he day Dennis and Pam started Inn Express in 2002, they desired to consistently deliver a level of service not experienced in drinks wholesale, and moving into the present day, this desire to be better than our competitors hasn’t waned, and testament to that passion is our ever-expanding team.

At the moment, our order cut-off time for all orders is 5 pm the day before your delivery.

From April 1st, this will be brought forward to 3 pm the day before your delivery. This applies to email, telephone and online orders.

This seemingly small change ensures we can give our team the correct time to pick and pack your orders, enabling us to deliver them with the level of care and attention we pride ourselves on.

ome laws regulate the use of the term ‘organic’.

However, the terms’ sustainable’ and ‘biodynamic’ are free from legal definitions. To clear things up, let’s try and explain these definitions. Firstly, there is the term ‘organic’. Typically, there are two types of organic listings on wine bottles; wines produced using organically grown grapes (avoiding the use of any synthetic pesticides or additives), and wines produced using organically grown grapes (which are also free from additional sulphites – though naturally occurring sulphites may still be present).

Unlike natural winemaking, conventional winemaking requires heavy intervention.

Pesticides are used when growing the grapes, and labgrown yeast is employed during fermentation. Acids can be added to help the wine age, and many conventional winemakers add sugar, which turns into alcohol, giving the impression of more “body.”

Biodynamic...

iodynamic farming follows similar principles to organic agriculture as it also takes place without synthetic chemicals. However, biodynamic farming incorporates ideologies that a vineyard should be viewed as an entire ecosystem. The producer also takes concepts such as astrological influences and lunar cycles into account. A biodynamic wine means that the grapes have been farmed in a biodynamic method.

The winemaker has not produced the wine with any commonly used manipulations, such as the addition of yeast or acidity adjustments. A wine made from biodynamic grapes means that although the vintner used biodynamically grown grapes, a less strict ‘set of rules’ was used in the process of winemaking.

he term ‘natural’ is a more obscure term to clarify, as there is no true definition of what constitutes a ‘natural wine or a ‘raw’ wine. Despite rising popularity, we are yet to see a recognised definition for this style. An appropriate definition for the term ‘natural’ has been penned by Isabelle Legeron MW (founder of RAW WINE), who describes wines of this variety as “living wine from living soil”. In her book (Natural Wine: An Introduction to Organic and Biodynamic Wines Made Naturally 2017), she suggests that natural wine comes from an organic/biodynamic vineyard and, therefore, has had nothing externally added or removed from the growing process. The microbiological life that exists naturally in these vineyards creates ‘living wine’ as these microbiological organisms continue to exist in the wine, even after the fermentation and bottling processes are complete. These wines are not filtered or fined. We like to think that they follow a similar concept to bottle conditioned beers.

When people think of Rioja they associate the bright fruit flavours of the Tempranillo grape and a hint of oak from ageing in barrel. Whilst not aged for long enough to be classified a Crianza, the Manzanos Temranillo had 6 months ageing in old oak barrels giving it a wonderfully classic Rioja flavour profile without having to pay Crianza prices.

This is simply outstanding wine for the money, soft super-juicy ripe plummy fruit and a long fullflavoured finish. This easy-drinking wine comes from Chile’s renowned Valle Central region, where long hot days are followed by cool nights. This temperature difference ensures the grapes ripen slowly, so they develop maximum flavour.

A blend of five vineyards working with local growers from across the Mendozan region it is clear the result was worth the effort. A very quaffable, easy drinking wine with copious amounts of blackberry, plum and cherry. Rounded tannins make this soft on the palate with a fresh finish that makes you reach for another glass.

The Mayfly, so symbolic of the first warmth of summer, drift down New Zealand’s crystalline streams and rivers providing food for the voracious trout that have made this a mecca for fly-fisherman the world over. The same pristine environment has proved to be the best place to produce the vibrant and refreshing Mayfly wines.

Los Espinos Reserva is a world apart from many mass produced offerings at similar price points. This lively single vineyard Sauvignon Blanc is bursting with vibrant zesty citrus fruit and a hint of exotic guava. Hugely refreshing, this crisp and aromatic wine is endlessly quaffable. Soft super-juicy ripe fruit and a long fullflavoured finish.

