Rising to the occasion Kilbrin bakers lead charity drive

A project initiated by volunteers in Kilbrin is set to spearhead a countywide fundraising drive for Cork Penny Dinners.

For the past two months a dedicated group of bakers and drivers has been delivering home baking to cocooners in more than 100 households in

Kilbrin every Sunday. Now they are getting the whole community behind a ‘Major Bake’ in aid of the charity that feeds over 500 people every day – with plans to roll out the project across Duhallow and all of County Cork.

Watering can help or hinder It has been a few weeks since the last gardening article, so I hope you have been as busy as I have outside in this glorious weather.

By now your vegetable gardens should be packed full of strong and healthy vegetable plants. Potatoes are growing fast, notwithstanding a setback by the frost a few weeks ago. Onions are beginning to swell, and brassicas, cabbages, kale, broccoli etc are settling in well.

The hot weather helps to keep slugs at bay, giving your young plants breathing space to establish themselves and start growing strongly. Plants must be hardened off sufficiently before planting out to reduce the shock to them from their change in environment. This shock will stop them growing whilst they acclimatise, which puts them at a greater risk from slugs.

Whilst I would never generally advocate regularly watering plants outside in the garden, newly planted vegetable and ornamental plants will need plenty of water until their roots are able to access ground water held in the soil.

Watering technique is very important. Water must be applied to the soil, not sprayed over the whole plant, and must be in enough quantity to penetrate through the soil to enable the plants to access it through their roots. A good soaking every few

In a very dry season, really soaking your onion crop once or twice will allow the bulbs to swell, and potatoes require water when they set their flowers. In usual conditions, the Irish summer will do this for us.

Polytunnels and greenhouses and container plants will need watering every day. It is better to water in the evening, to reduce evaporation risks, unless you have a real slug problem in your tunnel or greenhouse. In this case, water in the morning so that the soil is dry again before the slugs come out at dusk.

Tomatoes require consistent watering to prevent a calcium deficiency that causes hard black spots on the fruit. Don’t over water them however when they are in fruit, or your tomatoes will be watery and tasteless.

It has been a fantastic spring for fruit of all kinds. The prolonged good weather enabled the bees to fly throughout the blossom period so there has been great pollination of both soft and top fruit.

Luckily, the late frost didn’t affect the apple trees here at IRD Duhallow but the strawberry blossom was hit. Only a minor setback though, and the fruit is now beginning to swell.

Hopefully the weather will remain good and we can enjoy a bountiful harvest this year.

Kilbrin steps up to the plate g

It’s all systems go in Kilbrin at the moment as a project that was initiated locally to assist cocooners during lockdown is set to become a countywide fundraising drive for Cork Penny Dinners.

Since April 19th a dedicated group of bakers and drivers has stepped up to the plate and delivered delicious home baking to over 100 households in Kilbrin every Sunday.

“We continued until June 7th after which the next phase of the reopening of the country took place,” said Margaret O’Callaghan, who co-ordinates the initiative.

“Our visits were the highlight of the day for the cocooners and they are all eager to do something in return for the group of people who have been so kind to them over the past several weeks.”

With this sentiment in mind, the volunteers are organising a ‘Major

From there, the group will launch their major fundraising drive where they hope to get every Parish in Duhallow involved, and thereafter all communities throughout the county.

“We are starting in the Barony of Duhallow and so far the parishes are rolling in behind us. Penny Dinners feed over 500 people every day throughout the county – that's a staggering total of more than 182,500 meals per year and demand is growing,” Margaret said.

The intention is to take in baking, perishable goods and money donations (for which receipts will be given) and deliver to Penny Dinners on the day of collection (June 14th).

“If every town and village get involved and take their turn it would mean our turn would only come around once in every five years. We hope that the various clubs within towns and villages will all work together to ensure this drive achieves the success it deserves,” Margaret added.

Duhallow to cover every week from June 14th to the end October with more continuing to come on board at the time of going to print.

“Once Duhallow has been covered, which should see us into late autumn at the earliest, we will concentrate on North Cork where we already have a commitment from some parishes,” said Margaret.

“This is the ideal time to get the project up and running – at the moment we can't look forward to many of our normal Sunday activities, so people have time on their hands.

