Ashley F. Johnson Married mother of an active 5-year-old son and a 3-year-old daughter, Johnson also enjoys her career as an inpatient registered nurse in the heart of Oklahoma City. She is passionate about writing, entertaining, cooking with fresh foods and good wine. She adds, “I love traveling with my husband and look forward to exploring the world together as a family.”

Zainah Haider Ever since she was young, Haider remembers her parents always taking pictures. “They have inspired me to love photography. We get pretty competitive when we travel, and we see who can take the best pictures,” she says. Competition or not, Haider says she will always love photography as an art form.

JoAnn Ohma Ohma has always had a passion for words and how they work together. She loves working behind the scenes at Inspired Home, honing and polishing each story into what you read on the page, all while making sure the author’s voice shines through.

PHIL STAH Stahl began his lifelong passion for all things creative in South Dakota, where time and long landscapes are plentiful. An NDSU architect graduate, with emphasis in art/ photography, his two-decade practice with Stahl Architects has led him places to observe life, including Europe and the Middle East. He is an adjunct lecturer at NDSU, national speaker for Intern Development, a regular contributor to regional and national home magazines, and has been featured on HGTV and in Dwell.

Grace Estes Estes has always found writing compelling. Whether it is as simple as writing a card or writing for a local paper, words have great impact on others. M

y daughter lives in upstate New York, a beautiful wooded area that has been receiving record amounts of snowfall. She recently texted me a picture of turkey tracks she had discovered in the fresh fallen snow on her morning run. Instantly, a smile came to my face as the picture immediately transported me to our backyard when my children were small. After a new snowfall, we would bundle up and go outdoors to look for any fresh animal tracks we could find in the pristine snow. The imaginations ran wild, and before we knew it, we had “identified” some pretty amazing tracks—both real and imagined. Our lives are constantly connecting and intersecting with beautiful patterns and designs—as simple as deer tracks pressed on fresh snowcover to the architecturally ornate cornices of age-old European castles and cathedrals. In this Inspired Home issue, we share with you art, design and architecture on many different levels, from Brad Bachmeier’s “Ostrakinos,” an architectural vessel reminiscent of ancient civilizations, to the lofty designs and artistic principals found in “Captivating Ceilings,” a story showcasing the impressive projects of designer Audrey Newman and Kochmann Brothers Construction. Getting fit. A personal journey of bumps, bruises, determination and humor By Bernie Erickson

T

he scale never lies. So it must be broken. At a friend’s house, I noticed their bathroom scale and tried it. Same thing. Hmm, theirs must be broken, too. Then I tried one of the displays at the Price-Club warehouse. Same result. Time to join a health club. Like every new venture, the first step would involve some wardrobe additions. My trip to the local sporting goods store was an eye- and wallet-opening experience. They now have shoes that do everything but walk on the treadmill by themselves and stop at the grocery store on the way home. I have absolutely no problem spending serious coin on shoes. Once, I almost spent $400 on a pair of blue python shoes, but knew that if I scuffed them, I’d pass out on the spot, and being terrified of snakes, the thought of dead snakes sleeping in a closet 15 feet from my bed would give me bad dreams.

It still gave me pause to spend $225 on ugly shoes that I’d only wear an hour a day, three days a week and would live in a smelly bag in the trunk of my car. But I did. “Go big or go home,” I say. “Anything worth doing is worth doing well,” I say. Well, if I was going to get in better shape, this would require professional help. Enter Guntyr. Guntyr (pronounced “Goon-tar”) was a mountain of muscle and anger. He made The Incredible Hulk seem like Mary Poppins. The first thing Guntyr asked is what I did to hydrate. “Water,” I replied. “Oooooooh,” he said in a hissing tone. “Not good.” “Well, it’s typically a sparkling mineral water, and sometimes I get the ones with fruit flavor and vitamins. I also regularly enjoy a Grey Goose martini with pomegranate and lime, if that helps.” “I don’t care about your gray duck cocktails and your girly water!” he snarled. He then gave me a list of “hydration maximization solutions.” The label implied that after only two of the $8, 8-ounce cans, I’d be on my way to having the physique I never had 30 years ago. Time to determine a training regimen. Guntyr walked me over to a chrome and stainless steel contraption about the size of a car. It had a worn vinyl seat and was full of pulleys and weights and springs and things. “What doesn’t kill you makes you stronger,” went through my mind. He told me to sit down, made some clattering, clanking noise and then ordered me to grab the handles and push up. Nothing happened. He made some more clattering noises and ordered me to try it again. Still nothing. I suggested he try unlocking it. My suggestion was not well received. After about 10 back-and-forth exchanges like this, I finally was able to move the bar up and down four times. Seemed like a lot of fuss to lift 10 pounds. Whatever. Guntyr rolled his eyes and said that INSPIREDHOMEMAGAZINE.COM

