IBoilthepotato,mashand keepaside. In aflatpan,heat1tbsp oil and saute theonions,garlic,gingerandgreen chilliesalongwiththeturmericpowder tilltheonionsarelightlybrowned.

Add thecrushed almondsand oats; mix welland saute onlowheatfor about2-3 minutes.Seasonwithsalt. Removefromheatand allowtocool. Add thecooledoatsmixturetothe mashedpotatoand mixwelltocombine. Shapeintosmallkoftas;keepaside. In aplate,mixthecornflour,all-purpose flour,chilli powderandseasonlightly withsalt. Coatthekoftaslightlywiththeflour mixture(itshouldbealightdustingon thekoftas;excessflourwill affectthe tasteofthekoftasmakingitdoughy).

Heattheremaining oil in a flatpan andshallowfrythekoftas;makesure youturnthekoftascarefullytoavoid breakage. Drain ona kitchentowel.

IHeatoil in a largewokand addthe cubedonions.Stirfryonhighheatfora minuteand remove.

Next, addthecubed bell pepperstothe wokandstirfryfor30seconds; remove and keepaside.

Inthesamewok(add moreoilif necessary), add the dryredchillies, garlicand ginger.Sauteonlowheattill thegarlicisjuststartingtobrown.(Do thisonlowheattoinfusethe oilwith maximumflavourfromthegarlic).

Next, add thered chilli pasteand Kashmiri chillipowder,sauteforabout 30secondsand then add allthe saucesalongwitha pinch ofsugar.
