Attic has marked the start of 2026 with a bold refresh of its branding, putting customer experience first and proudly representing the brewery’s Birmingham roots.

Born in South Birmingham in 2018 and built on hard graft, creativity and community. What started in an attic has grown into the largest independent brewery in the West Midlands, whilst remaining 100% owner-operated, self-funded and grounded.
“We’ve always made beer for everyone to enjoy” says Sam Back, one of Attic’s founders, “and part of that is making sure our branding and artwork is approachable enough for anyone to feel comfortable to give it a go. We know that once drinkers try the beer, they’ll come back for another”.
With the goal of becoming the Midland’s best-loved brewery, Attic has ambitious plans for 2026. Whilst the brewery has long been known by Brummies for its easy drinking beers, community taproom and colourful branding, the refreshed look will help make the range more accessible to new consumers.
Renowned marketing agency WAA Chosen have produced an evolution of the pattern-heavy, colourful branding that has been the cornerstone of Attic’s brand for several years. The result maintains a playful look, whilst simplifying the messaging, improving consistency across the range and showcasing artwork that is much more compelling for consumers.


2026 promises to be the most exciting year in Attic’s history, with well-placed investment expected to lead to significant growth in both the on- and off-trade and exciting developments to be announced that will help ensure the long-term security and continued success of the business.
“It’s a tough time for the industry at the moment” says Oli Hurlow, the brewery’s other founder, “so our ability to continue to grow, diversify and secure our long term future is something for us all to be incredibly proud of. A bold new look is just the start”.

Modern gluten free beer has come a long way. Our beers are brewed in exactly the same way as any great beer, using high-quality ingredients and the same care and attention — we simply use an enzyme during the brewing process to break down the gluten. There’s no taste compromise, just great beer that’s safe for coeliacs and those who are gluten intolerant.
All our Brummie beers are regularly lab tested to ensure they contain less than 20PPM of gluten giving total confidence in every pint. That quality is recognised beyond the gluten free category too — our beers have won awards in tastings alongside non-gluten free beers, and recently Bitter Brummie was named one of the best gluten free beers available by beer writer Pete Brown in The Times.

Continuing a legacy of brewing left by the Cistercian monks of Kirkstall Abbey and the Kirkstall Brewery Co. of 1833-1983.
Beginning as Vertical Drinks, and importing the likes of Sierra Nevada, Odell and Stone since 2003, allowed them to learn from the masters before starting their own brewery in 2011. Known for consistency, quality and variety, Kirkstall produces world-class beers in a range of style for cask and keg, including Three Swords Extra Pale and Virtuous Session IPA.

Many of Kirkstall’s limited-edition special releases, including its historically inspired Prize Ales, still begin life on their original 8bbl brewhouse, whilst the newer kit is a state of the art, five-vessel 50HL brewhouse built by SSV, on which they brew everything from Three Swords destined for cask, to Judicious for can and keg.

Lost and Grounded Brewers is an independent, award winning brewery based in Bristol. Established in July 2016, they operate from their state-of-the-art brewhouse to produce beers with balance, nuance and a depth of character. Renowned for their flagship lager KELLER PILS, which won Gold in the Kellerbier/Zwickelbier category at the 2023 World Beer Cup Awards®, their German-inspired range includes their HELLES - Unfiltered Lager and EXTRA NICE - Extra Dry Lager.

Lost and Grounded have a clear focus on sustainable brewing and operate from their state-of-the-art German brewhouse complete with energy recovery technology and CO2 recapture. Whilst the brewhouse is ultra-modern, their process echoes traditional German brewing techniques which produce beers with smooth and rounded finishes.
Keller Pils is Lost and Grounded’s flagship lager and is the beer that founded the brewery. Using Pilsner malt from Germany and Belgium, and a combination of three traditional German hop varieties, the team produces what is largely heralded as the best and most unique lager in the UK.
Gentle and balanced, Helles exemplifies everything Lost and Grounded aim to achieve as lager brewers. Using the same pilsner malt blend as Keller Pils, and gently hopped with Magnum, Perle and Tettnang, this is a soft, bready, easydrinking rendition of a classic Helles lager.
EXTRA NICE 4% Extra Dry Lager
Brewed as a ‘Beer with Purpose’, Extra Nice supports Stonewall Housing with £1 from each keg and 5p from each can sold going to the charity. Using a portion of rice in the grist to soften the palate, this is a light, crisp lager promoting diversity, creativity and inclusivity.
All our beers are unfiltered, unpasteurised and vegan friendly.




