dolcezza si fa bellezza

Il dolce è qualcosa di superfluo, ma irrinunciabile allo stesso tempo, irrinunciabile perché soddisfa bisogni reconditi e profondi e chi ha le mani in “Pastry” lo sa bene, soddisfare il palato non basta, il frutto del proprio lavoro deve anche colpire visivamente. “Per me il miglior dolce deve anzitutto soddisfare la vista” oppure “I clienti devono prima mangiarseli con gli occhi” queste alcune tipiche affermazioni che si rincorrono fra gli addetti ai lavori, citazioni che attestano, ove ce ne fosse bisogno, quanto la forma, l’immagine, la rappresentazione artistica e quindi la bellezza, per un dolce, sia un elemento preminente e irrinunciabile.

Chi acquisterebbe infatti un cibo che non ispira anzitutto gli occhi? Ebbene, partendo da questo assunto, nel corso degli anni, o se volete dei secoli, il mondo della pasticceria ha compiuto un’evoluzione artistica che ha pochi eguali in altre forme di artigianato.

Miscelando gli ingredienti giusti, dosandoli con maestria, unendoli a quelli che sono i dettami e le esigenze del buon gusto e puntando sempre e comunque a soddisfare al massimo quella che dovrà essere l’esperienza gustativa del consumatore, il maestro pasticcere è diventato un’artista, e la pasticceria una sublime forma d’arte, capace di soddisfare in egual

misura il senso della vista prima, e quello del gusto poi.

L’arte pasticcera è una sorta di piccolo miracolo dove la padronanza tecnica e una profonda conoscenza delle materie prime non bastano, perché questa peculiare forma d’arte richiede anche creatività, talento e quel guizzo artistico che tutti i pasticceri possiedono quasi naturalmente nel loro DNA. Va anche detto che l’arte pasticcera, (come tutte le forme d’arte) è anche comunicazione che punta a colpire ed emozionare. E allora ecco Angeli e Madonne, oppure elementi della natura, ma anche rappresentazioni oniriche e fantastiche che prendono forma in statuette o bassorilievi, affascinanti decorazioni, eleganti incisioni.

Il maestro pasticcere ha mille modi per esprimere il suo talento e focalizzare le sue passioni in un percorso creativo che non ha eguali dove, esplorando anzitutto quello che è il suo mondo interiore e le sue esperienze, attraverso il filtro della sensibilità, realizza opere capaci di incantare gli occhi di chi le guarda e poi estasiarne il palato. In questo modo la dolcezza si trasforma, magicamente, in grande bellezza.

Art Gallery a Host 2017 (Pad. 6) sarà il compendio di questa grande bellezza, uno spazio espositivo curato da Pastry Magazine, in stretta collaborazione con la F.I.P.G.C., dove troveranno spazio opere straordinarie, pezzi unici che accenderanno lo stupore negli occhi di chi le ammirerà. Ma l’emozione non finirà lì perché questi ammiratori sentiranno salire imperiosa l’acquolina nelle loro bocche pronti ad assaporare il sublime gusto della bellezza.

Sweetness turn into loveliness

Sweetness is something superfluous but at the same time absolutely necessary. It satisfies secret and deep needs and, since the satisfaction of the palate is not enough, as those who have a finger in “Pastry” know well, the fruit of their work has also to impress visually.

“In my opinion, the best sweet should at first satisfy the sight” or “Customers should at first eat them with the eyes”: these are some pastry professionals’ typical statements that attest, if needed, how much the shape, the image, the artistic representation and therefore the beauty, are prominent and indispensable elements for a sweet.

Who would buy a food that does not inspire the eyes first? Well, starting from this assumption, the pastry world has made over the years, or if you prefer over the centuries, an artistic evolution that has few equals in other forms of craftsmanship.

By mixing the right ingredients, mastering them, combining them with the dictates and the requirements of good taste, always aiming at satisfying the taste of the consumer, the pastry chef has become an artist, and the pastry a sublime form of art, capable of satisfying at first the sense of sight and then the taste.

Pastry art is a kind of small miracle, where technical mastery and profound knowledge of raw materials are not enough, because this peculiar form of art requires also creativity, talent, and that artistic flair all pastry makers possess almost naturally in their DNA .

It should also be said that pastry art, like all forms of art, is also communication aimed at striking and moving. And so, here come Angels and Madonnas, or elements of nature, but also dreamlike and fantastic representations that take shape in statuettes or bas-reliefs, charming decorations, elegant engravings.

The Pastry Chef has a thousand ways to express his talent and focus his passions on a creative and unique path, exploring first of all his inner world and his experiences, through the filter of sensitivity, realizing works that can enchant the eyes of those who look at them and then enrapture their palate. In this way sweetness turns magically into great loveliness.

Art Gallery at Host 2017 will be the compendium of this great loveliness, an exhibition curated by Pastry Magazine, in close collaboration with F.I.P.G.C., where the extraordinary works and unique pieces on show will lit up with amazement the eyes of those who will admire them. But the emotion will not end there, as the admirers will soon drool, ready to enjoy the sublime taste of beauty.

Pasticceria

Le finali dei due Campionati Mondiali di FIPGC, l’area Art Gallery, i padiglioni aziendali e gli incontri B2B: Host 2017, questo è molto altro ancora è Host2017 in cui si realizza il “Rinascimento” dei sapori in un contesto fortemente internazionale con 1.824 aziende partecipanti, in rappresentanza di 55 Paesi.

Simona Greco, Exhibition Director Art, Fashion, Hospitality and Travel, spiega su Pastry Magazine, come e quanto sia cresciuta in termini di numeri e qualità la fiera milanese.

Quali sono gli aspetti in Host che si sono maggiormente sviluppati nelle ultime edizioni?

«Tutti i numeri sono in costante crescita nelle ultime edizioni. Basti dire che rispetto al 2009, sempre a un mese dalla mostra, gli espositori totali sono cresciuti del 39% e quelli esteri del 96%.

In particolare, dall’Italia sono cresciuti del +19%; dalla Germania +96%; dalla Spagna +90% e dalla Francia del +116%. Le 2.081 aziende già registrate a oggi (+3,5% sullo stesso periodo del 2015), provengono da 51 Paesi dei 5 continenti, tra cui 5 new entry: Egitto, Nuova Zelanda, Sudafrica, Ucraina, Uganda e il Canada che ritorna dopo una breve assenza. In particolare le 826 aziende estere (39,7% del totale), sono in crescita dell’11%.

Riguardo ai visitatori, nel periodo 2009-2015 sono cresciuti in generale del 21%, passando da 125.000 a 150.961, mentre gli stranieri sono quasi raddoppiati (+83%).»

Quanto “pesa” il settore Pastry nella fiera e sulla sua eventuale strategicità nel mondo ho.re.ca?

