Brilliant red cardinals, seemingly unharried or bothered by the cold, have been singing to me daily since early March, as if to reassure me of what they already know—a season of warmth is approaching. This May/June Inspired Home issue, much like those cardinals, will banish your warmweather doubts and will confirm what we already know—spring is here and summer is close behind. Soon area homeowners will be busying themselves with a multitude of home projects that truly signal the warmweather season. Jill ockhArDt BlAuFuss Photographing people, businesses, homes and families, Jill Ockhardt Blaufuss places an emphasis on creating technically flawless images, and capturing the spirit, character and emotion of the people and places she photographs. With a background in both photojournalism and video production, Jill also enjoys documentary style video creation for businesses and

lAuren F. cArlson Carlson, a Fargo native and geologist, is a research assistant at Cornell University at the New York Agricultural Experiment Station, where she conducts field work and data collection for the study of shrub willow as bio mass. She enjoys cooking, baking, running, renaissance art and writing. BAiley hovlAnD As an English writing major at Concordia College, Hovland is passionate about writing and social media. "Blending my obsession for interior design with writing and scrolling through the endless feed of tweets, pins, and Instagram posts is my idea of 'living the dream,'" she says. Hovland enjoys reading, coffee shops, DIY projects and working out.

ZAinAh hAiDer Ever since she was young, Haider remembers her parents always taking pictures. “They have inspired me to love photography. We get pretty competitive when we travel, and we see who can take the best pictures,” she says. Competition or not, Haider says she will always love photography as an art form. ZAch DAvis Davis loves capturing stories with his camera. He is a photographer and videographer who specializes in weddings and portraits. He has a weakness for wanderlust, feeling the urge to leave the country whenever possible. He currently curates The Open Window Exchange, a collaborative online travel journal. After a rather long winter, adding nature’s greens to our indoor spaces is definitely a step in the right direction for prepping weary spirits for spring. To accomplish this burst of spring in you own home, I found an easy and cost-effective way to do just that -- growing wheat grass. As a farmer’s daughter, I know from experience how quickly wheat berries germinate and grow when kept moist. The following directions will prove it! These simple steps will bring a colorful lift to your home and your children will love helping you grow the wheat grass. It’s also a great project for them to witness firsthand photosynthesis,

sprouting and developing root systems, right out of an Earth science textbook. Besides the satisfaction and beauty of raising your own wheat grass, even better reasons are the health benefits. Totally edible, the juiced grass contains all minerals known to man such as vitamins A, B-complex, C, E and K. Extremely rich in protein, it also contains 17 amino acids, the building blocks of protein. The nutrient-laden green juice contains up to 70 percent chlorophyll, essential for building blood. Drink it alone or combine it with your favorite juices for a healthy start to your day. Your dog and cats will enjoy the health benefits from eating wheat grass, too! Let’s get started!

Growing Wheat Grass Hard red wheat, the type you use for making bread, works great. Hard wheat or soft wheat will produce the same results. You may purchase bulk wheat berries from your grocery or health food store right here locally. A 2 lb. bag of organic hard red wheat from Tochi products costs under $3.00, making this project not only beautiful but inexpensive too!

In the morning, strain and rinse the wheat.

Collect whatever trays, pots or bowls you choose. Get creative! Teacups, wine glasses or sherbet dishes work nicely for a special dinner table setting. Window boxes filled with nature’s greenery looks great on a kitchen island. If the containers do not have drainage holes, gather small rocks or pebbles and place in the bottom.

4.

Add potting soil mix on top of the layer of rocks, filling to within 1 inch of the top of pot. As the grains sprout and grow, the soil will naturally be pushed upward.

5.

To insure a thick green stand, add a generous layer of wheat berries, about a quarter of an inch. Gently tap down.

6.

The key to germination is keeping the grains moist. Cover with plastic wrap and mist 1-2 times per day. Keep in low light. By day 3 or 4 you will begin to notice small sprouts. Remove plastic once green blades begin to emerge. Move to bright light and continue to mist.