WHAT IS THE MEANING BEHIND THE LOST AND GROUNDED NAME?
The ‘Lost’ bit is not knowing your whereabouts. Annie and I have lived all over the world –Australia, Belgium, the UK – and I have a US/ Chilean background, but I spent half my life in Australia. Bristol was a long-term stop for us and we wanted to remember what was important. The ‘Grounded’ flows through how we work, how we engage with our community and how we treat our customers and team.
DID YOU HAVE BREWING BACKGROUNDS BEFORE FOUNDING LOST AND GROUNDED BREWERS?
Yes, I’ve been in the industry for more than 20 years, starting as a brewer and working up to senior roles. Annie worked in training and support roles alongside people with learning disabilities. WHY SPECIALISE IN BREWING LAGER?
We’re kind of an outlier in the fact that we focus on brewing lager. Lager is a style of beer that is incredibly difficult to master, but we love the challenges that brewing this type of beer brings. When we founded our brewery in 2016 we set out to make the best and most unique lager in the UK, starting with our flagship Keller Pils, and now we brew lager every week of the year!

We found a local illustrator whose style we loved and she and Annie hit it off. Between them, they visually translated our values, starting with the flying hippo, our humble mascot. As we see it, our hippo isn’t the rock star of the animal kingdom, he’s a quiet achiever who believes in himself and, who knows, if he works hard enough, he can carry the world.
It’s really about our entire brewing philosophy – the choice of ingredients such as malt and hops, the way the water treated, brewing techniques , as well as fermentation and lagering procedures… and of course time! In the end we are after a beer that is relatively subtle, but is full of character and personality.

Boooorrring... until it isn’t!
In a quest to create the perfect FAQ section, we asked our team, “what is the most asked question when speaking with our customers?” The answer to this came without much thought or hesitation, and despite being pipped into first place by ‘we cant find you’ (one of the downsides of our depot being in rural Warwickshire), there was one clear winner by a country mile.*
I have a problem in my cellar, who do I call? “ “
This question is frequently delivered in a tone of panic and accompanied by gas hissing or (worse) beer flowing onto the cellar floor or (even more catastrophic) no beer coming out the taps. But the answer isn’t always that simple. So, when faced with this query, our team can only answer it effectively once we’ve asked a question.
“Who is your lead/domain brewer? “
This is usually followed by a pause and ponder from the caller, swiftly followed by, “What the
hell does that mean?” So in this article, we try to explain in more detail and offer some guidance you can share with your team when you need some assistance when that time comes.
For all cellar and drinks dispense problems, the brand owner of the products provides first-line technical services support. However, in most cases, one brewer/supplier/producer will cover all of your cellar equipment if they occupy a majority share of your draught lines. This is known as the ‘lead or domain brewer’
when this happens. Whoever this is, they will be the number you call when any cellar issues arise.
OK, how do i find out who mine is?
The ’lead brewer’ is known as a brewer that occupies the majority of the taps at your venue. They are responsible for servicing and
maintaining the remote beer cooler in the cellar, pythons, the primary gas-reducing valve, their branded fonts and underbar secondary cooling.
A brand owner who is not a lead brewer is only responsible for their font, underbar secondary cooling, backboard equipment in the cellar and secondary gas-reducing valves.
you’re singing ghostbusters right?
•If all beers are fobbing/not pouring and your remote cooler is not working correctly, you should contact your lead brewer.
•If you have one product down and everything else is pouring correctly, at the correct temperature, you should contact the brand owner of the product
•If you have issues with a cask handpull/beer engine for a permanent cask ale installation, you should contact the brand owner of the product.
•If you have a gas leak that isn’t isolated to a particular keg/container, contact your lead brewer.
•If you have issues with a handpull/keg line for an independent rotating keg or cask ale, you should contact the installers of this equipment.

Cider is having another moment, but not all of it deserves a permanent tap. For every wellmade, orchard-led cider there is a slickly marketed apple-flavoured alcohol that has never seen a tree, let alone a harvest. The challenge for the on-trade is knowing which is which.
Start with the apples. Proper cider begins with fruit, not concentrate shipped halfway around the world. Producers who care about apples usually tell you so. Varieties, orchards, seasons, even awkward harvest years. It all matters. Hogans Original Cider and Dunkertons Craft Cider are good examples. Both are rooted in traditional cider making and built around real fruit, fermented properly rather than engineered for speed.
made using bittersweet apples and time, not shortcuts. Hawkstone Cider follows a similar principle, championing British apples and straightforward cider making, which is exactly why it works so well on draught.
Processing is another quiet clue. Overfiltered cider often loses character in the pursuit of consistency. The best examples leave a little life in the glass. That slight edge is what tells customers they are drinking something grown, not assembled.
Even alcohol-free deserves proper treatment. Iford Wild Free is a rare thing in the category, a cider made from pressed apples that just happens to be alcohol free. It drinks like juice because it is juice, fermented and finished with intent rather than flavourings.

