In attesa che sia... meglio In questi tempi che passeranno alla storia come gli anni del Covid, anche se per tutti noi sembra sia tutto drammaticamente fermo, in realtà tutto è in continua e inarrestabile evoluzione. Parliamo del settore della pasticceria e della gelateria che a causa delle restrizioni imposte dai diversi DPCM ha subito più di altri comparti le nefaste conseguenze di una crisi inattesa e repentina. Abbiamo vissuto, e stiamo vivendo, mesi dove a causa dei locali chiusi, delle feste e delle cerimonie rimandate le vendite sono crollate.

Autorevoli analisti affermano che comunque il mondo Pastry nonostante le gravose difficoltà resta vivo e vitale e sarà pronto a recuperare velocemente il terreno perduto non appena si tornerà alla normalità.

Ma questo auspicato ed atteso nuovo inizio non potrà non tener conto di quanto è successo, i pa-

sticceri saranno chiamati, oltre che a garantire la qualità di sempre, anche a fornire la massima sicurezza, nei loro locali: massima igiene, spazi ridisegnati e nuovi modelli organizzativi che tengano anche conto dei sistemi di vendita che sono emersi durante la pandemia, e-commerce, delivery su tutti sistemi che aprono di fatto a nuovi spazi di mercato ed offrono opportunità che prima non c’erano.

“In ogni difficoltà c’è sempre un’opportunità”, recita un vecchio e sempre attuale adagio, chi sarà capace velocemente di sfruttare queste nuovi spazi di mercato si creerà un vantaggio competitivo che gli consentirà di recuperare prima degli altri il terreno perduto.

Dicono che dopo il Covid nulla sarà come prima, ma forse a sfruttare il nuovo che avanza, dopo, potrà essere meglio di prima.

Waiting for better days Even though everything seems to have come to a dramatic standstill for all of us in these times, which will be recorded in history as the Covid years, in reality everything is in continuous and unstoppable evolution. We are talking about the pastry and ice-cream sector, which, due to the restrictions imposed by the various Prime Ministerial Decrees, has suffered more than other sectors the adverse consequences of an unexpected and sudden crisis. We have experienced, and are still experiencing, months in which sales have plummeted due to closed premises and postponed parties and ceremonies.

Prominent analysts say the Pastry world is still alive and kicking despite the severe difficulties, and will be ready to make up lost ground quickly as soon as things return to normal.

But this hoped-for and eagerly awaited new beginning cannot fail to take account of what has happened. As well as guaranteeing the same high quality as always, confectioners will also be asked to provide maximum safety in their premises: maximum hygiene, redesigned spaces and new organisational models which have to take into account also the sales systems emerged during the pandemic, e-commerce and delivery above all, systems that open up new market spaces and offer opportunities not available before.

“In the middle of difficulty lies opportunity”, says an old and evergreen quote. A competitive advantage will enable those who quickly exploit these new market spaces to recover lost ground before others do.

They say that nothing will be the same after Covid, but perhaps by taking advantage of the new opportunities, the coming times will be better than the previous ones.

Magari coccolando il cliente con abbinamenti inediti di caffè e frutta essiccata, con tecniche di estrazione alternative, con menu che suggeriscono l’accoppiata con il dolce o il salato. Per invertire la tendenza figlia del lockdown

Quello che cambia è l’approccio della caffetteria, che diventa luogo di degustazione. INNOVAZIONE Riorganizzare la produzione con nuove tecnologie, macchine, soluzioni È vincente l’idea del contactless nei sistemi di ordine e pagamento, anche quando le persone potranno tornare a vivere fuori casa. I luoghi dove consumare i pasti sono parte della routine delle persone, trasmettono un senso di coinvolgimento emotivo che dà anche una sensazione di sicurezza e, quindi, di salute. Dunque, il combinato disposto di tecnologia contactless e meccanismi premianti di consumo come l’accumulo punti di spesa e fiducia è la chiave di lettura della ripresa.

Sweet out of home: how to restart?

Rationalisation and simplification are the great allies of the pastry shop, which is now facing the challenge of increasing revenues by reducing waste and unsold goods.

This change of perspective has to be based on a careful analysis of turnover, sales and processes, in order to redesign the whole business, from the laboratory to the counter, right up to the shop window. The five steps for a new start are as follows.

DIGITAL - Exploiting the full potential of digital marketing and social media New technology and skills can be brought into the workshops, with specific software to manage the shop and reduce waste, and a technologist in charge of its use, with orders collected both in-house and online, and display and storage systems to reduce spoilage. Planning is the key word for large operations that need to secure their raw material availability well in advance and to plan all aspects, logistics included.

