Waste not, want not What can I do with all these courgettes? If you know any gardener at this time of year you will be inundated with increasingly desperate offers of courgettes, or more usually giant marrows. If there is any crop that loves to grow, it is the courgette.

August is the month for gluts of vegetables and fruit, when everything is ready at the same time and the gardener is overwhelmed by the volume of produce in the garden.

This is not a bad thing, and is what all the hard work early in the season is for, but it can be difficult to know what to do with all that veg. I have often seen allotment plots with vegetables gone unharvested, and it seems such a shame after all the energy that goes into producing them; with a little more work, your vegetables can be preserved to see you through the darkest of winters.

Some crops are easy to deal with.

Potatoes must be stored in the dark, in a dry, frost-free place, and checked regularly for signs of rot.

Onions and garlic must be dried and then can be plaited into a rope and hung in a frost-free place. They will last well into the spring before they start to sprout.

Peas and beans can be blanched and frozen. All varieties of beans are so worth growing. They give a

bumper crop if you keep picking them until the frost finishes the plants. Home-grown organic green beans in the freezer are a real winter treat. If you are lucky enough to have grown enough peas, and resisted the temptation to eat them straight from the pod, then your own home-grown frozen peas are a thing to be proud of.

Don’t forget about pickles, we are pickle mad in my house and my pickled onions will make your eyes water, but we also enjoy a range of pickled cucumber, cauliflower, courgette and beetroot. Chutneys are a great way to use up a glut of mixed veg.

August is the month when so many vegetables are ready to be harvested Tomatoes must be processed in some way to preserve them, either as pasta sauces and passatas, or oven dried and kept in oil. If they are just frozen whole they lose all their flavour.

Don’t let your fruit go to waste.

Apples will store in boxes between sheets of newspaper, just ensure they are not touching each other, but berries and plums will need turning into delicious jams or compotes. Or wine if you are feeling adventurous.

Cabbages need eating as soon as they are ready, or leaving in the ground into the winter depending on variety, and kale and chard can be picked as needed, a few leaves off each plant at a time. These will keep going until the spring.

Salad crops won’t store at all, so eat as much as possible, and give them away to all your neighbours, with a free courgette of course.

Although it is extra work, and you might have to invest in a second freezer, preserving your summer produce enables you to be self-sufficient in veg and fruit over the winter months.

‘Repair heroes’ in spotlight g Continued from page 1 Repair can help to reduce the huge quantities of household goods that we discard every year, including 53 million tonnes of electronic waste globally. Studies have shown about 15-30% of everything discarded could be reused or easily repaired.

However, many repair skills have been forgotten and the repair of everyday furniture, appliances and clothes has become harder with the use of cheap parts, poor design and greater complexity.

“We need things to be better designed and need more support for the repair sector to keep goods going for longer,” says Colm O’Connor of Duhallow Revamp.

“This not only provides local jobs and training opportunities, but also hugely benefits the environment.”

The European Commission has been making some headway recently, with new legislation obliging manufacturers to design certain appliances in a more durable and repairable way and to ensure repair services, parts and manuals are available. However, there is still a great deal to do to get repair back into the mainstream.

“One first step is to support local repair activities,” says Claire Downey, Executive with CRNI. “We are very proud to see our member, Duhallow Revamp, being represented at European level as it will show the importance of their repair work. We also hope it will encourage people locally to try out their repair service instead of just replacing things.”

Duhallow Revamp is a social enterprise offering furniture collection, repair and redistribution.

From its establishment in 2016, Revamp has collected in excess of 4,800 items of furniture, diverting a

net weight of over 143 tons from potentially ending up in landfills.

Of this, over 127 tons has been redistributed in the community.

Kate O’Keeffe started Art on Slate back in 2001. She produces hand crafted and painted slate products for all occasions using reclaimed and new slate as her canvas.

Kate is a self-taught artist but has broad range of skills acquired over the years which allows her to work at her dream job.

Kate has an interest in interior design and has undertaken apprenticeships in painting, decorating and sign writing as well as some time spent in retail. All of this experience culminated in an ability to create and sell beautiful works of art for all occasions at an affordable price.

Chartered Physiotherapist Dan McCabe Dan McCabe is a Chartered Physiotherapist operating out of the Primary Care Centre in Newmarket, Co Cork with his wife, fellow Chartered Physiotherapist Maria Farrell 1. What is your job description?

Chartered Physiotherapist 2. What is it really like?

It is a very varied job. Time is split between the treatment room where we assess and treat people, the gym where we do exercises and rehabilitation or on the field where we provide pitch side cover for sports teams. I work mainly in musculoskeletal physiotherapy.