The history of this lodge began down on the farmlands, which are easily viewed from the Great Room’s windows. Back in the 1920s and 1930s, Clarence Breker and Adeline Syverson grew up on nearby farms just a few miles from each other. Many years later, they were introduced and began dating. Love bloomed on the prairies as Clarence worked as a farm laborer to save for a wedding ring for his sweetheart. The

IH: This decking material captures the exact beauty of hardwood. How is this achieved? ZURI: There is a proprietary aspect of how the product is made. But basically, it’s a realistic woodgrain film that duplicates the look of exotic hardwoods, like ipe (pronounced EE-pay), applied to our PVC substrate. Then a topcoat with exceptional resistance to UV light and color fade is applied. IH: How did you determine what type of hardwoods you wanted to replicate? ZURI: Ipe was definitely the competitive reference. We knew we had a premium product and matching the look of exotic hardwoods, like ipe, without annual maintenance headaches was exactly what we set out to achieve. INSPIREDHOMEMAGAZINE.COM


IH: What are the reasons ZURI stands in a class by itself ? ZURI: The look is unmatched by anything else on the market. It clearly stands out as a beautiful, impressive-looking finished product. Another appealing aspect is how the Zuri deck transitions nicely into areas of the home where the interior opens up into exterior areas. IH: North Dakota winters can be harsh. Will ZURI stand the test of time? ZURI: It will, and homeowners will find the clean up and maintenance of Zuri decking much easier than other composite or wood options. Use care when using a metal snow shovel on the deck, it will scratch. Using salt to reduce icy conditions is fine. Salt, at the end of the winter season, can leave a film but is easily washed off with water. IH: Besides decking, are there other applications ZURI is used for? ZURI: Because of its beautiful look, deck and outdoor living space designers are finding other applications for Zuri besides decking. We are seeing it installed on walls, ceilings and benches or seating areas built into Zuri decks. IH: Does this product need special care in any way? ZURI: The thing to stress to homeowners is to avoid the use of rubber or plastic mats on the deck. These have plasticizers in them that can, especially in high-heat conditions, react to the deck, leaving a gray film that cannot be removed. It’s best to use natural fiber rugs or mats to avoid this problem. Common items like ketchup, wine, mustard, etc., that permanently stain other materials, wash out on Zuri if they are cleaned and not left to sit an extended period of time.

esting upon the picturesque shores of Pelican Lake, one family’s home paints a remarkable silhouette that is both architecturally pleasing to the eye as well as comfortable and welcoming. The homeowners desired a one-level lake home big enough for family to share the space, while enjoying the tranquility of magnificent views. When the homeowners reached out to Tony Stoll, AIA principal architect at bhh Partners, Planners / Architects, they visited about creating an open-living floor plan. One key element they requested was a four-season porch and bar area that easily transitioned to the outdoors, a space for family and entertaining. “The homeowners were easy-going and wonderful to work with,” Stoll recalls. “Even though they initially came to us with traditional preferences, the overall concept evolved as they came back to the team to secure a more modern design.”

From the entrance, this modern lake home boasts incredible views of Pelican lake. The great room features soaring ceilings and a custom metal fireplace with a metal bench that cleverly conceals firewood.

Furnishings reveal the desire for comfortable lake living with a beach feel, as metal accent pieces, elements of driftwood and vases of lakeside grasses combine beautifully to accomplish this.

Stoll worked closely with builder, Scott Stengrim, S & S Construction, and a talented team of skilled craftsmen to implement the homeowner’s changes and requests. Eric and Tami Soyring, owners of Straightline Design, also played a key role in transitioning the interior finishes and furnishings to enhance the modern design scheme while complementing the home’s exterior presence. Finished in the spring of 2017, the final plan portrayed a stunning and spacious 4,734-square-foot home with four bedroom suites for family and guests. “We positioned the guest bedrooms on the backside of the garage in order to maximize views, allowing entrance views to focus past main living areas to the lake,” Stoll adds. “This required

