very peri Our Spring Meadow Collection is inspired by the arrival of the new season. The look is all about wide open fields filled with wild flowers. The colours (and likewise the flowers) are not your typical summer bold and bright blooms but rather muted pastel sprigs: pink petals, grassy greens, daisy yellows, lilacs... Speaking of purple, the main focus of our printable collection is the Pantone Colour of the Year: Veri Peri – and hopefully it lives up to it’s name of having “a carefree confidence and a daring curiosity that animates our creative spirit.”

Cut out the note card and envelope. 3. Write in the details of your dinner/party on the note card. 4. Fold along the dotted lines of the envelope flaps and glue the flaps of the envelope together. 5. lotus flower A classic napkin fold to add a botanical touch and use all season long! MATERIALS Napkin: linen or paper DIRECTIONS 1. Fold a corner of the square napkin to the centre. 2. Fold the rest of the other three corners to the centre. 3. Flip the napkins. Because of how large a dinner napkin can be and how easily it can unfold, pinch the ends of the corners in the centre of the napkin. This is to prevent the sides from coming undone when the napkin is flipped over. 4. Now repeat the first step: Fold in one of the napkin's corners to the center of the napkin, and fold in the rest of the corners to the centre of the napkin. 5. Feel underneath any of the corners, you will feel a flap. You must pull that flap, so that the corner of the flap is facing you. petal ice cubes Rose petal ice cubes are a lovely addition to any clear or light-coloured drink. Put them in drinking water or a cocktail! MATERIALS Ice cube tray Water Edible flowers (pesticide-free) DIRECTIONS 1. Pour enough water into an ice tray to fill it one-third of the way. Freeze. 2. Place petals or whole roses on top of the ice. Add enough water to fill the tray two-thirds of the way and freeze again. 3. At this point, the petals or flowers will be stuck in the ice and unable to float to the top of the cube. It is safe to fill the tray the rest of the way with water and freeze. Tip: When you use tap water to make the ice, you may end up with tiny air bubbles. floral focaccia If you have not tried your hand at making bread, this Italian-style classic is a great place to start. Master the base, then turn it into edible art with a floral design made from edible flowers and vegetables. INGREDIENTS 1 1/4 cups (310ml) warm Water 1 teaspoon Castor Sugar 2 teaspoon (1 sachet/7g) dried Yeast 3 cups (450g) plain Flour 1 teaspoon Salt 1/3 cup (80ml) extra virgin Olive Oil 2 Spring Onions, ends trimmed 1/2 Red Onion, thinly sliced 200g mixed Cherry Tomatoes, halved Chives, to decorate METHOD 1. Combine water, sugar and yeast in a jug. Set aside for 5 minutes or until mixture is frothy. 2. Combine flour and salt in a large bowl. Make a well in the centre. Add the yeast mixture and olive oil and stir until mixture comes together. 3. Turn onto a lightly floured surface and knead for 10 minutes or until the dough is smooth and elastic. Place in a large oiled bowl and cover with plastic wrap. Place in a warm, draught-free place for 1 hour or until dough doubles in size. 4. Preheat oven to 200°C. Punch down the dough. Turn onto a lightly floured surface. Knead until smooth. Grease a 25cm x 35cm baking tray. Use a rolling pin to roll out the dough to a 25cm x 35cm rectangle. Transfer to the prepared tray. Use the end of a wooden spoon to make ‘dimples’ all over the surface of the dough. 5. Decorate with spring onion, red onion, tomato and chives to make flowers and stems. Brush with olive oil. Season with sea salt flakes. Set aside in a warm place for 15 minutes to rise slightly. 6. Bake for 10 minutes. Reduce oven to 180°C. Bake for 20 minutes or until focaccia is light golden and cooked through. Cool slightly. 7. Serve warm or at room temperature.

rainbow rolls Take your cheese spread to the next level by decorating the rolls with pressed petals. INGREDIENTS For the rolls: 280g goat cheese For the decoration: (feel free to mix and match your favorite vegetables, herbs, and edible flowers) Rainbow carrots Rainbow radish Cucumber Black pepper Dill Chives Thyme Edible flowers SUGGESTED EQUIPMENT Mandoline METHOD 1. Mash the cheese with a fork into a homogeneous mix then form rolls with your hands. Put the rolls in the fridge for at least 10 minutes. 2. In the meantime, thinly slice your veggies. (Use a mandoline to get really thin slices however you can also use a vegetable peeler or simply be really careful with a knife). Slice them as thin as possible, so it is easy for each piece to wrap around the cheese roll. 3. Ready to assemble: on a piece of cling film, arrange some herbs, a slice or two of the vegetables, and some flowers. 4. Put the cheese roll on top and carefully wrap the cling film around it so that all the ingredients get stuck around the cheese. 5. Put the rolls back in the fridge. 20 minutes should suffice however a few hours is ideal. Then you can unwrap the cling film - the vegetables and the herbs should be stuck around each roll. 6. Serve as an appetiser or as part of a party spread cheese board.

sugar coated petals Use these candied flowers to embellish cupcakes, sugar cookies, donuts or even pancakes: make pancakes as normal but after about 1 minute in the pan, sprinkle with petals. INGREDIENTS 1 large Egg white 1 teaspoon Water Pesticide-free Edible flowers, such as pansies and violas, stems removed (up to 75) Superfine sugar, for sprinkling Tweezers Small Paint Brush Baking Parchment DIRECTIONS 1. Whisk egg white with water in a small bowl. 2. Working with 1 flower at a time and holding it with tweezers, brush egg wash over entire surface of flower using a small paintbrush. 3. Sprinkle with sugar. 4. Transfer to a baking sheet lined with parchment to crisp flowers. 5. Let stand at room temperature overnight. 6. Sugared flowers can be stored in single layers in airtight containers at room temperature for up to 3 months. * a good idea Instead of decorating with just the petals or flower head, rather cut flowers with the stem intact and send the whole sprig into the cupcake,. This looks especially pretty when the cupcakes are served inside miniature terracotta pots.

flower pressing Press a flower and preserve a memory in time. Turn flowers and leaves into keepsakes for framing or decorations to use on cards, letters or pieces of paper as artwork. A lovely way to preserve flowers from a special occasion or memorable day out. MATERIALS Picked Flowers Flower Press (or heavy books) Sheets of Card and Paper for pressing DIRECTIONS 1. To assemble this flower press, feed the screws through the pre-made holes on the unprinted wooden panel. 2. Layer a sheet of card, then a sheet of pressing paper and carefully top with your chosen flower. 3. Place another piece of paper on top, followed by more card and repeat the layers to press multiple flowers at once. 4. Finally add the remaining printed wooden panel and use the washers and wingnuts to tighten securely. 5. Leave your flowers in the press for 2-3 weeks, then carefully unlayer to reveal your delicate creations. * a good idea Press edible flowers and use these to decorate the side of a vanilla butter cream cake.