Fermentation is the next giveaway. Real cider is made slowly, often cool fermented, and allowed to develop texture and balance. In 2021, on a perfect summer’s day, James and Rob were sat having a few drinks with friends at their favourite Sussex pub. To quench their thirst in the late summer sun they decided to order some fruit ciders. Underwhelmed by their drinks the topic quickly focused in on why fruit cider was too sweet and synthetic tasting.
Rob then reminded James of his Merrydown heritage through his Grandfather and it was quickly decided the family business had to be brought back. A year on, after many visits to orchards and breweries all across Sussex, Kent and Somerset, Howies was born, with a simple mission to honour traditional brewing practices of the past and bring betters ciders to pubs and their partners.

Howies Cider, our nod to the OG, uses the same traditional brewing methods my grandfather did but rebuilt for present day.


Soft drinks are no longer just about quenching thirst; customers expect benefits like energy, gut health or focus. Stocking functional sodas or botanical mixers gives customers a reason to trade up. Promote them at lunchtime and as premium non-alcoholic options in the evening.
Flavours are pulling in two directions, with exotic fruits sitting alongside retro favourites. Offer a small but varied range that balances adventure with familiarity. Seasonal specials or limited runs create talking points and encourage trial without tying up too much fridge space.
Coffee is fast becoming an experience, not just a pickme-up. Nitro pours, flavoured lattes and seasonal blends keep menus fresh. Even one or two inventive additions can elevate your hot drinks offer and turn casual customers into regulars.
Customers are looking for cleaner drinks without losing taste. Lighter recipes with natural ingredients are the sweet spot. Offer lower sugar soft drinks and teas as a clear alternative, and train staff to highlight them when serving health-conscious customers.
Tea is emerging from the shadows with speciality blends, cold infusions and elegant service. Offering a few carefully chosen teas, presented well, can create an easy upsell at quieter times of day and broaden your non-alcoholic repertoire.
Premium spirits need mixers to match. More venues are swapping out standard tonics for crafted sodas, flavoured tonics and botanical blends. A small upgrade in your mixer range can justify higher prices and deliver a better experience for every serve.
The mixer fridge used to be the most forgettable part of the bar. Same brands, same deals, same outcomes. That is no longer good enough, and more of our customers know it. Across the on trade, there is a clear move away from brands that dominate major retailers and towards drinks that feel chosen, not inherited.
That shift has only sharpened recently. High profile acquisitions of famous brands such as Frobishers and Fentimans, have been a reminder of how quickly independence can disappear. That is not a criticism, but it does focus the mind. What you stock behind the bar increasingly reflects your values, not just your buying terms.
This is where mixers with meaning come in. Brands like Navas and Folkingtons are proving that quality and responsibility can sit comfortably together. Both are B Corp certified, which gives weight to the sustainability story rather than leaving it as a vague promise. Navas delivers clean, crisp tonics designed to lift spirits, not shout over them. Folkingtons brings proper fruit, transparent sourcing and juices that taste like what they say on the label.
Bensons Family Juicers bring a bit of proper heritage to the fridge too. That photo of their stall at Glastonbury in 1999 is not nostalgia for the sake of it, it is proof they have been doing this long before juice became fashionable again. Built on real fruit, balanced flavours and a refreshingly no nonsense approach, Bensons offers bottled juices and mixed juice drinks that

feel honest and considered. They are a strong alternative to the sugary options many parents are increasingly wary of, while still delivering drinks kids actually want. Hartridges rounds out the picture. Family run, independent and full of character, their range brings depth and tradition without feeling stuck in the past. These are soft drinks chosen deliberately, not poured by default.

With an incredibly diverse flavour range, Pago works brilliantly across food pairings, premium soft serves and perfect serve ideas. The level of support, from menu inspiration to food matching, makes them a serious tool behind the bar rather than just another juice option.

Chop a jalapeño and add it to a pint glass. Muddle IT and add ice. pour 1.5 oz of white tequila and squeeze half a lime in the glass. Shake the contents for about 15-30 seconds, pour into a martini glass and top with Jarritos® Lime.

