ow can it be that a year has passed and we are again amidst anticipating the celebrations of the winter holiday season? Loved ones will gather once again, highways and airports will hum with activity, and our social calendars will be flooded with important events that may at times try even the most patient of souls. The importance of family has never been clearer to me as it is now. Three of our four children have scattered across the nation, pursuing their career goals. The distance certainly changes the frequency of our time together, but when we are fortunate to reunite, one thing is certain—we treasure each moment. In this issue, Inspired Home shares many creative and beautiful ways to adorn your home for the holidays, from setting an inspiring table for your guests to offering a bounty of ideas to help inspire you in presenting your home in holiday finery. The glitz and shine of the holidays is a gratifying aspect of the season, but in this issue, will also share with Inspired Home readers the heart of the holidays—something deeper and more profound than the glitter. In this issue, you will meet a multitude of area residents who have learned one thing— holiday giving comes in many forms and reaps much personal reward. In its sixth year, Holiday Homes of Hope and Boutique once again brings to our community a wonderful opportunity to tour beautifully bedazzled area homes all for a worthy cause— the North Dakota Cystic Fibrosis Association. The event is November 14–15. Cystic fibrosis is a genetic, life-threatening disorder for which there is no cure. Cystic fibrosis causes the body to make thick mucus that clogs the airways of the lungs and prevents the pancreas from digesting food. Historically, people with cystic fibrosis did not live past their teenage years. With the help of modern technology, research and new treatments, those statistics are changing, for the good. Please join Inspired Home in this opportunity to view beautiful area homes and at the same time offer hope and a better quality of life for area young people living with cystic fibrosis. Regan and Renae Rohl of Rohl Arabians are living their dream. At a young age, they both had a love of the Arabian horse. Neither of them knew this love affair would eventually include breeding top contenders and national champion mares in the U.S. Nationals, National Breeders World Cup and the Scottsdale Arabian Show, the “Super bowl of the Arabian world.” Today, the Rohls have nine Arabian horses, two or three of championship quality. Their top horses include Beauty of Marwan, Donna Fantasktkkah, Enzo’s Diva and Foreign Affair. he Christmas season is about faith, friends and family. It’s about tradition and memories. We reflect upon those who have moved on, creating new traditions for the next generation who will, in turn, begin the cycle anew. We are one of those families whose “at last” didn’t happen “at first,” but in the 15 years we have shared, we have forged a number of traditions that are our very own. Our annual Christmas party. The Friday before Christmas, regardless of the date, we host the HamiltonErickson Christmas party. With one of us working in academia and the other in corporate America, we have developed a wonderful tapestry of friends and colleagues and love opening our home to the ones we spend the majority of our waking hours with. I’d like to share a few tactics that have helped us keep the season merry and bright. Although I always live the “go big or go home” philosophy, I don’t sprinkle Christmas décor all over the house. I do, however, decorate a show-stopping stairway banister, the biggest fresh tree that will fit through the door, and a lighted swag over the sunroom door with about 42,000 shiny beads on it. And I shamelessly put it all up a week or more before Thanksgiving. It’s become a rule of thumb for us to expect about a 50 percent turnout from our guest list. INSPIREDHOMEMAGAZINE.COM


It’s Christmastime. People have things going on. We don’t take it personally. In fact, we can confidently count on a guest list of 125 people yielding a turnout of 50 to 60 people, which is totally manageable. Only once were we caught off guard and had about 40 people more than we planned, but by 10 p.m., no one really cares if they’re noshing on pizza rolls and drinking a lovely cabernet out of a Styrofoam cup. One thing I learned early: It takes the exact same amount of energy to clean the bathrooms if there are six people coming over or 50. A quick vacuum or dust mop is all I give the floors, because they’re going to get tracked up and spilled on. All our eyes are past the age of 40, so we can’t see things like smudged floors and dust coyotes hiding in the corner. Especially after both the sun and a glass of merlot have gone down. Speaking of merlot, I keep a Sharpie marker in my pocket when answering the door so I can quickly jot the giver’s name on host gifts that arrive. Try as I might, I’m just not capable of remembering who brought which thoughtful gift, and we are fortunate to have some wonderful friends with phenomenal taste in wine and other treasures. Plus, seeing someone’s name in metallic gold marker can help prevent a thoughtful gift from being mixed in with the party wine. A few years ago, I purchased two cases of wine glasses from a restaurant supply store. I like the look and feel of wine glasses at an indoor party, and everyone is gracious enough not to sniff at the fact that we serve both red and white in the same style of glass. It’s a big deal to me to use the “good” china and crystal when entertaining the people we love most in the world. But there’s a difference between a sitdown dinner for 12 and an open-house cocktail party for 50. The French crystal and English Christmas china stay in the pantry for the Christmas party, and we serve our guests on basic white restaurant china plates. Nothing throws a bucket of cold water on a party like the crash and gasp when a lead crystal glass or antique china plate hits the floor, which is pretty likely when there’s a house full of people milling around. A few years ago, I came up with the brilliant idea of setting out a tall chrome trash can with a step-open lid for napkins and hors d’oeuvres that looked better than INSPIREDHOMEMAGAZINE.COM

