I can’t think of a better way to introduce The Sanctuary Living magazine than to debut it on Mardi Gras day. This is a time of tradition, celebration, and fun with family and friends, and that is what this issue is all about. For instance, I thoroughly enjoyed speaking with The Andrews family for their cover feature and learning about what they love doing for fun and life in The Sanctuary. We had some fluffy friends featured in The Pets section with information about how to foster animals to help your community’s shelter. We saw some great pics from The Sanctuary’s Fall Fest and Ashley Geoghegan’s birthday celebration. Mayor Clay Maddon was gracious enough to contribute important phone numbers and websites so that residents can more easily reach the City of Mandeville. I spoke with some of the outstanding small businesses on the Northshore that help and provide for their communities, I think more

Favorite Dish
Brett Gauthier is the Executive Pastry Chef of Tchefuncte’s Restaurant, an upscale waterfront restaurant overlooking the Tchefuncte River that celebrates the highlights of the season, rooted in classic Southern Cuisine. In his role, Brett oversees the Pastry Program at Tchefuncte’s Restaurant and sister restaurant, The Anchor. Born in Manasssas, Virginia, Brett grew up in many places including Connecticut and Mississippi, later settling in San Francisco. Brett attended Johnson & Wales’ Pastry Program and has extensive kitchen experience with more than 25 years under his belt. Prior to joining the team at Tchefuncte’s, Brett served as the Executive Pastry Chef for the
Ralph Brennan Restaurant Group and before that as the Pastry Chef at the renowned Inn at Little Washington. As the Executive Pastry Chef of Tchefuncte’s, Brett focuses on seasonal changes using hyper-local ingredients and describes his approach as soulful, dramatic and always evolving. Examples of this are two of his most exciting dishes – the Chocolate Mousse Cheesecake and “the Banana” – which both hit home in flavor and texture but when presented in such a unique way exceed all expectations. When not in the kitchen at Tchefuncte’s, Brett can be found spending time with his wife and two daughters at their home in Metairie, LA.
TCHEFUNCTE’S CHOCOLATE MOUSSE CHEESECAKE Our chocolate mousse cheesecake is made by combining 3 classic recipes. 1. Double chocolate cookie 2. French chocolate mousse 3. Vanilla cheesecake. Each amazing & totally satisfying eaten on their own. When combined w/ the help of some modern culinary technique the cheesecake can be described as futuristic. The oven used to bake cheesecake has a humidity setting. We can bake them without a water bath. They are delicately baked in silicone molds, the shape of a half sphere. These silicon molds are also used to shape our chocolate mousse. *Pro tip* When making the mousse; keep your chocolate warm before folding in the soft
CHEESECAKE 45 oz Cream Cheese 3.5 oz Shortening 2.75 oz Flour
17.5 oz Sugar 1 oz Corn Starch 14 oz Eggs
whipped cream. The mousse and the cheesecake are flash frozen before gluing them together w/ chocolate sauce. Finally, we bake double chocolate cookies and crumble them to make the outer crust. The frozen cheesecake mousse sphere is dipped in chocolate sauce and rolled in the cookie crumble. Next level! Wait, it gets better. The dessert is presented on a three-dimensional plate that adds to this dramatic dessert. The presentation may be from another world, but the flavors and textures are comforting and friendly. We love the reactions from our guests who experience this dish. It is transformative and inspires the dessert program with more wonderful things to come.
Yield 24 portions (4 oz ea.) 14 oz Milk .5 oz Vanilla extract
DIRECTIONS
1. Combine sugar, flour, and corn starch. Place in bottom of mixing bowl. 2. Add cream cheese and shortening and with the paddle attachment mix until smooth. 3. Combine eggs, vanilla, and milk, then slowly add to cream cheese mixture. Scrape bowl to avoid lumps. 4. To bake: Pour into half sphere silicon molds. 5. Bake at 225 degrees for approximately 20 minutes. Cheesecake should be firm to the touch. 6. Cool to room temperature then freeze.
CHOCOLATE MOUSSE 14.5 oz Semi-Sweet Chocolate 11 oz Cream 2.75 oz Milk .75 oz Corn Syrup
Yield 24 portions (3.5 oz ea.) 5.5 oz Yolks .5 oz Gelatin Sheets (pre-soak weight) 49.5 oz Cream for whipping
DIRECTIONS
1. Heat cream, milk, and corn syrup to near boil. 2. Temper hot cream mixture into yolks. Cook over a low heat until slightly thickened, about 180 degrees. 3. Pour cream and egg mixture over chocolate and bloomed gelatin. 4. Stir then emulsify using a hand blender. Set aside to cool slightly before folding in whipped cream. 5. Whip remaining cream until medium peak. Fold whipped cream into warm chocolate mixture in three stages. 6. Fill molds and freeze.
DOUBLE CHOCOLATE COOKIE CRUST 8.75 oz Butter, salted 5 oz Sugar 7.5 oz Brown Sugar 1.5 oz Egg

