T

he idea for Tuddys originated in Tuddenham St Martin, Suffolk when Chris and George couldn’t find a beef jerky that ticked all the boxes – tasty, British and made without using major allergens*, so they decided to make their own.

They spent months tweaking and altering recipes and finally created what they were after. Their mothers taught them that it’s kind to share, so they decided to do exactly that and give everyone the chance to try their jerky. Hey presto – Tuddys Snacks was born!

ooooooh. Tis time to start thinking about that time of year where we light the fires, spend time with the loved ones & stuff our collective bellies to bursting point. Maybe pull out a few special bottles of fizz.

It’s a beautiful picture isn’t it. After the last 18 months, this Christmas will seem extra special. So why not push the boat out this year & get some extra special bottles of sparkling stuff to treat family & friends alike! Here we take you through the styles & how they might fit in to your special season.

PROSECCO - Ah yes, Prosecco. With its easy drinking style, slightly lower alcohol & accessible price point, Prosecco has taken the UK market by storm accounting for nearly 65% of sales by volume. It is made almost exclusively from the Glera grape variety, although 15% other varieties is also allowed. The method of production is called the Charmat-Martinotti method where the secondary fermentation (the part that makes it fizz) takes place in big stainless steel tanks, making it much more cost effective to produce. You will find either Spumante (fully sparkling) or Frizzante (semi sparkling) styles. & in 2019 they finally allowed the region to make Prosecco Rose. Blended with 10-15% pinot noir, if you like pink fizz then grab a bottle! The taste of Prosecco is what makes it so insanely drinkable. Usual flavours you will find are green apple, pear, white peach, apricot, light floral notes & lemony flavours. The palate is usually crisp, slightly off dry & full of fun. This is what makes Prosecco so popular! Perfect as an aperitif, this is a lovely way to start off a fun afternoon!

Try – Bella Modella Prosecco, Mabis Prosecco Spumante & Mabis Prosecco Rose DURELLO - Proseccos overlooked cousin! With just 506 acres remaining planted Durello has suffered a little from Proseccos takeover of sparkling wine. This is a shame, it’s utterly delicious.

Made in the same region as Prosecco, it has its own DOC accreditation. The style is slightly drier than Prosecco but no bad thing. The quality is superb! Again perfect as an aperitif, its crisp, lemony flavours should make Durello a perfect alternative. Also, as it doesn’t have the cache of its more well-known cousin, it doesn’t carry the price tag!

CAVA - What is it about Cava that seems to put people off? Sales have been ok in the UK for the last few years but most of that has been sub £10. Premium Cava is simply a joy! Made in the same way as Champagne, dry & crisp showing toasty, yeasty flavours, there is no reason why it shouldn’t be selling as well as Champagne does. With its drier style & full bodied nature, Cava tends to be able to stand up to food quite well. Think grilled fish, fried tapas that sort of thing. We have an absolute beauty as well from

one of Spains most important & awarded viticulturalists, Carlos Sumarroca. & its organic to boot! For something extra special, pick up a case of the Nuria Claverol Homentage which is hands down the best Spanish sparkling we have ever tasted. CHAMPAGNE - Some say the king of sparkling wines. Made in the Champagne region of France using the traditional method of secondary fermentation happening in bottle. What can be said about Champagne that hasn’t already been said? Its dry, yeasty, brioche flavours mixed with lemony citrus make it the perfect way to start your Christmas day.

There have been panicked reports of a shortage of Champagne this Christmas, the truth is slightly more nuanced than that. Whilst stocks are fine, you will more than likely find less promotional activity from Champagne houses. We’ve been working with a small family owned house called Champagne Pierre Mignon in the Marne Valley for a while now. Their vineyards are designated Premier Cru & the style is breathtaking! Unusually for Champagne, Pierre Mignon tends to have more Pinot Meunier in the blend than most. This gives you that honeyed, aged character more quickly than other Pinot Noir or Chardonnay based wines does. We love it!

Interest in organic, biodynamic and minimal intervention (natural) wine is growing, As more people look for sustainable, chemical-free products, it’s no surprise that natural wine has entered the spotlight. But the meaning of the term ‘natural wine’ (if we’re honest) is a bit of a blur!! It’s more of a term that describes a widespread philosophy and incorporates various production methods. It also seems to mean something different to each person you speak to... which is helpful!