These are mainly pathologies relating to bones, joints, nerves and soft tissues. There are also Physiotherapists that work in other areas such as stroke rehabilitation, pediatrics, cardio-respiratory, community and spinal injuries. I work in a private clinic but some of these jobs are based in hospitals including intensive care units.

3. What subjects did you most enjoy in school/college?

Maths, Science, English, Biomechanics, Anatomy 4. How did you arrive at your current position?

I firstly did a Sport & Exercise Science Degree in the University of Limerick, then applied to Physiotherapy courses in the UK and got accepted to the University of Brighton after an interview. This process took seven years in total but was well worth it in the end. I started off after College working for Connacht Rugby for two years.

Then I worked in a busy private clinic in Galway for five years before setting up my business Duhallow Physiotherapy with my wife Maria this year in Newmarket.

No regrets! Study hard for exams.

6. What do you love most about your job?

Helping people to get better and improve their quality of life is very satisfying.

When a client is not improving, or they are going through a tough time it can be hard.

8. Advice for students hoping for a career in your field?

You need to be a caring person, a good listener and a good motivator.

Get some experience with a Physio if possible, even if it is just for a day.

Part time work in a hospital is also a good way to get a glimpse of what Physios do. Don’t fret about Leaving Cert points, if you get the points then great, but there are also

other ways to get into Physio – for example, studying a health related course and then applying for Physiotherapy either through a second undergraduate degree or a post graduate degree.

Location: Mount Hillary is located south east of Banteer village. From the N72 you travel through Banteer Village in the direction of Nadd. You will pass the Glen theatre on the right. Take the next left turn at Father Murphy’s Bridge. Continue along straight until you come to the forestry entrance near Gortmore on your right-hand side (which will be sign-posted). This is the Trailhead for Mount Hillary.

Trailhead: The Trailhead is located at the entrance to the forestry near Gortmore, 5km west of Banteer in Co. Cork. (OS Sheet 80, W430 972). There is room for 6-10 cars.

Nearest services (toilets, shops etc.) are available in Banteer.

Loops description: All three loops start at an entrance to forestry near Gortmore on the northern slopes of Mount Hillary. Entering the forestry, the loops ascend gently for 100m to reach a crossroads where they turn right. After 1.5km all three loops turn left onto a steep, short uphill climb to join another forestry road. Here the green loop turns left and follows

forestry roads for 2km to regain the trailhead. The blue and red loops meanwhile turn right and sweep left through the townland of Coolroe Beg for a further 2.5km where they diverge – the blue loop stays on the forestry road, the red swings right and into forestry. After splitting, the blue loop begins to descend towards the trailhead, re-joining the red and green loops en route. The longer, more difficult red loop continues to climb through forestry and along a ‘green’ track to reach the summit of Mount Hillary marked by a concrete trig point and mast. From here the loop begins its descent to the trailhead – picking up the blue and green loop on its way.

Despite having to cancel the very popular Scullys Fest live music and culture weekender due to Covid-19 restrictions, fans were not left disappointed after organisers moved the long-running event online.

More than 30 acts came together virtually – some from as far afield as the USA, Japan, Germany and Holland – to put on a tremendous show; ensuring an unbroken record for this celebration of the traditional music and culture of Duhallow and Sliabh Luachra run since 2004 to mark the regular Monday night sessions that started back in 1974.

Raymond O’Sullivan writes: Music sessions were nothing new in Scullys in the 1960s. Emigration had almost stopped, the ‘Ballad Boom’ was in full swing and traditional musicians were finding a little niche in the revived interest among young people in Irish culture and the live-music scene in bars.

A bunch of musician friends used to meet occasionally in the ‘front room’ in Scully’s Bar. The sessions were great but they were a bit hit and miss because we didn’t have an appointed night to meet. Some nights we would have the whole gang and others we’d be missing a few. As time moved on, we had visiting musicians calling so the ‘accidental’ nature of the session became quite unsatisfactory.

After a mighty session one Saturday night, I think it was Jackie Daly said, “Lads, if we are to get anywhere we will have to appoint a special night, a night we can guarantee that we will all be available for a few tunes.”

Well, after much discussion when the pros and cons of this night and that were debated, we decided on Monday night. It was the quietest night of the week and everyone

would be free. We got the OK from Mrs. Scully and we all got together the following Monday night. The rest is history.

In 2004, Julia Mac decided to have a three-day celebration for the 30th birthday of the session. It was a great success. People came from far and near, young and old, married and single – Scullys on Monday nights was a place where many love stories began. That birthday party was the genesis of Scullys Fest.

We continued to celebrate the birthday every August for several years and then the ‘organising committee’ were augmented by some new blood – enthusiastic young people who brought vitality and a new direction to our annual bash. First of all they added concerts and workshops which meant moving out of the bar and into the CYMS Hall, the Pipe Band room, the J.O.K., and other venues. In 2016 the Festival was extended to five days and the popular art exhibition and Gala Concert in Glash Hall were introduced.

