Mühlenchemie: flexible solutions in response to changing overall conditions in the milling industry This year, the flour treatment specialist

Mühlenchemie will present solutions that enable companies to respond to changing conditions in the raw material markets. One example is flour improvers based on different enzyme systems that make it possible to adjust the falling number of flours. For bakers and millers, the falling number is the measure of the flour’s natural enzymatic activity and is considered to be a quality parameter. The falling number determines the properties of the dough and the crumb and also the impression of freshness created by the bread. The addition of enzymebased flour improvers enables millers to compensate for fluctuations in the baking properties of flours. The product range includes current solutions such as EMCEmalt, Betamalt 25 FBD, Alphamalt VC 5000 SN and Alphamalt FN which lower the falling number according to the usage level. The company will also explain the product series EMCEgluten Enhancer. The enzyme compounds compensate for a low

gluten content of the flour and boost the effect of the existing gluten. The weaker the gluten in the flour, or the smaller the percentage present, the less satisfactory are the stability of the dough and the baked volume. EMCEgluten Enhancer counteracts such a loss of quality and ensures better results from the baking process without the addition of vital wheat gluten. These enzyme compounds also compensate for deficiencies in the raw materials and permit excellent results even when low-gluten wheat is used. As a flour treatment specialist, Mühlenchemie offers different enzyme systems to solve a host of problems that occur in milling. Its products are exported to over 100 countries.

Technology ty. The properties of the dough remain unchanged, and the crumb stays firm even when cut. Since a longer shelf-life and enhanced consistency of the products can be achieved with a low dose, bakeries can increase the profitability of their pastry goods.

Fresh XL2 1% and TopBake Fresh XL3 1% keep bread fresh longer with flours that tend to bake dry. The addition of 1% to 1.5% of the enzyme compound results in a much softer and more succulent crumb.

Whereas TopBake Fresh XL2 1% was developed for rye and mixed wheat and rye bread, TopBake Fresh XL3 1% is intended for wheat and mixed wheat bread. A small dose is enough to achieve noticeable and long-lasting results.

TopSweet Black 50 is a fifty-percent baking premix for brownies and muffins.

The use of TopSweet Black 50 results in baked goods with a very dark colour and a distinctive flavour. The typically American products are pleasantly soft and succulent. TopBake 1-2-Korn is a spelt premix containing einkorn (onegrained wheat) and emmer. It enables bakeries to meet the demand for bread and rolls with a slightly nutty taste.

Einkorn is an ancient cereal, practically unknown nowadays. It is extremely wholesome and nutritious and at the same time light and readily digestible.

Einkorn, emmer and spelt are robust cereals that have been grown for over 10,000 years and need little fertilizer.

The TopBake 1-2-Korn premix therefore meets the growing trend towards the production of baked goods from ancient, indigenous grain varieties.

SternEnzym - the Enzyme Designer SternEnzym will be showing tailormade enzyme systems designed to 16

simplify processes and make the production of baked goods more profitable. Mulgazym DX improves the stability of the dough, reduces stickiness and increases fermentation tolerance. The enzyme complex can be used for all yeast-raised products such as rolls, baguettes and sandwich loaves. Mulgazym DX achieves attractive results even with weak flours and complex processes such as retarded fermentation or freezing. Unlike DATEM, Mulgazym DX is tasteless and temperature-stable, and because of the low usage levels it enables mills and bakeries to save on transportation and warehousing costs. The Sternzym Fresh Cake series prolongs the shelflife of sponge-type products like cup cakes and Gugelhupf. The result is a much softer crumb with better elastici-

ever since the beginning in 1980, plenty of solutions have been produced in the field of deep-freezing, cooling, proofing and pasteurizing. All of them share versatility, complete automation and advanced technology.

Today Tecnopool has completed its range of equipment with the spiral cooking system, which, thanks to its configuration, saves space and maintains a linear process.

ecnopool was founded in 1980 in San Giorgio in Bosco (Padua) from a group established more than 50 years ago. Since the very beginning, the company managed to stand out in the field of equipment for food industry. Over the years, the company has worked intensely to develop systems that were reliable, versatile, effective, technologically advanced and completely automated.

In this way, there is no need to use multiplying/demultiplying devices, which are very common in the lines with pans that use tunnel ovens.

The spiral configuration best exploits the heating system that Tecnopool designed for this kind of oven.