Rethinking the quantity and type of products on display: producing less to sell more. Virtuous examples are the entrepreneurs who have not wasted the crisis by using the lockdown time to define a strategy for a growing production. New and large laboratories have revolutionised the process of production, serving the point of sale with completely revised logistics and the need to communicate better at the counter, as well as on social media.

SUSTAINABILITY - Rediscovering the territory and exploiting new market trends The University of Gastronomic Sciences of Pollenzo introduces the theme of reducing food waste into its activities, between

research and didactics. A ‘holistic’ approach to food and its preparation as a new tool for professional improvement in terms of the circular economy. The two Ts of technology and tradition urge us to look at the versatility of food, to discover how simple it was in the past to use the whole raw material for the production of food.

CONSUMPTION EXPERIENCES - Rethinking the point of sale to bring customers back to the pastry shop From the counter to the table, this is the recipe of the Specialty Coffee Association Italia. Perhaps by pampering the customer with unusual combinations of coffee and dried fruit, with alternative extraction techniques, with menus that suggest pairing them with sweet or savoury foods. The aim is to reverse the lockdown trend of increased coffee consumption at home and bring the coffee ritual back to its dedicated temple, be it a bar or a pastry shop. The difference is the approach of the coffee shop, which becomes a place for tasting. Consistency always pays off and is the driver of success in getting customers to

return to the café, and holds together competence, communication and raw coffee material.

INNOVATION - Reorganising production with new technologies, equipment and solutions

The idea of contactless in ordering and payment systems is a winning one, even when people will start to live outside their homes again. Places to eat are part of people’s routines, they convey a sense of emotional involvement and a feeling of security and, therefore, of health. So, the combination of contactless technology and rewarding consumption mechanisms such as the accumulation of spending and trust points is the key to the recovery.

Panettone tutto l’anno?

È il vero trend in ascesa. Piace a grandi e piccini. E sempre più spesso viene utilizzato per far colazione.

Complice una lunga data di scadenza, sempre più spesso il panettone da Natale arriva a Pasqua. Il re dei lievitati si conferma un evergreen: che venga usato come riciclo creativo in cucina o come semplice dolce a tavola. E vedendo la colomba sostituirsi al panettone possiamo finalmente dirlo a ragion veduta: dobbiamo fare i conti con il panettone a tavola tutto l’anno. Che sia Natale, Pasqua, Ferragosto, avere un grande lievitato è il nuovo trend degli italiani. È dal Sud che comincia a diffondersi il movimento del panettone tutto l’anno. Il lavoro è stato portato avanti dagli artigiani del panettone che, scoglio dopo scoglio, sono arrivati al proprio obiettivo. La destagionalizzazione di uno fra i prodotti più amati dagli italiani.

In principio fu Alfonso Pepe, alfiere del panettone al Sud. Come dimenticare, poi, gli altri esperi-

menti di lievitato: la pastiera lievitata (con la pasta simile a quella del panettone, arricchita di ricotta ed essenza di zagare), ma anche l’usanza che aveva Alfonso di proporre il panettone di Ferragosto: delle infornate fatte appositamente per le vacanze, “da portare sotto l’ombrellone”. L’ultimo format nato in tal senso è quello di Simone De Feo di Cremeria Capolinea, a Reggio Emilia: si chiama Gelato e Panettone il nuovo formato ideato da Simone, lievitista provetto che si è lanciato nell’avventura del lievitato tutto l’anno, abbinandolo però al prodotto che è il suo core business: il gelato.

Un tempo il panettone si mangiava solo nel periodo natalizio.

Da qualche anno, il più classico dei dolci invernali, lo si trovava in pasticcerie e in alcuni forni più rinomati fino alla primavera inoltrata. Poi si è iniziato a vedere in estate con il gelato: una leccornia.

Fresco, spesso di giornata, ormai il panettone sta sostituendo brioche, cornetti o torte nelle colazioni. Panettone non solo dolce.

Sempre più diffuso quello “gastronomico” da farcire con salumi, formaggi, verdure e salse per realizzare i famosi Pan canasta, ormai immancabili negli aperitivi o ai buffet.

Lo abbiamo chiesto a Roberto Lestani presidente FIPGC: È ormai tradizione gustare una fetta di panettone artigianale anche in estate?

«La cultura del panettone si sta espandendo oltre che in Italia, anche all’estero. È iniziata sì, non

dico una tradizione, ma sono sicuramente iniziati i consumi anche in periodi primavera/estate. Certo non sono consumi importanti, però il panettone è entrato tra quei prodotti che iniziano ad avere un aspetto annuale e non più di stagionalità.

