Falling in love with tea isn’t something that I expected to do. For a non-plant lover (no, I don’t eat veggies, and my green thumb is nowhere near green, which is kind of funny now that I am growing tea), discovering an appreciation for tea was kind of a stretch. Of course, countless people before me have fallen in love with tea, from the flavor to the experience, so why is my journey so important? And why is your journey so important?

Different locations, different interest, all culminating around a “cuppa” tea, sharing time and our experiences with each other. People often ask me how I came to love tea, and I’m always hesitant to tell them that my love of tea didn’t really start with the tea itself. No, my love, my passion started from the environment tea created. That sit-down-and-talk moment. You know, that moment that we always think we are too busy for but then once we take the time, we wonder why we haven’t done it sooner.

Tea united me with friends and family, in an environment where we could truly connect, and it is there in those moments that I learned to love tea. Today, it’s just as much about the beverage as it is those moments. My passion for tea, the health it brings both physically and spiritually, has begun to consume me. The more I learn, research, and talk with other tea professionals, the more I am not alone. This unique plant, one plant, that makes our favorite teas, whether it be green, black, oolong, or white, has such amazing properties. I look forward to the coming issues where I can share with you the different types of teas, how they are made, and their many benefits (health included). Warmly,

The love story is expanded upon, the cultural aspect is sometimes related however the lovers’ story never changes: two lovers in a forbidden relationship, a wealthy mandarin father, an even wealthier Ta-jin who is promised the hand of the beautiful daughter, flight across the bridge to an island where the lovers escape as two turtledoves. This book is a valentine to tea itself, particularly pu’er (pu'erh) tea, and a must read for tea lovers and those interested in the effect of tea on culture. Ostensibly. the story of women in a family over several generations, New York Times best-selling author Linda See has done a remarkable job of intertwining the story with the history and practice of tea. Her research is solid and impeccably sourced and referenced and expertly melded into the poetry of the very human story of the Akha people (one of the 55 ethnic minorities in China who make their living almost entirely from tea production.) The story revolves around Li-yan, her mother, A-ma, and her child, Yan-yeh. who is adopted as Haley. But it also the story of the mother and . tea trees that are protected by the women of this family. The sister narrative also puts a very human face on the production of tea from ancient tea trees which is significantly different from tea garden production.

Strawberry Chocolate Chip Cookies Melanie Holsti – The Ironstone Cottage So good with a cup of English Breakfast Tea! And so easy to make! I discovered this recipe ages ago, baked the cookies for my family and they became a family favorite. They were such a hit for quick’n’easy and tasty, that I’ve served them in the tearoom where guests enjoyed the tasty simplicity and satisfaction of a rich cookie paired with a pot of Ironstone Cottage Breakfast Tea.

Strawberry Chocolate Chip Cookies Ingredients 1 cup butter

1 egg yolk

1 cup white chocolate chips

½ cup brown sugar

1 Tbsp vanilla extract

1 cup semi-sweet chocolate

½ cup white sugar

2 ½ cups all-purpose flour

chips

1 large egg

1 tsp baking powder

1 cup freeze-dried strawberries

Procedure 1 Line baking sheet with parchment paper. Into a small bowl, sift dry ingredients; set aside. 2 Partially melt butter in microwave. Cream butter and sugars in bowl of stand mixer (using paddle attachment) on medium-high speed, scraping the bowl half way through. 3 Reduce mixer to medium speed; beat in egg, egg yolk and vanilla extract. Reduce mixer speed to low and slowly add dry ingredients to butter/sugar mixture, being careful not to over-mix. 4 Stir in white and dark chips and strawberries gently by hand. Scoop dough onto parchment-lined baking sheet, flatten slightly and refrigerate for 1 hour. 5 Preheat oven to 325°F. Bake for 12-14 minutes or until slightly browned around edges Yield: 24 cookies Preparation Time: 20 minutes Cooking Time: 10 minutes

Chocolate Cupcakes with Berry Fields Forever Frosting Charity Chalmers – Chariteas™ Using your favorite chocolate cake mix or recipe, you can make these delightful chocolate cupcakes crowned with a lovely pink buttercream frosting made with Chariteas’ Berry Fields Forever™ herbal tisane. What a special dessert for Valentine’s Day, a birthday party, or just because. They’ll think you shopped at a bakery!

Chocolate Cupcakes with Berry Fields Forever Frosting 1 pkg chocolate cake mix, baked according to directions Frosting 1 cup unsalted butter

Ingredients 1 1/2 cups powdered sugar (reserve 1/2 cup for stiffening) 1/2 cup water 3 Tbsp Chariteas Berry Fields Forever Tisane

Procedure Chocolate Cupcakes 1 Preheat the oven as instructed on the cake mix box. Follow the instructions on the cake mix box to make cupcakes. Bake and completely cool the cupcakes For the Frosting 1 Bring 1/2 cup water to boil; measure Berry Fields Forever tisane and add to water. Set aside to steep for 10 or more minutes. 2 Strain and discard the tea from the brewed mixture. Set aside to cool. 3 Cream together the butter and powdered sugar for 10-15 minutes; until fluffy and airy. Slowly add the cooled tea to the creamed butter to desired taste, color and consistency. If necessary add more powdered sugar to stiffen the frosting. Frost the cupcakes with this beautiful pink frosting. 4 Makes enough frosting for 6-8 cupcakes depending on buttercream design. Yield: 6-8 cupcakes Preparation Time: 15 minutes (frosting) Cooking Time: 20 minutes