«Il Gelato-Pastry sarà uno dei grandi protagonisti di questa edizione. Infatti, una delle più

interessanti novità nel layout espositivo riguarda proprio questo settore: per permettere ai visitatori di toccare con mano le mille sfaccettature della parola ibridazione, gelato pasticceria e caffè - ai padiglioni 10 e 14 - saranno unite idealmente e fisicamente da The Experience Gallery. Ponte di collegamento ma anche luogo a sé, pensato per offrire a chi l’attraverserà un percorso all’insegna dei cinque sensi capace di mettere in contatto i mondi del Gelato Pastry e del Caffè. Un impegno che testimonia l’importanza per Host di questo settore che, insieme al mondo bar-caffè cui è strettamente legato, rappresenta il 16% degli espositori.

A livello macro economico il comparto panifica-

zione e dolce nel periodo 2008-2016 è cresciuto al ritmo medio del 4,1% l’anno raggiungendo nel 2016 il valore di 2,1 mld. In quest’ambito i mercati che importano di più sono USA, Francia, Russia, Messico e Germania mentre quelli che esportano maggiormente sono Italia, Germania, Olanda, Francia e Cina».

Veniamo ai Campionati Mondiali organizzati da FIPGC: quanto e perché per Host è importante “investire” nella collaborazione con le attività associative come FIPGC? «La stretta collaborazione con le più autorevoli associazioni di categoria è da sempre uno dei punti di forza di Host e ci consente di integrare il percorso espositivo con un’offerta di momenti di informazione e formazione senza confronti, che quest’anno presenterà oltre 500 eventi. In questo quadro quella con FIPGC riveste un ruolo particolarmente importante perché l’obiettivo è quello

di dettare i trend di domani e offrire insight formativi ai professionisti fine raggiunto attraverso il format particolarmente coinvolgente dei campionati.

Quest’anno il tema delle finali dei due campionati mondiali Cake Designers World Championship e World Trophy of Pastry, Ice Cream and Chocolate sarà “Alla scoperta del mondo del cioccolato e del caffè”: per il cake design ci saranno venti concorrenti singoli e dovranno presentare due realizzazioni: una torta da esposizione, che porteranno da casa per la valutazione estetica, e una torta da realizzare sul posto, più piccola ma realizzata con la stessa tecnica, della quale si valuterà il gusto. Nel World Trophy la formula invece sarà quella classica, con le venti squadre di pasticceria ognuna formata da tre concorrenti con un coach, che si sfideranno nelle discipline Scultura in Cioccolato e Praline, Scultura in Zucchero e Torta Moderna, Scultura in Zucchero in Pastigliaggio e Monoporzione Gelato».

la dolcezza si fa bellezza Ma HostMilano 2017 è anche arte e bellezza grazie ai 400 metri quadri di esposizione dell’Art Gallery organizzata da questa testata. Nella vastissima area espositiva contrassegnata dai colori rosa e grigio e dal logo Art Gallery che campeggia in tutte le superfici dell’area, i maestri pasticceri creano per tutte le giornate della fiera opere di pasticceria artistiche usando, e mostrando ai visitatori, tutte le tecniche possibili in pasticceria e cioccolateria. Create, ad esempio, sculture di burro, zucchero, cioccolato, cake design, la ghiaccia reale, carving fruit, pasticceria moderna, modeling e altro ancora. Fra le dolci attrazioni, i visitatori possono idealmente toccare con mano le mille sfaccettature dell’universo pastry.

the Renaissance of pastry

The two Fipgc World Championships finals, the Art Gallery area, the companies halls and the BtB meetings: Host 2017. All this and much more is Host2017, where the “renaissance” of flavors takes place in a strong international context with 1,824 participating companies, representing 55 countries.

Simona Greco, Exhibition, Art, Fashion, Hospitality and Travel Manager, explains to Pastry Magazine, how and how much the Milan fair has grown in terms of numbers and quality.

Which are the aspects that have most developed in the recent editions of Host?

«All numbers are steadily growing in recent editions. Suffice it to say that, if compared to 2009, the number of total exhibitors has grown by 39% and the foreigner ones by 96%. In particular, from Italy + 19%; from Germany + 96%; Spain + 90% and France + 116%. How much does the Pastry industry “count” within the fair and on its possible strategicity in the ho.re.ca world?

«Gelato-Pastry will be one of the great stars of this edition. In fact, a new and exciting attraction will take place right in this area: visitors will experience the many facets of the word “hybridisation” of Gelato, Pastry and Coffee through the Experience Gallery, a path connecting halls 10 and 14, ideally and physically. Not simply a bridge but an independent space that will offer to visitors a pathway dedicated to the five senses, able to connect the sectors of Gelato-Pastry and Coffee. A commitment demonstrating the importance that this sector has for Host, which, together with the world of coffee bars to which it is closely linked, represents 16% of exhibitors. At a macro-economic level, in the period 2008-2016 the bakery and pastry sector grew at an average rate of 4.1% per year, reaching � 2.1 billion in 2016. In this context, the most important markets are USA, France, Russia, Mexico and Germany, while the ones that

export most are Italy, Germany, Holland, France and China.»

Let’s talk about the World Championships organized by FIPGC: how much and why is important for Host to “invest” in collaborating with associative activities such as FIPGC? «The close collaboration with the most authoritative industry associations has always been one of the strengths of Hosts and it allows us to integrate the exhibition with an outstanding informative and training offer, that this year will feature over 500 events. In this contest, the collaboration with FIPGC plays a particularly important role, as the goal of dictating tomorrow’s trends and offering training insights to the professionals is achieved through the particularly engaging format of the championships. This year the theme of the finals of the two world contests, Cake Designers World Championship and the World Trophy of Pastry, Ice Cream and Chocolate will be “Discovering the World of Chocolate and Coffee”: in Cake Design there will be twenty individual contestants, who will be called upon to produce two creations: a display cake, which they will bring with them for an aesthetic evaluation, and a cake to be made on the spot that will be smaller but will be made using the same technique, and which will be judged for its flavour. In the World Trophy the formula will be the classic one, with twenty pastry teams, each one made up of three contestants and a coach, that will battle it out in the Chocolate Sculpture and Praline, Artistic Sugar and Modern Cake, and Sugar Paste and Mono-Portion Ice Cream categories».

sweetness turns into loveliness But HostMilano 2017 is also art and beauty thanks to the 400 square meters of exhibition of the Art Gallery organized by this newspaper. In the vast exhibition area, characterized by the pink and grey colours and with the Art Gallery logo standing out on all the surfaces of the area, the pastry chefs create artistic pastry works while showing visitors all the possible techniques in pastry and chocolate, throughout the whole fair.

They create, for example, sculptures of butter, sugar, chocolate, cake design, royal icing, carving fruit, modern pastry, modeling and more. Among these sweet attractions, visitors can to ideally touch the many aspects of the pastry universe.

La Viennoiserie Le coccole a colazione

La viennoiserie è un tipo di piccola impresa artigianale, molto diffusa in Francia, la cui produzione è principalmente dedicata alle viennoiseries, ovvero ai dolci da forno la cui tecnica di realizzazione si avvicina a quella del pane, distinguendosi dalla pâtisserie (pasticceria) che produce dolci alle creme.