Compared to tunnel ovens, the absence of forced ventilation and the favorable air volume/product balance in the cabinet allow maintaining the same cooking time with a room temperature between 10 and 15 °C lower.

In special cases, according to our experience, the difference can reach up to 30°C. Our spiral oven simplifies the production line and saves space and energy.

The energy saving is obtained for three reasons: • Lower working temperature, thanks to combined radiation and convection heat transfer.

This characteristic, in addition to the absence of forced ventilation, improves, compared to other systems, the quality of the cooking because the system can work at a room temperature that is 10 °C lower on average.

• 20/30% higher performance compared to good air heating systems thanks to the thermal fluid heating system.

• Higher overall productivity, thanks to the lower dehydration of the final product. In the case of bakery products, their final weight is around 1-2% heavier than in a conventional cyclothermic oven.

Independently from the above, the dimensions of the thermal power plant are still based on the maximum requirements of any cyclothermic system, in order to work with the lowest temperature of thermal fluid.

Technology

This means a lower fuel consumption, a lower heating time and a longer life for the thermal fluid, beyond its theoretic expiration.

As a matter of fact, in most cases the working temperature of thermal fluid is lower than 280 °C. This oven is designed for both medium and large companies: for the former, it is an excellent alternative to electric rotating ovens, which normally guarantee an excellent price/ productivity ratio; for the latter, it simplifies production lines, with moderate investments and lower overheads. Sweet creativity: iba UibC CUP “ConfeCtioners”

op confectioners from Asia and Europe are gathering in Munich in midSeptember for the iba UIBC CUP “Confectioners”, where four teams will compete for the gold medal. The competition will be held by iba, the world’s leading trade fair for bakery, confectionery and snacks, at the Fairground Messe München. About 1,200 exhibitors will present their latest innovations and the future

trends of the bakery and confectionery trade from 12th to 17th September 2015.

Messe München - and, this time, there will be a climax at the end of the show at the forum in hall B3.

They have mastered the art of sweet seduction, the confectioner teams from South Korea, Taiwan, Norway and Germany, and will compete for the title at the iba UIBC CUP

“The iba-UIBC-CUP has a special charm, because the best confectioners from two continents, where patisserie is highly regarded, compete,” says Gerhard Schenk, Vice President of the International Union of Bakers and Confectioners (UIBC) and President of the German Association of Confectioners (BIV). They have time to master the tasks until 1 pm on Thursday 17th September. This year’s theme is “circus”. The participants produce a decorative piece from sugar, chocolate, marzipan and

nougat - or a combination of these ingredients three different petit fours, three different pralines, two figurines and a national speciality in which a cake is integrated.

Perfect preparation is one of the prerequisites for success, says Schenk.

“Nothing can go wrong,” he emphasizes. After all, the participants have limited time available to fulfil their tasks. Schenk notes yet another feature that distinguishes the great participants from the good ones: mental strength. “Participants must be perfectly fit, not unlike high performance athletes. And they must call up their maximum skills - two two days in a row.”

The German participants are Lena Rinne and Thomas Lakner. Both

have already gained competition experience: Lena Rinne was the 2014 regional champion at the practical performance competition of young confectioners in North Rhine-Westphalia. Thomas Lakner won the team culinary trophy in Luxembourg last year. Their competitors at the iba UIBC CUP in Munich include Catherine Nilsen and Hege Andersen Høgstø from Norway, Dongwoo Lee and Hyunk-jin Kwon from South Korea as well as Peng Hao and Terry Yang from Taiwan. ünchen - Bosch Packaging Technology präsentiert auf der IBA 2015 erstmals die Pack 301 LS (Length Slug)-Lösung zum effizienten und flexiblen Verpacken hochkant stehender Biskuits und Cracker. Diese ergänzt die horizontalen Schlauchbeutelmaschinen der Pack Series, welche Einstiegsmodelle bis hin zu vollautomatischen Technologien umfasst. Die Maschine unterstützt Hersteller dabei, die steigende Nachfrage nach horizontal verpackten Biskuits zu bedienen und gleichzeitig eine erstklassige Produktqualität zu gewährleisten. Die Voll-Servo-Ausführung des Smart Measuring Loaders ermöglicht ein kontrolliertes Einlegen der portionierten Biskuits in die Querstabkette. Die Smart Transfer Unit verfügt über eine Vorbeschleunigung und stellt so eine optimale Synchronisation mit der Zuführkette sicher.