maybe we should try some core strength training. This should be a snap. I’m determined, tenacious, generally have a good attitude, see the best in things and persevere in the face of adversity. I thought my core strength was just fine. He meant something like sit-ups. Guntyr started by strapping my ankles to a bench and then elevating it so my feet were higher than my head. Then he got a giant weight and told me to hold it tightly to my chest and sit up. I got dizzy and fainted. When I came to, he was kind of slapping me a little and growling about what a weakling I was and how I should not have let things go so far and I was probably beyond help but he was nonetheless going to try, not so much for me but for him so he could use me as an example of what he could accomplish. If I wanted to spend this kind of time and money with someone who was constantly angry, disappointed in me and yelling, I wouldn’t have let my college sweetheart dump me. “Forget the weights,” he said. “Let’s see if you can handle some cardio,” and over to the elliptical machine we went.

Setting new goals is kind of fun. And a little discomfort for a whole lot of gain is all right.

I’m big on determination but not so much on coordination. We agreed maybe a treadmill might be in order. Guntyr put me on a treadmill, turned on the TV to crime show reruns and hit the start button. It was like that scene in Forrest Gump where Forrest was running down the road and his crutches and braces went flying off the faster he ran. “Run, Bernie, run!” I upped the speed to a brisk walk. I changed the elevation. I gulped hydration maximization solution and positioned a fan to blow my hair back like an Olympic sprinter. And before you knew it, I had 5 miles on the odometer. That was a few months ago, and I’ve managed to stick to the treadmill three days a week. The weight hasn’t really changed, but I like to think the clothes are fitting better, and the cardiac benefits are an added bonus. Setting new goals is kind of fun. And a little discomfort for a whole lot of gain is all right. Here’s hoping each day you find something that inspires you to push a little further.

ince ancient times, extraordinary and magnificent ceiling architecture has created mesmerizing beauty. Famous ceilings such as Michelangelo’s Sistine Chapel in the Vatican, the Great Hall in the Library of Congress in Washington, D.C., Buckingham Palace in London, and Grand Central Terminal in New York City capture attention with their interlocking patterns, impressive arches and columns, spectacular lighting and artistic paintings. Likewise, today’s homes are displaying captivating ceiling designs as well, reminding us that artistic beauty can transform any room into a stunning masterpiece. Ceilings offer height, complementing design and interest while providing the crowning touch to the room. They are among the first things homeowners and guests notice when entering a home. Our eyes naturally gravitate overhead to height and architecturally interesting details. Gone are the days when popcorn ceilings were standard. Instead, striking, artistic ceiling designs are making grand impressions. Whether your style preference is modern, traditional, rustic or urban industrial, there’s a ceiling design to complement your taste and a variety of materials to select from. “Some of the most popular ceiling designs utilize vaulted or raised ceilings, dropped soffits, coffered ceilings, tray or painted ceilings, wood beams, or warm tongue-and-groove woods such as cedar, knotty or clear pine,” notes Darrick Guthmiller of Kochmann Brothers Homes Inc. “Ceiling heights add dimension and create a more expansive and inviting space. he history of doors is long and colorful. They have evolved over time with the changing needs of the people who created them. From primitive doors made of hide or textiles in Mesopotamia to the iconic Georgian Doors of Dublin, Ireland, doors are the all-important welcoming entrance into our homes. The Georgian Doors of Dublin, so named during the English reign of Ireland by King George I to the death of