Gradually the Festival expanded into other bars with mini-concerts, singing and music sessions and a Rambling House was added for events that needed more audience participation and attention. Some of the special guests were Alice Taylor, the poet Bernard O’Donoghue and the singer/songwriter John Spillane.

Other side events have included book and CD launches.

No festival is improvised and preparations were well underway for this year’s event when the lockdown came in March. Scullys Fest has gone the way of all other festivals in 2020, but, le cúnamh Dé, it will be back bigger and better than ever next year. g All performances can be viewed on YouTube – search for Scullys Fest 2020

Grassland habitats Grassland habitats account for approximately 73% of Ireland’s land area, of this percentage semi-natural grasslands contribute a small fraction. These habitats have been identified as a vulnerable, at-risk habitat in Ireland. Semi-natural grassland fragmentation and loss initiated the development of European Agri-environment policy to protect and sustain these habitats.

These semi-natural habitats were once widespread throughout Ireland, however, at present they are vulnerable to loss due to the intensification of agriculture in Ireland. Vegetation abundant in grasses and tall herbs is a distinct feature of semi-natural grasslands containing a wide range of plant and animal communities with distinct and varying compositions.

Semi-natural grasslands can be given conservation status through Natura 2000 designations or national designations. The maintenance and retention of grasslands of conservational interest are rewarded through ecosystem payments in Ireland through Agri-environmental schemes such as the Green Low Carbon Agri-environmental Scheme and a number of wide ranging and targeted results based Agri EIP projects such as the Duhallow Farming for Blue Dot Catchments Project.

Through these results-based schemes the farmer or applicant is rewarded for the quality of the habitat in relation to species or plant content, contribution to watercourse enhancement and protection and contribution to carbon storage and Green House Gas Emission reduction and mitigation.

Grasslands are an important habitat for species of plant, insects, reptiles, birds and rodents. Insect species abundance and diversity is

Conservation of semi-natural grassland is inhibited when agricultural management ceases.

When these grasslands are neglected there is a propensity for a transition towards heath, scrub and woodland. Rotational mowing and grazing are the traditional agricultural practices required for promoting and sustaining high and diverse species richness. A cessation of these practices results in changes to species composition and the ecosystem. Traditional low intensity agricultural practices which benefited semi-natural grassland development have reduced with advancement in technologies and agricultural systems.

Semi-natural grassland is threatened by practices such as agricultural intensification, drainage, commercial non-native tree cultivation and land abandonment. Scrub offers a potential threat to semi-natural grassland habitats through encroachment as a result of poor grassland management.

As a result of land abandonment, the encroachment by scrub species such as Gorse, bracken, bramble and hazel severely impacts the flora and fauna composition and diversity of semi-natural grassland habitats.

Due to the fragility of semi-natural grassland habitats, assessment of ecological features present is essential in determining any state of degradation or loss.

Determination of the health of these ecosystems through ecological site assessment and habitat classification and survey is necessary to promote sustainability.

The ecological assessment of these habitats using both biological and vegetation surveys provide key indicators of the health of local ecosystems. The overriding benefit and success of results based Agri-environmental schemes or projects will be the recording through surveying of vast areas of semi-natural habitats including semi-natural grassland.

The resulting payments to farmers to retain these habitats of high conservational value will acknowledge the role the farmer has to play in protecting and enhancing biodiversity in their local community.

A dog or cat’s instincts to eat in order to survive are so strong that they have to be in agony with toothache before they change their eating habits.

Subtler changes, such as not picking up their toys, being quieter than usual or having smelly breath are earlier hints that a dental problem is afoot that needs to be dealt with.

Keep going strong Why strength is important Building up your strength keeps you independent. It helps your posture, is good for bone strength and can help to prevent falls.

Wear loose clothes. Use a sturdy chair for support. Shake out or rub your joints or do some stretching exercises (see Get posture perfect 1). Repeat each activity 2 or 3 times.

Pause for a breath before slowly lowering both arms to their starting position.

HOLY WELLS: Dromtariffe Well Dromtariffe is the last parish in Cork included in the diocese of Kerry, but it has a secret treasure, ‘The Well’, which is highly revered. In Derrygallon School we used to sing: “Hide and seek all the week, sixth of May Well Day where everybody goes to pray.” The real prayerful adults, while doing the rounds of the well recited three rosaries, followed by a sprinkling and a drink of water. There was a muli-branched oak tree beside the well and all the pilgrims ied a ribbon on to it as a souvenir.

There was a tent erected on the grounds where refreshments to serve everyone’s taste were served.