In Italia tale distinzione non esiste, in quanto i fornai sono tradizionalmente autorizzati alla produzione sia del pane che dei dolci secchi da forno. Il termine viennoiseries deriva dal fatto che tali dolci, a cominciare dal croissant, furono conosciuti tramite l’importazione dall’Austria, nella prima metà del XIX secolo. Il nome deriva dalla pasticceria che l’ufficiale austriaco in congedo August Zang aprì a Parigi in rue de Richelieu,

92 nel 1838 o 1839 ed in cui vendeva dolci tipici viennesi. Grazie al suo successo fu ben presto imitata da molti fornai francesi. Un’immagine del 1909 della pasticceria mostra la stessa data per la sua fondazione e riporta il nome del fondatore sulla facciata, ma la pasticceria era già documentata nella stampa prima di quella data.

Questa pasticceria che serviva specialità viennesi incluso il kipferl divenne rapidamente popolare e ispirò imita-

zioni francesi e il concetto, se non il termine di viennoiserie per indicare pasticceria di supposta origine viennese. La versione francese del kipferl fu battezzata croissant per la sua forma a mezzaluna crescente.

Le specialità

Il croissant è dunque un discendente del kipferl austriaco, la cui esistenza è stata documentata, in varie forme, fino dal XIII secolo. I croissant e altre viennoiseries sono preparati con pasta sfoglia; la sfoglia viene quindi tagliata in triangoli che sono arrotolati e piegati dandogli la forma di mezzaluna, prima di cuocerli in forno. I croissant sono un prodotto tradizionale delle panetterie e pasticcerie francesi dall’inizio del secolo ed erano generalmente consumati a colazione insieme a una tazza di caffè. Alla fine degli anni settanta, nel tentativo di contrastare la diffusione dei fast food statunitensi, in Francia furono aperte diverse

catene di croissanterie in cui i croissant sono serviti con ripieni di vario tipo, dal prosciutto al cioccolato. Questo sviluppo è stato possibile grazie alle nuove tecniche di surgelazione industriale, grazie alle quali è possibile congelare il croissant prima della cottura, immagazzinarlo e prepararlo da personale non specializzato.

Il croissant in Italia viene spesso chiamato cornetto nelle regioni centrali e meridionali e brioche da quelle settentrionali, anche se quest’ultimo termine ha in Francia un significato diverso.

Il cornetto è una specialità di pasticceria: è la variante italiana del kipferl austriaco, o del più internazionale croissant. Si tratta di una specialità alimentare dolce o salata a forma di mezzaluna; la sua composizione è a base di: farina, burro, uova, acqua e zucchero, con l’aggiunta di tuorlo d’uovo spalmato sulla superficie per ottenere una colorazione più dorata; Il nome di questa specialità deriva dalla sua forma che ricorda due

piccole corna. Altresì in tedesco il nome trae origine dalla sua forma che ricorda una mezzaluna come d’altronde anche il termine francese croissant, ossia «crescente».

In Italia, il cornetto viene tradizionalmente consumato al bar per colazione insieme al cappuccino, ma nel centro e sud Italia sono molto diffuse le cornetterie notturne. La specialità si diffuse in Italia e più specificatamente in Veneto subito dopo il 1683, grazie agli intensi rapporti commerciali tra l’allora Serenissima Repubblica di Venezia e Vienna. Bisognerà attendere invece il 1770 perché anche la Francia, con il matrimonio tra l’austriaca Maria Antonietta e il futuro re Luigi XVI, scopra il cornetto.

Il pain au chocolat è una tipica viennoiserie (pasta dolce francese). Viene anche chiamato chocolatine, specialmente a sud della Loira, petit pain nel Nord della Francia, o couque au chocolat in Belgio (unicamente a Bruxelles). Si tratta di un croissant (dolce a base di pasta sfoglia) di forma quadrata arrotolato su una o più barre di cioccolato. Come il croissant è una delle paste dolci più comuni in Francia per la prima colazione; in Italia è talvolta conosciuto sotto il nome di saccottino.

Il bignè (francesismo da beignet), è una piccola pasta dolce di forma tondeggiante, talvolta allungata: in questo caso si chiama éclair. I

bignè si preparano in due modi completamente differenti fra loro: i bignè fritti e i bignè ripieni.

Il pain aux raisins (letteralmente pane all’uvetta), è una tipica viennoiserie variante del croissant (dolce francese a base di pasta sfoglia), è costituito da una pasta brioche con uvetta secca, imbottita a volte con crema pasticcera. Il pain aux rasins viene consumato tradizionalmente a colazione.

Viennoiserie Cuddles for breakfast Viennoiserie is a kind of small craft enterprise, very popular in France, whose production is mainly dedicated to viennoiseries, or to baked pastries whose production technique is closer to that of bread, distinguishing itself from the pâtisserie (pastry) that produces creamy sweets; in Italy this distinction does not exist, since the bakeries are traditionally authorized to produce both bread and baked goods.

The term viennoiseries derives from the fact that the pastry in the style of Viennese baking, such as croissants, become known through importation from Austria in the first half of the nineteenth century.

The name derives from the pastry shop that the Austrian retired official August Zang opened in Paris in rue de Richelieu 92 in 1838 or 1839, where typical Viennese sweets were sold. Thanks to its success it was soon imitated by many French bakers. A picture of the pastry shop in 1909 shows the same date for its founding and has the founder’s name on the facade, but the pastry shop was already

documented in the press before that date. This bakery, which served Viennese specialities including the Kipferl, quickly became popular and inspired French imitators, and the concept, if not the term, of viennoiserie, a term for supposedly Vienna-style pastries. The French version of the Kipferl was named croissant for its crescent shape.

Specialties

The croissant is therefore a descendant of the Austrian kipferl, whose existence has been documented in various shapes since the 13th century. Croissants and other viennoiseries are made of a layered yeast-leavened dough; the dough is cut into triangles, folded and rolled into a crescent shape, before baking in the oven. Croissants are a traditional product of French bakers and pastry shops since the beginning of the century and were usually eaten at breakfast with a cup of coffee. Towards the end of the 1970s, in the attempt to counteract the spread of US fast foods, several chains of croissanteries were opened in France, where croissants are served with fillings of various kinds, from ham to chocolate. This development has been possible thanks to the new industrial freezing techniques, which allow to frozen the croissant before cooking, so that it can then be stored and then prepared by unskilled personnel. In Italy the croissant is often called cornetto in the central and southern regions and brioche (even if the term usually refers to another kind of sweet) in the northern ones, the latter having a different meaning in France. Cornetto is a pastry recipe: it is the Italian variation of the Austrian kipferl, or of the most international croissant. It is a sweet or salty pastry made