WINE

Unlike natural winemaking, conventional winemaking requires heavy intervention. Pesticides are used when growing the grapes, and lab-grown yeast is employed during fermentation. Acids can be added to help the wine age, and many conventional winemakers add sugar, which turns into alcohol, giving the impression of more “body.”

The term natural wine seems to mean something different to each person you speak to... which is helpful!

Organic...

S

ome laws regulate the use of the term ‘organic’. However, the terms’ sustainable’ and ‘biodynamic’ are free from legal definitions. To clear things up, let’s try and explain these definitions.

Firstly, there is the term ‘organic’. Typically, there are two types of organic listings on wine bottles; wines produced using organically grown grapes (avoiding the use of any synthetic pesticides or additives), and wines produced using organically grown grapes (which are also free from additional sulphites – though naturally occurring sulphites may still be present).

Natural...

T

he term ‘natural’ is a more obscure term to clarify, as there is no true definition of what constitutes a ‘natural wine or a ‘raw’ wine. Despite rising popularity, we are yet to see a recognised definition for this style.

An appropriate definition for the term ‘natural’ has been penned by Isabelle Legeron MW (founder of RAW WINE), who describes wines of this variety as “living wine from living soil”.

In her book (Natural Wine: An Introduction to Organic and Biodynamic Wines Made Naturally 2017), she suggests that natural wine comes from an organic/biodynamic vineyard and, therefore, has had nothing externally added or removed from the growing process. The microbiological life that exists naturally in these vineyards creates ‘living wine’ as these microbiological organisms continue to exist in the wine, even after the fermentation and bottling processes are complete. These wines are not filtered or fined. We like to think that they follow a similar concept to bottle conditioned beers.

Biodynamic...

B

iodynamic farming follows similar principles to organic agriculture as it also takes place without synthetic chemicals. However, biodynamic farming incorporates ideologies that a vineyard should be viewed as an entire ecosystem. The producer also takes concepts such as astrological influences and lunar cycles into account.

A biodynamic wine means that the grapes have been farmed in a biodynamic method. The winemaker has not produced the wine with any commonly used manipulations, such as the addition of yeast or acidity adjustments. A wine made from biodynamic grapes means that although the vintner used biodynamically grown grapes, a less strict ‘set of rules’ was used in the process of winemaking.

Minimum intervention...

O

ften described as ‘wine without the nasties’. Low/minimal or minimum intervention wine as it is sometimes called is often be bundled into the same fluid like category as Natural Wines. Now, Whilst no wine can be 100% free of human intervention (someone has to to train grapevines to produce wine-quality fruit; process and contain that fruit for fermentation; bottle the resulting wine at just the right time; and so on) these wines are at the cutting edge of oenology (winemaking to you & I).

Expect wild fermentation, minimal Sulphur Dioxide (SO2), practicly no fining or filtering, nothing added or nothing removed with organic & sometimes biodynamic practises in the making of the wine.

The first thing to remember about orange wine is that it is not made of oranges.

The second is that it’s not really orange. Helpful huh?

O

range wine is a type of white wine made by leaving the grape skins and seeds in contact with the juice, creating a deep orange-hued finished product. In other words, it’s like making red wine with white grapes. When making white wine, you typically remove the skin from the grapes before fermenting; with red wine, you leave the skin on. Orange wine mixes up this process by using white grapes but leaving on the skins. The result is a far richer and more full-bodied drink than regular white wine. This is also how it gets its colour, which is much deeper than a white wine ranging from pale amber to deep orange.

Most orange wines taste like a bolder, more savoury version of wines from the same white grape. Generally speaking, orange wines display mild flavours of stone fruit like peaches, tea flavours like strong oolong and an impression of honey without actually being sweet.

Back in 2020, we received the exciting news that the prosecco DOC consortium (the governing body of Italy’s favourite fizz), were finally allowing the production of rosé prosecco! After what feels like a long wait, it’s finally available in the UK.

LE DOLCE COLLINE PROSECCO ROSÉ PRODUCTION The grapes are sourced from the hills above Treviso - the traditional vineyard area for Prosecco. They are softly pressed & the must is fermented in stainless steel for 15-20 days.

Then the wine is blended with Pinot Nero (which is vinified as for red wine) - giving an appealing rosé colour. After blending the wine undergoes a second, temperature-controlled, fermentation in stainless steel tanks & on lees before bottling & release.