“The demand for supplies at Penny Dinners is always big and they have assured us that they have ample space for supplies. People have always been very generous and I’ve no doubt that they will answer the call once again. No donation is too big or too small and will be greatly appreciated.”

HOW TIMES HAVE CHANGED

By RAYMOND O’SULLIVAN This old photo of the Corpus Christi procession at the Convent turned up in an old file the other day and it got me thinking about ‘old times’.

Newmarket Court, St. Joseph’s Convent or the James O'Keeffe Institute has seen many changes in its chequered history, even quite a few of them in my own lifetime. The headquarters of IRD Duhallow, it is a busy, bustling place now, full of life, industry and activities, the opposite of when I knew it as a boy in the 1950s – answering early mass as an altar boy in the Convent chapel, manoeuvring a handcart full of bread down the steps at the back to Sister Julia in the basement kitchen or taking piano lessons in the front hall after school. Not a sound to be heard except the occasional titter of postulants checking out the ‘talent’ at the piano through a crack in the big double doors, quickly stifled when the rustle of a habit and the rattle of rosary beads signaled the approach of a nun. We hurled in the lawn, robbed apples from the orchard, fished in the Ramp and played cowboys

and Indians in a wood that stood between the Convent grounds and the Fair Field.

The lawn and wood are under housing estates now, the orchard/ walled garden is an industrial estate and there are no fish in the Ramp any more. The happy days of youth, all changed now!

Community Food Initiative

Remote cookery programme PART TWO COUSCOUS SALAD (10 minute preparation)

The Community Food Initiative aims to positively influence the eating habits of families with children by focusing on the skills and knowledge around food and healthy eating, healthier shopping and enhanced cooking skills.

IRD Duhallow is delivering a six-week Remote Cookery Programme to families in the Duhallow region.

For anyone that wants to follow along, we will share these recipes over the coming weeks.

APPLE CRUMBLE Ingredients: Ingredients: 100g couscous 100ml hot vegetable stock n 2 spring onions n 1 pepper n ½ cucumber n 50g feta cheese n 2 tablespoons pesto n 2 tablespoons toasted pine nuts n n

4 cooking apples 50g sugar n 30ml water n n

Crumble topping: 180g Flour 50g Castor Sugar n 50g Margarine n 2 heaped teaspoons of porridge oats n n

Method:

1. Tip the couscous into a large bowl 2. Put stock into a jug and pour 100ml hot water in to melt the stock 3. Pour this into the bowl of couscous 4. Cover and leave for 10 mins, until fluffy and all stock is absorbed 5. To toast the pine nuts place in a frying pan, medium-low heat, and stir constantly until they are golden 6. Slice the onions and pepper and dice the cucumber 7. Add the veg to the couscous, stir in the pesto, crumble the feta and then sprinkle over pine nuts to serve.

1. Preheat oven to 180 degrees/Gas Mark 4 2. Peel and slice apples 3. Put the apples, sugar and water in a saucepan and cook gently until soft 4. Pour this into the pie/oven proof dish 5. Sieve flour into a bowl; rub in margarine until it resembles fine breadcrumbs. Add sugar and oats and mix thoroughly 6. Sprinkle crumble mix over the fruit 7. Bake in the preheated oven for 30 mins or until golden brown.

The children can help with pouring stock into the couscous, chopping the veg, mixing ingredients together.

Serving suggestions: Serve hot or cold with ice-cream, custard or cream.

Alternatives to apple: Rhubarb, berries, fresh or tinned pears or peaches. Ground or chopped almonds could be added to the crumble mix for added flavour.

To get the children involved, they can easily help with peeling and chopping the apples and making the crumble mixture.

Make sure to thoroughly wash your hands before, throughout and after.

Boherbue CS makes virtual school fun Tyson joins in scrapbooking on Try It Tuesday

Boherbue Comprehensive School staff, like many other schools under lockdown, have been supporting students through the magic of virtual classrooms.

The focus has not just been on academics but also on physical, social and emotional well being.

