Penne with Sun-dried Tomato Pesto Ingredients: 12 oz. penne pasta 1 c. (packed) fresh basil leaves 1/2 c. freshly grated Parmesan
1 (8.5 oz) jar of sun-dried tomatoes in olive oil Salt and freshly ground black pepper 2 garlic cloves
Directions: Cook pasta in a large pot of boiling salted water until tender but still firm, stirring occasionally. Drain, reserving 1 cup of the cooking liquid. Meanwhile, blend the sun-dried tomatoes and their oil, garlic, salt and pepper, to taste, and basil in a food processor and blend until the tomatoes are finely chopped. Transfer the mixture to a large bowl. Stir in the Parmesan. Add the pasta to the pesto and toss to coat, adding enough reserved cooking liquid to moisten. Season the pasta, to taste, with salt and pepper and serve.

Co-op Energy Efficiency Program
The Co-op Energy Efficiency Program consists of a loan and rebate program to help our member-owners manage the cost of installing energy-efficient improvements in their homes. While there is value in practicing no-cost and low-cost measures, more extensive energy efficiency improvements obviously make a bigger impact on your power bill. Our energy auditor can discuss your usage patterns with you, target efficiency opportunities, and uncover potential energy efficiency improvements that can be made.