Dies verhindert hohe Krafteinwirkungen auf das Produkt während dem Transport von der Querstabkette zur Zuführung der Schlauchbeutelmaschine und stellt eine kontrollierte Handhabung sicher. Um die Biskuits während der Zuführung in den Folienschlauch in hochkant stehender Position zu halten, werden sie durch Gegenhalter unterstützt. Die Stelle, an der die Gegenhalter auftauchen, kann vom Bediener leicht mittels Einstellrad eingestellt werden. Zwischen der Formeinheit und der Quersiegelstation wird der Slug schonend durch Seitenbänder oder -ketten in Richtung Quersiegelstation transportiert. Je nach Produkteigenschaften können die Bediener die Seitenbänder durch Seitenketten ersetzen und umgekehrt.

Total Productive Maintenance Die auf Bedienerfreundlichkeit und gemäß dem Prinzip der „Total Productive Maintenance“ ausgelegte Biskuit-Verpackungslösung bietet eine rundum einfache Zugänglichkeit für einen reibungslosen Betrieb, eine schnelle und einfache Reinigung sowie minimalen Wartungsaufwand. Die Querstabkette verfügt über einen federbetätigten Kettenspanner mit Anzeige, damit Bediener auf einen Blick überprüfen können, ob die Kettenspannung optimal eingestellt ist oder gegebenenfalls nachjustiert werden muss. Die mit dem Produkt in Berührung kommenden Maschinenteile sind aus Edelstahl gefertigt und entsprechen damit den aktuellen Hygienestandards. Give each cheese its due

FP027 is the tecno Pack wrapping machine used by Qualità Leone. Multi axis and horizontal, it has been developed to the modified atmosphere packaging of cheese

avarian Emmenthal, Swiss Emmenthal, Maasdam, Fontal, Gouda, Pecorino, Ricotta salata, Rosa Camuna, Monte Veronese, Asiago. From foreign to Italian cheese, as well as the typical area of Villafranca and Monti Lessini: these are just a few of the over 120 portioned cheese which FP027 fl ow pack is able to pack. FP027 is one of the four machines specifi c for the dairy sector, proposed by Tecno Pack.

It is suitable to pack cheese in bulk, which are transferred directly on the fi lm, avoiding the problems of conveyer transport, thanks to the bottommounted reel. Conversely, FP200 EVO has top-mounted reel and so it is suitable for cheese portions packaged in tray; FP025EVO and FP025EVOBB complete the range. Cheese portioning, loading, collection of packs, palletizing: the horizontal packaging machines are placed at the center of these passages and, therefore, they have been designed in order to be combined with robotic systems, such as automatic product feeding, with the purpose of minimizing human work.

FP027 at work FP027 is manufactured in Schio, near Vicenza, in the Tecno Pack plant. The company was founded in 1985 when two friends began to “restore”, as they used to say, old used packaging machines. It did not take much time for the fi rst packaging machines to be produced and for extensive experience in fl ow pack systems to be gained. An FP027 machine had been installed at Qualità Leone, an historical com-

pany in Villafranca di Verona, which took its fi rst steps in the small and medium- scale distribution in 1966.

This family- run company is specializing not only in packaging mediumhard cheesed, but also in producing their own cheeses, such as Rigatel del Castel and Roverella. Tecno Pack and Qualità Leone have met at Cibus Tec 2011, almost by chance. And they have immediately decided to work together. In FP027, cheese in different shapes, all perfectly aligned on the machine’s loading conveyer, is fi rst detected by a barrier photocell, which, by sending signals to the front camera and working in synergy, allows to understand which, among them, are in phase and which, very rarely, are

not. In this case, the machine either stops, or triggers an alarm, or misses a package. Thanks to seven different motors, this “cut and paste” and control system also manages the sealing precision, depending on the used materials: from fi lm to paper-fi lm, packages intended to different market segments can be achieved. The keyword is modularity: instead of a single large

loading conveyor, it is possible to insert two, four, six tapes coupled with an automatic cutting line, so as to be able to introduce many pieces of cheese in the machine and speed up the process. It is a technology which can meet all traders’ needs in terms of small quantities and of many formats worked. This allows understanding how FP027 is able to meet the demands of large and medium enterprises which, on the contrary, need less formats and large quantities. Tecno Pack has built FP027 with primary emphasis on the machine’s ability to seal all different types of films: from simpler films to paper-film, which, having a transparent window in the middle, gives a sense of craftsmanship to the package. A very common mistake in the packaging process is, however, the use of a single film for many radial sections of the pieces of cheese: the risk in this case is to find an excess of film above the pack, an unaesthetic and dangerous situation, since a wrong sealing results in the gases leak and, consequently, in shelf-life reduction. FP027 can handle this problem thanks to its double reel holder, so that, if necessary, it moves quickly from one to another.