Organic wine is moving from niche to mainstream, with customers increasingly asking for sustainability on their wine list. Carrying a few organic options signals quality, responsibility and relevance, and makes your offer more appealing to diners who are trading up.
Low and no alcohol wine is finally stepping up in taste and style. With new ranges arriving, like Divin and Bolle, venues can offer wine experiences that suit moderation without sacrificing quality, broadening the menu for today’s drinking culture.
Greece is back on the wine map, and it’s more than just Retsina. Modern producers are delivering crisp whites and structured reds with real character. Stocking even one or two Greek wines gives your list a point of difference.
English vineyards are producing sparkling and still wines that rival Europe. Customers are proud to buy local, so featuring an English bottle or two can create excitement, support home-grown producers, and encourage up-selling with food pairings and special occasions.
Drinkers are curious about native grape varieties, from Assyrtiko in Greece to Baga in Portugal. Featuring these lesser-known grapes adds a sense of discovery to your list. Promote them by the glass to drive trial and create talking points.
Across red, white and rosé, lighter, fresher styles are winning. Guests want wines that are food-friendly, approachable and versatile by the glass. Stocking a few lower-tannin reds and crisp whites ensures your list feels modern and keeps customers ordering more.
It’s no secret: spend a bit more on wine and you’ll notice the difference. But under the UK’s strength-based duty system, the reason is not just taste, reputation, or “trading up”. The maths backs it up.
Wine duty is now charged according to ABV, not price. That means if two wines sit at the same strength, the duty bill is effectively the same whether the bottle sells for £9 or £15. On a 14.5% ABV wine, that duty comes in at £3.33 per bottle. The tax does not flex with retail price. It is fixed by strength. And that is where the squeeze begins.
We have used £15 and £9 because they reflect two familiar points on many on-trade lists: an entry-level
option and a credible step up. The gap is realistic, not exaggerated, and mirrors the everyday pricing decisions operators face. By keeping the strength the same and only changing the selling price, the impact of fixed costs becomes obvious.
On a £15 bottle at 14.5%, duty accounts for 22% of the price. On a £9 bottle at the same strength, that figure jumps to 37%. Same £3.33 duty, very different impact. Once VAT, packaging and logistics are accounted for, the difference shows up in the only place it can: the wine itself.
On a £15 bottle, around 31% of the price is spent on the wine. On a £9 bottle, that drops to just 13%. That is
an 18 percentage point gap. In cash terms, £4.67 goes into the liquid in the £15 bottle, compared to £1.17 in the £9 bottle. Put simply, the £15 bottle contains roughly four times more actual wine value than the £9 bottle.
Even at lower strengths, the pattern holds. Duty may reduce slightly, but it still takes a larger share of cheaper bottles, leaving less room for quality. The cheaper the selling price, the more the fixed costs dominate. The takeaway is straightforward. When duty is fixed per unit of alcohol, trading up does not just improve perception or margin. It increases the proportion of the bottle price that is actually paying for the wine in the glass.

For more than 100 years the Tombacco family has been producing and bottling wines with genuine and intense flavours, following Italian wine-making traditions. And, the wines it procures are key Italian classics.
The Rinomata Cantina Tombacco (Renowned Tombacco Winery) was founded in 1919 and is based in Trebaseleghe, a rural town in the centre of Padua, Venice and Treviso. Tradition and quality is key for Tombacco which works with producers across Italy to create ranges which celebrate the diversity of the country and its regions.
Archivio is a range of wines celebrating this passion for Italy – the name translates as ‘archive’ as a nod to tradition.

Greek wine proves it belongs on every good wine list
Greek wine has spent years being politely sidelined. Loved on holiday, tolerated on themed menus and rarely trusted elsewhere. That perception is now changing, and for good reason.
Quality has taken a clear step up. Modern winemaking, better vineyard work and a sharper focus on freshness have transformed how Greek wines taste in the glass. They are cleaner, more precise and far easier to place on contemporary foodled menus. Add to that a generation of producers keen to compete internationally, and the results speak for themselves.
There’s also timing. With guests more open to trying something new, sommeliers and buyers are looking for wines that feel discovered rather than obvious. Greek varieties tick that box without feeling

obscure. Crucially, they still offer sensible pricing, making them a strong option for bythe-glass listings where margin matters.
A perfect example is Domaine Papagiannakos, established in 1919 and based just outside Athens. This is a familyrun estate that has played a major role in redefining modern Greek wine, particularly through its work with Assyrtiko. Careful vineyard management, gentle handling in the winery and a clear focus on balance give these wines clarity and consistency, which is exactly what the on-trade needs.
Our range reflects that approach. Domaine Papagiannakos Assyrtiko is crisp, textured and saline. Kalogeri Malagouzia brings aromatic lift and ripe stone fruit. Granatus Rosé is pale, dry and versatile. Erythros is soft, juicy and built for easy drinking.