intentionally elongating the footprint of the home.” A chiseled-edge, granite-topped bar beneath a natural, wood-antiqued, coffered ceiling became a favorite gathering spot and “man cave” for the boys with easily-maintained slate flooring and live-edge walnut shelving. Warm maple flooring throughout main living areas anchors striking interior design, marked by the kitchen’s charcoal-stained cabinetry, white quartz countertops, luminous tile backsplash and the home’s unique light fixtures. Many of the furnishings showcase architectural metals crafted to perfection

by Eric of Straightline Design, as shown in: the soaring custom metal fireplace with limestone hearth/surround and stacked stone walls; a stylish kitchen range hood; clever firewood holder; open bar shelves and window details; and stately exterior pillars. An interesting mix of exterior components merges stucco and stone, metal shroud around the chimney top and natural wood at the home’s entrance. “Our goal was to marry a beach feel with a comfortable, modern look,” notes interior designer Tami of Straightline Design. “Utilizing a variety of distinctive finishes and furniture pieces, we were able to successfully achieve

a clean design scheme with functional spaces throughout their home.� Wonderful window views from the master bedroom and a serene color palette enhance this spacious retreat. A private walk-in shower is easy to clean, while floating vanities, highlighted by wood accent walls and a generous soaking tub, create a luxurious master bath area. An imaginative display of family-treasured photographs is a focal point in the hallway which leads to the

bedrooms. Soft shades of blue and gray were selected to decorate the guest bedroom suites, leaving family and guests feeling right at home. Modern, tranquil and comfortable, the homeowners enjoy absolutely every aspect and beautiful detail of their lake home. In the end, this traditionalturned-modern design fashioned the perfect casual gathering place for their family, a legacy for generations to come.

Design Thoughts We had a wonderful time working on this project with the homeowners! Tony and his talented team made this project even more fun. We have worked on other projects with the family, so the homeowners basically handed the reigns over and trusted us to make their vision come to life (all the while keeping a watchful eye on things of course). This is a lake home, so the goal was to make it a fun and comfortable summer retreat for the entire family. As we observed the family's relationship and dynamics, we realized it should be a comfortable place for all seasons. We are so excited with the end result and feel we were able to achieve a clean, comfortable, functional, and stylish space. This project truly was an absolute pleasure to be a part of!

Every village was home to gracious people who centered their communities around family and generosity towards “thy neighbor,” whether a relative or those with Servant Heart Ministries. This struck a chord with Hope, who said, “The bottom line is that we wanted to give back to people and to love them.” The community’s embrace affirmed her feelings that she and her fellow travelers had “left receiving more than we given.” It has been nearly a year since their nineday trip to Tanzania. They still reflect on their time on the Serengeti, thinking about people they met and the glorious ecosystem of the shortgrass plains. Back in the United States, Dagoberg has resumed her life as a successful business owner caring for animals. As an excited expectant mother, soon to bring twins into this world, she plans on teaching them to value service to others. In time, Hope says she’ll seek another opportunity to serve on a far-away unbroken horizon thousands of miles from home. 66 | May/June 2018

t seems we’re completely incapable of doing things like normal people. Around here, when someone decides the time is right to buy a vacation home, they head to ‘the lake’ and start looking. There’s a whole ‘lake’ culture, with every weekend from mid-May to mid-September focused on ‘the lake.’ “Are you going to ‘the lake’ this weekend? We are!” “Why yes, we’re leaving for ‘the lake’ at noon on Thursday and not returning until Monday night!” Even people that don’t have a place at ‘the lake’ still go to ‘the lake’ every weekend. “Sorry I’ll miss your wedding, but we’re invited to ‘the lake’ this weekend.”