Multi-function and versatile A part from being multi-functional, the machine can also pack fresh products, not portioned, which, in the first ten days of their life, are prone to a predictable physiological loss. With the help of the right gas mixture, the FP027 flow pack sealing, and cold chain handling, the decline has decreased by about 70%. One of the first cheeses to experience this innovation was Rigatel del Castel, made with milk from two stables in Valeggio sul Mincio, a few kilometers from Villafranca.

Versatile is synonymous with multifaceted: the quick switch - from one type of cheese to another, from cubes to the whole cheese, working up to 100 pieces per minute - is definitely the added value of this machine, a feature which makes it easy to use in all countries.

Cheese, the gas mixtures concentrations, films: all these elements - although different from those currently used in Italy - work fine on FP027. The challenge Tecno Pack wants to accept is the frontier of foreign countries.

Switzerland and France, to name two European markets, will be assisted by specialized service centers and technical experts, to give the same level of service continuity with foreign compa-

nies, as if they were close to the Italian Tecno Pack plant.

Increase of the shelf-life FP027 ensures optimum sealing thus contributing to increase the product shelf-life, which depends on: the initial microbial loads of cheese, type of film, sanitizing operations and the correct gas mixtures and temperatures used in modified atmosphere (MAP).

Taking into account these variables, in the numerous tests carried out by Leone, thanks to FP027, the shelf-life of some cheeses increased from 90 to 120 days. A concrete example of this result is the ripening of Pecorino sardo

by Qualità Leone. Approximately 7,000 whole cheeses are aged in Leone house; the trick to ensure the product to be perfect even months later, was its packaging in flow pack with FP027: the 2.5 kg whole cheeses, after three months, appear as just packaged. The advantage lies in being able to discover FP027, little by little: thanks to proper tests, the potentials of the machine are almost endless. Tecno Pack packaging experiences in different sectors have allowed the company to build a rich know-how, resulting into customer made solutions.

theegarten-Pactec, one of the world’s leading manufacturers of packaging technologies for confectionery, today inaugurated a new manufacturing/assembly complex and office building at the company’s long-standing headquarters in Dresden. the total investment of € 30 million represents the largest-ever investment in the history of the packaging machinery manufacturer

or Theegarten-Pactec, the new building is the foundation needed to continue building high-tech machines for our customers and secure long-term growth,” explains Markus Rustler, President & CEO of Theegarten-Pactec. “The new building has also resulted in the creation of around 50 new jobs.

We are delighted that the first construction phase is now complete,

thus setting another milestone in the company’s history, which goes back over 80 years.”

The company’s positive performance in recent years meant that the existing buildings had grown too small. The new assembly buildings are designed to create better assembly conditions for complex lines and in particular to facilitate startup operations in Dresden itself so that seamless project workflows are

guaranteed for Theegarten-Pactec and its customers. The TheegartenPactec site will increase in size as a result, extending to a total area of 50,000 m2.

The entire project will be implemented in three construction phases and will also involve the phased demolition of existing buildings. During the first construction phase, the office building and the first part of the assembly/manufacturing building were

constructed. This phase is now complete. This is being followed by the demolition of the old building and the construction of the second half of the manufacturing and assembly facilities. Both should be complete by mid-2017. The new construction consists of an office building with production and warehouse areas, staff amenities and technology facilities as well as a car park with 170 parking spaces. The offices provide space for various usages such as research and development, design, customer service and sales. An employee canteen with a terrace is also located in the interior courtyard. Mechanical production and varnishing is accommodated in the manufacturing building. A number of productionrelated offices with a gallery are situated adjacent to the manufacturing building. An assembly building and a warehouse are also under construction. The demolition of existing buildings and the construction of the new facilities are taking place on the site without interrupting operations. A total of 5,500 m2 of office space has been built with a high-spec building envelope, which is to be certified in accordance with the KfW Development Bank’s energy efficiency standard. The office building is a steel concrete construction in a cast-in-place concrete structure with beam-less flat slab ceilings. The facade is a curtain wall consisting of various materials such as fibre cement panels, metal panels and expanded metal.

