At Auckland “chef-run bar” Boxer (from celebrated local chef Ed Verner), there are only 11 seats, all centered around a retro vinyl player. Here, guests listen to tunes – not unlike a traditional Japanese listening bar – and partake in the fruits of serious mixology. The seasonal cocktails are as intriguing as they are intricate: saffron, tomato and coriander cocktail, anyone? Boxer’s rotary evaporator (usually found in laboratories to extract solvents from lab samples) is used to distill their own spirits and mixers and they collaborate with New Zealand spirits producers, like an exclusive plum sake made by the country’s only sake brewery.

Make like an aristocrat and take up residence at Versailles, if only for a night. The very luxurious, newly-opened Airelles Château de Versailles, Le Grand Contrôle is a 14-room hotel within the palace gates, taking up three historic buildings overlooking the Orangery. The opulent rooms and suites are a lavishly decorated, historically accurate ode to the grandeur of Versailles and you won’t see a hint of modern technology (no TV, and the telephone is hidden). Cake won’t be the only thing you’re eating at Alain Ducasse’s new Feast restaurant onsite but best of all, you’ll be free to roam the gardens after the day-trippers head back to Paris.

The world’s longest pedestrian suspension bridge - known as 516 Arouca - is open in northern Portugal, stretching 516 metres long inside the UNESCO-recognised Arouca Geopark. At a cool 175 metres above the River Paiva, it’s held up by steel cables and two enormous concrete towers on each side. The bridge took about two years to build and eclipses the Charles Kuonen Bridge in the Swiss Alps to take out the top spot.

A fairytale world awaits, as the new Hans Christian Andersen Museum opens in the author’s hometown of Odense, Denmark. It’s a whimsical experience, with the design inspired by Andersen’s The Tinderbox, which features a tree that reveals an underground world. Architecture, light, sound and a stream of images aim to give the visitor a feeling of stepping into Andersen’s much-loved fairy tales. There is a children’s house and an underground museum set among enchanting gardens. These tales still make magic today – did you know Frozen was inspired by his 1844 work The Snow Queen? VOLCANOES IN VICTORIA With more than 400 volcanoes, Victoria is the little-known home to the third-largest volcanic plain in the world

Located in Penshurst at the foot of the dormant Mount Rouse volcano, the Volcanoes Discovery Centre details how the area’s volcanoes formed and shaped the surrounding landscape. The 120-metre-high Mount Rouse is within walking distance and at its peak, panoramic views can be enjoyed in all directions. At sunset, wallabies and kangaroos can be seen bounding across the far side of the crater.

Perhaps the state’s most famed volcanic crater, Tower Hill is located just west of Warrnambool on the Great Ocean Road. The large, nested maar volcano erupted about 25,000 years ago. Today it is a wetland reserve and home to emus, koalas, kangaroos, echidnas and wedge-tailed eagles. Personalised bush and nature walking tours conducted by experienced guides provide an opportunity to discover native wildlife and learn about Aboriginal culture.

From Mount Napier, the most recently active volcano in Victoria, views can be enjoyed from the Grampians to the sea. There is a walking track to the summit that winds through manna gum and Blackwood forest and past impressive volcanic features including a lava canal. Mount Napier State Park also includes the Byaduk Caves, one of the most extensive and accessible sets of lava caves in Australia. They are part of a lava flow stretching 24 kilometres from Mount Napier to Mount Eccles and contain stalactites and stalagmites, columns and ropy lava.

The centre of the state’s volcanic plain, Daylesford and the Macedon Ranges, is home to some stunning volcanic formations. Most famously, Hanging Rock, a 10-minute drive from Woodend, is the best example of a mamelon (the last stump of an eruption) in the world. Hanging Rock is home to many local animals including 40 species of birds, koalas, kangaroos, sugar gliders, echidna and wallabies as well as nearly 100 indigenous plants. At nearby Hanging Rock Winery, the fruits of what was once volcanic soil can be tasted.

