Yes. We have a section named ‘Recently Ordered Products’ where your 90 day purchasing history is stored. Once you begin to order on the online platform, the products you order will be saved in this area.

WHAT ARE THE BENEFITS OF ONLINE ORDERING?

There are many benefits to using the new platform. Being able to see your prices is hugely advantageous to your business. Furthermore the ability to view live stock availability makes your ordering process smoother So you can now order at a time that is convenient for you!

Sustainability in the wine trade doesn’t start and end in the winery. Indeed there are many aspects of the wine trade which are located in the UK such as importer Lanchester Wines and its sister business, Greencroft Bottling, which is a contract wine bottler. Both are based in County Durham. Their philosophy is that every business has a duty of care to minimise its impact on the environment, but there is, unfortunately, no ‘one size fits all’ solution when it comes to sustainability. Lanchester Wines identified that it’s greatest opportunity to make a change is through minimising reliance on fossil fuels. And, as such, has invested around £10million in renewable heat and energy generation at its sites across the North East of England. Today the business is powered almost completely by renewable wind and solar energy.

MAXIMISE YOUR WINE SALES Now that we’re approaching the busy summer season, it’s a good time to consider whether your ‘Wine by the Glass’ (WBTG) offering is adequate and exciting enough to give you the best possible return. You may well ask “why bother offering wines by the glass at all?”, “if I do, how many wines do I need to offer and at what price points?” and “how can I prevent wasting a load of wine once the bottles are open?”. I’ll cover all these questions below and show you some emerging trends that should help to guide your decision-making. So, here we explain the clear benefits of offering wines by the glass.

In a nutshell, selling wines by the glass does one of two crucial things. Firstly, it’s proven to increase wine sales and yields stronger cash margins than bottle sales, YES PLEASE. And secondly, perhaps most importantly of all, it helps enhance your customers’ overall experience. Happy customers leave good reviews, return if they’re relatively local and will probably spend more on future visits, but then you already knew that. With consumers currently drinking less but drinking better, not only is this the perfect justification for offering wines by the glass in the first instance, it’s also an opportunity to put on a couple of more premium wines too. You’ll find that lunchtime

customers in particular will take advantage of this. It’s worth talking to your best regulars to see what they would be prepared to spend up to and perhaps use this as a guide. Another benefit is that it’s a great way to introduce customers to lesser known and quirkier wines as well as getting through slower-moving stock as it takes away the risk of being stuck with a bottle they might not like.

Ok then, how many wines & at what prices? This is going to depend on various factors like what kind of establishment you are, how many wines you currently offer by the bottle, do you sell food or are you solely wet led, how much footfall do you get & what kind of preservation or dispense system can you afford to invest in. This latter point is very important because a good preservation/dispense system will remove the risk of excessive wastage, meaning you can offer a broader WBTG choice. We’ll come back to this shortly. Without any form of preservation, you’ve probably

got 2 days to turn over your bottles of sparkling, 2-3 days to turn over your white & rosé wines & 3-4 days to turn over your reds. This may mean you can realistically offer 1 sparkling, 1-2 whites & reds & 1 rosé. In terms of pricing, the general rule of thumb is that a standard glass (175ml) equates to 85-100% of the wholesale cost of the bottle so if you only sell one glass, the loss is negligible but obviously the incentive is to turn that bottle over which shouldn’t be difficult. Don’t be afraid to try a more premium white like a Chablis & a red like a Reserva Rioja towards the £10/glass price & you may be surprised by the take up.

Ok, then What about wastage? Ultimately the best way to reduce waste is to sell more! Simple right? But all joking aside, starting or extending your Wine By The Glass range can seem daunting, & a concern about wastage is perfectly understandable. However, with the right menu design, team training & the right wines, you will never look back. One of the most popular ways to prevent waste is wine preservation & dispense systems. Your choice of system will depend on how serious you want to make your WBTG program.

HOW DRINKS WHOLESALE SHOULD BE DONE

So, let’s look at some of the most tried & tested:

VACUUM PUMP & STOPPERS

This cheap solution has been around for decades & is generally okay for limited WBTG ranges but they generally don’t work with sparkling wine. You simply need decent stoppers for fizz. If you can turn the bottles over fairly quickly, vacuum pumps are fine as they’re not very accurate. Under-pump the wine & it will still oxidise, as oxygen is left in the cavity between the wine & the stopper. Over-pump & you can bruise the wine’s delicate structure.