Tutti gli artigiani possono valorizzare questo prodotto, come altri prodotti e cercare sempre più di venderlo anche nei periodi estivi, magari con abbinamenti diversi, originali e perché no, legati al proprio territorio. Renderlo più leggero con gusti fruttati, ottimo da far gustare nel periodo estivo, oppure farciture particolari legate alla stagionalità e quindi con un tocco di freschezza.

Infine è ottima l’idea di abbinare una fetta di panettone a delle creme leggere, fresche… quindi non più solo come prodotto da forno ma anche come prodotto che accompagna una deliziosa crema».

Panettone all year round?

It’s the real up-and-coming trend. People of all ages love it.

And it is increasingly being used for breakfast.

Due to its long expiry date, more and more often the Christmas panettone is eaten until Easter. The king of leavened products is a confirmed evergreen, no matter whether it is used for creative recycling in the kitchen or as a simple dessert at the table. And since the panettone has been replaced by the dove, we can finally say with good reason: we have to deal with panettone on our tables all year round. Whether it’s Christmas, Easter or August, a big leavened cake is the new trend among Italians. It is from the South that the year-round panettone movement is starting to spread. The work has been carried out by panettone artisans who, obstacle after obstacle, have reached their goal: the de-seasoning of one of Italy’s most popular products.

In the beginning was Alfonso Pepe, forerunner of panettone in the South. His other experiments in leavened products are also worth mentioning: the leavened pastiera (with a dough similar to that of panettone, enriched with ricotta and orange blossom essence), but also Alfonso’s custom of proposing panettone in August: special holiday batches “to be taken under the beach umbrella”. The latest created format is that of Simone De Feo of Cremeria Capolinea, in Reggio Emilia: it is called Gelato e Panettone (Ice Cream and Panettone), the new formula created by Simone, an expert leavening master who has ventured into the year-round leavening business, combining it with his core product: ice cream.

Once, it was only eaten at Christmas time. In recent years, Panettone, the most classic of winter sweet breads, could be found in pastry shops and some of the most renowned bakeries until late spring. Then it started to be seen in summer with ice cream: a delicacy.

Fresh, often daily baked panettone is now replacing brioche, croissants or cakes in breakfast. Panettone is not only a sweet bread. The “ gastronomic” Panettone is becoming increasingly popular, to be filled with cold cuts, cheeses, vegetables and sauces to make the famous Pan canasta, now a must for aperitifs or buffets.

We asked Roberto Lestani, president of the FIPGC: is it now a tradition to enjoy a slice of artisan panettone in summer too?

«The culture of panettone is expanding not only in Italy but also abroad. Yes, I won’t say it has become a tradition, but consumption has certainly started in spring and summer too. Of course it’s not a major consumption, but panettone has become one of those products that are beginning to have an annual aspect and are no longer seasonal.

All artisans can make the most of this product, as well as of other products, and try to sell it more and more even during the summer, perhaps with different, original combinations and, why not, linking it to their own territory. Making it lighter, with fruity flavours, perfect for the summer period, or with special seasonal fillings that give it a touch of freshness.

Finally, it is an excellent idea to combine a slice of panettone with light, fresh creams... so no longer merely as a baked product, but also as a product that accompanies a delicious cream».

In molti potrebbero pensare ad un azzardo o al massimo ad un trend del momento ma bisogna sapere che la birra e i dolci sono un abbinamento di lunga tradizione ed azzeccatissimo, basta scegliere le birre giuste ovviamente.

La birra è da sempre (o almeno dall’introduzione del luppolo nella ricetta) perpecita come una bevanda amara ma bisogna sapere che esistono birre di qualsiasi gusto e quelle effettivamente amare sono solo alcune tra le innumerevoli tipologie della birra.

Non scordiamoci che l’ingrediente principale della birra, quello che per il vino è l’uva per intenderci, è il cereale, in genere il malto d’orzo oltre ad altri “succedanei”, che di base creano un mosto dolce e zuccherino.

C’è birra e birra, sicuramente una Lager o una

Pils non sono per nulla adatte all’abbinamento con i dolci ma le “infinite” tipologie della birra dicono ben altro, vediamone alcune nello specifico: Stout - caffè e cioccolato sono i sentori principali di queste birre che si abbinano perfettamente a torte al cioccolato e crostate al cacao per non parlare del nostro italianissimo tiramisù che in molti casi è stato ribattezzato birra-misù.