they tasted. It seems the party always migrates and then stagnates in the kitchen, and it’s kind of alarming when you spot someone bent over, plate in hand, opening every lower cabinet door, looking for a trash can. Since you need to tune your piano once a year, get it tuned around the first of November. Invariably, someone will have a vast portfolio of Christmas tunes and will sit down to play about 9:30 p.m. If circumstances should be that their confidence far exceeds their talent, the intune piano will soften the pain. And then comes my favorite part of the Christmas party: the after party. This takes place at the late hour when the party has dwindled down to just a few really close friends, all pulled up to the kitchen island, snacking on what’s left of the buffet table and finishing off whatever opened bottles of wine happen to remain. We chat about the prior year, what we’re planning to do over the holidays and how great our kids and grandkids turned out and marvel that at 11 p.m., we are ready to call it a night when we used to get a second wind about that time. When it gets down to just the two of us, we remark that even though we’re kind of knocking on the door of middle age, we look toward the new year with the same anticipation and optimism we had decades ago and then take a moment to reflect on the beauty and bounty we experience every day and how very grateful we are for the wonderful friends and family that fill our Inspired Home. A Sustainable Christmas Story Holiday beauty springs forth from scraps

nce upon a time in a kingdom nearby, a sawyer (wood cutter) and a seamstress were decorating for the holidays when they realized they needed a Christmas tree! Both were dedicated to sustainability in their own way, so they wanted to craft something meaningful and eco-friendly for their home. The sawyer said to the seamstress, “I am in the business of selling reclaimed lumber in hopes that we might save trees! We simply cannot cut down a fresh tree for our home for the holidays.” The seamstress, who saved unwanted clothing from thrift stores, fashioning fabric and creating items with new life, exclaimed, “Well, we certainly cannot buy a plastic tree that is destined for the landfill!” INSPIREDHOMEMAGAZINE.COM


And so it was decided that the two would construct a tree of their very own from the scraps of the sawyer’s reclaimed lumber, decorated beautifully with garland and ornaments lovingly stitched from unwanted fabric belonging to the seamstress. And everyone lived a sustainable life, happily ever after. The moral of the story? A beautiful, reusable and completely sustainable solution to the Christmas tree was born that holiday season long ago, and today, we are so happy to share our Little Scrappy Trees with you! Artist bios: Ashley Dedin was born and raised in the suburbs of Chicago. She moved to the Fargo-Moorhead area to finish her degree in fine art and philosophy and is a selftaught seamstress. Seth Carlson grew up in Casselton and studied theater at the University of Minnesota Duluth. The son of a city forester and an artist, Carlson has always had a love for our planet and for making things. Dedin and Carlson are a team of two small-business owners dedicated to sustainability. Carlson founded a reclaimed lumber company called ICSS Supply, and Dedin owns and operates an upcycled accessories brand called AENDEE. The table gathers everyone together. It creates an inviting atmosphere and sets the mood and inspiration for you as well as your guests. It can be as simple or intricate as you like; all that matters is it fits your style and personality. Here are some tips to make this season festive and effortless. • Forget about formality. Many people believe that table settings must be formal. Though formality serves its purposes, it is not always necessary. Have fun this season. Allow yourself the freedom to create something entirely different and noteworthy. Mix and match plates, bowls and glasses, adding texture, color and a distinctive place setting for each guest.

My favorite idea is to write guests’ names on freshly baked sugar or ginger cookies. To do so, I use a fine-tipped piping bag and sprinkle raw sugar on top to make the names stand out. Not only do these cookies look thoughtful, they can also be part of dessert. Artful thinking can be applied to any area of your life. A welcoming holiday table displayed in a creative manner exudes warmth and thoughtfulness and adds panache to your guests’ dining experience.

e all have recollections of preparing our homes for the holidays and celebrating cherished traditions that make Christmas so special. This year, Inspired Home looks back on last year’s Holiday Homes of Hope and shares favorite memories and traditions from homeowners who opened their hearts and homes and the designers who dressed these homes with gorgeous decor. “Participating in last year’s Holiday Homes of Hope was a true honor,” recalls

Jan Wensman. “The fact that all proceeds went directly to the local cystic fibrosis organization was the key factor for us in opening our home.” Homeowner Tracy Christianson agrees. “My home was beautifully decorated!” she adds. “We had the opportunity to meet wonderful people who support this cause. My favorite quote from Audrey Hepburn is, ‘As you grow older, you will discover you have two hands: one for helping yourself and the other for helping others.’” INSPIREDHOMEMAGAZINE.COM