“Not to worry, we’re going to ‘the lake’ for our honeymoon and might even see you there!” There’s literally thousands of lakes in this part of the country, all fondly known as ‘the lake’ Since buying a home at ‘the lake’ is what normal people do when circumstances allow, it stands to reason we’d be looking to do something different. Rather than be a convenient 45-minute car ride from home, we thought it would be fun to find a place at ‘the beach.’ Not to be confused with ‘the lake.’ And because property at ‘the beach’ in the US is a little pricey, we decided to check out Costa Rica. Since we both like to share every single bit of minutia of our daily lives with anyone willing to voluntarily endure, we thought it would be fun to have our home shopping experience documented by that popular cable-television show HGTV's "House Hunters International" It’s a show where people from the US shop for homes in exotic locations, then tell the story of how their purchase did or maybe

did not come to be. In March 2017 we snooped around on-line, filled out several forms, sent them off to HGTV's "House Hunters International" then left for Costa Rica to check things out. We came home, and kind of forgot about the application. Clearly, our goals and budget didn’t fit into the "House Hunters International" vision for the 2017 – 2018

broadcast season. By this time, we’d decided the Pacific Coast of Costa Rica is where we wanted to be. In May we got a letter from a New York production company. They’d like to ask us a few more questions and schedule us for a video-chat interview. Things started to suddenly get very real. More forms, more video interviews. More

Here, HGTV is interviewing Bernie and David about the home they just finished touring. They loved the home; but no beach front, no deal.

forms, and then some more video interviews. And then more waiting. In late May of 2017, the production company had proposed their idea for telling our story to the network. In June the network indicated they liked what they heard and we were invited to submit a video of us at our current home in Fargo, along with very specific description of what was important to us in a beach home in Costa Rica. Being a crazy fan of HGTV's "House Hunters International" I knew they liked interesting characters and plenty of conflict and unrealistic buyer expectations in the stories they tell. How better to come off as quirky and interesting than to record our network introduction dangling our feet in our pool and sipping cocktails? While wearing winter parkas and complaining about the brutal winters in ND!

It seems they liked what they saw. 4 weeks later, the contracts were signed, travel arrangements made, and we were ready to begin sharing our "House Hunters International" experience.

The surprisingly small 3-person crew spent one day filming here in Fargo; and then a week later we met in Costa Rica for 4 more days of filming our "House Hunters International" experience.

Realtor Andy worked in both development and sales in Playa Hermosa, Costa Rica and wife and business partner Ava was a no-nonsense professional who knew the market inside and out. Exactly who we needed to help us achieve our goals! I’m extremely easy to please: I wanted a move-in ready home with direct beach access reasonably within our budget. That’s all. I was gently informed by everyone on the planet our budget barely allowed us to consider a town somewhat near the beach, let alone on the beach. Perhaps it would be better to have a bit more realistic expectations. There’s the drama and conflict they were looking for. I didn’t come here to buy a home in the jungle, I came to buy a home at the beach. Having options with okay kitchens and green space was nice, but that’s not what I had in mind.

Did I mention I came here to buy a home at the beach? Not one in the rain forest. Andy and Ava put together some wonderful options for us; each property offering some, but not all the priorities on our list. We spent Monday filming at home 1, Tuesday at home 2, Wednesday at home 3

and Thursday filming regional activities. I wanted to go jet-skiing. The network’s legal department didn’t like that so much and arranged a zip-line and wild life sanctuary excursion instead. The weather mostly cooperated, everyone was confident that somewhere in the 30+

hours of video, the editors would be able to put together a reasonable interpretation of our "House Hunters International" and come up with 21 minutes of television content. And they did. Almost 6 months to the day after we all left Costa Rica, our story aired on the cable network. They captured some of my snarky comments and eye rolls about things I couldn’t possibly endure in our new home. They captured David’s gentle, yet firm insistence we stick to budget, have realistic expectations, and thoughtfully consider all options, including a home in the rain forest. What didn’t make the final cut? A party scene from the backyard of our home in Fargo, our grandkids splashing in the pool, and a scene of us chatting with the barkeep at one of our favorite Fargo restaurants on the eve of our departure for the home shopping experience in Costa Rica. Nor did much of our time at the wildlife sanctuary or the party scene at our home celebrating with our new-found friends. We’ve been there 6 times in the year we decided to buy our home and love it more each time. The weather is beautiful, the people laid-back and relaxed, and the Pacific Coast at Playa Hermosa, Guanacaste Costa Rica is everything we dreamed it could be. Which home did we buy? he snow is but a memory; the birds are chirping and the sunshine is once again bringing the Earth to life. With the warm weather settling into the Plains, the long summer days stretch out before us, giving way to long weekends and summer vacations for the whole family. But wait! What about your pet? How do you know when you should pack up the dog dishes and bring your furry family member along for the ride, or when it’s best to leave them at home in someone’s loving care? Vacations can mean just about anything, depending on who you’re asking — from a long weekend at the lake, a flight to the other side of the world 76 | May/June 2018