Fruit Beers - birre a fermentazione spontanea tradizionali come “kriek” e “framboise” sono meravigliose con dolci alla frutta che siano al cucchiaio o torte, crostate con composte e marmellate e i più moderni cheesecake.

Barley Wine - la forza dei cereali danno a queste birre un tenore alcolico talmente alto tale da essere paragonate al vino. Pasticceria secca, tarallucci dolci, paste di mandorle, torte con frutta secca sono il loro abbinamento migliore.

Trappist Dubbel - frutta e toni caldi sono sentori ricorrenti in queste birre che dalla loro origine religiosa potrebbero essere abbinate invece a qualcosa di più peccaminoso: la pera cotta nella Westmalle Dubbel con mousse di cioccolato 55%

è un classico da Unibirra, punto di riferimento per la formazione sulla birra in Italia e pionieri della cucina alla birra e dell’abbinamento birra-cibo.

Quadruple - liquorose, dolci, fruttate e con toni caldi a queste birre non manca proprio nulla, sono molto trasversali e si possono abbinare a dolci diversi, dai moderni cupcake con crema al burro a torte sostanziose con frutta, frutta secca o cioccolato. Nella abbazia di Koningshoeven in Olanda sono un ingrediente fondamentale per i cioccolatini ripieni con una ganache alla birra strepitosa: come fanno a farli così buoni non è dato saperlo ma una volta assaggiati scoprirai che la birra è fondamentale.

Faro - agrodolce “Lambic” con zucchero di canna è perfetto con i biscotti al burro o in generale con la classica pasticceria da the, chissà che alle cinque del pomeriggio non sia meglio una birra?

- Corsi di Formazione Training Courses - Gastropub - Beer-shop scure con toni caldi, torrefatti e speziati, qualcuno dice addirittura di berle al posto del caffè. Dolci della tradizione tedesca, con frutta secca tostata, caffè e cacao sono l’ideale per una birra così saporita e corposa. Fidati, provala con i tradizionali “Lebkuechen” ma anche con il “Kringel” con noci e cioccolato o con la fantastiche “Schneeballen” di Rottenburg, non te ne pentirai.

In conclusione abbiamo capito che la birra si abbina nella maggioranza dei casi per similitudine, con gusti e profumi che devono essere “assonanti” alle caratteristiche del piatto del quale vogliamo fruire.

La nostra “dolce” birra e i desserts sono quindi fatti per essere uniti, una con l’altro per un “dulcis in fundo” ricco di sapori e profumi meravigliosi.

A “sweet” Beer Many may think of it as a gamble or, at most, a trend of the moment, but it must be said that beer and desserts are a combination with a long and very successful tradition, as long as you choose the right beers, of course.

Beer has always been perceived as a bitter drink (or at least since hops were introduced into the recipe), but it is important to know that there are beers of all flavours and the actually bitter ones are just a few of the countless types of beer. The main ingredient in beer, the equivalent of grapes in wine, is cereal, usually barley malt and other “substitutes”, which create a sweet, sugary wort.

There are beers and beers, and a Lager or Pils is not at all suitable for pairing with desserts, but the “endless” types of beer say much more. Let’s look at some of them in detail: Stout - coffee and chocolate are their main aromas, which match perfectly with chocolate cakes and cocoa tarts, not to mention our very Italian tiramisù, which in many cases has been renamed beer-misù.

Fruit Beers - traditional spontaneously fermented beers such as “kriek” and “framboise” are delicious with fruit desserts, spoon cakes or cakes, pies with compotes and jams and the more modern cheesecakes.

Barley Wine - the strength of the cereals gives these beers such a high alcohol content that they can be compared to wine. Dry pastries, sweet tarallucci, almond pastries, cakes with dried fruit are their best accompaniment.

Trappist Dubbel - fruit and warm notes are recurring

scents in these beers which, despite their religious origins, might rather be paired with something more sinful: the pear cooked in Westmalle Dubbel with 55% chocolate mousse is a classic at Unibirra, a reference point for beer education in Italy and pioneers of beer cooking and beer-food pairing.

Quadruple - intense, mild, fruity and with warming tones, these beers are very versatile and can be paired with a variety of desserts, from modern buttercream cupcakes to hearty cakes with fruit, nuts or chocolate. In Koningshoeven Abbey in the Netherlands, they are a key ingredient in chocolates filled with an amazing beer ganache.

How they make them so good is not known, but once you’ve tasted them you’ll discover that beer is essential.

Faro - sweet and sour ‘Lambic’ with brown sugar goes well with butter biscuits or classic tea cakes in general and who knows, maybe at five o’clock in the afternoon a beer might be better.

