haque année, j’ai le même plaisir à voir les beaux jours arriver, car plus les journées s’allongent, plus le temps ralentit. C’est le moment de lever le nez de nos agendas bien remplis et de profiter de chaque instant. PROFITER de vous détendre. Au bord de notre piscine extérieure, lors d’un soin au Willow Stream Spa ou autour d’un bon repas, notamment sur La Terrasse du Petit Palais, où notre chef vous propose de nombreux plats qui vous transporteront en une bouchée au bord de la Méditerranée.

PROFITER d’événements uniques. Comme tous les ans, c’est le Montreux Jazz Festival qui ouvre les feux d’une saison qui s’annonce festive. On ne compte plus le nombre de festivals et d’animations qui sont proposés dans la région. Une saison qui se terminera en beauté avec le Festival Images, qui a lieu à Vevey tous les deux ans, et qui nous réserve toujours de magnifiques surprises.

PROFITER de la nature. Le Léman et les Alpes juste en face de l’hôtel, mais aussi le vignoble de Lavaux à quelques kilomètres d’ici, où les vignerons vous attendent pour partager avec vous leur passion. Calling all athletes! The scenery will be breathtaking, but the races might well leave you out of breath! This is particularly the case of the main event, the MXTrem 160, which starts in Montreux and offers you the chance to discover the entire Alpine region of the canton of Vaud, taking in 14 municipalities, 165 kilometres (roughly 100 miles) and climbs totalling approximately 13,600 metres. But for those of you already exhausted by these figures, don’t panic: a number of easier races intended for children and families are also on the agenda, including one or two relay races. What’s more, festival rhymes with concerts and food stands. So ready, steady, go! ✯

Lancée en grande pompe lors de la COP23 (la conférence climatique de l’ONU qui s’est tenue à Bonn, en Allemagne) – en présence de Son Altesse Sérénissime le Prince Albert II de Monaco et avec l’engagement d’Arnold Schwarzenegger en tant que parrain de l’initiative –, cette Alliance a pour but de sélectionner 1000 solutions écologiques et rentables et de les présenter aux décideurs du monde entier en 2019

ardi 26 juillet 2016, 2 h 06 du matin, Abu Dhabi. L’avion Solar Impulse, piloté par Bertrand Piccard, se pose sur le tarmac de l’aéroport d’Al-Bateen, aux Emirats arabes unis, bouclant ainsi pour la première fois un tour du monde avec un avion qui ne fonctionne qu’à l’énergie solaire. A peine a-t-il atterri que les journalistes demandent déjà à Bertrand Piccard quelle sera sa prochaine aventure. En effet, après avoir réalisé le premier tour du monde en ballon sans escales à bord du Breitling Orbiter 3, en 1999, puis ce tour du monde en avion solaire, on s’attend à ce que l’aventurier lausannois nous annonce son prochain pari. Sauf que, comme il l’a souvent répété, si ce 26 juillet 2016 marque la réalisation d’un exploit, il ne signe pas pour autant la fin d’une aventure. «Il n’était pas question de faire un tour du monde juste pour faire un tour du monde. Je voulais un outil crédible

RENDEZ-VOUS lors d’un nouveau tour du monde des solutions, afin de les encourager à adopter des politiques énergétiques et des objectifs environnementaux plus ambitieux.

Changer de perspective Psychiatre de formation, l’explorateur suisse a l’occasion d’analyser le fonctionnement de nombreux êtres humains et note la peine qu’ont les gens – comme les Etats d’ailleurs – à changer de perspective. Dans son livre Changer d’altitude, paru en 2014, il insistait déjà sur la nécessité de lâcher du lest pour changer d’altitude et trouver de nouveaux courants qui nous amènent dans d’autres directions. Car, pour ce médecin aventurier, il est aujourd’hui indispensable de trouver des solutions et d’arrêter de se concentrer constamment sur les problèmes.

Avec cette nouvelle initiative, Bertrand Piccard prouve aussi que donner du sens à ce que l’on fait est un excellent moteur pour faire évoluer les consciences. Un peu comme son père, Jacques, le faisait déjà avec ses explorations. En 1960, lorsque l’océanographe devient l’homme le plus profond du monde en touchant le fond de la fosse des Mariannes à –10 916 mètres, il réalise non seulement un exploit, mais attire l’attention de la communauté internationale sur les problèmes de pollution et d’épuisement des ressources naturelles. ✯

Jacques Piccard, un habitué du Montreux Palace Habitant à La Tour-de-Peilz, Jacques Piccard, père de Bertrand, venait presque tous les jours à l’hôtel avec sa compagne pour manger ou simplement boire un café. Gisèle Sommer, assistante du directeur général du Fairmont Le Montreux Palace, se souvient avec émotion de cet homme très humble qui avait toujours un mot gentil pour le personnel. «Plusieurs années avant de travailler à l’hôtel, j’avais reçu un bon-cadeau pour aller dans son fameux mésoscaphe, qui se trouvait alors à Ouchy. Quand je suis arrivée, un homme m’a approchée et m’a dit que la personne qui devait me faire la visite ne pouvait malheureusement pas être là. C’était donc lui qui allait m’accompagner. Lui, c’était Jacques Piccard en personne! Au lieu des 45 minutes prévues, la visite a duré deux heures. Je n’en revenais pas! Des années plus tard, quand je l’ai revu à l’hôtel, il était déjà très âgé et j’ai mis longtemps avant d’oser lui rappeler cette anecdote et lui avouer que j’avais notamment commencé la plongée suite à cette rencontre.»