22nd saw fun activities organised: Monday Motivation had students taking part in a ‘Mr Motivator Workout’ and setting some SMART goals, while ‘Try it Tuesday’ encouraged students to try something new, learning phrases in a new language, juggling, baking etc. ‘Workout Wednesday’ involved trying new fitness workouts, while ‘Together Thursday’ brought students together for a virtual catch up through Zoom. Facilitated by Mrs O'Donoghue and Mrs Fitzgerald, each year group enjoyed having a meeting in which they chatted and played games.

Friday was the school’s first (and hopefully last!) Virtual Sports Day. ‘The Lockdown Games’ involved 10 activities, a combination of fitness (push ups, sit ups, burpees etc) and creativity (bike tricks, TikTok dances, cartwheels).

All activities fed in to the ‘School Spirit Competition’ – the school community is divided into five teams and compete against each other to win points throughout the year. The winning team this year was the BLUE team.

Derrygall

Br. Malachy Buckley, Farrendoyle, Kanturk was a De La Salle teaching brother until his retirement Why Derrygallon of yore was unique: Derrygallon had the facilities of a miniature town before supermarkets came on the scene. It had quite a few industries, the school being the main utility, all the local children had free education there. The little well opposite the gate provided spring water for the teachers’ teas and drinks for thirsty scholars during break time which were drunk out of cupped fists.

The Forge: Just at the cross was Paddy Sheahan’s forge. He walked over two Irish miles to work every day and entertained the scholars with his ding-aling-a-dings hammering on his anvil making horse shoes or repairing farm machinery. He had no objection to a few scholars looking in at him working during break-time and when necessary blowing the bellows. He catered for everybody in the neighbourhood, shoeing all kinds of horses, sporting or ploughing and donkeys. Paddy was a bachelor gentleman, living alone.

The Harness Shop: Directly across the road from the forge was Paddy Walsh’s harness shop. Paddy was already working when we were on our way to school and up to

normal closing time in the evening.

He repaired all the leather requirements that working or sporting animals use. He had no objection to scholars looking on while he did his intricate work sewing winkers, collars and all the leather equipment used by farming, sporting or travelling animals.

The Barber Shop: In a room within the same building was O’Keeffe’s cobbler and barber shop. He repaired boots and shoes and there were many, particularly during the winter months. All school-going boys went barefoot from May to September inclusive. He also cut men’s hair. The boys’ hair was cut either by the fathers or mothers at home. In our home, Mom cut Dad’s hair and vice versa.

Mickie Walsh’s Shop: This shop catered for both genders but it was mainly a man’s shop selling tobacco and cigarettes as well as school requirements such as penny pencils and halfpenny nibs, erasing rubbers, blotting paper, rulers, copies and penny jotters and sweets. It was a gaming centre, after farming works were finished most of the workmen assembled at the cross for a smoke and chat. Pitch and toss was a favourite game played. Outside the shop a six-inch nail was driven into the ground with a string attached, a line was scratched about ten feet away. Pitchers tossed pennies at the nail, distance was measured by the string. Whoever was nearest got first toss. Heads were winners, harps were tossed by the second

and perhaps the third. Card play was the big attraction especially 45. On festive occasions, such as the 8th of December, the three Christmas festivals, Brigid’s Day, Patrick’s Day and Easter, the shop put up special prizes such as turkeys, geese or bottles of whiskey. Even the oldies such as my father attended these. Eddie Morrissey cobbled shoes in a room off that shop.

Harmons: Harmons ‘minimarket’ was across the road and stream from Walsh’s. They sold every utility for the home and school. They had their own evening clientele who were more senior than Walsh’s and they also played cards but not as lavishly as the other shop. Both shops did flying business during the main milking seasons.

Theirs were the only entertainments available except on Sunday nights when the young ones on foot or bicycle made their way to the dance halls.

The Egg Man: The egg and rabbit man arrived at Derrygallon Cross every Friday after school and parked at Harmons. Most households had some hens, the larger ones had huge flocks sending up to 30 dozen eggs per week. The money sourced from eggs almost covered kitchen expenses. The eggs were brought in sweet cans, small and large buckets, baskets and a few in egg boxes. It was the young teenagers, male and female, delivered the eggs and they had much fun chasing each other around the trees at the creamery – always clean fun. There was a severe shortage of meat in England as most of the English men were away in the war. Irish rabbits were in great demand and were valued at

lon memories the equivalent of €3 nowadays which was handsome money in those days. Rabbits were caught by professionals who used ferrets or teenagers who used traps, snares or terriers. Irish rabbit meat was served for dinner in Buckingham Palace according to reports in the tabloid papers.