Doppelbock - brewed for Lent are dark with warm, roasted and spicy tones, some people say they drink them instead of coffee. Traditional German desserts with roasted nuts, coffee and cocoa are ideal for such a tasty, full-bodied beer. Experience it with traditional “Lebkuechen” but also with “Kringel” with nuts and chocolate or the fantastic “Schneeballen” from Rottenburg, you won’t regret it.

In conclusion, it is now clear that beer is most often paired by similarity, with flavours and aromas that must be “in tune” with the characteristics of the dish we want to taste.

Therefore, our “sweet” beer and desserts are made to be combined with one another for a “dulcis in fundo” full of wonderful flavours and aromas.

fa bene o fa male?

Come tutto… dipende!! Bisogna stare attenti non solo alla quantità, ma anche alla qualità, al proprio stato fisiopatologico e al momento della giornata in cui si consuma.

Arrivato da noi dopo la scoperta dell’America, il cacao deriva dal seme del rispettivo frutto.

I semi di cacao vengono estratti dal frutto maturo e successivamente vengono sottoposti a torrefazione e macinazione, processi dai quali si ricava una farina composta da sostanze grasse, azotate e gommose. Grazie a tutti questi elementi, il cacao aiuta la memoria, l’umore, il sistema immunitario ed è utile per contrastare l’infiammazione e lo stress. Importantissima è anche la presenza di triptofano. Da questa sostanza, infatti, deriva la serotonina, meglio conosciuta come “ormone della felicità” per la sua capacità di sostenere il sistema nervoso senza iper eccitarlo. In parole semplici, la serotonina rende attivi ed energici senza causare iperattività e stress. Nelle donne, l’assunzione di cacao aiuta a stimolare gli ormoni che partecipano alla regolarità del ciclo mestruale, svolgendo una funzione antidepressiva. Inoltre, nonostante la sua azione stimolante, questo alimento riesce a favorire un buon riposo se consumato prima delle 5 del pomeriggio, lasciando quindi al triptofano il tempo necessario di trasformarsi in serotonina, induttore del sonno.

Quando è il momento migliore per consumare il cacao o il cioccolato?

Bisogna prestare attenzione soprattutto nei bambini e nei soggetti diabetici. Nel primo caso, un eccessivo consumo di cacao entro due ore dal pasto potrebbe ridurre l’assorbimento di calcio, essenziale per la loro crescita. I soggetti diabetici, invece, dovrebbero limitare il consumo di cioccolato al latte e di quello bianco a causa dell’eccessivo contenuto di zuccheri; possono però beneficiare delle qualità del cioccolato fondente. Il cioccolato è ottimo per gli sportivi che devono reintegrare il debito energetico dell’organismo; in questo caso possono consumarlo nel pasto successivo a uno sforzo fisico intenso. Altamente indicato anche per gli studenti che devono sostenere lo stress di un esame importante o i lavoratori che non devono perdere l’attenzione durante tutta la giornata; in questo caso può essere consumato sia a colazione, per fare il carico di energia fin dal primo mattino, sia a metà pomeriggio per sostenere lo sforzo mentale dello studio o del lavoro, impedendo un cedimento psicofisico pomeridiano. In conclusione sia il cacao che il suo derivato cioccolato hanno azioni benefiche sul nostro organismo se vengono consumati in modo consapevole.

Is chocolate good or bad?

Like everything... it depends! You have to be careful not only about the quantity but also the quality, your pathophysiological state and the time of day at which you consume it.

Cocoa came to us after the discovery of America and is derived from the seed of its fruit. The cocoa beans are extracted from the ripe fruit and then roasted and ground into a flour consisting of fat, nitrogen and gum. This process makes the cocoa more digestible, but deprives it of a small part of its nutritional value.

Cocoa is composed of fat, protein, essential amino acids (lysine, valine and methionine) and calcium. It also contains caffeine and theobromine, making it an energetic and tonic food that stimulates the nervous system. Finally, cocoa is very rich in flavonoids, potassium, phosphorus, iron, magnesium, vitamins B1, B6, B9, B12, vitamin D and vitamin E. Thanks to all these elements, cocoa boosts memory, mood, the immune system and is useful in combating inflammation and stress. The presence of tryptophan is also very important, as this substance produces serotonin, better known as the ‘happy hormone’ for its ability to support the nervous system without over-exciting it. Simply said, serotonin makes you active and energetic without causing hyperactivity and stress. In women, the intake of cocoa helps to stimulate the hormones involved in the regularity of the menstrual cycle, playing an antidepressant role.