Une aventure signée à deux Pendant treize ans, Bertrand Piccard et André Borschberg ont collaboré pour réaliser ce pari que beaucoup considéraient comme fou et irréaliste. S’ils ont dû voler à tour de rôle à bord du cockpit monoplace de leur avion solaire, ils ont écrit ce livre ensemble, à deux voix. Au final, Objectif Soleil est un récit surprenant et authentique qui témoigne d’une histoire hors du commun.

uesday 26 July 2016, 2.06 a.m., Abu Dhabi. Piloted

by Bertrand Piccard, the Solar Impulse aircraft touched down at Al-Bateen Airport in the United Arab Emirates, completing the first circumnavigation of the Earth in an aircraft using only solar power. He had barely climbed out of the cockpit than journalists were already asking what his next adventure would be. Having completed the first non-stop circumnavigation of the globe by balloon aboard Breitling Orbiter 3 in 1999 followed by this solar aircraft feat, everyone was waiting to hear what this daring native of Lausanne was planning as his next challenge. However, as he has often said, while that momentous day in July 2016 marked a specific accomplishment, it was not for all that the end of an adventure. “It wasn’t simply a question of circumnavigating the globe just for the sake of circumnavigating the globe. And this doctor-cum-adventurer feels that it has become essential that we find solutions rather than constantly focus all our attention on problems.

With this new initiative, Bertrand Piccard also proves that giving meaning to our actions is an excellent means of awakening people’s conscience. In this, he echoes his father, Jacques, whose explorations had a similar impact. In 1960, when the oceanographer went deeper than any man on earth had ever been by reaching the bottom of the Mariana Trench at a depth of some 10,916 metres, he not only achieved a quite astounding feat but also drew the attention of the international community to the problems of pollution and the depletion of natural resources. ✯

Gisèle Sommer, Assistant to the General Manager of the Fairmont Le Montreux Palace, fondly remembers this very humble man who unfailingly had a kind word for the staff. “Several years before working for the hotel, I received a gift voucher to visit his famous mesoscaphe which was in Ouchy. When I arrived, a man approached me and said that the person who was supposed to provide the guided tour was unfortunately unable to be there. So he would accompany me

Heavenly: Comment a débuté votre collaboration avec Fairmont Le Montreux Palace?

Nicolas Brönnimann: Il y a deux ans, Michael Smithuis, le directeur général, a demandé qu’on se rencontre. Comme nous avions l’habitude de nous occuper de l’entretien de jardins pour différentes entreprises, nous pensions que c’était à ce sujet. Mais non: il souhaitait que nous réfléchissions à la décoration florale de l’ensemble de l’hôtel. Sauf que nous n’avions jamais travaillé pour l’hôtellerie et que nous n’avions alors que deux fleuristes qui travaillaient pour nous…

Comment avez-vous fait?

Nous avons profité de cette occasion pour monter une structure entièrement consacrée aux fleurs coupées. Aujourd’hui, nous avons huit fleuristes dans l’entreprise, dont deux qui travaillent sur place, au Fairmont Le Montreux Palace, et qui leur sont entièrement dédiées.

En quoi consiste leur travail?

S’occuper des fleurs dans toutes les parties communes, placer une petite attention sur les tables du petit déjeuner ou préparer un bouquet pour un client qui souhaiterait offrir des

fleurs à sa femme. Mais aussi décorer une table de restaurant pour un groupe ou embellir une salle pour un séminaire. Leur travail est très varié.

Quel est votre plus beau souvenir depuis le début de cette collaboration?

Sans aucun doute le mariage d’un couple d’origine indienne, qui a eu lieu en septembre dernier. Il y avait plus de 500 invités. Les festivités ont duré toute une semaine. Pour ce genre d’événements, nous avons la chance d’avoir une entreprise suffisamment grande pour pouvoir ajouter du personnel en fonction des besoins. C’était une semaine de dingue. Je me rappelle qu’une cérémonie avait lieu le jeudi soir entre 19 h et minuit. Il a fallu transformer entièrement La Terrasse du Petit Palais en jardin. Le lendemain matin, à 8 h, une cérémonie religieuse avait lieu au même endroit. Nous étions vingt et nous avons dû travailler toute la nuit pour entièrement revoir le décor. C’est le truc le plus fou qu’on ait eu à faire.

Et ça ne vous fait pas peur?

Non! Je suis de nature positive. Je me dis constamment que ça va fonctionner. Les gens qui m’entourent ont parfois quelques doutes, mais ils finissent par me suivre. Quand nous travaillons sur des événements qui demandent un tel engagement de leur part, je suis toujours là avec eux, à mettre la

n 1954, Jean Brönnimann se lance dans la production et la vente de végétaux pour les horticulteurs et les grandes surfaces. En 1987, son fils, Michel, reprend le flambeau et agrandit l’affaire avec la création d’un garden centre, suivi d’un deuxième. Depuis deux ans, sous la houlette du petit-fils Nicolas, 35 ans, l’entreprise, qui compte aujourd’hui 50 personnes, poursuit son expansion, notamment grâce au développement de collaborations avec le milieu de l’hôtellerie.

main à la pâte. Je me dois de donner l’exemple, de passer du temps avec eux.

Vous êtes une entreprise familiale. N’est-ce pas difficile de travailler pour une grande structure comme Fairmont Le Montreux Palace?

Pas du tout. Ce qui est exceptionnel dans cet hôtel, c’est qu’il y a un vrai esprit de famille. Il y a une ambiance incroyable et on nous a tout de suite intégrés comme si on faisait partie de l’hôtel. Je viens ici au moins une fois par semaine pour faire le point avec le staff et la direction, et je me sens à chaque fois comme à la maison.

Vous avez repris l’entreprise il y a deux ans.

Qu’y apportez-vous de nouveau?

Après ma formation, j’ai travaillé une année à Zurich, puis une année à Londres. C’est vraiment en Angleterre que j’ai appris mon métier, parce qu’ils ont au moins dix ans d’avance sur nous: là-bas, les plantes, c’est un business. En rentrant, j’ai surtout travaillé sur la notion de service. Aujourd’hui, on trouve des fleurs partout, il faut donc privilégier le service et le conseil.

En ça, travailler avec Fairmont Le Montreux Palace me permet de progresser. En les côtoyant, j’ai vraiment appris ce qu’est le service, l’excellence, le fait de toujours mettre le client au centre. J’essaie désormais d’appliquer cela à nos magasins. ✯

La fête ayant duré une semaine entière, les fleuristes ont dû travailler d’arrache-pied. Elles ont par exemple dû piquer 6000 roses en quelques heures pour décorer une structure sous laquelle les mariés allaient prendre place. «Nous avons dû refaire ça deux fois dans la semaine, se souvient Nicolas.