into a crescent shape; Its composition is based on: flour, butter, eggs, water and sugar, with the addition of egg yolk brushed over its surface to obtain a golden color during baking; The name of this specialty comes from its shape, that recalls two small horns. Also in German, the name originates from its shape which recalls a crescent as well as the French name croissant, or “growing”. In Italy, the cornetto is traditionally eaten at a coffee bar with a cappuccino for breakfast, but in the center and south of the country there are a lot of places where it is possible to eat cornetti during the night. The recipe became popular in Italy, and more specifically in Veneto, after 1683, thanks to the intense commercial relations between the Serenissima Republic of Venice and Vienna. France will discover the cornetto only in 1770, with the marriage between Marie Antoinette of Austria and the future King Louis XVI. Pain au chocolat is a typical viennoiserie (French sweet pastry). It is also known as chocolatine, in the south of the Loire, petit pain in the North of France, or couque au chocolat in Belgium (in Brussels only). It is a square-shaped croissant (yeast-leavened laminated dough), with in the centre one or two pieces of cho-

colate. As the croissant, it is one of the most common sweet pastries eaten in France during breakfast; in Italy it is sometimes known as saccottino.

Beignet (from the French beignet) is a small sweet pastry usually round-shaped, or with an oblong shape, in which case it is called éclair. Beignets are prepared in two completely different ways: fried and stuffed beignets.

Pain aux raisins (literally raisins bread) is a typical viennoiserie, variant of the croissant. It is made with a leavened butter pastry with raisins added and sometimes with a crème pâtissière filling. Pain aux rasins is traditionally eaten for bre.

Maria Cocciolo, called Mary, was born in Turin in 1973. Graduated in Sciences of Diplomacy and for FIPGC she have the role of delegate in “Piemonte” (North Italy).

She created the International Sugar Art and in Turin she opened the school Mary cake Decorating Academy.

dalla tradizione alle torte moderne Equipe Eccellenza Italiana Pasticceri e Membro del Comitato Organizzativo per i Campionati Mondiali FIPGC .

Dubai, Sidney, Doha, Taipei, Atene, Londra, Bangkok, solo per citarne alcuni, sono i luoghi che Giuseppe Sparacello ha avuto modo di visitare grazie al suo lavoro di consulenza in pasticceria.

Organizzatore del Mondiale ad Host Milano 2017, nonché Equipe Eccellenza, Sparacello lavora sia come pasticcere e titolare nelle sue due attività in Sicilia (Pasticceria Dolce Tentazione e Pasticceria Sparacello), che come consulente in Italia e all’estero, sempre rimanendo molto attivo nel mondo FIPGC di cui fa parte sin dalla nascita della federazione. Intervistandolo cogliamo nella voce calma e modestia, ma sappiamo che il suo curriculum è davvero ricco

e degno di nota.

Così ci racconta di sé: «Vivo a Castronovo di Sicilia e ho iniziato questo mestiere per passione, una passione che però ha delle origini in famiglia, dato che già mio padre si occupava di pasticceria, in modo diverso, gestendo del commercio all’ingrosso. Perfezionandomi sono diventato il pasticcere che oggi si destreggia fra l’amore per la pasticceria tradizionale siciliana, probabilmente fra le più rinomate nella gastronomia italiana, e pasticceria più innovativa. Abbraccio con il mio lavoro diversi campi della pasticceria, ma ho un occhio di riguardo per il mondo del cioccolato che amo particolarmente».

Proprio un cioccolatino lo ha reso noto alla stampa di settore e non solo, il suo cioccolatino alla Tuma Persa, che fonde sapori diversi ma piacevolmente uniti, il cacao e il formaggio. Di lui hanno scritto: “Quando l’eleganza sposa il sapore!” per descrivere che i dolci non sono solo esteticamente belli, ma sono buoni, anzi ottimi.

Organizer of the World at HostMilano 2017 and member of the Excellence Team, Sparacello works both as pastry chef and holder in his two activities in Sicily (Sweet Pastry and Pastry Shop Sparacello) and as a consultant in Italy and abroad, while being a very active figure in the FIPGC world, which he entered since its birth. During the interview, his voice gives the impression of calm and modesty, but we know that his curriculum is really

very rich and worth of note.

That is what he told us: «I live in Castronovo di Sicilia and I started this job for passion, a passion I inherited from my family, as my father worked in this sector as a wholesale manager. It is thanks to the courses I have made to perfect myself that I have become a pastry chef able to juggle both the traditional Sicilian pastry, probably among the most renowned pastries in Italian gastronomy, and the most innovative one. With my work I embrace different fields of pastry, but I have special consideration for the world of chocolate, that I particularly love.»

It was just a chocolate candy that made him known to the specialized press and even beyond, the “cioccolatino alla Tuma Persa”, which blends the different flavors of cocoa and cheese in a pleasant combination. His work has been described with these words: “When elegance meets flavor”, to underline that his pastries are not only aesthetically beautiful, but that they are also good, or rather, excellent.

Jellow Lemon Daquoise mandorle 225 g di albume 75 g di zucchero 375g di T.P.T. Mandorle Montare albumi e zucchero, aggiungi il T.P.T, cuocere in forno a 180°C valvola chiusa,aprire a fine cottura messo a refrigerare.

Almond daquose

Mousse leggera limoncello 450 g di latte fresco 30 g di buccia di limone 25 g di colla di pesce 800 g di copertura cioccolato bianco 800 g di panna 35% lucida 60 g di limoncello 70% Portare a bollore il latte e buccia di limone, lasciare in infusione per 5 minuti, filtrare, aggiungere la colla di pesce ammorbidita, versare sul cioccolato bianco leggermente fuso, mescolare con frusta fino ad ottenere una consistenza liscia.

Quando raggiunge la temperatura di 38° C aggiungere la panna lucida con l’aiuto di una marisa. Il risultato lucido sarà segno di un’emulsione perfetta.

Limoncello light mouse

Lemon curd 100 g di succo limone 50 g di zucchero invertito 300 g di burro 200 g di zucchero semolato 100 g di tuorlo 2 g di scorza limone grattuggiata Yellow Lemon Mettere in pentola il succo di limone, zucchero invertito, zucchero e scorzetta.

Portare ad 85°C togliere dal fuoco ed aggiungere il burro freddo ed emulsionante.

- Egg white 225g - Sugar 75g - T.P.T. almonds 375g Beat until stiff egg whites and sugar, add T.P.T, bake at 180°C closed valve, open at the end of cooking time.

- Fresh milk 450g - Lemon zest 30g - Gelatin sheets 25g - White chocolate coating 800g - 35% shiny Cream 800g - 70% Limoncello 60g Bring the milk and the lemon zest to the boil, leave to infuse for 5 minutes, filter, add the soaked gelatin sheets, pour on the slightly melted chocolate, stir with a whip until reaching a smooth consistency.

When the temperature reaches 38°C, add the cream with the help of a rubber scraper. A perfect emulsion will give a shiny result.