In addition, despite its stimulating action, this food can help you get a good night’s rest if eaten before 5 p.m., thus giving the tryptophan enough time to convert into serotonin, a sleep inducer.

However, cocoa also contains oxalic acid, which is an anti-nutrient because it combines with minerals such as calcium and

iron and prevents their absorption. Anaemic or calcium-deficient people should therefore take cocoa away from their main meals: at least two hours before or two hours after, to prevent these nutrients from being absorbed. Cocoa, especially in excessive quantities, can cause headaches in a few predisposed individuals because of its content of methylxanthine, a vasoconstricting substance.

When cocoa is processed with cocoa butter and sugar, it becomes chocolate, a high-energy food that should be consumed in moderation. Of all the types of chocolate, dark chocolate is undoubtedly the most nutritionally recommended as it is rich in high-quality lipids and low in sugar.

When is the best time to consume cocoa or chocolate?

Caution should be exercised, particularly in children and diabetics. In the former case, excessive consumption of cocoa within two hours of a meal may reduce the absorption of calcium, which is essential for their growth. Diabetics, on the other hand, should limit their consumption of milk and white chocolate because of its excessive sugar content, but they can benefit from the qualities of dark chocolate.

Chocolate is excellent for sportsmen who need to replenish the body’s energy debt; in this case it can be consumed at the meal following intense physical exertion. It is also highly recommended for students who have to cope with the stress of an important exam or for workers who do not want to lose focus throughout the day; in this case it can be eaten at breakfast, to boost energy from early morning, or in the mid-afternoon to support the mental effort of study or work, preventing a psychophysical breakdown in the afternoon.

In conclusion, both cocoa and its derivative chocolate have beneficial effects on the body when consumed consciously.

Europei I dolci in Europa sono tanto vari quanto buoni. Dalla Sacher viennese, alla Saint Honorè francese, al portoghese Pastel de Mata, da gustare nella storica pasticceria a Betlem, sono davvero tanti tutti i dolci che potremmo gustare passando attraverso i Paesi Europei. È indubbio che i dolci aiutino a capire non solo la cultura di un Paese, ma anche il carattere stesso delle persone. Ed è per questo che spesso si dice: “Paese che vai, usanze che trovi! Luogo che vai dolce che gusti!”

Ogni luogo ha un suo dolce particolare che ci accompagna con i suoi profumi e che già dal mattino inonda le strade dei nostri Paesi, rendendole uniche anche nel ricordo.

L’Europa è la patria dei dolci più famosi al mondo e ciò non dovrebbe sorprendere, visto che è

proprio su queste tavole che il dessert è stato inserito come portata per la prima volta.

Tutti sappiamo che i belgi sono ottimi intenditori di cioccolato pregiato, che il gelato è una grandissima forma d’arte tutta italiana, per non parlare dei Macaron francesi o delle Cup Cake inglesi.

Una lunga lista di dolci attraversa in lungo e in largo l’Europa: vediamone alcuni.

Francia - Con la sua Mille Foglie, una torta composta da tre strati di pasta sfoglia e che si alternano con crema pasticcera. La parte superiore sempre decorata con glassa di zucchero e strisce di cioccolato. Questa ricetta comparve per la prima volta nel libro del cuoco francese Francois Pier della Varennes nel XVII sec.

Per non parlare della torta Saint Honorè, ricca di crema e che prende il nome dal Santo Patrono dei pasticceri francesi. È composta da pasta sfoglia, crema chibust (una crema pasticcera con aggiunta di meringa) e guarnita con una corona di bignè.

Pare sia stato proprio lo chef francese Chibust a crearla nella propria pasticceria nel 1846 a Parigi.

Portogallo - Pastel de Nata, un dolce popolare in tutto il mondo, ma nato nel quartiere di Belem a Lisbona, dove i turisti, ma non solo fanno ogni

Spagna - Churros, una tiepida pastella fritta e una spolverata di zucchero. La frittella viene poi immersa nel cioccolato fuso! Una delizia per gli occhi, ma soprattutto per il palato. Originari di Madrid.

Si narra che i Churros abbiano origini ancora più antiche. Bisogna fare un tuffo nel passato e tornare sulla penisola iberica, dove i nomadi, impossibilitati nel raggiungere le città per acquistare il pane, crearono un impasto simile, ma che potesse essere fritto in padella e non cotto al forno.