Il y a trois personnes qui n’ont fait que ça pendant deux jours, jour et nuit.»

Heavenly: How did you come to work with Fairmont Le Montreux Palace?

Nicolas Brönnimann: Two years ago, Michael Smithuis, the General Manager, asked if we could meet. As we were accustomed to dealing with the upkeep of the gardens for a number of different companies, we thought that this would be the subject of the discussion. But we were wrong. He wanted us to apply our minds to the floral decoration of the hotel as a whole. However, we had never worked for the hotel sector and, at the time, we only had two florists working for us…

So how did you manage?

We took the opportunity to create an entity dedicated entirely to cut flowers. Today, there are eight florists in the company, two of whom work on-site at Fairmont Le Montreux Palace with the sole remit of satisfying the hotel’s needs.

What does their work consist of?

They deal with the flowers in all the common areas of the hotel, place little sprays on the breakfast tables or prepare a bouquet for a customer who wants to offer his wife some flowers. They are also responsible for decorating restaurant tables for groups or even a seminar room. Their work is highly varied.

What is your best memory since you began working together?

Without a doubt the wedding of an Indian couple that took place last September. There were more than 500 guests and the festivities lasted a whole week. For that kind of event, we are lucky that our company is big enough to bring in additional staff as required. That was one crazy week. I remember that a ceremony took place on the Thursday evening between 7 p.m. and midnight.

was being held in the same place. Twenty of us had to work throughout the night to change the décor accordingly. That is the craziest thing we’ve ever been asked to do.

Weren’t you put off by the task at hand?

Not at all! I’m naturally positive. I constantly tell myself that it will all go to plan. Some of the people close to me occasionally have doubts, but they end up going along with me. When we work on events that require such massive commitment on their part, I am always there with them getting my hands dirty. It is my duty to set the example and to spend time with them.

Yours is a family business. Isn’t it difficult to work for a large entity such as the Fairmont Le Montreux Palace?

Not at all. What is so great in this hotel is that there is a real family spirit. There is an amazing atmosphere and they immediately made us feel as if we belonged. I come here at least once a week to check with the staff and management that everything is running smoothly and I always feel as if I am part of the team.

You took the business over two years ago.

What do you bring to the table?

After my training, I worked for a year in Zurich and another year in London. It is in England that I really learned my trade because they are at least ten years ahead of us. Over there, plants are big business. When I returned, I focused my attention on the concept of service. These days, you can find flowers just about anywhere, so it is important to emphasise service and advice. In that respect, working with the Fairmont Le Montreux Palace has allowed me to take great steps forward. Through this partnership, I have really learned what service and excellence is all about – always putting the customer first. I try to adopt this credo in our stores. ✯

Nothing is ever too beautiful Last September, for the Indian couple’s wedding, Nicolas Brönnimann’s team certainly didn’t skimp on the service they provided. As the festivities lasted an entire week, the florists put in long hours. For example, they had to attach 6,000 roses in only a few hours to decorate a structure under which the newly-weds would stand. “We did it twice during the week,” recalls Nicolas.

In 1987, his son Michel took over the reins and expanded the business with the creation of their first garden centre, followed by a second. For the past two years, the company, which – under the leadership of Jean’s grandson Nicolas, 35 – now boasts a staff of some 50 people, is continuing its expansion, in particular thanks to the development of partnerships with the hotel industry.

Executive Chef at the Nikkei Nine restaurant of the Fairmont Hotel Vier Jahreszeiten in Hamburg, he is a fervent advocate of elegant dishes combining the intense flavours of Japan and the colourful ingredients of Peru. For one week, the teams from the Nikkei Nine and MP’s Bar & Grill worked together to treat the attending gourmets to a selection of dishes that were as visually attractive as they were delicious. ✯

Les sœurs Söderberg maîtrisent si bien la country-folk qu’elles se sont vu offrir la scène du Grand Ole Opry, Mecque de la country music à Nashville. Découvertes en 2008 avec leur reprise de Tiger Mountain Peasant Song de Fleet Foxes, les jeunes Suédoises comptent déjà quatre albums à leur actif ainsi que des dizaines de millions de vues sur YouTube.

A l’époque où la britpop règne en maître, Jamiroquai débarque avec une soul-funk teintée d’acid jazz. Depuis 1993, l’Anglais a vendu plus de 26 millions d’albums et les plus de 7 millions de copies de son mythique Travelling Without Moving lui valent encore de figurer dans le Guiness Book pour l’album funk le plus vendu de l’histoire.

he collaboration between the Montreux Jazz Festival and the Fairmont Le Montreux Palace grows stronger by the year. During this 52nd edition, the two partners will make yet another addition to the long list of projects they have undertaken together. “Until now, many of the activities linked to jazz were organised in several different locations,” notes Mathieu Jaton, CEO of the Montreux Jazz Festival. “The idea was to bring them all together under one roof.” The roof in question is that of the Petit Palais, the stunning art nouveau building of Fairmont Le Montreux Palace.

During the 16 days of the festival, the House of Jazz in the Petit Palais will welcome festival-goers from midday to the early hours. The workshops and competitions will be held on the first floor on a stage set up under the sublime cupola.

Visitors will be able to stroll around, listen to a little music and enjoy the magnificent terrace together with the fare served up by the hotel’s chef. Once the concerts have come to an end in the evening, it will also host the famous jam-sessions, improvised happenings bringing together fearless young talents and more established artists programmed in the different venues. In this year’s major innovation, the Montreux Jazz Club will say goodbye to its previous home and move into the ground floor of this House of Jazz. With room for 600 guests, the capacity of the venue will thus be doubled.

