Tourists are also attracted to Goa for its cultural heritage - from the famous old Portuguese churches like Se Cathedral in Old Goa, the 16th Century Safa Masjid in Ponda and Shree Mangesha Temple in Mardol, the legendary Arvalem or Pandava Caves where the Pandavas of the Mahabharat fame lived, to its two unique festivals - Carnival and Shigmo. Goa plays host to many festivalsthe International Film Festival of India that promotes cinema, the Serendipity Art Festival, Sunburn Music Festival, The Grape Escapade to name a few. Before entering the hospitality sector, Vilanova and Cheryl Lobo successfully operated mobile phone stores under the brand Digital World. Despite their achievements in retail, they were drawn toward an industry that offered a more personal connection with people.
Driven by a passion for food and a desire to share the warmth for which Goa is renowned, the family launched the first Just Lobo’s Family Restaurant and Bar in Calangute in 2014. The response was overwhelmingly positive. Guests appreciated not only the food but also the welcoming environment that reflected the family’s genuine approach to hospitality.
Over the years, this support encouraged the family to expand their presence across Goa while maintaining the same values that inspired the venture from the beginning, quality, consistency, and meaningful guest experiences.Today, the family proudly operates multiple locations, with their eldest daughter, Marielou Lobo, along with her aunt, Dr. Lizanne Pimenta, leading the newest venture, Just Lobo’s Taverna in Mapusa. From coordinating arrivals and departures to overseeing housekeeping and responding to guest requests, Lincoln immersed himself in the day-to-day realities of hospitality management.
The early months were a period of constant learning. Last-minute reservations, unexpected guest requirements, and operational challenges became part of his routine. Every booking provided valuable lessons about customer expectations, service quality, and operational efficiency. Through this hands-on approach, he quickly gained insight into the factors that define a successful guest experience: cleanliness, responsiveness, convenience, and reliability.
Within a few months, the results became evident. Consistent bookings and growing demand revealed the potential of the short-term rental market. May 28 marks International Burger Day, celebrating one of the world’s most favourite fastfood. The hamburger traces its origins to 19th-century Hamburg, where minced beef patties known as ‘Hamburg steaks’ were a staple among sailors and travellers. German immigrants carried this culinary tradition to the United States, where it evolved into a convenient handheld sandwich. Over time and with the rise of chains like White Castle and McDonald's, the burger transformed into a global phenomenon rooted in German heritage and shaped by American fastfood culture.
In India, the burger arrived through American fastfood chains in the 1990s, but it didn’t take long to find its own identity. Adapted to local tastes, it moved beyond its original form, making way for innovations like aloo tikki and paneer-based patties. Carrying this spirit forward, Verna-based Kamaxi College of Culinary Arts (KCCA), presents its own take on the global favourite.
Faculty Chef Ashley NJ Furtado of KCCA shares a Spiced Indian Kheema Burger that brings together the richness of aromatic, masala-infused minced meat with the familiarity of a classic bun, a classic example of how the burger continues to evolve through local expression. At KCCA, dishes like these emerge from a learning environment that encourages students to reinterpret global classics through a distinctly local lens.
Recipe: Spiced Indian Kheema Burger
Ingredients
For the patties:
500 gm ground beef (80/20 for juiciness)
1 tsp ginger paste
2 tsp garlic paste
1 small onion, finely minced
2 green chillies, finely chopped
1 tsp ground coriander
1 tsp cumin powder
1 tsp garam masala
½ tsp turmeric
⅓ cup fresh coriander leaves, chopped
1 egg (or soaked bread for binding)
Salt and pepper to taste
1 tbsp oil
For assembly:
4 burger buns (brioche or potato rolls)
Butter, for toasting
⅓ cup mint-coriander chutney
2–3 tbsp spicy mayo or mango chutney
Sliced tomatoes and onions
Cheese (optional)
In a bowl, combine beef, ginger-garlic paste, onion, chillies, spices and coriander leaves. Add egg, season well and mix gently.
Divide into 4 patties (about 1.5 cm thick), pressing a slight indent in the centre.
Heat oil in a pan and cook patties for 4–5 minutes per side until done. Add cheese at the last minute if using.
Toast buttered buns until golden.
Assemble with chutney, patty, mayo, tomatoes and onions. Serve hot.

Ingredients
500 g ripe jamun (Indian blackberry)
3 tbsp honey (adjust to taste)
1 tsp roasted cumin powder
½ tsp black salt (kala namak)
¼ tsp regular salt
Juice of 1 lemon
50 ml fresh orange juice
A few mint leaves for blending 250–300 ml chilled water
A pinch of chaat masala Ice cubes
Chilled shot glasses with a salted rim, for serving
Method
Wash the jamuns thoroughly.
Blend the jamuns and mint leaves with chilled water until smooth.
Strain the mixture to remove the seeds and skin.
Add the honey, lemon juice, orange juice, black salt, regular salt, and roasted cumin powder.
Mix well and chill for at least 30 minutes. Pour into chilled shot glasses. Garnish with a small mint leaf or a sprinkle of chaat masala before serving.
