Lemon Cheesecake Bars 2 eggs 1/2 cup sugar 1/2 tsp. vanilla 1/2 tsp. lemon zest
Directions: Heat oven to 350°F. Combine cookie crumbs and butter then press onto bottom of 8-inch square pan sprayed with cooking spray. Beat cream cheese, sugar, lemon zest, lemon juice, and vanilla in a large bowl with mixer until blended. Add eggs one at a time, mixing on low speed after each egg until blended. Pour over crust. Bake 20 to 25 minutes or until center is almost set. Cool completely. Refrigerate 3 hours.