Many families observe the same Christmas traditions year after year. Homeowners John Zasado and Tami Norgard love entertaining during the holidays. Their celebrations include backyard hockey, skating parties and a group ride on the Fargo trolley holiday light tour. “John and I both grew up decorating sugar cookies, so I bought him a box of cookie cutters the December our eldest daughter was born,” Tami explains. “Family members enjoy creating cookies and gingerbread houses that reflect vast variations in time commitment and artistic talent!” And who doesn’t have a favorite Christmas memory, recipe or recollection? At Jill and Tim Krahn’s home, two Christmas traditions create lasting remembrances. “Christmas morning, we enjoy delicious Mexican hot cocoa, which is cocoa with chocolate and chili peppers. It’s amazing!” Jill says. “We also cook king crab legs after church while enjoying a fun family PowerPoint movie of the past year.” Whether you choose an old-fashioned woodsy theme, an elegant appearance, or an ultra-modern look, dressing up our homes brings a look of festive warmth for family and guests. “Holiday decorating brings our family together in celebrating Jesus’ birth. I love teaching my children and grandchildren the true meaning of Christmas,” notes Jodi Ellingson. “It’s important to take time to celebrate the wonderful gift in life God gives us. To me, Christmas is showing appreciation to the people in your life, and it’s a time of gratitude for good health and family.” Like so many of us, Kevin and Brooke Dahl look forward to pausing busy work and school schedules during Christmas to reflect upon their blessings with thankful hearts. “Christmas to us means spending cherished time with family and loved ones,” Brooke says. “It’s about rejoicing in God’s love for us through the birth of Jesus.” What does Christmas mean to you? “ hen I met with Tracy about decorating her home, she expressed how important the cause of cystic fibrosis is to her. Due to her intense job as a nurse, she wanted her home to be a respite. To achieve that, I used cool whites, gray and metallics with pops of orange for some fun. T

he holiday season is the perfect time to be thankful for the good in our lives. This is particularly true for Greg and Lisa Huus, whose youngest child, Austin, 6, is living with cystic fibrosis. Lisa describes her son as a compassionate, energetic and strong-willed boy. Cystic fibrosis is an inherited, life-altering disease that causes mucus in the body to be thick, sticky and difficult to clear. The mucus plugs passageways and ducts, making breathing an especially difficult task. This serious illness requires lengthy 38 | November/December 2015

hours of treatments and procedures throughout the day and comes with a host of other medical complications. Living with cystic fibrosis, Austin’s days are long—and so are mom and dad’s. Austin’s day begins two hours before he has to be out the door and ends after the rest of his family is in bed. At 5:30 a.m., he takes four different nebulized medicines, lasting 45 minutes; the medicine is vaporized and inhaled through a continuous breathing mask. While he receives his neb treatment, he wears a vest, which percusses and claps repeatedly on his front and back, loosening secretions in his lungs. The vest must be on for 30 minutes; afterwards, he takes his morning pills. Austin then does nasal irrigation and also uses a nasal spray. He takes seven or eight pancreatic enzymes every time he eats to help him digest and break down the food. He takes up to 35 pills daily. Before going to sleep, Austin once again does his nasal irrigation, nebulizers and chest physiotherapy. Before he gets under his covers, he is connected to a feeding tube, which provides his small body with 1,200 calories while he sleeps. Mixed with this formula are another 15 enzymes so that his body can digest the food in the feeding tube. If he becomes ill or develops a lung infection, this intense routine is repeated every four hours. This regimen is critical to help his body function and breathe without incidence, something most of us take completely for granted. One thing is certain; Austin is not alone. Not only does he have big brother Jarrett, 15, and big sister Makayla, 13, looking after him, but he also has lived in caring communities. Before a recent move to Wahpeton, the Huuses lived in Fort Ransom for 15 years, receiving massive support. Lisa explains, “When he was in school in Fort Ransom, it was like one big family,” says Lisa. “All the children and staff looked after him and helped to remind him about medications. The community chipped in and helped fundraise or baked goodies for the Holiday Homes of Hope tour. Whenever I have asked for help, they have been more than willing to lend a hand.” There are children all throughout the metro area like Austin who need the support of the community, which is why Holiday Homes of Hope does what it does

every year. For the event, area residents graciously open their beautifully decorated homes for public viewing. Tour tickets and holiday boutique proceeds benefit the North Dakota Cystic Fibrosis Association to help the Huus family and others defray medical expenses. Lisa expresses her gratitude, saying, “The Holiday Homes of Hope tour is such a rewarding fundraiser to be a part of. Every year, I am amazed with the support of the communities coming together to make yet another year a successful event. The money Holiday Homes of Hope raises is so important to families who need it. The medications, treatments and care for someone with cystic fibrosis are astronomical! To think we have an organization in our state to help those families and to give them opportunities that they would not otherwise be able to afford is very heart warming.” Lisa and Greg have always been honest with their young son, and he understands that he may not live as long as others. Lisa admits that that thought scares him; he understands more about life than he should at the age of 6. It is important to remember that children affected by cystic fibrosis are not their disease. They are young people with hopes and dreams like everyone else. The Huus family strives to make Austin’s life as normal as possible. “He has a respect for life like no other,” says Lisa. “He has taught me so much in his six years of life. he familiar sting of cold is in the air, and the whip of the wind beats on your windows. But inside, the glowing flicker of the fire warms your soul and your home. Fireplaces are functional; they can effectively heat your house and provide warmth. But they also serve as a comforting design element, warming up your home in the aesthetic sense of the word. Darla Skaurud, manager of Home and Hearth in Fargo, has been selling fireplaces for 15 years. “The fire always tends to be