DIRECTIONS
1. Using the paddle attachment, cream butter w sugar until mixture lightens. 2. Add egg, yolk and milk to butter mixture. Combine & scrape sides of bowl. 3. Sift cocoa powder, baking soda and flour together. 4. Add dry mixture with chocolate chips into bowl with butter mixture. 5. Mix until combined. Scrape bottom of bowl. 6. Using a 2 oz scoop, portion dough onto sheet pan lined w parchment paper. 7. Bake at 320 degrees for 14 minutes. 8. Allow it to cool and crumble.
CHOCOLATE SAUCE 32 oz Cream 7 oz Corn Syrup 1 each Vanilla Bean
Yield 2.5 quarts 8 oz Butter 40 oz Semi-sweet Chocolate
DIRECTIONS
1. Heat cream, butter, corn syrup and split vanilla bean to a near boil. 2. Steep for five minutes then strain. 3. Pour hot cream mixture over chocolate and stir. 4. Emulsify with hand blender. 5. Mixture be2022 allowed to cool then gently rewarmed when ready to use. March -can April

Welcome to the Sanctuary Living magazine drinks column! Donna Canalizo and Shannon Brown recommend seasonal cocktails in each issue making sure you’ll be mixing up only the tastiest libations out there. So join us as we stir, shake, and pour something delicious!
Cocktails for Easter Brunch Whether you’re hosting the whole extended family or just your immediate household, these brunch-friendly drinks are sure to please. For brunch, we like to offer a range of flavors: something with a little kick and some heft to it, to wake up the taste buds; something bright and effervescent, with a bit of citrus for
tartness; and something creamy with a little warmth, for the cocktail equivalent of “comfort food.” We’ve got recipes for a twist on the tried-and-true Bloody Mary, a fizzy and refreshing Elderflower Spritz, and creamy, foamy Brandy Milk Punch.
BLOODY MARY BAR True confession: we love a good Bloody Mary, and not just in the morning! This is our take on the traditional Bloody Mary that will allow your guests to start with a base and then decide what “extras” they want to add to it. The recipe makes enough for six cocktails, but feel free to scale it down for two or three, or double it for a larger crowd. Ingredients For the mix: Salt and pepper 1 cup citrus vodka 1/2 sliced lemon 2 cups tomato juice For the bar: 3 tbsp Worcestershire Olives 2 tsp paprika Celery 2 tsp garlic powder Cucumber 2 tsp celery salt Pickled okra 1-2 tsp horseradish (to taste) Pickled green beans Dash hot sauce Cocktail onions Directions: Mix together all ingredients in a large pitcher, squeezing the lemon slices as you add them and adding horseradish and hot sauce to taste (or leave them out if you want a milder drink). Stir to blend, making sure to break up spices if they clump together. Leave a long spoon in the pitcher to allow stirring before each pour. Provide guests with glasses with ice, and put out whatever bar elements you have on hand for everyone to create their own Bloody Mary masterpiece!
Elderflower Spritz This refreshing, bubbly-based spritzer can be made with almost any kind of sparkling wine. Choose a Brut or a dry Cava for a more tart result, or use a sweeter Prosecco if you prefer. This recipe makes one cocktail, but you can mix up a bunch of them fairly quickly. St. Germaine is the elderflower liqueur we typically use, but there are other brands (Bols, Drillaud, and St. Elder are some that we’ve seen). We like to serve these in Champagne glasses—so pretty! Ingredients 5 oz sparkling wine 2 oz soda water
1 oz elderflower liqueur Curl of lemon zest
Directions: Pour sparkling wine, soda water, and elderflower liqueur into Champagne glass. To create the curl of lemon zest, use a paring knife or peeler to peel a strip of the zest, then use your fingers to twist. For a more lemony taste, add a squeeze of lemon.