Germania - Foresta Nera è una prelibatezza composta da diversi strati di pan di Spagna al cioccolato, intervallati con una farcitura, soffice panna montata, con decorazioni di cioccolato e ciliegie candite. La sua origine è ancora avvolta in un mistero, nelle nebbie della Foresta Nera che si trova a 500 km da Bonn. Ma il primo riferimento ufficiale compare in un testo di cucina tedesco stampato nel 1930.

A causa della somiglianza con i vicoli di emergenza, la fantasia a scacchi è indicata come Battemberg.

Grecia - Katafi, uno dei dolci tipici della Grecia. Si tratta di un fagottino di pasta filo, ripieno di pistacchi, mandorle, noci tritate e cannella. Il tutto viene infornato e poi immerso in uno sciroppo fatto di mele, zucchero, cannella e limone. Insieme alla Baklava è uno dei dolci più famosi in Grecia.

Austria - Sacher, famosa in tutto il mondo, prende il nome dal suo autore Franz Sacher. Passando da Vienna non si può non passare dalla storica pasticceria Demel, oppure dall’Hotel Sacher per degustare una fetta di questa straordinaria torta. Linzer, una straordinaria e profumatissima crostata prende il nome dalla sua città di provenienza: Linz. La frolla, arricchita con farina di nocciole, (oppure mandorle), limone e cannella e marmellata di ribes rossi (oppure lampone). Questa torta detiene un record importante quello di essere la più antica ricetta codificata.

From the Viennese Sacher, to the French Saint Honorè, to the Portuguese Pastel de Mata to be tasted in the historical pastry shop in Bethlehem, there are really so many desserts we can try when passing through European countries.

No doubt that sweets help to understand not only the culture of a country, but also the character of the people themselves. This is why it is often said: when in Rome, do as the Romans do! A different place, a different dessert!

Every place has its own special sweet that accompanies us with its scents and that floods the streets of our countries from the morning, making them unique even in memory.

Europe is the home of the world’s most famous desserts and this should come as no surprise, since it was on its tables that dessert was first included as a course.

Everyone knows that the Belgians are great connoisseurs of fine chocolate, that ice cream is a great Italian art form, not to mention French macaroons or English cupcakes.

A long list of desserts runs across Europe: let’s see some of them.

France - With its Mille Foglie, a cake made up of three layers of puff pastry alternating with custard. Its top is always decorated with sugar icing and chocolate strips. This recipe first appeared in the book written by the French cook Francois Pier de Varennes in the 17th century.

Not to mention the Saint Honoré cake, rich in cream and named after the patron saint of French pastry chefs. It is made of puff pastry, chibust cream (a custard with added meringue) and garnished with a crown of cream puffs. It is

said to have been created by the French chef Chibust in his own pastry shop in Paris in 1846.

Portugal - Pastel de Nata, a dessert known all over the world, but born in Lisbon’s Belem district, where tourists and locals alike queue for hours every day for a freshly baked pastry. A cake made from a crumbly layer of puff pastry, with milk cream inside and a sprinkling of cinnamon.

Spain - Churros, a warm fried batter and a sprinkling of sugar. The fritter is then dipped in melted chocolate! A delight for the eyes, but above all for the palate. Originally from Madrid. Churros are said to have even older origins.

We have to go back in time to the Iberian Peninsula, where the nomads, who could not reach the towns to buy bread, created a dough similar to it but which could be fried in a pan and not baked.

Belgium - Waffles, suitable for any time of day. In Belgium we can find the Liege original, thick and chewy and simply served with caramelised sugar on its surface.

Germany - Black Forest, is a delicacy consisting of several layers of chocolate sponge cake, alternated with a filling, soft whipped cream, with chocolate decorations and candied cherries. Its origin is still shrouded in mystery, in the mists of the Black Forest which is 500km from Bonn. But the first official reference appears in a German cookery text printed in 1930.

Austria - The world-famous Sacher is named after its creator Franz Sacher. If you’re passing through Vienna, don’t miss the historic Demel pastry shop or the Hotel Sacher for a slice of this extraordinary cake. Linzer, an extraordinary and fragrant tart that is named after its city of origin: Linz. The shortcrust pastry is enriched with hazelnut (or almond) flour, lemon and cinnamon and redcurrant (or raspberry) jam. This cake holds an important record: it is the oldest codified recipe.

Sweden - Kanelbulle, a sweet born in the 1920s as a breakfast cake. It consists of a leavened dough, which is covered with a thin layer of butter, sugar and cinnamon, rolled up, sliced and baked. In Sweden there is also a festival dedicated to Kanelbulle.