The Creamery: The smallest townland in Ireland must be ‘Gublachan’ the ‘mouth of the duck’. One building occupied the area – the creamery, known as ‘Derrygallon Creamery’. Fifty-eight suppliers attended there daily in carts drawn by horses, ponies, mules and donkeys. Small suppliers gave their tank of milk to a neighbour. While waiting their turn, the neighbours gathered in groups to discuss the news of the day. In my time it was WWII. The few women that came added a sense of excitement to the gathering.

There was never a shortage of help to throw in the tanks of milk. A remarkable sense of neighbourliness existed there. Cheque day was important.

The farmers spent time talking about the milk test. The better the test, the bigger the cheque. The creamery was run by ‘Shannon Scheme’, the only bit of electricity around our part of the country.

Thatcher and Tailor: The two most important men around at that time were Bat the Thatcher and Ger the Tailor. Ger lodged in the house for a week, or ten days to make clothes for the family. He sat on or at the kitchen table, worked with nimble fingers and hummed lovely romantic tunes. When allowed by Mother, we loved to turn the sewing machine wheel. There was a lot of peace in the house while Ger was in residence.

The Swallows: A surprise awaited us as we returned to school after the 6th of May weekend. The 6th of May was well-day in Dromtarriffe and we had no school.

A pair of swallows had begun their nests on a rafter right over the centre of the classroom.

Teachers wisely decided that the pupils would have a free nature study class. The window was never closed and a spare blackboard was suitably placed to collect the debris, which regularly plonked down. The bird family was reared and had flown away before the summer holiday.

Gelding: Most farmers kept a breeding mare. On average half of the foals born were males. On an announced day the awesome Mr. Pomeroy would arrive at Derrygallon Cross to ‘deflower’ the yearling males.

Those in attendance were experts in immobilising a horse and keeping him motionless; lying on his back while the vet did the necessary removals. Clamps were then attached to the wound. In the evening, the horse would be seen gently nibbling at the spring grass, the ordeal being over. The precious little ‘meatballs’ were discreetly disposed of. In the Far East they would be served up as exotic dishes to ecstatic clients.

The Opposite: When a farmer had a young bull that he thought was suitable to propagate the bovine species, he presented him for inspection at Derrygallon Cross.

The inspectors had the necessary qualifications documented. Marks were allotted. If the young bull obtained the ‘pass mark’ he was certified and set up for life. The failures went down the same road as the aforementioned horses. Life is difficult for some. Everything happened at Derrygallon Cross.

Cottages: Cottages in Ireland had half an acre of land attached. There were three cottages near the cross.

Two attached ones were above the school wall. Jack Sheehan, widower, lived in one of them with his faithful dog, Jim. They were known affectionately as Jack and Jim. Bill Fleming, Katie and a young growing family lived in the other. Mother-inlaw Julie Sweeney lived with them. The third cottage standing on its own was situated a short distance up the Farrendoyle bohereen. Mrs. Cremin Senior, with son Mick and daughter Joanie, lived there. When Mrs Cremin died, Mother told us to go and visit her remains on our way to school. We did. It was peaceful, white, cold and mysterious but not frightening. Pet Corner

Prepare your pets for next stage As lockdown begins to ease slightly, most of us feel as though we can just about see the light at the end of the tunnel.

Many of us will be returning to our usual routines over the coming months, meaning that our pets, who have been constant tail-wagging, purr-producing companions, will be spending more time alone without us during the day again.

Just remember that your dog doesn’t know anything about the five-stage plan for reopening, and just like when we entered lockdown, the exit from lockdown, and spending less time with their human friends, is going to come as a bit of a shock to the system.

We need to start slowly preparing them for more alone time now, so that they are able to cope with going back to their usual routine when it happens.