The grapes for Bella Modella Prosecco hail from fantastic sites that have perfect exposure to the sun. Picking takes place early in the morning to preserve the acidity of the grapes. BEING CARBON NEUTRAL IS

JUST THE BEGINNING

Sustainability in the wine trade doesn’t start and end in the winery. Indeed there are many aspects of the wine trade which are located in the UK such as importer Lanchester Wines and its sister business, Greencroft Bottling, which is a contract wine bottler. Both are based in County Durham.

Their philosophy is that every business has a duty of care to minimise its impact on the environment, but there is, unfortunately, no ‘one size fits all’ solution when it comes to sustainability. Lanchester Wines identified that it’s greatest opportunity to make a change is through minimising reliance on fossil fuels. And, as such, has invested around £10million in renewable heat and energy generation at its sites across the North East of England. Today the business is powered almost completely by renewable wind and solar energy.

The business’ four wind turbines produce around 5.5million kWh (kilowatt hours) of clean, renewable electricity per year. Around 42% of this electricity is used to run operations onsite with the remaining electricity – enough to power 800 three bedroom homes - feeding into the National Grid for use within the local community

This is a fantastic quality sparkling wine from France, a great alternative to Prosecco or Cava. Delivers a Champagne taste, & experience without the spends!

The Moutard family has been making wine since 1642 from its base in Buxeuil on the sunny slopes of the Côte des Bar. The family started producing Champagne in 1927 when Lucien Moutard took over the family vineyard Sharp, clean acidity with a steely minerality against a fruit profile of granny smiths and zingy citrus fruit. Bready notes from the secondary fermentation give a rich complexity that rounds off this fantastic wine.

ORANGE wine The first thing to remember about orange wine is that it is not made of oranges. The second is that it’s not really orange. Helpful huh?

range wine is a type of white wine made by leaving the grape skins and seeds in contact with the juice, creating a deep orange-hued finished product. In other words, it’s like making red wine with white grapes.

Most orange wines taste like a bolder, more savoury version of wines from the same white grape. Generally speaking, orange wines display mild flavours of stone fruit like peaches, tea flavours like strong oolong and an impression of honey without actually being sweet.

ORANGE WINE: What is it?

A quick reference guide

When making white wine, you typically remove the skin from the grapes before fermenting; with red wine, you leave the skin on. Orange wine mixes up this process by using white grapes but leaving on the skins. The result is a far richer and more full-

bodied drink than regular white wine. This is also how it gets its colour, which is much deeper than a white wine ranging from pale amber to deep orange.

MAXIMISE YOUR WINE SALES Now that we’re approaching the season where most of us look to change our menus, it’s a good time to consider whether your ‘Wine by the Glass’ (WBTG) offering is adequate and exciting enough to give you the best possible return.

You may well ask “why bother offering wines by the glass at all?”, “if I do, how many wines do I need to offer and at what price points?” and “how can I prevent wasting a load of wine once the bottles are open?”. I’ll cover all these questions below and show you some emerging trends that should help to guide your decision-making. So, here we explain the clear benefits of offering wines by the glass.

In a nutshell, selling wines by the glass does one of two crucial things. Firstly, it’s proven to increase wine sales and yields stronger cash margins than bottle sales, YES PLEASE. And secondly, perhaps most importantly of all, it helps enhance your customers’ overall experience. Happy customers leave good reviews, return if they’re relatively local and will probably spend more on future visits, but then you already knew that.

With consumers currently drinking less but drinking better, not only is this the perfect justification for offering wines by the glass in the first instance, it’s also an opportunity to put on a couple of more premium wines too. You’ll find that lunchtime

customers in particular will take advantage of this.

It’s worth talking to your best regulars to see what they would be prepared to spend up to and perhaps use this as a guide.

Ok then, how many wines & at what prices?

This is going to depend on various factors like what kind of establishment you are, how many wines you currently offer by the bottle, do you sell food or are you solely wet led, how much footfall do you get & what kind of preservation or dispense system can you afford to invest in.

This latter point is very important because a good preservation/dispense system will remove the risk of excessive wastage, meaning you can offer a broader WBTG choice. We’ll come back to this shortly.

Without any form of preservation, you’ve probably

got 2 days to turn over your bottles of sparkling, 2-3 days to turn over your white & rosé wines & 3-4 days to turn over your reds. This may mean you can realistically offer 1 sparkling, 1-2 whites & reds & 1 rosé.

