Hand-picking and immediate pressing in the olive press allow to treat them well and to extract the maximum tasting expression. The harvest is done in the beginning of October. The choice of an early harvest is a particular choice which means to sacrifice some of the yield in order to enhance the tasting characteristics of each variety.
