The Irish duo behind Homeboy Bars finally opened their second venue this year as lockdown restrictions eased across Britain. Aaron Wall and Ciarán Smith (pictured) launched the original Homeboy in Islington in December 2018. Since then, the bar, which boasts “modern Irish hospitality”, has won Best Bar in North London by Design My Night; Top 4 Best New International Cocktail Bars in the World 2019, Top 10 Best International Cocktail Bars Europe 2020 and was placed 97 in a list of the Top 500 Bars in the World. With Homeboy Embassy Gardens now open for business and already proving a popular spot, we expect many more accolades will be coming their way. See page 14 for more

WELL that was a year that nobody could have predicted. From March 2020 we have weathered a devastating global pandemic that has severely impacted lives and livelihoods. There has been so much loss and heartache over that period and at times it seemed almost impossible to spot any light at the end of the Covid-19 tunnel. Thankfully, today, more than a year since the virus hit our shores, we do have hope and optimism for the future. The vaccine rollout continues at pace, bringing with it the very real possibility that life without restrictions will return again soon. In the meantime, the world of business has slowly started to open up again and with it the many industries that make up the the country as we know it. Thankfully this means the many Irish firms that can be found across Britain are now back in action – having, impressively, come through the most diabolical storm. What’s more, there have been new businesses launched and existing firms extended during that time, even in lockdown, showing that even when confined to their homes you simply can’t keep the Irish entrepreneurial spirit locked down. Brady Mallalieu Architects are based in Caledonian Road near Kings Cross, London, in a development they designed including 23 sustainable flats and three offices. During the spring lockdown of 2020 the firm was appointed by Green Skibbereen to work with them to consider how they might occupy Myross Wood House, near Leap, in West Cork, Ireland as a centre for community action on climate change. They are a recently formed group of individuals committed to grass roots activities that help the local community, businesses and organisations shift to low and zero carbon footprints. To help achieve these aims they are now in the process of inhabiting a former Catholic retreat centre which will become a base for educational events, exhibitions, training and a broader range of activities relating to wellness and the environment. The process of re-inhabiting the building will become a demonstrative and hands-on pedagogical process as it is gradually re-used, retrofitted and upgraded. “We worked with Green Skibbereen to develop the scope and nature of these activities and explore both how they might occupy the building and the opportunities the building presents to them,” the firm confirms. “The result of this process was not a fixed masterplan or final layout for the building but a collection of actions which might be carried out over the short, medium and long term. “We envisage these actions changing through the life of the group and their residency at Myross. New actions might be added as other opportunities are identified or grant funding obtained, whilst others might prove unviable to remain unimplemented. Action by action Myross Wood House will evolve into the centre for community action they envisage.”

Wall left Dublin to gain success at the helm of the world-famous London Cocktail Club and Callooh Callay, while Smith travelled the globe, managing famous hotels such as The Waldorf Astoria, NYC and The Dorchester in London. But, having reunited in the past few years, they have now combined their dynamism and attention to detail to create Homeboy Bars. “Hospitality and making people feel at home, will be at the core of everything we do,” they said of the joint project. Their second venue, Homeboy Embassy Gardens, enjoyed a delayed launch in April 2021. The project had been on the cards for some time but opening had to be pushed back due to Covid-19 lockdown restrictions.

QUEEN OF THE SCREEN When lockdown temporarily closed Anna Haugh’s new restaurant, she took her culinary skills and embarked on a TV takeover IF you have watched any television over the past twelve months you will, no doubt, recognise Anna Haugh’s face. The Dubliner, who is the owner and chef patron of Myrtle Restaurant in London’s Chelsea, has unleashed something of a TV takeover during lockdown – bringing her impressive culinary skills to the masses via an entirely new medium. Haugh has been cooking professionally for roughly 20 years. Born in Dublin, the 41-year-old, who is currently expecting her first child, grew up in Tallaght. Haugh went to school at Presentation Secondary School in Terenure and trained on a professional cookery course in Dublin. She began working with Derry Clarke of L’Ecrivain in Dublin before moving to London to expand her professional horizons further. In the British capital, a hotbed of culinary creativity, she worked with some of the leading figures in her industry – including Philip Howard, a Marco Pierre White protégé, the awardwinning Shane Osborne and possibly the world’s best known celebrity chef, Gordan Ramsay. If that wasn’t enough combined skill and experience to create another chef to be reckoned with, Haugh also spent time working with Italian chef Gualtiero Marchesi – widely considered to be the founder of modern Italian cuisine – while spending time in Paris. So, it would have been no real surprise to anyone paying attention when Haugh launched her first solo restaurant in London. Myrtle Restaurant opened in Chelsea in April

18

2019, promising to lead an Irish food revolution in the capital. Haugh’s aim was to bring the best of Irish cuisine to the plates and palates of the people of London and anyone else who chose to venture into town to sample her culinary wares. And she did just that, by introducing a “sophisticated taste of Ireland” either through old Irish recipes, lightened and modernised, or ”by using fantastic Irish produce”, she confirmed shortly after the opening.  Of course, opening a restaurant on your own is daunting regardless of the skill, support and experience you have behind you. “There is no secret investor so that makes me owner, chef, interior designer, and fire marshall wrapped into one,” the Irishwoman said at the time. “This is by far the most terrifying thing I’ve ever done.” She explained: “I’ve saved every penny, and this is my first restaurant as an owner.” Myrtle was named after fellow Irish chef Myrtle Allen of Ballymaloe House (pictured right) – an inspiration for the chef and the first female Irish chef to receive a Michelin Star. “Myrtle Allen would not be as well-known over here,” Haugh explained, “and this is what makes the name extra special for me.” “It makes it more personal. She was Irish, a woman, who wanted to celebrate great Irish producers, not to mention the best chef ever to come from Ireland. “How could I have called my restaurant anything else?” Myrtle quickly grew a following, with fans

enjoying Haugh’s modernised Irish dishes. They include Clonakilty black pudding wrapped in potato spaghetti served with a sweet and buttery bramley apple puree and pecans, a rich and succulent slow braised Irish beef stuffed Boxty dumpling, and a Carrageen chocolate mousse with dark chocolate Irish mist. The Irish theme, present throughout Haugh’s tantalising menus, is also ever present in her swish dining room – which is decorating with a warm mix of blues and greens with some dusty pink. The pictures that hang on the walls are of sketches of the Ha’penny bridge in Dublin, townhouses and of Irish streetlamps.