Brandy Milk Punch This classic New Orleans cocktail goes down silky smooth. Although there may be some argument as to whether Brennan’s was the first to serve it, everyone can agree that this blend of creamy milk, holiday-spice warmth, and the bite of a little rum or Bourbon is a real palate-pleaser. This recipe makes two cocktails (or one large one!). Ingredients 4 oz cognac or brandy 2 oz rum or bourbon 8 oz milk (whole or 2% is better but can be made with skim)
2 oz simple syrup 1 tsp vanilla extract 1-2 egg whites (optional) Nutmeg
Directions: Put liquors, milk, simple syrup, vanilla, and egg whites in a shaker with ice and shake vigorously. Strain into a glass (with or without ice) and sprinkle with nutmeg. Note: to make your own simple syrup, combine granulated sugar & water in a 1:1 ratio (for example, one cup sugar and one cup water). Combine in a microwave-safe container & heat until sugar is dissolved, stirring occasionally. Raw egg warning: Consuming raw eggs may increase your risk of foodborne illness. You can use a pasteurized egg product as a substitute, or skip the egg entirely.

Brandi How to create that Beautifully-Functional Design by Brandi Heath
The biggest question I get asked is: “How do I create a beautiful living space that still works with our everyday family life?” Functionality is at the forefront when designing any living space. We all want to have a beautiful living space, but if it doesn’t fit your everyday life then you’ll never be truly happy with it. L&H Custom Homes and Designs specializes in creating timeless, modern, livable interiors that are as functional as they are beautiful, and I always say, a space that is beautiful AND functional wins every time. Whether it is your kitchen, living room, bedroom, or bathroom, every space can be created to adapt to your everyday routine.
Tips for Functional Design: 1. Find storage in as many design elements as possible. Whether it’s a piece of furniture or the design of your cabinets, make sure to maximize all the space possible. A well-organized and designed mudroom can make every-day life much easier. 2. A laundry room doesn’t have to be a dreaded chore. More and more people are putting their focus on the design of their laundry room. Let’s face it, we spend a lot of time there. Make the space inviting with a fun tile, chandelier, and hardware. Also, consider designs with two stackable washer/dryers instead of just one, or make sure your sink and faucet are sufficient in size and function. 3. Lastly, make sure you have enough cabinets or baskets to organize properly so you always know what you have and where.

or our very first cover feature, I had the pleasure of speaking with the Andrews family about life in The Sanctuary since they put down their roots here over a year ago. I learned what they enjoy doing together at home, and their adventures outside The Sanctuary. After speaking with them it was clear that their main focus in life is: Family. Both Jennifer and Scott Andrews were born and raised in New Orleans, Louisiana. The couple met as freshmen at the University of New Orleans. Jennifer was studying Communications and Scott, Business. Prior to UNO, Scott attended high school at Isidore Newman, where he began playing basketball just as his dad had done before him. In fact, Scott’s father, Al Andrews, who is in the Tulane Hall of Fame for his athletic accomplishment, was the second-highest scoring position in history at Tulane University. also played professional basketball overseas before going on to study Law. Today, Scott has two businesses, one of which he shares with Al, Scott’s mother, and his brother. The company is called tasc Performance, A successful performance apparel business based in New Orleans. The store is located on the always-bustling Magazine Street between Louisiana and Napoleon Avenue. The company was opened twelve years ago and has extended its locations to Texas. tasc Performance offers clothing that is sustainable, chemical-free, and derived from natural sources like bamboo, cotton, and wool. The Andrews first moved to the Northshore’s Tchefuncta Club Estates to start their family. Several years later they decided they were due for something March - April 2022