The offices have a ventilation and air-conditioning system.

The assembly and manufacturing buildings, which are fitted with cranes and hoisting equipment throughout, will cover a total area of 15,500 m2.

They are equipped with radiant ceiling panels for district heating and a ventilation system is also installed.

The new buildings provide space for 400 workstations. The location in the Reick district of Dresden is an urban, mature setting with public transport links and easy access to the A17.

With 400 employees, TheegartenPactec is a major employer in the Dresden region.

“Thanks to careful planning, this mammoth project has so far not impacted on our daily operations, the design and manufacture of packaging systems,” says Rustler. “The three pillars of the construction project – time, cost and quality – are in line with expectations due to outstanding planning by our partner Vollack and the execution of these plans by the individual trades.”

With a team of 300 employees, including 150 architects and engineers, Vollack is a specialist in the methodical development, planning and implementation as well as revitalisation of sustainable and ener

gy-efficient offices, industrial buildings and health sector buildings.

Theegarten-Pactec worked on its first joint project with Vollack in Saxony in 2006: the renovation of the eastern hall (Osthalle) in the building (assembly and warehouse building) in a project valued at approx. € 300,000.

Even then it could be seen that the building would need to be completely renovated as some of Theegarten’s building stock in Dresden dates from the 1950s and 1960s. In 2010, the two partners developed the initial concrete ideas for converting or renovating Theegarten-Pactec’s old buildings. In October 2010, development of the site with the old buildings began. Land was subsequently purchased at the old site, opening up new prospects for the future. The building application was submitted in April 2013. The demolition work commenced in November 2013.

he switch from plastic bottles and doy-packs to the SuperLock® pot from RPC Superfos has enabled Spanish food producer Casa Ametller to expand its range of cold and hot soups and give them a more premium image. A family-owned company established in 2001, Casa Ametller produces a range of high quality fine food products and also has 74 retail stores, mainly in the Catalonian region near Barcelona. The company’s soup range was only recently launched in Spain, Switzerland and Germany but with the advent of the SuperLock® pot this has now expanded into 11 different flavours. The previous packs were produced in-house and while they worked well, they did not deliver the high class solution that Casa Ametller wanted to offer, as Albert Massaneda, team member of new development, explains:

“In line with an overall growth and expansion strategy, we wanted to obtain more customer attention and obviously sell more soups. Through the SuperLock® pot with in-mould labelling we can clearly communicate the high quality of our soups. We appreciate the rigid plastic solution as well as the increased shelf life that our soups get with this pot.”

As a soup producer, Casa Ametller values the fact that the SuperLock® pot is suitable for hot filling and autoclaving in the process line, while for end-users, it delivers a premium customer experi-

ence. Albert Massaneda highlights how easy it is to open and re-close the pot thanks to the click-on screw-off lid, and he also points out the membrane, which can be effortlessly peeled off.

“Working with RPC Superfos has been a pleasure,” he concludes. “We have received competent service in a proper way and all the support that we needed.

It takes some time to implement a packaging project from start to launch; however, looking at the great result, I would not have done it any other way.

One Russian demand is futureproof processes.

“We always look at future development options with our customers.

We know from experience that it is important that we deliver a long term solution, which can be expanded to meet requirements in five to ten years when production needs to increase,” Olav Vind Larsen explains.This is the case in all the projects ALECTIA is working on right now. Current projects include Greenfield projects and upgrading existing factories.

“In one of your projects, we are supporting the client in securing that the equipment delivered from the supplier, fulfill the requirements of a modern food factory.

An ALECTIA team conducted an audit of the existing factory and made a prioritized list of necessary design changes which should be carried out by the supplier. The production audit is an efficient tool in the performance improvement of the project, but it is even better to design the factory optimally from the start. The cost of delay or poor operational performance is much higher than the cost of the right design of buildings and production equipment”, Olav Vind Larsen says.