Studies have proved that our blood pressure decreases and we become calmer and more sociable when we stare at flames.” The social activity of gathering around the hearth goes back thousands of years to when fire was an absolute necessity. surrounds it—the hearth—is ever changing. Gone are the days when a fireplace was one size fits all. Skaurud encourages you to get creative. “Customize your fireplace to suit the décor of your home—traditional with logs or modern with sparkling crushed glass or calming spa stones,” she says. “Express yourself with fireplace

shapes, various finishes and decorative fronts in addition to stone, tile or granite. A full mantel or a simple shelf makes the possibilities endless.” My husband and I recently built a new home in Oklahoma City, and a fireplace is fairly standard in new construction here. Though the winters are not nearly as chilly as

they are up north, we find that we are using our fireplace far more often as an actual heat source than we did back home. The autumn and winter here are crisp, and the fireplace offers a sense of ambiance, adding an overall feeling of togetherness and comfort. Our home has a bit of a French country mood throughout, and when choosing the design of our fireplace, we wanted to reflect that rustic temperament. We chose to do an abbey tumbled drystack stone from floor to ceiling. This stone has varying shades of rust

The stone pieces are numerous in shape, texture and sizes, and as the name suggests, there is no mortar between the visual crevasses, which creates an organic, natural look. We then added a large cedar beam as a mantel, which frames the fireplace and pulls the entire piece together. Thanks to modern technology, the whole hearth comes aglow with just a flip of a switch. Fireplaces haven’t just become easier

to turn off and on throughout the years; they have also become more efficient and provide cleaner, “healthier” air in your home. Skaurud explains, “With the direct vent technology, 100 percent of the combustion exhaust and fumes are vented to the exterior of your home. Direct vent gas fireplaces are sealed and provide heat, conserve energy and ensure clean, safe indoor air quality. Fireplaces work well for zone heating. Keep your family room at a cooler temperature throughout the day.” She recommends

he true meaning of the Christmas season whispers a sense of wonder, gratitude, good cheer and peace into our hearts. It is a time of thankfulness for cherished relationships with family and friends and finding true joy in daily blessings so often taken for granted. For many years, Dr. Emmet and Diane Kenney have witnessed a special friendship between their son, William, and Sophie, a child diagnosed with cystic fibrosis. When

Sophie’s mother, Lisa Backlund, their longtime friend and an organizer of the Holiday Homes of Hope Tour, asked if they would participate, Diane didn’t hesitate: “We would love to! Sophie’s laughter is infectious, and it fills a room with joy.” A compassionate psychiatrist and owner of Saint Sophie’s Psychiatric Care in Fargo, Emmet has spent his life caring for individuals and families. “Historically, cystic fibrosis has been difficult to detect and treat. As a physician, I appreciate the great advances made for people with cystic fibrosis that have occurred based on research,” he explains. “We felt this was one way we could help raise funds locally to continue these advances.” Warmth, devotion and love of family are apparent in every room of the 2,800-square-foot, two-story home. Built in 2001 by Boyd Fiske, the home was designed with five bedrooms and four baths. The Kenneys have made it their own during the 13 years they have resided in it, enlisting the skillful hands of Bob Footitt to remodel and refinish it to their preference. “Home is much more than just the structure,” Diane says. “It’s that place you go where the people you love live. It doesn’t matter the size of the house; what matters most is the love that dwells inside.” Warm southern chestnut flooring flows from the entryway into a spacious formal dining room and quaint living room where voices around the piano are common during the holidays. “With all the holiday cooking, we sometimes open the windows to allow cold air inside,” Emmet adds. “Diane loves to fill our home with the glow and fragrance of candles.” The family room, eating nook, kitchen and computer room all boast spectacular views of Rose Creek Golf Course, ponds, sunsets and even cross-country skiers. A peaceful and private outdoor entertainment space includes a trickling waterfall, fireplace, hot tub, basketball court and soccer area. Even Lola, their exuberant 8-year-old golden retriever, enjoys a bed with a view right next to the garage entrance.

The kitchen is open and inviting following the removal of a former pantry wall. A peninsula designed for entertaining, warm maple cabinetry, Dakota Mahogany granite countertops, Sub-Zero appliances and nostalgic brick walls and an archway make this a favorite gathering place. The kitchen’s complementing butler pantry features a diagonal stone backsplash, Caesarstone quartz countertop, and an additional Wolf dishwasher and oven. A T-staircase near the entryway leads upstairs to the couple’s beautiful master suite. Four bedrooms and two additional baths keep the family close.