Dogs that may once have been very comfortable being alone for periods of time may well begin to show signs of separation anxiety including barking, panicking before you leave, peeing indoors and pacing around.

Start getting your pet used of being left alone for short periods again, either by giving them some down time with a treat or a toy in a different room, or doing your normal ‘about to leave the house’ routine by putting on your coat and getting your keys before sneaking into the garden for a few minutes!

This is especially important for new puppies that will never have known a ‘normal’ routine.

Try not to make a big deal of coming and going – no kisses goodbye – as this may reward and reinforce nervous behaviour they may be showing.

A nice treat, such as a stuffed ‘Kong’ toy just before you leave is usually a helpful distraction. Just don’t make it too tasty or they’ll look forward to your exit from the house!

Hedgerow recipes: Ground elder Ground elder (Lus an Easpaig), also known as goutweed or bishop weed, is a common shrub that has three-lobed leaves and umbrellalike clusters of white flowers that appear between June and August.

It is best to collect the leaves when young, before the plant has come into flower. After this time the leaves become a laxative.

They can be used raw or cooked and have an unusual tangy, rather aromatic, flavour.

Most simply, the leaves can be cooked like spinach but young leaves can also be used in salads, soups and stocks.

The very young shoots make a very acceptable substitute for spinach. Ground elder has many good things to offer: vitamin C, iron, calcium, magnesium and carotene (especially when eaten young).

GROUND ELDER SOUP Ingredients 2 bunches of ground elder (24-30 young stems) n 25g butter n 25g flour n 1 small onion n 1 rasher cut into strips n 500ml chicken stock n 250ml single cream n Salt and black pepper to taste n

Method Remove the leaves from the ground elder stems and rinse them. Add the leaves immediately to a pan (there is no need to drain them), cover the pan and let them sweat for 1 minute. In another pan fry the onion and rasher strips using the butter until the onions are softened and then stir in the

flour. Add the stock slowly and stir until it becomes a smooth soup base. Now add the leaves and simmer for 5 minutes. Blend the mixture with a hand blender then add the cream. Finally season with the salt and black pepper to taste and serve immediately.

Danielle Quinlivan The best and safest way is with custom made trays and whitening gel provided by your dentist. This method involves wearing the trays nightly for about two weeks. It really gives great results and causes no long term damage to the teeth.

The over the counter gels, strips etc that you can get online and in the shops generally aren’t strong enough to make a significant difference to the colour of your teeth.

Most whitening toothpastes have abrasive particles that can strip away and damage the enamel

permanently, so in the pursuit of stain removal these can cause damage by thinning the protective enamel layer and cause your teeth to get very sensitive. Ultimitely they result in your teeth looking more yellow as the softer layer of dentine under the enamel shows through.

To help avoid stain build up at home, watch out for food and

drinks that are heavily pigmented like tea, coffee and red wine.

Avoid trying DIY remedies like coconut oil pulling or the use of charcoal scrubs. The oils lubricate teeth and can help dislodge particles but have no actual effect on the colour of the teeth. The charcoal can cause permanent damage thanks its abrasive nature.

Interests Valley View Equestrian Centre, located at Gooseberry Hill, Meelin, Newmarket, Co. Cork, is celebrating 25 years in business.

Established by Janet Burke in May 1995, the centre is AIRE approved (Association of Irish Riding Establishments). Janet has qualifications from both HSI (Horse Sport Ireland) and the BHS (British Horse Society).

Horse riding is a great way to exercise and keep fit while out in the fresh air. Keeping physical distance from others is easily done. Covid-19 has led to temporary closures of equestrian centres, but now the aim is to reopen on a gradual basis during Phases 2 and 3.

Valley View Equestrian offers riding lessons and trekking on a selection of ponies and caters for the total beginner up to the child who wants to hunt or compete. The minimum age for participation is 7 years. At Valley View Equestrian Centre camps will unfortunately not take place for a while, this will however allow more time to coach competitive riders for showing, show

Roderick Gordon studied biology at the University College, London and Brian Williams studied at the Slade School of Fine Art. After graduating they started a book together called ‘The Highfield Mole’ which they self-published in 2005. It quickly sold out, attracting the attention of the Chicken House publishing company. After editing the book they republished it in 2007, renaming it Tunnels.