Lemon curd - Lemon juice 100g - Inverted sugar 50g - Butter 300g - Caster sugar 200g - Egg yolk 100g - Grated lemon zest 2g - Yellow Lemon Put into the saucepan the lemon juice, the inverted sugar, the sugar and the lemon zest. Bring to 85°C, remove from heat, add the cold butter and emulsify.

Glassa specchio yellow 1000 g di acqua 450 g di glucosio 1800 g di cioccolato bianco 800 g di gelatina neutra 35 g di colla di pesce Colore idrosolubile giallo q. b.

Portare a bollore acqua e glucosio, sciogliervi la colla di pesce e versare sul cioccolato ed emulsionare, aggiungere il colore e infine la gelatina neutra.

Mirror glaze yellow

Montaggio Versare nello stampo la mousse leggera al limoncello, porre al centro il lemon card, completare con la restante mousse e chiudere con la Daquoise alla mandorla. Glassare con glassa lucida gialla, decorazione con meringa, limone caramellato e placchette di cioccolato personalizzate.

Assembly

- Water 1000g - Glucose 450g - White chocolate 1800g - Neutral gelatin 800g - Gelatin sheets 35g - Hydrosoluble yellow colour q.s.

Bring water and glucose to the boil, melt inside it the gelatin sheets, pour on the chocolate and emulsify, add the colour and finally the neutral gelatin.

Pour into the mould the limoncello light mousse, put the lemon card in the middle, complete with the remaining mousse and end with the almond Daquoise. Ice with yellow shiny icing, decorate with meringue, candied lemon and personalized chocolate plaquettes.

Giovanni Catalano

Oltre trent’anni di passione nella pasticceria Giovanni Catalano è pasticcere da oltre trent’anni. Ha iniziato come molti frequentando l’alberghiero e, dopo il diploma, iniziando a lavorare.

Nelle aule delle scuole alberghiere c’è ritornato dopo qualche anno, ma da docente. Insegna agli studenti nelle scuole statali, ma anche in corsi regionali e nei corsi privati. Da cinque anni è nella FIPGC, luogo “naturale” per lui. Nella federazione è attivo come vice delegato della Sicilia, nei corsi e nelle attività dei campionati. «Ho molta esperienza alle spalle, dopo tanti anni, e devo dire che ho attraversato senza difficoltà un po’ tutte le aree della pasticceria, grazie anche al continuo aggiornamento. Un pasticcere, infatti, anche quando insegna agli altri, torna ad essere allievo quando impara da professionisti che tengono master di livello».

Per Giovanni Catalano un motivo di grande orgoglio è la collaborazione con una giovane azienda dolciaria per cui ha curato e cura alcune

ricette. L’azienda si chiama “Cotti in Fragranza” e porta nella grande distribuzione prodotti siciliani di qualità elevata.

«La Pasticceria è qualcosa di serio che può essere fatto solo con passione e professionalità. L’essere siciliano però aiuta, siamo infatti nella regione che vanta dolci apprezzati ovunque».

Giovanni Catalano, ricordiamo infine, fa parte anche della Equipe Eccellenze Italiane Pasticceria Gelateria Cioccolateria.

«L’Equipe Eccellenze Italiane Pasticceria Gelateria Cioccolateria – ci spiega Catalano - è attualmente l’unico team in Italia di professionisti riconosciuti nel panorama internazionale perché detengono un palmare di oltre 580 medaglie vinte in concorsi Internazionali e Mondiali, e fanno parte della Federazione Italiana Pasticceria Gelateria Cioccolateria».

Giovanni Catalano Over thirty years of passion in the pastry sector Giovanni Catalano has been a pastry chef for over thirty years.

He started, as many others chefs, attending the hotel management school and starting to work soon after graduation.

After a few years he has come back to school, but as a teacher. He teaches at state schools, but also at regional and private courses. He joined the FIPGC five years ago, a “natural” place for him. In the federation he is active as vice-delegate for Sicily, in the courses and the activities of the championships.

«I have many years of experience behind me, and I have to say that I went through all the pastry areas without difficulty, thanks to the continuous updating. A pastry chef, in fact, even when teaches others, is again a student when he learns from professionals who run master courses.

Giovanni Catalano is very proud of his collaboration with a young confectionary company for which he has created and still creates some recipes. The company is called “Cotti in fragranza” and is launching

Sicilian products of high quality in the large scale retailing.

«Pastry is a serious subject and it can be done only with passion and professionalism. However, being a Sicilian helps, as we are in the region whose delicious desserts are appreciated everywhere».

Patrizia FROLLA BRETONE Ingredienti: 175 gr di burro 450 gr di farina 00 200 gr di zucchero a velo 70 gr di fecola di patate 1 bacca di vaniglia 5 gr lievito in polvere 6 gr di sale 3 gr di zeste di arancia 135 gr di tuorli 50 gr di miele d’acacia Mettere in planetaria burro, zucchero a velo, bacca di vaniglia, zesta d’arancia, tuorli e miele, far lavorare per qualche minuto, aggiungere farina, fecola, sale lievito.

CREMA INGLESE Ingredienti: 250 gr di panna fresca 250 gr di latte intero 100 gr di tuorli 50 gr di zucchero Portare ad ebollizione panna e latte, in un contenitore lavorare bene con la frusta tuorli e zucchero; versare panna e latte sui tuorli e zucchero, lavorare con una lecca pentole rimettere sul fuoco e portare il tutto a 83°.

CREMOSO AL CIOCCOLATO Ingredienti: 500 gr di crema inglese 220 gr di cioccolato fondente al 70% Crema inglese calda e cioccolato fondente vanno emulsionati per un minuto. Far riposare alcune ore in frigo.

GELEE’ DI LAMPONI Ingredienti: 500 gr di polpa di lamponi 85 gr di destrosio 85 gr di zucchero 13 gr di colla di pesce Portare ad ebollizione 200 gr. di polpa di lamponi con zucchero e destrosio aggiungere la colla di pesce e la restante polpa.

BISCOTTO MORBIDO AL CACAO Ingredienti: 300 gr di albumi 320 gr di zucchero 200 gr di tuorli 95 gr di cacao Montare a neve le uova con lo zucchero, aggiungere a filo i tuorli e infine il cacao setacciato.

NAMELAKA AL PISTACCHIO Ingredienti: 200 gr di latte intero 150 gr di pasta di pistacchio 12 gr di glucosio 9 gr di colla di pesce 330 gr di cioccolato bianco 460 gr di panna fresca Portare ad ebollizione il latte e il glucosio, aggiungere la colla di pesce, il cioccolato bianco, la pasta pistacchio e panna fresca.

Emulsionare il tutto.

GLASSA A SPECCHIO AI FRUTTI ROSSI Ingredienti: 560 gr di polpa frutti rossi 600 gr di zucchero 400 gr di destrosio 500 gr di latte condensato 30 gr di colla di pesce 250 gr di burro di cacao 120 gr di acqua Colore rosso q.b.