In terms of pricing, the general rule of thumb is that a standard glass (175ml) equates to 85-100% of the wholesale cost of the bottle so if you only sell one glass, the loss is negligible but obviously the incentive is to turn that bottle over which shouldn’t be difficult. Don’t be afraid to try a more premium white like a Chablis & a red like a Reserva Rioja towards the £10/glass price & you may be surprised by the take up.

Ok, then What about wastage?

Ultimately the best way to reduce waste is to sell more! Simple right?

But all joking aside, starting or extending your Wine By The Glass range can seem daunting, & a concern about wastage is perfectly understandable.

However, with the right menu design, team training & the right wines, you will never look back.

One of the most popular ways to prevent waste is wine preservation & dispense systems. Your choice of system will depend on how serious you want to make your WBTG program.

So, let’s look at some of the most tried & tested:

VACUUM PUMP & STOPPERS

This cheap solution has been around for decades & is generally okay for limited WBTG ranges but they generally don’t work with sparkling wine. You simply need decent stoppers for fizz.

If you can turn the bottles over fairly quickly, vacuum pumps are fine as they’re not very accurate. Under-pump the wine & it will still oxidise, as oxygen is left in the cavity between the wine & the stopper. Over-pump & you can bruise the wine’s delicate structure.

WINE Wastage Continued...

GAS PRESERVERS

You can also buy canisters of inert gas, which are comparatively inexpensive if you have a small WBTG range but will obviously become more expensive as you broaden it. These are mostly argon-based & work by squirting an amount into the opened bottle at the end of service before you reseal it with the cork or screw cap.

They’re pretty effective for still wines & give you much longer to turn the bottles over, we’re talking weeks rather than days, but it’s not advisable to use them on sparkling wines.

CORAVIN SYSTEMS

These have become really popular with Sommelier in particular & offer a decent shelf life but the systems are quite pricey & the refill canisters even more so, especially if used heavily. These work by pushing the system’s needle directly through the unopened corked bottle, allowing you to pour the required measure before a controlled amount of argon is released into the remaining cavity space.

With the right accessories, you can also use the same system for screw cap wines & there’s a separate system for sparkling wines too.

Sommelier primarily use these for offering premium & fine wines as opposed to lower-priced wines due to the higher ongoing costs.

PRESERVATION SYSTEMS

Dominated by Le Verre de Vin for the past few decades, these are fairly expensive to purchase outright but the running costs are very low. They can pay for themselves within a few years but it’s obviously dependent on how strong your WBTG offering is. The systems can last for many years & are very accurate, & you can get dual systems that will do all your still & sparkling wines together.

There’s no inert gas involved & you have around 21 days to turn over your opened bottles.

There are also dispense systems which, again, are very expensive initially & have a higher running cost as they use inert gas to preserve the opened wines, but they look the dogs & give you a much longer shelf life. Again, these are suited to more premium wines where the transactional return is higher.

Who’s actually making the cider? Is it just Big Cider putting a label on it for a Brewer or Big Cheese – easily done but you know where the margin’s already gone Fermenting from apple concentrate or whole juice? Evaporating moisture from juice to make ‘conc’ not only wastes massive energy but totally denatures the apple. By fermenting whole juice the pure nature of the apple and its fragile

tannins remain to give those complex layers of fragrant flavour. “Wow, it really tastes of apples!”

No kidding.

Juice content? Government regs state the min apple juice content only needs to be as low as 35% - setting the bar so low you can taste the rubbish, and sugar. Super-premium ciders are more re-assuringly like 70-100% juice – a wholly different product.

What makes Taylor’s beer so special?

Knowle Spring. A natural artesian well, it provides a constant supply of pure Pennine spring water, unique to Taylor’s.

• GOLDEN PROMISE BARLEY, a high-

quality barley more associated with malt whisky. It produces a very low yield, but gives our beers that little point of difference, that Taylor’s taste.

• We use a HOP BACK. This hop back

contains more whole leaf hops and rather than boiling in them, the wort is allowed a gentle steep (like tea water/tea leaves) in this way picking up more delicate flavours that would have been lost in the copper.

• Our UNIQUE YEAST STRAIN. The

yeast has specific qualities that allow the flavours and aromas of our hops to come through, resulting in a well-balanced beer with a ‘polished clarity’ that is clean and crisp with a quenching finish.