Each week, Emmet lovingly orders fresh floral arrangements for Diane that bring beauty, fragrance and color into their home.

The downstairs features a workout space, bar area, media room, one bedroom and a bathroom. “When it’s 20 below zero, we love sitting downstairs,” Emmet adds. “The large basement windows offer excellent indirect lighting. We’ve also incorporated many unique lighting techniques throughout our home as well.” “Our home is a place where we enjoy entertaining friends and family,” Emmet concludes. “There is a sense of belonging here, an intimate and welcoming place where our kids bring their friends.” This year, the Kenneys celebrated 25 years of marriage. With tender admiration, Emmet describes his bride as amazing, beautiful and loving. Diane smiles and reflects upon Emmet’s intelligence, his creativity in gardening, building and landscaping, and his sincere empathy for others. h by gosh by golly, it’s time for mistletoe and holly! If you have pets at home, however, you will want to make sure that mistletoe and holly are far out of the reach of your furry family members. Many of us have heard that poinsettias are dangerous if ingested, but they are less toxic than other plants that made the toxic list. Poinsettias contain a sap that if ingested can irritate the lining of the esophagus and stomach. The good news is that it takes a large amount to cause poisoning. The undesirable effects and taste of the plant generally deter pets from eating it. Many of our favorite holiday foliage—including that famous kiss-inducing decoration— can be quite toxic for dogs and cats. Plants that are hazardous to dogs or cats include lilies, daffodils and amaryllis, all of which are popular seasonal gifts. These plants contain one or more toxins that can cause serious gastrointestinal issues, cardiac arrhythmias and seizures if eaten. The bulbs in lilies and daffodils are especially dangerous when consumed by dogs or cats. The amaryllis bulb can lead to diarrhea, vomiting, lack of appetite and debilitating abdominal pain.

Many of our favorite holiday foliage— including that famous kiss-inducing decoration—can be quite toxic for dogs and cats. I spoke with Dr. Michelle Mostrom, veterinary toxicologist at North Dakota State University, about the dangers posed by holiday plants. “The Christmas cactus and the sharp leaves of English holly can cause vomiting and irritation and damage to the stomach of animals,” she says. “The pine oils or sap from real Christmas trees can cause nausea, excessive drooling and vomiting in dogs and cats. Watch out for cats that want to climb real trees and transfer the sap onto their hair coat; you will want to wash the sap off to prevent ingestion during grooming.” Mostrom also warns that Christmas decorations that are thin or string-like, such as tinsel or anything with yarn, can be very damaging to your pets’ digestive tract if consumed. Plants are not the only threat to your family pet’s well-being during the winter months. Chocolate is toxic to canines. Though it should be avoided in general, all chocolate is not created equal. Everyone knows someone whose dog devoured a batch of brownies—like our boxer Rupert did—or their children’s Halloween candy and seemed to go about their day unscathed. Sleepless in Fargo Practice good sleep habits during the holidays

is the season! The shopping malls are bustling with people in search of the classic Christmas tie, the perfect toy for little Jimmy, or that hot new sale item. Once our shopping is done, we rush home, pick up the kids, make a meal, wrap a gift, clean the house—the list, just like Santa’s, goes on and on. While we need more sleep during this busy season, the truth is, we probably receive less. With so much on our proverbial plates, it can be difficult to relax our thoughts enough to achieve a