The festival team also wanted to create a place where artists could relax during the day, not too far from the concert halls. “We want to offer the artists a little peace and quiet while giving them the opportunity to climb on stage for an impromptu session,” adds the CEO. So you might not have to wait until the small hours to be part of one of those unforgettable moments to which the Montreux Jazz Festival seems to hold the key. ✯

Lors de cette 52e édition, les deux partenaires ajoutent une ligne à la liste déjà longue des projets réalisés en commun. «Jusqu’à présent, de nombreuses activités liées au jazz étaient excentrées, note Mathieu Jaton, CEO du Montreux Jazz Festival. On pourra ainsi déambuler, écouter quelques notes de musique et profiter de la magnifique terrasse avec une carte élaborée par le chef de l’hôtel. Dès la fin des concerts du soir, c’est également là qu’auront lieu les fameuses jamsessions, ces spectacles improvisés qui rassemblent jeunes intrépides et artistes programmés dans les salles. Grande nouveauté de cette édition, le Montreux Jazz Club quitte l’emplacement qu’il occupait jusqu’à présent pour investir tout le rez-de-chaussée de cette House of Jazz. La capacité de cette salle passe ainsi de 300 à 600 places.

la route de Lavaux 21, à Corseaux, nombreux sont ceux qui ignorent que se trouve un symbole de l’histoire de l’architecture du XXe siècle: la Villa «Le Lac», soit la maison que Le Corbusier a conçue pour ses parents au début des années 1920, reconnue comme une des réalisations les plus personnelles et les plus inventives de l’architecte, né en 1887 à La Chaux-de-Fonds.

Une maison classée Classée au patrimoine mondial de l’Unesco – comme seize autres bâtiments de Le Corbusier répartis dans sept pays –, cette villa est un bijou d’ingéniosité et de fonctionnalisme.

Ici, chaque pièce et chaque meuble ont une fonction précise.

exemple, a été conçu spécialement pour sa mère. On y trouve de la place pour disposer ses ouvrages de tricot, quelques tiroirs de rangement et une galerie pour exposer ses photos de famille. Rien de superflu. Juste l’essentiel.

La simplicité en majesté Magnifiquement située au bord du Léman, cette villa possède une fenêtre en bandeau sur une grande portion de la façade qui se trouve face au lac, afin de profiter du paysage. Dans le jardin, en écho à cette fenêtre de 11 mètres de longueur, l’architecte a cloisonné l’espace en laissant une seule ouverture, qui transforme le panorama en tableau.

Si les réalisations de Le Corbusier peuvent paraître rigides à certains, l’architecte est néanmoins un des premiers à avoir pensé au bien-être des personnes qui allaient vivre dans le bâtiment construit. any people are completely unaware that one of the emblems of the 20th century’s architectural history can be found at 21 route de Lavaux in Corseaux: the Villa “Le Lac”, designed by Le Corbusier for his parents at the beginning of the 1920s and acknowledged as one of the most personal and inventive creations of the architect who was born in La Chaux-deFonds in 1887.

A very special house Listed as a World Heritage Site, along with sixteen other of Le Corbusier’s creations located in seven different countries, this villa is a little gem of ingenuity and functionalism.

Each room and each piece of furniture here has a specific function. The secretary desk in the bedroom, for example, was specially designed with his mother in mind. It has space for her knitting, a few storage drawers and a gallery to hold family photos. Nothing superfluous. Just the bare essentials.

Simplicity to the forefront Enjoying a stunning situation on the shore of Lake Geneva, this villa boasts a ribbon window along a large section of the façade overlooking the lake, allowing the inhabitants to take full advantage of the scenery. Echoing this 11-metre-long window, the architect fenced in the garden and left a single opening, thereby turning the view into a painting.

While Le Corbusier’s creations may seem rigid to some, the architect is nevertheless one of the first to have taken the wellness of the people who would live in the building into consideration.

He once again seems to have achieved this objective in this villa, as his mother lived very happily here for more than thirty years until her death in 1960 at the ripe old age of 100. ✯

es collaborateurs du service traiteur sont toujours prêts à relever des défis, qu’il s’agisse de servir un repas sur un voilier d’époque lors du tournoi de tennis Montreux Ladies Open, d’assurer un dîner pour 1500 personnes sous le marché couvert de Montreux pour l’ouverture d’un congrès de médecine ou encore de servir un papet vaudois revisité avec des truffes au milieu des vignes.

Cette équipe, c’est un peu l’équipe MacGyver du Fairmont Le Montreux Palace! «C’est vrai que le staff se doit d’être hyper-flexible et de s’adapter à toutes les situations, sourit Katja Marshall, directrice des opérations du palace. Mais il se doit surtout d’être extrêmement professionnel, car le service traiteur, c’est l’image du palace à l’extérieur.»

Sublimer le lieu Avant le grand jour, le client fait part de son budget et de ses envies à un responsable de ce service de restauration 5 étoiles.

On lui formule ensuite une ou deux offres, afin de satisfaire au mieux ses attentes. Si les dîners placés ont longtemps eu

Répondre à la moindre demande Lorsque la cuisine du palace se délocalise, il est important de ne rien oublier. «Surtout sur un bateau, relève Katja Marshall.

Une fois qu’il a quitté le quai, il n’est plus question de retourner à l’hôtel en cas d’oubli!» Au fil des années, le maître d’hôtel a d’ailleurs constitué une «boîte traiteur», qui contient des cure-dents, du Tabasco, de la mayonnaise, des mouchoirs, des couteaux à steak, un couteau suisse... «C’est notre boîte à outils traiteur, explique la directrice des opérations. Dès qu’on remarque qu’il manque quelque chose, on l’ajoute. En tant que palace, on se doit de pouvoir répondre à la moindre demande des personnes présentes.»

L’équipe emmène aussi toujours du pain sans gluten, ainsi que du lait sans lactose. «Nous souhaitons pouvoir proposer une alternative végétarienne ou sans gluten, même si personne ne s’est annoncé», relève Katja Marshall. Au fil du temps, elle note effectivement un changement dans les habitudes alimentaires: davantage de produits locaux et des produits de saison. Il n’est plus question de servir des framboises en janvier ou des asperges en décembre. Le retour à plus de simplicité et de légèreté semble également le nouveau mot d’ordre. «Au lieu d’avoir un poisson dans une sauce à la crème, on sert désormais du poisson avec un filet d’une excellente huile d’olive. Pour la viande, on la sert souvent juste grillée, avec un choix de moutardes à côté. Chaque produit doit être exceptionnel, car les clients ne veulent plus que tout nage dans une sauce», note la directrice des opérations.

