Sweet Pepper Pasta with Sausage 3 tbsp unsalted butter 2 tbsp red wine vinegar 1 1/2 tsp kosher salt 1/3 cup chopped oregano 1/4 cup fresh basil
Directions: Cook pasta in salted water. Drain, saving 1 1/2 cups of water. Cook sausage in skillet on medium-high, stirring til cooked. Place on plate lined with paper towels. Add 2 tbsp of butter to skillet, add peppers, and cook 3 minutes. Stir in vinegar, salt, and garlic; cook 1 minute. Stir in pasta, sausage, and remaining butter. Stir in cooking water, 1/4 cup at a time, until sauce is smooth. Stir in oregano. Top with cheese and basil.
Ingredients: 1 lb shell pasta 1 lb Italian sausage, casings removed 1 lb sweet baby bell peppers, thinly sliced 1 garlic clove, minced 1/2 cup Romano cheese