Jennifer and Scott now have four sons: Griffin, who is studying at LSU; Harrison, who is a sophomore at Mandeville High School; Hayden who is six and in kindergarten at Ponchartrain Elementary; and their youngest, Brooks, who is one. Jennifer humbly acknowledged that being a mom to four boys is a full-time job, and one of the conveniences of living in The Sanctuary is the proximity to Mandeville High. When she and Scott were first looking at the property this was a major bonus for them. Another was the safety of the area and neighborhood. “I take for granted at times that I never have to worry about my family’s safety when we’re at home,” she said. An additional convenience was the area’s close proximity to the Causeway since Scott commutes to and from his business in New Orleans. When the couple first saw their house they admired how strong the bones were, since the house had been built in 1998. She noted that the houses in The Sanctuary were newer than where they were moving from; which meant the renovations they wanted to do weren’t major and could be done slowly. Once they were settled in, Jennifer was excited to put her personal spin on their new home. She admitted that the house was originally a bit muted and “taupe-y” for her taste. “I’m a girl who loves white,” she said, so, they first had parts of the houses’ interior painted white. Next, she incorporated cool, tranquil colors to the homes’ new palette by giving walls seafoam green accents and painting the boys’ rooms different shades of blue. A fun renovation that came with the house was a garage-turned-playroom, perfect for their two youngest boys. Jennifer laughed, “That room is home base! We basically live in there because my two youngest require most of our attention. There are so many toys in it and everyone just seems to gravitate to that room when they’re home.” When it comes to group activities, the Andrews family is quite energetic. As a family, they often ride bikes to the park and enjoy being outdoors. Scott is an avid fisherman and revels in accompanying his father on fishing trips to Venice at every opportunity. When the Andrews’ aren’t busy playing basketball, being full-time parents, or running their own businesses, they take time to support local businesses. When home they’re regulars at places like Pardo’s, Mandina’s, and Pat Gallagher’s 527. When they’re in New Orleans they frequent Impastato’s. “We love Italian food obviously!” said Scott. Other Andrews-must-dos when in New Orleans, are visiting the Audubon Zoo and the Aquarium. “The kids adore animals. So, the more we visit them at the zoo and aquarium, the less pressure we have to get one at home,” the couple joked. Jennifer enjoys shopping on both sides of the lake but prefers to do that activity without the boys. A final hometown favorite of theirs is PJ’s Coffee, which they enjoy at home and on the go. Jennifer declared, “Scott gets coffee from PJ’s every morning, seven days a week, and looks forward to it every time!” and studying, he doesn’t have a ton of free time. “He’s just like his dad—he eats, sleeps, and breathes basketball!” Jennifer said delightedly. When everyone is home they appreciate grilling and cooking, or just relaxing with some take-out—but most of all what they enjoy is: the hot tub. The Andrews family’s hot tub gets extensive use in winter, spring, summer, and fall. The pool is a close runner-up but it isn’t as inviting in the colder parts of the year.

As a family, the Andrews share most of their activities together. Their love and support for one another are unwavering and strong. At the end of the day, Jennifer and Scott believe that they are just like any other family—“We really enjoy being together and doing things a lot of families like to do.” They also agree that moving to The Sanctuary gave them more time to share at home, and for v that, they are truly thankful.

L
iliana Geier is the twirling star of our first For Teens feature. At only seventeen years old she holds an incredibly impressive curricula vitae, and it appears her ambition is only growing from here. Liliana is a senior at Louisiana School for Math, Science, and the Arts, where she’s in her second year after transferring from Mandeville High School. Her number one passion in life is twirling. Some might think of it as a lost art, but not to Liliana. It’s an art she has devoted a good portion of her life to and has been recognized for since she was young. In her freshmen year, she started a twirling program that performed at her previous school’s half-time shows. The performances became so popular, however, that the principal and band director forbade her from continuing to perform, as they felt it was ‘casting a shadow’ on the other performances. This was the impetus for Liliana to transfer schools so that she could practice and perform without limitations. Now that she is a senior she is parlaying twirling into full-ride scholarship offers from the University of Alabama, Mississippi State, and many other universities. When I spoke with Liliana’s mother, Melanie, she informed me Liliana had just finished an interview with Dartmouth and was considering all of her options. Liliana achieved an astonishing 34 on the ACT, which only adds to her appeal to any college of interest. Another wonderful extracurricular she started is a social media campaign to promote anti-bullying and suicide prevention called Live with a Passion for Compassion. Liliana was initially met with adversity in school, due to her drive and focus on interests. So, she took her negative experience and transformed it into a positive one. She was also able to use her pageantry platform to promote this mental health movement and plans on writing a book about the work she’s done soon. Liliana rode in Endymion on the First Maids float this Mardi Gras, which she was very excited about. She also competed in the Miss Louisiana pageant as Miss Mandeville. Needless to say, Liliana is a magnificently gifted young woman, and there is no doubt that life has some great things in store for her. We’re excited to find out!