Now an ideal place for a picnic, Mount Franklin was once the cause of lava that filled valleys and streams that held much gold, as discovered by the miners during the gold rush era. Visitors can walk the two kilometres around the crater and enjoy stunning views across the region. The rocks remain a remnant of the volcanic blasts, and although large in size, are actually very light – making the perfect prop for an impressive selfie. Open by appointment, Mt Franklin Estate boasts a vineyard planted on rich dark fertile soil peppered with mineral-rich volcanic rock.

tep through the towering Bab Bou Jeloud (blue gate) into Fes el-Bali and you’ll be greeted with a myriad of sounds, sights and smells straight out of ancient Morocco. A UNESCO World Heritage Site, this medina is easily the best-preserved old city in Morocco. Snaking through Fes, the city hailed as the country’s cultural and spiritual heart, it’s home to markets and bazaars, mosques, the 17th-century royal palace, and even the world’s oldest university. Winding paths – no cars allowed, instead you’ll see donkeys – seem to go on forever in the 540-acre warren. With 9,500 alleys, you never know what will be around the next corner. Walk in the narrow maze-like streets passing artisans at work, vendors selling leather and oils, and locals gathering to eat, shop and pray. Stop for photos in front of the famed golden gates of the Royal Palace and when hunger calls, dip into a restaurant for a mint tea and some brochettes (skewers) cooked to perfection. Morocco is famous for its leather trade and the iconic Chouara Tannery is a must-see in Fes. Arm yourself with mint leaves to mask the pungent smell (you’ve been warned!) and watch as animal skins are treated, scraped and dipped in vats of vibrant dye – they’ve used these techniques for over 1000 years. The best views are from above, on the terraces of local leather shops where your guide will talk you through the different stages of the process. There’s also a chance to see and buy the final product.

Did you know? Yellow-hued leather gets special treatment away from the pits as (expensive) saffron is used in the dye: skins are individually handdyed with the liquid gold and carefully laid out to dry in the sun.

n the southern shores of Lake Wanaka, the resort town of the same name offers outdoor adventure and indoor luxury aplenty. The laidback lakeside town has four distinct seasons – hot and dry in summer, cool in autumn, lush in spring and crisp in winter – and draws visitors all year round. Summer is perfect for jet boating, kayaking, climbing and rafting, while hiking, fishing and canyoning are popular in any season. Autumn is a particularly beautiful time in Wanaka, when the hills take on a fiery hue, blending golds, oranges and reds – an event celebrated at the biennial Southern Lakes Festival of Colour. On alternate years, the spectacle takes to the skies with the international Warbirds over Wanaka Airshow (April 15-17, 2022). In winter, the slopes of Treble Cone and Cardrona entice skiers and snowboarders from around the world. Spring is the time to get out and explore the numerous tracks and trails. Wanaka's not just for outdoor enthusiasts. Stroll the streets and be inspired by cool galleries, stylish shops and a great selection of cafés and restaurants. It's also a prime destination for luxury getaways. Its many prestige lodges and boutique B&Bs combine privacy and pampering, and perfectly complement options such as helicopter tours, vintage plane rides and back-country 4WD touring.

HERITAGE Until the early 19th century, Wanaka was a summertime settlement for local Māori. In 1853, Nathanael Chalmers became the first known European to see the lake. NATURE AND WILDLIFE

ADVENTURE

Wanaka’s natural environment is a haven for rare native birds and plant life – nowhere more so than on Mou Waho Island, a nature reserve in the middle of Wanaka. Once a food source for Māori and early Europeans, the buff weka (a large brown flightless bird) now thrives here, along with native falcon, wood pigeon, bellbird, gecko and rainbow trout. Siberia Experience is a wilderness experience – involving a scenic flight, bush walk and jet boat safari – that takes visitors from a bird's eye view of Mount Aspiring to birdsong in the bush and high-speed boating thrills on the Makarora River.

Wanaka has a reputation as one of the world's best adventure towns, with easy access to outdoor activities and Mount Aspiring National Park. You can freefall from 4,500 metres, abseil waterfalls, take on river rapids, scale a peak, spin in a jet boat, land on a glacier, go off-road and explore clear pools and native forest. The Matukituki, Makarora and mighty Clutha and Hawea rivers offer outstanding kayaking and paddle boarding. New Zealand’s rock-climbing capital also has hundreds of rock routes, ranging from grade nine to 30, on the edge of Mount Aspiring National Park. Other options are a family-friendly via ferrata (manmade alpine route) and Wildwire, an assisted climb alongside Twin Falls. Award-winning skydiving experiences give another perspective on the Wanaka landscape, with up to 60 seconds of freefall over an alpine wilderness that includes New Zealand’s highest mountains, isolated glaciers and lakes. The region also offers impressive fishing opportunities for salmon, brown and rainbow trout in the clear waters of three major lakes and streams and rivers. Wanaka's three world-class ski areas are all within 40 minutes' drive of Wanaka's town centre. Treble Cone, the South Island’s largest ski and snowboard area, is famous for its amazing views and vast, uncrowded slopes. Cardrona Alpine Resort is a relaxed ski and snowboard resort with specialist slopes for beginners, advanced chutes and an extensive freestyler park. Snow Farm, with 55 kilometres of trails, is dedicated to crosscountry skiing. For a memorable alpine experience, you can stay on-snow at Cardrona or in a back-country hut at Snow Farm and enjoy the sunrise over the Southern Alps.