Wastage Continued... GAS PRESERVERS

You can also buy canisters of inert gas, which are comparatively inexpensive if you have a small WBTG range but will obviously become more expensive as you broaden it. These are mostly argon-based & work by squirting an amount into the opened bottle at the end of service before you reseal it with the cork or screw cap. They’re pretty effective for still wines & give you much longer to turn the bottles over, we’re talking weeks rather than days, but it’s not advisable to use them on sparkling wines.

CORAVIN SYSTEMS

These have become really popular with Sommelier in particular & offer a decent shelf life but the systems are quite pricey & the refill canisters even more so, especially if used heavily. These work by pushing the system’s needle directly through the unopened corked bottle, allowing you to pour the required measure before a controlled amount of argon is released into the remaining cavity space. With the right accessories, you can also use the same system for screw cap wines & there’s a separate system for sparkling wines too. Sommelier primarily use these for offering premium & fine wines as opposed to lower-priced wines due to the higher ongoing costs.

PRESERVATION SYSTEMS

Dominated by Le Verre de Vin for the past few decades, these are fairly expensive to purchase outright but the running costs are very low. They can pay for themselves within a few years but it’s obviously dependent on how strong your WBTG offering is. The systems can last for many years & are very accurate, & you can get dual systems that will do all your still & sparkling wines together. There’s no inert gas involved & you have around 21 days to turn over your opened bottles. There are also dispense systems which, again, are very expensive initially & have a higher running cost as they use inert gas to preserve the opened wines, but they look the dogs & give you a much longer shelf life. Again, these are suited to more premium wines where the transactional return is higher. The most successful of these is enomatic, with By The Glass & Winemotion also offering similar effective solutions. With consumers becoming ever-more experimental when it comes to their wine choices, it’s the ideal time to review your WBTG program as small tweaks can lead to big financial returns!

Gran Cerdo are wine’s dedicated to the bank executives that denied loans to us on the basis that wine is not a seizable asset. One day, these greasy and sweaty corporate suits will find that the best things in life cannot be impounded. Thanks to our friends help, we were finally able to bottle this wine. Gonzalo Gonzalo Grijalba was born in Logroño, Spain and grew up among the vineyards that his parents cultivated in Fuenmayor. After several years of training in various parts of the wine-making world, he returned to start his own project. Fiercely protective of the terroir of his family vineyards Gonzalo rejects market driven fashions, formulae, chemical treatments and conformism. Instead he has sought out his own methods with respect for the land, his vineyards, and the traditions of his forefathers. He balances this respect with formal training in the latest enological techniques and methods. His father’s illness from years of working with chemical herbicides and pesticides was a major influence in his decision making. The soil itself suffered as well, losing its vitality as well as its ecosystem. Gonzalo has worked hard to restore the vitality of the vineyards, and has revived natural treatments and biodynamic practices to maintain healthy vineyards. 38

Charcute stems from the French noun ‘Charcuter’ which means ‘to butcher’. However, charcuterie describes prepared pork of all sorts: bacon, ham, salami, sausage, terrines, pate, confit and more. ‘Char’ means flesh, and ‘cuite’ is an old French word for ‘cooked’. During the fifteenth century, ‘charcutiers’ were not permitted to sell uncooked pork due to the apparent dangers of raw meat and this is how meat started to be salted and cured in this specific way on a commercial level. Imported, dry-cured meats like Prosciutto and Serrano ham have been long-time servants on any meat platter. But British-made charcuterie is now popping up frequently in food markets, restaurant menus and at home.

Like all good stories it started down the pub. The Junction Tavern beer garden, in NW5, to be precise. It was there, on one of their many lost evenings, that founders, George Rice and Johnny Bradshaw, found themselves pondering a serious question. What would be the perfect snack to accompany their recently ordered pint of real ale and glass of red Bordeaux? It had to be a delicious taste complement to these fine beverages; but it also had to provide proper sustenance to power the boys through to their late dinner. Several packets of crisps, nuts and scratchings later, the boys agreed that it had to be something more serious. They hit on the concept of a “Posh Peperami.” It could only be made with top quality British charcuterie, they decided. This would be real food – satisfying, full of flavour and better for you than any existing pub snack. The very next day, Serious Pig was born.