Italy - Tiramisu, it’s hard to choose the dessert that can represent our country, but Tiramisu is the fifth best known Italian word in the world, and the first for desserts. It is a spoon dessert made of ladyfingers soaked in coffee, covered with mascarpone cream, and then dusted with cocoa powder.

United Kingdom - Battemberg cake (England), a cake that is as delicious as it is funny. A light sponge cake, alternately coloured in pink and yellow and then cut into small cubes, filled with apricot jam and wrapped in marzipan. Due to its resemblance to the emergency vehicles, the chequered pattern is referred to as Battemberg.

Greece - Katafi one of the Greek traditional sweets.

It is a phyllo dough bundle filled with pistachios, almonds, chopped walnuts and cinnamon. It is baked in the oven and then dipped in a syrup made of apples, sugar, cinnamon and lemon. Along with Baklava, it is one of the most famous sweets in Greece.

Taste seekers Torrefazione Caffè Lelli was founded in 1996, by Leonardo Lelli, roaster and president of the Company based in Bologna, Italy.

The entire artisan production process takes place under the expert supervision of Leonardo who personally selects and buys raw coffee beans from plantations all over the world. His manual, slow and so called “city-roasting” process (medium-light) is achieved by circulating warm air and low temperature, in order to ensure an even roasting of the bean. In order to guarantee a real quality, we roast coffee on demand, for preserving the freshness.

Lelli chooses those coffee farmers with small, high mountains growth plantations that use less intensive natural methods of cultivation and respect biodiversity. Only hand-picked, washed green coffees of current crops are preferred. Not many roasters touch the coffee plants by their hands and fewer roasters follow the entire production chain. Lelli is among those fewer; he is an artisan and he focuses on highest quality without compromises. A specialist producer, the Company operates in a niche of the market, focusing on sales to restaurants, cafeterias, pastry shops and delicatessens.

The Company core business consists of spreading the culture of coffee and of the quality espresso, by encouraging people to appreciate different ways of tasting

coffees.

In order to develop this focus, Lelli is used to organize different kind of events during the year: tasting sessions, workshops, training courses. Il dolce ricordo di Nicola

Secondo voi un pasticcere, come immagina il paradiso? Proviamo a descriverlo: soffici nuvole di meringa e zucchero filato, collinette di crema e marzapane, fiumi di cioccolato e poi profumi di anice e vaniglia che inebria i sensi in un piacere totale. Ecco questo è il paradiso che i pasticceri sanno creare e siamo certi che in questo luogo meraviglioso ora rivive l’amico Nicola Vasile.

Nicola era di Turi in provincia di Bari, ma lavorava in una pasticceria a Gioia del Colle. Il virus subdolo l’ha colpito, ha lottato, ma invano. Aveva appena 40 anni.

Una tragedia immane, un accanimento feroce per la famiglia Basile, il Covid, appena nove giorni prima, aveva stroncato anche suo fratello maggiore Lino. La giustizia non appartiene a questa terra.

Nicola era un pasticcerie provetto, bravissimo, appassionato del suo lavoro un professionista conosciuto e apprezzato anche a livello nazionale. Un talento riconosciuto soprattutto dai clienti della pasticceria Pan di Zucchero a Gioia del Colle. Numerosi i riconoscimenti anche della Federazione Internazionale Pasticceria, Gelateria e Cioccolateria, che ha più volte pubblicato sui social le sue creazioni.

Nei tanti messaggi di commiato affidati ai social, in molti ricordano il carattere bonario, la grande disponibilità e la passione per l’arte dolciaria. Come Pietro, suo collega: “Sei stato per anni uno dei miei più validi collaboratori, abbiamo trascorso insieme giorni e notti nel laboratorio con la stessa passione che ci accomuna: la pasticceria!!! Ricordo ancora quando hai iniziato per uno stage e poi ci siamo subito trovati bene insieme ed abbiamo iniziato la nostra collaborazione, ho cercato di trasferirti tutto quello che sapevo, tutta la mia esperienza e quando mi hai detto che volevi realizzare il tuo desiderio di avere una tua attività, non potevo che essere orgoglioso della tua crescita ed ho cercato di aiutarti come ho potuto... Però ora mi hai lasciato così...con un vuoto dentro ma con tanti ricordi che porterò indelebili dentro di me!”. “Non si può morire a 40 anni così - aggiunge Francesco De Bartolo, che ben conosceva Nicola - Con un mare di progetti nel cassetto, con migliaia di sorrisi ancora da dispensare, come sempre in ogni circostanza faceva. Il Covid-19 esiste e ahimè porta via tanta gente, a volte anche molto vicina alle persone care”.