or maybe a trip across the United States in an RV. Whatever drives you, we wanted to find out if it’s best to bring Brutus along for the journey, too. We reached out to Dr. Amy Anderson, lover of all things furry, and veterinarian at the West Fargo Animal Hospital, to get some travel tips for your family pet. There are many things that need to be considered when deciding if your pet will be compatible with your vacay. The first thing to think about is your pet’s personality. “If your pet tends to become anxious in new surroundings or with new people, then letting them stay home is probably a good choice. Alternatively, if your pet is very social, well trained and well mannered, then traveling might be great fun for them,” Dr. Anderson explains. Just like people, pets may do well in some situations and not others. If you know your pet becomes extremely anxious in the car, a long road trip or air travel with your pet may not be the best idea. If your pet is a traveling veteran and excited by long road trips, there are some things to consider. First, make sure they are comfortable. Dr. Anderson says many pets prefer to be in a kennel while they travel, as they often feel more secure in a smaller space versus riding in a seat. She also suggests using anti-anxiety tools such as “Thundervests” or calming pheromones (Adaptil for dogs or Feliway for cats). It is also particularly useful to bring some familiar objects along from home on your trip to help them feel more comfortable and safe. “Their favorite blanket or bed, a toy and treats are helpful. You may even want to bring their food and water bowls from home, along with bottled water or a container of water for them to drink.” Dr. Anderson says this last tip is especially helpful. We all know, tap water can taste very different from place to place, and even the

Dr. Anderson warns that drastic climate changes can be stressful or even harmful depending on the situation and your animal. “If you have a brachycephalic breed (those with a short nose such as pugs or bulldogs) and are planning to go somewhere that is much warmer and more humid than their usual climate, I would not recommend bringing them along.” She says that hot weather and humidity can be hard on such breeds even when they are acclimated, and sudden drastic swings in temperatures (warm to cold and vice versa) can cause unnecessary health issues with your pet. If you are traveling to another country with your dog or cat it is important to be familiar with any potential health hazards for your animal. Be mindful of toxic plants, animals or infectious organisms that you may come in contact with. Research your upcoming travel destination so you are not caught unaware! Always speak with your veterinarian to find out what is best for your pet. If long flights or major disruptions to your pet’s activities of daily living are involved, consider you pet’s comfort. It may be best to leave your pet with a trusted family member or boarder. If Fido is game for summer travel and up for new adventures, remember to pack your pet’s medical history and including immunization records. Oh, two more things … have a great vacation and don’t forget your camera!

am asking you to show kindness for what I am about to say. I hate spring, though that’s not entirely true. I love that we are going to eventually experience nature’s rebirth. There are tulips, ramps and baby lambs; that is all great. It’s the transition I hate. Autumn is precise; the leaves turn, pumpkins adorn our front steps and we await the first snowfall. It’s orderly. Roast turkey, sweet potatoes and pie — you can count on autumn. There is no smell to winter, unlike the warm comforting aroma of smoldering leaves in the fall. Spring is mud and slush. As the sun pushes back the snow in a slow creep like glaciers melting, it reveals our sodden partially leftover greenish grass as we slog through it all. Unlike autumn, we never know when to really rejoice in the fact that winter is over. Winter plays by much harsher, looser rules

than autumn. Spring suffers under winter’s grip until it decides it’s time to let the calendar take its course and move on. And when spring is really sprung, it is glorious whether in April or at the worst in May. This is the bridge season for local foods. Autumn, unlike spring, has farmers markets abundant with all sorts of fresh produce. Spring is so finicky that our abundance of fresh produce comes just ahead of Alaska’s. As the days get longer and the ground warms, releasing its musky aroma, we eventually get our hands in the soil. We’ll plant our seeds and patiently wait for what nature has promised us for months — garden fresh, chemical-free, natural food. Spring is also the time we shed layers of cloaking winter garb to become just a touch more vane about our girth and other areas of