Dr. Seema Khosla of Fargo is the medical director for Precision Diagnostic Services Inc. and the North Dakota Center for Sleep. She understands that the winter months bring about all kinds of stressors that make it difficult for some to get proper shut-eye. Disturbances in the night or a hectic evening can keep us from getting the rest we desperately need. She explains that there are two types of insomnia: sleep onset—dif ficulty falling asleep—and Dr. Seema Khosla sleep maintenance— Chief Medical Officer difficulty staying asleep. After a long day, it can be difficult to expect our brains to shut down the minute our heads hit the pillow. There is a bit of an art to it, and it requires some patience. Khosla explains, “Sleep onset insomnia is often due to difficulty turning off our minds. We run through our to-do list, replay the unpleasant parts of our day, worry about our loved ones and plan our tomorrow. It has become very commonplace for people to crawl under the covers and turn on their phones, check Facebook one last time or read a magazine article, but screen time and sleep time do not mix. Screen time keeps our brains active and engaged when we should be dialing down external stimuli. Khosla says that the onset of sleep generally comes within 15 minutes or so. We need to be cognizant of that time frame and allow the body and mind to rest in those minutes as sleep comes. “For my patients with sleep-onset insomnia,” she says, “they really see tremendous improvement once they embrace proper sleep hygiene and establish a relaxation routine. For some, it involves reading or listening to music. For others, some prefer gentle stretches or yoga. Some choose to meditate.” The latter of the insomnias generally occurs when our sleep is disrupted by something— perhaps a stirring child, a quick bathroom break, or just maybe the clip-clop of reindeer on the roof. Khosla says that it is normal to awaken during the night from time to time. It is not normal to become so upset about the fact that you can’t fall asleep that it becomes an emotional response, further worsening your ability to drift off. Suffering from insomnia is not something to take lightly, and if you find yourself constantly restless and tired, you may want to consult your doctor, as your sleep health is very important and you are risking more than morning drowsiness. Khosla warns, “Insufficient sleep, either total hours or due to poor sleep quality, is associated with a less resilient immune system, a higher risk of heart disease, memory impairment, obesity and mood disorders. We catch a cold more easily, and it seems to linger longer. We become irritable. Bethlehem “Betty” Abera Gronneberg, author of The Alphabet Takes a Journey: Destination Ethiopia, believes, “Yes, absolutely!” Gronneberg remembers walking two miles to school each day as a young girl in the capital city of Addis Ababa, Ethiopia. “Books opened my eyes to the world. I loved reading and was intrigued by how stories talked to me and enlightened me,” Gronneberg recalls. “Although books were scarce, I read everything I could get my hands on, and oftentimes, it was the Bible.” Inspired by storytelling, Gronneberg grew up listening to generational stories told by family and elders because written literature was scarce. “Children sat in circles watching a passionate storyteller do his magic. With words smartly conjured together, the stories transported you to imaginative lands-funny and wise stories and mythical stories about animals,” she remembers. These letters were Gronneberg’s first window to the written world. “For a country almost twice the size of Texas, Ethiopia has over 74 patchworks of languages and ethnic cultures,” Gronneberg explains. “The Amharic letters act as cultural ambassadors and insightful storytellers for their guests, the English alphabet, while teaching children in a fun and interactive way how languages relate to one another and how words look and sound different in another language.” Writing from her roots, Gronneberg also wishes to imaginatively transport children to faraway places on exotic adventures. y perfect holiday season includes generous amounts of family, celebration and tradition. While it can be something that your Grandma did and you now host, tradition doesn’t have to be handed down. You can create your own, like the Spellman family’s Réveillon. The simplest translation of Réveillon is a Christmas Eve banquet celebrated by French Canadians, Acadians and other people of the world in areas colonized by the French. In Quebec, it may start with midnight Mass and follow throughout the night with impressive displays of food, drink and merriment. Although French-influenced, Québécois culture and food is very much its own, and the Réveillon menu includes many traditional dishes, much like Thanksgiving. A centerpiece is tourtière, a hearty meat pie. Dear friend and amazing cook Judy Spellman grew up in Quebec and moved to Fargo with her husband, Stephen, more than 30 years ago. When her sons were young, she began serving tourtière as part of her family’s Réveillon. Now a tradition—the only repeat item that Judy has ever made for the holidays—she shares her recipe here. Not only is it beautiful, but all of your guests, regardless of age and pickiness, will appreciate a meat pie. Judy recommends serving it with a simple vinaigrette-dressed salad and follow with holiday baking. Judy has perfected her tourtière, including a cheddar cheese crust and a filling based on a family recipe. This is a multipart recipe that can be broken up into reasonable chunks of labor: the filling and dough can be made separately and in advance; the pie can be assembled and frozen weeks ahead of the holidays and baked an hour before serving. By hand, a pastry blender makes this incredibly easy. If you don’t have a pastry blender, it can be done with a fork. I recommend a pastry blender; it is an inexpensive and useful tool. Measure flour, cheddar cheese and salt into a mixing bowl. Mix together. Sprinkle the butter cubes and lard over the flour. Cut the fat into the flour mixture with a pastry blender or fork until it is the texture of coarse meal and the butter is the size of small peas. Add ice water 1 tablespoon at a time while continuing to cut/mix with the pastry blender or fork until the dough comes together. Pat the dough into a round, wrap in plastic and chill for at least 1 hour. You can make the dough up to 3 days in advance. Filling: Place the pork, beef, onion, garlic, spices and water in a saucepan.

Bring to a boil and simmer until the water is evaporated, roughly 20 minutes. Remove from the heat, add the mashed potato, and cool until you are ready to use, up to two days in advance. Assembly: Remove the dough from the refrigerator and cut in half. With the first half, roll on a floured board to a 12-inch circumference, about 1/8-inch thick.

To transfer to a 9-inch pie plate (Judy used a glass one), gently roll the dough back around the rolling pin. Then unroll the dough over the pie plate. Press the dough gently onto the pie plate. There should be excess dough overhanging all edges. Use the rolling pin to cut the dough at the top of the pie plate, or cut around the pie plate with a knife. Brush the dough with Dijon mustard. Fill the dough with the cooled meat mixture. Roll the remaining dough to a 10-inch circumference, about 1/8-inch thick. Cover the filling with the second crust. Fold the edges of the top crust under the bottom crust and crimp to seal.