The new condensing units designed

For the new R407F condensing units, Zanotti has recently obtained certification in accordance with the program developed by ASERCOM in compliance with the Ecodesign directive, which, with respect to condensing units, will come into force on 7/1/2016. The Ecodesign directive imposes the minimum requirements of efficiency, depending on the type of application and the power class of the units and also requires complete doc-

umentation on its performance data according to the established parameters. Only a few companies have had their units certified. Zanotti is among the very few which offer unit that operates with R407F gas, a new gas with reduced environmental impact for use in the refrigeration field. Flat tubular Heaters boost eFFiciency for fryer Technology

rom fryers to griddles to ovens, heat is an important component in most foodservice applications.

When it comes to the heat source for frying, not all heating elements are created equal.

Electric fryer heaters can be segmented into two broad categories - round tubular heaters, and flat tubular heaters. When first introduced, fryer heaters were round tubular.

But engineers found that a flat tubular design offered many benefits - the most important being that the shape lifts the oil into the cook zone

far better than round heaters. An innovation was born.

Flat Surface Geometry Because of its design and geometry, flat tubular heaters will heat viscous fluids from ambient temperature faster than round tubular elements with the same wattage and at a lower sheath temperature.

The benefit of this shape is the enhanced flow of liquid past the surface of the heating element. The round tubular has a much more erratic flow pattern (see graphic). Note the currents swirl around and trap

heat next to the sheath. This is due to the tubular’s round shape, which causes a wider and less efficient flow of liquid around the heater surface.

The flow pattern around the flat tubular heater is streamlined; the flat surface has less restriction on the liquid as it moves up and past the heater sides.

This efficient and faster flow pattern permits the liquid to move heat away from the sheath very quickly, resulting in the flat tubular heater’s lower operating sheath temperature (see graphic).

faster than the round heater. The end result – the flat tubular gets the heated liquid into the work zone faster than when using a round tubular.

The flat tubular heater has about a 50 percent greater surface area than a round tubular. This surface area design improvement is the key to lowering watt density for the same length heater or reducing the heater size while maintaining the same watt density.

Flat tubular heaters are ideal for fryer applications because their shape lifts the oil into the work zone better than round heaters.

Greater Buoyancy Force This natural convection phenomenon partially depends on the ratio of a buoyancy force to the viscous force of the fluid being heated. The buoyancy force or the flow of liquid up and across the heater surface is mainly determined by the length of the heater sides.

The side of a flat tubular heater is typically 1 in. (25 mm), compared to the 0.43 in. (10.9 mm) or less dimension of a round tubular element. The flat tubular heater’s smaller edge and longer side creates a buoyancy force up to ten times greater than a round tubular heater depending on the material being heated.

Faster Heat Up Flat surface technology provides faster heat up and recovery times than round tubular heaters. Their unique shape minimizes coking and oil degradation, and enhances the flow of the oil past the element’s surface, helping to pull heat away from the heater sheath. Compacted magnesium oxide (MgO) insulation transfers heat away from resistance wire to sheath material and media more efficiently, shortening heat-up time.

In addition, the heater lasts longer because it runs at a significantly lower sheath temperature than an equal watt density round tubular.

This also prolongs the life of the oil which shortens and reduces costs from frequent changing.

Smaller Dimension Normal to Flow This feature refers to the width dimension of the heater that the liquid flows around. Typically, a narrower dimension will give a smoother and faster liquid flow. For example, the round tubular’s wide dimension, nearly a half-inch, inhibits the flow of liquid. It causes currents which disrupt the flow and the flow rate is somewhat slower.

If coking is a problem, it is an indication that the sheath temperature is too hot and is burning the oil. A flat tubular heater will provide a lower sheath temperature than a round tubular element, without reducing wattage or watt density. Coking is also reduced by the wiping action that occurs as the heated liquid flows past the heaters surface. The result is less liquid degradation and longer liquid life.

The flat tubular heater, on the other hand, has a much thinner dimension 0.235 in. (5.97 mm), which reduces the drag forces on the liquid flowing past the heater. This allows the liquid to move past the flat heater

“Prototype Element Performance Test,” revealed that the FIREBAR flat heating element was the first to consistently return the oil to the 171°C (340°F) reload temperature. FIREBAR also maintained the highest average cook zone temperature of the heating elements tested, recorded the fastest pre-heat time and offered one of the lowest pre-heat energy consumption levels ever tested.