our God-given bodies that we have neglected over the long winter. Time to get lake-ready. For those of you fortunate enough to sneak off to the Bahamas or Cancun thinking you looked great by the pool, keep in mind nobody there knew you. I saw some robins the other day, which is a positive sign, and other migratory birds are flocking back. Awakening to their happy singing as the sun streams through the blinds is a very pleasant way to wake up. Freshly brewed coffee, a bowl of yogurt topped with fresh berries and I am set to go. With our global food market, we don’t have the true seasonality of foods as we once did. Berries and tomatoes are available year-round but neither compare to garden fresh. I get excited for elusive ramps, wild asparagus, fresh peas and foraged mushrooms.

Add to that green garlic and spring onions and you can already see dishes “springing” to mind. A favorite is risotto with morels, asparagus, lemon and Parmesan or a ragout of wild mushrooms with green garlic, sherry and cream. I love freshly shelled peas mashed with olive oil, garlic and lemon spread on crusty French bread with some tangy ricotta cheese. Morel mushrooms are the kings of the woods come spring and greatly sought after. Their earthy aroma adds a complex meaty flavor to dishes pairing well with chicken and veal. The honeycombed outer surface clings to sauces and the texture is chewy. For most people who dislike mushrooms, they do like morels for their unique flavor and texture. Morels and pasta dishes are a match made in heaven and need little more than some butter and some heavy cream, a grating of fresh Parmesan and spring has officially sprung. The other most sought-after item is ramps — this true nugget of spring is pure gold. Contrary to popular belief, it is not a wild leek but has a wonderful mild onion and pungent garlic flavor. Grill them whole or sauté in some good olive oil with a sprinkling of sea salt and let them sing the song of spring. Like morels, they are expensive and have a short season, which is what drives the expense as does their elusiveness. Both morels and ramps will appear in the woods of Minnesota and wooden areas in Eastern North Dakota. I do not recommend mushroom foraging without proper knowledge of what you are picking, so go prepared.

Asparagus and Morel Risotto with Lemon & Parmesan

INGREDIENTS 2

tablespoons clarified butter plus 2 tablespoons

½

cup chopped red onion

1.5 quarts chicken stock 1 ½ cups Arborio rice Zest & juice of one lemon 1

cup dry white wine

cups asparagus blanched, tips whole and stalks cut into ½ long pieces

4 morels, cleaned and sliced crossways ¼

cup fresh basil sliced

Kosher salt and fresh black pepper to taste

tablespoons unsalted butter, cut into small pieces

cup freshly grated Parmesan

METHOD: Heat chicken stock and keep on warm. In a heavy 6-quart stockpot, sauté onion in clarified butter and oil until soft but

not browned. Add rice and coat in the oil and butter, cooking until fragrant, 2 minutes. Add 1 cup of stock and the wine, stir in well, increase heat and stir clockwise continuously. As the stock gets absorbed, add more stock slowly, continuing to stir. The rice will start to release its starch making it creamy. Keep adding stock one ladle at a time, until it has all been absorbed. The risotto should be slightly loose, not thick. Stir in lemon juice and zest. Fold in morels and asparagus. Season with salt and pepper, and check seasoning. When warmed through, stir in butter one piece at a time until incorporated, fold in basil and half the cheese. Serve in large bowls and sprinkle remaining cheese on top. Offer extra cheese, if desired, at the table. Enjoy your risotto with a crisp Pinot Grigio, Sauvignon Blanc or Dry Rose Champagne. Spring — isn’t it a grand time of year!