ROAD TRIP | PERTH TO MOUNT AUGUSTUS

ROAD TO THE ROCK Perth to Mount Augustus is a 9-day road adventure like no other

Found roughly 1,000 kilometres north of Perth in the Gascoyne Murchison region of Western Australia, Mount Augustus is the world’s biggest rock – but amazingly, many Australians have never heard of it. It is located within Mount Augustus National Park, a lush outback paradise with swimming holes, ancient rock art, a small but buzzing tourist park and the cutest outback bar you’ve ever seen. This itinerary is nine days but take it at your own pace – there’s plenty to see and do.

Day 1 — Perth to Mount Magnet Set your GPS and prepare to ride into the sunset: today is the beginning of your Road to the Rock adventure! From Perth, slip straight through the lush expanse of the Swan Valley, past honesty boxes, quaint towns and endless fields of canola. Refuel at Dalwallinu and admire the adorable heritage exterior of the general store. Hold onto your hunger until Paynes Find, where you’ll find a classic outback roadhouse dripping with character. This former mining settlement – so named after the first person to strike gold here, Thomas Payne – is today a tiny town centered around Paynes Find Roadhouse and it’s stuffed with posters, knick-knacks and quirky memorabilia. Order a massive President burger and sit outside by the giant gum trees to admire the glittering ruby colour of the soil (and an emu or two if you’re lucky). Before you leave, check out the old petrol pump by the bowsers – it’s a genuine relic from the days when hand pumping fuel by the litre was the ‘done thing’. Stay further up the road tonight at Mount Magnet, a classic outback town with a laidback lure. Beyond the art deco facades of the main drag, you’ll find fabulous old pubs like the Commercial Club Hotel. Strewn with rope lights and edged by well-tended plants, it’s a peaceful spot to enjoy a thick steak or giant chicken parma. Stroll back to your accommodation at Mount Magnet Caravan Park or Miners Rest Units – be sure to look up and admire the stars.

Day 2 — Mount Magnet to Cue Take your time over breakfast before hitting the road for Cue – today is an easy driving day, with plenty of stops along the way. Your first is The Granites – a striking set of rocky outcrops reaching 15 metres high, and a site of great cultural significance to the Badimia people. Especially beautiful at sunrise, when you’re most likely to spot a shy kangaroo among the boulders, The Granites are home to Aboriginal rock art – both carvings and paintings – dating back some nine thousand years. There are also some lovely rock formations to admire – keep an eye out for the ‘peephole’ through a section of rock, which looks out to the landscape – it’s almost perfectly circular. Drop in and leave your bags with reception at Queen of The Murchison, tonight’s accommodation. Built in the 1930s as a public bar, the hotel was shut down in the 1950s for an incredible forty years before current owners resurrected it to blazing glory. High ceilings, decorative wooden architraves and classic art deco curves make this the area’s ultimate bed and breakfast. Next stop is the ghost town of Big Bell. Established in 1935 for those who came to work in the adjacent mine, the town’s remains are a vivid illustration of the area’s epic past. Unfortunately, the Big Bell gold mine shut and residents left in search of new fortunes, leaving the town to decay. Wander the area to see collapsed houses, a crumbling church and what once must have been a grand hotel but is now a hollowed-out two-storey shell. From here, continue on to discover the rock formation Walga Rock, Australia’s second-largest monolith (nearly two kilometres in length) and amazingly similar in structure and appearance to Uluru. If you’re feeling adventurous, it’s a 20-minute walk to the top, which will reward you with wonderful views over the region, especially at sunset. If you do stick around until dusk, however, note that the walk down can be a little tricky in the lower light – taking a torch with you might be a good idea.