I got an outbreak of ringworm on my head over my right ear. It is a fungular skin disease in circular patches. It was a gaping sore. My mother took me into Sheehy’s chemist shop in Kanturk. He prescribed an ointment to be rubbed on twice a day. Then a large scab appeared which embarrassed me, an 11-year-old, a lot in school. My mother got me a

When I went in to the classroom there was a huge jeering shout. I wished the floor would open and swallow me. Both teachers shouted at the scholars and asked them to have bit of manners. Gradually we got used to each other and the mocking stopped.

The last Saturday in May my mother took a good look at the sore. All the hair had fallen out and the wound was almost healed. She said we must go to the well before the end of the May. Ater dinner, it was the first ime I saw my mother driving the horse and trap.

It was a four-mile journey. I did the first rounds of the well with her during the first rosary. Good for her. When I said

that was enough for me, she agreed.

The cemetery was at the boundary.

I went there and walked around examining the headstones. When my mother had finished her rosaries she waved at me. We went to the well and she washed the wounded spot. We each took a drink from it with a mug that was laying around. We completed the pilgrimage by paying a visit to the parish church.

On the Monday morning when I was ready for school, complete with cap, she drew me near her and removed it. She let a joyful scream out of her and said the hair was growing; it was like the hair on the back of one’s elbow. Wise woman that she was, she said wear your cap for the month of June, the last month in school before the summer holidays. Nobody will take any noice ater that because your hair will be fully grown by then. It was.

Hedgerow recipes: Dandelion Dandelions (Caisearbhan) are so common that they don’t really require a descriptive introduction.

The leaves, roots and flowers are all edible. They have a slightly bitter flavour that can be minimised by harvesting them in the autumn or spring. Cooking cuts the bitter flavour although the leaves make a great addition to raw salads. The leaves contain an abundance of vitamins and minerals, especially vitamins A, C and K. They are also a good source of calcium, potassium, iron and manganese.

Dandelions have been consumed by humans for much of recorded history. They were well known to ancient Egyptians, Greeks and Romans, and are recorded to have been used in traditional Chinese medicine for over a thousand years.

DANDELION PESTO Ingredients 350g of washed and cleaned dandelion leaves n 250ml olive oil n 4 cloves of garlic, peeled n 40g pine nuts n 1½ tsp sea salt n 70g Parmesan n

Method In a food processor or blender put about one-third of the dandelion greens with the olive oil and chop for a minute, then scrape down the sides. Add the remaining dandelion greens in two batches, until they’re all finely chopped up. Add the garlic cloves, pine nuts, salt, and Parmesan, and process it until

everything is a smooth puree.

Taste it and add more salt if necessary. If it is too thick, add more oil or water to thin it out.

The pesto can be refrigerated in a jar for up to four days. You can pour a thin layer of olive oil on top to prevent the top from darkening.

The pesto can also be frozen for up to two months.

Book review: The Runaways The Runaways by Holly Webb: Holly is a children’s author from London. She writes books for all ages. She is 44 and she wrote her first book when she was 28.

During the Blitz, Londoner Molly is relieved to hear that the children in her neighbourhood are being evacuated. However, her relief is short-lived because her mum decides she is not letting her evacuate as she needs Molly to help her with the shop.

Times are tough and there isn’t enough food for people, let alone enough food for pets, and that includes Molly’s dog Bertie. Molly puts a plan into action to escape with Bertie.

She finds a barn and stays there for a while until she hears a noise from outside.

My personal opinion: I love history and I loved learning about World War Two. The Runaways

by Holly Webb was a very easy read to get stuck into. I enjoyed learning about all the characters.

Duhallow Sports Greats Q & A 1. What/who inspired you to become a sportsperson in your field?

After spending years standing on the sideline watching my two brothers Sean and Richard playing rugby I can say that was my true inspiration to play the game.

2. What was the moment that you knew you were on the right track?

From my very first training session at Crawley RFC - I knew rugby was the sport for me after playing a wide variety of sports all through school. I was late to the sport at 21 years old! By the age of 24 I was heading off to my first World Cup. 3. What is your greatest strength?

I think the ability to adapt and function out of my comfort zone.

4. What is your greatest sporting achievement?

Playing for Ireland in three World Cups in Scotland, Holland and Spain; and getting 29 caps for Ireland.

5. What is your greatest personal achievement?

Three beautiful children, Aidan, Ella and Alice and my husband Tony, he's a rugby player too!

6. What was the greatest challenge you faced in your career and how did you overcome it?

Unfortunately the greatest challenge I and many women in sport face, was juggling work and sport while having to financially support a sports career.

7. Who supported you the most in your career?

I had great support from my family during a long career, my mother, father and brothers. In the later years of my career, my husband Tony has been a constant source of support.

8. What advice would you give to young players just starting out?