it’s Christmas, Easter or a Thursday afternoon. First, make the candied orange peels. This really has to do with the Norwegian love of exotic oranges and not wasting a bit! The recipe suggests making them one or two in advance, which gives them time to dry out. I did not do this, and I don’t think you have to either, unless it helps you cut down on time. The original recipe noted candied orange peels tend to burn if you don’t tuck them into the dough. Because I made them the same day, I did not have this problem. The orange peel was sweet, chewy and perfect. The process is very

simple; and a quick note: Save the orange syrup when you are finished. You can use it in a cocktail or brush it over a pound cake. It will keep in the fridge for about four weeks. The dough calls for both whole wheat and all-purpose flour. I was a little hesitant because whole-wheat flour tends to make things a bit dense, but here it offers great texture and hearty richness. Realize this recipe makes two 10- to 12-inch wreathes, so it’s a lot of flour! I was worried that it wouldn’t fit in my stand mixer bowl, but it certainly did (I have a 12-cup/96-ounce bowl).

few months ago, I set a goal to make a yeasted bread per week. Recipes have ranged from rich, eggy challah woven into beautiful shapes to a simple honey loaf perfect with a shmear of softened butter. Without a doubt, flettekrans, or “braided wreath” in Norwegian, has become my favorite. I made it for the first time a month ago, and since then six more times — even twice in one week! I brought one to work (twice). My greatest compliment came from a Swedish broccoli breeder who, after tasting it, said it reminded him of his home in Sweden. Flettekrans make their appearance in the spring, around Easter, in Norway. Their signature trademarks are delicious swirls of chocolate and cardamom punctuated by sweet, chewy bites of candied orange peel. Oranges have been in Norwegian kitchens for more than 100 years when they were first imported. In 1956, oranges and other citrus fruits were classified as a free import from the Mediterranean. When the citrus fruits were ripe in the Mediterranean, it was winter in Norway. Citrus imports lasted from Christmas time through early spring, thus explaining an abundance of citrus-centered recipes like this one. I wasn’t able to knead on medium-low for 8 minutes consecutively because it is such a large volume of dough. I found I could do it a minute or so before the dough would creep up the dough hook. If that happens, take your fingers, clean the hook and work the dough back down in the bowl then resume. The bowl will be full, but don’t worry; it will fit. It is easiest to divide the dough right away versus after the first rise. I don’t have a bowl large enough to accommodate such volume of dough, so I decided to divide it in half right away. I let each half rise in its own greased bowl. If all this talk of large volumes of dough worries you, just do half the recipe. The fun (and beautiful part) is braiding the dough, which, more or less, is just twisting it together. It’s simple and looks very impressive. Roll the

dough out into a very large rectangle, about 18 by 22 inches. It does not have to be perfect. After spreading the cocoa, cardamom, butter paste over the dough, sprinkle with oranges and chocolate. Roll up the dough lengthwise and cut completely through it lengthwise to create two halves. Twist them together, pinching their ends. Take one end and begin to roll inwards creating a swirl. Let them rise and bake. My favorite thing about this bread is the appearance. At first look, the wreath looks burned, until you take a bite and realize it is the chocolate. Next, you get an unexpected bright bite of orange with flowery cardamom undertones. This will become your favorite flavor component of this bread. It won’t be long before this Scandinavian treat wins you over as your favorite treat — like it did me. Enjoy!

I used 3 large oranges. Save them to make juice, separate them into sections to toss in a salad, or just eat them for breakfast or a snack.

The original recipe didn't call for tossing the candied orange peel in sugar, but I did it anyway. It helps them to not stick together and gives them a nice textural crunch.

You don't have to roll the dough out into a perfect rectangle, though I found the more I rolled -the more rectangle it got. Regardless, its a free form bread.

Roll up the dough up into a log, the way you would a jelly roll, ending with seam-side down.

After cutting the log lengthwise into 2 pieces, then braid together like a rope. Pinch both ends.

Beautiful and it's time to rise. Soon you will be enjoying a chocolatey orange flettekran!

Make the candied orange peels one to two days ahead. Start by cutting the ends off each orange. Cut the peel of each orange into vertical sections. Cut the sections into long thin strips about ¼-inch. Place in a medium saucepan and cover with cold water. Bring to a boil and simmer for 15 minutes over medium-high heat. Drain the peels and rinse thoroughly with cold water.