In terms of timing, fermentation usually takes 6-7 days with a further 3-4 days of conditioning; so about 10 days in all.

• Our VIGOROUS SECONDARY

FERMENTATION. We do not filter or centrifuge yeast out as it is delivered to cask but let it all flow into the cask and even give it a bit of sugar to kick it on.

Due to this, we always request that our beers are given a minimum 48 hours, ideally a week, conditioning time in the cellar.

• We use only WHOLE LEAF HOPS (no

pellets). We are one of the last brewers in Britain to exclusively use whole-leaf hops – like using fresh herbs in cooking.

• QUALITY. One must visit our brewery to see our commitment to quality, but it is evident in everything we do.

From our British Retail Consortium (BRC) A-grade accreditation to the ‘light saber’ which we use to individually inspect each cask before it is filled to the temperaturecontrolled lorries we use to ensure our beer is delivered further afield in perfect condition.

HORIZONTAL EXTRACTION/STILLAGE 1. STILLAGE - Position on stillage. If beer sits longer than 24 hours, gently roll cask and reposition before venting 2. CLEAN the shive and the keystone with warm water 3. VENT cask with hard peg, slowly release gas and remove peg 4. TAP cask with a clean, closed tap 5. CONDITION - Leave the shive hole empty for 24 hours. Insert soft peg, ideally replace every 12 hours (min. 24 hours) until conditioned 6. SAMPLE - Pour off some beer, check for Clarity, Aroma and Taste 7. SEAL THE CASK with hard peg until ready to go on sale 8. CONNECT the line (check hop filter in place) add soft peg for sale 9. CHECK quality at the handpull - Clarity, Aroma and Taste - and serve

AT CLOSE Close the cask taps/add a hard peg to the shive, putting the cask to bed.

MORNING Open the cask tap, replace hard peg with soft peg.

Pull through at the handpull, test for Clarity, Aroma and Taste

VERTICAL EXTRACTION/STILLAGE 1. ROLL - Gently roll the cask into final position.

If the beer sits for more than 24 hours, gently roll cask and reposition before venting 2. CLEAN and dry the keystone with warm water 3. TAP the cask (clean closed tap) 4. CONDITION - Leave the vent on the tap open fully for min. 48 hours 5. CLOSE THE VENT until ready to go on sale 6. CONNECT cask to line (hop filter in place) using rod or float 7. I

n a quest to create the perfect FAQ section, we asked our team, “what is the most asked question when speaking with our customers?” The answer to this came without much thought or hesitation, and despite being pipped into first place by ‘we cant find you’ (one of the downsides of our depot being in rural Warwickshire), there was one clear winner by a country mile.*

This question is frequently delivered in a tone of panic and accompanied by gas hissing or (worse) beer flowing onto the cellar floor or (even more catastrophic) no beer coming out the taps. But the answer isn’t always that simple. So, when faced with this query, our team can only answer it effectively once we’ve asked a question.

“Who is your lead/domain brewer? “ This is usually followed by a pause and ponder from the caller, swiftly followed by, “What the

hell does that mean?” So in this article, we try to explain in more detail and offer some guidance you can share with your team when you need some assistance when that time comes.

For all cellar and drinks dispense problems, the brand owner of the products provides first-line technical services support. However, in most cases, one brewer/supplier/producer will cover all of your cellar equipment if they occupy a majority share of your draught lines.

when this happens. Whoever this is, they will be the number you call when any cellar issues arise.

OK, how do i find out who mine is?

The ’lead brewer’ is known as a brewer that occupies the majority of the taps at your venue. They are responsible for servicing and

SO, WHO IS YOUR LEAD / DOMAIN BREWER? maintaining the remote beer cooler in the cellar, pythons, the primary gas-reducing valve, their branded fonts and underbar secondary cooling.

A brand owner who is not a lead brewer is only responsible for their font, underbar secondary cooling, backboard equipment in the cellar and secondary gas-reducing valves.

SO WHO ARE YOU GOING TO CALL? you’re singing ghostbusters right?

If all beers are fobbing/not pouring and your remote cooler is not working correctly, you should contact your lead brewer.

•

If you have one product down and everything else is pouring correctly, at the correct temperature, you should contact the brand owner of the product.

•

If you have issues with a cask handpull/beer engine for a permanent cask ale installation, you should contact the brand owner of the product.

•

If you have a gas leak that isn’t isolated to a particular keg/container, contact your lead brewer.