Tunnels is the first of a six book series and is gripping and full of suspense. The story starts with Will, a 14 year old boy looking for his father (a museum curator)

by Roderick Gordon and Brian Williams who has gone missing. While searching for his father, Will and his friend Chester find an underground tunnel and meet the bad guys – The Styx. The Styx are a ruthless and bloodthirsty race who are planning to take over the world.

The story is a bit gruesome in parts and in others it is sad.

Duhallow Sports Greats Q & A 1. What/who inspired you to become a sportsperson in your field?

I was big into sport from a young age and, luckily for me, Ballydesmond has a very active handball club, just down the road from my house, in fact! I started playing shortly after my older brother, John, took up the sport. Tony Healy, also from Ballydesmond, became someone I looked up to. He was very successful on the national and international scene, demonstrating what could be achieved through hard work and determination.

2. What was the moment that you knew you were on the right track?

I got addicted to the sport pretty quickly, but I suppose, aged 14, winning the trials for a place on the Irish team travelling to the US Junior Nationals in Tucson, Arizona, was a big step – showing myself what I was capable of and giving me a taste for travelling and competing internationally. Our coach for that trip was Kilkenny handball legend Ducksy Walsh, and it was a real honour to learn from him.

3. What’s your greatest strength?

Probably determination. I was motivated from a young age to be the best I can be. I am very competitive by nature and this has served me well. In sport, as in life, you are going to encounter setbacks, but with determination you can come back even stronger and better than before.

4. What is your greatest sporting achievement?

My All-Ireland Senior titles and my record on the US pro tour.

5. What is your greatest personal achievement?

Possibly passing my driving test…

6. What was the greatest challenge you faced in your career and how did you overcome it?

My greatest challenge has been constantly having to adapt my game. You might reach the top, but

Catriona Casey, Ballydesmond, is the current All-Ireland Senior Handball Singles and Doubles Champion and has amassed 20 All-Ireland Senior titles, between singles and doubles, across the 40x20 and 60x30 codes.

She was named the 2019 Female Player of the Year at the All-Stars ceremony held in Croke Park.

Catriona has represented Ireland at the last four World Championships (held in Ireland, the US, and Canada),

then there’s somebody else looking to take your place! Handball is as much a mental challenge, as a physical one. Moments of self-doubt are inevitable. You might wonder if you’re training too much, if you’re not training enough, if you’re doing the right type of training, etc. This is an ongoing process. I try to concentrate on specific aspects of my game in skills sessions and then apply those to training games against players who will push me to perform. I also seek advice from those with even more experience and reflect on every performance I give.

7. Who supported you the most in your career?

My parents, Dan and Peg, have been hugely supportive, travelling the length and breadth of the country for years to tournaments and even training games. I’m also very grateful to all the volunteers within the club and county who

In the seven seasons of the tour to date, she has accumulated 20 tournament wins and has never relinquished her #1 ranking. Currently working as a primary school teacher in Dublin, she runs coaching clinics and summer camps for younger players. helped me get started. I have played with my doubles partner, Aishling O’Keeffe, since the very beginning, and it has been great winning Senior titles with a childhood friend – we support and encourage each other well as a doubles team.

8. What advice would you give to young players just starting out?

It’s a challenging sport but stick with it. This just makes it all the more rewarding when your hard work pays off! Spend time on the court by yourself, practising with both hands equally. Ask for advice from older/more experienced players, and watch games in person or online to study what others do well.

Don’t be discouraged by defeat – we all make mistakes, and this is the best way to learn going forward.

9. Activities outside sports?

I work as a primary school teacher, currently teaching Senior Infants in Phibsborough, Dublin. I enjoy keeping fit in other ways – the gym, yoga, and hiking! I also enjoy bingeing series on Netflix, and working on my cooking skills!

10. Goals going forward?

There are aspects of my game that I’d like to continue improving. I’ve learned to take one game at a time, one tournament at a time. If a 2020 Championship goes ahead, I would like to defend my All-Ireland titles.

With the opening of the new National Handball Centre in Croke Park on the horizon, it would be nice to get some wins under my belt there too!
