5-Ingredient Corn Soup Ingredients: 2 ears of corn, shucked 3 tbsp. unsalted butter, divided 2 cups new potatoes
¼ tsp. cayenne pepper 2 tbsp. sesame seeds
Directions: Cut kernels off the cobs and halve the cobs. Sauté kernels in 2 tbsp. butter for 2 minutes in a saucepan. Add 2½ cups water, cobs, and potatoes; bring to a boil, cover, and simmer until potatoes are tender (12–15 minutes). Remove cobs. Puree three-quarters of the soup and return it to the pot; season with cayenne, salt, and pepper. In a skillet, brown the remaining butter, add sesame seeds, and cook until golden. Drizzle soup with sesame seed brown butter to serve.