Day 5 — Mount Augustus

Day 3 — Cue to Meekatharra to Mount Augustus Today you’re off to see the world’s biggest rock! From here it’s a 75-minute cruise up to Meekatharra and your last chance to refuel and grab snacks before turning off the bitumen for today’s ultimate destination. It’s roughly five hours from here to Mount Augustus. Admire the unusual colour of the earth, which flows continuously between chalky white soils, fields of olivecoloured scrub and a dark, ruby red moonscape. If you stop for a look at Mount Gould Lockup – an abandoned police station from the 1800s, on the right side of the road (it’s signposted) – be sure to look closely at the ground: it’s covered in rocks of quartz! As you approach Mount Augustus, the rock’s outline can be hard to distinguish in afternoon shadow, but don’t worry – there’ll be plenty of time to admire it properly. Start by taking the 40-minute loop drive around the base of the rock. As you edge around to its northern face, you’ll begin to see its resemblance to Uluru – and begin to appreciate just how enormous it is. Mount Augustus Tourist Park is on the loop (signposted), so pull up and check into your cabin. This surprisingly lush, well-tended patch of paradise is resplendent with bright green lawns and one of the cutest open-air bars you’ll ever see, housed in a little wooden structure and surrounded by towering gum trees, so you may wish to spend the final hours of the afternoon settling in. As the sun dips toward the horizon, the rock will begin its spectacular daily show of changing colours. It’s the perfect moment for a celebratory drink of something cold.

Day 4 — Mount Augustus Tomorrow you’ll be tackling the hike to Mount Augustus’ peak, so take it easy today – there’s plenty to see and do around its base. You may wish to set off for the Flintstone Rock walk, for starters: this incredible little trail is only 500 metres but takes you to a set of ancient Aboriginal petroglyphs (carvings in rock) – they’re hidden under a large slab of rock that bridges a creek; crawl underneath to spot them. A sign by the walk entrance will show you the way. You may also wish to take yourself for a swim at Cattle Pool today; this blissful freshwater spot really is worth a dip, especially if a lazy afternoon siesta is involved afterwards. There are several other walking trails in and around the rock, ask at the tourist park for recommendations. Drive to one of the lookouts such as Emu Hill for the best views of the sunset.

Today you’re going to climb Mount Augustus’ peak. For the best experience, make sure you prepare a lunch and plenty of water the night before, and leave before dawn to make your way around the rock to the entrance of the Summit Trail (be sure to carry sun protection, too). Classified as a Grade 4 (out of 5) walk, the hike is a challenging six-hour return adventure – and well worth it. Along the way you’ll be greeted by impressive views and a beautifully clear silence punctuated only by birdsong, with just two posted signs, and a chain of coloured dots to mark your path. You’ll know when you’ve reached the peak by the handbuilt rock cairn that greets you. There’s a surprise waiting for you at the summit too, which we won’t spoil, other than to tell you to look for the picnic table. Enjoy a congratulatory sandwich while you sit; you’ve earned it. Cool off with a dip at Cattle Pool, perhaps, or retreat to the air-conditioned comfort of your cabin.

Day 6 — Mount Augustus to Gascoyne Junction Today you depart the rock for yet more incredible sights. Refuel at the tourist park before you go, making sure to ask for directions to Kennedy Range National Park, as varying road conditions along the gravel will dictate which route is best. If using a GPS, set it to Temple Gorge, which is located within Kennedy Range National Park. Don’t be surprised if you find yourself pulling over to take photos along the way,but resist the urge to spend too long: there are plenty more wildflowers to see in coming days, and the exquisite Kennedy Range is one of Australia’s most underrated sights. With a magnificent cliff face that extends for several kilometres, which looks rather like the result of a giant serrated knife, it would be easy to spend several days exploring the park. If time is short however, make your way to one of the more approachable trails. Honeycomb Gorge is the park’s most popular spot; an easy 500-metre walk from the carpark will reward you with the unusual sight of this enormous gorge, with walls pockmarked like honeycomb. While here, you may spot the area’s distinctive Dawson’s burrowing bees – these lovely native creatures can be found buzzing about the small pool at Honeycomb Gorge between July and September. Perhaps explore one of the other trails (information and maps are signposted by the park entrance) before heading to the nearby town, Gascoyne Junction. Spend the night at Junction Tourist Park; clean and well-appointed, and the adjacent bistro does great pub food in a bright, modern and airy environment.

Day 7 — Gascoyne Junction to Wooleen Station Refuel at the roadhouse onsite and get ready to leave the bitumen once more: today you’re headed south, to famous Wooleen Station where you’ll learn first-hand about life on the farm on this afternoon’s guided sunset tour. Hosted by David, this fascinating experience concludes (with permission) at Tanjimooka, an Indigenous sacred site found on the property, which is not dissimilar in appearance to Australia’s famous Devils Marbles in Tennant Creek. Stay at Wooleen Station at the beautiful seven-bedroom homestead, a rambling colonial treasure heritage-listed by the National Trust.