Portare la polpa, lo zucchero , l’acqua e il destrosio a 103°, riscaldare il latte condensato; fuori dal fuoco unire il latte condensato, riportare a bollore e unire la colla di pesce e il burro di cacao a scaglie, emulsionare per qualche minuto, glassare 26/28°.

FONDO CROCCANTE Spennellare il cioccolato fondente sul fondo di bretone aggiungere dei cerali a piacere glassati con cioccolato fondente temperato.

ASSEMBLAGGIO TORTA Fondo croccante bretone, cremoso al cioccolato, geleè di lamponi, biscotto morbido al cacao, namelaka al pistacchio, glassa ai frutti rossi.

Kristina Rado

Esperienza e Passione Equipe Eccellenza Internazionale Cake Design e Referente per le relazioni estere Kristina Rado, presidentessa di giuria del Cake Designer Wordchampionship (mentre per il Campionato del Mondo di Pasticceria il presidente di giuria è Cristian Beduschi) è una professionista stimata a livello internazionale che insegna tecniche di decorazione in tutto il mondo, alcune delle quali portano il suo nome, essendo state perfezionate da lei stessa. Questa riconosciuta bravura nasce (come in molti casi nel mondo della pasticceria e del cake design) da una passione trasformata in lavoro, un passaggio che per Kristina avviene a quarant’anni, insieme a molti cambiamenti della sua vita personale, come lei stessa ci racconta: «Oggi mi trovo a presiedere la giuria ruolo che ricordo a chi ci legge è di arbitro imparziale, senza voto, che controlla che tutto si svolga correttamente. Ma anni fa sono stata dall’altra parte, fra i concorrenti, gareggiando per l’Ungheria, la mia nazione natale. L’Italia, invece, è il mio paese di adozione, in cui mi sono trasferita per amore, a Roma. Lavoravo nel campo degli eventi, ma cambiando paese mi sono trovata in difficoltà ad

inserirmi lavorativamente. Ma a quarant’anni si può dare una svolta se si segue una passione con determinazione. Io per esempio per dare sostanza alla mia passione mi sono aggiornata: fra i corsi ricordo quelli in Inghilterra presso Eddie Spence, cake designer che fornisce la Casa Reale Inglese.

All’epoca in cui ho iniziato non c’era Facebook, c’era internet però, e nei gruppi ho iniziato a pubblicare i miei lavori di pasticceria. Pian piano sono stata seguita, sono cresciuta, ho aperto partita Iva e questa passione è diventata un mestiere; sono stata chiamata io stessa a presiedere ad aventi e da sette anni viaggio e insegno e da quattro sono in questa grande famiglia che è la FIPGC. Oggi a cinquant’anni sono una donna affermata, ma mai smetto di aprire mente e cuore all’innovazione, allo studio. Fra le tecniche che più amo fiori di zucchero, modellaggio di figure realistiche, pittura edibile ma soprattutto la ghiaccia reale».

Fra i successi di Kristina Rado menzioniamo la duplice vittoria della medaglia d’oro presso il Cake International Competition anno 2013 e 2014 a Birmingham, categoria Wedding cakes. È stata anche vincitrice del premio Royal Icing Award 2014 del prestigioso Cake Masters Magazine e del Top 10 Cake Designer 2017 presso New York Cake Academy.

Kristina Rado, the chairwoman of the Cake Designer Word Championship jury (while for the World Trophy tof Pastry the chair is Cristian Beduschi) is an internationally renowned professional who teaches decorating techniques around the world, some of which are named after her, as she perfected them.

This acknowledged excellence is born out (as often happens in the pastry and cake design world) of a passion, which turned into a job when Kristina was forty, along with many changes in her personal life, as she tells us : «Today I’m in the chair of the jury, a role, it is worth to remember, of impartial arbitrator, who does participate in vote and controls that everything goes on properly. But some years ago I was on the other side, among the competitors, participating for Hungary, my native country. On the other hand, Italy is my country of adoption, since I moved to Rome for love.

I worked in the event management sector, but when I

changed country I had difficulty finding a job. However, at the age of forty, you can make a change if you follow your passion with strength. For example, I kept myself up to date in order to give substance to my passion: among the courses I attended, I remember those held in England

by Eddie Spence, the cake designer who supplies the Royal English House.

At the time when I started there was no Facebook, there was the Internet though, and I began to post my pastry work into groups. Little by little my followers increased, so I decided to expand registering for VAT and my passion turned into a job; I was asked to chair events and it is now seven years since I started travelling and teaching, and four years ago I joined the big FIPGC family. Today, at fifty, I am a successful woman, but I keep on opening my mind and heart to innovation, to study. Among the techniques that I mostly love there are sugar flowers, realistic modelling, edible painting, and above all royal icing».

Among Kristina Rado’s achievements we can mention the double victory of the gold medal at the Cake International Competition 2013 and 2014 in Birmingham, category Wedding cakes. She also won the Royal Icing Award 2014 of the prestigious Cake Masters Magazine and the Top 10 Cake Designer 2017 at the New York Cake Academy.

Roberto Mascellaro Un professionista a tutto tondo

Coach della Nazionale Italiana ai Mondiali FIPGC Roberto Mascellaro, delegato FIPGC della provincia di Bari, è uno dei due coach (l’altro è Angelo Gala) che ha accompagnato la nazionale italiana ai campionati FIPGC di HostMilano 2017. Da quattordici anni nel mondo della ristorazione, dopo aver conseguito il diploma alberghiero, Mascellaro s’è appassionato di pasticceria affinando le sue competenze grazie a masterclass tenute da grandi nomi internazionali, una formazione che continua anche oggi benché arrivato ad alti livelli.

«Come coach ho seguito la squadra durante quelli che per noi

sono a tutti gli effetti degli allenamenti per conseguire le opere portate in gara - spiega Mascellaro che continua – e in particolare ho organizzato le tempistiche. Infatti, in gara si hanno circa sette ore e non è affatto facile realizzare i componenti e assemblare nei giusti tempi. Inoltre, ho dato consigli sulle tecniche da usare e in ultimo, ma non per importanza, ho dato i miei pareri sulla degustazione». Roberto Mascellaro ai campionati 2017 ha rivestito il ruolo di coach e giurato italiano, ma ricordiamo che è stato “dall’altra parte”, come concorrente. Lo ricordiamo, in fatti, nel gruppo dei primi tre posti al Cake Designers World Championship nel 2016, nella categoria Pastigliaggio e Torta Moderna e Premio Sirman. Mascellaro attualmente è titolare con il fratello della Pasticceria Dolceria “Le divine golosità” nella cittadina di Gravina in Puglia, tiene corsi per FIPGC e fornisce consulenze per privati e aziende.