King George the IV in 1830—the Georgian years—date back to the early 1700s, a period of time when Dublin sloughed off its reputation as a medieval city and embarked on prosperous remodeling of city streets and squares, resulting in the most architecturally advanced city in the British Empire, second only to London. With newfound wealth, Dubliners began to build picturesque Georgian townhomes beyond the crumbling walls

of what was once the medieval town. With the building boom of Georgian townhouses came strict and controlled architectural uniformity overseen by the builders of the time. Though we recognize them today for their cheery colors, Dublin’s Georgian doors were once uniformly painted by builders in extremely neutral shades, resulting in long rows of houses of very similar design. Key to Georgian architectural

design was proportion, including many adherences to the size and positions of windows and doors, recognizable by today’s Georgian-influenced architecture. I recently was fortunate to travel through Ireland with my mother and grandparents and witnessed personally the beauty of the colorful, architectural Dublin doors for myself. The Irish love a good story—and to tell a good story. A local Irishman we met, Barry Gorman, with great animation and a big warm smile, shared with us a favorite local Irish story of how the Doors of Dublin came to be. A local 18th century writer by the name of George Moore lived next door to another writer, Oliver St. John Gogarty, who on too many occasions had one too many pints of Guinness. Gogarty, on his stumbling walks home from the neighborhood pub, would easily confuse the similar neutral-shade doors and would mistakenly enter Moore’s home while he was fast asleep. Finally, after many of Gogarty’s tipsy reoccurrences of entering the wrong home, Moore painted his door green to prevent the drunkard from mistaking the front entrance ever again. As an act of retaliation, Gogarty painted his door bright red—or so the story goes. In truth, to set themselves apart from strict governmental adherences, Dublin residents began painting their doors bright colors of their own choosing. They also added ornate doorknockers, detailed fanlights, and iron boot scrapers—the very recognizable design details you see in new Georgian-style door entrances. Today, we can still draw upon that architectural inspiration of the 18thcentury city of Dublin by adding a brushstroke of color to the faces of our own homes. The front door is a historical and valuable element of design, elegance and a powerful portrayal of what we call home. 36 | March/April 2015

veryone needs to get away. For me, getting away is being alone in my thoughts for a few minutes after work, but with a full house of kids and activities, my personal time is near impossible. making a mess. My wife gently suggested another space, and our discussion turned toward building a studio above our detached single-car garage. Being an architect, I took this as a chance for another creative project. I needed to remove the roof and frame in a second floor, walls, roof, stair and deck to make this studio work. I wanted this studio to look like a renovated barn on the interior. Because Hawley, Minnesota, is my home, I wanted to add a Scandinavian homage to the exterior. A “Loftstugan” is a house structure that has a slightly larger second-floor footprint than the lower level, so I cantilevered the floor out from the lower level. I harvested neighboring dead cottonwood to highlight the deck railing, a nice sun-bleached wood gray to harmonize with the all-white exterior, another cue from Scandia. INSPIREDHOMEMAGAZINE.COM

I saved the existing roof planks to reuse for the ceiling’s interior and loosely cladded the interior with white pine boards to add to the barn haymow style. I wanted an authentic wide-wood plank floor, so I laid Douglas fir with exposed square-cut nails as done a century ago. I stained the floor with red mud from my birth state, Oklahoma, which contains natural iron oxide—rust—a main ingredient in barn paint of yesteryear. I have three main areas in this one-room art studio: a home office for my wife and me, a sofa and chair to sit with family and visitors, and an area for painting. All have a wonderful view to a nature preserve and pond and our backyard—very peaceful. Now my whole family can support my creative endeavors. They smile when they hear, “I’m heading out to the studio.”

ometimes opportunities and timing just seem to fall perfectly in place. That’s what these homeowners experienced when they viewed a 1.25-acre undeveloped steep lot on Franklin Lake that was tucked in a cul-de-sac on a gravel road near Pelican Rapids, Minnesota. Although they never initially planned to build or own a lake home, their Tuscan-style home became a magnificent example of architectural perfection, exquisite workmanship and quality details. The couple met with Dana Tomlinson, Tomlinson & Sons of Detroit Lakes, on the site to discuss building a lake home that would capture stunning,

