F

or over 50 years, Zanotti Spa has been designing and manufacturing equipment for the refrigeration, storage and transportation of fresh and frozen food.

Founded in 1962 as a familyrun business with the conception of the new and revolutionary “uniblock� system, a complete cooling system that is autonomous and ready to be used for small needs, the management changes made in 2002 led the Zanotti company towards international grounds and turned it into a managing structure that was better prepared to face competitors worldwide. Over time, Zanotti has improved its series, which

are now the most complete offers available on the market.

Zanotti can meet the food cooling needs of the entire cold chain, thus, of the preservation of raw materials, of their processing, storage and distribution to supermarkets, specific shops or restaurants.

The units designed for refrigerated transportation complete the series and ensure foods are handled safely. The products developed by Zanotti cover the needs of small to medium-sized cooling necessities, as well as the needs of logistic and storage centers: monoblocks, multi-compressor stations, condensing units and cooling systems for food, but also for the aging of cold

meats and cheeses, to refine wines or to dry grains in silos.

The diesel unit completes the cooling chain with its split battery system or others, which were specifically designed for the short, medium to long distance transportation of food.

The industrial division designs and implements equipment for ice tracks, like the new ones of Courmayeur and the Arena of Minsk, which is the biggest one in Europe. Recently, the company acquired a new contract to make a track, with Olympic features, in the new ice stadium of Kazakistan. The works will soon begin. The installation will be implemented with the latest free-cooling technologies that

use the cold from outdoors at certain times of the year. Recently, Zanotti was chosen by a major airline of the United Arab Emirates to make a system for their new catering center for a value of 21 millions of dollars; in the international airport to increase the production of 260,000 meals a day that will be distributed on board of the new Boing fleet. It’s one of the biggest and most modern structures of this kind worldwide and, therefore, it requires highly reliable systems, top notch final touches and strict hygienic conditions with regards to the equipment.

As a result of this important contract, Zanotti recently won the tender for the supply of a similar installation; which should be implemented in the new airport of Muscat, in the Sultanates of Oman.

Other successes ensure the reliability of the Zanotti installations, implemented worldwide, such as the one of the Kabardino-Balkaria Republic to design and provide an installation to preserve apples in a controlled atmosphere for long periods, up to 7 months. Here, Zanotti has crushed the German competitors by presenting projects with advanced technologies that use intermediate non-

toxic fluids from a nutritional viewpoint. Nationally speaking, Zanotti has completed works with a leading Italian cheese manufacturer by implementing an aging system of the highest level thanks to the latest technologies; maximum energy savings with low operating costs, maximum reliability to reduce maintenance and to ensure the continuity of operations through centralized management and with a supervision system. Today, Zanotti Spa is an International Group with production plants in Spain, England, Brazil, China and it counts on a strong network of certified suppliers who provide expertise and assistance worldwide. The quality of the Zanotti products is the primary concern of the production unit. Actually, the products have been ISO 9001 certified in Italy, they have received the EC marking in Europe, the Gost in Russia and the UL in the US for several years now. These markings and certifications are based on the local standards of quality. The attention devoted to customers and the flexibility of the products are essential characteristics for Zanotti: investing in research and development to better meet customer demand by providing more convenient

solutions in terms of energy savings and reliability of use is a priority. The know-how Zanotti acquired over 50 years also concerns the environmental aspects involved since the products are developed to provide low energy consumptions and reduced noise levels; as to meet the current technological trends that aim to contain greenhouse gas emissions. This is how the BESTCOPÂŽ technology was created. It is applied on the motorized condensing units that are manufactured by Zanotti to improve the efficiency and energy consumption levels of the cooling equipment. This basically can be translated into energy savings (from 15 to 20% depending on the different environmental conditions).

The technological research is at the base of the investments Zanotti allocates every year to better meet the needs of the customers’ requirements by taking their work needs and the greenhouse gas emission standards into consideration.

THE SUSPACK PROJECT FOR SUSTAINABLE PACKAGING

Development goals successfully achieved thanks to the contribution of the Veneto Region

E.T. Engineering, a company specialized in the design and industrialization of PET containers, successfully concludes the project SUSPACK “SUStainable PACKaging through PET reduction and alternative materials�.

Thanks to the contribution of 180 thousand Euros for the financing of industrial research

and experimental development (CRO part POR FESR 2007-2013 Action 5.1.1) and the cooperation of international partners such as Novapet, P.E.T Engineering has been able to work on the study and industrialization of lightweight preforms with barrier materials and BIOPET. The reduction of the environmental impact was assessed by comparing the life cycle of the products developed with the existing ones: the LCA

savings showed, depending on the size, between 10% and 30% in terms of kg CO2 eq. P.E.T. Engineering is thus consolidating its leadership in the development of preforms and ultra-light containers with both standard PET and recycled and bio materials; in support of this commitment the company has also purchased an injection molding machine that will allow to make preform protypes in house to support this process.