The voice of the Irish in Britain since 1970

The champagne goblets that adorn the tables are all from Galway Crystal and the water goblets are made in Mullingar, by Mullingar Pewter. And Haugh is keeping it in the (Irish) family, with her cousin Daniel Haugh joining her as restaurant manager before the global pandemic hit last year, a move Haugh explained was designed to keep “the service warm and informative”. “We want the customers to feel the warm welcome and attention to what each customer needs,” she added. Of course, less than a year after their exciting opening everything ground to a halt at Myrtle. The onset of the Covid-19 pandemic saw the restaurant’s doors forced to closed. They remained closed for many months, although as restrictions eased over the year, Haugh was eventually able to launch Anna’s Bistro, a takeaway delivery service for local customers bringing the taste of Myrtle directly to their doors. That, however, was just a sideline to the work that really kept Haugh busy during lockdown. Shortly before the world went into hiding Haugh had joined the line-up for the relaunched and revamped series of Ready Steady Cook. Much like the original 1990’s version, a cult classic presented by Ainsley Harriott, the 2020 instalment of the quickfire cooking competition has proved a ratings winner and continues to be so. With the now ubiquitous former reality TV star Rylan Clark-Neal in place as host, Haugh is one of a selection of next generation chefs being put through their paces on the BBC show.

Speaking to the BBC about her appointment to the Ready Steady Cook crew, Haugh said: “It’s so surreal, I remember coming in from school and watching this programme. “The idea that someone would say: ‘Anna, in 20 years’ time you’re going to be a chef on Ready Steady Cook!’ I wouldn’t have believed them.” Haugh is joined on the show by fellow chefs Akis Petretzikis, the first-ever Greek winner of MasterChef, master of Indian cooking, Romy Gill, School of Wok founder Jeremy Pang and 31-year-old Ellis Barrie, who started out in a professional kitchen at the age of just 15, and now owns one of Wales’ top bistros. The programme airs every afternoon on Mondays to Fridays, meaning there is a slice of Haugh to be enjoyed on the small screen for most of the week, when the series is on air. For those who missed the last series, which aired in March/April 2021, you can still catch up on every episode on BBC iPlayer.

So, whether in lockdown or not, you really don’t have to look very far to get a taste of Anna Haugh and her recipes inspired by home. Long may it last. Myrtle is open once again, for further details, menus and bookings visit www.myrtlerestaurant.com

BUT IT DOESN’T STOP THERE If Ready Steady Cook’s daily 3.45pm timeslot is too early for your viewing habits, or simply not your bag when it comes to cooking programmes, Haugh is also a regular chef guest on the two leading weekend magazine television shows – namely Saturday Kitchen and Sunday Brunch. But even more regular are Haugh’s appearances on the BBC’s Morning Live show. Presented by Kym Marsh and Gethin Jones, the daily show, which kicks off at 9.15am on weekdays, features Haugh as the resident chef.

TURNOVER: N/A Irish startup Eco Urban Scooters, which trades as Zeus Scooters, is the creator of the world’s first three-wheeled dockless e-scooter. Zeus rolled out its first shared electric scooter rental service to the public in Germany in June 2020. Set up by Damian Young, former head of SME banking at Bank of Ireland, the company is in talks with authorities in several cities about a scooter-sharing scheme, which is like the model used for the Dublin Bikes scheme. Young set up the business last year, working with a German software company and a Chinese manufacturer to develop the three-wheeled electric scooters. “This is a market which is growing rapidly,” he said. “Micromobility is displacing cars, which cause pollution and congestion.” Zeus’ unique three-wheel design makes the scooter safer and allows a smoother ride for the user, whilst a built-in innovative technology allows the rider to easily control the unit. The company is in talks with a further 28 European cities, including the UK, and hopes to have more than 7,000 scooters on the roads or cycle paths by the end of 2021.

Zipp Mobility

SECTOR: Transport OWNER: Charlie Gleeson FOUNDED: 2019 STAFF: N/A TURNOVER: N/A The Irish e-scooter start-up Zipp Mobility has been approved for trials across the UK. The British government recently announced plans to accelerate trials of rented e-scooter schemes as part of its strategy to explore less congested and greener methods of urban transport in response to the Covid-19 pandemic. The Dublin based firm, which was founded by 24-year-old Charlie Gleeson in 2019, is engaged with a number of councils to secure e-scooter licences to provide their sustainable micromobility solution to commuters across the UK. “Receiving approval from the DfT is a hugely encouraging affirmation of what we are striving for at Zipp,” said Mr Gleeson, CEO at Zipp Mobility. “Not only does this confirm confidence in the safety of our e-scooter, it also re-affirms that our bid for a more sustainable, responsible and transparent approach to the industry is one that is being readily welcomed by authorities,” he added. In June 2020 Zipp Mobility closed a €300,000 seed investment round, led by a London-based VC and private angel investors, and expanded its team to target the UK e-scooter market.