An autumn color palette, distressed oak flooring, and a stairway with custom-carved wooden newel posts, iron balusters and grapevine detailing enhance the home’s Italian design preference. “We especially enjoy our custom kitchen with its Tuscan charm,” she notes. “It’s where we entertain, cook favorite dishes and spend the majority of our time.” A tiered cherry island is open to dining and great room spaces. Butter-colored custom cabinets, granite countertops Wolf appliances and a candle chandelier create a dynamic kitchen space. A living room, alder bar with granite countertops, and an additional fireplace complete the space. “Shortly after the home’s completion, we were invited to join the homeowners for a delightful evening of marvelous food, complemented by wines selected from their cellar,” Tomlinson reflects. “To have the opportunity to see the home alive was a pleasure and truly rewarding.” Someday, the homeowners hope to visit Italy, where they can sample the flavor and aroma of newly discovered wines. For now, they enjoy morning coffee time, tossing tennis balls for their cherished golden retrievers, and pontoon rides around their scenic lake home. “Our home is located in a private setting with gorgeous seasonal views,” she concludes. “We love the peaceful comforts it offers us.”

It’s just getting better with age By DAYna del Val

allery 4, Ltd., resides on the sunny first floor of the Black Building in downtown Fargo. It has two sets of storefront windows, and the displays are always changing, highlighting the multiple artists whose work is inside. Founded in 1975, Gallery 4 is the oldest co-operated gallery in the nation and has had a long and interesting history. Mosaic artist Kathy Luther has been with the Gallery for 25 years. She says, “A cooperative gallery is a partnership of all the member artists. We each have shared space but also assigned spaces where we can display what and how we want. Each artist works a couple of shifts a month and takes part running the business. We each have our jobs to do. The gallery takes 20 percent commission on work sold, which is very low, but our mission is to provide an outlet for area artists and encourage them in any way we can.”

One of the new ways the Gallery is providing outlets is with the second space they recently acquired, the Made in Fargo shop. In this space, the artists create and sell wares that highlight something that is uniquely Fargo—from ZIP codes to iconic images to names and more. This space not only encourages a fun constraint on the artists, but it also attracts tourists who are looking to purchase something from their time in Fargo. Artist William Damon, who has been with the Gallery since 1995, says, “What I like about being part of Gallery 4 is that I decide how and what I display. Because of the low percentage to the gallery, I can keep my prices reasonable.” Artistic freedom is an important piece of the Gallery’s mission, and it’s clear that they really operate under that premise. In addition to Luther’s mosaics and Damon’s watercolors and photography, metal art,

acrylic and oil paintings, manipulated photography, turned wood, jewelry and more fill the walls and display cases inside the friendly space. “I like the connection a cooperative gives with my partner artists. We get to know each other, help each other and supply expertise and support. I appreciate the way the artists work together for a common cause. I like being around creative people and generally find we work together well! I still remain connected to many of the artists who have been part of this group over the past several decades,” Luther notes. For Luther, Damon and all the other artists, Gallery 4 has been a great fit for the art they make and the way they want to operate their business. It seems likely they are in their forever home inside the Black Building, and all signs point to another 40 years of creating and selling art.

he Greek word for "baked clay" is "ostrakinos," which makes this vessel, titled "Unclassified Ostrakinos" by artist Brad Bachmeier, an extraordinary example of utilizing a global study of ancient cultures, religions and ceramics to create complex contemporary pieces. Bachmeier currently serves as the professor of art education at Minnesota State University Moorhead. magine drinking tea with a Turkish welder, eating authentic pizza crafted by a German man and conversing with a South African film director. Then try to imagine a 25-day excursion traveling with a friend through Greece and Turkey with no plan but to capture the real and intimate details of your surroundings. That is exactly what Zach Davis did. Zach grew up part of a family of six from Dickinson, North Dakota, and his love for travel consisted mainly of camping trips—a lot of Davis family camping trips. With their camper ready to go at any time, they traveled from state to state but never ventured out of the country. It wasn’t until Davis’ second semester at Concordia College in Moorhead that he made a decision to venture and study abroad in Argentina. Davis did not realize his decision to study abroad would not only open his eyes to the vast world but that it would also alter the course of his career. With the cheapest “high quality” camera he could afford, Davis began to take picture after picture and quickly fell in love with travel and photography. INSPIRED HOME | 65