Des événements uniques Si chaque événement est unique, Katja Marshall se rappelle particulièrement d’une soirée, qu’elle relate avec encore beaucoup d’émotion dans la voix. «C’était au chalet de Claude Nobs. Une soirée avait été organisée peu de temps après son décès, afin de lui rendre hommage. Il y avait énormément de monde, dont de nombreuses stars. Tout le monde se retrouvait là, au même moment, comme une grande famille, et nous avons eu l’honneur de pouvoir assister à ces instants. C’était très touchant.» ✯

la cote, aujourd’hui, il faut redoubler de créativité pour offrir aux personnes qui vont assister à ces événements une expérience exceptionnelle et pas simplement gustative. «Au musée Chaplin’s World, on organise souvent des cocktails autour d’un film de l’artiste, explique Katja Marshall. Un jour, c’était le thème du cirque. Les serveurs circulaient avec des plateaux.

Dessus: du pop-corn, des pommes d’amour, des amandes caramélisées.» Les participants peuvent ainsi découvrir les lieux en même temps qu’ils mangent. Au Château de Chillon – lieu où Fairmont Le Montreux Palace collabore à de nombreux événements –, pour une ambiance médiévale, l’immense cheminée est souvent utilisée pour cuire une grande pièce de viande à la broche.

A tailor-made service Fairmont Le Montreux Palace is not confined to its magnificent walls.

Throughout the year, the catering team makes every effort to spread the pleasures of the hotel far and wide.

T

he members of the catering team are always ready and willing to take up a challenge, be it serving food on a vintage yacht during the Montreux Ladies Tennis Open, preparing dinner for 1,500 people in Montreux’s covered market for the opening of a medical convention or even serving a papet vaudois redone with truffles in the middle of the vineyards.

It would be fair to say that this is the Fairmont Le Montreux Palace’s equivalent of the A-Team! “The staff have to be incredibly flexible and adapt to every situation,” smiles Katja Marshall, the hotel’s Director of Operations. Most of all, however, they have to be extremely professional as the catering service represents the hotel outside its own four walls.”

Satisfying every whim When the hotel’s kitchen takes to the road, it is important not to forget a single thing. “Especially on a boat,” notes Katja Marshall. “Once it has left the shore, it is impossible to return to the hotel if something has been left behind!” Over the years, the maître d’hôtel has created a “catering box” containing toothpicks, Tabasco, mayonnaise, handkerchiefs, steak knives, a Swiss Army knife and much more besides. “It is our catering toolbox,” explains the Director of Operations. “As soon as we notice that something is missing, we add it to the box. As a luxury hotel, it is our duty to satisfy every whim of those present.”

The team also always brings gluten-free bread and lactose-free milk. “We want to be in a position to offer a vegetarian or glutenfree alternative, even if no one informed us of this,” explains Katja Marshall. Over time, she has observed a change in dietary habits, with an emphasis on more local and seasonal products.

It is no longer a question of serving fresh raspberries in January or asparagus in December. Increased simplicity and light fare are the new watchwords. “Instead of fish in a creamy sauce, we now serve fish drizzled with high-quality olive oil. As for the meat, it is served grilled with a selection of mustards. Each and every product must be outstanding as the customers no longer want their dishes drowning in sauce,” notes the Director of Operations.

Unique events While each event is unique, she nevertheless emotionally recalls one particular evening. “It was at Claude Nobs’ chalet. An evening had been organised in his memory a short while after he had passed away. There were countless guests including a number of stars. Everyone had gathered together all at once like an extended family and we had the privilege of being a part of it. It was very touching.” ✯

Transcending the setting Before the big day, the customer informs one of the 5-star catering team’s managers of their budget and their wishes. The customer then receives one or two offers to ensure they receive the best possible service. While formal dinners have long been popular, even more creativity than usual is now required to give the guests an exceptional experience that goes beyond what’s served on the plate. “At Chaplin’s World, we often organise cocktails based on one of the artist’s films,” explains Katja Marshall. One day, the theme was the circus. The waiters were moving from group to group carrying trays laden with popcorn, toffee apples and caramelised almonds.” This allows the participants to discover the premises while eating. At Chillon Castle, where the Fairmont Le Montreux Palace is a player in numerous events, the vast fireplace

is often used to roast a large piece of meat on a spit, thereby creating a medieval atmosphere.

A l’occasion de son Grand Prix, Montreux reconstitue un circuit au cœur de sa cité.

Plus de 150 voitures de l’avant-guerre à nos jours seront présentes, dont une quarantaine de bolides, témoins mythiques de l’histoire du sport automobile.

Lutry est le dernier bourg vaudois à célébrer les vendanges. Pour l’occasion, les caves et caveaux de la région sont ouverts et de nombreuses animations sont prévues.

Le dimanche, un cortège de plus de 600 enfants costumés défile sous les yeux de milliers de visiteurs.

Tous les deux ans, Vevey se transforme en capitale suisse de la photographie.

Entièrement gratuit, le Festival Images Vevey est à la fois un véritable musée à ciel ouvert et une plateforme de qualité pour les artistes suisses et internationaux.

Ce samedi matin, je suis attendue dans l’un des hôtels qui me font le plus rêver sur cette terre. Je récupère ma clé, monte au 4e étage, le sourire aux lèvres et l’excitation montante, marche dans l’immense couloir, puis arrive devant la chambre 414, qui m’a été réservée pour une nuit.

La décoration est sobre, belle, cohérente. Elle sonne juste avec le lieu.

12 h 20, il est temps de filer rejoindre le débarcadère. L’Office du tourisme de Montreux-Riviera nous propose une croisière gourmande sur le Vevey, l’un des bateaux Belle Epoque de la CGN. L’entrée est servie pendant que nous longeons les côtes du Léman, passant par Le Bouveret puis Saint-Gingolph.