BISCARDO PROSECCO MILLESIMATO ROSÉ PRODUCTION Harvest is carried out by hand and, in order to avoid any skin or acetic fermentation, the grapes are immediately carried to the vinification cellar during the first few hours of the day. Destalking and soft pressing at controlled temperature then the must is kept in small stainless-steel tanks until fermentation is completed. The blend of the two varieties is made before the refermentation process, to increase the intensity of the aroma. Fermentation is partially interrupted trough the cold-process, and transferred into small stainless-steel tanks. Around 4 months after vinification, refermentation is allowed following the typical procedure used for spumante (in autoclaves that keep up to 6 atmospheres of pressure).

TASTING NOTES Salmon pink with a fine and persistent perlage. Intense and aromatic on the nose with hints of red currant, wild strawberry and rose petal. This is elegant, smooth and velvety on the palate with a harmonious dry finish.

FOOD MATCH TASTING NOTES The colour is an appealing pink with cherrycoloured hints. Fresh berry aromas & a fine mousse lead to redcurrant & citrus notes on the palate, balanced by bright acidity & a clean, dry finish.

The Sustainability

THE STORY

L

ike all good things, Navas started over a conversation in a bar. After a long walk around the headland near Mousehole, a fishing village not far from Land’s End, friends stopped for a drink in the local pub. While sampling the abundance of beautiful Cornish gins and spirits, they questioned why there wasn’t a great choice of natural mixers to accompany them. So, Navas set about changing this.

Taking advice from local distillers and using water from the Cornish Moors, they decided on the type of mixers and the range they

wanted to create. A family and friends-owned business, Navas came to life on the sleepy unspoiled riverbanks of the Helford River.

Surrounded by deep sheltered valleys, ancient oak forests and hidden creeks, their name is taken from the small creek village, Port Navas.

Made with 100% Cornish Spring Water, Navas has created a bright, crisp and uplifting tonic with layers of citrus, floral neroli and aromatic bergamot, delicately blended together with the bitterness of quinine and woody notes from the cinchona bark. Modern consumers are actuvely looking for something unusual or different to the norm.

Although a dedicated menu is biggest influencer of purchase among these consumers3 a basic knowledge of your whisk(e)y range can be an an even bigger sales tool.

The largest whisky-producing region of Scotland, if not one with the most distilleries; only about 30-ish in total. The trouble with the region being so large is that there’s a lot of variations in the tastes. The western Highland distilleries have a fair amount of peaty taste to them, and tend to be sweet and dry, while the North Highland whiskies tend to be light, spicy and dry. The rest of the whiskies in the Highlands are generally fruity, but not quite to the same degree as the Speysides. They still have a dry finish

Cambeltown Once home to 30 distilleries, the mighty have fallen far indeed. Now home to only two operational distilleries, Campbeltown is lonely these days. The whiskies produced here, Springbank and Glen Scotia, are very similar to Islay malts and have a peaty, briny character.

Ah, Islay. Some of the most distinctive tastes in Scottish Whisky come from this region, which is rich in peat bogs and sea spray. Despite its small size, it has some of the most famous distilleries in Scotland- a fame brought about by the (nontoo-coincidental) peaty character of most of its whiskies. The Islay whiskies are not for everyone.

Variously described as “medicinal”, “cough syrup”, “barbecue”, “chao-da”, these drams are something of an acquired taste.

Islay The region of Scotland closest to England, whiskies from the Lowlands are light, dry and fruity. These pecularities come from the triple distillation technique that’s commonly used. With whiskies being distilled thrice before being left to age in casks, most of the fats and other flavourful chemicals are removed from the spirit, leaving mostly alcohol and water. With much of the strong flavours removed, the whiskies are inoffensive and mellow making them well suited for people new to scotch

The Islands are sometimes lumped together with the Highlands, but there’s just enough variation that it deserves a brief mention here. The Islands are fairly diverse geographically, with some on the northern tip of Scotland (Orkney) and some on the central portions (Jura, Skye). Island whiskies tend to be peatier and slightly saltier than their Highland counterparts, but not quite as extreme as their Islay cousins.