Upon returning from Argentina with his new interest ignited, he decided to take time off from school to learn more about photography. He started to live and breathe it. “I just read, read, read and shot, shot, shot,” says Davis. With a motivation so fervent, he feels he absorbed and condensed six years of photography education into a few years. Armed with new knowledge, he began to hone his photography skills through travel. Though it was exciting to have an abundance of photos from each trip, it was also overwhelming. “There were too many photos, and I wasn’t sure what to do with them. They had no theme or story,” he says. This somewhat casual thought inspired him to change the way he traveled and the way he used his camera. In May 2013, he took off for a 25-day trip to Greece and Turkey, with Athens being the end goal. He had neither itinerary nor rough plan on how to get to Athens, taking it one day at a time, seeking out photo opportunities. One of his first experiences developed in Istanbul as he was walking past a storefront. As Davis passed by, he noticed sparks flying and someone welding. Casually, he took out his camera and shot a few photos. Just as he was walking away, the welder starting shouting to Davis, “Do you want some tea?” Davis, not having much on his itinerary, said yes. The welder, named Murat, set up a table with hot water, cookies and crackers as he shared his life story. This intimate INSPIREDHOMEMAGAZINE.COM

encounter set the theme and tone for the rest of Davis’ trip. Throughout his journeys, he met unforgettable, genuine and expressive people. During a four-day sailboat cruise with 16 passengers, he enjoyed interacting with an eclectic group of Canadians, Germans and Swiss. “It was a really random group, but after a few days, it was a blast, and we felt comfortable with each other,” he says. For the remaining portion of his trip, he stayed in hostels, which Davis believes are among the coolest parts about traveling. “I feel that the U.S. has a weird view of what hostels really are,” adds Davis. Staying in hostels, he was able to make great connections, hear personally from locals what to do and where to go—and perhaps what to avoid. The hostels were an important source of travel information, extremely affordable and easy to find. Through Davis’ travels, he realized the true importance of traveling—that experiences, like photos, are not always postcard perfect. “Seeing the Eiffel Tower is great, but everyone does that,” says Davis. He recommends shying away at times from the standard attractions and opening your eyes to the beauty of the unseen. wenty-two years ago, a fifth-grade student attending Longfellow Elementary School in north Fargo unexpectedly died, and Nathan Nerland lost his best friend. The school, the city of Fargo and the neighborhood of 12-year-old Carson Glore were saddened and grieved the loss of his young life. But common to this community, tragedy and loss were met with love and action. The Carson Glore Foundation was created by Nerland, chief creative officer, with the support of his parents and two siblings in honor of his best friend. Nerland, now living in the Twin Cities, builds schools and creates educational opportunities for rural communities in Kenya through his foundation. Nerland’s mother, Nancy Nerland, owner of Moxie Java in downtown Fargo and Moorhead, explains, “The two boys always dreamed of being elementary school teachers so they could have classrooms next to each other and stay friends for the rest of their lives. Nathan has stayed close to the Glore family throughout the past 20 years and felt compelled to carry on a legacy that would connect Carson with education.” Upon returning from an African safari, inspiration struck. There was a big need for structured education in rural Africa,

so Nathan Nerland began saving money and partnered with a nonprofit called Build Africa. With their help, he made plans to rebuild and provide amenities for classrooms. After he told his family and the Glores of his plans, they were eager to help. Together, they raised $38,000 in 82 days, providing water systems, new latrines, desks, backpacks and school supplies. The mother-andson duo attended the opening of the new classrooms and felt their work was not yet done. In the three years following the start-up of the Carson Glore Foundation, they have raised $250,000, completed two schools for more than 800 students, and have broken ground on a third. If we can educate the next leader in Kenya, let’s do that.” Their vision of creating hope via a structured educational system is taking place one school at a time—one school every 18 months, to be exact, with a future goal of building a new school every 12 months. any of us have experienced the following scenario: You’ve had a long day at work and can’t wait to get inside and put your feet up. You are about to enter your home, grocery bags in hand, completely aware that your kitty is on the other side of the threshold awaiting the moment you turn the doorknob. You knowingly pull the door open just enough to squeeze yourself and your bags into the house. First your left foot pushes in…then carefully your upper body…then quickly bring your right foot through the door and pull it shut. They love to be outdoors, to hunt, prance and play as they were designed to do. All of these are wonderful feline characteristics, but keeping indoor cats in can be at times a challenge. Josh Smook, project designer for Deckmasters in Fargo, recently worked on an outdoor project that not only solves this conundrum but also creates endless possibilities in the way of pet-friendly indoor/outdoor deck designs. Smook constructed a “pet gazebo,” complete with a literal catwalk that allows a West Fargo family’s feline friends to come and go as they please. Although