La vue est d’une beauté saisissante.

Le plat principal arrive à point nommé lorsque nous reprenons le large et quittons les rives françaises. Le sablé citron meringué accompagne en douceur la fin du voyage, que

nous terminerons sur le pont du bateau. Je suis une gosse, émerveillée par la beauté de ce 360° enchanteur.

16 h, retour au Palace, pour me préparer au soin qui m’attend au spa. Je savoure chaque instant de ce moment de paix et de tranquillité et apprécie particulièrement le parfum et la texture des produits de grande qualité de la marque anglaise Aromatherapy qui sont utilisés durant tout ce soin.

20 h, nous descendons au pied de l’hôtel, où se trouve le très jazzy Montreux Jazz Café. Je me laisse, pour ma part, tenter par le coquelet façon Quincy et, croyez-moi, c’est une véritable merveille!

Aux alentours de 22 h, rassasiés et heureux de notre soirée, nous quittons les lieux et remercions le personnel pour le service impeccable. e suis de ceux qui aiment aller loin et parcourir des milliers de kilomètres pour se sentir dépaysés. J’avoue que même si j’aime profondément ma région et ma Suisse romande, je n’imaginais pas qu’elle pourrait encore créer des émotions nouvelles chez moi, et moins qu’elle était encore capable de ce dépaysement que je recherche toujours ailleurs.

Quelle naïve j’ai été! Le week-end de rêve que je viens de passer m’a prouvé tout le contraire.

I

am one of those people who loves travelling thousands of miles to distant places to enjoy a feeling of total escape. I have to admit that while I am deeply attached to my region, my part of Switzerland, I no longer thought that it could be a source of new emotions in me, and even less that it could offer me the change of scenery that I always look for elsewhere.

How naive could I be? The dream weekend I have just enjoyed has proved to me just how wrong I have been.

Saturday morning, and I had a reservation in one of the hotels that had long been one of my dream destinations anywhere on Earth. I collected my key, went up to the 4th floor with a smile on my face as the excitement kicked in, walked down the huge corridor then arrived at the door to room 414 which would be my home for the night.

The décor was understated, attractive and tastefully coordinated. It is in perfect harmony with the setting.

At 8 p.m., we went to the very jazzy Montreux Jazz Café on the ground floor of the hotel. I was tempted by the spring chicken à la Quincy Jones and you can believe me when I say it was absolutely delicious!

At 12.20 p.m., it was time to head for the jetty. The MontreuxRiviera tourist office had organised a gourmet cruise on the Vevey, one of Belle Epoque boats operated by the CGN. The starter was served as we followed the shore along Lake Geneva, taking in Le Bouveret and Saint-Gingolph along the way. The view was breathtakingly beautiful.

The main course arrived conveniently as we turned away from shore, leaving the French countryside behind us. The lemon meringue shortbread brought the meal to a delicious end before we finished our trip on deck. I am still a child at

At 4 p.m., I returned to the hotel to prepare for the care treatment awaiting me at the spa. I cherished every instant of this moment of peace and tranquillity and I particularly appreciated the scent and texture of the high-quality products from the English brand, Aromatherapy, used for this treatment.

At around 10 p.m., stomachs full and having spent a very enjoyable evening, we left the restaurant and thanked the staff for their outstanding service. It was time to head back to our room for the night. ✯ This text is an excerpt from the post written by Céline Perret.

La chambre Elle donne directement sur le lac et la montagne, que l’on peut admirer depuis le balcon. Magique. Et elle est spacieuse.

Je n’ai jamais aussi bien dormi, je pense, et le lit et les oreillers sont géniaux. (J’en aurais bien pris un avec moi!)

La restauration Il y a plusieurs restaurants-bars (sept pour être exacte) dans l’hôtel. Chacun a ses spécificités et ses ambiances, ce qui donne envie de tous les essayer. Depuis la Palmeraie, le restaurant où est servi le petit déjeuner, on peut admirer la verrière et le lac. Le premier soir, nous sommes allées dîner au Montreux Jazz Café, qui propose une cuisine raffinée et simple, pas très chère, avec une carte de vin délicieuse.

De notre table, on entendait et apercevait un musicien qui jouait du jazz sur un beau piano dans l’autre salle. Cela nous a directement plongées dans l’ambiance; je rêverais maintenant de revenir pendant le fameux festival de jazz!

Le Willow Stream Spa Alors, là, ça envoie du lourd! Surtout pour moi qui suis dingue de spa: j’étais au paradis et je n’avais aucune envie d’en partir! Ce spa a reçu l’été dernier le prix Best Luxury Hotel Spa, décerné par le World Luxury Spa Awards, pour la troisième fois consécutive. C’est dire à quel point la barre est haute!

Le personnel Ils ont tous été plus qu’au top avec moi pendant ce séjour et m’ont offert un très beau cadeau: celui de me faire sentir comme une princesse! e ne connais pas vraiment la Suisse; j’ai dû aller une fois à Genève quand j’étais petite, et c’est tout. Alors, lorsqu’une de mes très bonnes amies m’a proposé de la rejoindre à Montreux pour deux jours et de séjourner avec elle au Fairmont Le Montreux Palace, je n’ai bien évidemment pas pu refuser!

Mon hébergement pendant ce séjour fut, je dois l’admettre, génialissime! C’était mon premier séjour dans un palace et je dois dire que je suis conquise! Tout était absolument parfait.

don’t really know Switzerland at all; I think I went to Geneva when I was young, but that’s all. So when one of my best friends suggested that I meet her in Montreux and spend a couple of days with her at the Fairmont Le Montreux Palace, I naturally jumped at the chance!

I have to admit that my accommodation during my stay was absolutely amazing! It was my first stay in a luxury hotel and I must say, I was completely swept away! Everything was quite simply perfect.

The bedroom It looked directly over the lake and the mountains, a view that could be enjoyed from the balcony. Stunning! It was also very spacious. I don’t think that I have ever slept as well and the bed and pillows were pure bliss. (I would have loved to take one home with me!)