Day 8 — Wooleen Station There’s no shortage of things to do here. Feeling active? Borrow a mountain bicycle and set off on one of the signposted trails. Twitchers may wish to head to Yewlands Pool or Wooleen Lake, where several notable bird species have begun to return since new land management practices were introduced. If it’s hot, head to the Murchison River. This serenely still body of water, surrounded by wide, sandy banks and giant, wizened gumtrees is perfect for a cool afternoon swim. Whatever you choose, make sure your schedule has you back for dinner. In line with your hosts’ sustainability principles, much of the food is grown organically on site, and their memorable meals are served over several courses at a long table lit by candlelight, with a generous helping of conviviality alongside the homestead’s other guests.

The adventures are almost over, but today you’re in for one last treat. Depart early and set your GPS for Coalseam Conservation Park. This sheltered valley, with its mineral-rich soils, has created ideal conditions for a stunning display of wildflowers, like WA’s native everlastings, which bloom here in carpets so thickly knotted it’s nigh on impossible to see the ground beneath. As you drive through the valley, expect anything from the faintest blush of rose to a celebratory hot pink; from cream to bright yellow; and all shades in between. After you’ve completely used up your camera’s memory card (it’ll be easy), hop back in the car and make your way back to Perth.

ou’ve probably heard of Moreton, Bribie and North Stradbroke Island – but what about Peel, St Helena and King? Visitors fly from around the world in search of islands as idyllic as those on Brisbane’s coastline: paradise is on your doorstep.

Moreton Island Just 25km off Brisbane’s shore lies the thirdlargest sand island in the world. Moreton is mostly protected national park, with less than 100 residents calling the island home. The world-famous Tangalooma Wrecks are sunk just offshore, plus there are surf beaches, freshwater lakes, giant sand dunes, a historic lighthouse and wartime bunkers to explore, campgrounds to pitch a tent, Mount Tempest to climb and wild dolphin feeding nightly. With no bitumen roads, either take your 4WD over on the Micat Ferry and tackle the sand yourself or join a tour company such as Australian Sunset Safaris or TangaTours to get around plus go snorkelling, kayaking and more. Alternatively, catch the ferry to Tangalooma Island Resort and enjoy the facilities and activities.

Bribie Island The easiest to access, there is no excuse not to drive across the bridge to Bribie and experience a slice of island life. Bribie is separated from the mainland by a waterway known as Pumicestone Passage. This protected marine park is a haven for wildlife and runs for 35 kilometres alongside the island. Hire a barbeque boat, kayak or windsurf, bird watch, pump for yabbies, swim or just relax here. Bribie is part suburbia and part national park. On the eastern side of the island, the township of Woorim is home to surf beaches and cafes; the south-west has the Bribie Island Seaside Museum, restaurants and parkland; and to the north is 4WD or boat accessible national park with camping facilities.

North Stradbroke Island With seemingly endless white sandy surf beaches, scenic rocky headlands, quaint villages and the freshest of fresh seafood, it’s easy to see why locals love it and visitors swear to go back again. It’s also the second-largest sand island in the world and only 60 minutes from Brisbane CBD. Straddie (as it is known to locals) is home to three villages: Amity Point, Dunwich and Point Lookout. Take your car across on the ferry that leaves from Cleveland or just take yourself and use the local bus service. Must-dos include walking the picturesque North Gorge Walk (spot migrating whales from here in season; late May to early November), swim the beaches or take a surf lesson, grab a gourmet ice cream, eat seafood from Rufus King Seafoods and take a dip at the imaginatively named Brown Lake or Blue Lake.

EXPLORE HISTORY ON…

St Helena Island Explore Queensland’s first penal settlement and experience tales of prison life and hardships on St Helena. This island is a national park 6km off the coast of Brisbane and two tour companies (Cat-o-Nine-Tails Cruises or Brisbane Cruises) run entertaining day tours and night ghost tours that explore the 19th-century stone ruins. If you fancy travelling solo, you can moor a private boat and explore yourself.

Peel Island Located between North Straddie and the mainland, Peel is a small heritage-listed island about 4km offshore. Known as Teerk Roo Ra National Park, the island has two spots open to the public – Horseshoe Bay and Platypus Bay. Horseshoe features spectacular sandstone outcrops, while Platypus is home to shipwrecks great for snorkelling around. Access to the island is by private boat and you can book a camping spot. Most of the island is off-limits to the public to help preserve interesting historic remains, including the lazaret on the north-west corner. Opened in 1907, it housed leprosy patients for 52 years and is the only intact example of a multiracial lazaret in Australia. Prior to this, (1874-1890s) the island was a quarantine station.

WALK OVER TO…

Walk to King Island – about 1km offshore – from Wellington Point at low tide along a narrow sandbank. Throw a line from the jetty, climb the fig trees or just watch sailboats float by. Keep an eye out for blue soldier crabs and other marine wildlife.