the pet gazebo hasn’t yet become a common household feature, it is gaining popularity. Smook explains, “Animals are no longer seen as ‘just for work,’ i.e. farming, ranching, etc. Regardless of what kind of pet it may be, they are becoming more like family members. People are going to all lengths to make their pets happy, which in turn makes them happy as well.” The pet gazebo designed by Smook is fully screened in and provides pets access to the outdoor deck space whenever they want to explore. The catwalk allows a screened-in route to meander throughout different areas of the deck space and ultimately back inside the house. The cats can get up to the second level of the gazebo by climbing up knickknack-

inspired toy blocks. They can perch, play and see the world from new heights. These spaces are usable in the evenings by families as well as their pets. LED lighting helps ensure the cats’ safety should their infamous night vision fail them and gives their human family an added sense of security. When it comes to design ideas, the sky’s the limit. Dogs, cats and other pets could each have a special place in our backyards with a little imagination. “If pet lovers are interested in getting more involved with their pets’ lives and enriching both, I would recommend they visit our showroom,” says Smook. “It is a matter of what you would like to see created for yourself, your pets and your family. We’ll take care of figuring out how to take that idea and make a design that’s clean and luxurious.” It took two weeks for this particular project to be completed. Time, of course, varies depending upon the amenities and how elaborate one’s imagination might be. The miles our pets put on their paws can influence their pain and activity levels. Years ago, there may not have been many options in the way of treatment or comfort for this phase of our pets’ lives, but that is changing. Deborah Hemstad has been a licensed veterinary technician for 17 years and is also a certified canine massage therapist. Hemstad, formerly of Minot, North Dakota, lives in Fargo with her husband and three boys and owns Canine Care Center. She specializes in canine massage and cold laser therapy (CLT). Both of these services are designed to relieve dogs of joint pain and muscle pain and relieve stress on aging or overused bodies. Hemstad suffered from carpal tunnel and began to use the light therapy equipment on herself to get a better understanding of the treatment. After feeling relief for the first time

W

hile austere can mean solemn, plain, frugal and even severe, it also means simple and economical. In the case of fennel, the subtle flavor and usefulness of all of the plant lend me to think it austere and a nice entrée into spring—asceticism before the easier pleasures of asparagus, fiddlehead ferns and pea shoots. I have balked at the $3–$4-perpound price before remembering that one fennel bulb can contribute more than enough flavor to a week’s menus. The yellow umbrella-like flowers of the fennel plant are edible and complement almost any recipe with a subtle anise flavor.

