CSA News and Events Letter from Lisa Tanguma, Edibly Fit CSA Director This is the last Edibly Fit News Bites Newsletter for our CSA this year. We only have two more pick-ups left in our season and both of them will be located at the WEST ENTRANCE of the JCC in the new community garden! I hope that all of you have enjoyed our program as much as I have. The veggies were amazing all year. We learned lots of ways to prepare chard and kale, we infused watermelons and ate more salads than ever before! It was a joy meeting you all and learning more about your lives. We built a bond of community and developed a stronger sense of responsibility toward taking care of our world.

Recipe How to Prepare Your Spaghetti Squash Spaghetti Squash is a perfect food for diabetics since it doesn't raise the blood sugar level as high as pasta would. After cooking your squash it has the appearance of thin pasta and tastes delicious! Preheat oven to 375. Split your squash length wise. Be careful doing this. The squash is very firm before it is cooked. Remove the seeds from the center. Poke holes on the top and around the sides of the squash with a fork. Add in 1 tsp. on butter on each side and sprinkle with a dash of salt and pepper. Place in a glass baking dish and cook for 1 hour. Make sure to start checking your squash every 10 minutes after 40 minutes to determine when it is done. Squash should be tender and the meat of it will flake in thin spaghetti-like strands. Top with your favorite marinara, meat sauce, cream or pesto and serve with a side salad.