here was a time when organic wine sat in a dusty corner of the list, ordered by one loyal table who also asked about hemp milk. Not anymore.
Organic has moved from fringe to fixture, driven firmly by consumer demand. Today’s guest is label literate. They scan for cues that signal quality, care and credibility. Organic certification is one of the clearest and easiest to understand. It answers the big questions
in a single word. How was it farmed? Was it treated gently? Does it align with how I like to spend my money?
So what actually is organic wine? In simple terms, it means the grapes are grown without synthetic pesticides, herbicides or artificial fertilisers. Producers rely on natural vineyard management, healthier soils and biodiversity. In the winery, the rules are tighter too, with restrictions on additives and lower permitted sulphite levels. It is
regulated and certified, not just a marketing flourish on a back label.
We see the impact across our customer base. Organic wines do not just sell, they trade up. Customers are prepared to pay more when there is integrity behind the bottle. That is where your GP quietly improves. No heavy sales pitch required, just a confident recommendation and a short, human explanation.
Take Rallo Azienda Agricola Vicoletto Catarratto. Proper Sicilian sunshine, organically farmed vineyards and a crisp, textured style that feels familiar yet interesting. If a guest usually orders Pinot Grigio, this is a seamless step up. You gain a stronger price point, they gain a wine with character and a story rooted in responsible farming.
Then there is Chat Fou by Eric Texier. Texier is a grower with serious Rhône credentials and a reputation for working organically and with minimal intervention. This is the sort of bottle that catches the eye of engaged drinkers who read the back label. It signals


independence and craft, which supports a premium listing.
For a versatile, juicy red, Château Lermite D’Auzan Gavroche Rouge offers organic viticulture with broad appeal. It is approachable enough for by the glass yet carries enough credibility to justify a confident upsell. Organic here is not preachy, it is simply part of the quality story.
At the higher end, Piano dei Daini Etna Bianco Tenuta Bosco brings organic farming together with volcanic Etna terroir. Etna already commands attention on a wine list. Add certified organic vineyards and you create a compelling reason to trade up. Guests understand that this is thoughtful farming in a dramatic landscape. It feels special, and they pay accordingly.
Organic wine is not about ticking a box. It is about responding to a clear shift in consumer behaviour. When demand meets confident recommendation, the result is simple. Better bottles, better margins and a wine list that feels current rather than cautious.

Why sustainability matters now to customers just as much as what’s in the glass
Sustainability in spirits only lands if the producers can back it up. Luckily, plenty now can and they are doing it in very different, very credible ways.
Take Nc’nean and Bruichladdich. Both are openly obsessive about transparency, renewable energy and traceability. Nc’nean’s organic approach and closed-loop thinking make it one of the most progressive distilleries in Scotland, while Bruichladdich continues to lead the conversation on provenance, packaging and honest labelling.
In gin, Warner’s, Sacred Spirits, Sipsmith and Mermaid Gin all show that scale does not have to come at the expense of responsibility. From renewable distilling practices and local sourcing to serious investment in packaging reduction, these brands are doing more than ticking boxes. Pentire deserves a special nod too, proving non-alc spirits can be built around foraged botanicals and low-impact production without losing depth or relevance.
Agave and rum are catching up fast.
Mijenta focuses on low-impact tequila production and community-led agave growing, while Duppy Share continues to champion Caribbean provenance with a lighter footprint. Even 818 Tequila has made meaningful progress around transparency and production standards, which surprises more than a few people when you dig into it.
Then there are the quiet grafters. Sapling, planting trees with every bottle sold. Two Drifters, running one of the lowest carbon rum distilleries in the UK. Ellers Farm, tackling waste and efficiency from the ground up. Maker’s Mark, reinvesting in regenerative farming at scale. Calvados Avallen, championing orchards, biodiversity and low-intervention production. And yes, even Baileys, making genuine strides in energy use, sourcing and waste reduction.
Fruit is another area where quality shows quickly. Using a product like Little Mixers Purée removes the need for fresh prep while keeping flavour authentic and reliable. It reduces waste, speeds up service and gives a consistent result every time, which is exactly what a busy bar needs.
Call out a sustainable serve. Offer a greener upsell or green versions of well known cocktails. Guests increasingly want to drink better in every sense, and these brands give you the credibility to help them do exactly that.

3 Slices Of Cucumber
25ml Lime
20ml Sugar
75ml Soda Water
Cucumber Slice Garnish

INGREDIENTS
50 ml Limoncello Di Capri
150 ml Tonic water
Sprig of mint Lemon zest

PREPARATION
Pour all the ingredients into a highball glass filled with ice. Stir and garnish with a sprig of mint and a lemon zest.
