature of the building is modeled after the famous Giralda of Seville. It has a room on top where a view of the ocean and lake may be had. The decoration of the interior of the building is under the supervision of Mr. Mizner. Objects of art that he has gathered are displayed. Austerity is the keynote of design and decoration of the Cloister. Guests enter through a portal spanned by a Romanesque stone arch of large proportions, and pass through the great Spanish [inspired] door into a lobby 40 feet square. Rough, snow-white plaster walls run up in unbroken severity to the ceiling two stories above. On two sides is a balcony around the second floor. … In the center of the lobby, a lantern hangs from the ceiling, casting a golden glow on the heavy hand-carved beams above and red tiled floor below.

The lounge room [now Principessa Ristorante and a hallway] projects over Lake Boca Raton. The blues and greens of the tropical waters are reflected in the stainedglass windows. The lounge leads into the cloisters through whose arches, of the early Gothic period [style], one looks out over the lake. The columns of the cloisters are unusual in design, having fantastic capitals wrought with crude figures and animals, mounted on slender pillars, the whole supporting a low-slung, arched ceiling.

The dining hall [now part of Sadelle’s on the first floor and the Mizner Room on the second floor] opens from the thirteenth century [inspired] loggia with its beamed roof resting on giant columns. Forty by 80 feet, and 35 feet in height, this hall was inspired by a 15th century hospital in Catalonia. Ranging along the walls of the dining hall are Spanish hand-basins, stationary washstands of ancient times, which diners used as much as finger bowls are used today. The atmosphere of the old hospital is preserved in the five arched bays, supporting a ceiling of beams and sapling poles. High on the walls are small round stained glass windows set with sparkling green and yellow glass. At each end of the hall are rose windows which, with the red tiled floors, give supporting warmth to the soft biscuit tones of the walls.

Guest rooms of the Cloister are monastic in treatment. Painted Spanish furnishings against tinted walls create a restful retreat for the occupants of the rooms. Each room and suite of the Cloister is furnished differently. A number of the rooms have private elevators.

Many of the furnishings at the Cloister are antiques and art objects contributed from Mr. Mizner's collection. Most of the furniture, ornamental pottery and kindred equipment was turned out by his West Palm Beach plant.

Developers of the Cloister concentrated on the task of beautifying Lake Boca Raton. Dredges removed trees and ledges to make a smooth, unbroken surface, the rich silt from the bottom of the lake being transferred to the mainland to enrich the soil. With a cement plant

at work on the property, great slabs of granite like material were turned out to bulkhead the four-mile circumference of the lake. As rapidly as possible these were put in place and now show a completed job. The only solid surface to remain on the bosom of the lake will be the small island where Mr. Mizner will build his home [never completed].

Plans were made for widening and deepening the inlet leading from the ocean to Lake Boca Raton. This work, which will cost $500,000, now is well under way, and when finished will allow for the sailing of the largest pleasure yachts from the Atlantic through the inlet into Lake Boca Raton where the craft may anchor and discharge passengers from the yachts’ decks to the hotel veranda. While the lake will serve as yacht basin, it will also be a riding course for sailboats, motorboats, Venetian gondolas and other craft the 12-foot depth will accommodate.

There is not one bond or mortgage on the finished hostelry. It is absolutely unencumbered. From the first detail of lake foundation and land clearing to the last bit of equipment, it was financed and built by the Mizner Development Corporation, which organization is the sole owner of the clear and free property.

By the autumn of 1925, Florida’s great land boom began to unravel. Bad publicity was generated by the fraudulent practices of many promoters and transportation embargoes that kept building supplies from reaching the state. Members of America’s middle class traveling to Florida during the summer found its hotels and restaurants closed

and its heat, humidity, and mosquitoes unbearable. These factors all contributed to an uncertain real estate climate.

Unfortunately, the Mizner Development Corporation had entered the real estate market just as it began to collapse. When Mizner realized that sales of Boca Raton lots were not supplying the money to continue his development plans, he encouraged sales by promising to complete the project in his company’s advertisements. Many of his backers, including T. Coleman du Pont, feared they might have to assume financial liabilities for these company promises and resigned their positions and board memberships. By the time the Cloister Inn opened, the corporation had serious problems. While construction continued on the houses of Floresta and Spanish Village, no one started construction on the great ocean and lakefront mansions that Mizner had designed for his exclusive Distrito de Boca Raton subdivision.

