Ginger Pumpkin Squares
Ingredients: 1/4 cup butter, melted 1 cup crushed graham cracker 1 cup crushed gingersnaps 2 cups canned pumpkin 1 cup sugar 1/2 gallon vanilla ice cream, slightly softened
1 tsp. ground cinnamon 1/2 tsp. salt 1/2 tsp. ground ginger 1/4 tsp. ground nutmeg 1 cup chopped walnuts
Directions: In a large bowl, combine the butter, graham crackers and gingersnaps. Press two-thirds of the crumb mixture into an ungreased 13x9-inch dish. In a large bowl, combine the pumpkin, sugar, cinnamon, salt, ginger, and nutmeg. Stir in walnuts. Fold in softened ice cream. Spoon into crust. Sprinkle remaining crumb mixture over top. Freeze until firm, about 3 hours.

Youth Tour applications are now available! Dixie is now accepting applications for the 2020 Youth Tour competition. The competition is open to any high school junior who lives or goes to school in one of the eight counties served by Dixie. Applications are due Jan. 10, 2020. Youth Tour applications can be downloaded on our website at www.dixie.coop/youth-tour. Competition winners will have the opportunity to participate in an all-expenses-paid trip to Montgomery and possibly Washington, D.C.