Over 80 countries produce 140 million 60 kilo bags of the stuff every year; that’s nearly 9 billion kilos of green coffee from something approaching 3.5 trillion coffee trees… That makes 3.5 billion cups of coffee per day & allows 25 million families worldwide to make a living from the broader coffee trade - 5 million of them alone in origin, managing farming & harvesting - 70% of which takes place on small family holdings. As an example of the reach & scale of the coffee trade - in Latin America, nearly 50% of all cropland is taken up with coffee agronomy, whilst in Burundi, 80% of all export income is derived from coffee. It is big business! What is more, the global coffee market is, despite the pandemic, snowballing, with consumption from emerging BRIC economies & repertoire growth here in Europe & the US expected to drive production to 160m bags pa, that’s a staggering 10 billion kilos! For many consumers, it has been the rise of the High Street Gourmet Cafe Bar chain. These bars introduced & created great coffee & fuelled their addiction to daily caffeine hit & at the heart of it all is the espresso, each requiring 42 beautiful beans to make a perfect caffeine moment!

Espresso NOT Expresso!! Espresso coffee was ‘created’ as a brewing process only some 80 years ago by equipment pioneers such as Dr Illy, who discovered the optimal brewing process to extract the aromatic oils & essences that make up an espresso. Meet Tap Social Movement It’s difficult to stand out in a country that is now home to more than 2,200 craft breweries. Oxford-based Tap Social Movement, however, is one brewery with a particularly compelling story to tell—and a worthy cause to support.

Armed with extensive professional backgrounds in criminal justice, nonprofit organisations, legal research, and hospitality—and, of course, a deep appreciation for craft beer—Tap Social’s cofounders decided that a brewery was the ideal platform and environment for promoting their cause and creating something special.

With a shared passion for social justice and craft beer, Paul Humpherson and sisters Amy and Tess Taylor founded Tap Social Movement in 2016 to provide support, training, and fulfilling employment to exoffenders during and after prison.

To date, Tap Social has generated more than 50,000 hours of paid employment for people from prison. It employs people in its brewery, in hospitality roles at its venues, in culinary roles in its kitchen and bakery, and in warehousing and delivery driving roles.

The Beer With Director Matt Elliott and Head Brewer Jason Bolger part of the leadership team, Tap Social has experienced significant growth right from the start. After launching in 2016 with a 1,000-litre brewery in an Oxford industrial estate, a year later Tap Social relocated the bulk of its brewing to a larger facility just down the road in Kennington, where a canning line was installed and two 4,000-litre fermentation vessels were added that allowed the brewery to double its annual capacity. 52

In mid-2020, Tap Social introduced its core range of five modern, accessible beers, all of which are available year-round in kegs and cans from Inn Express: • Time Better Spent – 5.1% IPA • False Economy – 4.8% Lager • Cell Count – 4.5% American Pale Ale • Jobsworth – 3.5% Session Ale • Inside Out – 5.5% Oatmeal Stout Tap Social moved—and upgraded—again in May 2022, this time to an even bigger brewery in Kidlington. Now brewing on a 2,000-litre kit, Tap Social currently has 22,000 litres of fermentation tank space and plans to triple its annual volume. In addition to its core beers, Tap Social also brews seasonals and special collabs at its Kidlington brewery, as well as experimental small-batch beers at its original industrial estate brewery and taproom, which is open to the public at least three days a week.

For many years, a craft brewery with a core range was seen as a ludicrous decision. In hindsight, this looks pretty short-sighted. A well-curated core range offers consistent, credible, and familiar beers for which customers can forge a real thirst (pardon the pun). It seems that unless you were brewing limited batch Juicy DIPA’s, Brut IPAs (blimey, remember them?) or collaborating with the next big hype brewery, particular consumers wouldn’t even consider buying a drop of your finest if it was considered a ‘core beer.’ Oh, how times have changed! Recent studies show that craft beer demands a higher price per pint, is in continued growth and consistently performs strongly across the trade. This growth stems from the demand for accessible, consistent and tasty beers. Thankfully due to this demands some of the UK’s most exciting breweries have adjusted their range and start to offer what the people are demanding.

It’s the same as tequila, right? ...Not quite!

aving polished off the brandy that they had brought with them, the 16th century Conquistadors found themselves in need of something to distil. The Aztecs – including the Tarahumara and Apache Indians (Chihuahua), the Ticuila Indians (Tequila) and Zapotec and Nahutal Indians had been producing a beer they called octli – more latterly known as pulque made from species of the agavaceae family as early as 800 years ago. Accordingly the newcomers distilled what they found and the result was effectively the first Sotols, Tequilas and Mezcals.