OTHER ISLANDS IN THE AREA… There are a few more little islands in the Moreton Bay area that are popular with those fond of boating and fishing, thanks to the diverse marine life they attract. Cobby Cobby, Short, Eden, Mud, Green and Crab don’t boast activities and attractions aplenty, but they have a secluded charm that means you can play intrepid explorer.

Ever wondered where the world’s best animal encounters are? Take a walk on the wild side with our round-up of the most enchanting wildlife experiences on this earth. Whether it’s in our own backyard or travelling to far-reaching corners of the globe, nature’s greatest hits are calling.

Big Five safari (Africa) An African safari really is a dream destination for animal lovers who want to see it all. Whether you’re dreaming of witnessing lion cubs frolicking or watching predator and prey meet, Africa offers a glorious front row seat. The fabled Big Five are basically safari royalty, the most sought-after game sightings: lions, elephants, Cape buffalo, leopards and (the increasingly scarce) rhinoceros. All of these creatures are in varying levels of endangerment or near-extinction, with the exception of the buffalo. Johannes Lekoloane, Inspiring Vacations tour leader on the ground in South Africa, says that the most raved about encounters by guests are leopards and lions, but you should expect the unexpected. “Don’t ever switch off your camera on a safari, anything can happen anytime.” You’ll find a slew of safari options across East and Southern Africa, all catering to different tastes and experiences. Kenya’s Masai Mara Reserve is a time-honoured safari destination, whereas Botswana’s Chobe National Park is home to Africa’s largest elephant population, with around 120,000 of these majestic creatures living here. Kruger National Park, with nearly two million hectares of unfenced African wilderness, delivers a gold-star safari experience. It’s considered one of the best places in Africa to spot the Big Five in one fell swoop. Although one of Lekoloane’s fondest safari memories is being stuck in the middle of the Chobe River at dusk because of a herd of elephants crossing, he warns that spotting the Big Five is really all about luck. “Being too eager to see the Big Five can sometimes spoil your holiday… take it as it comes.” While on safari, you can expect to embark on early morning game drives (don’t count on a sleep in – this is an ideal time to view the wildlife) as well as later in the day. Moose (Canada) OK, they may not seem very cuddly, but they sure are a much-loved national mascot, eh? Best admired from afar, the Canadian moose can be found in almost every region. Despite moose populations being in decline across many parts of North America, it’s estimated there are up to one million of these enormous creatures getting around Canada. The largest member of the deer family, they can be as tall as two metres, not including those hefty antlers. Moose are a tourist favourite in the Canadian Rockies and one of the best places to find them around here is in Jasper National Park, the largest park in the Rockies and surely the most remote and wild. They can be spotted around Maligne Lake – did you know moose are excellent swimmers? A popular hike is the Moose Lake Loop, a gentle 2.6km, or klicks, as the Canucks say. Bears (Alaska) They don’t call it the final frontier for nothing: 60% of Alaska is covered by national parks and preserves, with 54 million acres of protected land. If you’re dreaming of witnessing gorgeous bears fishing for salmon in the wild, your chances are superb. A veritable wildlife haven, Alaska is the only place in the country where all three species of North American bears – black, brown and polar – flourish. Brown bears are the most common, with Alaska containing about 98% of the US brown bear population. The bears in Alaska are not only prolific, they’re big. Often referred to as the ‘Alaskan brown bear’, the Kodiak bear is the largest subspecies of the brown bear. These furry giants are only found on Kodiak Island and the other islands of the Kodiak Archipelago. Alaska is home to the rare glacier bear – a subspecies of black bear – that is silvery blue, found mainly in Glacier Bay National Park. As if the Arctic terrain weren’t thrilling enough, Greenland’s vast, untouched wilderness is home to a wealth of wildlife, including polar bears, the largest species of bear in the world. Although chances of spotting the ‘King of the Arctic’ are smaller in Greenland compared to Svalbard where they reign, they’re occasionally sighted in north to northeast Greenland, with their largest numbers found in the far north. The only way to get around Greenland – the world’s largest island – is by boat or plane (or dog sledding, or snowshoeing). This huge, icy landmass has no railways and no roads connecting towns. Boats and cruises allow you to see the majestic icecaps up close and personal. If you’re dreaming of sailing under the midnight sun, Hurtigruten are the experts in exploration travel, navigating the most remote, pristine corners of the globe – including Greenland. An expedition to the Antarctic, the coldest corner of the earth, is an adventure many people dream of. The highlight of any trip to this icy wonderland is spotting the diverse array of wildlife that has adapted to the harsh climate. Whether they’re waddling, swimming, nesting or just playing – penguins are undoubtedly the most popular residents. These flightless birds are only found in the southern hemisphere, with the greatest concentrations on Antarctic coasts and sub-Antarctic islands. Biersack notes that the vastness of Antarctica, combined with the rapid weather changes, tend to be the most challenging aspects in the south. “We will adapt to nature, not the other way round. The most common penguin encountered on voyages is the Gentoo, a mediumsized animal with a very lively character and social behaviour. The Galápagos Islands have earned their reputation for incredible flora and fauna not seen anywhere else on earth. Most of the islands are uninhabited in the archipelago, consisting of about 19 islands and dozens of smaller islets, located about 1000km off Ecuador’s coast in the Pacific Ocean. As a UNESCO World Heritage Site, both land and sea are protected. There are many wildlife species unique to this archipelago because of its isolation and remoteness, including the giant Galapagos tortoise which is the largest in the world and can live to 170 years old. Huskies (Finland) What could round off the winter wonderland experience in Finnish Lapland perfectly? The forests of the Arctic Circle are the place to go dog sledding, also known as mushing. Dog sledding can take you dashing through the snow, or weaving through the forests, pulled by a pack of energetic husky dogs. A proud tradition around here, historically dog sleds were used for carrying heavy loads, or as transport. These days, it’s mainly a recreation pursuit and the tourists love it. Whether it’s for an overnight adventure or a short morning trip, try your hand as a musher and lead a fleet of huskies (typically Siberian or Alaskan) across snowy terrain in Arctic wilderness. Deer (Japan) In historic Nara, the ancient capital of Japan, you don’t have to look hard to find the fabled, holy sika (deer). There are more than one thousand tame deer roaming freely around Nara Park, one of the oldest parks in the country. Significant in Shinto lore, once upon a time the deer were considered sacred messengers of the gods. These days, they’re national treasures. Visitors can buy shika senbei (deer crackers) to feed them, so you’ll find the deer are rather welcoming of humans visiting. Considered a symbol of prosperity, elephants are a treasured part of Sri Lankan culture. The island nation has the highest density of wild Asian elephants in the world: although the Sri Lankan elephant population has fallen almost 65% since the turn of the 19th century, it’s estimated there are anywhere between 3,000 INSPIRED and 7,500 wild elephants here. Australian animal adventures