In the same saucepan, heat the sugar and 1½ cups water over mediumhigh heat, stirring occasionally, until dissolved. Lower the heat, add the peels and simmer uncovered for 45 minutes, or until translucent. Remove the peels with a slotted spoon and place on a cookie rack to dry out completely for 24 - 48 hours. When dry, chop the peels into small pieces, set aside. Make the dough by melting the butter in a small saucepan, add the milk and bring to lukewarm, about 110° F. Pour into a stand mixer with the dough hook attachment. Add the yeast, sugar, flours, cardamom, salt and orange zest.

Meanwhile, prepare the filling by combining the sugar, cocoa powder and cardamom in a large bowl. Add in the room-temperature butter and combine to form a smooth paste (a food mixer with the whisk attachment works wonders for this or you can use a fork and combine by hand). When the dough has finished rising, divide it into two equal pieces. Take the first piece and roll it out into a large rectangle approximately 18 by 22 inches. Using a rubber spatula, spread half of the filling evenly across the dough and to the edges. Take half of the chopped dark chocolate and sprinkle on top, followed by half of the orange peel pieces. Roll the dough lengthwise, and with a sharp knife cut the log in half lengthwise. Braid the two halves together and pinch the ends together to seal. Take one end of the braid and roll it inwards tightly, creating a circle shape. Tuck the other end under the dough and pinch to seal. Repeat with the other piece of dough, using the remainder of the filling, dark chocolate and candied orange pieces. Divide them among two prepared baking sheets. Let rise 40 minutes, covered. Heat the oven to 375° F.

Push any candied oranges that are on top down into dough before baking, otherwise as they bake they can become really hard (burned even) and biting into one will not be pleasant for any tooth! Brush the tops of the dough with the beaten egg. Place in the oven and bake for 27 minutes or until golden brown on top. Remove and cool slightly. Serve while still warm and the chocolate is cool but melted. To store, place in an airtight container or plastic bag at room temperature for up to two days or in the freezer for up to two months. If serving after freezing, allow to defrost at room temperature then place in the oven at 400° F for a couple of minutes or until warm throughout.

A Simply Amazing Life

I

n December, my son and I were at an art opening at ecce’s temporary gallery space downtown when we ran into painter Dan Jones. He said, “Dayna, I’ve been living vicariously through your travels this year; they’ve been amazing.” I did have an incredible year of travel in 2017: San Francisco, Hawaii, England and Phoenix, to name a few of the locations. I said, “Yes, it has been an amazing year. I won’t have another one like it.” Then he said something so simple and profound that it continues to linger, months later. He said, “You don’t know that. Did you know this time last year that this year would be so great?” Good point. In the beginning of January, I was invited to join a group of business and community leaders on a trip to Norway in February. I was also invited by Americans for the Arts to attend the National Arts Advocacy Day in Washington, D.C., in 94 | May/June 2018

March as the state captain. My husband and I are spending two weeks in May in Ireland, and our son and his girlfriend are joining us for part of the trip. And then we have booked tickets to England for Christmas to be with my husband’s family. It looks like Dan will be able to live vicariously through my travels again this year. But I am not writing about these trips to dangle an enviable carrot in front of anyone. I am writing about it because Dan was right: at the end of 2016, I had no idea how great 2017 was going to be. But, for the record, while I loved each of those fabulous trips, it was the people who were with me and the simple moments we had together that are what linger sweetly in my memory. If you know anything about me from reading these reflections pages, you know

that my son and I lived in income-based housing for years. You know that money was tight but love and small experiences were abundant. You know that I have a fabulous husband and job I love, and you know that I try to be grateful for simple things. That’s one of the best things about writing this page — it has afforded me the opportunity to find meaning in seemingly meaningless moments and things. So, yes, go ahead and look longingly at the inevitable photos that will make their way to my Facebook page. Dan’s question proved true; I had no idea in December how great 2018 was going to be. But the truth is, none of us knows how great or difficult any single day is going to be, much less an entire year, so find gratitude for the simple things and the people who share them with you. It’s the collective of those little moments that actually add up to an amazing life.