The staff Everyone treated me almost like royalty during my stay and I certainly felt like a princess! I would like to offer the staff my warmest thanks – it was the icing on the cake! ✯

The food The hotel has several restaurants and bars (seven to be precise).

Each one has its own style and atmosphere which makes you want to try them all. From La Palmeraie, the restaurant where breakfast is served, you can admire the glass wall and the lake.

On the first evening we ate at the Montreux Jazz Café, which serves refined yet simple fare at a reasonable price, accompanied by a mouthwatering choice of wines. From our table, we could see and hear a musician playing jazz on an attractive piano in

The Willow Stream Spa This is genuinely something special! Especially for me as I love spas: I was in seventh heaven and had absolutely no desire to leave! juste 30 ans, Cédric Amosse a déjà sillonné le monde. Il revient d’Orlando, en Floride, où il était responsable d’une brigade de plus de vingt personnes. Toujours avide de nouvelles expériences, il a choisi de poser ses valises à Montreux pour écrire un nouveau chapitre de sa vie aux mille et une saveurs.

Heavenly: Après le Moyen-Orient et les Etats-Unis, pourquoi avez-vous choisi de vous installer en Suisse?

Cédric Amosse: J’avais envie de travailler dans une structure où il y avait une histoire. Le Fairmont Le Montreux Palace, ce n’est pas seulement un hôtel, c’est un hôtel qui a vécu des choses. Du point de vue de la créativité, c’est sympa, car on peut imaginer des desserts clins d’œil, comme un œuf de Pâques avec un nœud papillon en hommage à Claude Nobs. En plus, ma femme étant Espagnole et moi Français, nous avions à cœur de nous rapprocher de nos familles.

Comment s’est passée votre arrivée au Fairmont Le Montreux Palace? Vous avez changé toutes les cartes des desserts?

Non, il n’y a pas de raison de changer ce qui fonctionne.

Le but est que, avec toute l’équipe, on arrive à améliorer ce qu’on fait déjà. C’est comme une maison. L’ancien chef construit les fondations et on continue à bâtir dessus.

Observez-vous des tendances en matière de pâtisserie?

Oui, aujourd’hui, on revient aux classiques de la pâtisserie française: les macarons, les éclairs, les tartes Tatin. Souvent, j’ai tendance à rechercher des nouvelles saveurs alors qu’un dessert simple est ce que les clients apprécient le plus. Et, contrairement à ce qu’on croit, réussir un bon dessert traditionnel est ce qu’il y a de plus difficile.

Vous êtes tout le temps en cuisine. Vous ne voyez donc pas la réaction des gens quand ils goûtent vos créations…

C’est pourquoi le brunch est si important, et je tiens à ce que toute mon équipe y participe. C’est le moment où on doit s’amuser, où on peut tenter de nouvelles choses. Chaque dimanche, on se doit de surprendre nos clients. C’est un moment qui nous procure à chaque fois beaucoup d’émotions. Il n’y a rien de plus motivant que lorsque quelqu’un vient vous dire à quel point il a apprécié un dessert.

Qu’aimez-vous tout particulièrement dans votre métier?

J’adore travailler en équipe. J’aime que chacun se sente investi dans la création pour qu’on sorte des desserts qui nous ressemblent. A plusieurs, on est bien plus créatifs et productifs que tout seul. ✯

t just 30 years of age, Cédric Amosse has already travelled the world. He has just returned from Orlando, Florida, where he was in charge of a team of more than 20 people. Still keen to acquire new experiences, he has chosen to settle in Montreux for a while to open a new chapter in his life of a thousand and one flavours.

Heavenly: After the Middle East and the United States, why did you choose to come to Switzerland?

Cédric Amosse: I wanted to work in a hotel with history. The Fairmont Le Montreux Palace is not simply a hotel; it is a hotel that has lived through so much. In terms of creativity it is quite fun, as you dream up desserts with a special reference, like an Easter egg with a bow tie in homage to Claude Nobs. What’s more, as my wife is Spanish and I am French, we wanted to move closer to our families.

How did you settle in at the Fairmont Le Montreux Palace? Did you change all the dessert menus?

No, there’s no need to change something that works perfectly well. The aim is for the entire team to improve what we already do. It is like a house. The previous chef lays the foundations and we continue to build on it.

Have you noticed any recent trends in the pastry world?

Yes, the classics of French confectionery such as macaroons, éclairs and tartes Tatin are making a come-back. I often tend to look for new flavours whereas guests prefer a simple dessert.

And contrary to what you might think, there is nothing more difficult than making a good, traditional dessert.

You are always in the kitchen, so you don’t see the people’s reactions when they taste your creations…

That is why brunch is so important, and I insist that everyone in the team participates. It is the time when we can have fun and try out new ideas. Every Sunday, our goal is to surprise our guests. It never fails to create a whole host of emotions.

There is nothing more motivating than someone telling you just how much they enjoyed a dessert.

What in particular do you enjoy about your profession?

I love working in a team. I like everyone to feel involved in the creative process so that we serve desserts in our own image. We are much more creative and productive in a group than alone. ✯

Avec son application Vaud:Guide, l’Office du tourisme du canton de Vaud vous propose de découvrir le canton autrement, notamment la région de Lavaux. Après avoir téléchargé l’application (gratuite), tapez «Balade œnotouristique de Lavaux Unesco» dans la barre de recherche. Vous accéderez alors à tous les détails de cette boucle reliant Chexbres, Saint-Saphorin, Rivaz et Epesses. Vous pouvez simplement vous promener ou choisir l’option jeu. Grâce au signal GPS, vous recevrez alors des questions en fonction de votre emplacement, afin de découvrir tous les secrets de ce vignoble.