Bring us some figgy pudding! Traditional English plum pudding is a holiday delight.

hristmas brings all the usual suspects: fruit trifles, a willpower-testing amount of cookies, and pies—pumpkin, pecan and apple. Lost in the shadows sits plum pudding, quiet and humble. Lacking in popularity, especially on this side of the pond, plum pudding, also known as figgy or Christmas pudding, deserves a revival. Often confused with its wanton cousin fruitcake, plum pudding is without ego and entirely divine. Much like the way it is served—on fire— light needs to be shed upon our Yankee thoughts of plum pudding. The dessert dates back to Medieval England, where the word “plum” referred to dry fruit, and “pudding” simply meant any kind of dessert. Plum pudding contains no plums and is more aptly described as a steamed cake. Its beginnings are rooted in necessity. Unlike today, fats, spices and alcohol were used as preservatives to render food nonperishable at the end of the season. These archaic preservatives were mixed with meats, vegetables and grains and then stuffed into the stomach or intestine casings of animals. As the 16th century came to an end, preservation technology improved, dried fruits became readily available, and plum pudding made the shift from savory necessity to sweet dessert.

True to tradition, plum pudding is served soaked in cognac or brandy and set aflame. It is not uncommon to have a quarter cup or more of alcohol in the cake, which promoted longevity. Plum pudding was typically made four weeks in advance, or the Sunday before INSPIREDHOMEMAGAZINE.COM

Advent, and it lasted up to one year. When I set out to make plum pudding, I quickly realized I was without a pudding mold. Any baking dish sufficiently greased and sugared will do. I used a shaped copper baking dish, which yielded two puddings. If you are without a pudding mold, you simply need to cover your baking dish tightly with greased aluminum foil to achieve the same end result. Plum pudding is baked in “bain marie,” or water bath style, as are custards. My plum pudding steamed for a little more than two hours at 350 degrees. For the “plums” in your pudding, the most popular fruit for the time were prunes, raisins, currents and apricots. Any dried fruit will do. I used the aforementioned in addition to pineapple and cranberries. Nearly as important as the fruit and brandy are the spices. Cinnamon, nutmeg, ginger, clove and allspice play key roles. Adding orange zest and candied fruit peel and pre-soaking dried fruit in cognac or brandy is a tasty benefit. As steeped in history as the dried fruit in cognac, plum pudding is a wildly moist and flavor-intense dessert to add to your holiday repertoire. Full of delightfully sticky fruits, this will leave your guests singing, “Oh, bring us a figgy pudding. Oh, bring us a figgy pudding. Directions Combine the molasses, butter, milk and eggs in a mixing bowl. Next, combine the flour, baking soda, salt, cinnamon and cloves in a large mixing bowl. Add the dry ingredients to the wet ingredients in 3 additions. Toss candied fruit and raisins lightly with flour to prevent sinking and add to batter. Stir in brandy. Pour into a greased and sugared steam pudding mold and place on a rack in a large covered pot with water that comes halfway up the sides of the mold. Cover and steam for 2

s a young girl, the day before Christmas Eve was always one of my favorites, waiting with anticipation for gifts, family and snow forts. Now that I’m older, I look forward to great food. My family is of Italian and Norwegian ancestry, so the holidays give us opportunity to celebrate both cultural traditions. In childhood, my sister and I would help my mother prepare the Christmas Eve Italian feast. We would help with the marinara sauce, shape meatballs, stuff manicotti, taste the cacciatore, and soak

ladyfingers in coffee and Kahlua for our dessert, tiramisu. The meal is always sumptuous, but leftovers get me excited. To me, there are certain dishes that shine the brightest a day or two after they’ve been made—Italian red sauce, soups and desserts like bread pudding that have been soaked in greatness. After the holidays, our fridges and freezers are comfortably plump for days with endless better-tasting meals. The counterpart to Italian Christmas Eve is the Norwegian spread on Christmas Day. There is a Norwegian tradition INSPIREDHOMEMAGAZINE.COM


that combines both my favorite holiday anticipations—the day before Christmas Eve and leftovers. Traditionally, on the day before Christmas Eve, or “Lille Julaften” in Norwegian, families gather to make a large batch of humble rice porridge called risengrøt. An extra portion is served in a bowl for Santa Claus and left out by the family’s barn as a hearty meal before he sets out to deliver gifts to the children of the world. With the risengrøt leftovers, a classic Norwegian Christmas dessert is born: rice pudding or “riskrem.” Deliciously rich whipped cream is folded into the day-old rice porridge, adding volume and yielding a silky, fluffy consistency studded with tender rice grains. Gracing the top of the riskrem is a fresh red berry sauce, “rød saus,” usually made of raspberries. A single blanched almond is hidden in the pudding when served, and the lucky guest who finds it wins a prize of marzipan candy. When I set out to add this to my holiday dessert repertoire, I began with the risengrøt. Do not be fooled. The words “rice porridge” may lead you to thoughts of Little Miss Muffet and Goldilocks. This could not be further from the truth. Risengrøt is delicious and hearty, the perfect dish to warm you after a few hours of cross-country skiing along the river. It is not to be confused with rice pudding or anything purchased at a grocery store deli—overly sweet and gloppy. Risengrøt is commonly eaten for lunch or dinner. Some brazen Norwegians will add a sprinkle of cinnamon, sugar and a dab of butter, but purists enjoy it in its most simple form. As I was making risengrøt, I found that it is essentially the same as making risotto. I gradually added cream to the rice until it became tender, about an hour. The next day, I made whipped cream and folded it gently into the leftover risengrøt. With only 2 tablespoons of sugar, riskrem is slightly sweet and most welcome among the myriad sugary Christmas comrades. For the rød saus, I simply boiled sugar and fresh raspberries and ran it through a very fine sieve. From this point forward on Lille Julaften, I will not only be mincing garlic and chopping basil but also slowly adding cream to rice and making rød saus. We are enveloped in our own family traditions, but I encourage you all to make this Norwegian tradition new again.