You don’t have to travel too far for special local encounters Sea lions (Kangaroo Island, SA) Kangaroo Island is a dream for wildlife spotting, with animals like kangaroos, sea lions and echidnas roaming free on the island. One of the largest colonies of Australian sea lions can be found at Seal Bay, where you can take a self-guided boardwalk tour or a guided 45-minute beach tour to see the sea lions on the beach up close.

Crocodiles (Northern Territory) Fancy taking a dip with the world’s largest reptile? At Crocosaurus Cave in Darwin, you can swim with the crocodiles. The only experience of its kind in Australia, up to two swimmers can hop inside a large, clear acrylic tube – named The Cage of Death, of course – and be lowered into one of four enclosures for a 15-minute encounter. If you’d prefer to see them in the wild, brave types can head out on a jumping crocodile cruise along the Adelaide River, where a guide dangles meat in front of the local crocs to encourage them to jump up next to the boat. Dwarf minke whales (Great Barrier Reef) The warm waters of the tropical north are the only place in the world where you can swim (dive or snorkel) with dwarf minke whales, and it only happens for two months of the year (June and July). Don’t be fooled by the name – these inquisitive, graceful creatures can grow up to eight metres in length and weigh several tonnes. Not only will you likely come eye to eye with these curious mammals, they produce sounds that are easily heard underwater and the vibrations from sound waves can sometimes reverberate through your body. Their characteristic sound – a synthetic-sounding call with three rapid pulses and a longer trailing note – is fondly nicknamed the Star Wars sound.