The industry – and in particular the Tequila industry - subsequently grew very quickly and by 1656 the village of Tequila had been granted a charter by the Governor of New Galicia. In 1795 Jose Cuervo was granted a licence and 78 years later in 1783 his distillery made

the first export: 3 barrels to El Paso, Texas. In 1824 the state of Jalisco was created by which time dozens of distilleries had been established. In the 1930s, in order to cope with demand, the practice of adding non-agave sugars to agavaceae spirits

became popular. Known as ‘mixtos’, the resultant distillates were relatively bland when compared with 100% agavaceae spirits but in one respect this helped them become more popular abroad. In Chihuahua, Sotols are made only form 100% agavaceae; there are no mixtos at all.

EVERYBODY’S HEARD ABOUT THE WORM It is a marketing gimmick, which made its first appearance in the mid 20th century. It is not actually a worm at all but the larval form of the moth Hypopta agavis that lives on agavaceae plants. Tequilas never have a worm in them and only certain Mezcals – primarily from Oaxaca are sold con gusano.

In 1992 the Consejo Regulador del Tequila was established & in 1997 Oaxaca was awarded DO Status for Mezcal although the spirit is indigenous to various regions including Acapulco. DO Status is currently being sought by Sotol producers who have put in place an active & very extensive conservation program to ensure the availability of the Desert Spoon in its natural habitat.

TEQUILA

The word agave is Greek in origin & literally means “magnificent”. Today many species of the agavaceae family are used to make quality quintessentially Mexican spirits thus proving true the ancient Aztec philosophy that “when you specialise & remain focused on your origins a cult status is bound to follow”. In legally demarcated areas (from North to South) the following spirits are produced from different species of the agavaceae family:

Mezcal the state drink of Oaxaca; most of its distilleries are still run by Zapotec Indians. It is made from various different species including a maguey variety & Agave augustifolia Haw more commonly known as espadin. The name “Mezcal” is derived from the Nahutal Indian meaning “roasted agave”.

SOTOL The state drink of Chihuahua is made from Dasylirion wheeleri more commonly known as the Desert Spoon or in Spanish the Sotol plant.

From the state of Jalisco primarily from the region surrounding the city of Tequila is made from the Agave tequilana more commonly known as Weber Azur or Blue

MEZCAL

The plants are well suited to their respective soils & climates. The Blue Agave thrives in the high, dry, mineral rich volcanic plain of the Sierra Madre whilst the ‘Sotol’ plant grows wild – & therefore organically - very successfully on the rocky slopes in the Chihuahuan desert grassland at altitude. The latter is the smallest of all the spirit giving agavaceae growing to about 21/2’ in height with the piňa weighing approximately 10kg. The others are farmed & are similar to one another insofar as they are about 5’ in height & can weigh anything from 20kg – 60kg. For Sotols & Tequilas the starches are converted to sugars by cooking the piňas in steam ovens traditionally at 950C for 36 hours although more modern methods include pressure-cooking which gets the job done in half the time. Whereas for Mezcals the piňas

are slow roasted, often in pit ovens, for about 3 days. As they roast they absorb smoke, which gives Mezcal one of its most distinctive characteristics & has the additional benefit of activating the wild yeasts allowing the cooked hearts to start fermenting naturally. These piňas are then crushed & mashed & left to complete fermentation. This can take some time but as it does the liquid starts to naturally separate from the mulch. With Sotols & Tequilas the cooked piňas are either shredded or crushed & the aguamiel (sweet juice) drained into the fermentation vat. Those that crush will put both liquid & fibres into the vat & may in tequila production also put these into the first distillation. Fermentation today is virtually always in temperature-controlled stainless steel with most modern firms preferring to use their own yeast strain. Typically fermentation will last 72 hours at most, however in the event that wild yeasts alone are used that timeframe would be about 5 days as is the case with Tres Majures so-called ‘yeast-free’ method. The ‘mosto muerto’, which is between 5%abv & 10%abv, is sent for distillation with most Tequilas & Mezcals coming off the still at between 55%abv & 65%abv respectively.

Most Tequila producers use Double Distillation in Stainless Steel pots although copper is playing more & more of a role in the region nowadays. Mezcal was traditionally single distilled but is now normally distilled twice in copper pot still whilst the Sotol producer Hacienda de Chihuahua use a Pot Column giving a spirit off the still at about 75%abv. Only oak barrels may be used for ageing tequila & the spirit therein must be between 38%abv & 55%abv. Typically ex Bourbon barrels will be used although this is not always the case.