•

If you have issues with a handpull/keg line for an independent rotating keg or cask ale, you should contact the installers of this equipment.

Despite the macro brewer stronghold on the UK on trade this overlooked style encompasses a rich tapestry of styles, each offering its own unique flavour profile & brewing tradition. Let's embark on a journey through the diverse world of lagers, uncovering the distinctions that set them apart.

Lager traces its roots to 1400s Bavaria. The word “lager,” German for “storage,” refers to the cold caves in which the beer was traditionally stored while fermenting. Brewing it during the winter & maturing it in the caves during the summer prevented spoilage & allowed the beer to keep its consistency year-round.

Popular, globally consumed & is the epitome of refinement in the beer world, it is celebrated for its crisp, elegant flavour. A masterpiece of brewing that marries tradition with sophistication, it's crafted through a meticulous cold-fermentation process, yielding a smooth, nuanced palette. Lager's golden hue is a hallmark of its purity, with styles ranging from the classic Pilsner to the robust Dunkel, each offering a unique tasting experience.

Technically lager makes up 50% of the beer styles in the World. The other being ale. The major point of differentiation between the two varieties is purely in the yeast. The yeast used during fermentation of ale tends to work better in warmer temperatures. It rises to the top of the wort during fermentation of the water & sugar, & helps create a foamy texture & a thick “head” on the beer when poured into a glass. The beer often pours rich & frothy, & has fruity, spicy flavours that are bold & delicious.

Lager, on the other hand, uses cool fermentation yeast that settles to the bottom of the wort during the fermentation process. The growth of this yeast is much slower compared to ale. It creates a subtle, smooth, & lightly flavoured beer with a refreshing palate.

HOPS ON THE POLES: Saaz hops are found in many European style lagers.

plit into two main categories. The first one being the German Pilsner, or Pils, stands as the quintessential lager style, celebrated for its crisp & refreshing character. Brewed with noble hops such as Saaz, German Pilsners boast a clean bitterness & a subtle herbal aroma.

Light in colour & effervescent on the palate, this style epitomizes the art of balance & precision brewing. Next, Hailing from Czechia, Czech Pilsner showcases a slightly different interpretation of the classic Pilsner style. With a pronounced hop bitterness & a more noticeable malt presence, Czech Pilsners exhibit a fuller body & a distinctively spicy hop aroma, setting them apart from their German counterparts.

A core range is something that has constantly been requested of us from day one, but because of space, staffing, and tank limitations, we’ve been unable to fulfil. We’re now at a comfortable enough position where we feel we can produce a consistent range of beers that match the quality of our Augment range, but that we’re able to brew again and again.

Please let us introduce you to our new core range. Presenting Rosebud, Little Petal and Floret.

Our flagship core beer - the style we’re most well known for, and what we do best. Rosebud is an IPA in the New England style - the most popular variant of the style in the world. We’ve hopped this beer with Citra, Galaxy, Mosaic and Simcoe to create a certified tropical punchbowl of flavour. Strong enough to retain all that incredible mouthfeel, but sessionable enough to smash pints of.

Whilst we’re very much a brewery that produces modern, hop-forward beer, sometimes you have to look back to the old school and honour the breweries without whom we wouldn’t be here today. Little Petal takes a detour from our usual output down the Pacific highway for a deliciously moreish West Coast Pale - clean and crisp resinous bitterness takes the lead here, with a classic hop lineup of Cascade and Simcoe.

Sometimes you just want a beer that is mega sessionable. Our Core pale ale is delicious, hazy juicebomb of a beer, balanced with enough bitterness to keep drinkers coming back for more. A baby version of our incredibly popular Spur IPA - Floret is positively bursting at the seams with peach, mango, and pineapple notes, backed up with pithy orange peel from its Citra, Simcoe and Azacca hop bill.

With over 50 years’ combined sales experience in the drinks industry they noticed an opportunity in the cocktail category. Feedback from bartenders showed that few fruit purée brands delivered on all of the key factors desirable for bar use – taste, product integrity, usability and value.

In 2022, inspired to bring all of these qualities together in a premium fruit purée, the pair set up a manufacturing facility on a farm in Worcestershire.

The result is an outstanding range of top-grade fruit purées that are superior in taste, with minimal added sugar, minimal wastage, and fully recyclable packaging.