Tasmanian devils (Tasmania) The only place you can find endangered Tasmanian devils in the wild is, you guessed it, Tasmania. Accessible in an hour’s drive from Hobart, The Tasmanian Devil Unzoo boasts loads of wide open spaces, no boundary fences, extensive bushland and a native botanic garden. There are Tassie devil feedings every hour or so and you can take part in a Devil Tracker Adventure, where you’ll take a 4WD tour through bushland to identify and track resident devils. Whale sharks (Ningaloo, WA) Swim with the biggest fish in the ocean, at the world’s largest fringing reef. Between March and August, you can snorkel and dive with whale sharks. Ningaloo is also one of the world’s major breeding areas for sea turtles, with turtle nesting season typically occurring from November to March, and hatchlings can be seen from February to April. Little penguins (Phillip Island, Victoria) Just under two hours from Melbourne, you’ll find the largest little penguin colony in the world on Phillip Island. At the Penguin Parade, visitors flock to watch these creatures emerge from the water and waddle home to their burrow at sunset. There’s seating on the beach and an underground viewing station to see the world’s smallest penguin species. Closer to the city, a colony of little penguins can be found at the St Kilda breakwater. Sicily. Nowhere on earth has so much history in such a small space. The Vandals, Ostrogoths, Phoenicians, Carthaginians, Elymians, the Byzantine, Arabs, the Romans, and the Normans are just some of the many tribes and empires that have called Sicily home. And who wouldn’t want to up sticks and base themselves on this beautiful sun-kissed island? But it wasn’t just its beautiful beaches and fertile lands that made it so attractive. Sicily’s strategic location in the heart of the Mediterranean – as a stepping stone between Europe and Africa – has made it the jewel in the crown of every empire in the region over the last 10,000 years. And each tribe, kingdom and ruler that arrived here left their mark. So many of the temples, churches and palaces are still so well preserved and show so much of their original glory. But it isn’t just temples where people of Sicily come to worship. People have made offerings to the bubbling fires of Mount Etna since time began. The island (and its famous mountain) has been a focal point for many ancient myths and stories – not least as the home of the one-eyed Cyclops in Homer’s Odyssey. The buildings and temples left by these ancient civilisations are what attract so many visitors, keen to look through Sicily’s window into a mythical past. It’s easy to spot Arab domes, Byzantine mosaics and Norman palaces in the capital of Palermo, but the archaeological treasures found throughout the island truly show the history of Sicily. GLOBETROTTER | A VISIT TO SICILY

And where better to start than the Valley of the Temples? Eight temples can be found in Agrigento on the southern coast of the island, with Temple of Concordia being the most stunning of them all. The temple’s huge Doric columns show the scale of the building and intricate statues featuring gods and characters from Greek mythology can still be seen carved into the stone. The site of Selinunte on the south-western coast of the island is another stunning example of the incredible ancient Greek architecture. The five temples are centred on an acropolis, and whilst many lay in ruins, the Temple of Hera (also known as Temple E) has been beautifully resurrected. The stunning coastal backdrop and the tall pillars of the temple in the foreground make it easy to imagine being one of the 30,000 inhabitants who lived here in 400 BCE.

The Necropolis of Pantalica is arguably the oldest archaeological site on the island. Up to 5,000 tombs were cut into the limestone rock on the side of Pantalica’s beautiful natural gorge. Although unclear exactly when they were created it is thought it was between the 13th and 8th century BCE during the early Middle Ages or Arab period. By the 4th century BCE, the Romans had arrived in Sicily and the Villa Romana del Casale is an incredible example of Roman architecture. Inside are some of the most complex mosaic from the Roman empire, which were rediscovered in the 19th century after being lost for over 700 years. In 1959, excavation of the site found a mosaics of women exercising wearing just bikinis – certainly very fashion forward!

By the 12th century, Christianity had really arrived. The church of La Martorana was built by Albanian Christians and still exhibits its exquisite mosaics, whilst the Palatine Chapel was built as a royal chapel for the Norman King Roger II. The 16th century Monastero Dei Benedettini of San Nicolò is one of the largest monasteries in Europe, and today the University of Catania’s Department of Humanities calls it home. The palaces of Noto display Baroque architecture at its best, while near the port town of Kalsa are some beautifully weathered Baroque churches. As they have for centuries, visitors watch the world go by with a glass of wine from one of the lovely restaurants that are scattered throughout the town squares. There are of course beaches galore in Sicily, modern art galleries and fine dining but there is nowhere else on earth where you can get so up close and personal to thousands of years of history.

You left home at 16 to pursue your love of singing. Clearly it worked! But, what would you be doing if you weren’t making music? When I was little, and clearly a little confused, I wanted to be a painting, figure skating veterinarian.

Q &A

You have 24 hours to show a visiting friend around Coffs Harbour. Where will you take them? I am 20 minutes north of Coffs Harbour in the hinterland, and yet I'm on the coast. It’s one of the few places where the rainforest goes all the way down to the ocean. So we’d have to share something amidst the Norfolk pines down at the beach reserve, go to the jetty for fish and chips straight off their boats, to the flora and fauna hiking trail, and down to the Twilight Food Market on the beach for a taste of everything from all over the world. It seems it’ll revolve around food.