The hurricane of September 1926 sealed the fate of the Florida land boom and of Mizner’s dream for Boca Raton. By spring 1927, suits were filed asking for recovery of property sold to the Mizner company, claiming arrears in both principal and interest. This led to the court’s appointment of three trustees in bankruptcy to dispose of the company’s assets by July of 1927. In November, Clarence H. Geist, an original Mizner backer, and wealthy Philadelphia utilities company owner, purchased the assets for $71,500 in cash and the assumption of around seven million dollars in debts. Geist would hire architects Schultze and Weaver to more than triple the size of the hotel, which reopened in January of 1930 as the Boca Raton Club.

IT WAS A COMPLETE SETUP, bride Mahiza Moore discovered—but one that was for the books. As she and boyfriend Jason Musick walked toward the Tower Bridge in London, Musick excused himself for a brief moment. Moore continued walking and eventually approached the center of the tower, finding the setting covered in red rose petals, pictures of her and Musick, gentle music playing, and a sign that said “Marry Me.”

“It felt so magical,” says Moore, a digital marketing specialist. “I was honestly really speechless. We were so happy, and there was so much to celebrate.”

And celebrate they did at The Boca Raton. For the Miami couple’s March 2 nuptials, both Moore and Musick wanted a setting that felt easy and elegant, a thoughtful location that their 160 guests could navigate seamlessly, from ceremony to happy hour to reception.

For the lakefront evening ceremony, which took place underneath a simple yet modern chuppah wrapped in elegant white florals, the couple prepared vows that “had the guests in tears,” Moore says as they spoke about their love for each other. Musick’s rabbi from Chicago, who oversaw his bar mitzvah, even flew down to officiate the wedding.

As the evening moved into the Cathedral ballroom, one of the property’s signature indoor spaces, the couple was blown away by the look and ambiance. Their subtle black-and-white color motif breathed life into the iconic space. White linens contrasted against black table runners, which elegantly hosted single white roses and tall white candles that lined the long tables.

“It was absolutely incredible,” Moore says. “The Boca Raton really brought my vision to life. We just wanted it to be simple but beautiful, and the space was exactly that.”

Amidst a nearly century-old setting, the bride and groom blended their contemporary, minimalist style with the historic property. Florals and vines wrapped around Cathedral’s iconic pillars and chandelier, bringing a touch of nature inside the ballroom.

The vice president of G&J Brokerage food specialists, Musick is admittedly “a huge foodie.” With food and beverage major pillars in his life and business, Musick says the evening’s culinary options surpassed even his lofty expectations. Guests were treated to creative plates filled with chicken, steak, and fish, along with a citrus artichoke salad to begin and a multi-tiered textured white cake to finish.

to the live sounds of Aragon Artists, Musick says the vibe “was just electric.” But the one person he couldn’t take his eyes off of the entire night? His bride.

“She’s just a ray of sunshine,” Musick says. “Mahiza lights up any room that she’s in. Anyone who is around her is genuinely happy.” If the wedding photos are any indication of that, her groom is right.

Celebrating other life milestones

IT WAS AN EASY CHOICE FOR Jordana and Tom DeSernia. When it came time to celebrate the couple’s baby shower, they knew Sadelle’s at The Boca Raton would be their ideal location. Club members and frequenters of the property, the DeSernias felt an immediate connection to the restaurant’s light-filled conservatory, resplendent in lush foliage from floor to ceiling.

“We were having brunch at Sadelle’s, and I said, ‘This is it,’” Jordana recalls. “It was so dreamy. I knew exactly where I wanted to have our baby shower.”

With a baby boy on the way, the DeSernias chose a theme of bears and balloons, a fun concept for the couple and their 55 guests, which included friends from Jordana’s time as an on-air host for Fox Sports Florida and Tom’s career as founder of SA Fishing outdoor apparel. Sadelle’s airy conservatory embraced the theme, with the space filled with baby-blue balloons, teddy bears, and life-sized hot air balloon cutouts.

The celebration also included a jazz band that created a festive and entertaining atmosphere. And speaking of entertainment, Jordana’s good friend Dale McLean, the Miami Heat’s in-arena host, emceed the shower’s games, which included a competition of who could change a diaper the fastest.

“Baby showers can also use a fun vibe, and no one could do it better than Dale,” Jordana says, who shared that despite never hosting a baby shower before, McLean was all-in when she asked him.

Guests feasted on Sadelle’s world-famous brunch, which included mimosas and bloody marys. Maison Rose provided the multitiered cake that featured their baby boy’s name, Thomas, inscribed in blue—plus an assortment of macarons.

A month after the shower, the DeSernias welcomed Thomas into their lives. Now, looking back at the festive party that celebrated his arrival, Jordana says that special day at The Boca Raton was the perfect beginning to her new life as a parent.

“I was so taken aback by what The Boca Raton gave us,” she says. “It’s such a special place for us because they treat us like family. I felt loved. And happiness.”