For the easiest preparation, I shave the bulb very thinly using a Benriner, a cheap, sharp, Japanese-style mandolin. The paperthin curls or cross-sections, depending on how you slice them, add a delicate licorice flavor to spicy arugula or other tender greens and are perfectly finished with a few gratings of an aged Italian cheese, a splash of lemon juice and olive oil. This salad is also good atop a thin-crust pizza or freshly toasted naan. An additional 15 minutes in the kitchen will grant you roasted fennel. Start by trimming the outermost and any damaged layers off the bulb as well as the root end. Then cut into wedges, toss with olive oil, sea salt, and some leafy fennel tops before throwing it into a 425-degree oven. Once the fennel starts to brown and crisp on the edges, usually five to seven minutes, it is ready to serve. A stovetop variation caramelizes fennel in a similarly quick manner: add a good pour (1/4 cup) of olive oil to a preheated sauté pan. Once the oil is shimmering and hot, place the fennel slices or wedges into the pan and fry, turning a few times to brown evenly. Either the roasted or caramelized version is a great topping for salad or pizza or for eating out of hand. With the stalks, slice or chop them very finely and add to fresh herb sauces, such as salsa verde, or a soffritto base for soup. It adds interesting depth without overpowering anything else in the mix and is a necessary flavor in many Mediterranean cuisines. If you are lucky enough to find a flowering fennel bulb, which can only happen with garden or farmers market-sourced fennel, use the flowers, too. They are tasty and beautiful strewn across a multitude of dishes, both savory and sweet. Unsurprising to those who know of my pickle love, I like simmering fennel in a hot broth of garlic, lemon, olive oil, wine and vinegar. Fennel à la grecque, despite literally meaning Greek-style, utilizes a French cooking technique from the turn of the last century and offers a simple yet uncommon counterpoint to fish, poultry, pork or even hors d’oeuvres platters of cheese and meats. Once the fennel is eaten, the infused broth is useful as sauce, marinade or vinaigrette. Economy always has a place in the kitchen. INSPIREDHOMEMAGAZINE.COM

Fennel à la Grecque Serves: 4–6 as a side dish INGREDIENTS: 1 cup extra-virgin olive oil cup white wine 1 cup white wine vinegar 1 teaspoon coriander seeds ½ teaspoon whole black peppercorns 1 teaspoon fennel seeds ½ teaspoon dried thyme 2 cloves garlic, peeled and sliced ½ lemon or orange, washed and cut into ¼-inch round slices 3 fennel bulbs, washed, trimmed and stemmed, cut into 12–14 wedges per bulb

DIRECTIONS: In a large saucepan, bring the olive oil, wine and white wine vinegar to a simmer. Add all spices and lemon or orange slices to the pan. Should the exact spices not be available, please substitute with what you have on hand. It truly doesn’t matter as long as you stick to a similar flavor profile. Continue to simmer for an additional 5 minutes. Add the fennel and cook until tender crisp, about 6–8 minutes. When the fennel is done, remove from the poaching liquid and let cool to room temperature. Cool the poaching liquid, either by placing in a larger pot or sink filled with ice water. When both the poaching liquid and fennel are cool, pour the liquid over the fennel and refrigerate. This recipe is best after a day or two and will last at least a week refrigerated. To serve, drain the fennel and plate with some of the lemon or orange slices as a condiment for fish or chicken, cheese or meat platter. It is also good served with fresh bread and a young goat cheese.

annoli were “loved by townspeople, by the middle class and nobles, and desired by rich and poor alike,” wrote Giuseppe Pitre, a 19th-century Sicilian historian. “Cannolo” in Sicilian literally translates to little tube. It is the iconic tubular pastry that has remained a part of Sicilian cuisine for centuries. The dough is made with wine, flour and butter and is filled with sweetened ricotta cheese. The delicacy originated in Palermo, Sicily, during the ninth century while the country was under Arab rule. Upon arriving in Sicily, the Arabs, great pastry artisans, introduced the dessert, spices and sugar cane, changing the course of confectionary history. The stalk of the sugar cane was used to shape the dough into the cannoli’s familiar tube shape. Sicilian confections are deeply connected to ritual celebrations. A round lemon

ricotta cake is still made in the shape of the sun in celebration of Easter and rebirth, signifying the life the sun brings to the farming season. Cannoli is rooted in the Italian Carnival or Carnevale, an early March festival that marks the period prior to Lent, a time to indulge in food and drink before the sacrificial time of Lent. Growing up with both Sicilian and Norwegian ancestry, I experienced a wide array of homemade confections, including cannoli. A highlight of this Sicilian treat was eating the delicacy while bicycling through Italy with my older brother some years ago. On a recent road trip to North Dakota to visit family, time together centered around one thing: food. On my return trip home to upstate New York, I invited my younger brother to be my road companion back home to Geneva. We spent our time cooking, baking and eating the five days we had together, and, of course, cannoli was on our list. I didn’t have a cannoli mold, but my problem-solving little brother crafted one from aluminum foil and a paper towel roll. Although it worked beautifully, I suggest investing in a mold, which ranges in price from $5 to $10. Here is our recipe for cannoli—Buon Appetito! Ingredients: Shells: 2 cups all-purpose flour 1 tablespoon granulated sugar ¼ teaspoon kosher salt 1 tablespoon plus 2 teaspoons unsalted butter, cut into small pieces 1 egg yolk ½ cup dry white wine Filling: 2 cups whole milk ricotta cheese ¾ cup powdered sugar 1 teaspoon ground cinnamon ¼ teaspoon allspice ¼ cup heavy cream 1 lemon or 1 orange 1 quart canola oil, for frying Flour, for rolling 1 egg, lightly beaten, for egg wash Powdered sugar for dusting