Mascellaro, who has entered the world of catering fourteen years ago, after his high school diploma from a hotel management school, has developed a passion for pastry. He has refined his skills following master classes held by great international names, a training that he still carries on today, even if he has reached high levels. «As a coach I followed the team during what we consider in all respects a training to realize the works carried out

during the competition, Mascellaro explains and in particular I scheduled the timelines. In fact, the competition lasts about seven hours and it is not easy to create all the components and assemble them together in time. Moreover, I gave advice on the techniques to be used and, last but not least, I gave my opinion on tasting». At the 2017 championships Roberto Mascellaro has played the role of Italian coach and juryman, but it is worth to remember that he has been “on the other side” as a competitor. We remember him, in fact, in the group of the top three places at the Cake Designers World Championship in 2016, in the Pastillage and Modern Cake category and the Sirman Prize. Currently Mascellaro is the owner, with his brother, of the pastry shop “The Divine Genius” in the small town of Gravina in Puglia, he holds courses for Fipgc and provides consultancy for individuals and companies.

Pasticceria e viaggi sono la mia vita In questa pagina vi presentiamo un altro volto importante in FIPGC. In Federazione Barbara Castiglione è entrata sin dai primissimi tempi, vedendo nascere, crescere ed espandersi il gruppo presieduto da Roberto Lestani.

Attualmente, oltre ad essere coach di Fabio Orlando, concorrente italiano per il Cake Designer Wordchampionship, Barbara è la responsabile delle relazioni internazionali della federazione.

«Dopo che Fabio ha vinto i campionati italiani abbiamo subito iniziato a metterci all’opera per i mondiali di Host - racconta – e lo abbiamo fatto partendo dal tema della gara, il cacao. Abbiamo condotto una ricerca storica e geografica sui paesi produttori, ma non solo. Abbiamo approfondito le varie tecniche di lavorazione del cacao e del cioccolato, abbiamo poi immaginato l’opera, disegnandola e facendo dei prototipi in vari materiali. Poi siamo passati a produrre i vari componenti della torta fino a realizzare quella che sarà la torta effettiva. C’è tanto studio in questa nostra collaborazione, perché ogni elemento dell’opera dolciaria è stato realizzato con tecniche differenti, tecniche che Fabio può dimostrare di saper padroneggiare

durante la gara. Quante più tecniche sono usate in un’opera di cake design, tanto più la torta è pregiata. Ma naturalmente non si tralascia il sapore, e ci siamo adoperati anche sul lato gusto».

Come detto all’inizio, Barbara non è solo coach, ma è anche referente per le relazioni internazionali, ruolo che la vede in prima linea nel progetto International Pastry Academy, una serie di scuole della federazione che si stanno aprendo all’estero.

«Stiamo puntando all’Asia con corsi base e master avanzati, ma il progetto si allarga ad Australia, Sud America e andremo nel tempo oltre, mirando a portare le nostre competenze in paesi con una forte potenzialità di crescita nel mondo pastry».

Barbara Castiglione has entered the Federation since the earliest times, therefore she has seen the group chaired by Roberto Lestani born, grow and expand.

At present, Barbara is responsible for the international relations of the Federation and, in addition, she is coaching Fabio Orlando, the Italian competitor for the Cake Designer Word Championship. «We started working at the Host World Campionship soon after Fabio won the Italian championships - she says and we decided to start from the theme of the competition, cocoa. We carried out historical and geographical

researches on the producing countries, and we also deepened the various techniques of cocoa and chocolate processing. Then, we imagined and designed our work, making prototypes in various materials. Next we started to produce the various components of the cake until we made what would be the actual cake.

There is a lot of research in our collaboration, because every piece of the cake has been made using different techniques, so that Fabio will show his ability to master them during the competition. The more techniques are used in a cake design work, the more the cake is precious. But of course we did not leave out the flavour, and we worked on the taste, too. » As mentioned before, Barbara is not only a coach, but she is also the representative for international relations, a role that sees her in the forefront of the International Pastry Academy project, a series of schools the Federation will open abroad.

un colorante seducente e sicuro La decorazione dei dolci è sempre più importante nel lavoro di pasticceria, e abbraccia diverse tecniche, diversi stili, dai più classici ai più spinti.

Spesso basta anche un piccolo particolare per rendere l’aspetto di una monoporzione, di una torta o di una creazione in cioccolata particolarmente elegante, ad esempio l’uso dell’oro che, con il suo inconfondibile colore brillante dona luce alle creazioni.

In effetti l’uso dell’oro nelle preparazioni alimentari non è cosa moderna: ne è attestato l’impiego in cucina nell’antico Egitto e nella cultura orientale, ma questo uso s’è perso, fino a ritornare in auge negli ultimi trent’anni.

preparazione alimentari, non si può non farsi delle domande sul suo aspetto nutrizionale e sul suo effetto sull’organismo. In foglie o come “pittura” su uova di Pasqua, o dessert, è a tutti gli effetti un componente di molte ricette.

Tra i tipi di oro alimentare più utilizzati ci sono quello in polvere e quello in foglia: il primo è oro 23 carati macinato in polvere molto fine (Ø 1 mm.), il secondo è oro 23 carati lavorato in sottilissimi fogli da mm. 86x86. L’oro alimentare in briciole è dato sempre da oro 23 carati, ma lavorato in piccole briciole (Ø 4 mm.); infine quello in fiocchi è lavorato in sottilissimi fiocchi (30 mm.).

Oltre l’oro si può anche usare l’argento ali-

mentare, negli stessi formati e si tratta di argento praticamente puro.

Tutti questi tipi di metalli sono trattati con procedimenti tali da renderli adatti all’uso alimentare. L’oro edibile (la direttiva 94/36/CE del Parlamento Europeo e del Consiglio del 30 giugno 1994 lo classifica come colorante alimentari E-175 e E-174) è accompagnato da una certificazione alimentare che ne garantisce l’assoluta assenza di controindicazioni per la salute. Se non aromatizzato l’oro alimentare non avendo alcuna reattività con il nostro palato non altera il sapore dei cibi. Quando degustiamo un dolce decorato con i metalli alimentari, essi arrivano nel nostro organismo ma non sono digeriti in quanto i nostri succhi gastrici non riescono ad intaccarli in maniera significativa; poiché ne assumiamo, con un dolce, davvero in piccole quantità non abbiamo alcuno effetto sul loro passaggio nel nostro stomaco e intestino. Si possono ritenere sicuri e non hanno rilevanza dal punto di vista nutrizionale.

Edible Gold: safe and seductive food colouring The decoration of cakes is becoming more and more important in pastry work, embracing different techniques and different styles, from the most classic to the most innovative.

Generally you only need to add a little particular to a single-portion, a cake or a chocolate creation to turn it into something particularly elegant, for example adding gold, whose inimitable brillant colour gives light to the creations. In effect, the use of gold in food preparations is not a modern invention: it has been proved it was used in ancient Egypt and in Oriental cooking culture, but then it fell into oblivion until its revival in the last thirty- years.

When talking of a metal like gold in food preparation, you cannot help but raise questions about its nutritional aspects and its effect on the body. In leaves or in “painting” on Easter eggs or desserts, it is in fact a component of many recipes.