Riskrem Ingredients: 2 cups rice porridge 2 tablespoons powdered sugar or to taste 2 teaspoons vanilla sugar or vanilla extract 1½ cups heavy cream ¼ cup toasted almonds, chopped (optional) DIRECTIONS: Whisk the heavy cream with powdered sugar and vanilla sugar/extract in a stand mixer until light and fluffy. In a bowl, fold in the whipped cream with the rice porridge and sprinkle in the almonds. Red Berry Sauce Ingredients: 1 cup water 1 cup sugar 2 cups fresh raspberries (or any berries you prefer) In a medium pot, heat sugar and water and bring to a boil. Whisk until all the sugar has dissolved. Pour the sugar water mixture in a blender or food processor and add the raspberries. Process the mixture until smooth. Risengrøt (rice porridge) Ingredients: 1½ cups white, medium grain rice 3 cups water 5 cups whole milk 2 tablespoons sugar 1 teaspoon salt 2¼ teaspoons vanilla sugar (preferred), or vanilla extract DIRECTIONS: Let rice simmer in water in a heavy pot, covered and stirring occasionally, on low heat until most of the water is absorbed- (approximately 10 minutes) Add a bit of milk (approximately ¼ or of the total milk needed), continuing to add more over the next 45-60 minutes while simmering on low heat. Stir well every five minutes and keep it covered. Add more milk whenever the porridge thickens as the milk absorbs, until rice is nicely tender and porridge is thick and creamy. Add sugar, salt, and vanilla powder; stir well and serve while hot. If vanilla powder is not available, you may use vanilla extract; however, this brown liquid will change the color of the porridge and it will not be as white as it should be. If the porridge gets too thick, add more milk to thin it. Serve in bowls and sprinkle with cinnamon and white sugar, and a dab of butter in the center. Leave leftovers in the refrigerator, and thin with milk when reheating.

BEYOND CHRISTMAS By DAYNA DEL VAL

W

hen I was little, I didn’t realize there were people who didn’t celebrate Christmas. Everyone I knew wrote to Santa Claus; sang songs about angels, what we wanted for Christmas and even baby Jesus in our school Christmas programs; and went to church on Christmas Eve, whether it was Sunday or not. It didn’t help my limited global perspective that the only commercials on television contained Santa, his elves, presents under Christmas tree and grandmas baking star-shaped cookies. It wasn’t until I moved to a larger community when I was 15 that I even met someone who was Jewish. My brothers and I spent Christmas Day playing with the presents Santa had brought; the Jewish boy and his family spent December 25 at the movies. Today, in that same community, there are myriad cultures and religions living together, but I wonder how many of us have made the conscious effort to not just accept but welcome this cultural revolution. Did you know that in the month of December, there are at least 13 global holidays from nine cultures or religions? Christians have two—Saint Nicholas Day and Christmas Day— but there are Muslim, Mexican, Swedish, Jewish, English, African-American, Japanese and pagan holidays during the month as well.

I know at least one person of each of those religions or nations living in my community, but I know virtually nothing about the holidays they celebrate. In many ways, television and radio commercials have hardly changed from when I was little. Yes, the toys are different, but the message is the same: Tell Santa what you want. I can hum along to all the streaming music in every store I enter because it’s all the old Christmas carols I know. Sure, it might be a modern pop star singing “O Holy Night,” but it’s still a traditional Christian carol. I recognize all the decorations as being distinctly Christmassy. I wonder what it’s like to be a child who doesn’t celebrate Christmas in our community. I wonder what it’s like to have your important holidays virtually ignored. I wonder how excluded I would feel to see no sign of my significant cultural or spiritual holidays anywhere. What if we embraced our growing local melting pot and endeavored to learn about the other holidays happening between Thanksgiving and the end of the year? What if we took the time to meet some of the people who celebrate these holidays in our community and found out from them what these holidays mean and how they prepare for them? I challenge you this season to look beyond the toys, wrapping paper, decorations and cookies. Look to the people who live and work with you who maybe aren’t just like you. Get to know them and their traditions. In perhaps the best of ways, that would be the Christmas spirit hard at work.