or our first issue of The Sanctuary Living Magazine, we wanted to spotlight VitreoRetinal Eye Center. They are the leading center for retinal surgery on the Northshore and are located in Covington (and Biloxi). This small-but-booming business was the first and only to perform surgery on the Northshore when the business was established. The medical clinic originated in 2005 in Biloxi, Mississippi by Dr. Avit “Frere” Gremillion. He expanded the practice to Covington in 2006. Dr. Gremillion specializes in the diagnosis and treatment of vitreous and retina conditions that may occur due to health issues. This includes conditions related to diabetes, high blood pressure, heart conditions, stroke, and many others. A diagnoses associated with this condition include diabetic retinopathy, vitreous hemorrhage, traction retinal detachment, vein occlusions, macular edema, and epiretinal membranes. We spoke with office manager for the VitreoRetinal Eye Center, Natalie Loyacano, who has been with Dr. Gremillion “since day one.” She explained that Dr. Gremillion’s staff moves between both locations throughout the week in order to keep cohesion and consistency with the patients and doctor. “This way we know everything about what’s going on at both locations and there’s no confusion or errors.” The Covington office is only open on Tuesdays, and one Thursday a month, for clinic hours. The Biloxi location keeps normal business hours of 8 am to 5 pm, Monday through Friday. Dr. Gremillion specializes in diseases of the retina, like Diabetic Retinopathy (the leading cause of vision loss among adults between the ages of twenty to seventy-four), Macular Degeneration (the most common cause of blindness in patients sixty years and older), and Retinal Detachment (a medical emergency requiring immediate attention). Dr. Gremillion is from Alexandria, Louisiana. His grandfather was a Physician of General Medicine and Surgery in Central Louisiana. He inspired Dr. Gremillion to pursue a career in Medicine. Dr. Gremillion graduated from Northeast Louisiana University (now the University of

Louisiana-Monroe) with a B.S. in Pre-Medicine. He received his Doctor of Medicine from Louisiana State University School of Medicine in Shreveport, Louisiana. The family often has up to four or six foster dogs at any given time, in addition to the five dogs they own—one of which is a special-needs rescue puppy that they recently adopted. Fostering is a great way of helping overwhelmed shelters by giving them more space and time to get special-needs and high-risk pets homed first. This way they can still prioritize the health and safety of all their adoptees. It’s also a great way of socializing the pups with your dogs and other people, making them even more appealing to potential forever homes. The Northshore Humane Society is located at 20384 Harrison Ave, Covington, and is always looking for people to help foster animals. ADD MOISTURE TO YOUR PET’S DIET The absolute most important health decision you will ever make for your pet is the diet you choose to feed him every day. And here’s a spoiler alert… dry food is the worst choice! If you pour 2 cups of water into your pet’s dry food what happens? It expands, right? Well, your dog doesn’t have the luxury of you pouring water into his body every time he eats the dry food you provide. Once your pet eats the dry, hard, round sad balls of kibble, he will have to use his own body moisture to rehydrate that food. And he can’t drink enough water to do it. Kibble fed dogs typically drink A LOT of water trying to stay hydrated. They sadly live each day dehydrated and inflamed. If a pediatrician told you to feed your human child round, dry balls of dehydrated kibble for every meal, every day…you would rethink your choice of pediatrician. Yet, for some reason, this makes perfect sense for our pets? It doesn’t. So your dog is eating kibble and now you are freaked out… what’s the fix? You have several options: OPTION 1: Whatever dry kibble you are feeding, there is usually a canned version of the diet. Start by swapping out a tablespoon of dry for a tablespoon of wet. Do this swap slowly and work up to 50% canned and 50% dry. ALWAYS monitor weight weekly to make sure you pet isn’t gaining or losing.

OPTION 2: Order a cooked food diet from a company that delivers it frozen to your door. I like Nom Nom Now for my own pets. They have nutritionally sound recipes that are balanced and safe long term. OPTION 3: Under the guidance of a veterinarian, you can learn how to safely transition to a raw diet. SNACKS: I recommend cooked string beans, cooked cubes of sweet potato or frozen blueberries. Also, cooked, whole pieces of any lean meat is a good snack. As a Certified Veterinary Food Therapist, I know that even a 30% increase in the moisture of a diet can lead to an over 50% health benefit. If all you can do is add the moist snacks, it will still have a health benefit. Disclaimer: It’s best to transition your pet’s diet under the guidance of a veterinarian trained in nutrition, especially if your pet is prone to pancreatitis or any gastrointestinal disease.