During the performance comparison test of the FIREBAR heater versus an equivalent kW round tubular heater, per ASTMs test method F1361-7, the FIREBAR heater’s fast recovery allowed cooking of six heavy loads of french fries versus five heavy loads of an equivalent tubular or a 20 percent capacity improvement (see below).

Reduced Watt Density Flat tubular heaters can be operated at a higher watt density than

a round tubular heating element without increasing the sheath temperature.

Flat tubular heaters also allow more wattage into the application at the same watt density with a shorter heating element. Both types of heaters can have the same wattage, but the flat tubular will operate at a lower sheath temperature than the round tubular.

In tests conducted to demonstrate this phenomenon, both heater types had a watt density of 30 and were immersed in a light liquid shortening. The flat tubular element heated the oil faster from ambient temperature than the round tubular. At 149°C (300°F), the flat tubular element heated the oil to temperature in 11 minutes where as the round tubular took 18 minutes. Plus, the flat tubular heater’s average sheath temperature was 10°C (50°F) lower than the round tubular.

With regard to failure costs, preventive maintenance provides a high return on investment (ROI) and additionally supports a continuous improvement process for the entire maintenance management as well as for production. In most cases, companies may not even need any additional installation of an expensive sensors. “In a first step, we use the data that our pumps produce

“However, an additional sensor can be used to increase the predictability in more complex tasks.” The conditionbased maintenance conducts maintenance measures only when triggered by actual wear. The monitoring solution enables not only the display of trend curves, critical states, and the storage of historical data, but also the calculation of cumulated consumption values.

Necessary maintenance work can be displayed on a maintenance plan panel, offering a related maintenance manual while showing the required tools and necessary spare parts. “In the future, monitoring will be further integrated into our service processes,” says Knecht. In the simplest case, a service technician gets the information of a service request directly to his Smartphone. In the next step, a service order is automatically created in SAP and mobilizes a technician or triggers the supply of spare parts on the basis of the stored monitoring data. “Our customers want one thing: system avail-

AB plants Pasturago di Vernate The activity of the Pasturago di Vernate plant (Milan) is aimed at producing and packing fresh milk, cream, yoghurt, desserts and UHT milk. The plant, an ECOMAX® 33 HE, is powered by natural gas and is a modular container solution with a total rated power of 3,354 kWe at full load and total thermal input power of 7,674 kW. The new plant will produce electricity which, net of consumptions by the auxiliary equipment, will be fully used by the production site of the company, while the thermal energy produced by the exhaust gas and engine cooling system will be used for the company’s technological purposes in the form of 11 barg steam and hot water at 90°C respectively. An exchanger with fumes pipes will be installed on the fumes circuit to produce steam, which is to be used by the company for its own production purposes. The total recoverable thermal energy is 2,808 kWt. The unit is expected to be operative for around 7,000 hours/year.

AB plants Gioia del Colle The activity of the Gioa del Colle plant (Bari) is aimed at treating and packing fresh pasteurised milk and UHT milk of the “Perla” and “Granarolo” brands.

This is necessary to ensure the choco-

fter an exceptionally successful fair in November 2014, the early indicators for the upcoming Sweets & Snacks Middle East from 27 to 29 October 2015 are also extremely positive. Current registration levels indicate that both the eventâ&#x20AC;&#x2122;s exhibition space and its international character are set to grow. It has again been possible to expand the hall capacity by around 30 per cent.

The fair is already almost completely booked up. A total of

around 300 exhibitors from 40 countries are expected to participate, including group participations from Spain and Great Britain for the first time. Sweets & Snacks Middle East has been taking place annually in Dubai since 2007 and in that time has developed into the leading trade location for sweets and snacks in the entire MENA region.

The new October schedule, instead of the traditional November fair date,-as well as the updated sched-

uling within the week - from Tuesday to Thursday - are an ideal fit for the Dubai 2015 calendar of international fairs and will ensure important synergies with the Gulfood Manufacturing, Speciality Food Festival and SEAFEX trade fairs taking place at the same time.

The encouraging high registration level for Sweets & Snacks Middle East 2015 is also a result of the continuous reviewing of the fairâ&#x20AC;&#x2122;s concept. It is based on the model of ISM, the International Sweets and Snacks Fair in Cologne.

For over forty years, ISM has been the world’s largest and most important trade fair for the sweets and snacks industry.