Prévoyez un peu plus de quatre heures pour faire la boucle complète (10 kilomètres), avec néanmoins la possibilité de raccourcir à tout moment la balade en montant dans un train. La ligne de chemin de fer longe le Léman. ✯

Monter à bord du train Lavaux Express ou du LavauxPanoramic est un excellent moyen pour découvrir ce vignoble en terrasses. Les chemins étant souvent très escarpés, ces trains vous permettent d’économiser votre énergie afin de profiter au maximum de la beauté des paysages. Le LavauxPanoramic propose deux circuits: le Tour de Saint-Saphorin et le Tour de Chardonne. Le Lavaux Express, lui, circule sur deux boucles, celle de Lutry et celle de Cully. With its Vaud:Guide app, the Tourist Office of the canton of Vaud offers you a different way to explore the canton, and in particular the Lavaux region. After downloading the app (free of charge), type “Balade œnotouristique de Lavaux Unesco” in the search bar. This will give you access to all the details of the circuit taking in Chexbres, Saint-Saphorin, Rivaz and Epesses. You can simply enjoy the walk or select the game option. Thanks to the GPS signal, you will be asked questions according to your position in order to discover all the secrets of this vineyard. Allow roughly four hours to complete the entire circuit (a little over ten kilometers), or you can take a shortcut at any time by hopping onto a train. The railway line runs alongside Lake Geneva. ✯

By little train

Climbing aboard the Lavaux Express or the Lavaux-Panoramic is an excellent means of exploring this terraced vineyard. As the footpaths are often very steep, these trains let you save your energy while taking full advantage of the beautiful scenery. The LavauxPanoramic offers two circuits: the Tour de Saint-Saphorin and the Tour de Chardonne. The Lavaux Express also follows two routes: Lutry and Cully. La vigne est là. On la voit, on déguste son vin, mais on ne sait souvent pas ce qu’implique réellement son travail. Le Parc Vign’nature, une parcelle que la commune de Bourgen-Lavaux ouvre au public en juillet de cette année, est justement là pour ça: sensibiliser le visiteur, qu’il soit enfant ou adulte, à l’environnement qui l’entoure, et mettre au cœur de l’expérience la découverte de la vigne, de la racine au fruit. The vine is there. We can see it, we can taste its wine, but we often ignore what the work really entails. Parc Vign’nature, a plot of land in the village of Bourg-en-Lavaux which opens to the public in July, has been developed with precisely that in mind: to make visitors, both adults and children, aware of the environment surrounding this industry and to focus the experience on a full-scale exploration of vines, from root to fruit. All the way. Besides his “standard” carpentry workshop, Laurent Golay develops a range of products that are a little more fun for the LGS brand (Laurent Golay Skating). A keen snowboarder and skateboarder, this craftsman from Le Brassus makes boards and has recently turned his attention to a paddle to be used with a stand-up paddle board. While his appealing creations could be works of art, they are all designed to be used.

C

ette adresse a connu bien des changements depuis 1578, date de la construction de cet édifice situé entre deux canaux paisibles au cœur de la ville. D’abord couvent, il devient l’hôtel de ville d’Amsterdam de 1648 à 1655. Il est ensuite loué par l’Amirauté pendant un demi-siècle, avant de redevenir l’hôtel de ville jusqu’à la construction de la nouvelle mairie, en 1987, sur la place Waterloo. Ce n’est qu’en 1992 que ce bâtiment devient un hôtel cinq étoiles, baptisé The Grand.

Chaque chambre est unique Entre 2008 et 2011, l’hôtel est rénové sous la direction de la décoratrice d’intérieur Sybille de Margerie – qui a participé

Cette décoratrice a su apporter une touche contemporaine aux 177 chambres et suites tout en préservant les traces du passé si cher aux Amstellodamois, comme les magnifiques vitraux ou les cages d’escalier en marbre avec des rampes en palissandre.

Un havre de paix au cœur de la ville Très prisé des locaux, des chefs d’entreprise comme des artistes, le restaurant Bridges a été entièrement rénové et propose depuis le mois de mars deux espaces distincts, avec chacun un menu particulier, mais avec la même identité imaginée par le chef Andrès Delpeut. Le premier est réservé au Bridges Dining (une étoile au Guide Michelin), où l’on peut choisir entre un plat à la carte et le menu du chef. T

he hotel has undergone numerous changes since 1578, the date of construction of the building nestling between two quiet canals in the heart of the city. Initially a convent, it housed Amsterdam’s town hall from 1648 to 1655. It was then used by the Admiralty for half a century before once more housing the town hall until the new city hall was built on Waterloo Square in 1987. It wasn’t until 1992 that this building was turned into a five-star hotel, called The Grand.

Every room is unique Between 2008 and 2011, the hotel was renovated under the watchful eye of interior decorator Sybille de Margerie – who also worked on the renovation of the Hôtel de Crillon in Paris and

the Cheval Blanc in Courchevel – and opened its doors again as the Sofitel Legend The Grand Amsterdam. Sybille de Margerie gave the 177 rooms and suites a contemporary touch while maintaining the traces of the past so dear to the city’s inhabitants, such as the stunning stained-glass windows and marble staircases with their rosewood banisters.

Did you know that you don’t need a rocket to visit space? Simply climb aboard the Train to the Stars (Train des Etoiles) that leaves from Vevey.

In 40 minutes, you reach Les Pléiades where you join the Astropléiades educational trail. Interactive terminals help you understand the universe in which you live. The adventure begins with an observation of the Earth and continues with an exploration of the Solar System. Next up are the stars and finally the galaxies. After an hour and a half’s walk, you come gently back to Earth in Blonay.

ommencez par piler les feuilles de sauge et les brins de thym dans un shaker. Ajoutez ensuite tous les ingrédients, excepté le tonic, et quelques glaçons et shakez vigoureusement le tout. Versez le cocktail dans un verre de type Highball et complétez avec le tonic. En guise de décoration, nous vous conseillons de déposer un brin de thym frais, une feuille de sauge, un zeste de citron vert ainsi qu’une pincée de poivre de Timut moulu à la surface du cocktail.

Encore meilleur servi sur glace. ✯

egin by crushing the sage leaves and sprigs of thyme in a shaker. Then add all the ingredients, except the tonic, together with a few ice cubes and shake energetically. Pour the cocktail into a highball glass and top up with the tonic. To garnish, we recommend that you place a sprig of thyme, a sage leaf, a twist of lime zest and a pinch of ground Timut pepper on the surface of the cocktail. Even better served on ice. ✯