Directions: Shell dough: In a medium bowl, sift together the flour, sugar and salt. Work the butter pieces into the flour with your fingers until mixture is coarse and sandy. Add the egg yolk and white wine. Mix until dough is smooth. Refrigerate a few minutes while you make the filling. Filling: In a medium bowl, whisk the ricotta until smooth. Sift in the powdered sugar, cinnamon and allspice. Mix to blend. In a separate bowl (or in the bowl of an electric mixer fitted with the whisk attachment), beat the heavy cream until fairly stiff. Using a rubber spatula, gently fold the cream into the ricotta mixture. Add the zest of 1 orange or lemon. Refrigerate when not using.

Keep an eye on the cannoli as you fry them. I find it takes anywhere from 1–3 minutes, depending on how thin you roll the dough and the temperature of the oil.

surface. Roll dough until very thin, about 1/8-inch thick. Use any glass or small bowl that is 3 to 4 inches in diameter. Cut rounds. Wrap dough circle around a cannoli mold. Use a little of the egg wash on the edge to seal seam. Flare the edges out slightly from the mold. Flaring will allow the oil to penetrate each cannoli shell as they fry. Fry the shell in the oil until crispy, 2 to 3 minutes. Remove from oil, holding the mold in one hand with tongs and gently gripping the shell in your other hand with a kitchen towel. Carefully slide it off the mold. Set aside to cool. To fill the cannoli: Just before serving, use a pastry bag or zip lock bag to pipe the ricotta into the shells. Pipe from both ends until shell is filled. Dust with powdered sugar. Then I like to dip both ends in chocolate chips, pistachios, candied citrus or dried cherries. Enjoy!

grew up going to the Wahpeton, North Dakota, public library with my mom on a weekly basis. The Leach Library was and continues to be a glorious building with dramatic front steps, big, imposing windows and dark, solid wooden shelves filled with row upon row of dusty books; that space had a kind of grandeur that never ceased to amaze me, no matter how many times I went in. The smell of aging paper, the sunlight filtering through the dust motes, the infinite rows of books, the massive card catalog waiting to be rifled through, the wooden tree in the children’s section that invited a long sit-down to page through potential books—all of it was a wonderful sensory experience every single time. There’s something about the architecture of libraries that is almost as big a draw to me as the books waiting inside. In an era of often very utilitarian architecture, public libraries still seem to have an aesthetic design that makes them inviting and imposing at the same time. Aging Carnegie libraries are often illequipped to manage the current technology needs of today’s library population, but they offer the grace and beauty that is so rarely seen in any American architecture. Contemporary libraries have thoughtful spaces for engagement based on ages and

desires. They are bright and open and bring a kind of quiet riot to their design and use of space. Perhaps it’s that architects of libraries know that these spaces require a kind of hushed reverence that is not really required of any other spaces anymore. Perhaps it is that they hold the weight of knowledge, passion, inquiry and answers to all our burning questions in their design. Of course, today, our burning questions can be answered on our smartphones, but those answers don’t hold the appeal of going to the library and finding the answer through a catalog search and a long walk down the numbered aisle, looking for that perfect letter and number combination that will lead to the answer inside the pages of that particular book. Perhaps the key to libraries is that their architecture invites that inquisitive mind at any age to come inside and embrace the known and unknown, the sought after and the happened upon. I marvel every time I enter a library; I pause to consider the design elements that went into creating a space that is open to all, young and old, rich and poor, literate and illiterate. Every person’s experience inside the walls of the library matters and has value, and the architecture is as relevant to that experience as the wonders inside. INSPIREDHOMEMAGAZINE.COM