GIN DROP Dr Eamers’ Gin Drops 5cl 69%vol is a super concentrated high strength Gin, designed to be enjoyed as a Low ABV Alternative. Use it’s graduated pipette to serve up just 2.5ml and mix with 150ml of your preferred mixer for the same flavour as a normal Single measure but at only 1%vol and 10kcals.

It is also great to add a few drops into your favourite cocktail for that extra Ginny hit. Perfect for anyone who is drinking less alcohol or for people who are monitoring their calorie intake but still want to enjoy the proper G&T taste. Contains 20 serves

TROPICAL GIN

Dr Eamers’ Prescription Strength Dry Gin 50cl 57%vol, is a full bore Dry Gin. Made from the same distillation as our Traditionally Distilled Dry Gin but bottled at “proof” strength. So called as during the 1700’s-1800’s Navy ships would first douse the spirit over the gun powder to see if the gun powder still lit. If it did, it was known as “proof”, but this will only happen if the spirit is at least 57%vol.

Dr Eamers’ Tropical Gin 70cl 40%vol, is a refreshingly Tropical Gin distilled with Mango, Passionfruit and Pineapple alongside our traditional botanicals.

Wonderfully Tropical and balanced with Ripe Mango and sweet Pineapple contrasting tart Passionfruit. This is very much a gin lovers “Flavoured Gin” and still retains its Gin backbone. This is a proper Summer Time Gin, transporting you to more Tropical Climates and perfect served with your preferred mixer and in a range of Cocktails.

Distilled with ripe fresh Blackberries, Rose, Strawberries, Raspberries, Chamomile Flowers and Elderflower alongside our traditional core botanicals. Juicy ripe Berries explode over a core Juniper backbone and subtle floral notes. A proper “Pink Gin” with no added sugar or artificial flavourings.

What’s the difference?

touts & porters are ultimately the same. They are top-fermented beers. The name porter was first used in 1721 to describe a dark brown beer that had been made with roasted malts. Because of the huge popularity of porters, brewers made them in a variety of strengths. The stronger beers, typically 7% or 8% alcohol by volume (ABV), were called “stout porters”, so the history & development of stout & porter are intertwined, & the term stout has become firmly associated with dark beer, rather than just strong beer.

What are milk stouts? The origin of the milk stout can be traced back to early 20th century England, an outgrowth of the increased popularity of dark ales like a porter, & later strong (or “stout”) porters. Milk, “sweet,” or “cream” stouts were generally beers with low amounts of alcohol but high amounts of residual sugar, Residual sugars are those left in a beer after the yeast has completed its fermentation. Because lactose is unfermentable by brewer’s yeast, lactose added to a beer makes the final product sweeter, fuller, & creamier.

ur journey began when our founders, two avid homebrewers, pursued their passion for beer and sold their home to fund a 5-barrel brewery, in a shed behind the Pot Kiln Pub in the picturesque Berkshire village of Yattendon. Twenty-six years and four brewery sites later we have steadily grown and built one of the most modern and exciting brewing facilities in the country.

What’s more, the family legacy continues to this day, with assistant head brewer and founder’s son Griff Maggs following his passion for beer and playing a crucial role in Brewery team.

Allen Hogan started making cider when he moved to Haselor, Warwickshire and met a local eco-warrior who used his water mill to power the apple scratter and cider press. He fell in love with the whole process and enjoyed drinking the results….

Twenty years later in 2005 he decided to form Hogan’s Cider and sell cider commercially with the principle of only fermenting using locally grown cider apples or perry pears.

Our English cider apples and perry pears come from the counties of Herefordshire, Worcestershire and Gloucestershire. We believe delicious cider and perry are born out of a combination of great raw ingredients and an honest production process. After milling and pressing our juice ferments slowly during the cold winter months. A leisurely period of maturation follows prior to skilled blending. We don't use apple or pear concentrate, nor do we add sugars prior to fermentation. Only using cider apples and perry pears means our drinks are complex and refreshing.

Our ethos is to explore the potential that the cider apple can offer us. We have unashamedly taken a leaf out of the craft beer brewers’ book by using different yeast strains, (Brettanomyces in Killer Sharp), some wild yeasts, different fermentation techniques, (keeving used in French Revelation), and being selective with the addition of other complementary ingredients (Bramling Cross, Chinook and Cascade Hops in HipHop, Elderflower in Wild Elder). The result is a very diverse range with highly distinctive characteristics.