L

ittle attention is often paid to surfaces in any metal material, provided that we need to solve cleaning and hygiene problems related to good aesthetics. Yet, the importance that surface finish may have, especially if in stainless steel, is as different as the variety of applications that these materials may have in various industrial environments, and in this case, in the agri-food plants sector.

For these kinds of plants, you need to enhance the peculiar features of stainless steel, such as corrosion resistance, hygiene, surface smoothness, etc, for which superficial treatments, non mechanic but chemical, are often carried out. Electropolishing is a surface finish chemical technique through which metal is removed electrolytically, ion by ion,

from the surface of an object. The main goal is minimizing the micro roughness by dramatically reducing dirt or product residues that stick to the surface and therefore improving cleanness of the surfaces. Electro-polishing grants smooth, easily cleanable and aesthetically nice surfaces, as it is requested in the food industry, combining with unrivalled hygiene and non-contaminants. This process reduces oxidation and contamination of the components of the stainless steel used in the dairy sector, and equipment used in

food automatic processes.

CHILLED NFC JUICES: THE BERTUZZI APPROACH

T

he market of fruit juice is developing quite rapidly and the share of NFC juices is considerably increasing because of their high quality. In Europe and the US (but also in whole world) 100% juice (not from concentrate) category is showing a strong growth potential. Of particular importance, in this sector, are the chilled juice, fruit juices that are prepared directly from the fresh fruit and then are just chilled and filled or slightly pasteurized and chilled in order to retain all organolectic characteristics. The majority of the chilled juice found in the shops shelfs is based on orange but other varieties like pineapple, grapefruit, carrots as well as blends (orangecarrot, orange-pineapple, carrotlemon-pineapple etc.) are becoming more and more popular. The main hints for the design of a plant processing fresh fruit into chilled juices are: • Optimization of flow of fruit/ juice • Optimization of characteristics of process equipment • Optimization of processing cycles in order: 1. Decrease processing times 2. Minimize oxidation of the juice

3. Keep high organolectic characteristics • Optimize CIP system to control the microbiology of the juice.

Some of the machines used for the application are dedicated for a certain type of fruit, for istance: • Dedicated citrus juice extractors (orange, lemons, grapefruit), on order to minimize the essential oil content in the juice and assure a good control of the pulp.

• Deshellers and dedicated presses for pomegranate to produce cloudy or clear juice which importance is considerably increasing for the beneficial health characteristics.

• Dedicated pineapple juicing in order to obtain high quality juice only from the edible part of the fruit without contamination with the peel.

These are some examples but few. Extractors for juice/puree

can be provided for apples, carrots, pears, passion fruit, banana, beets, mango, spinach, asparagus, berries, hawthorns guava.

The obtained juice is immediately (blended or not) slightly pasteurized (65-70°C) and chilled before filling. With BRAIN2 Formulation, Bizerba releases a new piece of industry software for manual formulation and dosing. The program ensures better safety, as it guides the operator carefully through the process and it enables complete batch traceability. Formulation also manages the master data centrally and tracks changes via audit trail. The software seamlessly dovetails into the BRAIN2 software platform and can easily be integrated into existing Bizerba systems.

I

t is essential in both the food industry and in the chemical industry to measure out ingredients accurately down to the milligram. Just a single overdosed ingredient is enough to render the product worthless. The BRAIN2 Formulation software by Bizerba increases process safety as it guides the operator carefully through the procedure and verifies the material number for each order item. It also displays the mandatory action symbols and hazard symbols so that the operator is always aware of the cur-

rent stage in the process and appropriately protected. The software manages all master data centrally, including material information, basic formulas and instructions. This enables the precise control of production processes, starting with the individual formulation workstation right through to comprehensive client server solutions.

Higher-ranking ERP systems are able to exchange the stored orders, formulations and results data by means of a file interface. The software also supports those responsible for production in tracing

entire batches.

Excellent flexibility and safety In order to make production as flexible as possible, customer-specific settings can be applied on each workstation.

For example user accounts, password guidelines and rights can be defined freely and depending on the safety requirements. If required, BRAIN2 Formulation also creates cyclical backups of all important production information. he dramatic growth of e-commerce in recent years is putting new pressure on the manufacturing and logistics industry. With tougher competition and higher customer expectations, fulfilling orders as fast as possible while ensuring traceability is top

of the agenda. In such a fast-paced working environment, labelling solutions that are fast and easy to install and operate, while being reliable and versatile are in great demand. A move towards truly universal printers There is also a tendency towards using family products as printers within the same family share key features and parts.
