A Very Merry Commodity Christmas We know what you are thinking... what is a commodity? A commodity is an agricultural product and like you and your family, commodities rely on each other!

Iowa corn farmers work hand in hand with livestock producers around the state.

Nearly 30% of Iowa corn is used to feed livestock. To break it down more, Iowa livestock consumes 720 million bushels of corn. Think of a bushel of corn as the size of a laundry basket—that’s a lot of laundry baskets being consumed by cattle, pigs, chickens, and turkeys! Iowa is not just #1 in corn production but also #1 in pork, egg, and overall red meat production providing high quality protein products for your families plate!

But it doesn’t stop there! Corn is found in almost 4,000 grocery store products making it easy to support Iowa farmers this holiday season. Enjoy these farmer favorite recipes provided to you by farm families from around the great state of Iowa!

Ingredients

» 2 cups cooked turkey, chopped or shredded

Prep. Time 30 Minutes

» 1 tsp. ground cumin » 1/2 tsp. dried oregano leaves, crushed » 2 green onions, chopped » 6 (8 inch) flour tortillas » 2 tbs. butter, melted

Iowa Turkey Federation Baked Turkey Chimichanga Directions

1. Preheat oven to 400°F and begin mixing turkey, salsa, cumin, oregano, cheese and onions together. Place about 1/3 cup of the turkey mixture in the center of each tortilla.

2. Fold opposite sides over filling. Roll up from bottom and place seam-side down on a baking sheet and brush with melted butter. Bake at 400°F for 25 minutes or until golden brown and crispy.

3. Garnish with desired toppings like diced tomato, sour cream, guacamole, salsa, and shredded cheddar cheese!

Iowa Pork Producers Association Brown Sugar Mustard glazed ham Directions

1. Heat oven to 300°F and line a baking pan with aluminum foil.

2. Use a knife to score a diamond patterns on the entire ham and pour 1/3 cup water into pan. Cover with foil and bake for 30 minutes.

3. Add the rest of the ingredients to a saucepan and cook on low heat.

When all ingredients are melted, set aside until luke warm.

4. Increase your oven to 425°F after the first 30 minutes and remove foil from the top of the ham. Pour 2/3 of glaze mixture over the ham and bake for 30 additional minutes.

5. Remove from oven and pour remaining glaze over the ham mixing with the ham juices. Let rest for 10 minutes and enjoy!

» 1 can whole berry cranberry sauce

» 2 tbsp. chopped fresh thyme

» 1/4 tsp. salt

» 1 tsp. pepper

» 1 tbsp. vinegar

» 1/2 cup balsamic vinegar

» 2 tbsp. honey

Directions

1. Heat oven to 425째F. Combine thyme and pepper and reserve 1 tsp. seasoning mixture for sauce. Press remaining seasoning mixture evenly onto all surfaces of the beef roast.

2. Place roast on rack in shallow roasting pan. Insert oven proof meat thermometer so the tip is centered in thickest part of beef. Place roast in 425째F oven 45 to 55 minutes for medium rare; 55 to 65 minutes for medium doneness. Remove roast when meat thermometer registers 135째F for medium rare; 145째F for medium. Transfer roast to carving board and tent loosely with aluminum foil and let stand 15 to 20 minutes.

3. Meanwhile prepare sauce. Combine vinegar and shallots in small saucepan; bring to a boil. Reduce heat and let simmer for 3 minutes. Stir in cranberry sauce and bring to a boil.

Reduce heat; simmer 6 more minutes to blend flavors. Remove from heat; stir in reserved seasoning and salt. Carve roast into slices and serve with the yummy sauce!

Directions

1. This dip is as easy as it gets! Just mix all ingredients in a large bowl and serve with corn chips!

» 2 cans whole kernel corn, drained » 2 cups grated cheddar cheese » 1 tbsp. lime juice » 1 cup mayonnaise » 1 cup green pepper, chopped » 1/2 cup red onion, diced finely » Corn chips for serving

Midwest Dairy Association Hot Chocolate Charcuterie Board Prep. Time 15 Minutes

Servings 2 cups

Ingredients

» 1/2 cup granulated sugar » 2 tsp. cocoa powder » 4 cups whole milk or fat level of choice » 2 cups semi-sweet chocolate chips » 3 tsp. vanilla extract » 1 tsp. kosher salt

Directions

1. Combine sugar and cocoa powder in a medium, heavy-bottom pot and whisk until evenly combined. Whisk in milk and bring to a simmer on the stove top over low heat.

2. Stir in chocolate chips, vanilla extract and salt.

Stir constantly until chocolate is completed melted and mixture is smooth.

3. Pour hot chocolate into mugs and garnish with whipped cream, marshmallows, chocolate chips or chocolate shavings as desired.

Traditional Deviled Eggs Ingredients

» 6 hard-boiled eggs (peeled) » 1/3 cup Miracle Whip » 2 tbsp. sweet pickle relish, drained » 1 tsp. honey mustard » 1/8 tsp. salt

Ring in the new year with Egg Producer Bruce and family from Sioux County, Ia.

Directions

1. Place eggs in a saucepan large enough to hold them in a single layer and add cold water to cover the eggs by 1 inch. Heat over high heat just to boiling then remove from the burner.

Cover pan and let eggs stand in hot water for about 12 min. and then drain. Shock the eggs in a bowl of ice water to cool them immediately.

2. Remove egg shells and cut eggs lengthwise in half and remove yolks to a small bowl. Mash yolks with fork and then add Miracle Whip, sweet relish, honey mustard, salt; mix well.

3. Spoon 1 heaping tbsp. yolk mixture into each egg white half and top with anything you desire.

Refrigerate covered before serving to guests!