The most widely used types

are powdered and leaf gold: the first is 23 carat gold powdered in very fine powder (Ø 1 mm), the second is 23 carat gold processed in very thin sheets of 86x86 mm.

Edible gold crumbs is also made of 23 carat gold, but it is processed in very small crumbs (Ø 4 mm.); finally, edible gold leaf flake is worked in very thin flakes (30 mm). I n addition to gold you can also use edible silver, which is almost pure silver that comes in the same formats.

All these metals are treated with processes that make them suitable for food use.

Edible gold (the European Parliament Directive 94/36/ EC and Council Directive of 30 June 1994 classify it as food colour E-175 and E-174) is accompanied by a food certification guaranteeing the absence of any side effects for health.

When free of added aromas, edible gold does not alter the flavor of the foods.

When we taste a cake decorated with edible metals, these enter our body but cannot be digested, as our gastric juices are not able to attack them significantly; the small quantities of metals contained in a cake have no effect during their passage in our stomach and intestines, so we can consider them safe and with no relevance from a nutritional point of view.

Ingredienti per 4 persone Per i bignè (éclairs) • 500 g di acqua • 200 g di burro • 300 g di farina • 10 g di sale • 60 g di Prime Uve Bianche • 7-8 uova (dipende dalla grandezza) Per il cremoso alle mandorle • 1000 g di panna • 165 g di zucchero • 230 g di tuorli • 15 g di colla di pesce • 210 g di pasta di mandorle Crema diplomatica al caffè • 1000 g latte • 40 g caffè solubile • 200 g di tuorli • 300 g di zucchero • 90 g di maizena • 15 g di colla di pesce • 1200 g di panna

Preparazione Bolliamo acqua, burro e sale. Uniamo la farina e cuociamo per 2-3 minuti a fuoco vivo, poi versiamo il composto nell’impastatrice. Lavoriamo con la foglia, e quand’è tiepido iniziamo a versare le uova una alla volta affinché l’impasto diventi elastico. Una volta freddo uniamo la Prime Uve. Con una sac à poche formiamo gli éclairs sulle teglie antiaderenti e cuociamo a 200°c per almeno 16-17 minuti. Ammolliamo la colla di pesce. Nel frattempo prepariamo una crema inglese: raggiunti gli 82° C uniamo la colla di pesce ben strizzata e la pasta di mandorle, frulliamo per un paio di minuti e abbattiamo velocemente. Ammolliamo la colla di pesce in acqua e ghiaccio mentre portiamo a bollore latte e caffè solubile. Versiamo un po’ alla volta sul composto di tuorli, zucchero e maizena e procediamo come per una crema pasticcera. Quando bolle al centro togliamo dal fuoco e uniamo la colla ben strizzata: portiamo il tutto a 35°C e uniamo la panna montata. Abbattiamo velocemente.

Preparazione del piatto. Prepariamo una gelatina con la Prime Uve Bianche e le mandorle caramellate. Tagliamo gli éclair nel senso della lunghezza, e riempiamo alternativamente con le creme. Completiamo con le gelatine e le mandorle caramellate.

Method Boil water, butter and salt. Add the flour and cook for 2-3 minutes on a bright heat, then pour the mixture into the mixer. Work with the leaf, and when it is warm add the eggs one by one to make the dough become elastic. Once cold, add the Prime Uve. With a sac à poche, form the éclairs on non-stick trays and cook at 200° C for at least 16-17 minutes. Soak the gelatin leaf. Meanwhile, prepare a custard: reach the temperature of 82°, add the well squeezed gelatin leaf and the almond paste, whip for a couple of minutes and quickly freeze. Soak the gelatin leaf in water and ice while bringing to a boil milk and instant coffee.

Pour on the yolks, sugar and maize-starch mixture a little at a time, and proceed as if for a custard. When bubbling in the center, get out of the heat and add the well squeezed gelatin leaf: reach 35° C and incorporate the whipped cream. Quickly freeze. Dish preparation. Prepare a jelly with the Prime Uve Bianche and the caramelized almonds. Cut down the length of one side of the éclair and fill it alternately with the creams. Complete with the jellies and the caramelized almonds.

Dott. Cinelli, può descriverci in sintesi, tramite parole chiave, i plus dell’azienda FUGAR? «La Mission di Fugar è quella di essere Leader di Qualità nella produzione e commercializzazione di ingredienti composti d’eccellenza per Pasticceria e Gelateria artigianale. L’elemento comune tra il nostro modo di fare impresa e gli ingredienti che utilizziamo nella produzione delle referenze Fugar è la Responsabilità Etica. Responsabilità Etica di cosa, come, dove e per chi produciamo i nostri ingredienti composti. È alla base di tutto ciò che siamo, pensiamo e facciamo.

La nostra Mission è quella di far conoscere la nostra filosofia di qualità, senza scendere a compromessi, lavorando sempre in maniera etica e responsabile, con coerenza e nel rispetto di chi lavora con noi e in primis del consumatore, impiegando tutte le nostre energie e risorse per far cultura, al fine di ottenere quello che per noi è il più grande e importante obiettivo, ovvero la Totale Soddisfazione del Cliente.

Quali prodotti state spingendo o spingerete nel 2018? Ci saranno novità il prossimo anno?

«Abbiamo grandi ed ambiziosi progetti in linea con l’ispirazione salutistica e golosa, infatti da qualche anno Fugar rivolge particolare attenzione e ricerca al mondo Vegan.

Dopo lo straordinario successo ottenuto dalla linea ólvi, la vera rivoluzione naturale nel mondo del gelato artigianale, è nata una linea di prodotti di pasticceria certificati VEGANOK che si rivolge ai professionisti più attenti, che trovano nella gamma Vegan la stessa affidabilità e garanzia di successo che contraddistingue la produzione Fugar. Sicuramente anche il 2018 sarà un anno green e pieno di novità».

A quali fiere parteciperete in Italia e all’estero il prossimo anno?

«Al momento le fiere in cui parteciperemo in Italia saranno sicuramente il Sana a Bologna, la Mig a Longarone e il Sigep a Rimini. Stiamo valutando ulteriori iniziative sia in Italia che all’estero».

What products are you pushing at the moment or will you push in 2018? Will there be news next year?

«We have great and ambitious projects, in step with the healthy and sweety inspiration. In fact, for some years now Fugar has been paying close attention and great research to the Vegan world.

After the extraordinary success achieved by the line ólvi, the true natural revolution in the world of artisan ice cream, a line of VEGANOK certified confectionery products has born, which caters for the most attentive professionals, who will find in the Vegan range the same reliability and guarantee of success which distinguishes the Fugar production. Undoubtedly, also 2018 will be a green year, and full of news».

Which trade fairs will you attend in Italy and abroad next year?

«Until now, the fairs we are going to attend in Italy will surely be Sana in Bologna, Mig in Longarone and Sigep in Rimini. We are considering further initiatives both in Italy and abroad».
